Fried Catfish Fillet w/ Mac and Cheese and a Skillet of Cornbread

Today’s Menu: Fried Catfish Fillet w/ Mac and Cheese and a skillet of Cornbread
For Breakfast I prepared a Poached Egg and served it on a slice of tasted Aunt Millie’s Live Carb Smart Wheat Bread. I also heated up 2 Johnsonville Turkey Breakfast Sausage links and had a cup of Bigelow Decaf Green Tea. Very humid outside, rain on and off, and a high of 85 degrees. Still recovering from my injuries, but feeling better. I have good days and bad, today not bad. So I thought I would finally get a Dinner Post in. Hope to be back to 100% soon. For Dinner tonight I prepared Fried Catfish Fillets w/ Mac and Cheese and a skillet of Cornbread.
I had purchased the Catfish Fillets from Kroger and had them in the freezer. I laid the fillets in the fridge overnight to thaw.
I rinsed the Fillets off in water and dried them with a paper towel. To prepare them I’ll just need some Morton’s Lite Salt and Zatarain’s Fish Fri Seasoned Seafood Breading Mix. I got a large Cast Iron Skillet sprayed it with Pam Non Stick Spray and added 1 tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. As the skillet was heating I Seasoned the Catfish with the Salt and then got pie pan and added the Breading Mix to it. Then rolled the Fillets in it making sure the Fillets were well covered with Breading. With the Cast Iron heated I added the Fillets. I fried them 4 minutes a side, nice and golden brown. The Zatarain’s Breading Mix give’s it fantastic flavor.
To go with my Catfish I prepared a cup of Kraft 50% Whole Grain Mac and Cheese. They come in a microwavable plastic container, these are very hard to find anymore. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese!
I also made a small Cast Iron Skillet of Cornbread. Mom loves Cornbread so I made it for her. As always I used Martha White Corn Meal Mix, something I think I could eat every meal. I like a nice fresh and hot slice with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small Cast Iron Skillet just cut the recipe in half and it comes out just right for the skillet size. What a dinner tonight! For Dessert/Snack later a Snapple Diet Lemonade/Tea. Today’s Menu: Salmon Patties w/ Mac and Cheese
Just a cup of Bigelow Decaf Green Tea for Breakfast. 79 degrees and cloudy, humid as always. I had to have Mom at the Dermatologists at 8:30 this morning. Back home I went back to bed. I didn’t sleep well at all last night. I took a 1 hour nap. I’m still achy from my fall over the weekend. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.
To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.
In a large bowl I mixed all the ingredients until it was well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Light Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!
For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I like using these because there’s one serving in each cup. Then for Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Stick Pretzels with a Diet Peach Snapple to drink.

Both canned and fresh fish are a good source of protein and other important nutrients, and one isn’t necessarily healthier than the other. … In fact, a USDA study found slightly higher levels of two omega-3s in canned pink and red salmon than it found in fresh. Canned salmon has other merits, too. Canned salmon is also rich in protein, vitamin D, calcium (from the bones) and healthy omega-3 fats. Omega-3 fats are heart healthy fats. They also promote healthy brain development in babies.

Today’s Menu: Salmon Patties w/ Mac and Cheese
Just a cup of Bigelow Decaf Green Tea for Breakfast. 95 degrees, sunny, and extremely humid. The heat index has at 105 degrees. I had to be at the Doctor at 8:10 this morning, just a check up. Then it was back home for major cleanups. I’ve lived here since 2001 and last night was the worst and strongest storm to this area. We were lucky as a lot of people had damage to their home or car, we had none. Plus a lot of people have been without power since 9:00 last night. So with no air condition in this weather is bad! A lot of areas are still without power. The damage we did have was my garden. I have just 1 maybe 2 Tomato Plants left and 2 or 3 Pepper Plants left. But at least we have power and no other damage, very thankful for that. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

Today’s Menu: Fried Ocean Perch w/ Mac and Cheese
For Breakfast this morning I prepared a toasted Thomas English Muffin that I topped with I Can’t Believe It’s Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. We had heavy rain and thunderstorms overnight again. For the day it’s 68 degrees and cloudy, cooler and no humidity today. After my Tea I went outside and cleaned the yard and deck from the storm last night. Later did a few things inside. For Dinner tonight I prepared Fried Ocean Perch w/ Mac and Cheese.
I picked up the Ocean Perch at Meijer the other day, cleaned them and had them in the fridge. Really love the Meijer Seafood Department, very good selections. To prepare them I preheated a medium size skillet that I had sprayed with Pam Cooking Spray and added Cooking Olive Oil, on medium heat. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them 2 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!
Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack I had a Diet Peach Snapple to drink.

Ocean perch is mild tasting yet a bit sweet, with a moderately firm texture. The meat is lean, moist and flaky. Large ocean perch develop a coarse texture. Deep-skinned ocean perch with the fat line removed has the most delicate flavor. The flesh is white, though not as light as cod, and it turns opaque white when cooked. Whole fish may have bulging eyes and distended air bladders, which is a result of being brought up from great depths, not an indication of poor quality.

For Breakfast this morning I prepared some Simply Potatoes Seasoned Diced Potatoes along with some Ham Slices. That ham for Dinner last night was so good I had to have for Breakfast! I also had a cup of Bigelow Decaf Green Tea. The Ohio Weather was in full gear today. It was pouring the rain this morning and then it switched over to sleet, back to rain and finally to snow. It snowed so hard that it covered the ground. Later back to rain and all the snow melted. Ohio Weather! Mom is feeling better, not 100% yet but much better. Sprayed Lysol all through the house and then wiped everything down in the Kitchen with Lysol Wipes. Not great Weather for my Sinuses. For Dinner tonight I prepared Fried Ocean Perch w/ Mac and Cheese.

It’s Opening Day for the Reds and the Annual Findlay Market/Reds Parade. Growing up while in school I always stayed home to watch the Game! I got some yard work done early. I have all my Pepper and Tomato Plants planted and all are looking good. So with everything done I settled in the Easy Chair and watched the Game. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.
To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers.
