Today’s Menu: Fried Freshwater Shrimp w/ Mac and Cheese

 

To start this Sunday morning off I prepared a Poached Egg, an al fresco Chicken Sausage, and served it all on a toasted Healthy Life Whole Grain English Muffin. Also had a cup of Bigelow Decaf Green Tea. Started a couple of loads of laundry for Mom after Breakfast. Cloudy with rain moving in later in the afternoon, high of 72 degrees. Went to Kroger for a couple of items after Breakfast and then by McDonald’s to pickup Breakfast for Mom and Dad. Not feeling up to par today, had a sinus headache all day. So I didn’t a whole lot today but relax. Hopefully better tomorrow! For Dinner tonight it’s Fried Freshwater Shrimp w/ Mac and Cheese.

 

While at Kroger earlier I picked up some more of the huge Freshwater Colossal Shrimp, I cleaned them and put them in the fridge until needed for Dinner tonight. To prepare these I’m using McCormick Golden Dipt Cracker Meal Seafood Fry Mix.

 

 

 

 

 

Poured about 1 inch of Extra Light Olive Oil into large skillet. Heated the oil to 350°F on medium heat. I then took a 1/2 cup of the Cracker Meal Mix in a Hefty Zip Lock Plastic Bag. Take the peeled shrimp, 3 at a time and place them in the bag and shake until Shrimp had a nice coating on them. Had all the Shrimp coated I then began to fry them. Frying them about 3 minutes the shrimp, a few pieces at a time, in the hot oil until light golden brown turning after 1 1/2 minutes. Drain on paper towel lined plate . Love using the McCormick Cracker Meal Mix, nice light crust and seasoning!

 

 

To go with the Shrimp, Stouffer’s Classic Mac and Cheese Cups. just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. I baked a loaf of La Brea Bakery Multi Grain Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

 

 

 

 

 

McCormick Cracker Meal Seafood Fry Mix

Cracker Meal Seafood Fry Mix adds extra crunchiness to fried and baked foods. All ingredients have been specially selected to provide a superior coating that seals in natural juices for fish, seafood, poultry, meats and vegetables.

Ingredients
Enriched Bleached Wheat Flour (Flour, Niacin, Reduced Iron, Thiamine Mononitrate, Riboflavin, And Folic Acid), Whey (Milk), Dextrose, And Soybean Oil.

Serving size
1/4 cup Mix (32g)mccormick-cracker-meal-seafood-fry-mix

All You Need
1/2 cup Cracker Meal
1 lb. Fish or Seafood*
Water or Milk
Vegetable Oil
Directions
1. POUR Cracker Meal into shallow dish or large plastic bag. Moisten fish, cut into serving-size pieces, or seafood with water or milk. Shake off excess.
2. COAT fish, several pieces at a time, evenly with Cracker Meal. Let stand 5 minutes. Discard any remaining Cracker Meal. Fry as directed below. Serve with McCormick® Cocktail Sauce or Tartar Sauce. Use the entire package to coat 4 lbs. fish or seafood.

*Best with tilapia, trout, catfish, shrimp, or scallops. Also try with shucked oysters and clams, or soft-shell crabs (pierce several times before coating).

Pan Fry: Pour oil to a depth of 1/4 inch in a large skillet; heat to 350°F on medium heat. Fry fish, in batches, 2 to 4 minutes on each side or until fish flakes easily with a fork. Drain on paper towels.

Oven Fry: Cover bottom of shallow baking pan with melted butter. Arrange fish or seafood in a single layer in pan; turn to coat with butter. Bake in preheated 425ºF oven 10 to 20 minutes until golden brown around edges and fish flakes easily with a fork.

Flavorful Tips:
• For a thicker coating, dip fish in a mixture of 3 tbsp. milk and 2 beaten eggs before coating with Cracker Meal.
• Coat boneless skinless chicken breast halves or chicken parts as directed. Bake in 400ºF oven 20 to 30 minutes for chicken breast halves or 45 to 50 minutes for chicken parts.
• Use Cracker Meal instead of bread crumbs when making meat loaf or meat balls.

Today’s Menu: Baked Garlic Herbed Tilapia w/ Mac and Cheese

 

 

I Scrambled a couple of Eggs and toasted a Healthy Life Whole Grain English Muffin. Along with a cup of Bigelow Decaf Green Tea to start the day off. After Breakfast I went to Meijer and had to stop by Kroger for a couple of items. For the day outside its 84 degrees and humid with rain on and off. After Lunch went to spend the afternoon with Dad. He should be coming home within the next day or so. I’m not sure if it will work out or not but Mom wanted to see if he could make it here or not. Just hoping for the best! Back home for Dinner tonight I prepared a Baked Garlic Herbed Tilapia w/ Mac and Cheese.

 

 

While at Kroger earlier I picked up a 2 Fillet Package of Tilapia that had already been Seasoned with Garlic and Herbs. To prepare them I’m baking them. I preheated the oven 350 degrees. I took a small Baking Sheet and lined it with Foil and sprayed it with Pam Cooking Spray w/ Olive Oil. I sprayed both sides of the Tilapia with the Pam and layed them on the Baking Sheet. The Pam helps brown most meats when baking them. When the oven was ready I baked the Tilapia. I baked them for about 25 minutes, until they started to flaky.

 

 

I’m a Fish and Seafood lover and I love this Tilapia! Nicely Seasoned and Meaty. Tilapia can be prepared so many different ways and it cooks up so easily. And as I said it’s a very Meaty Fish.

 

 

 

 

 

For my Mac and Cheese I’m using Bob Evan’s Single Serving Cup Macaroni and Cheese. They come in a 2 pack microwavable bowl package. To prepare it; Cut a small slit in film to vent. Microwave on high power for 1 minute. Remove from microwave and stir. Continue cooking for an additional 30 to 40 seconds. Let cool for 2 minutes and serve! My type of side. An excellent Pasta with plenty of Cheese, the bowl is plenty for 1 person. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper to drink.

Today’s Menu: Catfish Nuggets w/ Mac and Cheese

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with I Can’t Believe It’s Not Butter. And as always my morning cup of Bigelow Decaf Green Tea. Out side another beautiful Fall like day. Started out at 49 degrees and had a high of 75 degrees, and mostly sunny! This was our coolest August that I can ever remember, we had 2 days where it hit 91 degrees. Right after Breakfast went to see Dad. The doctor told us his lungs and heart have about had it. We’ll just have to wait and see if we can ever get him home again. Back home got the cart out and did some yard work. For Dinner tonight Catfish Nuggets w/ Mac and Cheese.

 

Picked up the Catfish Nuggets at Meijer and had it in the freezer. Set the bag in the fridge overnight to thaw. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.

 

 

To go with my Catfish I made a single cup serving of Annie’s Real Aged Cheddar Microwavable Mac and Cheese Cup. I picked a cup of this for free last week at Kroger on their Free Friday Give Away. I believe it’s the first time I’ve tried this. I’ve had several of the Annie Products before but not this one until today. It comes in a microwavable, single serving cup. Just remove the lid and take out the Cheese Sauce Packet. Add cool water to the fill line in the cup and microwave on high for 2 minutes. Remove the cup from the microwave and stir in the Cheese Packet. It’s ready! It makes a good cup of Mac and Cheese. Pasta was good and plenty of Cheese. I’ll have to get more of these. For Dessert/Snack alter a bowl of Skinny – Pop Pop Corn and Diet Dr. Pepper to drink.

Today’s Menu: Seasoned Gulf Coast Grouper Fish Sandwich w/ Mac and Cheese

 

 

For Breakfast this morning I toasted a couple of Eggo Waffle’s and topped them with some I Can’t Believe It’s Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. Went out to grab the morning papers this morning and its 55 degrees. Another beautiful day out again, 81 degrees and sunny! Today is the neighborhood’s annual community yard sale, as always it draws a lot of people. So I got the cart out and went around the neighborhood to look at all junk people were trying to unload! Later in the afternoon I went to see Dad. We hope he gets to come home soon! For Dinner tonight I prepared a Seasoned Gulf Coast Grouper Fish Sandwich w/ Mac and Cheese.

 

I love my Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me back up from Florida! It’s good to have friends that also own a house off the Florida Gulf side. I had a fillet of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish and Love this Grouper! I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun.

 

To go with Fish Sandwich I prepared a Stouffer’s Classic Mac and Cheese Mac Cup. Just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Gulf Coast Grouper w/ Mac and Cheese

 

 

I just had a cup of Bigelow Decaf Green Tea for Breakfast, no appetite this morning. Did my morning workout, took a quick shower, and off to Walmart. I needed some Bigelow Decaf Green Tea, Copy Paper, and a few other things. Back home after Lunch, I went to see Dad. Still having good days and bad days, hope he can come home soon. Another pretty nice day out again. After getting back home I got the cart out for a ride around the neighborhood. For Dinner tonight it’s a Gulf Coast Grouper w/ Mac and Cheese.

 

 

I love my Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me back up from Florida! It’s good to have friends that also own a house off the Florida Gulf side, thank you Jim and Linda! I had a fillet of it in the freezer, laid it in the fridge overnight to thaw. Today’s Menu: Baked Jumbo Butterfly Shrimp w/ Whole Grain Mac and Cheese

 

 

For Breakfast this morning I prepared a al fresco Chicken Breakfast Sausage Patty, toasted a Healthy Life Whole Grain English Muffin, and had a cup of Bigelow Decaf Green Tea. Same weather outside as yesterday except it’s a bit hotter and more humid. Our heat index is over 100. Not a good day to be doing a whole lot outside. After Lunch I headed up to the hospital and spent the afternoon with Dad. He’s doing good, they just have to clear the pneumonia up in his right lung. Stopped and got gas on the way home and that was about it for the day. For Dinner tonight its Baked Jumbo Butterfly Shrimp w/ Whole Grain Mac and Cheese.

 

It’s so hot out I wanted something sort of light and easy to prepare. So I baked 1 item and microwaved the other one, don’t get much easier! So I prepared a box of SeaPak Jumbo Shrimp. I preheated the oven on 425°f. I then got a small baking sheet, covered with aluminum foil and sprayed it with Pam Cooking Spray. I arranged the frozen shrimp in single layer on the baking sheet. Then baked at 425 degrees for 13-14 minutes turning over once after 6 minutes. They came out Golden Brown and delicious. Hard to beat these always great tasting. I served them with a side of Heinz Shrimp Cocktail Sauce.

 

For a side I prepared some Kraft 50% Whole Grain Mac and Cheese. I normally have the regular Mac and Cheese but I seen the 50% Whole Grain at Meijer and picked up a 4 pack of them. It comes in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For Dessert/Snack later tonight a bowl of Skinny Pop – Pop Corn along with a Coke Zero to drink.

 

 

SeaPak JUMBO BUTTERFLY SHRIMP

– Keep frozen until ready to prepare.
– Due to differences in appliances, cooking times may vary and require adjustment.

– For food safety this product must be cooked to an internal temperature of 165°F

PREPARATION:
BAKE
* preheat oven to 425°f.
* arrange frozen shrimp in single layer on baking sheet so shrimp are not touching.
* for full package, bake 13 to 14 minutes.
* for best results, turn product over halfway through cooking.

FRY
* preheat oil to 350°f.
* place frozen shrimp in fry basket.
* for full package fry 2 minutes and 30 seconds to 3 minutes.
* drain on absorbent paper before serving.

Today’s Menu: Crispy Chicken Strips w/ Sharp Cheddar and Bacon Mac/Cheese

 
Well a Happy Memorial Day to all of you out there! For Breakfast I had the leftover Skillet Potatoes and Ham for Breakfast. to make this I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it off with a Sunnyside Up Egg. The Egg gives the dish such a great creaminess. I also made that morning cup of Bigelow Decaf Green Tea. It’s a near perfect day out there today! Sunny, 81 degrees, and beautiful! After Lunch I went with Mom to a couple of different Cemeteries. We always take flowers out to my brother, grand parents, aunt, and uncle. Back home I got the cart out a took a ride around the neighborhood and enjoyed this beautiful day. For Dinner tonight I prepared Crispy Chicken Strips w/ Sharp Cheddar and Bacon Mac/Cheese.

 

I used the PERDUE® Crispy Chicken Strips. To prepare it I preheated the oven to 425°F . Sprayed a small baking sheet with cooking spray. Placed frozen strips in single layer on baking sheet. Baked for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn the Strips halfway through heating time. They come out golden brown and delicious! Really enjoy these and so easy to prepare and our favorite by far!

 

 

 

 

As I was frying the Shrimp I started my Cracker Barrel Macaroni and Cheese Dinner. Second time I’ve tried the Cracker Barrel Brand of Mac and Cheese. Tonight I’m having the Sharp Cheddar and Bacon Mac and Cheese.

 

 

 

 


Start by boiling 8 cups of water in medium saucepan. Stir in Macaroni.Cook 12 min. or until tender, stirring occasionally. Drain. Do not rinse. Return to pan. Squeeze the Cheddar Cheese and Bcaon Sauce over hot Macaroni. Stir until blended and serve. Came out nice and cheesy with excellent flavor. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

PRODUCT HANDLING
COOKING & PREP
Conventional/Toaster Oven (Preferred Methods) Preheat Oven to 425°F. Spray baking sheet with cooking spray. Place frozen strips in single layer on baking sheet. Bake on middle oven rack for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn patties halfway through heating time. Microwave Oven Place 4-6 frozen strips in single layer on a microwave safe plate lined with paper towel. Heat, uncovered, on high for 2 to 3 minutes, turning halfway through heating time. Cracker Barrel Macaroni and Cheese Dinner – Sharp Cheddar and Bacon

Today’s Menu: Fried Ocean Perch w/ Sharp White Cheddar Mac and Cheese

 

 

 

To start my Friday morning off I Scrambled a couple of Eggs, toasted 2 slices of Healthy Life Whole Grain Bread, and as always my morning cup of Bigelow Decaf Green Tea. Mostly sunny out today and 80 degrees. Went up and had my car washed, really needed it! Drove on over to Walmart, I wanted to check out the Lawn and Garden Department for a few things. Back home got the cart out for a while and drove around the neighborhood and down by the lake. Relaxing day! For Dinner tonight it’s Fried Ocean Perch w/ Sharp White Cheddar Mac and Cheese.

 

 

I picked up the Ocean Perch at Kroger the day before. Really love the Kroger Seafood Department. Good selection. I first rinsed the fillets off in cold water and patted dry with a paper towel. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Light Olive Oil, on medium heat. Rinsed the Perch with cold water and patted dry with a paper towel. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!

 

For a side dish it was leftover Cracker Barrel Macaroni and Cheese Dinner – Sharp White Cheddar. I just reheated the Mac and Cheese leftover from Dinner last night. I put it into a bowl, covered the bowl with a paper towel, and microwaved it for 1 minute and 10 seconds. Heated up great and still delicious. Really enjoyed the Cracker Barrel Mac and Cheese. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

 

 

 

 
Ocean Perch
Ocean perch is mild tasting yet a bit sweet, with a moderately firm texture. The meat is lean, moist and flaky. Large ocean perch develop a coarse texture. Deep-skinned ocean perch with the fat line removed has the most delicate flavor. The flesh is white, though not as light as cod, and it turns opaque white when cooked.Whole fish may have bulging eyes and distended air bladders, which is a result of being brought up from great depths, not an indication of poor quality.

Today’s Menu: Shrimp w/ Sharp White Cheddar Mac and Cheese

 

 

For Breakfast this morning I had a Breakfast Sandwich. I toasted a Healthy Life Whole Grain English Muffin, lightly fried some slices of Boar’s Head Sweet Slice Ham, and 1 slice of Sargento Ultra Thin Swiss Cheese. Also had a cup of Bigelow Decaf Green Tea. Heavy rain overnight, some areas 4 inches of rain! A lot flooding in the area. It finally quit raining around Noon. But more heavy rain tonight, about 68 degrees for a high. After Breakfast helped Mom do laundry and did a few things around the house. Later went to the post office and stopped by the bank. For Dinner tonight I prepared Shrimp w/ Sharp White Cheddar Mac and Cheese.

 

 


Mom needed a few things from the local Kroger yesterday and I picked up the ingredients for my Dinner tonight! I’m using some Large Shrimp I purchased from the Seafood Counter. to prepare them I first washed them off in cold water and patted dry with paper towels. I then seasoned them with a sprinkle of Sea Salt and Old Bay Seasoning. I use Old Bay on Chicken, Chops, and most Seafood, provides perfect Seasoning.

 

 

 

 

 

Next I grabbed a large skillet and sprayed it with Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the pan on medium heat. When the skillet was heated I added the Shrimp, fried the Shrimp in 2 batches so not to overcrowd the skillet. Fried the Shrimp about 3 minutes a side. Ended up with a nice plate full of Shrimp! Love the flavor of the Old Bay Seasoning on the Shrimp.

 

 

As I was frying the Shrimp I started my Cracker Barrel Macaroni and Cheese Dinner. First time I’ve tried the Cracker Barrel Brand of Mac and Cheese. I picked a box of the Sharp Cheddar and Bacon and a box of the White Cheddar which I’m having tonight.

 

 

 

 

Start by boiling 8 cups of water in medium saucepan. Stir in Macaroni.Cook 12 min. or until tender, stirring occasionally. Drain. Do not rinse. Return to pan. Squeeze the Cheese Sauce over hot Macaroni. Stir until blended and serve. Came out nice and cheesy with excellent flavor. Looking forward to trying Sharp Cheddar and Bacon! Shrimp and Seafood is so good with Mac and Cheese! I also baked a loaf of Pillsbury French Bread and had a slice of that also. For Dessert later a Weight Watcher’s Peanut Butter Carmel Ice Cream Candy Bar.

Today’s Menu: Fried Ocean Perch w/ Shells and Cheese

 

 

For Breakfast this morning I had a bowl of Golden Puffs Cereal along with my morning cup of Bigelow Decaf Green Tea. Growing up I loved Sugar Crisps Cereal. Well while at Meijer yesterday I came across a bag of Malt O Meel Golden Puffs, only 100 calories per serving. These taste just like the old Super Sugar Crisps! After Breakfast I grabbed a broom and the leaf blower and cleaned the deck and driveway areas. After that I watered all the new plants outside. Then got some empty plant pots out of the shed and filled them with potting soil and planted Wild Flower Seeds in them. Later after Lunch I headed over to see Dad for a while. Outside it’s a bit cooler out. In the 80’s the past couple of days with lots of sunshine and today cloudy and 65 degrees. For my dinner tonight I prepared Fried Ocean Perch w/ Shells and Cheese.

Then for a side I prepared a box of Annie’s Shells and Real Aged Cheddar. I’ve used Annie’s products in the past and always enjoyed them. The reason I choose Annie’s is on Friday’s Kroger runs an online special of a free product. You just log in to the Kroger site and click on it and it goes on your Kroger Card, very good deal every Friday!

 

 

To prepare it is preparation like most boxed Mac and Cheese. Boil 6 cups of water in a medium sauce pan. Stir in the Pasta and cook 8-10 minutes.When done drain the Pasta. Next add 3 tbsp of low fat Milk to a warm sauce pan. Sprinkle the Cheese packet over the Milk and stir to combine. Finally add the Pasta back to that saucepan and stir until well mixed. And done! Excellent Mac and Cheese! Tender and nice flavor, goes great with the Perch! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.
