Today’s Menu: Fried Walleye Fillet w/ Mac and Cheese

For Breakfast morning I fried up some Glier’s Turkey Goetta. We love Goetta it makes one perfect Breakfast treat! With the Goetta I made some Simply Potatoes Hash Browns and had a Sunny Side Up Egg. And as always I had my morning cup of Bigelow Decaf Green Tea. Our coldest morning in a while out there this morning, 26 degrees. 42 degrees for a high, sunny and windy out today. I went to Kroger for Mom. She needed all the ingredients to make her Chex Cereal Mix. On the way back I stopped by the Bank for her and filled her car up with gas. Back home I was sort of slow. I had a bad Sinus Headache all day. This weather we have needs to stay cold or warm. Flop Flopping gets my Sinuses in bad shape! Did a load of laundry and did some light cleaning around the house. For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

 

I had a couple of Walleye Fillets in the freezer that I had purchased from Meijer. I sat a Fillet in the fridge overnight to thaw. To prepare it I first rinsed the fillets in cold water and patted it dry with a paper towel. Then I seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

 

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Fried Yellow Lake Perch w/ Mac and Cheese and Baked French Bread

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. Cloudy, a high of 58 degrees and cool breeze blowing out there today. After Tea I went to Meijer for a few items. Back home nothing to do today, which is good because my Sinuses are killing me today. Big change in the weather and temperature. It should clear up in a day or so, hopefully. For Dinner tonight I prepared Fried Yellow Lake Perch w/ Mac and Cheese and Baked French Bread.

 

I purchased more of the Yellow Lake Perch from Meijer earlier today. I love this Yellow Lake Perch! I rinsed the Fillets in cold water then patted them dry and put them in a Hefty Plastic Bag and on into the fridge until ready to use. I love using Yellow Lake Perch, fries up a beautiful golden brown and like most fresh water fish has a fantastic taste. It’s not too often I find Yellow Lake Perch so I grabbed these when I saw them.

 

I then seasoned them with Sea Salt and rolled the fillets in my favorite Breading Mix, Zatarain’s Crispy Southern Fish Fri. Pan fried them in Bertolli Cooking Olive Oil, on medium heat for 3 minutes per side. They came out with a golden brown crust and were delicious! I love Fish!

 

 

 

 

To go with my Perch I prepared a cup of Kraft Mac and Cheese. They come in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

Just a cup of Bigelow Decaf Green Tea for Breakfast. 77 degrees, very windy and partly cloudy out today. I had to return a rake I bought from Meijer, it came apart after using it 1 time. While at Meijer I picked up a couple of other items also. On the way back I picked up Breakfast for Mom at McDonald’s. Too windy to do a lot outside today. Did a few things in the house and then cleaned out the shed. For Dinner tonight I prepared Fried Yellow Lake Perch w/ Mac and Cheese and Baked French Bread.

 

I purchased the Yellow Lake Perch from Meijer this morning. I rinsed the Fillets in cold water then patted them dry and put them in a Hefty Plastic Bag and on into the fridge until ready to use. I love using Yellow Lake Perch, fries up a beautiful golden brown and like most fresh water fish has a fantastic taste. It’s not too often I find Yellow Lake Perch so I grabbed these when I seen them.

 

I then seasoned them with Sea Salt and rolled the fillets in my favorite Breading Mix, Zatarain’s Crispy Southern Fish Fri. Pan fried them in Bertolli Cooking Olive Oil, on medium heat for 3 minutes per side. They came out with a golden brown crust and delicious! I love Fish!

Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! I also baked a loaf of Pillsbury French Bread. Today’s Menu: Creamy Tomato Soup w/ Grilled Cheese Sandwich

 

To start my morning off I made a cup of Bigelow Decaf Green Tea. 90 degrees, humid, and a short passing shower. The heat index is around 100 degrees. I picked a friend of mine up after Breakfast and we went to Jungle Jim’s International Market. She had never been and wanted to see how great this store is, and she was amazed! Too humid to do anything much outside. Stayed in and relaxed. So for Dinner tonight I prepared Creamy Tomato Soup w/ Grilled Cheese Sandwich.

 

 

Just too hot to have much of an appetite so when I want something light, what better than Creamy Tomato Soup with a Grilled Cheese Sandwich. I heated up a can of Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using for quite some time now. So creamy with a fantastic flavor and it’s 110 calories and 19 carbs. Just empty the contents into a small sauce pan and heat on medium, stirring often, until heated. And it’s ready to go and so good!

 

Then for my Grilled Cheese I’ll be using; Kraft Deli Deluxe Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Aunt Millie’s Light Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert tonight I had a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Fried Catfish Fillet w/ Mac and Cheese and a skillet of Cornbread

 

For Breakfast I had my morning cup of Bigelow Decaf Green Tea. 59 degrees and sunny out today. Got the cart out of the shed along with a rake and leaf blower and did some yard work. Then sprayed for weeds. We have a lot of weeds this year. Weeds and Moles! More Moles than I have ever seen. I had to out more the Mole Bait and then got a couple of neighbors yards for them. Good to be outside! So for Dinner tonight I prepared Fried Catfish Fillets w/ Mac and Cheese and a skillet of Cornbread.

 

I had purchased the Catfish Fillets from Meijer and had them in the freezer. I laid the fillets in the fridge overnight to thaw.

 

I rinsed the Fillets off in water and dried them with a paper towel. To prepare them I’ll just need some Morton’s Lite Salt and Zatarain’s Fish Fri Seasoned Seafood Breading Mix. I got a large Cast Iron Skillet sprayed it with Pam Non Stick Spray and added 1 tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. As the skillet was heating I Seasoned the Catfish with the Salt and then got pie pan and added the Breading Mix to it. Then rolled the Fillets in it making sure the Fillets were well covered with Breading. With the Cast Iron heated I added the Fillets. I fried them 4 minutes a side, nice and golden brown. The Zatarain’s Breading Mix give’s it fantastic flavor.

 

To go with my Catfish I prepared a cup of Kraft 50% Whole Grain Mac and Cheese. They come in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese!

 

I also made a small Cast Iron Skillet of Cornbread. Mom loves Cornbread so I made it for her. As always I used Martha White Corn Meal Mix, something I think I could eat every meal. I like a nice fresh and hot slice with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small Cast Iron Skillet just cut the recipe in half and it comes out just right for the skillet size. What a dinner tonight! For Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels and a Diet Peach Snapple to drink.

Today’s Menu: Catfish Nuggets w/ Mac and Cheese

 

 

 

For Breakfast this morning I toasted a Thomas Light English Muffin and topped with some Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. We had a high of 41 degrees today and partly cloudy. Above freezing, about time! After Breakfast I headed to Meijer for a few items. Stopped by Wendy’s and picked up Breakfast fir Mom. A bit later I took her car to the Car Wash. I had to get all the salt and grime off of it and vacuumed the inside. For Dinner tonight Catfish Nuggets w/ Mac and Cheese.

 

Picked up the Catfish Nuggets at Kroger the other day and had them in the freezer. I sat them in the fridge overnight to thaw. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.

Today’s Menu: Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries

 

 

For Breakfast this morning I Scrambled a couple of Eggs and toasted a Thomas Light English Muffin that I topped with I Can’t Believe It’s Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. 82 degrees and mostly cloudy out today. After Breakfast I took my car up and had it washed and I vacuumed out the inside. Back home raked some leaves before the grass mower showed up. For Dinner tonight I prepared a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

 

I picked up a loaf the Goldminer California Sourdough Bread at Kroger on my last visit and had it in the freezer. I laid 4 slices in the fridge overnight to thaw. I love this Bread especially grilled! But don’t have too often because of the calories and carbs. To prepare the Sandwich I’ll need; Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French’s Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Goldminer California Sourdough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees, for the Fries.

 

While the griddle was heating I got the Sandwich ready to grill. Took a slice of the Sour Dough Bread and topped it with some of the Kraft Mayo, the Boar’s Head Ham, the Sargento Swiss, French’s Mustard, and added the top slice of the Sour Dough Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 3 minutes. Until both sides were golden brown! I love Grilled Sandwiches!

 

I also baked some Ore Ida Crinkle Cut Fries, served with a side of Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Stick Pretzels with a Diet Peach Snapple to drink.

Today’s Menu: Breaded Catfish Strips w/ Mac and Cheese

 

 

For Breakfast this morning I Poached an Egg and served it on a toasted Thomas Light English Muffin. I also had a cup of Bigelow Decaf Green Tea for Breakfast. 87 degrees, humid, with rain showers out today. After Breakfast I took Mom to Meijer, she wanted to buy some books. That’s Mom’s favorite thing to do at night, read books. Stopped at McDonald’s and picked up Breakfast for her. Back home did a load of laundry and did a few things around the house. For Dinner tonight its Breaded Catfish Strips w/ Mac and Cheese.

 

I’m having the remaining Louisiana Crawfish Company Breaded Catfish Strips that I ordered from the Louisiana Crawfish Company. These were a bit Spicy for Mom’s taste so I had the remainder for Dinner. Mom made herself a small Meatloaf for her Dinner.

 

The Catfish Strips come Seasoned and Breaded. All I do is prepare it!. I grabbed a large skillet, sprayed it with Pam Non Stick Spray and added 2 tablespoons of Extra Light Olive Oil. Heated the skillet on medium heat. With the skillet heated I added the Catfish Strips.

 

I fried the Catfish 9 minutes, flipping the strips over after 4 minutes. I cooked the Strips in 2 batches so not to overcrowd the skillet. When done I laid the Strips on a paper towel lined plate. The paper towel well absorb any extra Oil. The Catfish Strips are delicious! Seasoned just right with excellent Breading. The Breading does have a Cajun kick to it but nothing overpowering. We’ll purchase more of these after we run out from the Louisiana Crawfish Company.

 

To go with the Catfish Strips I prepared a cup of Kraft 50% Whole Grain Mac and Cheese. They come in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For Dessert/Snack a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Just a cup of Bigelow Decaf Green Tea for Breakfast. 77 degrees with rain showers all day. Really tired this morning I had the Phantom Pains most of the night again! They finally stopped around 6:00 this morning but the damage was done. Bad headache this morning and very tired. I did a load of laundry and then it was back to bed to catch up on some sleep! For Dinner tonight its Breaded Catfish Strips w/ Mac and Cheese.

 

I’m trying another new product for Dinner tonight, Breaded Catfish Strips. These are from the Louisiana Crawfish Company. I ordered these Breaded Catfish Strips along with some Breaded Crawfish Tails and Breaded Gator Bites. So between these and the Omaha Steak Products I’ve purchased we have some great variety of foods to chose from!
