I had a bowl of Kashi Grain Puffs for Breakfast this morning. Cleaned up around the kitchen and headed up to the hospital to see Dad. He’s doing a lot better and should be released soon. Coming home from the hospital I stopped at the Bank, got gas, and got the car a much need wash! It’s like an early Spring Day out there today, mostly sunny and near 60 degrees! For dinner tonight I prepared Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Italian Green Beans.

So there’s nothing easier and more delicious Pilgrim Chicken Strips than Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that easy to prepare meal! It’s the best Frozen Chicken that I’ve found by far. Very easy to prepare; Preheat oven to 350° F. Arrange frozen chicken breast strips in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes, to an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter. And Chicken is served! As I said it’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of JB’s Fat Boy Sticky Stuff BBQ Sauce.

Well Winter Weather has kicked in here and around the area! Had a light snow but the strong winds was freezing everything. Great day to stay in! Had the same Breakfast I had the day before, a couple of Jennie – O Turkey Breakfast Sausage Links and 2 slices of Healthy Life Whole Grain Toast, lightly buttered. Not a whole lot of anything going on today. Went out a couple of times trying to keep ice off the driveway and our door ramp. So it was an afternoon of Basketball and play Off NFL Football. For dinner tonight I prepared Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Italian Green Beans.

Baked Chicken Breast Strips w Mashed Potatoes and and Baby Carro 003
Wow I had a long and sleepless night last night. I had to deal with those Phantom Pains all night and most of today. When they are this bad I know I’m in for some pain. It looks as though with as many Amputees there are and most having to deal with Phantom Pins that they could come up with something to ease them or stop them. Just have to deal with it.

Wasn’t really hungry this morning so I just had a cup of Bigelow Green Decaf Green Tea. I didn’t do much of anything today the Phantom Pains continued to around mid afternoon. Tried to rest and catch up on some sleep. I had planned something new for dinner but it on hold until tomorrow, just didn’t feel like putting a lot of effort into cooking. So it was an easy prepared dinner tonight! I had Baked Chicken Breast Strips w/ Mashed Potatoes and Baby Carrots.

Delicious meal and easy to prepare. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Baked Chicken Breast Strips w/ Loaded Peppered Bacon and Cheddar Mashed Potatoes and Cut Green Beans

Baked Chicken Breast Strips w Loaded Peppered Bacon and Cheddar 006
After a light Breakfast I headed out to my Dermatologist to have cyst checked out. With my past history of Melanoma I was worried about it, it came up very quickly. After an exam he told me there is nothing to worry about! All clear. Quite a relief off my mind. After leaving the Doctors I stopped by McDonald’s and let Mom pick up Breakfast for her and Dad. Back at home nothing going on today, all caught up on everything. I had some Shows recorded I’ve been wanting to watch so I caught up on them. For dinner tonight I prepared Baked Chicken Breast Strips w/ Loaded Peppered Bacon and Cheddar Mashed Potatoes and Cut Green Beans.

I wanted something easy to prepare for dinner tonight, easy but still delicious! As I said it’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of JB’s Fat Boy Sticky Stuff BBQ Sauce.

Then for a side dish I tried a new one, Idahoan Fully Loaded Peppered Bacon and Cheddar. I had seen this the other day at Kroger and had to grab a package to try it out! Easy to prepare; Just add 2 cups of water to a medium-sized sauce pan and heat water on high to a boil. Remove boiling water from heat and immediately stir in entire pouch of potatoes. Mix thoroughly using a fork to moisten all potatoes and let stand 1 minute. Stir well and serve. as I said easy to prepare and it makes one delicious side dish! The Potatoes have great flavor, really enjoyed them. I’ll keep an extra bag or 2 in the pantry.

I also heated up a small can of Del Monte Cut Green Beans with Sea Salt. I could have Green Beans every day, love them! Then I had 1 slice of Aunt Millie’s Whole Grain Bread topped with I Can’t Believe It’s Not Butter. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

1 – HEAT potatoes and sauce mix, 1 1/2 cups hot water, 3/4 cup milk, and 1 1/2 Tbsp. margarine or butter to boil in 2-quart saucepan over high heat, stirring occasionally. Watch carefully to avoid boil over.
2 – REDUCE HEAT, then COVER and simmer 15 minutes, stirring occasionally, until potatoes are tender and sauce reaches desired consistency (sauce will thicken slightly when cooling).
3 – Remove from heat and let stand a few minutes before serving.

Today’s Menu: Baked Chicken Breast Strips w/ Mashed Potatoes, Baby carrots, and Baked Rustic French Bread

Baked Chicken Breast Strips w Mashed Potatoes and Baby Carrots 005
It’s a beautiful Autumn Day outside today! The rain and clouds have passed and the sun is out, Have a cool Autumn wind rustling the leaves, it’s just one of those perfect fall days. After breakfast I had to get the leaf blower out. Our deck and driveway was covered with leaves and branches from yesterday’s wind and rain. After that came in and cleaned the house, dusting and vacuuming. Had everything done and hit that easy chair with remote in hand and watched NFL Football the rest of the afternoon. For dinner tonight I prepared Baked Chicken Breast Strips w/ Mashed Potatoes, Baby Carrots, and Rustic French Bread

I wanted something easy to prepare for dinner tonight, easy but still delicious! Nothing easier and more delicious than Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that easy to prepare meal!

Mashed Potatoes
For one side I made some of my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Just microwave for 6 minutes and serve. Just as good as homemade, if not better.

Whole Baby Carrots

Then I also prepared a can of Kroger Brand Whole Baby Carrots. These are so much easier to prepare than boiling fresh Baby Carrots, and they taste just as fresh and good. Also Mom wanted some of her favorite Bread, Pillsbury Rustic French Bread. So I baked a loaf of that for us. For dessert later a bowl of Del Monte Peach Slices.

Pilgrim's Chicken Strips 003
It’s been a hectic day around here today! Had a light Breakfast and worked out. Then off to Kroger to pick up a few items for Mom and myself. Came back home and I had to follow Mom over so she could drop her car off to be worked on, nothing serious. Back home and I had to work on the clothes dryer, a leg on the base came off so I had repair good enough to run until the Repairman can come over and replace it. I had planned to do a new recipe but sure as I would start to prepare it, the car repair would call and I would have to leave to take Mom to pick it up. (and they did!) So it was a simple and easily prepared meal tonight, Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.
