Today’s Menu: 3 Bean Buffalo Chili Spaghetti w/ Shredded Sharp Cheddar and Oyster Crackers

3 Bean Buffalo Chili Spaghetti 006

I started fasting last night at 10:00 till my doctor’s appointment at 10:00 this morning, nothing but water. Had a check-up and they took blood work to check my sugar, cholesterol, and such. I’ll get the results in 4 days or so. Another chilly day out there, sunny but breezy and only a high of 32 degrees. Warmer starting tomorrow but a lot rain coming with it. For dinner tonight another comfort food classic, 3 Bean Buffalo Chili w/ Shredded Sharp Cheddar and Oyster Crackers!

I had some of the delicious 3 Bean Buffalo Chili leftover so I heated that up for my Chili topping. The Chili contains; Wild Idea Buffalo’s Ground Buffalo which is the best tasting Ground Buffalo that I’ve found, the 3 Beans I use are 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans (rinsed), and 1 Can (15 oz.) Great Northern Beans (rinsed). Then I mix in 1 White Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours. Then you have yourself some good, comfort food Chili!

For the Pasta I used Ronzoni Healthy Harvest Whole Wheat Spaghetti, my favorite Pasta. The best tasting Whole Wheat Pasta I’ve found, and tried a few of them. It’s 180 calories and 35 net carbs per serving. After boiling I served it up and topped it with the perfect topping, 3 Bean Buffalo Chili and Sargento Reduced Fat Shredded Sharp Cheddar Cheese! This was too good! Served with a side of Skyline Chili Oyster Crackers. This is what’s called a 4 Way around this area; Spaghetti, Chili, Beans, and Cheese. You can add Chopped Onions to make it a 5 Way. Anyway you choose to make it it’s Delicious! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Here’s something to absorb: One serving of RONZONI HEALTHY HARVEST pasta has over 20% of your daily recommended fiber intake – but did you know that fiber is good for you in more ways than just digestion?

People with diets high in fiber have a lower risk for weight gain, obesity, development of insulin resistance and diabetes. Fiber also prevents constipation, hemorrhoids and diverticulosis, but it also helps reduce the risk of certain chronic diseases like colon and breast cancer. Fiber may help lower LDL (bad) cholesterol and total cholesterol, therefore reducing the risk of heart disease. It can also help lower blood sugar to better manage diabetes.

Dietary fiber is the edible part of plants, primarily carbohydrates that are resistant to digestion and absorption in the small intestine. Fiber may be digested by fermentation in the large intestine. By eating high fiber foods you feel fuller, eat less, with fewer absorbed calories.

Fiber comes in two basic forms – soluble and insoluble. Soluble fiber is found in fruits, vegetables, seeds, brown rice, oats and barley. It prevents or reduces the absorption of certain substances into the bloodstream. Insoluble fiber is found mainly in whole grains and on the outside of seeds, fruits, legumes, and other foods. It is like a sponge that swells within the intestine to promote more efficient elimination and alleviate some digestive disorders.

Fiber is found only in plant foods and passes through the digestive tract without being completely broken down. Being indigestible, fiber provides no nutrients to the body, which is why for many years it was removed from processed foods like white bread. But, nutritionists have since discovered that fiber performs valuable functions precisely because it is not digested, and it is essential to good health.

Today’s Menu: Spaghetti and Meatballs

Another cloudy day but it’s in the low 50’s, not bad for December! Went to Walmart and picked up a few items that were on sale for Christmas Gifts and picked up a couple of items for tonight’s dinner. Tonight one of my favorites, Spaghetti and Meatballs.

Spaghetti LaRosa Sauce

I used Ronzoni Healthy Harvest Whole Wheat Spaghetti, my favorite Pasta. Then for my Meatballs I used Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are the best I’ve found, fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs.

I normally use Bella Vita Low Carb Pasta Sauce but here lately I’ve been using LaRosa’s Original Pasta Sauce. I added my Meatballs and Sauce to a Sauce Pan and then added a small jar of Green Giant Sliced Mushrooms and simmered on low until all was heated. I topped the Spaghetti and Meatballs with some fresh grated Murray’s Parmigiano-Reggiano Cheese. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

spaghetti-turkey-meatballs-002
Wow some heavy rains the past 24 hours! They say the heaviest rains have passed but still more on the way. A little cooler days coming in for next week. For dinner tonight I prepared some Spaghetti and Meatballs. Whole Wheat Spaghetti, Turkey Meatballs, and Low Carb Pasta Sauce.

I used Ronzoni Healthy Harvest Whole Wheat Spaghetti and Turkey Meatballs along with Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are the best I’ve found, fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs. Topped everything with some fresh grated Parmesan Cheese, fresh grated Dutch Gouda and Bella Vita Low Carb Pasta Sauce (Meat Flavored). I was out of fresh Mushrooms so I added a jar of Pennsylvania Dutch Sliced Mushrooms to the Sauce as it simmered. For dessert later a Del Monte No Sugar Added Peach Chunks Cup.

Today’s Menu: Baked Spaghetti w/ Baked Garlic Knot Rolls

Woke up early this morning and had to turn the heat on, down to 35 degrees! Turned out to be a sunny but cool Spring day. Our grass cutter came around today and cut the grass for the first time this year. Back into the mid 60s Sunday. For dinner tonight a new comfort food; Baked Spaghetti w/ Baked Garlic Knot Bread. First time I tried this and everyone loved it! Plus I lowered the calories and carbs by using reduced and low fat ingredients.

Like most recipes it’s amazing the calories you can cut just by using reduced, low fat, and fat free ingredients. Instead of Ground Beef I Baked Spaghetti 005used Honeysuckle White Extra Lean Ground Turkey which is a 101 calorie difference, and that’s just one item! I also used Ronzoni Healthy Harvest Whole Grain Spaghetti, Philly Cream Cheese 1/3 Less Fat, Daisy Reduced Sour Cream, and Daisy 2% Cottage Cheese. I also added a few shakes of Frank’s Hot Sauce that I added to the Turkey as it was cooking. All simple replacements that can add up on reducing calories and carbs. The original, from Taste of home, recipe serves 12, I cut in half to serve 6.

To prepare it in a large skillet, cook the Ground Turkey and Onions over medium heat until meat is no longer pink; drain. Add the tomato sauce, Frank’s Red Hot Sauce, mushrooms, garlic powder and oregano. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring occasionally. Meanwhile, cook the spaghetti according to package directions; drain. In a small bowl, combine the cream cheese, cottage cheese, sour cream and chives; beat well. Place half of spaghetti in a greased 2-qt. baking dish. Spoon cream cheese mixture evenly over top. Layer with remaining spaghetti and all of the Turkey mixture. Toss bread crumbs and butter; sprinkle over the top. Cover and bake at 350° for 20 minutes. Uncover; bake 5-10 minutes longer until heated through. The bread crumbs provide a nice crunchy topping and the taste is delicious! Another keeper recipe! I left the website link original recipe from Taste of Home at the end of the post. I served with Walmart Bakery Garlic Knot Rolls that I baked. For dessert later a Weight Watchers Vanilla and Chocolate Swirl Ice Cream Cone.

Today’s Menu: Shrimp Linguine and Garlic Knots BreadShrimp Linguine 006
By just saying “Shrimp Linguine” it sounds delicious! I’ve been wanting Shrimp for sometime now and with the Linguine and Garlic Knots Bread it sounded perfect for dinner. I used Kroger Brand Jumbo Shrimp along with Ronzoni Healthy Harvest 100% Whole Grain Linguine. The bread was new one from Walmart Bakery, Savory Garlic Knots.

To prepare the dinner I preheated the oven to 425 degrees for the bread which will bake for 7 minutes. I boiled the water for my pasta and cooked the pasta until al dente according to package directions, 13 minutes adding Sea Salt for seasoning. While linguine is cooking, I melted the I Can’t Believe It’s Not Butter in a large skillet. Add the garlic, and Shrimp Linguine 004saute briefly to release flavor. Add cream; heat just to boiling, stirring frequently. Lower heat, and stir in shrimp, parsley, basil, and thyme. Continue cooking until shrimp are just heated through. Do not overcook shrimp! Remove sauce from heat. I then drained the pasta, and tossed lightly with the Shrimp and Sauce. Toss again with cheese, and salt and pepper to taste. Served it with fresh baked Garlic Knot Bread and the Shrimp Fest was on! A really easy recipe for Shrimp Linguine. The pasta is 100% Whole grain and is 190 calories and 39 carbs. The Shrimp with the sauce comes out savory and is the perfect topping for the Linguine. For dinner tomorrow it will be the leftovers of this meal! it was absolutely delicious! The Shrimp in the Cream Sauce on top of the Linguine is just too good. And then the Garlic Knot Bread was a fantastic Bread. I’ll be getting more of this my next visit to Walmart. For dessert later a 100 calorie package of the Dole Banana Dark Chocolate Dippers.
