Today’s Menu: Crispy Chicken Strips w/ Sharp Cheddar and Bacon Mac/Cheese

Well a Happy Memorial Day to all of you out there! For Breakfast I had the leftover Skillet Potatoes and Ham for Breakfast. to make this I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it off with a Sunnyside Up Egg. The Egg gives the dish such a great creaminess. I also made that morning cup of Bigelow Decaf Green Tea. It’s a near perfect day out there today! Sunny, 81 degrees, and beautiful! After Lunch I went with Mom to a couple of different Cemeteries. We always take flowers out to my brother, grand parents, aunt, and uncle. Back home I got the cart out a took a ride around the neighborhood and enjoyed this beautiful day. For Dinner tonight I prepared Crispy Chicken Strips w/ Sharp Cheddar and Bacon Mac/Cheese.

I used the PERDUE® Crispy Chicken Strips. To prepare it I preheated the oven to 425°F . Sprayed a small baking sheet with cooking spray. Placed frozen strips in single layer on baking sheet. Baked for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn the Strips halfway through heating time. They come out golden brown and delicious! Really enjoy these and so easy to prepare and our favorite by far!

As I was frying the Shrimp I started my Cracker Barrel Macaroni and Cheese Dinner. Second time I’ve tried the Cracker Barrel Brand of Mac and Cheese. Tonight I’m having the Sharp Cheddar and Bacon Mac and Cheese.

Start by boiling 8 cups of water in medium saucepan. Stir in Macaroni.Cook 12 min. or until tender, stirring occasionally. Drain. Do not rinse. Return to pan. Squeeze the Cheddar Cheese and Bcaon Sauce over hot Macaroni. Stir until blended and serve. Came out nice and cheesy with excellent flavor. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Fried Ocean Perch w/ Sharp White Cheddar Mac and Cheese

To start my Friday morning off I Scrambled a couple of Eggs, toasted 2 slices of Healthy Life Whole Grain Bread, and as always my morning cup of Bigelow Decaf Green Tea. Mostly sunny out today and 80 degrees. Went up and had my car washed, really needed it! Drove on over to Walmart, I wanted to check out the Lawn and Garden Department for a few things. Back home got the cart out for a while and drove around the neighborhood and down by the lake. Relaxing day! For Dinner tonight it’s Fried Ocean Perch w/ Sharp White Cheddar Mac and Cheese.

I picked up the Ocean Perch at Kroger the day before. Really love the Kroger Seafood Department. Good selection. I first rinsed the fillets off in cold water and patted dry with a paper towel. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Light Olive Oil, on medium heat. Rinsed the Perch with cold water and patted dry with a paper towel. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!

For a side dish it was leftover Cracker Barrel Macaroni and Cheese Dinner – Sharp White Cheddar. I just reheated the Mac and Cheese leftover from Dinner last night. I put it into a bowl, covered the bowl with a paper towel, and microwaved it for 1 minute and 10 seconds. Heated up great and still delicious. Really enjoyed the Cracker Barrel Mac and Cheese. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Ocean Perch
Ocean perch is mild tasting yet a bit sweet, with a moderately firm texture. The meat is lean, moist and flaky. Large ocean perch develop a coarse texture. Deep-skinned ocean perch with the fat line removed has the most delicate flavor. The flesh is white, though not as light as cod, and it turns opaque white when cooked.Whole fish may have bulging eyes and distended air bladders, which is a result of being brought up from great depths, not an indication of poor quality.

Today’s Menu: Shrimp w/ Sharp White Cheddar Mac and Cheese

For Breakfast this morning I had a Breakfast Sandwich. I toasted a Healthy Life Whole Grain English Muffin, lightly fried some slices of Boar’s Head Sweet Slice Ham, and 1 slice of Sargento Ultra Thin Swiss Cheese. Also had a cup of Bigelow Decaf Green Tea. Heavy rain overnight, some areas 4 inches of rain! A lot flooding in the area. It finally quit raining around Noon. But more heavy rain tonight, about 68 degrees for a high. After Breakfast helped Mom do laundry and did a few things around the house. Later went to the post office and stopped by the bank. For Dinner tonight I prepared Shrimp w/ Sharp White Cheddar Mac and Cheese.

Mom needed a few things from the local Kroger yesterday and I picked up the ingredients for my Dinner tonight! I’m using some Large Shrimp I purchased from the Seafood Counter. to prepare them I first washed them off in cold water and patted dry with paper towels. I then seasoned them with a sprinkle of Sea Salt and Old Bay Seasoning. I use Old Bay on Chicken, Chops, and most Seafood, provides perfect Seasoning.

Next I grabbed a large skillet and sprayed it with Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the pan on medium heat. When the skillet was heated I added the Shrimp, fried the Shrimp in 2 batches so not to overcrowd the skillet. Fried the Shrimp about 3 minutes a side. Ended up with a nice plate full of Shrimp! Love the flavor of the Old Bay Seasoning on the Shrimp.

As I was frying the Shrimp I started my Cracker Barrel Macaroni and Cheese Dinner. First time I’ve tried the Cracker Barrel Brand of Mac and Cheese. I picked a box of the Sharp Cheddar and Bacon and a box of the White Cheddar which I’m having tonight.

Start by boiling 8 cups of water in medium saucepan. Stir in Macaroni.Cook 12 min. or until tender, stirring occasionally. Drain. Do not rinse. Return to pan. Squeeze the Cheese Sauce over hot Macaroni. Stir until blended and serve. Came out nice and cheesy with excellent flavor. Looking forward to trying Sharp Cheddar and Bacon! Shrimp and Seafood is so good with Mac and Cheese! I also baked a loaf of Pillsbury French Bread and had a slice of that also. For Dessert later a Weight Watcher’s Peanut Butter Carmel Ice Cream Candy Bar.

Today’s Menu: Fried Ocean Perch w/ Shells and Cheese

For Breakfast this morning I had a bowl of Golden Puffs Cereal along with my morning cup of Bigelow Decaf Green Tea. Growing up I loved Sugar Crisps Cereal. Well while at Meijer yesterday I came across a bag of Malt O Meel Golden Puffs, only 100 calories per serving. These taste just like the old Super Sugar Crisps! After Breakfast I grabbed a broom and the leaf blower and cleaned the deck and driveway areas. After that I watered all the new plants outside. Then got some empty plant pots out of the shed and filled them with potting soil and planted Wild Flower Seeds in them. Later after Lunch I headed over to see Dad for a while. Outside it’s a bit cooler out. In the 80’s the past couple of days with lots of sunshine and today cloudy and 65 degrees. For my dinner tonight I prepared Fried Ocean Perch w/ Shells and Cheese.

I picked up the Ocean Perch at Kroger  earlier today. Really love the Kroger Seafood Department. Good selection. Added the Fillets to the heated skillet and fried them for 6 minutes. 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!

Then for a side I prepared a box of Annie’s Shells and Real Aged Cheddar. I’ve used Annie’s products in the past and always enjoyed them. The reason I choose Annie’s is on Friday’s Kroger runs an online special of a free product. You just log in to the Kroger site and click on it and it goes on your Kroger Card, very good deal every Friday!

To prepare it is preparation like most boxed Mac and Cheese. Boil 6 cups of water in a medium sauce pan. Stir in the Pasta and cook 8-10 minutes. When done drain the Pasta. Next add 3 tbsp of low fat Milk to a warm sauce pan. Sprinkle the Cheese packet over the Milk and stir to combine. Finally add the Pasta back to that saucepan and stir until well mixed. And done! Excellent Mac and Cheese! Tender and nice flavor, goes great with the Perch! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Annie’s Shells and Real Aged Cheddar
Annie’s Cheddar Mac (as we call it!) is our answer to all those chemically orange-colored cheeses out there. We’ve taken our original Shells & White Cheddar and added a little color to it, naturally! Our totally natural cheese is colored with a plant extract called annatto. Annatto has been used in tropical American cultures for generations to color foods such as butter, cheese and mustard. The annatto tree grows 20 to 30 feet in height and when its seeds are stirred in water, they produce orange annatto dye, also called achiote, to color foods. Annie’s Cheddar Macaroni and cheese is a great alternative for kids who need to have that “orange” cheese on their macaroni.

Today’s Menu: Crunchy Breaded Fish Sticks w/ Whole Grain Mac and Cheese

For Breakfast this morning I toasted a couple of Eggo Waffles, lightly topped with butter, and had my morning cup of Bigelow Decaf Green Tea. Already 49 degrees this morning, warmest in a while. For the day it was mostly cloudy and a high of 70 degrees, about time! After Breakfast I went to Kroger to pick up some groceries for Mom. She was out of a lot things and dad will be home tomorrow after being gone 2 months in the hospital and rehab. Be great to have him back home. After Lunch I pulled out my mobility cart from the shed and cleaned it up. Then swept shed out. I also grabbed the leaf blower and cleaned of the deck and around the driveway. Kept it simple for Dinner tonight. I made some Crunchy Breaded Fish Sticks w/ Whole Grain Mac and Cheese.

So it’s Fish Sticks tonight! I’m using Gorton’s Smart and Crunchy Breaded Fish Sticks. Growing up I lived on Fish Sticks. When I was at Meijer the other day I seen these in the frozen foods and bought a package of them and the Gorton’s Smart and Crunchy Fillets. These are coated with Panko Bread Crumbs and to prepare them I’ll be baking them. I first preheated the oven at 375 degrees. I then took a small baking sheet and lined it with foil. Sprayed the foil with Pam Cooking Spray and lined the Fish Sticks up on the sheet. Then baked them for 22 minutes, flipping them over after 11 minutes.

They came out piping hot, nice crunch from the Panko Bread Crumb Coating and nicely Seasoned. I’ve got another great item for the freezer, a good one to have on hand. Served them with a side of McCormick Tarter Sauce.

For side to go with the Fish Sticks I prepared some Kraft 50% Whole Grain Mac and Cheese. I normally have the regular Mac and Cheese but I seen the 50% Whole Grain at Meijer and picked up a 4 pack of them. It comes in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! Seafood and Mac and Cheese are just a natural pairing. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Stuffed Clams w/ Kraft 50% Whole Grain Mac and Cheese and Baked Whole Grain Bread

To start my day off I toasted a Healthy Life Whole Grain English Muffin, Scrambled some Egg Beater’s Egg Whites, stuffed-clams-w-whole-grain-mac-and-cheese-and-baked-whole-grain-004fried 2 Jennie – O Turkey Breakfast Sausage Links, and had my morning cup of Bigelow Decaf Green Tea. We had a temperature record-setting day here today! 76 degrees but windy and cloudy. So that’s 2 days in a row we’ve 70 degrees or better. But that ends by Saturday morning, only a high of 39 degrees but back in the 60’s by Monday. After Lunch went up and spent most of the afternoon with Dad at the rehab center. On the way back home stopped by Kroger for a couple of items for Mom. For Dinner tonight I prepared Stuffed Clams w/ Kraft 50% Whole Grain Mac and Cheese and Baked Whole Grain Bread.

Giant Garlic Shrimp, Stuffed Clams, and Baked Potato 003
For the Stuffed Clams; I purchased these at Seafood Department at Kroger. They are Matlaw Stuffed Clams (Brand) that they have in the Seafood Case. We have these every so often now,we love them! For my Stuffed Clams I preheated the oven on 425 degrees. Lined a small baking sheet with foil and placed the Clams on it. I sprinkled some Sea Salt on them and a drizzle of Lemon Juice. When the oven was ready I baked the Clams until heated through, about 25 minutes. Meaty and seasoned just right and the Louisiana Remoulade Sauce is perfect to dip it in. Plus they are only $1 per Clam.

For side to go with the Clams I prepared some Kraft 50% Whole Grain Mac and Cheese. I normally have the regularstuffed-clams-w-whole-grain-mac-and-cheese-and-baked-whole-grain-002 Mac and Cheese but I seen the 50% Whole Grain at Meijer and picked up a 4 pack of them. I also baked the other half of the LaBrea Whole Grain Loaf Bread. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Jumbo Butterfly Shrimp w/ Mac and Cheese

Jumbo Butterfly Shrimp w Mac and Cheese 007
For Breakfast this morning I Scrambled 2 medium Eggs and toasted 2 Slices of Healthy Life Whole Grain Bread (lightly buttered). After Breakfast did a couple of loads of Laundry. I got the laundry started and I had to go the bank and stopped and got gas. 20 degrees this morning and it barely hit 32 for a high. Back home finished up the laundry for Mom and then it rest for the remainder of the afternoon. Feeling a little better but still not quite up to par. For Dinner tonight I prepared Jumbo Butterfly Shrimp w/ Mac and Cheese.

Jumbo Butterfly Shrimp w Mac and Cheese 006
I used our family favorite, the frozen Kroger Jumbo Butterfly Shrimp. Easy to prepare, I just preheated the oven to 450 degrees. Grabbed a large baking sheet, lined it with foil and sprayed it with Pam Cooking Spray. When the oven was ready I baked the Shrimp for 12 minutes, turning them over after 6 minutes. Let cool for a couple of minutes and serve. These are fantastic, really nice size Shrimp and lightly breaded to give a nice crunch but not too much to make it mushy as some breading. Great product to have in the freezer. Served them with Heinz Seafood Cocktail Sauce and Louisiana Remoulade Sauce for dipping.

Seasoned Haddock w Mac and Cheese 001
For the Mac and Cheese I used the Kraft Macaroni and Cheese – Triple Cheese. Fish and Mac and Cheese are just a natural pairing. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Seasoned Haddock w/ Mac and Cheese

ekrich-turkey-sausage-hash-browns-002
I love Hash Browns and Sausage in the mornings for Breakfast. So that’s what I’m having this morning. I used Eckrich Smoked Turkey Links. They are very easy to prepare, just heat in a skillet for 6 minutes and done. For the Hash Browns I used Simply Potatoes Shredded Hash Browns. I also had a toasted slice of Healthy Life Whole Grain Bread. I do enjoy a good Breakfast to start the day!

Seasoned Haddock w Mac and Cheese 008
Cloudy out all day but we had a high in the low 60’s. After Breakfast I went to the local Kroger up the road. Just needed a few items and then stopped by the bank before coming back home. After Lunch went and seen my friend at the assisted living center. He’s still hanging on but really struggling to breathe now. I took his wife and son out to lunch, they needed the break. It’s really tough on the family. Back home, just wanted to relax for a while. For Dinner tonight I’m having a Seasoned Haddock w/ Mac and Cheese.

Seasoned Haddock w Green Beans and Fried Polenta 002

I had purchased the Haddock from our local Kroger and had 2 bags of it left in the freezer. So I grabbed a bag and let it thaw in the fridge overnight. I had already rinsed the fillet and cut it into smaller pieces. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is. These make a great Fish Sandwich also!

For the Mac and Cheese I used the Kraft Macaroni and Cheese – Triple Cheese. Fish and Mac and Cheese are just a natural pairing. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Zatarain’s Lemon Pepper Fish-Fri

Big easy lemon squeezy. That’s the secret to an authentic Southern-style fish fry: a crispy combination of corn flour, spices and lemon juice. Just add your favorite fresh fish like trout, redfish, catfish or flounder.

Today’s Menu: Jumbo Butterfly Shrimp w/ Mac and Cheese

Jumbo Butterfly Shrimp w Mac and Cheese 007
For Breakfast I Scrambled 2 medium Eggs, Fried 2 Jennie – O Turkey Breakfast Sausage Links, and toasted 2 Slices of Healthy Life Whole Grain Bread. After Breakfast helped out Mom with a couple of loads of Laundry. Then cleaned the fridge and freezer. From there hit the Food Pantry, cleaning and straighten. Later I had to do some minor repair work to the wheelchair I keep in the trunk of the car, tighten up some wheel axle bolts and repair an arm rest. For Dinner tonight I prepared Jumbo Butterfly Shrimp w/ Mac and Cheese.

I used our favorite, the frozen Kroger Jumbo Butterfly Shrimp So it’s Shrimp tonight. Easy to prepare I just preheated the oven to 450 degrees. Grabbed a large baking sheet, lined it with foil and sprayed it with Pam Cooking Spray. When the oven was ready I baked the Shrimp for 12 minutes, turning them over after 6 minutes. Let cool for a couple of minutes and serve. These were fantastic, really nice size Shrimp and lightly breaded to give a nice crunch but not too much to make it mushy as some breading. Great product to have in the freezer. Served them with Heinz Seafood Cocktail Sauce and Louisiana Remoulade Sauce for dipping.

Seasoned Haddock w Mac and Cheese 001
For the Mac and Cheese I used the Kraft Macaroni and Cheese – Triple Cheese again. Used this for the first time last week and using it again. It comes in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Today’s Menu: Jumbo Butterfly Shrimp w/ Mac and Cheese

Jennie -O Recipe of the Week - Mouth-Watering Turkey Patty Melts 004
For Breakfast I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Just love this skillet meal! And Dad is finally back home and it’s one of his favorite meals also! We had bought Dad an Easy Chair that lifts up to help you get of the chair, and he loves it. Did some things around the house, not a lot to do today. For Dinner I prepared Jumbo Butterfly Shrimp w/ Mac and Cheese.
