Fried Catfish Fillet w/ Mac and Cheese and a Skillet of Cornbread

Today’s Menu: Fried Catfish Fillet w/ Mac and Cheese and a skillet of Cornbread
For Breakfast I prepared a Poached Egg and served it on a slice of tasted Aunt Millie’s Live Carb Smart Wheat Bread. I also heated up 2 Johnsonville Turkey Breakfast Sausage links and had a cup of Bigelow Decaf Green Tea. Very humid outside, rain on and off, and a high of 85 degrees. Still recovering from my injuries, but feeling better. I have good days and bad, today not bad. So I thought I would finally get a Dinner Post in. Hope to be back to 100% soon. For Dinner tonight I prepared Fried Catfish Fillets w/ Mac and Cheese and a skillet of Cornbread.
I had purchased the Catfish Fillets from Kroger and had them in the freezer. I laid the fillets in the fridge overnight to thaw.
I rinsed the Fillets off in water and dried them with a paper towel. To prepare them I’ll just need some Morton’s Lite Salt and Zatarain’s Fish Fri Seasoned Seafood Breading Mix. I got a large Cast Iron Skillet sprayed it with Pam Non Stick Spray and added 1 tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. As the skillet was heating I Seasoned the Catfish with the Salt and then got pie pan and added the Breading Mix to it. Then rolled the Fillets in it making sure the Fillets were well covered with Breading. With the Cast Iron heated I added the Fillets. I fried them 4 minutes a side, nice and golden brown. The Zatarain’s Breading Mix give’s it fantastic flavor.
To go with my Catfish I prepared a cup of Kraft 50% Whole Grain Mac and Cheese. They come in a microwavable plastic container, these are very hard to find anymore. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese!
I also made a small Cast Iron Skillet of Cornbread. Mom loves Cornbread so I made it for her. As always I used Martha White Corn Meal Mix, something I think I could eat every meal. I like a nice fresh and hot slice with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small Cast Iron Skillet just cut the recipe in half and it comes out just right for the skillet size. What a dinner tonight! For Dessert/Snack later a Snapple Diet Lemonade/Tea. Today’s Menu: Creamy Tomato Soup w/ Grilled Cheese Sandwich
To start this day off I prepared my morning cup of Bigelow Decaf Green Tea. 87 degrees and mostly sunny out, a bit more humid than it’s been. Once again they came over to see if they could trace down the trouble with our cable TV. The picture freezes up from time to time and they can’t seem to fix it. The tech replaced a couple of things to see if that works, wait and see I guess. Later I cleaned up the shed. Then I cleaned off the deck and driveway. For Dinner tonight I prepared Creamy Tomato Soup w/ Grilled Cheese Sandwich.
Keeping it simple for Dinner, Creamy Tomato Soup and a Grilled Cheese. Fantastic Comfort Food! I heated up a can of Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using for quite some time now. So creamy with a fantastic flavor and it’s 110 calories and 19 carbs. Just empty the contents into a small sauce pan and heat on medium, stirring often, until heated. And it’s ready to go and so good!
Then for my Grilled Cheese I’ll be using; Kraft Deli Deluxe Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Aunt Millie’s Light Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert/Snack tonight I had a 100 Calorie Mini Bag of Snyder’s Stick Pretzels with a Coke Zero to drink.

Played around on the computer and watched some College Basketball. That’s it and that was my day! For Dinner tonight it’s the perfect Comfort Food! I prepared Chunky Baked Potato Soup with Cheddar and Bacon Bits w/ Grilled Cheese.
The wind was really blowing out there today so what better for Dinner than Potato Soup with a Grilled Cheese! I’ve always loved Soup and Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits is one of my favorites! Easy to prepare item; just empty the contents of the can into a sauce pan and heat. Heated it on medium low heat, stirring often. I love a thick and hearty Soup and this one is perfect. Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits is one of the best there is, at least to me.

Just a cup of Bigelow Decaf Green Tea for Breakfast. 33 degrees and cloudy, the winds gave us a chill factor of 20 degrees. Had to have Mom over for her Radiation Treatment, 12 to go! The Doctor checked her today and said everything was good! Back home I cleaned the house today, dusted and vacuumed. That was about it for the day. For Dinner tonight I prepared a 4 oz. Buffalo Cheese Burger w/ Baked Fries.
For my Burger I used the Wild Idea Buffalo Premium 4 oz. Burger. Same great taste and quality as the bigger Wild Idea Buffalo Burgers but these are 4 oz. Just love all the Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small Cast Iron Skillet that I sprayed with Pam Cooking Spray and 1/2 tablespoon of Extra Light Olive Oil, seasoned my Burger with the Wild Idea Omnivore Salt. I then pan fried it about 3 minutes per side, and done. After I flipped the Burger I added a slice of Kraft Deli Style Sharp Cheddar Cheese. I’m serving it on a Aunt Millie’s Live Carb Smart Bun.
I also baked some Ore Ida Crinkle Cut Fries, served these with a side of Hunt’s Ketchup for dipping. For Dessert later a Jello Sugar Free Dark Chocolate Pudding Cup.

For Breakfast this morning I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had my morning cup of Bigelow Decaf Green Tea. 62 degrees with heavy rain out today. I had to have Mom at the Treatment Center for her 5th Treatment, 15 to go! Her face is already showing improvement! All of the local creeks and rivers are close to flooding. Further South of us the Ohio River is expected to be over flood stage by the weekend. For Dinner I prepared a Breakfast for Dinner – Seasoned Diced Potatoes, Bacon, and Scrambled Eggs.
I prepared some Simply Potatoes Seasoned Diced Potatoes. Just love using all the Simply Potatoes Products, always easy to prepare, fresh and delicious Potato Dishes. These come seasoned with Steakhouse type of Seasoning, I added some Sea Salt.
For the Bacon I fried up a package of Kroger Private Selection Center Cut Double Smoked Bacon. We’ve been using this Bacon as our Bacon of choice for a while now. It’s an excellent tasting Bacon that fries up perfect! There’s 50 calories per serving, 2 slices.
I also Scrambled a couple of Medium Sized Eggs. When Scrambling them I added a sprinkle of Kraft 2% Shredded Sharp Cheddar Cheese. Nothing like a good Breakfast for Dinner! For Dessert later some Honeycrisp Apple Slices.

Today’s Menu: Sweet Italian Turkey Sausage w/ Baked Chili Fries
Started the morning off with a cup of Bigelow Decaf Green Tea. After my Tea I headed off to Meijer. I got there about 8:10 and they were quite busy already. And on top of that they were very short handed of employees, as are most businesses. Found everything I needed and headed out. On the way home I stopped by McDonald’s and picked up Breakfast for Mom. Back home I cleaned off the deck and driveway, a real mess. For Dinner tonight I prepared Sweet Italian Turkey Sausage w/ Baked Chili Fries.
While at Meijer I picked up a package of Jennie – O Turkey Sweet Italian Sausages. These are always so Delicious and so easy to prepare. I pan fried them, using Pam w/ Olive Oil Cooking Spray and no oil needed. Heated the pan on medium and cooked a total of about 14 minutes, turning the Sausages occasionally. They fry up plump and brown, as always Jennie – O Products always have that fresh taste to them. The Sausages have 160 calories and 0 carbs per Sausage. I served them on Aunt Millie’s Live Carb Smart Hot Dog Buns and topped with French’s Spicy Brown Mustard. Love these!
For my Chili Fries I baked some Ore Ida Crinkle Fries. Another easy to prepare and Delicious item. I normally love having Hunt’s Ketchup with them but this time I’m covering them with Chili and Cheese!
For the Chili I’m using some of my 3 Bean Turkey Chili. I had a small container of the Chili in the Freezer. I sat it in the fridge overnight to thaw. I heated it up in a small sauce pan on low until heated through. I then got some of my Fries and topped them with the Chili and Kraft 2% Shredded Sharp Cheddar Cheese. Fries and Chili, love them! For Dessert later a Jello Sugar Free Dark Cherry Jello.

To start this rainy day off I prepared a bag of Simply Potatoes Seasoned Diced Potatoes. To go with the Potatoes I heated up a Cook’s Ham Steak. Ham and Potatoes , my favorite! I also had my morning cup of Bigelow Decaf Green Tea. 44 degrees with a lot of rain. The Temperature slowly dropped throughout the day. Then later tonight they say it will turn to freezing rain and sleet. Then tomorrow, snow on top of it. They are saying anywhere from 3-5 inches of snow. Hopefully little to no freezing rain! After Lunch I made a delivery order from Walgreen for some melting salt and some spare batteries. Did a few things around the house. For Dinner tonight I prepared Creamy Tomato Soup w/ Grilled Cheese Sandwich.

My favorite Tomato Soup by far. I’ve been using for quite some time now. So creamy with a fantastic flavor and it’s 110 calories and 19 carbs. Just empty the contents into a small sauce pan and heat on medium, stirring often, until heated. And it’s ready to go and so good!
Then for my Grilled Cheese I’ll be using; Kraft Deli Deluxe Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Aunt Millie’s Light Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert/Snack tonight I had a 100 Calorie Mini Bag of Snyder’s Pretzel Sticks with a Coke Zero to drink.

Today’s Menu: Fried Yellow Lake Perch w/ Mac and Cheese and Baked French Bread
Just a cup of Bigelow Decaf Green Tea for Breakfast. Cloudy, a high of 58 degrees and cool breeze blowing out there today. After Tea I went to Meijer for a few items. Back home nothing to do today, which is good because my Sinuses are killing me today. Big change in the weather and temperature. It should clear up in a day or so, hopefully. For Dinner tonight I prepared Fried Yellow Lake Perch w/ Mac and Cheese and Baked French Bread.
I purchased more of the Yellow Lake Perch from Meijer earlier today. I love this Yellow Lake Perch! I rinsed the Fillets in cold water then patted them dry and put them in a Hefty Plastic Bag and on into the fridge until ready to use. I love using Yellow Lake Perch, fries up a beautiful golden brown and like most fresh water fish has a fantastic taste. It’s not too often I find Yellow Lake Perch so I grabbed these when I saw them.
I then seasoned them with Sea Salt and rolled the fillets in my favorite Breading Mix, Zatarain’s Crispy Southern Fish Fri. Pan fried them in Bertolli Cooking Olive Oil, on medium heat for 3 minutes per side. They came out with a golden brown crust and were delicious! I love Fish!
To go with my Perch I prepared a cup of Kraft Mac and Cheese. They come in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

Just a cup of Bigelow Decaf Green Tea for Breakfast. 77 degrees, very windy and partly cloudy out today. I had to return a rake I bought from Meijer, it came apart after using it 1 time. While at Meijer I picked up a couple of other items also. On the way back I picked up Breakfast for Mom at McDonald’s. Too windy to do a lot outside today. Did a few things in the house and then cleaned out the shed. For Dinner tonight I prepared Fried Yellow Lake Perch w/ Mac and Cheese and Baked French Bread.
