Today’s Menu: Fried Catfish Fillet w/ Mac and Cheese

 

 

For Breakfast this morning I prepared a Poached Egg and served it on a toasted slice of Aunt Millie’s Light Whole Grain Bread. Also had my morning cup of Bigelow Decaf Green Tea. Partly Cloudy and 66 Degrees outside today. Got out and got the last of lawn furniture out and cleaned. Then got the cart out of the shed and went around my yard and my neighbor’s yards and sprayed for weeds. A lot of people outside now are wearing the surgical masks. I’ll sure be glad when this virus passes! I hope all of you are staying healthy! So for Dinner tonight I prepared a Fried Catfish Fillet w/ Mac and Cheese.

 

I had the Catfish Fillets in the frezer. I laid the bag in the fridge overnight to thaw.

 

 

 

I rinsed the Fillets off in water and dried them with a paper towel. To prepare them I’ll just need some Morton’s Lite Salt and Zatarain’s Fish Fri Seasoned Seafood Breading Mix. I got a large Cast Iron Skillet sprayed it with Pam Non Stick Spray and added 1 tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. As the skillet was heating I Seasoned the Catfish with the Salt and then got pie pan and added the Breading Mix to it. Then rolled the Fillets in it making sure the Fillets were well covered with Breading. With the Cast Iron heated I added the Fillets. I fried them 4 minutes a side, nice and golden brown. The Zatarain’s Breading Mix give’s it fantastic flavor.

 

To go with my Catfish I prepared a cup of Kraft 50% Whole Grain Mac and Cheese. They come in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For Dessert/Snack later tonight a 100 Calorie Mini Bag of Snyder’s of Hanover Pretzel Sticks and a Sprite Zero to drink.

Today’s Menu: Fried Catfish Fillet w/ Mac and Cheese

 

 

For Breakfast this morning I prepared a Poached Egg and served it on a toasted Thomas Light English Muffin. Also had my morning cup of Bigelow Decaf Green Tea. Partly Cloudy and 48 Degrees outside today. We live in a fairly quiet neighborhood and our street is perhaps the quietest. Even more so of late. I went outside on my Hoveround Chair and just sat outside for about 30 minutes. It was a spooky quiet. No cars went by, there was no sounds of traffic or sirens. Just a flat out dead calm, I can’t quite describe it. Times have really changed all over due to the virus. I hope all of you are staying healthy! So for Dinner tonight I prepared a Fried Catfish Fillet w/ Mac and Cheese.

 

I guess we’ll be using a lot of things from the freezer since we cut our visits to the stores. I had purchased the Catfish from Kroger and had them in the freezer. I laid the bag of Catfish in the fridge overnight to thaw.

Today’s Menu: Salmon Patties w/ Mac and Cheese

 

 

For Breakfast this morning I made Mom and myself Steak and Eggs with Toast. I fried up a couple of the SayersBrook 4 oz. Fillet Mignons, Scrambled up 4 Eggs, and toasted a few slices of Aunt Millie’s Light Whole Grain Bread. I also had a cup of Bigelow Decaf Green Tea and made Mom a cup of Coffee. Mostly cloudy and 60 degrees outside today. After Breakfast I headed off to Meijer. I needed a few items and Mom needed a couple of things also. Back home I hooked up the water hose and sprayed down the wooden deck, a lot dirt build up through the Winter. Then while I had the hose out I sprayed down our outside trash container. Done for the day my Sinuses are kicking in! So for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

 

 

 

In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Light Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

 

 

 

 

For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I like using these because there’s one serving in each cup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Pretzels with a Coke Zero to drink.

Today’s Menu: Baked Clam Strips/Whole Grain Mac and Cheese and Baked Multi Grain Bread Loaf

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 17 degrees this morning and 31 for a high and mostly cloudy out today. I struggled overnight with Phantom Pains. They were bad through out the night. They started about 10:00 last night and continued to almost 10:00 this morning! So little to no sleep or rest. I went back to bed about 11:00 this afternoon and rested and slept till almost 4:00 this afternoon. I needed it! I wanted a good hot meal that was easy to prepare. I went with Baked Clam Strips/Whole Grain Mac and Cheese and Baked Multi Grain Bread Loaf. Couldn’t get much easier!

 

 

For the Clam Strips; I had bought a box of Sea Best Oven Ready Breaded Clam Strips at Meijer last week and had it in the freezer. To prepare them; I first preheat the oven to 425°F. Remove breaded clams strips from package and arrange in single layer on a foil lined baking sheet. Placed the sheet on middle rack of oven and baked for 15 minutes until they were golden brown and internal temperature reached 145°F. These made one good Clam Strip Meal! They browned up perfect and they had just the right amount of Breading. I’ll be buying more of these for sure.

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. After Breakfast I headed off to Meijer. I needed a few items and Mom needed a couple of things also. It seems to be getting tougher to coming up with new things to have for Dinner, especially keeping in mind I have to watch carbs because of my Diabetes 2. There’s a lot of food and recipes out there you just have to stay motivated and find them! Anyway for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

 

 

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. For Breakfast this morning I toasted a Thomas Light English Muffin then I lightly fried some slices of Boar’s Head Sweet Slice Ham. Topped the the Ham with a 1/2 a slice of Boar’s Head Yellow Vernont Cheddar. Love a good Breakfast Sandwich! I also had a cup of Bigelow Decaf Green Tea. Rain on and off all day, high of 40 degrees. Cleaned and straightened up the pantry and then spent the the afternoon watching College Football. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

Today’s Menu: Baked Fish Sticks / Mac and Cheese

 

 

For Breakfast this morning I prepared an Egg White Ham and Cheese Omelet. I used Egg Beater’s Egg Whites, Meijer Diced Ham, Sargento Off the Block Sharp Cheddar Cheese, and Ortega Smoky Chipotle Taco Sauce. Love these Omelets! I also toasted a slice of Aunt Millie’s Light Whole Grain Bread and had a cup of Bigelow Decaf Green Tea. Cloudy but had a high of 59 degrees, a litle light rain. I got my test results back from last week. My Diabetes 2 was well under control and all blood work including my liver were all normal. Not much to do today so I got the cart out of the shed and did a little yard work and took off for a ride around the neighborhood. I won’t have many more days where I can get the cart so I wanted to get it out and enjoy the day. For Dinner tonight I prepared Baked Fish Sticks / Mac and Cheese.

 

I wanted something light and easy to prepare and nothing easier than Baked Fish Sticks / Mac and Cheese. For the Fish Sticks I bought a box of Kroger Crunchy Fish Sticks. First time using these but Mom had bought a box a while back and I tried them then. So i heated the oven on 400° degrees. Grabbed a small baking pan and sprayed with Pam Non Stick Spray. Lined my Fish Sticks up in the pan and baked. I baked them for 15 minutes and done!

 

 

 

 

They baked up to a golden brown and were excellent! They make a perfect light Dinner. Nice crispness and the breading was well seasoned. They were 180 calories and 20 carbs per serving (5 Fish Sticks). Good one to have in the freezer. Served with a side of Tarter Sauce.

 

 

 

 

 

 

For the Mac Cheese I’m using Kraft Whole Grain Macaroni and Cheese. It comes in a 1 serving microwavable cup. To prepare it I removed lid and removed the Cheese Sauce packet from the cup. Added water to the cups fill line and stirred. Microwaved uncovered, on high for 3 1/2 minutes. Do not drain the excess water. Stir in the Cheese Sauce Mix and it was ready. I love the Kraft Mac and Cheese they always comes out perfect. Well Fish Sticks and the Mac and Cheese couldn’t have been any easier to prepare. One by oven and the other microwaved! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Mini Pretzels with a Sprite Zero to drink.

To start my morning off I Scrambled a couple of Eggs and toasted a slice of Aunt Millie’s Light Whole Grain Bread that I Buttered with I Can’t Believe It’s Not Butter. Also had a cup of Bigelow Decaf Green Tea. High Pollen and Mold count out today so I’m dealing with allergies again! Cloudy and 65 degrees outside. Went to Meijer, the Post Office, and then to the ATM, and stopped and got gas. Not much else going on today. For Dinner tonight I prepared Fried Ocean Perch w/ Mac and Cheese.

 

 

 

I picked up the Ocean Perch at Kroger the day before, cleaned them and had them in the fridge. Really love the Kroger Seafood Department, good selections. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Light Olive Oil, on medium heat. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!

 

 

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Fried Catfish Fillet w/ Mac and Cheese and Green Beans

Today’s Menu: Fried Catfish Fillet w/ Mac and Cheese and Green Beans

 

 

To start this Monday Morning off I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugarless Blackberry Jam and my Morning cup of Bigelow Decaf Green Tea. Rain showers this morning, much needed, had some sun later in the day, high of 79 degrees. Did a load of laundry and cleaned the house today, dusted and ran the vacuum. Cleaned out the Microwave, the new one will be here tomorrow. We purchased it from Best Buy and they are delivering it, installing it, and taking the old one with them. We’ve really missed the Microwave the last few days. I didn’t think we used it as much as we do. For Dinner tonight I prepared Fried Catfish Fillet w/ Mac and Cheese and Green Beans.

 

 

I ‘m not a huge fan of Whole Catfish Fillets, I prefer the Catfish Nuggets. But It’s really all the same, Catfish is Catfish. Mom prefers the Fillets, over the Nuggets, so that’s what we had! I purchased the Fillets from Meijer.

 

 

 

 

 

I rinsed the Fillets off in water and dried them with a paper towel. To prepare them I’ll just need some Morton’s Lite Salt and Zatarain’s Fish Fri Seasoned Seafood Breading Mix. I got a large Cast Iron  Skillet sprayed it with Pam Non Stick Spray and added 1 tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. As the skillet was heating I Seasoned the Catfish with the Salt and then got pie pan and added the Breading Mix to it. Then rolled the Fillets in it making sure the Fillets were well covered with Breading. With the Cast Iron heated I added the Fillets. I fried them 4 minutes a side, nice and golden brown. The Zatarain’s Breading Mix give’s it fantastic flavor, I might have the Catfish Fillets more often! I love using Cast Iron Skillets!

 

 

 

So as the Fish was frying I prepared a box of Kraft Macaroni and Cheese, Mom loves this. But it’s too high in calories and carbs for me so I heated up some leftover Green Beans. I saved a lot calories and carbs by going with the Green Beans over the Mac and Cheese, plus I enjoy the Green Beans more than the Mac and Cheese. I also made Mom a small Cast Iron Skillet of Cornbread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Salmon Patties w/ Mac and Cheese

 

 

For Breakfast this morning I toasted a Thomas Light English Muffin that I topped with some Smucker’s Sugar Free Blackberry Jam, love that stuff! Also had a cup of Bigelow Decaf Green Tea. Sunny and 80 degrees out today. After Breakfast I went to Kroger for Mom and then stopped by McDonald’s and picked up Breakfast for her. Very high Pollen count out so I was inside most of the day. Got the leaf blower out early evening and cleaned off the deck and drive way areas. Spent the the afternoon watching College Football. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

 

 

 

 

Ready for the skillet!

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

 

 

 

 

Golden Brown!

In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Light Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

 

 

 

 

 

For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I like using these because there’s one serving in each cup. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.
