Today’s Menu: Cajun Rainbow Trout w/ Hash Browns and Green Beans

 

For Breakfast it was a cup of Bigelow Decaf Green Tea. Another hot and humid day out there. We have a high of 88 degrees and the humidity almost as high. Rain showers by late afternoon. A heavy thunderstorm moved in late yesterday. Heavy rain and strong winds. As the storm passed us it got worse, a tornado and it caused a lot of damage to a County next to ours. So after my Tea I watered the Tomato and Pepper Plants. After Lunch I took a friend to a local Home Depot. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

 

I had the Rainbow Trout Fillet that I had purchased from Meijer the other day. To prepare it all I’ll need is; Rainbow Trout Fillet, 1 teaspoon Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheat the broiler. Pat the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Place skin side down on a broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

 

Then for one side I prepared some Simply Potatoes Hash Browns. Fried in Extra Light Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Dish! I also heated up the leftover Del Monte Cut Green Beans from last night. I just love the trio of the Cajun Rainbow Trout, Hash Browns, and Green Beans, one of my favorites for sure! For Dessert/Snack later a Diet Peach Snapple.

Today’s Menu: Chicken Sausage Patty Breakfast Sandwich w/ Hash Browns

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. A beautiful day out there today! A high of 78 degrees and all sunshine out there! After my Tea I got the cart out of the shed and got some yard work done. Then cleaned off the deck and driveway areas. Kept the cart out and rode around for a while enjoying the beautiful weather. I’m still waiting for my test results I had at the Hospital Friday. For Dinner tonight it’s a Chicken Sausage Patty Breakfast Sandwich w/ Hash Browns.

 

 

Breakfast for Dinner, it sounded good for Dinner tonight! Something that’s a bit lighter than a full meal but still delicious! I prepared a Thomas Light 100% Multigrain English Muffin and lightly fried a al fresco Country Style Chicken Sausage Breakfast Patty. I topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese. Along with Simply Potatoes Shredded Hash Browns.

 

To prepare the Chicken Sausage Patty; The Patties are fully cooked so all you have to do is reheat them. I used a small skillet, sprayed it with Pam Non Stick Cooking Spray, and heated it on medium heat. Added the Patty to the heated skillet and cooked it for 6 minutes a side. Easy to prepare and delicious! These have such a good taste to them. They’re seasoned with Sage and Thyme. They also have some that are Maple Flavored but these are my favorites!

 

As the Sausage was cooking I toasted the Thomas Light English Muffin. I love using these, for Breakfast Sandwiches, Muffin Pizzas, and much more! They’re 100 calories and 18 net carbs per Muffin. I served the Chicken Sausage Patty on the Muffin and topped it with a 1/2 slice of Kraft Deli Style Sharp Cheddar Cheese.

 

To go with my Dinner/Breakfast Sandwich I prepared some Simply Potatoes Shredded Hash Browns. To prepare these I took a small skillet, sprayed it with Pam Cooking Spray, added a tablespoon of Extra Light Olive Oil, and heated the skillet. Add potatoes to skillet; Cook 6-7 minutes, or until golden brown on the bottom. Drizzle with an additional 1/4 tbsp Extra Light Olive Oil. Turn potatoes over with a spatula. Continue to cook 6-8 minutes, and done! I sprinkled some Sargento Reduced Fat Shredded Sharp Cheese over top of them and served. Really enjoy these Breakfast/Dinners! For Dessert later a Jello Sugar Free Dark Chocolate Pudding Cup.

Today’s Menu: Breakfast for Dinner – Seasoned Diced Potatoes, Bacon, and Scrambled Eggs

 

For Breakfast this morning I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had my morning cup of Bigelow Decaf Green Tea. 62 degrees with heavy rain out today. I had to have Mom at the Treatment Center for her 5th Treatment, 15 to go! Her face is already showing improvement! All of the local creeks and rivers are close to flooding. Further South of us the Ohio River is expected to be over flood stage by the weekend. For Dinner I prepared a Breakfast for Dinner – Seasoned Diced Potatoes, Bacon, and Scrambled Eggs.

 

I prepared some Simply Potatoes Seasoned Diced Potatoes. Just love using all the Simply Potatoes Products, always easy to prepare, fresh and delicious Potato Dishes. These come seasoned with Steakhouse type of Seasoning, I added some Sea Salt.

 

For the Bacon I fried up a package of Kroger Private Selection Center Cut Double Smoked Bacon. We’ve been using this Bacon as our Bacon of choice for a while now. It’s an excellent tasting Bacon that fries up perfect! There’s 50 calories per serving, 2 slices.

 

 

 

I also Scrambled a couple of Medium Sized Eggs. When Scrambling them I added a sprinkle of Kraft 2% Shredded Sharp Cheddar Cheese. Nothing like a good Breakfast for Dinner! For Dessert later some Honeycrisp Apple Slices.

For Breakfast it was a cup of Bigelow Decaf Green Tea. 35 degrees and partly sunny outside. I had to have Mom up for her 3rd Treatment at 11:00 this morning. Everything is going great! 17 Treatments left!. On the way back home Mom wanted a Cheeseburger from Burger King so we stopped there before coming home. Back home I did a load of laundry and cleaned the house. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. After my Tea I went to Meijer for a neighbor of mine. She’s elderly and has trouble driving so I go for her. On the way back home I picked up Breakfast for her and Mom at Wendy’s. Back home I did a load of laundry and then it was outside to rake leaves. So for Dinner tonight it’s a Chicken Sausage Patty Breakfast Sandwich w/ Hash Browns.

For Breakfast it was a cup of Bigelow Decaf Green Tea. 89 degrees, humid, and mostly sunny out today. A Friend of mine broke her leg yesterday. She needed a few items from the store and prescription filled so I went to Walgreens and then on to Meijer for her. Back home I gave a couple of neighbors a hand getting their yard sale tables ready for tomorrow. Tomorrow is our community yard sale. They do this once a year and usually get a huge turnout. Ready to relax tonight! For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

Today’s Menu: Ground Chicken Cheddar Burger on English Muffin w/ Shredded Hash Browns

 

For Breakfast this morning I Scrambled a couple of Eggs, heated up 2 Johnsonville Turkey Breakfast Sausage Links, toasted a couple of slices of Aunt Millie’s Live Carb Smart Wheat Bread, and had a cup of Bigelow Decaf Green Tea. Good Breakfast! It’s heating up out there, 90 degrees and high humidity. Did some yard work early before it got too humid out. Later I took Mom’s car out and had it washed and I vacuumed the inside. Not much going on after that. For Dinner tonight I prepared a Ground Chicken Cheddar Burger on English Muffin w/ Shredded Hash Browns.

 

To start I made my Chicken Burger patties. To prepare them, in a large bowl, combine Ground Chicken, Ground Cumin, Paprika, Garlic Powder, Dried Oregano, Sea Salt and Peppercorn Medley, and Italian Style Bread Crumbs. The Seasonings amount are to taste and 2 tablespoons of the Italian Style Bread Crumbs. Make a little depression with your thumb in the center of each burger so they cook evenly. Divide the mixture into 4 patties. I prepared 2 of the Burgers and froze the other 2.

 

 

I first toasted a Thomas Light English Muffin. Next In a Cast Iron Skillet over medium heat, I heat  1 tablespoon of Cooking Olive Oil. Added the Burger patties and cook, flipping once, until golden and a thermometer inserted into the center registers 165°, 6 to 8 minutes each side. Top with a slice of Hoffman’s Super Sharp Cheddar and cook until just started melting, 2 minutes. Remove from heat and transfer patties to a plate. Served on a Thomas Light English Muffin and top with some Hellman’s Chipotle Mayo.

 

Then for a side I prepared some Simply Potatoes Hash Browns. Fried in Cooking Olive Oil and seasoned them with Sargento Shredded Cheese Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Dish! Very good Meal. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper to drink.

Today’s Menu: Boneless Pork Ribeye w/ Diced Potatoes, Mini Sweet Ears of Corn, and Baked French Bread

 

 

For Breakfast I toasted Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. Another nice day out there. 86 degrees and sunny, low humidity. After Breakfast I went to Kroger for Mom and stopped by McDonald’s and picked up Breakfast for her. I picked another 10 Roma Tomatoes and 5 Bell Peppers this morning. The plants have really produced this year! Later raked the yard and sprayed for weeds. I have to get that tree in our front yard cut down, all I do is rake leaves year around! Hopefully soon! For Dinner tonight I prepared Boneless Pork Ribeyes w/ Diced Potatoes, Mini Sweet Ears of Corn, and Baked French Bread.

 

I bought another of the AdapTable Pork Products at my last visit to Meijer. This on is the Chophouse Seasoned Boneless Pork Ribeye, Seasoned with the Chophouse – Garlic, Onion and Bell Pepper. I’m so happy that Meijer started carrying the AdapTable Products!

 

 

I’ll be preparing them on the stove in a Cast Ron Skillet. To prepare them I heated one tablespoon of oil in a skillet on medium-high. Cooked the Chops in a covered skillet for 8-9 minutes per side until product reaches 145°F on a meat thermometer. Removed them from heat, and let them rest for 3 minutes. And serve!

 

 

These were as just as Delicious as the other ones we tried! Seasoned just right and the Chops came out moist and juicy! You have to give the AdapTable Products a try!

 

 

 

 

 

 

For one side I prepared some Simply Potatoes Seasoned Diced Potatoes. Just love using all the Simply Potatoes Products, always easy to prepare, fresh and delicious Potato Dishes. These come seasoned with Seasoning, I added some Sea Salt.

 

For another side dish I boiled some Green Giant Mini Ears of Sweet Corn. It’s frozen Mini Ears of Sweet Corn and you just boil for 10 minutes and you have some of the Sweetest Corn you can find! I also baked a loaf of Pillsbury French Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Chophouse Blend Pork Ribeye Chops
Seasoned With: Garlic, Onion and Bell Pepper

Directions:
1 – Briefly heat one tablespoon of oil in a skillet on medium-high.
2 – Cook chops in a covered skillet for 8-9 minutes per side until product reaches 145°F on a meat thermometer.
3 – Remove from heat, rest for 3 minutes. Enjoy!

Keep refrigerated. Keep hot food hot. Refrigerate leftovers immediately or discard.

Today’s Menu: Chicken Sausage Patty Breakfast Sandwich w/ Hash Browns

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 77 degrees and mostly sunny out today, beautiful day out there. Got the paint out of the shed and got the cart out, did some touch up painting on the house shutters and some of the trim on the shed. Later on I raked the backyard. So for Dinner tonight its a Chicken Sausage Patty Breakfast Sandwich w/ Hash Browns.

 

Breakfast for Dinner so it sounded good for Dinner tonight! Something that’s a bit lighter than a full meal but still delicious! I prepared a Thomas Light 100% Multigrain English Muffin and lightly fried a al fresco Country Style Chicken Sausage Breakfast Patty. I topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese. Along with Simply Potatoes Shredded Hash Browns.

 

To prepare the Chicken Sausage Patty; The Patties are fully cooked so all you have to do is reheat them. I used a small skillet, sprayed it with Pam Non Stick Cooking Spray, and heated it on medium heat. Added the Patty to the heated skillet and cooked it for 6 minutes a side. Easy to prepare and delicious! These have such a good taste to them. They’re seasoned with Sage and Thyme. They also have some that are Maple Flavored but these are my favorites!

 

As the Sausage was cooking I toasted the Thomas Light English Muffin. I love using these, for Breakfast Sandwiches, Muffin Pizzas, and much more! They’re 100 calories and 18 net carbs per Muffin. I served the Chicken Sausage Patty on the Muffin and topped it with a 1/2 slice of Kraft Deli Style Sharp Cheddar Cheese.

 

To go with my Dinner/Breakfast Sandwich I prepared some Simply Potatoes Shredded Hash Browns. To prepare these I took a small skillet, sprayed it with Pam Cooking Spray, added a tablespoon of Extra Light Olive Oil, and heated the skillet. Add potatoes to skillet; Cook 6-7 minutes, or until golden brown on the bottom. Drizzle with an additional 1/4 tbsp Extra Light Olive Oil. Turn potatoes over with a spatula. Continue to cook 6-8 minutes, and done! I sprinkled some Sargento Reduced Fat Shredded Sharp Cheese over top of them and served. Really enjoy these Breakfast/Dinners! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

Today’s Menu: Buttermilk Marinated Thin Sliced Chicken Breasts w/ Hash Browns and Shelli Beans

 

 

To start today off I toasted a Thomas light English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam and had a cup of Bigelow Decaf Green Tea. 91 degrees, humid and passing thunder storms out today. A friend of mine called and wanted me to take her out to Ross to the produce markets they have out there. They have 2 large produce markets within a mile of each other. Mom wanted a few things also. I was raised and went to High School out in Ross. So it’s always good to go back there. Back home did a few things outside around the house. For Dinner tonight I prepared Buttermilk Marinated Thin Sliced Chicken Breasts w/ Hash Browns and Shellie Beans.

 

For the Chicken; I started at Noon today I grabbed a large Hefty Bag and added a 1/2 Pint of Buttermilk to the bag. I then added several shakes of Frank’s Hot Sauce to it and shook the bag to blend it together. I then add my Chicken Breasts and let it Marinate in the fridge until it was time to use. I used my favorite, Katie’s Best Chicken.

 

To prepare the Thin Sliced Chicken Breast I grabbed a Cast Iron Skillet. Sprayed with a coat of Pam Non Stick Cooking Spray. Then I started heating the skillet on medium heat. Next I added a tablespoon and a half of Olive Oil Cooking Oil. As the skillet heated I got the Chicken out of the fridge and removed it from the bag of Marinade, shaking off the excess. Then I grabbed a pie pan and added Flour to it and seasoned the Flour with Paprika. Took the Chicken Breast and rolled them in the Seasoned Flour until well covered.

 

Added the Chicken Breasts to the heated Skillet. I cooked the Chicken for 4 minutes and then flipped them over and cooked them for 4 more minutes, until golden brown and the meat thermometer read 165 degrees. The Chicken turned out so very good! Cooked up perfect, nice crust, and love the seasoning! Served it with Kraft Hickory Smoked BBQ Sauce for dipping.

 

Then for one side I prepared some Simply Potatoes Hash Browns. Fried in Extra Light Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Dish!

 

For a 2nd side I prepared a can of Libby’s Shellie Beans. I had picked up a couple of cans at Meijer. I opened 1 can and added them to a small sauce pan that I sprayed with Pam Non Stick Cooking Spray. I brought the beans to a rolling boil and reduced the heat to low until heated through. These are so good! Shellie Beans are Green Beans with added Pinto Beans. For Dessert later I had a Jello Sugar Free Dark Chocolate Pudding.
