Today’s Menu: Cumin Spiced Pork Chops w/ Canned Green Beans and Sweet Corn on the Cob
For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 87 degrees, not as humid, and windy. About 10:00 this morning I went to Ross, Ohio with a friend to pick up some some fresh Produce. I got some Sweet Corn, 3 lbs. Half Runner Green Beans, Tomatoes for Mom and a neighbor, and South Carolina Peaches. I could eat a bushel of these Peaches! Back home, no need to water the garden the rain took care of that this morning. I cleaned the house this afternoon, ran the vacuum and dusted. Then I gave the house a good For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Canned Green Beans and Sweet Corn on the Cob.
I bought a 2 Chop Package from my Meijer the other day. To to prepare my Chops I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it, preheat the oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150°, turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible tasty Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!
I also prepared a Quart Jar of the Canned Green Beans. I cooked them with a piece of Fatback Pork in a kettle. Love these Canned Green Beans, they are so fresh tasting! I could have Green Beans every day, love them! It’s so good having fresh Beans in the Winter!
For another side I boiled a couple of Ears of the Sweet Corn. It came out so good. I seasoned it with Morton’s Light Salt and Blue Bonnet Light Butter. I had ordered a couple of ears from Meijer yesterday on my delivery order. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

For Breakfast this morning I prepared a Breakfast Sandwich. I used Dietz Sliced Virginia Ham, a slice of Swiss Cheese, and a toasted Thomas Light English Muffin. I also had a cup of Bigelow Decaf Green Tea. 37 degrees, snow flurries on and off and windy outside today. Had nothing to do today so I caught up some shows I had recorded and some Football. Very relaxing day! For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Canned Green Beans and Sweet Corn on the Cob.

Today’s Menu: Boneless Pork Ribeye w/ Green Beans and Sweet Corn on the Cob
For Breakfast this morning I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam and had a cup of Bigelow Decaf Green Tea. Rained out all day. We had a high of 45 degrees. I did a load of laundry after Breakfast and after that nothing! I was caught up on everything so it was relaxing all day. Caught up on some shows I had recorded. For Dinner tonight it’s a Boneless Pork Ribeye w/ Green Beans and Sweet Corn on the Cob.
I had a package of 2 AdapTable Chophouse Seasoned Boneless Pork Ribeye, Seasoned with the Chophouse – Garlic, Onion and Bell Pepper in the freezer . I’m so happy that Meijer started carrying the AdapTable Products! Anyway I sat the package in the fridge overnight to thaw.
I’ll be preparing them on the stove in a Cast Iron Skillet. To prepare them I heated one tablespoon of oil in a skillet on medium-high. Cooked the Chops in a covered skillet for 8-9 minutes per side until the product reaches 145°F on a meat thermometer. Remove them from heat, and let them rest for 3 minutes. And serve!
I prepared a Quart Jar of the Canned Green Beans. I cooked them with a piece of Salt Pork in a kettle. Love these Canned Green Beans, they are so fresh tasting! I could have Green Beans every day, love them!
I also boiled a few Ears of Green Giant Mini Sweet Corn. To prepare them I boiled the Ears until done. Then when ready to eat I sliced the Kernels of Corn off and served it like that. I also had a couple Aunt Millie’s Live Carb Smart Dinner Rolls. For Dessert/Snack later a bowl of Skinny Pop – Popcorn with a Diet Peach Snapple to drink.

Today’s Menu: Boneless Pork Loin Chops w/ Cut Green Beans, Whole Kernel Sweet White Corn and Baked Dinner Rolls
For Breakfast I had some Simply Potatoes Southwestern Style Shredded Hash Browns, 2 Links of Johnsonville Turkey Breakfast Sausage Links, and a cup of Bigelow Decaf Green Tea. Rainy and gloomy out all day, we had a high of 72 degrees. I was going to run to the store for Mom but I didn’t want to go out in the weather so I made a delivery order from Meijer for her. With the Virus picking back up I try to limit my visits to the grocery stores. Just did a few chores on the inside today. For Dinner tonight I prepared Boneless Pork Loin Chops w/ Cut Green Beans, Whole Kernel Sweet White Corn and Baked Dinner Rolls.
While at Meijer I had picked up a package of AdapTable Meals – Roasted Garlic and Herb Pork Loin Chops, Seasoned With: Garlic, Onion, Tomato and Olive Oil. These are easy to prepare and so Delicious! I’ll be preparing them by Skillet.
To prepare them I heat one tablespoon of Cooking Olive Oil in a skillet on medium-high. I cooked the chops in a covered skillet for 2 1/2 minutes per side until it reaches 145°F on my meat thermometer. Removed from the heat, let them rest for 3 minutes. These came out Delicious! Very well seasoned, tender and moist as always.
These came out just as Delicious as the other ones we tried! Seasoned just right and the Chops came out moist and juicy! You have to give the AdapTable Products a try!
For a side I heated up a can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. I just love Green Beans, all Beans!
Then for a second side it was a can of Green Giant Whole Kernel Sweet Corn. Just emptied the Corn into a small saucepan and heated to a boil, and served! Very good Sweet Corn. I also heated up some Aunt Millie’s Live Carb Smart Dinner Rolls. For Dessert later a Jello Sugar Free Dark Cherry Jello.

I bought another of the AdapTable Pork Products at my last visit to Meijer. The Chophouse Seasoned Boneless Pork Ribeye, Seasoned with the Chophouse – Garlic, Onion and Bell Pepper. I’m so happy that Meijer started carrying the AdapTable Products!

Today’s Menu: Green Beans, Sweet Corn, Potatoes and Cornbread
Just a cup of Bigelow Decaf Green Tea for Breakfast. High of 76 degrees, mostly sunny and windy out today. A beautiful day to start this 4th of July Weekend! I went to Kroger for Mom after my Tea. Then I stopped by the bank for her and picked up Breakfast at McDonald’s for her. Back home I did a little yard work and then just enjoyed this beautiful day! Rode the cart around the neighborhood. Later gave a neighbor a hand painting his deck. I’m starting a new tradition, Meatless Friday. At least for this Friday! I prepared Green Beans, Sweet Corn, Potatoes and Cornbread.
When we went to Jungle Jim’s last week we loaded up on Vegetables and Fruits. So Mom had prepared some of the 1/2 Runner Green Beans yesterday. So I’m heating up the leftovers for my Dinner tonight.
For the Corn, we purchased a dozen Ears of Yellow and White Sweetcorn. For that I boiled an Ear of it until done. Then when ready to eat I sliced the Kernels of Corn off and served it like that.
For the Potatoes, they were Russet Potatoes that we purchased at Jungle Jim’s also. Mom had already prepared those by peeling them, slicing, and boiling. I just reheat them and serve. Seasoned with Salt, Pepper, and Butter.
Finally for the Cornbread, Mom had prepared that yesterday. So I just heated that up and cut a slice of it, added Butter and ready to eat. So I got off pretty easy, I just heated everything up and served! I like going Meatless on a Friday, at least this Friday1 For Dessert later a 90 Calorie Cup of Breyer’s Chocolate Ice Cream.
