This week’s Diabetic Dish of the Week is Italian Wedding Soup. Diabetic Friendly and only 180 calories per serving and 10 net carbs.
Italian wedding soup
Ingredients
3 cans (14 ounces each) Swanson Low-Sodium Chicken Broth
1 package (12 ounces) prepared and cooked Honeysuckle White Turkey Meatballs
2 ounces (about 1/4 cup) Whole Grain Pasta
1/2 teaspoon Garlic Powder
1 teaspoon Extra-Virgin Olive Oil
1 1/2 teaspoons Dried Oregano
1/4 teaspoon Black Pepper
1/4 pound fresh Spinach (about 6 cups), washed and drained
4 dashes Frank’s Hot Sauce (to taste)
Directions
In a large saucepan, bring broth to a boil over medium-high heat. Add meatballs, pasta, garlic powder, olive oil, oregano, and black pepper and bring to a boil. While waiting for the boil, finely chop the spinach, reducing volume to about 2 cups when chopped. Add spinach and hot sauce to saucepan, and lower heat immediately; stir to combine. Simmer about 8–10 minutes, stirring occasionally.
Yield: 4 servings. Serving size: 1 1/2 cups.

Today’s Menu: Spaghetti and Meatballs
Well Mom and Dad are finally much better, Mom still has a cough but feels much better. I had bought some boxes of Christmas Candy last week and today delivered them. I took one box to the staff of Family Doctor, 1 box to the staff of my Oncologist, and a box to the Head Nurse at my Oncologist. She’s a special person, she’s helped me so much throughout the past 15 years that I have been going there. Have to go to Aldi sometime this week to get our Christmas Ham. If you’re looking for a good Ham you have to try the Appleton Farms Hams, it’s the best Ham that our family has ever had! For dinner tonight I prepared Spaghetti and Meatballs.
I used Ronzoni Healthy Harvest Whole Wheat Spaghetti, my favorite Pasta. Cooks up great and an excellent tasting Pasta. Then for my Meatballs I used Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are good size, meaty, and have a fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs. I almost always use Jennie -O when using Turkey but no store in this area sells Jennie – O Turkey Meatballs. I always prepare extra Meatballs so I can make a Meatball Sub with them. For my Pasta Sauce I used LaRosa’s Original Sauce. A local favorite and still one of the best Sauces I’ve had. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Chipotle Mango Meatballs
Ingredients
1 (26 ounces) bag Turkey meatballs
2 cups JB’s Fat Boy Chipotle BBQ Sauce
2 large mangos, peeled, pitted, cubed
1 teaspoon chipotle seasoning, dried (optional)
Preparation
1 – Bake meatballs according to package directions.
2 -In a medium saucepan, combine barbecue sauce, mango cubes and chipotle seasoning; stir to blend. Simmer over low heat for 15 to 20 minutes, stirring occasionally.
3 – Add cooked meatballs to sauce and simmer for 5 to7 minutes. Serve warm.

Wow some heavy rains the past 24 hours! They say the heaviest rains have passed but still more on the way. A little cooler days coming in for next week. For dinner tonight I prepared some Spaghetti and Meatballs. Whole Wheat Spaghetti, Turkey Meatballs, and Low Carb Pasta Sauce.
I used Ronzoni Healthy Harvest Whole Wheat Spaghetti and Turkey Meatballs along with Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are the best I’ve found, fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs. Topped everything with some fresh grated Parmesan Cheese, fresh grated Dutch Gouda and Bella Vita Low Carb Pasta Sauce (Meat Flavored). I was out of fresh Mushrooms so I added a jar of Pennsylvania Dutch Sliced Mushrooms to the Sauce as it simmered. For dessert later a Del Monte No Sugar Added Peach Chunks Cup.

Today’s Menu: Whole Grain Noodles Topped w/ Turkey Meatballs in a Brown Mushroom Gravy and a Stuffed Peppadews Appetizer
I’m pretty sure to predict the weather they write down all the possibilities, put them in a hat, and pull one out for our forecast! They had predicted 2 1/2″ to 3″ of rain and a front to move through and move out all the humidity, wrong. We did get a couple of brief cloud bursts of rain but not close to the amount they said and it’s still humid! Never trust the weather report. Tried a couple of new dishes for dinner, one I wasn’t real sure on but it turned out to be a keeper of a recipe! I prepared some Whole Grain Noodles Topped w/ Turkey Meatballs in a Brown Mushroom Gravy and a Stuffed Peppadews Appetizer.
The Whole Grain Noodles Topped w/ Turkey Meatballs in a Brown Mushroom Gravy is loosely based on a Rachael Ray dish that I had seen earlier on TV. I did a few things to shorten the cooking and prep time and I also lightened it up, fewer calories and carbs. I used Ronzoni Health Harvest Whole Grain Noodles. I love Egg Noodles but I always try to stay with the Whole Wheat when possible. As I was boiling my Noodles I went ahead and started preparing the Meatballs and Gravy.
I found some Jennie – O Turkey Meatballs at Jungle Jim’s Market a while back and them frozen waiting to try them with a Meatball Dish. First time I’ve tried the Jennie – O Turkey Meatballs, I usually use Honeysuckle White Turkey Meatballs. These were 10 fewer calories per serving, they’re not quite as big as the Honeysuckle White’s though but every bit as good! I pan fried them in a 1/2 tablespoon of Extra Virgin Olive Oil and took them off the heat before they were quite done. Then in another skillet I heated up my Heinz Mushroom Gravy, I had added additional sliced baby Bella Mushrooms to the gravy. As the gravy was heating I added my Meatballs and let them simmer in the gravy until heated through. First time I had ever had Turkey Meatballs in a Mushroom Gravy and it was as they say “Off the Hook”! What a great combo. My Noodles were just finishing up as my Meatball/Gravy mix was. To serve I made a bed of the Noodles and topped it with the Meatballs/Gravy. I then topped it with some freshly grated Asiago Cheese and fresh chopped Parsley. What a hearty comfort food! A keeper recipe. Everything just seemed like a natural pairing and the Asiago Cheese was the perfect topper. I also baked a mini loaf of Kroger Bakery Harvest Grain Bread.
For an appetizer another new one with Peppadew Peppers, which I had never heard of until this morning when I was at Kroger doing some early morning shopping. They had these in the Deli/Cheese Shop already seeded and marinated. There was 6 whole ones and 2 small ones in the container. I stuffed 3 of them with fresh grated Havarti Cheese and the other 3 with Turkey Sausage and Havarti Cheese. After stuffing them I put them in a microwave plate and heated them for about 40 seconds. I love them! Wasn’t sure how they would turn out but they came out a winner. A good appetizer to have around. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Peppadews
This type of piquante pepper was first discovered in early 1993 and introduced to market later that same decade. The name is a portmanteaux of pepper and dew.
Although the pepper is sometimes described as a cross between a pepper and a tomato, this description is not botanically accurate, and refers only to the resemblance in color and size between peppadew and cherry tomatoes.
Applications have been made by the various owners of the brand to secure international breeders right by application to the UPOV.
In 2000 the South African mushroom producer, Denny Mushrooms, acquired the Peppadew brand and business. Denny has in turn since been acquired by AVI.
The fruit is processed for removal of the seeds and reduction of the heat of the pepper to more pleasant levels. It is then pickled and bottled. The flavor of the Peppadew fruit is sweet, with mild heat of around 1,177 on the Scoville scale.

Our run of beautiful days goes on but I hear rain is on it’s way. Locked myself out of the house today, so thats always fun! Finally was able to get a neighbor go through a side door that I can’t get to and unlock the back door. Hopefully one day I’ll be able to build a deck and ramps so I can get in and out of all the doors, life in a wheelchair! For dinner always a classic comfort food, Spaghetti and Turkey Meatballs w/ Cheese Toast
It had been a while since I had Spaghetti and Turkey Meatballs and it sounded good. I used Ronzoni Healthy Harvest Whole Wheat Spaghetti along with Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are the best I’ve found, fantastic taste and their 190 calories and 6 carbs for 3 Meatballs. Topped everything with Kraft 2% Shredded Mozzarella Cheese and Bella Vita Low Carb Pasta Sauce (Meat Flavored). I added a few sliced Baby Bella Mushrooms to the Sauce. Along with the great taste the Sauce is only 70 Calories and 6 Carbs! At the end of the post I left the product description for the Ronzoni Spaghetti, Honeysuckle White Turkey Meatballs, and the Bella Vita Pasta Sauce.
I also had healthy Life Whole Grain Bread that I buttered with I Can’t Believe It’s Not Butter and then sprinkled with Kraft 2% Shredded Mozzarella Cheese . Then I baked it at 350 degrees for 7 minutes. Makes a quick and easy way for a side of Bread for Pasta Dishes. For dessert later a Jello Sugar Free Double Chocolate Pudding.
