Today’s Menu: Creole Seasoned Baked Salmon Pieces w/ Mac and Cheese

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 81 degrees and mostly sunny out today. After Tea I had to go back to Meijer for a few items for Mom and to grab a few items I forgot to get there the other day. Back home got the cart out and did a little yard work. For Dinner tonight I prepared Creole Seasoned Baked Salmon Pieces w/ Mac and Cheese.

I had no clue on Dinner tonight! Then while at Meijer I came across of Salmon Bites or Pieces. It was a small package of just odd and end pieces of Salmon they had leftover and they packaged them up. They looked good so I grabbed a package.To make the Salmon I’ll need; the Salmon Pieces, Extra Light Olive Oil, McCormick Grinder Sea Salt, and Zatarain’s Creole Seasoning.

To prepare it; I first preheated the oven to 400 degrees. Next I got a small baking pan and sprayed it with Pam Cooking Spray and added a 1/2 tablespoon of Extra Light Olive Oil. I seasoned the Salmon Fillet with 1/2 tablespoon of the Extra Light Olive Oil, Grinder Sea Salt and Creole Seasoning. I put the Fillet in the pan; skin side down. Baked it for 13 minutes; until done and fork flaky. The Salmon came out perfect! Done just right with excellent seasoning. I had also bought a jar of Desert Pepper Peach Mango Salsa to put on the Salmon. Excellent Salsa!

To go with my Salmon I prepared a cup of Kraft 50% Whole Grain Mac and Cheese. They come in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels and a Diet Dr. Pepper to drink. And they finally have the Diet Dr. Pepper back in stock, small 12 oz. Plastic Bottles of it.

Baked Ham and Swiss Sub w/ Baked Fries

Today’s Menu: Baked Ham and Swiss Sub w/ Baked Fries

 

 

For Breakfast Mom made some Whole Grain Pancakes. I topped them with Log Cabin Sugar Free Maple Syrup and I Can’t Believe Its Not Butter. Also had a cup of Bigelow Decaf Green Tea. 86 degrees, humid, and mostly sunny here in beautiful Down Town West Chester! Feeling somewhat better today, at least the headaches stopped. After Lunch I got the leaf blower out and cleaned off the deck and driveway areas. For Dinner tonight I prepared a Baked Ham and Swiss Sub w/ Baked Fries.

 

 

I hadn’t made a Baked Ham and Swiss Sub in a while and it sure sounded good! So for my Sub I’ll need; Perfection Mini Sub Buns, Boar’s Head Sweet Sliced Ham, 2 Slices Kroger Brand Swiss Cheese, Emeril’s Deli Style Mustard, Kraft Light Mayo w/ Olive Oil, and Kraft Fat Free Zesty Italian Dressing.

 

 

I first turned the oven on 400 degrees. To make my Sub I took the bottom half of the Bun and added the Kraft Mayo, next I added the Ham, topped that with the 2 slices of Swiss Cheese, And topped it with the top half of the Bun.

 

 

I then laid the Sub on a small baking sheet and topped the Sub with the Kraft Italian Dressing. And then it baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Baked Ham and Swiss Subs!

 

 

 

 

 

 

To go with my Hoagie I baked some Ore Ida Crinkle Cut Fries, served with a side of Hunt’s Ketchup. For Dessert later a bowl of Breyer’s Carb Smart Chocolate Ice Cream.
