Today’s Menu: Cajun Rainbow Trout w/ Hash Browns and Green Beans
For Breakfast it was a cup of Bigelow Decaf Green Tea. Cloudy and 66 degrees outside today. Went and picked up Breakfast for Mom at McDonald’s. Spent most of the morning trying to get registered to get my Covid Vaccine but everywhere was full. I’m starting to get frustrated! Then my Family Doctor called and I have to go back Monday, my Sugar was high. What next!  After Lunch I got the cart, rake, and leaf blower out. I raked and cleaned the back yard. Not much else going on. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

I had the Rainbow Trout Fillet that I had purchased from Meijer, in the freezer. I’m glad I bought as much Rainbow Trout and Walleye as I could because it’s tough to find some now. So I laid the package of 1 fillet in the fridge overnight to thaw. To prepare it all I’ll need is; Rainbow Trout Fillet, 1 teaspoon Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheat the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed skin side down on a broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

Then for one side I prepared some Simply Potatoes Hash Browns. Fried in Extra Light Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Dish! I also heated up a can of Del Monte Cut Green Beans. I just love the trio of the Cajun Rainbow Trout, Hash Browns, and Green Beans, one of my favorites for sure! For Dessert/Snack later a bowl of Breyer’s Carb Smart Chocolate Ice Cream.

Today’s Menu: Sea Salt Herb Rubbed Tri-Tip Buffalo Steak w/ Seasoned Diced Potatoes and Green Beans

 

 

For Breakfast I Scrambled a couple of Eggs, toasted a Thomas Light English Muffin and had a cup of Bigelow Decaf Green Tea. We had a high of 52 degrees and cloudy out today. Cleaned up the shed and straightened it. Then later I gave a neighbor a hand doing a few things outside. For Dinner tonight I prepared a Sea Salt Herb Rubbed Tri-Tip Buffalo Steak w/ Seasoned Diced Potatoes and Green Beans.

 

To prepare the Steak I preheated the oven to 400°. Then I took a Cast Iron Skillet that I sprayed with Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil to, I heated it over medium high heat. When ready I added my Steaks to it. I cooked the Steaks 1 minute on each side. I just wanted a light sear on both sides. Then I moved the Skillet on to the preheated Oven and Roasted it for about 4 minutes. Removed the Skillet from the Oven and placed the Steaks on a plate and let them rest for 5 minutes before cutting. The Tri -Tip Steak was super tender and juicy. I cooked it to medium rare and it came perfect! I could have Wild Idea Buffalo every day!

 

For a side I prepared some Simply Potatoes Steakhouse Seasoned Diced Potatoes. Just love using all the Simply Potatoes Products, always easy to prepare, fresh and delicious Potato Dishes. These come seasoned with Steakhouse Seasoning, I added some Sea Salt.

 

 

 

Then I also heated up a can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. I just love Green Beans, all Beans! For Dessert/Snack  later a 100 Calorie Bag of Snyder’s Pretzels and a Diet Peach Snapple to drink.

For Breakfast it was a cup of Bigelow Decaf Green Tea. Chilly morning starting off 36 degrees. For the day it was sunny and 64 degrees out. Went to Kroger for Mom after my Tea. Stopped and picked up her Breakfast at Wendy’s. After Lunch I got the cart, rake, and leaf blower out. I raked and cleaned the back yard. Not much else going on. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

Today’s Menu: Fried White Lake Perch w/ Sliced New Potatoes and Cut Green Beans

 

 

For Breakfast this beautiful morning I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Also had my morning cup of Bigelow Decaf Green Tea. 77 degrees and sunny out today. After Breakfast I got the cart out of the shed and repaired the skirting around the back of the shed. Then I went around the yard and flower beds and sprayed for weeds. The raked the backyard, the leaves are falling! Took a spin around the neighborhood and enjoyed this beautiful Early Fall Day! For Dinner tonight I prepared Fried White Lake Perch w/ Sliced New Potatoes and Cut Green Beans.

 

I had purchased the White Lake Perch at Meijer and had a bag in the freezer. Sit it in the fridge overnight to thaw. A couple of weeks ago had this same combination of the White Perch and Potato Puffs. It was so good I’m having it again! To prepare the fillets; I first took a large skillet and sprayed it with Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil to the pan and heated it medium heat. With the pan heating I got the fillets ready. I’ll be seasoning them with Morton’s Lite Salt and Zatarain’s Seasoned Fish-Fri Seafood Breading Mix. First Salted them and then put the Fillets in a plastic bag and added the Breading. Shook the bag until the Fillets were covered.

 

Then added a few of them to the preheated skillet. I fried them 3 minutes per side. They came out a golden brown! The Perch was delicious, just love fresh water fish as I do all Fish. Meijer is about the only store that carries the White Perch and they also will have Yellow Lake Perch from time to time.

 

For one side I heated up a can of Del Monte Sliced New Potatoes. I use a lot of Del Monte Vegetable Products, always delicious and store a lot longer than fresh Vegetables. To prepare them I emptied the can into a small sauce pan. Heated it on medium heat until heated through.

 

 

Next I heated up a large can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. Also baked up a couple of slices New York Bakery Texas Toast – Light. For Dessert I had a Jello Sugar Free Dark Cherry Jello.

3. FRY fish, a few pieces at a time, in hot oil until light golden brown. Drain on paper towels.

Note: For thicker coating, dip fish in 1/2 cup milk mixed with 1 lightly beaten egg, before rolling in Fish Fri.

PAN FRYING DIRECTIONS
1. POUR 1 inch of vegetable oil into large skillet. Heat oil to 350°F on medium heat.
2. COAT and fry fish as directed above.

BAKING DIRECTIONS
1. BRUSH 1 lb. fish fillets on both sides with oil. Pour Fish Fri onto plate. Roll fish in Fish Fri until evenly coated. Discard any remaining Fish Fri mixture on plate.
2. PLACE fish on shallow baking pan sprayed with no stick cooking spray. Spray top of fish with cooking spray.
3. BAKE in preheated 450ºF oven 15 minutes or until fish flakes easily with a fork.

Today’s Menu: Buffalo Eye of Chuck Filet (6 oz.) w/ Steakhouse Seasoned Diced Potatoes and Baked Garlic Bread

 

 

For Breakfast this morning I prepared a Ham, Egg, and Swiss Cheese Breakfast Sandwich. I fried up a few slices of Boar’s Head Sweet Slice Ham, I fried A Medium Egg Sunny Side Up, 1 slice of Private Selection of Swiss Cheese, and all served on a toasted Thomas Light English Muffin. Along with a cup of Bigelow Decaf Green Tea, it was a perfect Breakfast! 93 degrees, humid and partly sunny out today. Got the cart, rake, and leaf blower out to do some yard work. I got my industrial size of weed spray out. Sprayed around my yard and a few of neighbors yard. Good to be outside! For Dinner tonight I prepared a Buffalo Eye of Chuck Filet (6 oz.) w/ Steakhouse Seasoned Diced Potatoes and Baked Garlic Bread.

 

First time trying the Wild Idea 6 oz. Buffalo Eye of Chuck Filet. I’ll be preparing it in a Cast Iron Skillet, cooking it the same way as I do the other Wild Idea Buffalo Steaks. For Seasoning I’ll need Extra Virgin Olive Oil, Dried Rosemary, and Wild Idea Omnivore Salt.

 

To prepare it I turned the oven on to 400 degrees. Next I rubbed the Steak with a 1/2 tablespoon of Extra Light Olive Oil. Then seasoned it with Dried Rosemary and the Wild Idea Omnivore Salt. As the Steak rested I preheated a Cast Iron Skillet. When the Skillet was heated I added my Buffalo Sirloin, I cooked it 2 minutes on 1 side and flipped it over and cooked it another 1 minute. Then I moved the Cast Iron to the oven to finish cooking. It came out to a beautiful Medium Rare! The Wild Idea Buffalo Eye of Chuck Filet came out flavorful and very tender! Like all the Wild Idea Buffalo Steaks, Delicious!

 

For a side I prepared some Simply Potatoes Steakhouse Seasoned Diced Potatoes. Just love using all the Simply Potatoes Products, always easy to prepare, fresh and delicious Potato Dishes. These come seasoned with Steakhouse Seasoning, I added some Sea Salt.

 

 

 

 

I also baked a loaf of Kroger Bakery Garlic Bread. Perfect Bread for any Steak! For Dessert later a 100 Calorie Mini Bag of Snyder’s Pretzels along with a Diet Peach Snapple to drink.

Today’s Menu: Bison Steak, Eggs, Hash Browns, and Toast Breakfast

 

 

 

To start my Morning off I had a cup of Bigelow Decaf Green Tea. 98 degrees and sunny out today. After Breakfast I went and picked up Breakfast for Mom at McDonald’s. Back home did a couple of loads of laundry and did some light cleaning around the house. It just felt like a Breakfast for Dinner night tonight! I prepared a Bison Steak, Eggs, Hash Browns, and Toast for Dinner tonight.

 

For my Steak I fried up a SayersBrook 4 oz. Bison Fillet Mignon. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. I it came out a perfect medium rare! It was so tender and juicy.

 

 

Next I used the same skillet and I prepared a Sunny Side Up Egg. Fried it on medium low, seasoned with Morton’s Lite Salt and Ground Black Pepper.

 

 

As the the Steak and Egg were cooking, in another skillet I prepared some Simply Potatoes Shredded Hash Browns. I love these, I could have them every day! Again I used a small skillet, sprayed it with Pam Cooking Spray, added 1 tablespoon of Extra Light Olive Oil, and heated it on medium heat. I fried these for 14 minutes. When done I sprinkled some Sargento Off the Block 4 State Sharp Cheddar Cheese.

 

Finally I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread. Topped them with some I Can’t Believe It’s Not Butter. I had one hearty Comfort Food Dinner tonight! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels along with a Diet Peach Snapple to drink.

Today’s Menu: Cajun Rainbow Trout w/ Hash Browns and Green Beans

 

 

For Breakfast it was Skillet Diced Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a an Egg Sunny Side Up and sprinkle of Sargento Reduced Fat Cheddar/Jack Cheese. I also had a cup of Bigelow Decaf Green Tea. Good Breakfast! Mostly cloudy with a passing light shower, 57 degrees out today. After Lunch I went to the Dollar Tree for a gift card and Birthday Card for my cousin, turning 13. Today’s Menu: Bison Fillet Steak, Eggs, Hash Browns, and Toast

 

 

 

To start this Morning off I made a Breakfast Sandwich. To make I heated up 4 slices of of Oscar Maye Sliced Bologna, topped it with a slice of Kraft Deli Style Sharp Cheddar Cheese (melted on top of the Bologna), 1 Fried Egg (Medium Size) Over Easy, and served on a couple of Aunt Millie’s Light Whole Grain Bread. The Sandwich was so good, that melted Cheese and the Runny Egg was fantastic! I also had a cup of Biglow Decaf Green Tea. 72 degrees and partly cloudy out today. Well at least we have warmer weather where we can at least get outside. There’s not much else to do during our stay at home orders until May 1st. We’ll just make the best of it! For Dinner tonight it’s Breakfast, Bison Fillet Steak, Eggs, Hash Browns, and Toast.

For my Steak I fried up a SayersBrook 4 oz. Bison Fillet Mignon. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. I it came out a perfect medium rare! It was so tender and juicy.

 

 

Next I used the same skillet and I prepared a Sunny Side Up Egg. Fried it on medium low, seasoned with Morton’s Lite Salt and Ground Black Pepper.

 

 

As the the Steak and Egg were cooking, in another skillet I prepared some Simply Potatoes Shredded Hash Browns. I love these, I could have them every day! Again I used a small skillet, sprayed it with Pam Cooking Spray, added 1 tablespoon of Extra Light Olive Oil, and heated it on medium heat. I fried these for 14 minutes. When done I sprinkled some Sargento Off the Block Sharp Cheddar Cheese.

 

Finally I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread. Topped them with some I Can’t Believe It’s Not Butter. I had one hearty Comfort Food Dinner tonight! For Dessert later a Jello – Sugar Free Dark Cherry Jello.

Today’s Menu: Cajun Rainbow Trout w/ Hash Browns and Green Beans

 

 

For Breakfast it was Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Cheddar/Jack Cheese. Just love this skillet meal! Sunny and 60 degrees out today, good to see the sun. After Breakfast I went to Wendy’s and picked up Breakfast for Mom. Now we hear isolation until May 1st, wow. It has to be done till this virus passes! Hope all of you are safe and healthy! So today I did a load of laundry and cleaned the house. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

I had purchased a couple of Rainbow Trout Fillets at Meijer and them in the freezer. I laid a package of 1 fillet of them in the fridge overnight to thaw. To prepare it all I’ll need is; Rainbow Trout Fillet, 1 teaspoon Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed skin side down on broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

Then for one side I prepared some Simply Potatoes Hash Browns. Fried in Extra Light Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Dish! I also heated up a can of Del Monte Cut Green Beans. I just love the trio of the Cajun Rainbow Trout, Hash Browns, and Green Beans, one of my favorites! For Dessert later a Jello Sugar Free Dark Cherry Jello.

For Breakfast I had a cup of Bigelow Decaf Green Tea. Not much of an appetite this morning. Rain and 52 degrees outside. My back is still giving me some trouble. So another day of moving slow and resting. Just as well with the weather outside! For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

 

 

 

 

I had purchased a couple of Rainbow Trout Fillets at Meijer and them in the freezer. I laid a package of 1 fillet of them in the fridge overnight to thaw.
