Today’s Menu: Crispy Chicken Strips w/ Baked Shoestring Fries

It was a toasted Healthy Life Whole Grain English Muffin (topped w/ I Can’t Believe It’s Not Butter) and a cup of Bigelow Decaf Green Tea for Breakfast, love those Muffins! After Breakfast I headed out to Meijer and then stopped by Kroger for a couple of items. Caught up on all cleaning and jobs around the house. Did a few things on the computer and then got the cart out for most of the afternoon enjoying the day! It was mostly clouded and a high of 81 degrees. Love getting out in the fresh air and sunshine! For Dinner tonight I prepared Crispy Chicken Strips w/ Baked Shoestring Fries.


I used the PERDUE® Crispy Chicken Strips. To prepare it I preheated the oven to 425°F . Sprayed a small baking Perdue Crispy Chicken Stripssheet with cooking spray. Placed frozen strips in single layer on baking sheet. Baked for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn the Strips halfway through heating time. They come out golden brown and delicious! Really enjoy these! Had a side of JB’s Fat Boy Sticky Stuff BBQ Sauce for dipping.

Then for a side I baked some Alexia Organic Yukon Select Fries. I normally have Ore Ida Crinkle Fries but I wanted to change it up a bit so I’m going with the Alexia Organic Yukon Select Fries again. The more I have these the more I’m liking them! Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 18 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fries! Plus they are only 120 calories and 15 net carbs. Had a side of Hunt’s Ketchup for the fries. For dessert later a Weight Watcher’s English Toffee Crunch Ice Bar.






PERDUE® Crispy Chicken Strips

Fully Cooked strips are marinated and breaded. Product is in a net weight (26 oz.) bags. Frozen.PERDUE® Crispy Chicken Strips

Conventional/Toaster Oven (Preferred Methods) Preheat Oven to 425°F. Spray baking sheet with cooking spray. Place frozen strips in single layer on baking sheet. Bake on middle oven rack for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn patties halfway through heating time. Microwave Oven Place 4-6 frozen strips in single layer on a microwave safe plate lined with paper towel. Heat, uncovered, on high for 2 to 3 minutes, turning halfway through heating time. Let stand for 1 to 2 minutes before serving.

Today’s Menu: BBQ Buffalo Short Rib Sandwich w/ Baked Fries

We ended up with 5″ or 6″ of snow, 10″-12″ just south of us. They’re calling for another 1″ overnight plus the bitter cold Artic blast comes in with it. They said it will struggle to hit 5 degrees for at least a couple of days. Finished up some laundry early this morning after Breakfast. Then I took Mom to Kroger to pick up a few items we needed. The main roads were all clear, just snow on the side roads. For dinner tonight I used the leftover Buffalo Short Ribs from last night’s dinner. I prepared BBQ Buffalo Short Rib Sandwich w/ Baked Fries.




Yesterday’s Buffalo Wine Braised Short Ribs makes today’s BBQ Buffalo Short Rib Sandwich. I used the leftovers and reheated it in a small sauce pan on medium heat. Served it on an Aunt Millie’s Reduced Calorie Whole grain Bun. Topped it with JB’s Fat Boy Chipotle BBQ Sauce. JB’s BBQ Sauces are the best I’ve ever found. They have several different kinds and all are incredible! To go with Sandwich I baked some Ore Ida Steak Fries.

Chipotle Mango Meatballs

The second I read this recipe from on an email from the Food Channel, I knew I had to make it soon and pass it along! Chipotle Mango Meatballs, it just sounds good. And it uses one of my all-time favorites BBQ Sauces JB’s Fat Boy Sauces! It’s off the Food Channel website which is stocked full of delicious recipes, check them out sometime.




Chipotle Mango Meatballs
1 (26 ounces) bag Turkey meatballs
2 cups JB’s Fat Boy Chipotle BBQ Sauce
2 large mangos, peeled, pitted, cubed
1 teaspoon chipotle seasoning, dried (optional)

1 – Bake meatballs according to package directions.
2 -In a medium saucepan, combine barbecue sauce, mango cubes and chipotle seasoning; stir to blend. Simmer over low heat for 15 to 20 minutes, stirring occasionally.
3 – Add cooked meatballs to sauce and simmer for 5 to7 minutes. Serve warm.
