Italian-Stuffed Pork Tenderloin
Italian-Stuffed Pork TenderloinThis dish requires a bit of extra work, but with pre-packaged ingredients it goes smoothly. Serve with a tossed green salad.

Recipe Ingredients:
2 whole pork tenderloins, about 1 pound each
2 tablespoons butter
1 (8-ounce) package fresh mushrooms, chopped
1/2 cup sliced green onions
1 (6-ounce) package long-grain and wild rice mix, cooked according to package directions and cooled
1 cup chopped pecans, toasted
2 tablespoons chopped fresh parsley
2 teaspoons dried Italian seasoning
1/2 teaspoon salt
1 (10-ounce) container refrigerated Alfredo sauce
3 tablespoons Chardonnay or other dry white wine

Cooking Directions:
1 – Preheat oven to 425°F (220°C).
2 – Cut lengthwise slit in each pork tenderloin, cutting to but not through the other side. Set pork aside.
3 – Melt butter in large saucepan over medium heat. Add mushrooms and green onions; cook until tender. Remove from heat. Stir in cooked long grain and wild rice mix, pecans and parsley. Set aside 3/4 cup of the rice mixture. Spoon remaining rice mixture into 1 1/2-quart casserole; cover and set aside.
4 – Divide 3/4 cup rice mixture between slits in pork tenderloins, spreading evenly in slits. Close slits; secure with toothpicks.
5 – Stir together Italian seasoning and salt in small bowl. Sprinkle evenly over top of pork tenderloins. Place pork tenderloins on rack in shallow roasting pan.
6 – Roast tenderloins, uncovered, for 25 to 30 minutes until internal temperature is 160°F (70°C).
7 – Bake casserole of rice mixture alongside tenderloins.
8 – Meanwhile, for sauce, combine Alfredo sauce and Chardonnay in medium saucepan. Cook and stir over low heat until bubbly.
9 – To serve, spoon rice mixture onto serving platter. Remove toothpicks from tenderloins. Cut pork tenderloins into 1-inch-thick pieces; arrange on rice mixture on platter. Serve sauce with pork and rice mixture.

Festive Stuffed Shells

INGREDIENTS

16 jumbo pasta shells, suitable for stuffing
1 cup sun-dried tomatoes, rehydrated, diced, loosely packed
3 green onions, diced
2 tablespoons ricotta cheese or cream cheese
2 garlic cloves, minced
2 teaspoons rosemary
¾ teaspoon salt, if desired
½ teaspoon freshly ground pepper
1 pound cooked JENNIE-O® Premium Fresh Tender Young Turkey Breast, diced
16 ounces prepared alfredo sauce

DIRECTIONS

1) Heat oven to 325°F.
2) Cook pasta according to package directions and set aside.
3) In bowl add tomatoes, onion, cheese, garlic, rosemary, salt, if desired and pepper. Mix until blended. Add cooked turkey. Blend well.
4) Stuff 1 to 2 tablespoons of turkey mixture into shells and place open side down on baking pan. Cover with alfredo sauce. Bake 15 minutes or until heated through.
* Always cook to an internal temperature of 165°F.

Pumpkin Alfredo with Ricotta Stuffed Shells

Pour the pumpkin Alfredo sauce over the ricotta stuffed shells for a hearty Fall meal.
Ingredients
12 ounces of pasta (about 26 jumbo shells)PBS3
For the Ricotta Filling:
1 cup ricotta
1/4 cup shredded mozzarella
1 large egg
3 fresh basil leaves, minced
3 fresh sage leaves, minced
1 garlic clove, minced
1/4 teaspoon salt
Pinch of crushed red pepper
For the Pumpkin Alfredo Sauce:
2 tablespoons unsalted butter
1 shallot, minced
1 garlic clove, minced
3/4 cup canned pure pumpkin puree
2 to 3 fresh sage
2 tablespoons yogurt or labneh or creme fraiche (basically something tart!)
1/4 cup grated parmesan cheese, plus more for garnish
Pinch of nutmeg
Salt
Freshly cracked black pepper
Directions
1 – Bring a large pot of salted water to a boil. Add pasta shells and cook until al dente, about 8 minutes. Reserve about 1 cup of pasta water and set it aside (we’re going to use it with the sauce later on). Drain the pasta and toss with a teaspoon of olive oil (this will ensure the pasta doesn’t stick). Set aside.
2 – Preheat the one to 375 degrees F. To a small bowl, whisk together the ricotta, mozzarella, egg, minced basil and sage, garlic, salt and crushed red pepper.
3 – In a medium saucepan, set over medium heat. Cook the butter, stirring constantly, until it begins to foam and brown speckles appear. Keep stirring until the foam subsides and the color turns medium brown. Add the shallots and garlic clove and turn down the heat to medium­low. Cook until the shallots have softened, about 1 minute.
4 – Stir in the pumpkin, sprigs of sage, yogurt or labneh or creme fraiche, Parmesan and 1/2 to 3/4 cup reserved pasta water. The sauce should be sauce­y! It will thicken as it bakes with the shells so feel free to add a bit more pasta water, if needed.
5 – Stuff each shell with a spoonful of the ricotta mixture and arrange in a 2 3/4-Qt braiser or 13×9 inch casserole dish. Pour the sauce around the shells and cover with a sheet of foil. Bake for 15 to 20 minutes.

Had Breakfast and then off to Walmart and Kroger, stocked up on sale items from both stores. There was a steady and bitter cold wind blowing all day, which made it feel that much colder. It still amazes me the difference in prices between Grocery Stores. It’s even more amazing that some shoppers don’t even notice! Stocked up on a lot of can items that were on sale. Got home and got some laundry out of the way and straightened up the pantry. For dinner tonight I prepared a Blackened Chicken Alfredo Pasta w/ Wheat Bread.

 

 

 

 

 

I love getting Recipe Emails from various websites and food brands. I’ve found many a recipe from the emails including tonight’s dinner, Blackened Chicken Alfredo Pasta. I got this recipe from the Zatarain’s Email, and it’s a good one! Chicken and Pasta is good together no matter what, but you Blacken the Chicken and add Alfredo Sauce to the Pasta, and as one famous Cajun Chef says”Bam”! To prepare it I’ll need the following; boneless skinless chicken breast halves,ZATARAIN’S® Big & Zesty Blackened Creole Seasoning, Blue Bonnet Light Stick Butter, 2% Milk, Water, and a Package of Kroger brand Alfredo Pasta and Sauce. The recipe called for a package of ZATARAIN’S® Alfredo Pasta Dinner Mix but I couldn’t find one at Walmart or Kroger earlier today.

 

 

 

 

Blackened Chicken Alfredo Pasta 002

Then preparing it was easy! To start I coated the chicken on both sides with Blackened Creole Seasoning. Heated a Cast Iron Skillet on high heat for about 5 minutes, until very hot. Reduce heat to medium-high. Melt butter in skillet. Add chicken; cook 5 minutes per side or until cooked through. Remove from skillet; keep warm. I cleaned the skillet for the Alfredo Pasta. Mix the Milk, Water and Pasta Dinner Mix in the skillet. Bring it to a boil, stirring occasionally. Reduce the heat to low; cover and simmer 15 minutes or until pasta is tender, stirring it occasionally. Remove from heat. Let stand 5 minutes. Cut the chicken into strips. Serve with the Pasta. Then get ready to enjoy one delicious Blackened Chicken dinner! The Zatarain’s Blackened Creole Seasoning is my favorite for Blackening, Spicy with some nice heat, but not overpowering. And the Alfredo Pasta and Sauce was spot on, perfect seasoning and fantastic flavor. The original recipe is at the bottom of the post, and it’s another one of those keeper recipes! I also had a couple of slices of Klosterman Wheat Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

 

 

 

 

 
Blackened Chicken Alfredo Pasta Recipe

Recipe Description

* Mix milk, water and Pasta Dinner Mix in skillet. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 15 minutes or until pasta is tender, stirring occasionally.
* Remove from heat. Let stand 5 minutes. Cut chicken into strips. Serve with pasta.
