Today’s Menu: Turkey Tacos

Rain and sun mix on and off all day. We’ve been lucky so far, the bad storms and tornadoes haven’t been in this area. I had read the other day that Pork prices were soaring and after stopping by Kroger I believe it! Huge increase on all the Pork as well as the Beef products. For dinner tonight it’s Taco Night!

 

 

 
As usual when I make Turkey Tacos it’s with Jennie -O Ground Turkey Breast! Love the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. Most times I also add Black Beans but decided not to this time.

 

 

 
For toppings I’ll be using; Sliced Black Olives, Sliced Green Olives, Dean’s Guacamole, Old El Paso Taco Sauce, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love Taco Nights. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Spinach Artichoke Yogurt Dip

 

Chopped Artichoke Hearts, spinach, Smoked Red Peppers, Green Onion and Minced Garlic are combined with Plain Yogurt and 2% Mozzarella Cheese and baked until hot, serve with toasted Bread or Whole Grain Crackers

 

Ingredients:

1 (14-ounce) can artichoke hearts, drained and chopped
1 (10-ounce) package frozen chopped spinach, thawed and drained
1 (8-ounce) container lowfat plain yogurt
1 cup (4-ounces) shredded Sargento Reduced Fat Shredded Mozzarella cheese
1/4 cup chopped green onion
1 garlic clove, minced
2 tablespoons chopped smoked red pepper, or more to taste

 

Directions:

Combine all ingredients except red pepper and mix well. Pour mixture into 1-quart casserole dish or 9-inch pie plate.
Bake at 350°F (175°C) for 20 to 25 minutes or until heated through and sprinkle with red peppers.
Serve with toasted bread or whole grain crackers (Ritz Whole Grain Crackers works well).

Makes 8 servings.

Today’s Menu: Herb Crusted Pork Roast w/ Mashed Potatoes, Green Beans, and Wheat Bread

The weather, still on a roll here! Spent the morning taking my Mom to Jungle Jim’s Market, she wanted Watermelon, Green Beans and a few other items. Of course I wasn’t going to miss the chance to go, love going there always find something new and different. I was amazed at the Ostrich Eggs again! Their big enough to several families. While there I picked up a couple of Boar’s Head Meats to make lunch with and a new type of Wisconsin Sharp Cheddar they had, Wisconsin Sharp Cheddar Small Business Exempt. I’ll have to do some research on this one to find out about it. It’s possibly some of the best Sharp Cheddar I’ve ever had. For dinner tonight I prepared a Herb Crusted Pork Roast w/ Mashed Potatoes, Brown Gravy, Green Beans, and Wheat Bread.

 

 
This is my favorite Pork Loin Roast recipe, Herb Crusted Pork Roast. It seems the more you prepare one of your favorite dishes the better it gets. As you make more you add a pinch of this and that to the point where you have tuned a perfect dish! And this is how this recipe is now. Preheat your oven on 450 degrees, you’ll reduce the heat to 400 after 15 minutes. You combine 2 tablespoons olive oil, Sea Salt and Ground Black Pepper (to taste), 4 cloves garlic, minced, 1 teaspoon dried thyme or 2 teaspoons minced fresh thyme leaves, 1 teaspoon dried basil or 2 teaspoons fresh basil leaves, 1 teaspoon dried rosemary or 2 teaspoons minced fresh rosemary, with Sea Salt and Ground Black Pepper for seasoning. You combine all the ingredients in a bowl and stir until well mixed. You then rub into your Pork Roast which will create the Herb Crust as it bakes. Roast the pork for 15 minutes, then reduce the heat to 400 degrees F and roast for an additional 30 minutes or heated till the correct temperature. Test for doneness using an instant-read thermometer. When the internal temperature reaches 155 degrees F, remove the roast from the oven. Allow it to sit for about 20 minutes before carving. It will continue to cook while it rests. The Pork comes out perfect! The Herb Crust gives that extra taste to make it one delicious Roast! Love this recipe. Both my Mom and Dad agreed, this one perhaps was the best yet (and I agree).

 

 

 

For sides to go with the Roast I prepared some Bob Evans Mashed Potatoes, microwave a total of 6 minutes and their done and just as good as anyone’s homemade Mashed Potatoes. I heated up a small jar of Heinz Gravy/ Pork to top the Mashed Potatoes and sliced Pork with.Then my Mom fixed the Green Beans she had bought this morning. It was a stick to your ribs type of dinner tonight! I also had a couple of slices of Klosterman Wheat Bread. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Herb Crusted Pork Tenderloin

Ingredients

1 (4-pound) Boneless Pork Loin, with fat left on
Sea Salt and Ground Pepper , To Taste
2 tablespoons Extra Vigen Olive Oil
4 cloves Garlic, minced
1 teaspoon dried Thyme or 2 teaspoons minced fresh Thyme leaves
1 teaspoon dried Basil or 2 teaspoons fresh Basil leaves
1 teaspoon dried Rosemary or 2 teaspoons minced fresh Rosemary

Directions
Preheat oven to 450 degrees F.

It’s been another Fall like day around here today, about 39 degrees early this morning and 70 during the day. I went to Kroger early this morning, because it’s a lot closer than other stores, and noticed quite a few increases on prices! Just watch what you buy there. For dinner a new Jennie – O Turkey product, Sun-Dried Tomato Premium Portion Turkey Breast. For dinner tonight I prepared Roasted Sun-Dried Tomato Turkey Breast w/ Boiled Rosemary New Potatoes and Green Beans.

 

 
I had purchased the Jennie – O Turkey Sun-Dried Tomato Premium Portion Turkey Breast a couple of weeks ago at Walmart and had it in the freezer. I let it set in the fridge overnight to thaw. It comes already preseasoned in Sun-Dried Tomato, Chili Pepper, Garlic, and Onion. I added some Sea Salt and Ground White Pepper. To prepare I preheated the oven on 350 degrees and roasted it in a small roasting pan on a wire rack. It’s already precooked so I just more less reheated it for about 12 minutes, till it was heated through. Came out perfect! Nicely seasoned and very moist, nice to have these in the freezer for last minute dinner ideas.

 

 

For sides I boiled some New Potatoes. I boiled them in water that I seasoned with a Bay Leaf and Sea Salt, until they were fork tender. I also reheated some fresh Green Beans that my Mom had prepared the night before. For dessert later fresh sliced Peaches.

Another beautiful cool morning here. Got out early and hit the stores. Started at Walmart for some of the Meat, Bakery, and basic staples for the pantry. Then off to Kroger for the rest of the Meats, Produce, Cheese, and Deli. I’m still amazed at the big difference in prices between Walmart and Kroger. Anymore I only buy what I can’t find at Walmart. You can save hundreds by purchasing center aisle products from Walmart, Pasta, Can Goods, Paper Products, and such. Stay out of Kroger center aisles! For dinner one of my favorites, Black Bean and Turkey Tacos.

 

 

I used Jennie – O Ground Turkey, 99% Fat Free (120/0). I pan fried it in Canola Oil and I seasoned it a bit with Cilantro, Sea Salt, and Smoked Ground Cumin and I used 1 packet of Old El Paso Taco Seasoning. As the Turkey was finishing up I added a can of Bush’s Low Sodium Black Beans, before adding them I rinsed them off with cold water in a strainer. I mixed the Turkey and Black Beans in the pan until well mixed and continued cooking until the Turkey was done and the Beans were heated.

 

 

I used Ortega Whole Grain Corn Taco Shells. Their a good size Taco Shell with 110 calories and 12 Net carbs per serving (2 Shells). Fewer calories and carbs than the Old El Paso Taco Shells. For the Taco fillers I had Green Giant Summer Crisp White and Yellow Kernel Corn, sliced Black Olives, shredded Lettuce, Sargento Reduced Fat Mexican 4 Cheese, and Old El Paso Medium Taco Sauce. To assemble my Taco I first layered the bottom with shredded Lettuce, the Lettuce helps soak up any moisture so the bottom of your Taco doesn’t get soggy. After the Lettuce I layered in my ground Turkey/Black Beans, then Black Olives, Corn, Taco Sauce topped with the Shredded Cheese! Love these Tacos! I also heated up a can of Old El Paso Fat Free Refried Beans for Mom and Dad. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt Cup.

Went out and got the morning paper about 6:45 this morning and it was 50 degrees! 50 degrees in late July, odd weather this year. It was another gorgeous day out also, about 78 and sunny. For dinner wanted a hot but light meal so I prepared a Baked Pita Bread Pepperoni and Sausage Pizza.

 

 

I used my new favorite Pita Bread, Joseph’s Flax, Oat Bran, and Whole Wheat Pita Bread. I’ve been using this for the last couple of weeks and love it. Stays very fresh, good tasting and it’s only 50 calories and 7 carbs (4 Net Carbs) per serving.

 

 

For my toppings I tried to use all items that were Turkey, Low Fat, and Reduced Fat. I used Hormel Turkey Pepperoni (70 Calories and 0 Carbs), Jennie – O Lean Ground Turkey (160 Calories and 0 Carbs), Ragu Pizza Sauce (40 Calories and 5 Carbs), Sliced Black Olives (30 Calories and 1 Carb), and Kraft 2% Mozzarella (70 Calories and 1 Carb). I also had about 3 slices of Mushrooms on there also. I spread 1 brush of Extra Virgin Olive Oil on top of the Pita Bread and then layered my toppings. I then baked it on a cookie sheet at 400 degrees for about 10 minutes, until the Cheese was melted and the toppings were heated. The Pita Bread makes one fine Pizza! The Bread browned and crisped up just right and everything was so low in calories and carbs I could have a couple of them if I wanted. Pita Bread Pizzas, gotta love them! For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Roasted Boneless Skinless Turkey Breast w/ Mashed Potatoes, Green Beans, and Garlic Knot Rolls

 

 

 

 

With Mom and Dad both still under the weather I wanted to fix them a hot and hearty dinner. I went to Meijer early this morning and purchased a Jennie – O Oven Ready Boneless Skinless Turkey Breast. They both love Turkey so I knew they would enjoy this meal. I prepared; a Roasted Boneless Skinless Turkey Breast w/ Mashed Potatoes, Green Beans, and Garlic Knot Rolls.

 

 

I love using the Jennie – O Oven Ready Boneless Skinless Turkey Breast. It’s an easy and delicious way to get your Turkey on! Comes inJennie O turkey Breast 005 an Oven Ready Bag that you bake at 375 degrees for about 2 to 3 hour until it reads 170 degrees. It also now has a pop up inserted in the breast that pops up when done. The Turkey came out juicy and delicious, excellent flavor!

 

 

To go with the Turkey Breast I prepared a side of Bob Evans Mashed Potatoes. My favorite Mashed Potatoes over any other or homemade. Just heat for a total of 6 minutes in the microwave and their ready! I also heated up a can of Del Monte Green Beans along with baking some Walmart Marketside Garlic Knot Rolls. For dessert later a Jello Sugar Free Double Chocolate Pudding.

Note – Meat temperature increases rapidly during last hour of cooking.
Let turkey rest 10 minutes, cut open top of oven bag.
Watch out for hot steam and juices.
Heat gravy as directed on pouch.

Beautiful day out today, about 45 degrees and sunny! tried another new one for dinner tonight, ChickenTenders w/ Rice, Sweet Chicken and Sweet Peppers 003Peppers, Mushrooms, and Garlic Bread. New recipe and some new ingredients.

 

 

 

Chicken Tenders w/ Rice, Sweet Peppers, Mushrooms, and Garlic Bread tonight for dinner. As I said I tried a couple of new ingredients to prepare dinner tonight. The Chicken Tenders were Weight Watchers Chicken Tenders. I purchased them at Walmart and haven’t seen them elsewhere yet. They come frozen and preweighed at 2 oz. Each tender is 99% fat-free and only 60 calories and 0 carbs. You can bake them or prepare them by stove top, which is how I made them. To prepare them I seasoned the chicken with sea salt and pepper. In a large skillet, heated 1 tablespoons of the oil. Then sautéed the chicken over medium-high heat, turning once, until gold on both sides, about 8 minutes total. Transferred the Chicken to a plate.

 

Now to prepare the rest of meal I needed 1 tablespoons Extra Virgin Olive Oil, 2 cups thinly sliced mixed Red, Yellow, Orange and/or Green Bell Peppers, Small Package of Baby Bella Sliced Mushrooms, 1 large garlic cloves, finely chopped, 1/4 cup chopped fresh basil, 1 tablespoons high-quality Balsamic Vinegar, and 1 Serving of Rice A Roni (Chicken Flavor).

 

Using the same skillet as the Chicken was fried in add the remaining 1 tablespoons of oil to the skillet and reduce the heat to medium. Cook the bell peppers, stirring often, until just softened, about 4 minutes. Add the garlic and cook, stirring, for 1 minute, Stir in about half of the basil and the vinegar. Return the chicken and any accumulated juices to the skillet. Reduce the heat to medium-low, add the sliced mushrooms. Simmer until the chicken is cooked through, about 3 minutes. Stir in the remaining basil and season with salt and pepper. As this was finishing I prepared the Rice A Roni, microwaved for 3 1/2 minutes and served. I also baked some Walmart Bakery Garlic Knot Bread. This makes one delicious chicken dish! The sweet peppers and Balsamic Vinegar are a great pairing with the chicken. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

 

 
Chicken Tenders w/ Rice, Sweet Peppers, MushroomsChicken and Sweet Peppers 001

Makes 4 servings

Ingredients:

3 skinless, boneless Chicken Tenders
Sea Salt and freshly Ground Pepper
2 tablespoons Extra Virgin Olive Oil
2 cups thinly sliced mixed Red, Yellow, Orange and/or Green Bell Peppers
Small Package of Baby Bella Sliced Mushrooms
1 large garlic cloves, finely chopped
1/4 cup chopped fresh basil

1 Serving of favorite Rice
Directions:
Cook the rice according to package instructions.

Today’s Menu: Baked Glazed Pork Chop in Apple Cider Honey Mustard Sauce w/ Cayenne and White Cheddar Mashed Potatoes and Sugar Snap Peas

An extra tasty dinner tonight, Baked and Glazed Pork Chop in Apple Cider Honey Mustard Sauce w/ Cayenne and White Cheddar Mashed Potatoes and Sugar Snap Peas. I was at Jungle Jim’s Market last week and came across the JB’s Fatboy Apple Cider Honey Mustard Sauce. First time I’ve ever seen this Sauce from JB’s Fat Boy and it looked too good to pass up. Apple Cider Honey Mustard Sauce, it just sounds like it was meant for Pork!

 
First I preheated the oven to 400 degrees. I then rolled my Chops in flour that was seasoned with Sea Salt and Black Pepper. I placed the Chops in a small broiler pan with a wire rack and baked until the temperature of the Chops reached 165 degrees. I turned the Chops over after 15 minutes of baking and with a small basting brush basted on the Apple Cider Honey Mustard Sauce. Continued baking until done. The Chops came out moist and full of great flavor. The Apple Cider Honey Mustard Sauce is a perfect Glaze or Dipping Sauce for Pork! Love this Sauce like the rest of the JB’s Fat Boy sauces. The Apple Cider Honey Mustard Sauce is a great combo, you can taste the Mustard and the Apple Cider and then there’s a sneaky hint of heat to it. Great Sauce! I think it would go well for Chicken also, I’ll find out soon.

 
For sides to go with my pork Chops i prepared Cayenne and White Cheddar Mashed Potatoes, Sugar Snap Peas, and Aunt Millie’s Light Whole Grain Bread. First time making the Cayenne and White Cheddar Mashed Potatoes. The recipe came from the Simply Potatoes web site but I’m not really a fan of their Mashed Potatoes, love their other Potato products, so I used Bob Evans “Down on the Farm” Mashed Potatoes. I microwaved the Mashed Potatoes for a total of 5 minutes and when done added a 1/ teaspoon of Cayenne Pepper and 1/2 cup of freshly shredded Murray’s Light White Cheddar. Stirred until well mixed and served. I love Potatoes and this Potato recipe is fantastic!! The Cayenne and white Cheddar really lights the Mashed Potatoes up! You have to give this one a try. I left the original recipe and web link at the end of the post. I also had Walmart Marketside Sugar Snap Peas and Whole Grain Bread. For dessert later some Breyers Carb Smart Vanilla Ice Cream topped with Smucker’s Sugarless Hot Fudge Topping.

Cayenne and White Cheddar Mashed Potatoes

Cheesy, peppery mashed potatoes pair well with roasted chicken for a great weeknight meal. An easy 5-minute mashed potato recipe.

1 package (24 ounces) Simply Potatoes® Traditional Mashed Potatoes
1/2 cup Crystal Farms® Wisconsin White Sharp Cheddar Cheese, shredded
1/4 teaspoon cayenne pepper
1. Peel film at corner of Simply Potatoes package to vent and heat on high for 3 minutes in microwave.

2. Completely remove film and stir.

3. Microwave on high for 1 additional minute.

4. Stir cayenne pepper and white cheddar into cooked mashed potatoes and mix well.
