Today’s Menu: Breakfast for Dinner w/ Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast

 

 

 

To start my day off I prepared a Jimmy Dean Scramble Cup – Crumbled Turkey Sausage, Shredded Cheddar Cheese, Egg Whites. Also had my morning cup of Bigelow Decaf Green Tea to get this morning started. Rain and thunderstorms passing by most of the day, high of 77 degrees. Got the leaf blower and cleaned off the driveway and then swept the shed out. After Lunch I had to trim the vines along the driveway, these grow way too fast! For dinner tonight its a Breakfast Menu! I prepared Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast.

 

 

 

 

 

Nothing like a hearty, healthy, and delicious Breakfast for Dinner too! I’ll need one Egg, Simply Potatoes Shredded Hash Browns, a couple of Jennie – O Turkey Breakfast Sausage Links, and 2 slices of Aunt Millie’s Light Whole Grain Bread.

 

 

 

 

 

 

So I got out a couple of small skillets and got the toaster ready. Heated up both skillets, sprayed with Pam Cooking Spray in both and added Extra Light Olive Oil to one of them. In the skillet with no Oil I started to fry the Jennie – O Turkey Sausage Links. The skillet with Oil, I prepared the Simply Potatoes Hash Browns. When both were cooked I put each one into separate bowls and set aside.

 

 

 

 

 

Then I started toasting the Bread. Next in the skillet that had the Hashbrowns, I fried my Sunnyside Up Egg. Seasoning the Egg with Morton’s Lite Salt and Ground Black Pepper. When the Toast was done I buttered both slices with I Can’t Believe It’s Not Butter. As the Egg was ready I grabbed a plate and plated everything! And what a Breakfast Dinner! Eggs, Hash Browns, Turkey Sausage, and Toast. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Fried Bologna Sandwich /w Hash Browns topped with Cheddar Cheese

 

 

 

To start the day off I Scrambled a couple of Eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had my morning cup of Bigelow Decaf Green Tea. Mostly sunny and 68 degrees out today. After Breakfast I headed out to Meijer for a few items. Then I stopped by McDonald’s and picked up Breakfast for Mom. Got a good night’s sleep last night, NO Phantom Pains! Back home I got the cart out of the shed and did some yard work. Then grabbed the leaf blower and cleaned off the deck and driveway areas. For Dinner tonight some good old Baloney! I prepared a Fried Bologna Sandwich /w Hash Browns topped with Cheddar Cheese.

 

 

 

 

I seen some pictures from a website about Bologna and a Fried Bologna Sandwich. It looked so good my mouth was watering. So I was determined to have that for my Dinner tonight! To make I’ll need some Kahn’s Deluxe Bologna, Kraft Deli Deluxe Sharp Cheddar Sliced Cheese, Kraft Reduced Fat Olive Oil Mayo, and Aunt Millie’s Light Whole Grain Bread. A note on the Kraft Cheese – I finally found a place that sells the Kraft Deli Style Sharp Cheddar Cheese, Jungle Jim’s International Market! I though I was going to have to find a new Cheese since Meijer stopped selling it but I have found it at Jungle Jim’s!

 

 

 

 

 

To prepare it I grabbed a small skillet and lightly sprayed it with Pam Non Stick Cooking Spray then heated the skillet on medium heat. as the skillet heated I got the Bologna and Cheese ready. Also as the skillet heated I toasted my Bread, Aunt Millie’s Light Whole Grain Bread. When I buy Lunch Meat, like the Kahn’s Bologna, I always have them slice it as then as the can. Reason being I have Diabetes 2 and having it sliced so thin I can pile it up and not have as many calories as a regular slice of meat. It also looks like your getting more than what you really are. Moving on, I got 5 slices of the Bologna and placed it in the heated skillet. Cooked it for about 4 minutes and flipped it over to cook another 4 minutes. With about a minute left I added the Kraft Sharp Cheese.

 

 

 

 

To make the Sandwich I got my toasted Bread and on the bottom slice I added the Kraft Mayo, I used a good amount of it. Then added the Bologna and Cheese and topped with the other toasted slice of Bread. And done! Oh I’ve been wanting a Fried Bologna Sandwich for a while and this looks so good!

 

 

 

 

 

 

As my Bologna was cooking I had started to make my Hash Browns. I used Simply Potatoes Shredded Hash Browns. To prepare these just use a small skillet and give it a light spray of the Pam Non Stick Cooking Spray, add a tablespoon of Extra Light Olive Oil, and heat the skillet on medium. When heated add the amount of Hash Browns you want, season with Salt and Ground Black Pepper to taste. Fried for 5 minutes and flipped them over. Seasoned again the salt and Pepper. Remove from the heat and plate them and add your Cheese. I used Sargento Reduced Fat Shredded Sharp Cheddar Cheese. These Has Browns with Fried Bologna Sandwich has hit spot! I couldn’t eat fast enough! Really enjoyed the Dinner. For Dessert/Snack later a small bag of Snyder’s 100 Calorie Stick Pretzels with a Diet Peach Snapple to drink.

Today’s Menu: Cajun Rainbow Trout w/ Hash Browns and Green Beans

 

 

For Breakfast it was Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Cheddar/Jack Cheese. Just love this skillet meal! Partly cloudy and 60 degrees out today. After Breakfast I went and picked up Breakfast for Mom, after eating Mom went on to Church. Did some cleaning outside around the shed then grabbed the leaf blower and cleaned off the deck and drive way areas. Later on went and got my car washed and vacuumed the inside. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

 

 

 

 

I had purchased some Rainbow Trout Fillet at Kroger and had it in the freezer. So I it out of the freezer and let it thaw overnight in the fridge. To prepare it all I’ll need is; 1 Rainbow Trout Fillet, 1 teaspoons Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed skin side down on broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

 

 

 

 

Then for one side I prepared some Simply Potatoes Hash Browns. Fried in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Dish! I also heated up a can of Del Monte Cut Green Beans. For Dessert later a bowl of Del Monte Sliced Peaches.

Today’s Menu: Breakfast for Dinner w/ Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast

 

 

I made a Breakfast sandwich to start my Sunday Morning off. I toasted a Thomas Light 100% Multi Grain English Muffin. Then I lightly fried 4 slices of (thin sliced) Boar’s Head Sweet Slice Ham. As the Ham was cooking I scrambled some Egg Beater’s Egg Whites and topped the Egg Whites with Sargento Off the Block Shredded Mozzarella. Piled all that on to the toasted English Muffin and I had one delicious Breakfast Sandwich! Outside today it was partly sunny and 28 degrees. After I ate I went to McDonald’s and picked up Breakfast for Mom. After ward she went to Church. I did a few things around the house and then I laid back down for the afternoon. I had a very bad Sinus Headache. So not much going on. For dinner tonight its a Breakfast Menu! I prepared Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast.

Today’s Menu: Chicken Sausage Breakfast Sandwich w/ Hash Browns

 

 

For Breakfast this morning I heated up the leftover Buffalo Gal Tenderloin, Scrambled an Egg, toasted a slice of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. I got some sleep early but around 4:00 this morning I started having the Phantom Pains. It wasn’t a bad case, it let up around 10:00 this morning. Left me very tired though. Cloudy and 35 degrees out, good day to stay in and get caught up on sleep. For Dinner tonight its a Chicken Sausage Breakfast Sandwich w/ Hash Browns.

 

 

 

 

I wanted a hot meal but one easy to prepare. So I I made a little Breakfast. I prepared a Thomas Light 100% Multigrain English Muffin and lightly fried a al fresco Country Style Chicken Sausage Breakfast Patty. I topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese. Along with Simply Potatoes Shredded Hash Browns.

 

 

 

 

To prepare the Chicken Sausage Patty; The Patties are fully cooked so all you have to do is reheat them. I used a small skillet, sprayed it with Pam Non Stick Cooking Spray, and heated it on medium heat. Added the Patty to the heated skillet and cooked it for 6 minutes a side. Easy to prepare and delicious! These have such a good taste to them. They’re seasoned with Sage and Thyme. They also have some that are Maple Flavored but these are my favorites!

 

 

 

 

 

 

As the Sausage was cooking I toasted the Thomas English Muffin. I love using these, Breakfast Sandwiches, Muffin Pizzas, and much more! They’re 100 calories and 16 net carbs per Muffin. I served the Chicken Sausage Patty on the Muffin and topped it with a 1/2 slice of Cheese.

 

 

 

 

 

To go with my Dinner/Breakfast Sandwich I prepared some Simply Potatoes Shredded Hash Browns. To prepare these I took a small skillet, sprayed it with Pam Cooking Spray, added a tablespoon of Extra Light Olive Oil, and heated the skillet. Add potatoes to skillet; Cook 6-7 minutes, or until golden brown on the bottom. Drizzle with an additional 1/4 tbsp Extra Light Olive Oil. Turn potatoes over with a spatula. Continue to cook 6-8 minutes, and done! I sprinkled some Sargeto Reduced Fat Shredded Sharp Cheese over top of them to serve. Really enjoy these Breakfast/Dinners! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Today’s Menu: Breakfast for Dinner – Thin Cut Pork Chops, Hash Browns, Scrambled Eggs, and Toast

 

 

 

For Breakfast this morning I toasted a Thomas Light 100% Multigrain English Muffin and topped the halves with Smucker’s Sugarless Blackberry Jam. Also had my morning cup of Bigelow Decaf Green Tea. After Breakfast I had to go to the local Kroger up the road for a couple of items for Mom then stopped by McDonald’s to pick up Breakfast for her. Did a couple loads of laundry. Then got the cart out and did some yard work; cleaned off the deck and driveway areas and raked more leaves. Ton of leaves right now! For Dinner tonight Breakfast! I prepared Thin Cut Pork Chops, Hash Browns, Scrambled Eggs and Toast.

 

 

 

 


I had this same meal once before, so good had to have it again! I had 1 package of Thin Cut Pork Loin Chops I bought from Meijer in the freezer. I had sat the bag in the fridge overnight to thaw. Along with the Chops I’ll be using; 2 Eggs (Scrambled), Simply Potatoes Garlic and Herb Hash Browns, and 2 slices Aunt Millie’s Light Whole Grain Bread Buttered with I Can’t Believe It’s Not Butter.

 

 

 

 


To prepare the Chops; I seasoned with McCormick’s Smokehouse Maple Seasoning. First time trying this Seasoning. Some of the ingredients are Brown Sugar, Molasses, Garlic, Onions, and Paprika. Perfect for Pork, Chicken, or Salmon. Next i grabbed a skillet and gave a spray of Pam Non Stick Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated on medium heat. When the skillet was ready added the Chops. I just cooked them about 2 1/2 minutes per side. Being thin cut, it didn’t take them long to cook. It was a good size package so we froze the ones left. The Chops turned out delicious! Moist and the McCormick Smokehouse Maple Seasoning was perfect for the Pork.

 

 

 


Then for a side I prepared some Simply Potatoes Garlic and Herb Hash Browns. Seasoned them with Salt and Pepper and served them sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar.

 

 

 

 

 


As both the Chops and Hash Browns were finishing I then made the Scrambled Eggs. As soon as the Hash Browns were done I removed them from the skillet and used this skillet for my Eggs. I used 2 Medium Size Eggs; also Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Sea Salt, and Ground Black Pepper. To prepare them In a small bowl, whisked the Eggs and add just a splash of water. Added the Eggs, to the all ready heated skillet and cooked. Flipped the Eggs a couple of times and turned the heat off and finished the Eggs. When done I sprinkled the Scramble with some Sargento Reduced Fat Shredded Cheese. Finally I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, lightly Buttered with I Can’t Believe It’s Not Butter. Wow, nothing like a good Breakfast for Dinner! For Dessert later a bowl of Del Monte Sliced Peaches.

Today’s Menu: Breakfast for Dinner – Thin Cut Pork Chops, Hash Browns, Scrambled Eggs, and Toast

 

For Breakfast this morning I toasted a Thomas Light 100% Multigrain English Muffin and topped the halves with Smucker’s Sugarless Blackberry Jam. Also had my morning cup of Bigelow Decaf Green Tea. After Breakfast I had to go to the local Kroger up the road for a couple of items and then stopped by McDonald’s to pick up Breakfast for Mom. Afterward she went to Church. Had a an afternoon shower with a high of 91 degrees out today. Did a couple loads of laundry. Then got the cart out and did some yard work; weeds, cleaned off the deck and driveway areas, and trimmed the vines along the driveway. For Dinner tonight Breakfast! I prepared Thin Cut Pork Chops, Hash Browns, Scrambled Eggs and Toast.

 

While at Meijer earlier this week I picked up a beautiful package of Thin Cut Pork Loin Chops. Along with the Chops I’ll be using; 2 Eggs (Scrambled), Simply Potatoes Garlic and Herb Hash Browns, and 2 slices Aunt Millie’s Light Whole Grain Bread.

 

 

 

 

 

To prepare the Chops; I seasoned with McCormick’s Smokehouse Maple Seasoning. First time trying this Seasoning. Some of the ingredients are Brown Sugar, Molasses, Garlic, Onions, and Paprika. Perfect for Pork, Chicken, or Salmon. Next i grabbed a skillet and gave a spray of Pam Non Stick Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated on medium heat. When the skillet was ready added the Chops. I just cooked them about 2 1/2 minutes per side. Being thin cut, it didn’t take them long to cook. It was a good size package so we froze the ones left. The Chops turned out delicious! Moist and the McCormick Smokehouse Maple Seasoning was perfect for the Pork.

 

Then for a side I prepared some Simply Potatoes Garlic and Herb Hash Browns. Seasoned them with Salt and Pepper and served them sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar.

 

 

 

 

 

As both the Chops and Hash Browns were finishing I then made the Scrambled Eggs. As soon as the Hash Browns were done I removed them from the skillet and used this skillet for my Eggs. I used 2 Medium Size Eggs; also Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Sea Salt, and Ground Black Pepper. To prepare them In a small bowl, whisked the Eggs and add just a splash of water. Added the Eggs, to the all ready heated skillet and cooked. Flipped the Eggs a couple of times and turned the heat off and finished the Eggs. When done I sprinkled the Scramble with some Sargento Reduced Fat Shredded Cheese. Finally I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, lightly Buttered with I Can’t Believe It’s Not Butter. Wow, nothing like a good Breakfast for Dinner! For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Catfish Nuggets w/ Southwest Style Hash Browns and Cut Green Beans

 

 

I just had a cup of the Bigelow Decaf Green Tea for Breakfast. Partly Cloudy, humid, and 89 degrees out today. Right after my Tea I headed out to Walmart. I needed printing ink, Bigelow Tea, and a few other items. Next it was off to Meijer for the rest of the Grocery Shopping. Stopped by McDonald’s and picked up Breakfast for Mom. Later in the day I went to the hospital and seen a friend of mine that I used to work with. He was in a pretty bad car wreck, but doing ok. For Dinner tonight I prepared Catfish Nuggets w/ Southwest Style Hash Browns and Cut Green Beans.

 

 

Golden Brown,I love these!

Picked up the Catfish Nuggets at Meijer earlier in the day. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat frying Catfish.

 

 

For one side I prepared some Simply Potatoes Southwest Style Hash Browns. I had tried all the Simply Potatoes Products but these and found some at Meijer today and they sounded perfect with the Catfish. I prepared them as I do all the Hash Brown Products. Fried them in Extra Light Olive Oil and seasoned them with Sea Salt and Ground Pepper. Great seasoning on the Hash Browns (Onion, Green and Red Bell Peppers, Garlic, Tomato, Jalapeno Peppers). Just love Potatoes with Fish.

 

 

 


I also heated up a can of Del Monte Low Sodium Cut Green Beans. I also baked a Loaf of the RiverRoad Bake House Garlic Oval Loaf Bread. Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Bacon and Blue Buffalo Burger w/ Shredded Hash Browns

 

 

I just had a cup of Bigelow Decaf Green Tea for Breakfast. Having a hard time with my allergies here the last 2 or 3 days. So I’m not quite up to par today with a bad headache. But after I had my Tea I went to the local Kroger here up the road for a few items. Then stopped by McDonald’s and picked up Breakfast for Mom. After Lunch I ran the vacuum and dusted. Then took it easy the rest of the afternoon. For Dinner tonight its a Bacon and Blue Buffalo Burger w/ Shredded Hash Browns.

 

 

I’m having another one of the Wild Idea Buffalo – BACON BLUE BURGER. I tried this for the first time a while back and loved them! It comes frozen and there’s 3 – 1/3 lb. Burger Patties. The Premium Ground Buffalo is mixed with Wild Idea Buffalo Bacon, Blue Cheese, and seasoning. I’ll be preparing it as I do all Wild Idea Buffalo Burger. I’m dressing it up a bit this time. To prepare I’ll need; Maytag Crumbled Blue Cheese, 1 slice of Boar’s Head Bacon, Smucker’s Sugar Free Blackberry Jam, and a toasted Healthy Life Multi Grain English Muffin.

 

 


To start it I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn, lightly seasoned. I then pan fried it, on medium heat, in Extra Light Virgin Olive Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. And as all the Wild Idea Buffalo Burgers it cooked up perfect!

 

 

 

As the Burger was cooking I toasted a Healthy Life Multi Grain English Muffin. By using the Muffin instead of Burger Bun I saved on Calories, Fat, and carbs. I also microwaved a slice of Boar’s Head Bacon.

 

 

 

 

 

To assemble the Burger I took the bottom slice of the Muffin and added some of the Smucker’s Sugar Free Blackberry Jam. Next I added the Burger, Bacon Slice, Crumbled Blue Cheese, and the top half slice of the Muffin. And I had one incredible Burger! The Burger its self has bits of Wild Idea Buffalo Bacon in it along with Blue Cheese. Then the added Maytag Blue Cheese, Bacon slice, and Blackberry Jam just put this Burger over the top! That was my last Wild Idea Bacon Blue Burger that I had in the freezer. I’ll be ordering more but right now Wild Idea is out of stock on them.

 

 

The Maytag Crumbled Blue Cheese I used is hard to find. I used to buy it at the Kroger Cheese Shop but they no longer carry it. So now I have order it DIRECT from Maytag Dairy Farms (https://www.maytagdairyfarms.com/) I also ordered some of their Cheddar Cheese Spread. Both are so good, the best Blue Cheese that I have ever found!

 

 

 


Then for a side I prepared some Simply Potatoes Shredded Hash Browns. Seasoned them with Salt and Pepper and served them sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and Diet Peach Snapple to drink.

Today’s Menu: Chicken Sausage Breakfast Sandwich w/ Hash Browns

 

 

For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. It was one of those long nights dealing with Phantom Pains. They started last night around 10:00 and didn’t finally let up till around 9:00 this morning. I had to be up early anyway I had to have Mom to the Eye Doctor for a follow up on her cataracts removal. She’s already seeing better and the Doc said everything looked fine! The heat wave has started back up! 92 degrees and humid, the heat index is around 101 degrees! I was going to start the touch-up painting on the shed and shutters but just too tired to do it today. Spent the the day catching up on some sleep. For Dinner tonight its a Chicken Sausage Breakfast Sandwich w/ Hash Browns.

 

It’s my 3rd day of Breakfast for Dinner Meals. I made a Breakfast Sandwich using; a toasted Healthy Life Whole Grain English Muffin and lightly fried a al fresco Country Style Chicken Sausage Breakfast Patty. I topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese.

 

 

 

 

 

To prepare the Chicken Sausage Patty; The Patties are fully cooked so all you have to do is reheat them. I used a small skillet, sprayed it with Pam Non Stick Cooking Spray, and heated it on medium heat. Added the Patty to the heated skillet and cooked it for 6 minutes a side. Easy to prepare and delicious! These have such a good taste to them. They’re seasoned with Sage and Thyme. They also have some that are Maple Flavored but these are my favorites!

 

 

 

As the Sausage was cooking I toasted a Healthy Life Whole Grain English Muffin. I love using these by their self, Breakfast Sandwiches, Muffin Pizzas, and much more! They’re 100 calories and 16 net carbs per Muffin. I served the Chicken Sausage Patty on the Muffin and topped it with a 1/2 slice of Cheese.

 

 

 

 

To go with my Dinner/Breakfast Sandwich I prepared some Simply Potatoes Shredded Hash Browns. To prepare these I took a small skillet, sprayed it with Pam Cooking Spray, added a tablespoon of Extra Light Olive Oil, and heated the skillet. Add potatoes to skillet; Cook 6-7 minutes, or until golden brown on the bottom. Drizzle with an additional 1/4 tbsp Extra Light Olive Oil. Turn potatoes over with a spatula. Continue to cook 6-8 minutes, and done! I sprinkled some Sargeto Reduced Fat Shredded Sharp Cheese over top of them to serve. Really enjoy these Breakfast/Dinners! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.
