Today’s Menu: Cheesy Skillet Classic Lasagna w/ Baked French Bread

 

 

For Breakfast on this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. The hot weather has kicked in again, 88 degrees and humid along with some heavy rain on and off through the day. Mom wanted a McMuffin for Breakfast so I went to McDonald’s and picked it up for her. Back home did a load of laundry for Mom. After Lunch went over to see Dad. For Dinner tonight I prepared a Cheesy Skillet Classic Lasagna w/ Baked French Bread.

 

 

Second time using the Kraft/Velveeta Cheesy Skillets Classic Lasagna. The box contains the Pasta, Seasoning, and Velveeta Cheese Sauce. I added the Jennie – O Extra Lean Ground Turkey Breast, Water, and Sargento Shredded Mozzarella Cheese. The instructions call for Ground Beef but as usual I substitute the Ground Beef with the Jennie – O Extra Lean Ground Turkey Breast. Much healthier option with fewer calories, fat, and carbs.

 

 

 

To make the dish; You will need the 1 lb. Jennie – O Extra Lean Ground Turkey Breast and 2 cups water. Cook the 1 lb. Ground Turkey in large skillet, until no longer pink. Add 2 cups water, Pasta and Seasoning; stir. Bring it to a boil. Reduce heat. Cover; simmer 11 min. or until most of the water is gone, stirring frequently. Remove from heat. Stir in the Velveeta Cheese Sauce. Top it off with a cup of Shredded Mozzarella Cheese before serving.

 

 

 

The Lasagna came out fantastic, hot and cheesy! The Seasoning and Cheese was perfect and the Pasta was excellent. Made a very good and hearty Dinner Dish! I also baked a Pillsbury French Bread Loaf. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Leftovers – Cheesy Skillet Classic Lasagna w/ Baked French Bread

 

 

I had another sort of rough night dealing with Phantom Pains. These didn’t hurt too much but hurt enough to where I didn’t get a lot of sleep. For Breakfast it was just a cup of Bigelow Decaf Green Tea. So I didn’t do a whole today but rest. After Lunch I did go see Dad for awhile. He’s really been doing good in therapy, getting stronger! Back home caught up on a little sleep. For Dinner tonight it’s leftover Cheesy Skillet Classic Lasagna w/ Baked French Bread.

 

 

 

I really enjoyed the Kraft/Velveeta Cheesy Skillets Classic Lasagna so I wasn’t going to let the leftovers go to waste. It reheated perfectly! Just sprinkled a little of the Sargento Shredded Mozzarella Cheese across the top and served. For Dessert tonight a Jello Sugar Free Dark Chocolate Pudding. I left yesterday’s original post below. Later!

Today’s Menu: Cheesy Skillet Classic Lasagna w/ Baked French Bread

 

 

For Breakfast on this sunny morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. The hot weather has kicked in again, 85 degrees and somewhat humid. Mom wanted a McMuffin for Breakfast so I went to McDonald’s and picked it up for her. Back home did a load of laundry for Mom. About 2:00 I went to the Cincinnati Airport and picked up a friend of mine that was coming to town for a week or so. I took him on to Fairfield and dropped him off at his brother’s place. Good catching up with him. For Dinner tonight I prepared a Cheesy Skillet Classic Lasagna w/ Baked French Bread.

Today’s Menu: Fried Shrimp with Rotini and Cheese

For Breakfast I Scrambled 2 medium size Eggs, Prepared some Simply Potatoes Shredded Hashbrowns, and toasted 2 slices of Healthy Life Whole Grain Bread (lightly buttered with I Can’t Believe It’s Not Butter). Also had the morning cup of Bigelow Decaf Green Tea. We had a lot rain, and even thunder, overnight. It broke a record high temperature yesterday, 70 degrees! And today wasn’t bad, mostly sunny and 43 degrees. Drove over to a friend of mine house. He had a heart bypass and is finally back home. Says he feels better now than he’s felt in the last 2 years. He looked and sounded great! On the way back home stopped the ATM and then got gas before heading back home. For Dinner tonight I prepared Fried Shrimp with Rotini and Cheese.

While at Kroger yesterday I purchased some more of the huge Freshwater Shrimp.I rinsed them off in cold water and removed the shells, they were already deveined, and put them in a Hefty Zip Bag in the fridge. To prepare these I’m using Zatarain’s Shrimp Fri – Seasoned Seafood Breading Mix.

Poured about 1 inch of olive oil into large skillet. Heat oil to 350°F on medium heat. Take the peeled shrimp, mix 1/2 6cup Zatarain’s Seasoned Shrimp Fri with 1/2 cup water in medium bowl. Pour additional 1/2 cup Shrimp Fri onto plate or into plastic bag. Dip shrimp in the batter. Shake off excess. Roll or shake shrimp in remaining 1/2 cup Shrimp Fri until evenly coated. Discard any remaining batter in bowl or Shrimp Fri on plate or in plastic bag. Fry the shrimp, a few pieces at a time, in hot oil until light golden brown. Drain on paper towels and served. The Zatarain’s Shrimp Fri is an excellent breading for Shrimp! Nice light coating with great flavor.
Velveeta Whole Grain Rotini and Cheese (2)
To go with the Shrimp I prepared a box of Kraft – Velveeta Rotini and Cheese, Whole Grain. I don’t use a lot of Mac and Cheese due to the calories and carbs but the Velveeta Whole Grain Rotini and Cheese isn’t too bad, plus every now and then doesn’t hurt. To prepare it; Boil  6 cups water. Stir in shell pasta. Cook 8-10 min., Stirring occasionally. Drain pasta, don’t rinse. Return it to pan. Add cheese sauce; stir. And you have some creamy and cheesy Mac and Cheese! It’s just a flat out Pasta and Cheese Comfort Food Heaven! Excellent tasting Rotini Pasta and with the Cheese, perfect. Shrimp and Pasta is a perfect pairing! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

For Breakfast on this chilly Saturday Morning I Scrambled 2 medium size Eggs and toasted 2 slices of Healthy Life Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. Also had that morning cup of Bigelow Decaf Green Tea. Outside it’s our coldest morning in quite a while, 28 degrees! After Breakfast, Mom and Dad wanted McDonald’s for Breakfast so I went up and got it for them. Noticed that gas now has dropped to $1.71 a gallon. Not a lot to do today. Did some cleaning around the house. Had everything done so I kicked back and caught up on some programs I had recorded and watching some College Football. For Dinner tonight I prepared Fried Shrimp with Rotini and Cheese.

While at Kroger the day before I saw they had some huge White Shrimp, and I couldn’t pass those up! I rinsed them off in cold water and removed the shells, they were already deveined. It’s the warmest morning we have had in a while, 61 degrees to start the day. For Breakfast I had a Cheese Omelet. Made it with 2 medium size eggs, a splash of 2% milk, and Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Also had a slice of toasted Healthy Life Whole Grain Bread and my morning cup of Bigelow Decaf Green Tea. Did some house cleaning today; ran the vacuum, dusted, and cleaned the kitchen. Cloudy and windy all day, blowing in some heavy rain for the late afternoon and evening. For dinner to night tried something new, Velveeta Cheesy Skillets Chicken Bacon Ranch Dinner. Tonight it’s Skillet Chicken Bacon Ranch Dinner w/ Baked Italian Loaf Bread.

 

 

Skillet Chicken Bacon Ranch Dinner w Baked Italian Loaf Bread 003
Came across a box of the Velveeta Cheesy Skillets Chicken Bacon Ranch Dinner while at Meijer a while back and I’m finally getting around to using it. Just the name alone, Chicken Bacon Ranch Dinner, sounds delicious! The box contains; Pasta, Seasoning Packet, Velveeta Cheese Sauce Packet, and Bacon Bits. I’ll be adding the Chicken and 2 Cups water, I also seasoned it with Morton’s Lite Salt and topped with some a sprinkle of Shredded 3 Cheese Blend (Parmesan, Romano, and Aiago Cheese).

To prepare it I started by cooking the Chicken. I used 3 Perdue Perfect Portions Chicken Breasts that I cut into bite size pieces. I heated up a large skillet that I sprayed with Pam Cooking Spray and added I tablespoon of Extra Virgin Olive Oil. Cooked it on medium heat until cooked through and the juices ran clear.

As the Chicken was finishing I added 2 cups of Water, the Pasta, and the Seasoning Packet. Stirred and brought it to a boil. Reduced the heat and covered the skillet. Simmered for 12 minutes, stirred it frequently. Removed it from the heat. Next stirred in the Velveeta Cheese Sauce and sprinkled with the Crumbled Bacon. Served it in a bowl with a sprinkle of the 3 Cheese Blend. I have another item to keep handy in the Pantry! Really like this dish. The Chicken goes perfect with the Pasta and Creamy Cheese Sauce. Then the Crumbled Bacon gives it a nice crunch. Plus it’s a 1 pot meal, which I love! Winner, Winner Skillet Dinner! I also baked a loaf of Pillsbury Italian Loaf Bread. For dessert/snack later some Multi Gran Totistos Scoops with some Newman’s Own Black Bean and Corn Salsa.

Today’s Menu: Leftovers – Salmon Patties w/ Velveeta Whole Grain Rotini and Cheese

 
It was a full day of leftovers for Breakfast, Lunch, and Dinner! For Breakfast I reheated some Pioneer Peppered White Gravy, reheated 2 Jennie – O Turkey Breakfast Sausage Links, and toasted a couple of slices of Healthy Life Whole Grain Bread. Mom and Dad went on to Church this morning so I gave the house a good cleaning today. Ran the vacuum, dusted, and did a couple of loads of laundry for Mom. Outside, what a beautiful day! Sunny and in the 60’s! But they say cooler weather and possible light snow moving back in by mid-week. Went outside and cleaned and swept the deck and driveway. Even got the 4 wheel cart out for a spin this afternoon. Beautiful day out. For Lunch I reheated a Ball Park Turkey Frank and served on a Flax Seed Pita Bread. Then for dinner it was leftover Salmon Patties w/ Velveeta Whole Grain Rotini and Cheese.

I reheated the leftover Salmon Patties w/ Velveeta Whole Grain Rotini and Cheese that I had prepared the day before. Reheated both items in the microwave. I also had a slice of Healthy Life Whole Grain Bread topped with I Can’t Believe It’s Not Butter. Also had a Diet Dr. Pepper to drink with dinner. I’m using a can of Kroger Brand Pink Salmon, Egg Beater’s (1/4 cup), a couple of shakes of Frank’s Hot Sauce, Dried Parsley, and Kroger Low Fat Saltine Crackers. To make the Salmon Patties I used Kroger Low Fat Saltine Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved a total of 20 calories and 2 full grams of fat. Make cuts where you can, it all adds up! In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Virgin Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. I’m starting to have to have these more often, they came out golden brown and delicious!

For the Pasta I used Velveeta Whole Grain Rotini and Cheese. I don’t use a lot of Mac and Cheese due to the calories and carbs but the Velveeta Whole Grain Rotini and Cheese isn’t too bad, plus every now and then doesn’t hurt. To prepare it; Boil 6 cups water. Stir in shell pasta. Cook 8-10 min., Stirring occasionally. Drain pasta, don’t rinse. Return it to pan. Add cheese sauce; stir. And you have some creamy and cheesy Mac and Cheese! It’s just a flat out Pasta and Cheese Comfort Food Heaven! Excellent tasting Rotini Pasta and with the Cheese, perfect.

For Breakfast I had a bowl Kashi Grain Puffs Cereal. really enjoy those, even as a snack. Went out to get the paper this morning and it was around 34 degrees about a 1/2 hour later it had dropped to 31 degrees and it started snowing. It came down hard fora short time and it covered the grass areas but that was about it. They say in the 50’s and 60’s this weekend, hope they are right! Cleaned the house up some and then Dad started his at home therapy treatments today, which he needs. Not too much going on today. For dinner tonight it’s Salmon Patties w/ Velveeta Whole Grain Rotini and Cheese.

For Breakfast I had a bowl of Kashi 7 Whole Grains Puffs. Ohh baby it’s cold outside! Everyone knew our mild Winter wouldn’t holdout the entire season but no one is ready for this. This morning it was 4 degrees with a wind chill of -7 degrees. The day was sunny all day and a high of 11 degrees but the wind chill kept it below zero all day. So nothing to do but stay in! Gave the bedroom a good cleaning, did a load of laundry and cleaned my computer desk. Amazing how much junk can accumulate on a computer desk! For dinner tonight it was Breaded Chicken Breast Tenders w/ Velveeta Shells and Cheese.

I wanted a hot meal but just didn’t feel like putting a lot of effort in it. So when I was at Kroger yesterday I picked up a package of PERDUE® SIMPLY SMART® – Gluten Free Breaded Chicken Breast Tenders. I have used these before but it’s been a while. They come in a sealed package, you can freeze them or prepare them from fresh, I prepared them from fresh. All the Tenders are nice size and well seasoned, the amount of Breading is perfect. They are also gluten-free. They are 150 calories and 13 carbs per serving, 2 Tenders per serving.

To prepare them; Preheat the oven to 425 degrees. I used a small cookie sheet that I lined with foil and sprayed the foil with Pm Cooking Spray. When the oven was ready I heated the Tenders for 8 minutes. Removed it from the oven and flipped the Tenders and heated them another 8 minutes. removed from the oven and let the Tenders cool for 3 minutes and they were ready to serve! As I said earlier, good breading and nicely seasoned. I baked 2 servings for my dinner. Served them with a side of JB’S Fat Boy Sticky Stuff BBQ Sauce. Love all the sauces and rubs from JB Fat Boy.

 

 
For a side dish to go with the Tenders I prepared another easy to prepare item, Velveeta Shells and Cheese (Made Breaded Chicken Breast Tenders w Velveeta Shells and Cheese 010with 2% Milk Cheese). This comes in a microwavable container. To prepare just remove the lid of the container and remove the Sauce Pouch. (You will see loose white powder in pasta. This is necessary for proper cooking.) Add water To fill- line in cup. Do not fill water above line. Microwave, uncovered, on high 3-1/2 min, until Pasta is tender. Remove from the microwave and stir in cheese sauce until its well blended. (Let stand 1 To 2 min. To thicken cheese sauce.) And Done! As all Velveeta and Kraft Products the Cheese Sauce was fantastic. Easy to prepare side dish, it’s 180 calories and 30 net carbs per serving (1 Container). So it was Chicken and Pasta tonight, easy to prepare and a good filling dinner. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Today’s Menu: Skillet Velveeta Whole Grain Rotini and Cheese w/ Hardwood Smoked Turkey Sausage

 
Rolled out to grab the morning papers and it was a bit nippy out, about 26 degrees with a breeze. The day turned out sunny and in the 40’s. Started the morning off with Simply Potatoes Hash Browns, Eckrich Turkey Breakfast SausageSkillet Velveeta Whole Grain Rotini and Cheese w Hardwood Smoked 003 Links, 1 slice Aunt Millie’s Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Bad day with Dad today, did Mom’s laundry for her she had her hands full today. Dad’s health is getting worse every day. For lunch I made everybody Pot Roast Sandwiches for lunch, used the delicious leftovers from last night’s dinner. That’s one fine recipe to keep! Did some light cleaning around the house and cleaned both our cutting boards. Used a combo of Course Sea Salt and a Lemon, works great as a cleaner on cutting boards. For dinner tonight I prepared Skillet Velveeta Whole Grain Rotini and Cheese w/ Hardwood Smoked Turkey Sausage and Baked French Bread.

 

Wanted a good Comfort Food Dinner tonight and what better combination than a Skillet Velveeta Whole Grain Rotini and Cheese w/ Hardwood Smoked Turkey Sausage Dinner. I love Mac and Cheese but don’t have it a lot due to the carbs and calories, I have Diabetes 2. But every now and then I give in to the craving and fix a bowl. I do always try to use Whole Grain or Whole Wheat Pastas.

For the Pasta I used Velveeta Whole Grain Rotini and Cheese. I don’t use a lot of mac and Cheese due to the calories and carbs but the Velveeta Whole Grain Rotini and Cheese isn’t too bad, plus every now and then doesn’t hurt. Just follow the easy instructions on the box and you are set. It’s just a flat out Pasta and Cheese Comfort Food Heaven! Excellent tasting Rotini Pasta and with the Cheese, perfect. Put the lid on Sauce Pan and removed it from the heat.

 

 

 

Beans and Smoked Turkey Sausage (Beans and Weenies) 003
Then for the Turkey Sausage I used Butterball Hardwood Smoked Turkey Sausage. I took one of the Sausages and cut it in to bite size pieces. I took a medium size skillet and sprayed it Pam Cooking Spray. Added a 1/2 tablespoon of Extra Virgin Olive Oil, and heated it on medium heat. When the skillet was heated up I added the Turkey Sausage pieces. I cooked them about 12 minutes, stirring them frequently until browned and heated through. When the Sausage was ready I then added it to my pan of Pasta, gently stirring till mixed.

Served it in a bowl and added a few shakes of Frank’s Hot Sauce. The pasta and sausage are a perfect pairing, and the Hot Sauce just kicks it up a bit! Comfort Food Deluxe tonight, I also baked a loaf of Pillsbury French Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.
