Today’s Menu: Shrimp and Smoked Turkey Sausage Gumbo

To start my day I made one our favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it off with a Sunnyside Up Egg and also made that morning cup of Bigelow Decaf Green Tea. Did some cleaning around the house. Outside its cloudy, rain showers, and a high in the low 40’s. They say we have snow flurries moving in overnight. Went over to see Dad at the rehab center after Lunch, for a while. Back home for Dinner tonight I prepared a personnel favorite, Shrimp and Smoked Turkey Sausage Gumbo.

What’s not to like with one of my favorite meals; Gumbo, Shrimp, and Smoked Turkey Sausage! To make it I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 1/2 Butterball Hardwood Smoked Turkey Sausages (sliced into bite size slices), a bag of Kroger Brand Jumbo Shrimp (that I precooked before adding to the Gumbo), and Frank’s Red Hot Sauce.

The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. It’s very easy to prepare, takes about 25-30 minutes. To start; I just boil the stock that’s in the packet, add the sliced the Turkey Sausage to the stock along with a few shakes of Frank’s Red Hot Sauce and continued to cook for 10-15 minutes. Then I added the Shrimp and simmered another 2-3 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too! I also baked a loaf of Pillsbury French Bread. For dessert later a Weight Watchers Cookies and Cream Ice Cream Bar.

Beans and Smoked Turkey Sausage (Beans and Weenies)

Today’s Menu: Beans and Smoked Turkey Sausage (Beans and Weenies)

For Breakfast I toasted a couple of slices of Healthy Life Whole Grain Bread that I lightly buttered with I Can’t Beans and Smoked Turkey Sausage (Beans and Weenies) 014Believe It’s Not Butter. Then I fried up a couple of Jennie – O Turkey Breakfast Sausage Links and prepared the morning cup of Bigelow Decaf Green Tea. After Breakfast i went up the road to the local Kroger to pick up a few items for Mom and myself. Back home, put everything away and went over to Rehab to see Dad, I was lucky to find this place, they are so nice and Dad is real happy with it! So Monday starts the therapy and building his strength back up. Back home I did some laundry and some light cleaning. For Dinner tonight it’s Beans and Smoked Turkey Sausage (Beans and Weenies). Comfort Food!

Beans and Smoked Turkey Sausage (Beans and Weenies) 001
I’ve been wanting the Sausage and Beans for a while now. So tonight it’s Beans and Weenies, but I kicked this version up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into thin bite size pieces), 3 slices of Jennie – O Turkey Bacon (Fried and Crumbled), 1 can of Bush’s White Chili Beans, 1 can Bush’s Vegetarian Reduced Sodium Baked Beans, 1/4 cup of Red Onion (Chopped), 1 teaspoon Ground Cinnamon, 1 teaspoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, Liquid Smoke (Optional and to taste), a couple of shakes (or more) of Frank’s Red Hot Sauce, and 2 cups of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).
I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients except for the Beans and Smoked Turkey Sausage (Beans and Weenies) 003Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let it simmer. Another set it and forget recipe! After I got the Beans started I fried up 1 1/2 Butterball Hardwood Smoked Turkey Sausages. I first sliced them up into bite size pieces then fried them on medium until they started to brown and removed them from the heat and put them in a small bowl and set aside.

Then using the same skillet I fried the Sausage in I fried 3 slices of Jennie – O Turkey Bacon, actually I fried 5 slices turkey-bacon-and-muenster-cheese-buffalo-burger-w-baked-fries-002actually. Always remember when preparing Bacon to always add 2 extra slices. Because you know you’ll grab a couple of slices, it’s called the Bacon Factor or Bacon Math. I fried it up nice and crisp and when done crumbled it up into small pieces and added it to the Beans. Sausage, Bacon, and Beans are such a natural combo, Bacon gives it that wonderful smoky flavor.

I love dishes that you can set and let them simmer, to me it seems to give food a much richer and deeper flavor. AfterBeans and Smoked Turkey Sausage (Beans and Weenies) 007 a couple of hours I added the Butterball Hardwood Smoked Turkey Sausages to the Beans. Kept the heat on low until it was time for dinner. A good Hearty Meal tonight. You have the smokiness of the Bacon and Liquid Smoke, the Sweetness and Tang of the BBQ Sauce, the Spices, along with the Smoked Turkey Sausage and Beans. I just love all the flavors, a real comfort food favorite! Another plus is the cleanup, just one dutch Oven and 1 skillet to clean. Also baked a loaf of Pillsbury French Bread and had a Diet Dr. Pepper to drink. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Smoked Turkey Sausage Dogs w/ Baked Shoestring Fries

Smoked Turkey Sausage Dogs w Baked Shoestring Fries 007

To start the morning I made a packet of Pioneer White Peppered Gravy, toasted 2 slices of Healthy Life Whole Grain Bread, fried 2 Jennie – O Turkey Sausage Links, and that morning cup of Bigelow Decaf Green Tea. We finally seen a bit of sunshine today! Yesterday was a full day cool and gloomy weather. In the mid 40’s today and a few peeks of the sun. After I had Breakfast I went to McDonald’s to pick up Breakfast for Mom and Dad. Back home did a couple of loads of laundry for Mom. Caught up on everything else so it was an afternoon of College Football. For Dinner tonight its a Smoked Turkey Sausage Dogs w/ Baked Shoestring Fries.

I used the Butterball Hardwood Smoked Turkey Sausage. I cut one of the Sausage Links into Bun length pieces. I Smoked Turkey Sausage Dogs w Vegetarian Baked Beans 003absolutely love the Butterball Hardwood Smoked Turkey Sausage. It’s got such a fantastic flavor and always cooks up just right. To prepare them I used a large skillet, added about a 1/2 tablespoon of Extra Virgin Olive Oil and preheated it on medium heat. Put the Sausage in the skillet when it was heated up and covered with a lid. I turned the Sausage every few minutes to get an even char on them, cooked about 11 minutes total. As always they came out just bursting with flavor and flat-out delicious! I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Bun and topped with French’s Spicy Brown Mustard.

Grilled Cheese and Baked Fries 003
To go with the Sausage Dog I baked up some Alexia Organic Yukon Select Fries. Seasoned them with Morton’s Lite salt and Ground Black Pepper. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right.! Plus they are only 120 calories and 15 net carbs. Served with a side of my favorite Ketchup, Hunt’s Ketchup. I had a Snapple Diet Dr. Pepper to drink. For Dessert later a bowl of Dole Sliced Peaches.

Holiday Turkey Gumbo

Today’s Menu: Holiday Turkey Gumbo

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and reheated a couple of slices of turky-and-sauage-gumbo-003the leftover Ham. Also the morning cup of Bigelow Decaf Green Tea. Not a lot going on today. It being Black Friday there was no way I was going around any shopping areas today! I did get out and go to the bank and stopped and got gas. Back home did a few things around the house. I’m having computer problems since yesterday morning. I can go to 2 or 3 sites or do a couple of functions and my computer becomes sluggish and sometimes freezes up, no solution yet I may have to call to have it looked at. I’m lost without my computer!! Anyway for Dinner tonight it was all leftovers. I prepared a Turkey Sandwich w/ Mashed Potatoes and Green Beans.

For Dinner tonight I prepared a recipe based from a Zatarain’s Recipe I received in an email the other day, Holiday turky-and-sauage-gumbo-001Turkey Gumbo. I’ve left the original recipe at the end of the post. Mine differs in that I just used the Zatarain’s Gumbo Mix with Rice without adding additional ingredients. I’ve made the Gumbo Mix with Rice many times but usually I use Shrimp and Turkey Sausage. This time I’m substituting the Shrimp with leftover Jennie – O Turkey Breast. To prepare the dish I’ll need; 1 – Box of Zatarain’s Gumbo Mix with Rice, Butterball Hardwood Smoked Turkey Sausage (I cooked this up ahead of time and sliced it into smaller pieces), leftover Jennie – O Turkey Breast (pulled and sliced), and Frank’s Red Hot Sauce.

I used a box of Zatarain’s Gumbo Mix with Rice for the Gumbo base. It’s very easy to prepare, takes about 25-30 turky-and-sauage-gumbo-002minutes. I just boiled the stock that was in the packet, sliced Butterball Hardwood Smoked Turkey Sausage, and a few shakes of the Frank’s Red Hot Sauce for 15 minutes. Then I added the leftover Jennie – O Turkey Breast and simmered another 10 minutes. And the Gumbo is ready! It turned out fantastic! Nice flavor and plenty of Rice. The Butterball Turkey sausage and Jennie – O Turkey Breast worked great, made a nice hearty dinner. I just love leftovers! For dessert later a Jello Sugar Free Dark Chocolate Pudding.

1/4 cup chopped green onions

Prep time
35 mins
Cook time
Brown sausage in Dutch oven or large saucepan on medium-high heat. Add onion, bell pepper, celery and garlic; cook and stir 3 minutes or until vegetables begin to soften.
Stir in stock, Rice Mix and bay leaf. Bring to boil. Reduce heat to low; cover and simmer 15 minutes. Add turkey; cook 10 minutes longer or until rice is tender, stirring occasionally. Sprinkle with green onions before serving.
Cooking tip

For turkey stock, try this homemade recipe or use packaged stock: To make homemade turkey stock, add the leftover carcass from the turkey to large stockpot. Add 4 quarts of water, chopped onion, celery, carrots and garlic, bay leaf and fresh or dried parsley; bring to boil. Reduce heat and simmer 1 hour. Strain stock. Use stock to prepare Holiday Turkey Gumbo. Any leftover stock can be frozen for later use.

Today’s Menu: Leftovers – Shrimp and Smoked Turkey Sausage Gumbo w/ Baked French Bread

2 of my 3 Meals today will be leftovers, love leftovers! For Breakfast I’ll be reheating the leftover Skillet Potatoes and Ham, Diced Potato, Egg, Hash 002Ham. to make this I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. It reheats perfect and tastes just as good! Only a high in the 50’s today and partly cloudy. After Breakfast I went to Home Depot to buy some wood stain. I plan on sprucing up the small shelf I got from my neighbor. Then after Lunch I headed up to the assisted living center to see a friend of mine. He’s really going downhill quick and it’s taking a toll on his wife also. Wish I could do something but I don’t guess no one can, just hope he doesn’t suffer. Back at home it’s going to be leftovers for Dinner I’m reheating the Shrimp and Smoked Turkey Sausage Gumbo.

This heats back up perfectly! The pasta holds up great and it maintains the flavor. It also freezes well also. But as good as this it rarely ever sees the freezer! I also heated up the Pillsbury French Bread and had a Diet Peach Snapple to drink. For Dessert later a bowl of Dole Sliced Peaches. I’ve left the original post from last night below, it has the ingredients and instructions. Enjoy!

Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 18 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fries! Plus they are only 120 calories and 15 net carbs. Served with a side of my favorite Ketchup, Hunt’s Ketchup. I had a Snapple Diet Peach to drink. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Beans and Smoked Turkey Sausage (Beans and Weenies)

For Breakfast it was a bowl of Cheerio’s Cereal along with the morning cup of Bigelow Decaf Green Tea. After Beans and Smoked Turkey Sausage (Beans and Weenies) 014Breakfast I started a load of laundry for Mom and then headed out to the local Kroger for Mom. She just needed a few items so I did the shopping for her. Then on the way back I stopped at McDonald’s and picked up Breakfast for her. Back home did a little yard work before the heat and humidity set in for the day. Done with all the major chores so just did a few things around the house that needed done. After Lunch headed up to the hospital to see Dad. He turns 95 today! We thought he was going to get to come home today but he had a bad night last night, sick to his stomach and didn’t sleep all night. So he’ll be there till next week. For Dinner tonight it’s Beans and Smoked Turkey Sausage (Beans and Weenies).

Beans and Smoked Turkey Sausage (Beans and Weenies) 001

Beans and Smoked Turkey Sausage (Beans and Weenies) 003
I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed.

Turkey bacon cooking in skillet.

Then using the same skillet I fried the Sausage in I fried 3 slices of Jennie – O Turkey Bacon, actually I fried 5 slices actually.

Beans and Smoked Turkey Sausage (Beans and Weenies) 007
I love dishes that you can set low and let them simmer, to me it seems to give food a much richer and deeper flavor. After a couple of hours I added the Butterball Hardwood Smoked Turkey Sausages and added it to the Beans. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Smoked Turkey Sausage Dogs w/ Baked Shoestring Fries

For Breakfast this morning I scrambled 1 Egg, cooked up 2 Glier’s Turkey Goetta Patties, toasted 1 slice of Healthy Life Whole Grain Bread (lightly buttered), and had my morning cup of Bigelow Decaf Green Tea. After Breakfast I took Mom’s car and had it washed and the inside cleaned. It’s already so humid out here that it almost feels you can Smoked Turkey Sausage Dogs w Baked Shoestring Fries 007push the air out of the way, terrible humidity again! Here in West Chester today they have an annual Food Truck Rally but it’s just too miserable out to go.You walk out here in our neighborhood all you hear are the hums of air conditioners, the Energy Company’s are making a fortune. Went to Costco at 10:00 when they opened. They only have 5 electric carts for the store, which is pathetic! So if you don’t get there early you won’t get a cart, or at least one that is charged up (they never recharge them at that store). Anyway I was running low on my Nature Made Vitamins, picked up a Shrimp Cocktail Ring, 5 cases of canned goods for our Church Meal Center, and a couple of items Mon needed. That was about my day! For Dinner tonight its Smoked Turkey Sausage Dogs w/ Baked Shoestring Fries.

Today’s Menu: Cast Iron Skillet Turkey Sausage, Rotini Pasta, and Cheese

Cast Iron Skillet Turkey Sausage, Rotini Pasta, and Cheese 013
It was a toasted Healthy Life Whole Grain English Muffin, lightly topped with I Can’t Believe….) and a cup of Bigelow Decaf Green Tea for Breakfast. After Breakfast I headed outside to get a little yard work done as early as I could. It’s going to be a hot one outside today, high in the mid 90’s and high humidity, heat index at 100 degrees and rain showers. Then went to Kroger for Mom, she needed a couple of items. Back home did a few things around the house. For Dinner tonight a Cast Iron Skillet Turkey Sausage, Rotini Pasta, and Cheese.

I came across a recipe in a food magazine that sounded good, but it had a ton of calories and carbs in it. So I made Cast Iron Skillet Turkey Sausage, Rotini Pasta, and Cheese 003some adjustments to it to lower everything and came up with this recipe I’m preparing tonight, Cast Iron Skillet Turkey Sausage, Rotini Pasta, and Cheese. To make the dish I’ll need; 1 cup uncooked Rozini Healthy Harvest Whole Grain Rotini Pasta (Cook Rotini according to package directions; drain), 1 tablespoon Extra Virgin Olive Oil, 2 tablespoons Blue Bonnet Light Butter, 1 1/2 tablespoons Flour, 1/2 cup 2% Milk, 1 cup Shake and Bake Seasoned Panko, 1 tablespoon chopped Parsley, 8 ounces Velveeta 2% Cheese (cubed), 1 link (cut into 1″ slices) Butterball Hardwood Smoked Turkey Sausage.

Cast Iron Skillet Turkey Sausage, Rotini Pasta, and Cheese 004

To prepare the dish I got out my favorite cooking utensil, the Cast Iron Skillet, sprayed it with a light coat of Pam Cooking Spray. To start I cooked the Rotini according to package directions; drain. As the Rotini was boiling I mixed the Panko, Parsley, and Olive Oil together in a bowl.

Cast Iron Skillet Turkey Sausage, Rotini Pasta, and Cheese 007

Next in the Cast Iron Skillet, melted the Butter over medium heat. Stirred in the Flour until smooth; gradually whisk in Milk. Bring it to a boil, stirring constantly. Cook and stir for 2 minutes or until thickened. Add the Cheese; cook and stir until melted. Stir in Rotini and Sausage, until well mixed and covered. Finally, spread the Panko Mixture on top and bake at 350°F for 25 minutes.

Cast Iron Skillet Turkey Sausage, Rotini Pasta, and Cheese 011
What a dish, a Comfort Food for sure! Everything just blends together to make one delicious Skillet of goodness! The Rotini Pasta covered with the Cheese and mixtures and as always the Butterball Turkey Sausage is a meal within itself! And the Panko topping gives nice texture and crunch. A ‘Keeper Recipe” for sure. I also had a slice of Healthy Life Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. Had a Peach Diet Snapple to drink. For dessert later a Jello Sugar Free Dark Chocolate Mousse.
