Today’s Menu: Fried Okeechobee Crappie w/ Potato Pancakes and Cut Italian Green Beans
For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin, scrambled 1 medium size Egg, and fried 2 slices of Jennie – O Turkey Bacon. Served it all on the English Muffin. I also had a cup Bigelow Decaf Green Tea. A delicious way to start the day, and healthy! After Breakfast started a load of laundry for Mom. Then outside to finish up some repairs on my Hoveround and also a goo cleaning, which it needed. Everything done so just did a few things around the house. For Dinner tonight I prepared Fried Okeechobee Crappie w/ Potato Pancakes and Cut Italian Green Beans.
I’m down to my last 3 bags of Lake Okeechobee Crappie in the freezer. My Aunt sold her place down on Lake Okeechobee so I probably won’t be having Crappie once this batch is gone. So I laid the last 3 bags in the fridge overnight to thaw, and it’s a Fish Fry for tomorrow! To start I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Extra Virgin Olive Oil about 3 minutes per side. As always they came out Golden Brown and delicious! It’s hard to even describe how much I love eating Crappie, especially the Lake Okeechobee Crappie.
For a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes).
For another side I heated a can of Allens Cut Italian Green Beans, our family’s favorite Bean Side. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

I had an early Breakfast of a couple of toasted Eggo’s Waffles. Then I had an early appointment back to the dermatologist to remove a mole that changing shape and color. First one I’ve had removed in a couple of years I think. Now the worst part waiting for biop to come back! Hopefully good results. Lot of rain today and a bit cooler out. But it looks as though Spring and warm temperatures are here for good! Did some house cleaning, vacuumed and dusted. For dinner tonight it’s Fried Okeechobee Crappie w/ Hash Browns, Cut Green Beans, and Cornbread.

So I laid one bag in the fridge overnight to thaw. To start I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Extra Virgin Olive Oil about 3 minutes per side. As always they came out Golden Brown and delicious! It’s hard to even describe how much I love eating Crappie, especially the Lake Okeechobee Crappie.
To go with the Crappie I prepared some Hash Browns, Potatoes are always perfect with Fish. As always I use Simply Potatoes Hash Browns. Fried them in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Then I heated up a can of Del Monte Cut Green Beans, Green Beans go well with any meal as far as I’m concerned. Green Beans was my favorite Vegetable growing up even.
I also baked a small skillet of Martha White Cornbread. Cornbread is something I think I could eat every meal. I like a nice fresh and hot slice with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small cast iron skillet just cut the recipe in half and it comes out just right for the skillet size. For dessert later a Jello Sugar Free Double Chocolate Pudding.

Scrambled Eggs and a couple of slices toasted Whole Grain Bread for Breakfast. Had to go to Kroger for a few items after Breakfast. It’s one warm December Day out there today. I heard on the morning news it was 55 at 6;00 this morning and that was going to be our low for the next three days. Cloudy but about 60 degrees out. It was warm enough I was able to get the cart out of the shed and ride around for a while this afternoon. For dinner tonight I prepared one of my favorite meals, Lake Okeechobee Crappie! I prepared Fried Okeechobee Crappie w/ Hash Browns, Cut Green Beans, and Cornbread.
I haven’t had any Crappie for a while! I used my last bags from the freezer a while back. But yesterday my Aunt called and said they just got back from Lake Okeechobee and had me some bags of Crappie! Picked them up about an hour later and having a bag of them for dinner tonight. They were frozen so I laid one bag in the fridge overnight to thaw. To start I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Extra Virgin Olive Oil about 3 minutes per side. Very cool out this morning. After I had a light breakfast I went to McDonald’s for mOm and Dad and brought back their breakfast for them before they went to Church. It was in the 30’s here this morning. For the day plenty of sunshine and a high in the low 50’s. Not much going on today so it was the easy chair, remote, and NFL Football for the afternoon. For dinner tonight I prepared Fried Okeechobee Crappie w/ Potato Pancakes, Cut Green Beans, and Cornbread. * I had Hashbrowns instead of the Potato Pancakes.
It’s been too long between Crappie Dinners! So I got in the freezer and grabbed the last three bags of Okeechobee Crappie, or Specks as they call them in Florida, and let them thaw overnight in the fridge. To start I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Extra Virgin Olive Oil about 3 minutes per side. As always they came out Golden Brown and delicious! It’s hard to even describe how much I love eating Crappie, especially the Lake Okeechobee Crappie. That is the last bags of Crappie in the freezer, hopefully my cousins will bring me some more in March!

Went to see dad in rehab for a while, he’s getting a lot stronger and wanting to come home. He should be released by next Friday they told us. Back at home did some light cleaning and then hit my easy chair with the remote for an afternoon of College Football. For dinner tonight it’s my favorite fish, Crappie. I prepared Fried Okeechobee Crappie w/ Hash Browns, Cut Green Beans, and Cornbread.

For Breakfast I warmed up a piece of the leftover Cubed Pork Steak and served it on a Healthy Life Whole Grain English Muffin and topped it with some Sweet and Hot Stone Ground Mustard. Along with my morning cup of fresh brewed Bigelow Decaf Green Tea. It was bit warmer out today, high of 81 degrees, but still sunny and low humidity. Went and had my car washed and the inside cleaned and come back home and had the cart out most of the day. For dinner tonight it’s Fried Okeechobee Crappie w/ Hash Browns and Mini Ears of Sweet Corn.
I love Walleye and all other Fish but my favorite eating Fish has to be Crappie, Okeechobee Crappie! But my stock of the Crappie is running low, maybe only a bag or two left. Very sad when this year’s supply is gone. So I laid 3 of bags of the Crappie out in the fridge overnight to thaw. To start I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side.As always they came out Golden Brown and delicious! It’s hard to even describe how much I love eating Crappie. especially the Lake Okeechobee Crappie.
To go with the Crappie I prepared some Hash Browns, Potatoes are perfect with Fish, so Hash Browns it is! I always use Simply potatoes Hash Browns. Fried in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Then I boiled some Green Giant Mini Ears of Sweet Corn. A great replacement, and sometimes better, for fresh Corn on the Cob. As good as last night’s dinner was, this one was even better! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Not real pleasant out today at all, really humid again and a high pollen count on top of it! Good day to stay in and get some household chores done. For dinner tonight it’s one of my favorites, Okeechobee Crappie. Tonight it’s Fried Okeechobee Crappie w/ Hash Browns and Cut Green Beans.
A while back my Mom’s cousin and her husband brought me my annual supply of Okeechobee Crappie, or Specks as they call them in Florida! I laid a couple of bags out in the fridge overnight to thaw. To start I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side.As always they came out Golden Brown and delicious! It’s hard to even describe how much I love eating Crappie. especially the Lake Okeechobee Crappie.

Lake Okeechobee Crappie Fishing
The Florida Crappie fishing, speckled perch or speck’ as they are called throughout the State of Florida is the most sort after pan fish on Lake Okeechobee. Although the Florida crappie can be caught during the summer months, they really are at their best from late fall to early spring.
Go Lake Okeechobee freshwater fishing with your family and friends together for an affordable day of Florida crappie fishing on Lake Okeechobee. Lake Okeechobee comprises a 730-square-mile area and is the second-largest natural lake in the U.S., holding more than a trillion gallons of water.
Most fishing takes place along the southeastern, west and north portions of the lake within a mile of the shoreline. Look for hyacinths, hydrilla and other water plants where big bass ambush shiners, bluegills and other scaled groceries. They also pounce on frogs, crickets, worms, grasshoppers and pretty much any fish smaller than itself. Plastic imitations of those baits work well.
You know the deal black crappies speckled perch to most Floridians are about as smart as a dead bird, but fortunately they are a lot more abundant. Stick a minnow in their face, set the hook and start heating up the frying-pan as we say here on Okeechobee.

Woke up hungry and wanting some Turkey Goetta. Started frying some up and my Mom caught a whiff of them and she wanted some too. Good way to start the day with a little Goetta! For dinner tonight I prepared, Fried Okeechobee Crappie w/ Hash Browns and Sliced Carrots.

Today’s Menu: Fried Okeechobee Crappie w/ Canned Green Beans, Fried Potatoes, and Corn Bread
I think Spring may have a foot hold on our weather finally! The Winter that wouldn’t go away has finally did just that, go away. Windy but sunny all day and about 70 degrees, My Mom’s Easter Flowers are up and getting ready to bloom, our neighbors are already in bloom. More rain coming, deal with that when it happens. Got the 4 wheel mobility cart out for a while today. It’s still running good and I think I’ve had now for 5 or 6 years now. My Mom’s cousin and her husband stopped by and brought me 10 big and beautiful bags of Okeechobee Crappie, or Specks as they call them in Florida! I love all Fish and Seafood but these have to be my favorite. So for dinner tonight it’s Fried Okeechobee Crappie w/ Canned Green Beans, Fried Potatoes, and Corn Bread. A Country Style Dinner Feast!
They brought them straight up from Florida sealed and frozen. I laid 2 bags out in the fridge overnight to thaw. I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side. As usual this year’s batch of Crappie is just as good as previous years. They came out Golden Brown and delicious! I could just eat these fillets for dinner, or any meal, with no sides needed!
For one side I peeled and sliced some Red potatoes up. Seasoned with Morton’s Salt Substitute and ground Black Pepper. Fried them in a Cast Iron Skillet in Canola Oil, fried on medium high and turned with a spatula several times until both sides started browning. I rarely fix Potatoes like this, but I should. The Potatoes come out so delicious prepared this way. Then for another side I heated up a Mason Jar of the canned Green Beans that we had canned back last Summer. They taste as if they were just picked from the garden. I also had a slice of Klosterman Wheat Bread but Mom and Dad wanted some Cornbread so I prepared them a small Cast Iron Skillet of Martha White Cornbread. For dessert later a Jello Sugar Free Double Chocolate Pudding topped With a dab of Cool Whip Free.
