Today’s Menu: Turkey Meatball Mini Sub w/ Baked Crinkle Fries

 

 

 

For Breakfast this morning I toasted a couple of Nutri Grain Eggo’s and I had a cup of Bigelow Decaf Green Tea. 61 degrees and mostly sunny out today, 2 days in a row with no rain! After Breakfast I went to McDonald’s and picked up Breakfast for Mom. Dropped that off and headed back out to Menard’s. They had some Whiskey Barrel Plant Buckets and Mom had been wanting one so I purchased 1 for her. I also picked up another plant bucket along with a couple of bags of Peat Moss, 2 bags of Dirt, Weed Spray and a few Vegetable and Spice Plants. I replanted a few of plants and then finished up working on the backyard flower bed. So for Dinner tonight I prepared a Turkey Meatball Mini Sub w/ Baked Fries.

 

 

 

 

I had used the Honeysuckle White Fresh Italian Style Turkey Meatballs leftover from yesterday meal. The Meatballs are good size, always fresh, meaty, and have a fantastic taste and they’re 190 calories and 5 net carbs for 3 Meatballs. Plus they’re a perfect size for Hoagie or Hot Dog Buns, I used Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Buns.

 

 

 

 

 

For my Pasta Sauce I had used the LaRosa’s Original Sauce. A local favorite and mine also, it’s got a perfect combination of a robust sauce with a hint of sweetness to it. To prepare it I took a medium size sauce pan and sprayed it with Pam Cooking Spray. Emptied the can of Sauce in the pan and turned the heat on medium. Then I added my Turkey Meatballs and covered the pan and let it simmer until both the Sauce and Meatballs were heated through.

 

 

 

 

 

I’m using Sargento Shredded Mozzarella Cheese as a topping for the Sub. You can use Hoagie Buns but to save on calories and carbs I usually just use Aunt Millie’s Reduced Fat Whole Grain Hot Dog Buns. To assemble; open the Bun up, put the Meatballs and Sauce in the Bun , top it with a few shakes of McCormick Grinder Italian Seasoning, and top it with the Sargento Shredded Mozzarella Cheese. Love these Meatball Sandwiches! The Larosa’s Sauce just seems to bring the Sandwich together! Sauce is incredible, Turkey Meatballs flavorful and meaty, and the Mozzarella is perfect with Pasta and Sauces.

 

 

 

 

For my Fries I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Sprite Zero to drink.

Today’s Menu: Turkey Meatballs and Rotini Pasta w/ Baked French Bread

 

 

For Breakfast I had a bowl of Cheerios’s along with a cup of Bigelow Decaf Green Tea. Cold morning out at 19 degrees. Sunny and 34 degrees for the afternoon. After Breakfast I went and picked up Breakfast for Mom at McDonald’s. Later I went Walmart to pick up the last couple of Gift Cards I needed for Christmas Gifts and a few Christmas Cards. Stopped by the ATM and got gas before heading home. Did a few things around the house and later went outside and got the leaf blower out and cleaned the deck and driveway areas, so many leaves still! For Dinner tonight its Turkey Meatballs and Rotini Pasta w/ Baked French Bread.

 

 

 

 

You can make any Meal healthier by using healthier ingredients. That includes Meatballs and Pasta! I’ll be using Honeysuckle White Turkey Meatballs Kroger finally started having these back in stock! The Honeysuckle White Turkey Meatballs are some of the best I’ve found, fantastic taste and they’re 190 calories and 6 carbs for 3 large Meatballs. For the Sauce I’m using LaRosa’s Original Pasta Sauce. Then for the Rotini Pasta I’ll be using Ronzoni Healthy Harvest Whole Grain Rotini. For the added Cheese topping I’m using Sargento Off the Block Mozzarella Cheese and Kraft Reduced Fat Grated Parmesan Cheese.

I’ll be cooking them in LaRosa’s Original Pasta Sauce, one of my favorites! The Sauce goes great on Pasta, Pizza, or as a Dipping sauce. I grabbed a Sauce Pan, sprayed it Pam Cooking Spray, added the Sauce to it, and heated on medium low heat. As the Sauce started to heat up I added the Turkey Meatballs, stirred until covered with the Sauce. Reduced the heat to low and let the Meatballs simmer in that Sauce until ready to use.

 

 

 

 

 


For the Rotini Pasta I’m using my favorite, Ronzoni Healthy Harvest Whole Grain Rotini. Easy to prepare; I used a large sauce pan and added 1 1/2 quarts of water and Salt and brought it to a rapid boil. Added the Pasta and brought it back to a boil. Cooked uncovered for 10 minutes, stirring often. Drained the Pasta and put it into the Baking Dish. Then Seasoned the Rotini with 2 teaspoons of Extra Light Olive Oil, some McCormick Grinder Italian Seasoning, and Kraft Grated Reduced Fat Parmesan Cheese.

 

 

 

 

I made a bed of the Rotini Pasta in a bowl. I topped it with the Turkey Meatballs that slow cooked in the LaRosa’s Sauce and Sargento Off the Block Mozzarella Cheese. The Meatballs and Rotini came out incredible! The Turkey Meatballs, Rotini Pasta, Cheese, and Sauce combined to make one delicious Dish! I also baked a loaf of Pillsbury French Bread. One delicious Dinner! For Dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Smucker’s Sugar Free Chocolate Hot Fudge Topping.

Today’s Menu: Turkey Meatball Mini Sub w/ Baked Crinkle Fries

 

 

To start this rainy Thursday morning off I made a Breakfast Sandwich using; a toasted Healthy Life Whole Grain English Muffin and lightly fried a al fresco Country Style Chicken Sausage Breakfast Patty. I topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese. Also had that morning cup of Bigelow Decaf Green Tea. Did I say it was raining? Pouring the rain, second straight day. They say by Friday we’ll have 4-5 inches of rain! It’s 51 degrees out. So not a lot going on outside so I did a load of laundry and cleaned the house. So for Dinner tonight I prepared a Turkey Meatball Mini Sub w/ Baked Fries.

 

 

 

 

I used the Honeysuckle White Fresh Italian Style Turkey Meatballs leftover from yesterday meal. I always make extra Sauce and Meatballs when I make Spaghetti and Meatballs so I can make a Meatball Hoagie the following day. I’ve been using the Honeysuckle White Fresh Italian Style Turkey Meatballs for quite a few years now. So thank goodness Kroger finally started carrying them again! The Meatballs are good size, always fresh, meaty, and have a fantastic taste and they’re 190 calories and 5 net carbs for 3 Meatballs. Today’s Menu:Leftovers – Baked Turkey Meatballs and Rotini Pasta w/ Baked Multi Grain Bread

 

 

To start the morning of I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Well the rain has finally let up around here but there’s a lot of local flooding and the Ohio River is way over it’s banks. After Breakfast I headed up to the local Kroger to pick up a couple of items. Then stopped by McDonald’s and picked up Breakfast for Mom and Dad. Mom went on to Church and stayed home and kept an eye on Dad. Did a couple of loads of laundry while she was gone. After Mom got back I had Lunch and then headed out to Walmart and Meijer to check out prices for Wood Chips and Weed Killer Fertilizer. Getting ready for Spring! I’ll check out Menard’s and Home Depot tomorrow. For Dinner tonight its Leftovers – Baked Turkey Meatballs and Rotini Pasta w/ Baked Multi Grain Bread. I heated up the leftovers from last night’s meal. I also left the original post from yesterday for directions and ingredients of the dish.

Next I topped the Rotini with the LaRosa’s Sauce and Turkey Meatballs. Sprinkled more of the Grated Parm Cheese followed by a layer of Sargento Mozzarella Cheese. The oven was preheated at 400 degrees so it was ready to bake. As the Past Dish was baking I also baked a loaf of RiverRoad Bake House Multi Grain Oval Loaf Bread.

 

 

 

 

The Meatballs and Rotini came out incredible! The Turkey Meatballs, Rotini Pasta, Cheese, and Sauce combined to make one delicious Dish! Plus Mom and Dad both enjoyed it. Neither is big on Pasta but had 2 servings of it!. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu:Baked Turkey Meatballs and Rotini Pasta w/ Baked Multi Grain Bread
 

 

 

For Breakfast this morning I’m having another of the Buffalo Fillet Mignon. I love these SayersBrook 4 oz. Bison Filet Mignon! To prepare it I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Non Stick Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. It came out a perfect medium rare! It was so tender and juicy. Then I also fried up a Sunny Side Egg and toasted a couple of slices of Healthy Life Whole Grain Bread. Sure tough to beat a Steak and Egg Breakfast! Also as usual, had my morning cup of Bigelow Decaf Green Tea.

 

Rain, Thunderstorms, and a high of 56 degrees for a high. We have a lot of flooding across the area. So its a another indoor day. Did some cleaning; Turned the oven on and let clean, straightened up the freezer, and straightened up the pantry. After that just kicked back and watched some College Basketball. For Dinner tonight its Baked Turkey Meatballs and Rotini Pasta w/ Baked Multi Grain Bread.

Then Seasoned the Rotini with 2 teaspoons of Extra Light Olive Oil, some McCormick Grinder Italian Seasoning, and Kraft Grated Reduced Fat Parmesan Cheese.

 

 

 

 

Next I topped the Rotini with the LaRosa’s Sauce and Turkey Meatballs. Sprinkled more of the Grated Parm Cheese followed by a layer of Sargento Mozzarella Cheese. The oven was preheated at 400 degrees so it was ready to bake. As the Past Dish was baking I also baked a loaf of RiverRoad Bake House Multi Grain Oval Loaf Bread.

 

 

 

 

 

The Meatballs and Rotini came out incredible! The Turkey Meatballs, Rotini Pasta, Cheese, and Sauce combined to make one delicious Dish! Plus Mom and Dad both enjoyed it. Neither is big on Pasta but had 2 servings of it!. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Turkey Meatball Mini Sub w/ Baked Crinkle Fries

 

 

 

To start the Sunday morning off I made some Simply Potatoes Shredded Hash Browns. Next I prepared some Ekrich Smoked Turkey Sausage Links. I also had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to the local Kroger and picked up a few items then went to Burger King and picked up Mom and Dad’s Breakfast. They normally have McDonald’s but I switched it up a bit and picked up the Burger King Breakfast items. And they really enjoyed them! Cloudy out all day and a high of 42 degrees. Rain Showers moved in the afternoon. Cleaned the house and kept an eye on Dad while Mom was at Church. So for Dinner tonight I prepared a Turkey Meatball Mini Sub w/ Baked Fries.

 

 

I had used the Honeysuckle White Fresh Italian Style Turkey Meatballs leftover from yesterday meal. I’ve been using the Honeysuckle White Fresh Italian Style Turkey Meatballs for quite a few years now. So thank goodness Kroger finally started carrying them again! The Meatballs are good size, always fresh, meaty, and have a fantastic taste and they’re 190 calories and 5 net carbs for 3 Meatballs. Plus they’re a perfect size for Hoagie or Hot Dog Buns, I used Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Buns.

 

 

For my Pasta Sauce I had used the LaRosa’s Original Sauce. A local favorite and mine also, it’s got a perfect combination of a robust sauce with a hint of sweetness to it. To prepare it I took a medium size sauce pan and sprayed it with Pam Cooking Spray. Emptied the can of Sauce in the pan and turned the heat on medium. Then I added my Turkey Meatballs and covered the pan and let it simmer until both the Sauce and Meatballs were heated through.

 

 

 

I’m using Sargento Shredded Mozzarella Cheese as a topping for the Sub. You can use Hoagie Buns but to save on calories and carbs I usually just use Aunt Millie’s Reduced Fat Whole Grain Hot Dog Buns. To assemble; open the Bun up, put the Meatballs and Sauce in the Bun , top it with a few shakes of McCormick Grinder Italian Seasoning, and top it with the Sargento Shredded Mozzarella Cheese. Love these Meatball Sandwiches! The Larosa’s Sauce just seems to bring the Sandwich together! Sauce is incredible, Turkey Meatballs flavorful and meaty, and the Mozzarella is perfect with Pasta and Sauces.

 

For my Fries I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

To assemble; open the Bun up, put the slice of Provolone Cheese on it, the Meatballs and Sauce, and top it with a few shakes of McCormick Grinder Italian Seasoning. Love these Meatball Sandwiches! The Larosa’s Sauce just seems to bring the Sandwich together! Sauce is incredible, Turkey Meatballs flavorful and meaty, and the Provolone is perfect with Pasta sauces.

I had a Simple Truth Breakfast Sandwich w/ Canadian Bacon for Breakfast and then I had an early Dermatologist appointment. My 6 month check up. Not a bad check up but now I have to back in next Thursday and have a mole removed he was concerned about, hopefully it will come back negative for any type cancer. I always panic a bit when they find something, especially with my past history of Melanoma Cancer. Hoping for the best! Back home finished up some laundry for Mom and then I went to the hospital to see a friend of mine. He had a series of Mini Strokes and he’s not doing too good. So I spent most of the afternoon with him and his family. For dinner tonight I prepared a Turkey Meatball Mini Sub w/ Baked Crinkle Fries.

Prepared some Simply Potatoes Hash Browns, 2 Jennie – O Turkey Breakfast Sausage Links, 1 toasted slice of Healthy Life Whole Grain Brea for my Breakfast. Made an early morning grocery run after Breakfast, went to Meijer for almost all the groceries and then to Kroger for a couple of items. Meijer is just a bit farther away but a huge difference in prices! Back home finished up a load of laundry for Mom and then did some light clean up outside around the drive way and out on the deck. Not too bad out, partly sunny and in the 30’s with a cold wind. For dinner tonight a new recipe, I prepared Italian Turkey Rotini Pasta w/ Baked French Bread.

This recipe tonight comes from the Jennie – O website, as do many of my recipes and meals! Some Pasta just sounded good, so what better than to top it off with than some homemade Italian Turkey Pasta Sauce. I’ll need the following Ingredients; 1 (16-ounce) package JENNIE-O® Lean Ground Turkey Breast, 2 teaspoons McCormick Italian Seasoning, ½ teaspoon McCormick Garlic Powder, 1 (24-ounce) can of LaRosa’s Sauce, 1 (1-pound) box Healthy Harvest 100% Whole Grain Rotini Pasta, and Kraft Reduced Fat Grated Parmesan Cheese. The makings of one delicious Sauce and Meal!

To prepare it in large skillet, cook the Ground Turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Sprinkle with Italian Seasoning and Garlic Powder on top of meat. Add the Pasta Sauce and simmer for 10 minutes.

Then while Meat Sauce is simmering, prepare the Rotini Pasta according to package directions. Drain. Place desired amount of Pasta on each plate and top with the Meat Sauce. Sprinkle with Parm Cheese, and done! A winning Italian Turkey Pasta Sauce! Fantastic flavor and the Jennie – O Turkey works perfect. Saved on calories and carbs by using JENNIE-O® Lean Ground Turkey Breast and the Healthy Harvest 100% Whole Grain Rotini Pasta without losing flavor. Plenty of leftovers that I’ll be freezing for use later.

To go with my Pasta Dish I baked a loaf of Pillsbury French Bread. For dessert later I picked up a Hill and Valley Sugar Free Angel Food Cake. I had a slice of that topped with some Del Monte No sugar Added Peach Slices.

 

 

 

 

 

Italian Turkey Spaghetti

Ingredients
1 (16-ounce) package JENNIE-O® Lean Ground TurkeyItalian Turkey Spaghetti
2 teaspoons Italian seasoning
½ teaspoon garlic powder
1 (24-ounce) jar spaghetti sauce
1 (1-pound) box spaghetti noodles
freshly grated Parmesan cheese, if desired
Directions
In large skillet, cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Sprinkle Italian seasoning and garlic powder on top of meat. Add spaghetti sauce and simmer for 10 minutes.

While meat sauce is simmering, prepare noodle according to package directions. Drain. Place desired amount of noodles on each plate and top with meat sauce. Sprinkle with cheese, if desired.
Always cook to an internal temperature of 165°F.

Today’s Menu: Leftovers – Cheesy Stuffed Turkey Sausage Pasta Bake w/ Baked French Bread

 
For breakfast I toasted up a couple of Eggo’s w/ Nutrigrain along with a couple of Jennie – O Turkey Breakfast Sausage Links. A change in the weather again, 56 degrees and sunny yesterday to 39 and cloudy today. They say we have some more single digit weather coming back in for next week also. Not much going on today, did some light cleaning around the house and swept up around the deck and the car port. After that an afternoon of some College Basketball. For dinner tonight it’s all about the Leftovers! I reheated the Cheesy Stuffed Turkey Sausage Pasta Bake w/ French Bread.

Tonight it was all leftovers! The new recipe I prepared last night, Cheesy Stuffed Turkey Sausage Pasta Bake, was so good it’s the leftovers for tonight’s dinner! This is one delicious recipe I cam across and is now in the “Keeper Recipes”. So I reheated the dish in a small baking dish that I covered with foil, reheated in the oven at 300 degrees until heated through. I also heated up the leftover Pillsbury French Bread. Everything heated up to perfection! This one delicious dish, if you’re looking for a great Pasta Dish you have to try this one out. I left last night’s post with the recipe and instructions below. Enjoy!

 

 
I came across this recipe idea in the latest issue of the Food Network Magazine in an ad for Jimmy Dean Sausage. The recipe calls for; 1 package Jimmy Dean® Regular Flavor Pork Sausage Roll, 1 pound rigatoni or penne pasta, 1 24-ounce jar spaghetti sauce, 2 teaspoons dried Italian seasoning, 1/4 teaspoon salt, 1 container ricotta cheese, 2 cups shredded mozzarella cheese (divided), 3 tablespoons grated Parmesan cheese, and 2 tablespoons chopped fresh parsley (optional).

 
But to save on calories, fat, and carbs I made some substitutions. Instead of the Jimmy Dean® Regular Flavor Pork Cheesy Stuffed Turkey Sausage Pasta Bake w Baked French Bread 002Sausage Roll I used a 1 lb. roll of Jennie – O Ground Turkey Breakfast Sausage, replaced the rigatoni or penne pasta with Ronzoni Healthy Harvest 100% Whole Grain Penne Rigate Pasta, for the ricotta cheese I used Meijer Low Fat Ricotta Cheese, for the shredded mozzarella cheese I used Sargento Reduced Fat Shredded Mozzarella Cheese, and replaced the grated Parmesan cheese with Kraft Reduced Fat Grated Parmesan Cheese. With these switches I shaved a lot of calories, fat, and carbs. Cut them where you can!

 

 
To prepare the dish; I preheated the oven to 350°F. Then while the oven was heating up I cooked pasta and removed Cheesy Stuffed Turkey Sausage Pasta Bake w Baked French Bread 012it from the heat 1 minute before suggested cook time; drained and set aside. Next for the Jennie – O Turkey Sausage; cooked and stirred the sausage in large skillet over medium-high heat 12 minutes or until thoroughly cooked. Stir in sauce (I used LaRosa’s Sauce), McCormick Italian seasoning, Sea Salt and the cooked pasta. Layer half of pasta mixture in a greased 13×9-inch baking dish. Mix the ricotta and 1 cup of mozzarella and Parmesan cheese. Spread over pasta. Top with remaining pasta and mozzarella cheese. Sprinkle with parsley. Baked for about 30 minutes, until hot and cheese melted. What a dish! This is one excellent “Keeper Recipe”! Fantastic flavor and just a filling Comfort Food Dish. Plus with the changes I made I saved on the calories, fat, and carbs. The original recipe and web link are at the end of the post. I also baked a loaf of Pillsbury French Bread to go with it.

 

 

 

Jenny’s Cheesy Stuffed Sausage Pasta Bake

Prep Time: 15 minutes
Cook Time: 30 minutes

Ingredients
1 package Jimmy Dean® Regular Flavor Pork Sausage RollCheesy Stuffed Turkey Sausage Pasta Bake w Baked French Bread 013
1 pound rigatoni or penne pasta
1 24-ounce jar spaghetti sauce
2 teaspoons dried Italian seasoning
1/4 teaspoon salt
1 container ricotta cheese
2 cups shredded mozzarella cheese, divided
3 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley, optional
Directions
Preheat oven to 350°F. Cook pasta and remove from heat 1 minute before suggested cook time; drain and set aside.
Cook and stir sausage in large skillet over medium-high heat 8 to 10 minutes or until thoroughly cooked. Drain and return to skillet. Stir in sauce, Italian seasoning, salt and cooked pasta. Layer half of pasta mixture in a greased 13×9-inch baking dish.
Mix ricotta and 1 cup of mozzarella and Parmesan cheese. Spread over pasta. Top with remaining pasta and mozzarella cheese. Sprinkle with parsley.
Bake for 30 minutes or until hot and cheese is melted.
