Today’s Menu: Turkey Sausage, Turkey Pepperoni 7″ Whole Grain Crust Pizza

 

 
For Breakfast this morning I reheated the leftover Pork Chop from last night. Then I prepared some Simply Potatoes Shredded Hashbrowns, toasted 2 slices of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. Went out to get the Sunday Papers and its a cold one out there this morning, 18 degrees! For the day it was sunny and 39 degrees. After I ate I went to McDonald’s and picked up Breakfast for Mom. Finished up some laundry Mom had started before she went to Church. After Lunch I headed over to see Dad at Rehab. He’s wanting to come home, he’s homesick and bored. It shouldn’t be too much longer before they’ll release him. Hopefully he can stay home once he gets here. Back home watched some College Basketball and relaxed. For Dinner tonight I prepared a Turkey Sausage, Turkey Pepperoni 7″ Whole Grain Crust Pizza.

 


To make the Pizza I used a Mama Mary’s 7″ Whole Grain Pizza Crust. For toppings I used Jennie – O Ground Mild Breakfast Sausage, Hormel Turkey Pepperoni, Mushrooms, Sliced Green and Black Olives, Sargento Shredded Mozzarella Cheese, and Ragu Homestyle Pizza Sauce.

 

 

 

 

To prepare my Pizza; I first preheated my oven to 450 degrees. I then got a medium size skillet, sprayed it with Pam Cooking Spray and heated it on medium heat. Next I got the roll of Jennie – O Turkey Sausage out and sliced about 1/4 of the roll off. I put the remainder in a plastic bag and put it back in the fridge to use later for a meal. I crumbled the Sausage and fried until done. Removed it from the skillet onto a paper towel lined plate and set aside.

 

 

 

I removed the pizza crust from package. Lightly brushed crust with Extra Light Olive Oil. I then gathered my toppings up. The Black Olives are already sliced but the Green Olives come whole and I had to slice them. I then topped the crust with with; the Ragu Pizza Sauce, the Sargento Mozzarella Cheese, Hormel Turkey Pepperoni, Jennie – O Turkey Sausage, and finally the Black and Green Olives. The order of layers is all up to you.

 

 

 

Next I lowered the oven temperature to 425 degrees F. Then baked on oven Pizza Pan (middle position) for about 10 minutes. You can turn the oven on broil if you want to get the crust crisper if you want. I stopped at 10 minutes and it came out perfect! The Crust baked up with a nice crunch to it and all the ingredients worked great together. I love adding these Pizza Nights! For Dessert tonight a Weight Watcher’s Cookies and Cream Ice Cream Bar.

I had to fast from mid-night to 8:00 this morning. I had my 4 month check up at the Family Doctor – sugar, cholesterol and such. Hopefully all be well. After the Doctor visit I had to stop for gas and stopped by the ATM at the bank. Skipped Breakfast and waited till Lunch time to eat. After Lunch headed out to go see Dad. He wasn’t feeling too good today, upset stomach. Back home, I really didn’t feel like cooking today. Then Mom called ans wanted to know if I would order a Pizza for Dinner tonight! The Kitchen is Closed!

 

 

 

Dominos Pizza

Pizza’s few more calories and carbs than what I normally like to have for dinner but it had been quite a while since I had one and Mom wanted one, so Pizza it is! We ordered a Domino’s Hand Tossed Medium Pizza with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, Black Olives, and Green Olives. As always the Pizza arrived on time, hot and delicious! For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar. And for the Kitchen, It reopens tomorrow!

To start my day I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Dominos Pizza 002Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. Our neighbor had to get our morning papers for me this morning. The driveway had ice on it and I’ve learned my Hoveround doesn’t do well on ice! It’s one cold morning out there, 3 degrees and a wind chill of -7! It only warmed up to a high of 13 degrees, but the wind chill kept it around zero or below. I drove Mom over to where she gets her hair done in Fairfield and back home for the day. They said we have 1 more day of the bitter cold before a little warmer weather moves in, in the 40’s. Just did a few things around the house and then settled in for an afternoon of Football and Basketball. For Dinner tonight, the Kitchen is Closed! Its Domino’s Pizza tonight!

 

 
I enrolled us in the Domino’s Pizza Rewards Program. Mom and Dad order from there quite often, often enough we Dominos Pizzahave enough points for a free 2 – Topping Medium Pizza! A few more calories and carbs than what I normally like to have for dinner but it had been quite a while since I had one and it sounded good, and love the clean up afterwards! We ordered a Domino’s Hand Tossed Medium Pizza with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, Black Olives, and Green Olives. We had to pay a bit extra for the extra items, but very little. As always the Pizza arrived on time, hot and delicious! For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar. And for the Kitchen, It reopens tomorrow!

Today’s Menu: Leftovers – Banquet Homestyle Bakes Pizza Pasta w/ Cheesy Bread

 
For Breakfast this morning it was Simply Potato Shredded Hash Browns, some Meijer Diced Ham, toasted 1 slice of Banquet Homestyle Bakes Pizza Pasta 004Healthy Life Whole Grain Bread, and that morning cup of Bigelow Decaf Green Tea. Mixed together Hash Browns and Ham, made a good Hash! Grabbed a quick shower and then out the door. I went to Walmart, looking for some new weights and workout equipment. Ended up buying a new weight set. Sort of cool this morning, about 25 degrees, but it warmed up to about 47 degrees and sunny all afternoon. Sat outside for a bit, enjoying that sunshine! Not much else going on today. For Dinner tonight I reheated the leftover Banquet Homestyle Bakes Pizza Pasta. I left the original post below with ingredients and cooking instructions, enjoy!

Oh I love this Pizza Pasta! This is one of my favorite boxed foods, Banquet Homestyle Bakes Pizza Pasta. Nothing like a quick, easy and delicious comfort food. But here’s another product I love and it’s getting harder and harder to find, I can only find it at Walmart or online now!

 

 

 

 
Anyway it’s got two of my favorites in it, pasta and pizza! The box contains 1 can of Pizza Sauce w/ Pepperoni and banquet-pizza-pasta-001Sausage and 1 Pouch of Rotini Pasta. I also added a few slices of Turkey Pepperoni and sliced Portabello Mushrooms to the mix. For the preparation you can bake it or prepare it on the stove top, which is how I prepared it. Add 1 cup of water, stir and mix, and simmer and you have your dinner! This came out fantastic! Really had a good Pizza flavor to it. The Sauce with the Mushrooms, Sausage, and Pepperoni provides the great flavoring. Easily prepared and makes a hearty and delicious meal.

Along with the Pizza Pasta I also prepared some Baked Cheesy Bread. Another easy one, using Healthy Life Whole Grain Bread, Sargento Reduced Fat Shredded Mozzarella Cheese, and I Can’t Believe It’s Not Butter. Just Butter the Bread and add your Cheese on top. Then bake on 400 degrees until the Bread is toasted and Cheese is melted.

Had a light Breakfast to start the day. I toasted a Jennie – O Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Also had the morning cup of Bigelow Decaf Green Tea. Started a load of laundry and headed out Kroger for a few items for my Mom and myself. On the way back stopped by the bank and got gas. Outside it’s been a cloudy day and a high around 37 degrees. Not much else going on so I ran a couple of scans on my computer. Then kicked back the rest of the day. For Dinner tonight, it’s Pizza Night! I prepared a Turkey Sausage, Turkey Pepperoni, Mushroom, and Olive Pizza, on a Whole Grain Pizza Crust.

For Breakfast I broke out the Goetta again! I prepared some Glier’s Turkey Goetta and prepared some Simply Potatoes Hash Browns. I just love the combination of Turkey Goetta and Hash Browns. I also had my usual cup of Bigelow Decaf Green Tea. The rain showers have returned after drying out for a couple of days. High in the mid 80’s and humid, as usual. Ran an errand for Mom and then I stopped by Walmart Vision Center to have my glasses adjusted. Then went to the hospital to see a friend of mine that had surgery yesterday, she’s doing good and should be home soon! Back home and puttered around the house doing a few things to finish out the day. For Dinner tonight I prepared a Turkey Pepperoni and Turkey Sausage Pita Bread Pizzas.

I used Joseph’s Flax/Oat Bran and Stone Ground Whole Wheat Pita Bread for my Pizza Pie instead of regular Dough Pizza Pie. I love using Joseph’s Pita Breads, always fresh and they’re only 60 calories, 1.5 grams fat, and 5 net carbs! A huge saving of calories and carbs over using normal Pizza Crust, without sacrificing taste. I preheated the oven on 400 degrees. To bake the Pita Pizzas I used a large Cookie Sheet. To prepare them I brushed them with a light coat of Extra Virgin Olive Oil, the coating of Oil browns it up just right. I then baked it for 5 minutes, just to brown it up a bit. Removed them from the oven and made my Pizzas.

For my toppings I used Ragu Homestyle Pizza Sauce, Jennie – O Lean Turkey Breakfast Sausage, Hormel Turkey Pepperoni, Sliced Black and Green Olives, sliced Baby Bella Mushrooms, 2 Anchovies Fillets, and Sargento Reduced Fat Shredded Mozzarella Cheese.

It took less than 10 minutes in the oven until everything heated up and the Cheese melted.Pizza is served! Everything combined makes one delicious Pizza! And the good thing is you can load these Pita Bread Pizzas up with toppings and still not have a lot of calories and carbs, my type of Pizza! Bakes up ans tastes like a Thin-Crust Pizza For dessert later a Jello Sugar Free Dark Chocolate Mousse.

It was a cup of Bigelow Decaf Green Tea and a toasted Healthy Life Whole Grain English Muffin for Breakfast this morning. After Breakfast I had to move all items under the Kitchen and 2 bathroom sinks. Then cleared off the kitchen counters. The Pest Control came this afternoon and started our treatment of Carpenter Ants. Several neighbors also were being treated today. We’ve had a slight problem with them since Duke Energy plowed down the woods behind us. So after the sprayed I had to move everything back, fun day! Glad to get it done though. Got the leaf blower out and cleaned the deck and driveway of leaves and such. So I couldn’t put everything back in the kitchen cabinets for about 3 hours, till the spray dried. And by then I sure didn’t feel like cooking. So the kitchen is closed and its a pizza from Domino’s.

We had a light frost this morning but the sun was out early so it didn’t last long. For Breakfast this morning it was a Poached Egg, 2 Jennie – O Turkey Breakfast Sausage Links, 1 toasted slice of Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Had to take Dad to the hospital this morning, just for he’s monthly blood work. Sunny and breezy day out today, a high in the 50’s. Cleaned up outside with the leaf blower then did some light cleaning inside. I got the 4 wheel cart out and cleaned it up, too chilly to get it out though. So for dinner tonight I prepared a family favorite, Cast Iron Skillet Pizza – Turkey Pepperoni, Turkey Sausage, Olives and Mushroom.

Cast Iron Skillet Pizza, it uses my favorite piece of cookware (Cast Iron Skillet) and it’s making one of my favorite foods Pizza. In the original recipe it calls for making your own dough for the Pizza Pie. I do not have a very good baking history using yeast, I’m down right terrible! So I just used Pillsbury Classic Pizza Crust when making this. For my toppings I’m using; Hormel Turkey Pepperoni, Jennie – O Turkey Ground Breakfast Sausage, Sliced Mushrooms, Sliced Black Olives, Sliced Green Olives, Sargento Shredded Mozzarella Cheese, and Ragu Original Pizza Sauce. To start; Using a medium size Skillet, I fried the Jennie – O Turkey Ground Breakfast Sausage ahead of time. When that was done I drained what little grease there was and put the Sausage in a small bowl, and set aside.

Ready to bake!

I preheated the oven at 425 degrees. I then took out a large Cast Iron Skillet, spraying it with Pam Cooking Spray w/ Olive Oil and added a tablespoon of Extra Virgin Olive Oil. Got the tube of Pillsbury Pizza Crust from the fridge and removed it from the packaging. I then got a flour board out and added a little bit of flour and Cornmeal to it. I then took the Pizza Dough on it and formed a ball with it. Sprinkled on some Cornmeal, not a lot, and rolled it half way out. I didn’t fully roll it out because I wanted to add it to Cast Iron Skillet and work it out by hand, fully covering the bottom of the Skillet. I flipped the Dough Crust one time, that way I had a light coating of the Olive Oil on both sides. I then added my toppings; Hormel Turkey Pepperoni, Jennie – O Turkey Ground Breakfast Sausage, Sliced Mushrooms, Sliced Black Olives, Sliced Green Olives, Sargento Reduced Fat Shredded Mozzarella Cheese, and Ragu Original Pizza Sauce. Slid that baby into the oven and waited for it to get done! Baked it a total of about 12 minutes.

It came bubbling hot and just flat out delicious! All the toppings and Sauce work great together, this makes on delicious Pizza. As all Pizzas you decide what toppings you want to use. It’s my family’s favorite Pizza Recipe, thanks to fellow blogger Amanda! I’ve left the original recipe below. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

 

 

 

 

 

CAST IRON SKILLET PIZZA:

INGREDIENTS

2 1/2 cups bread flour
1/2 tsp dry active yeast
1 cup + 3 Tbsp warm water
2 tsp olive oil, plus more to coat pan
Pizza sauce
Cheese
Toppings
Fresh basil, minced (optional garnish)
DIRECTIONS

* Combine flour, yeast, salt, oil, and warm water in a large bowl. Using a wooden spoon, mix until no dry flour remains. Make sure the bowl is nice and large to accommodate for rising.
* Cover bowl tightly with plastic wrap and let sit on a counter for 8-24 hours. Dough will rise quite a bit.
* Once fully rested, sprinkle top of dough with flour and turn out onto a well floured surface.
* Divide dough into 2 portions, shape each into a ball/disk… tucking dough under itself to form a tight ball.
* If desired, place one of the balls in a Ziploc bag for freezing.
* Pour some oil (a couple of tablespoons) in the bottom of the cast iron pan, place ball of dough in pan, turning to coat in the oil.
* Using your hand, push the dough around to spread the oil in the pan.
* Cover tightly with plastic wrap and let rest for 2 hours.
* Preheat oven to 550 degrees (or as high as your oven goes)
* Once dough has rested, it should have settled and puffed to fill the pan. Use your fingers to push the dough into all edges of the pan and remove large air bubbles.
* Lift up edges of the dough to eliminate any air pockets on the bottom of the dough.
* Top the dough with your pizza sauce, cheese and any desired toppings or seasonings. Drizzle with olive oil.
* Place skillet in oven and bake for 12-15 minutes. The top should be bubbly and golden brown.
* Use a spatula to lift the edge of the pizza and check to see if the bottom is nice and golden brown and crisp. If you’d like it crispier, place on a stove top burner over medium heat for a couple of minutes.
* Sprinkle pizza with grated Parmesan cheese and/or fresh basil. Slice into pieces and serve hot.

Ham, Diced Potato, Egg, Hash 005
I made one delicious Breakfast this morning! Mom and Dad even got up a bit early and had some. I used Simply Potatoes Diced Steakhouse Potatoes and a package of Meijer Diced Ham. Using a Cast Iron Skillet I started by frying the Diced Potatoes. After about 9 minutes I then added the Diced Ham and stirred. In about 14 minutes it was ready! As the Potato/Ham was finishing I grabbed a small skillet and fried one Egg, Sunnyside Up. To serve made a bed of Potatoes and Ham and topped that with the Sunnyside Egg. Broke the Egg open and it just pulled the entire meal together! One hearty Breakfast this morning.

After Breakfast and the morning workout I went to Costco. Mom needed a few Pharmacy items and I need a few things myself. While there I picked up several cases of canned vegetables and fruits to give to our Church, for the Free Meal Dinners they provide to people and family in need. Then I picked up a couple of boxes of Snack Varieties that I take to a local Cancer Treatment Center, for patients under going out-patient Cancer Treatment. A snack tastes good while you’re getting your treatment. I know, I was there myself! Then I also came across some items for my dinner the next few nights, which I’ll start using tomorrow. Some Cilantro and Lime Seasoned Shrimp, Tuscany Seasoned Sliced Pork Tenderloin, and Walleye Fillets. Good day at Costco! Anyway for my dinner tonight I’m preparing a Mini Flatbread Pepperoni and Sausage Pizza.

 

 
While at Jungle Jim’s Market yesterday I picked up a package of Kontos Pre­Grilled Mini Oval Flatbread. Never had tried it or heard of it until I came across it in the Bakery Department. It’s pregrilled so it’s ready to eat or reheat. What I liked about it was they were the perfect size to make mini Pizzas with, plus they’re only 140 calories and 24 net carbs for a whole one (one serving)!

As I said I knew these would be perfect for Pizzas. To make the Pizzas I’ll need; the Kontos Pre­Grilled Mini Oval Flatbread, Hormel Turkey Pepperoni, Johnsonville Turkey Sausage Links, Sliced Black and Green Olives, Ragu Pizza Sauce, Sargento Reduced Fat Shredded Mozzarella Cheese.

To prepare it I started by preheating the oven on 400 degrees. The Johnsonville Turkey Sausage is precooked so all I had to do was heat up in a small skillet for 5 minutes on medium heat. Removed from the heat and sliced the Links up into small bite pieces. I then got a small baking sheet and lined it with foil and sprayed it with Pam Cooking Spray. I then took one of the Flatbreads and brushed a very light coat of Extra Virgin Olive Oil on the top of them.

Next I made my Pizza! I started by spreading 2 tablespoons of the Ragu Pizza Sauce across the top of the Flatbread. Then added the sliced Olives, Turkey sausage, Mozzarella Cheese, and topped it all with Turkey Pepperoni. Then I made a second one the same way. Laid the Flatbreads on the baking sheet and put it in the oven. I baked them for about 8 minutes, until the Cheese was melted and all items heated through.

The Flatbread provides a perfect Crust (Pizza Pie). It browned up great and had a fantastic flavor with a nice crunch! I’ll have to try different toppings using the Kontos Pre­Grilled Mini Oval Flatbread. I’ve found a good Pizza Pie Crust! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Domino’s Pizza

 

Dominos Pizza
It was clear and cold morning out, around 9 degrees. For Breakfast I had a Egg Beater’s Scrambled Egg Whites, Simply Potatoes Hash Browns, 1 slice of toasted Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Outside it was a beautiful Sunny Day out, but cold with a slight breeze. Mom and Dad went on to Church so it gave me a chance to do some house cleaning and I did a load of laundry for Mom. I had planned a dinner for today but as the day went on and I got lazy. I was a victim of the easy chair and remote. So I decided to shut that kitchen down! So tonight it’s Domino’s!

Mom and Dad had been wanting a Pizza for sometime now so I ordered a Pizza from Domino’s Pizza. A few more calories and carbs than what I normally like to have for dinner but it had been quite a while since I had one and it sounded good for a Sunday Meal, and love the clean up afterwards! We ordered a Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, Black Olives, and Green Olives. As always the Pizza arrived on time, hot and delicious! Pizza and Football on a Sunday! For dessert later a Jello Sugarless Dark Chocolate Mousse. The kitchen will reopen tomorrow!
