Today’s Menu: Dry Rubbed Whiskey Black Pepper Boneless Pork Loin Fillet w/ Mashed Potatoes, Cut Green Beans, and Baked Garlic Oval Loaf Bread

For Breakfast I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a Sunnyside Up Fried Egg. Just love these skillet Meals! Mostly Sunny and a high of 62 degrees out today! I had started out to Meijer yesterday but I had to go back home for a family emergency. Everything is fine now so I headed to Meijer today. Later on we went to see Dad for a while. For Dinner tonight I prepared a Dry Rubbed Whiskey Black Pepper Boneless Pork Loin Fillet w/ Mashed Potatoes, Cut Green Beans, and Baked Garlic Oval Loaf Bread.

I’m using the Swift Premium Dry Rubbed Whiskey Black Pepper Boneless Pork Loin Fillets. I love using these Swift Premium Pork Products. So easy to prepare and all come out lean and moist with fantastic flavor! I purchased this from Meijer.

To prepare it; Preheat the oven to 350°F. Remove the Pork Loin from package and place in an uncovered roasting pan that is sprayed with Pam Cooking Spray. I then took some JB’s Fat Boy Haug Waush and rubbed some over top of the Roast, for added flavor. Cook approximately 35 minutes or until internal temperature on a meat thermometer reached 155°F in the thickest part of the Roast. Remove it from oven and let rest 3 minutes before slicing and serving. And as the other Swift Premium Products, one delicious Roast! The Roast was very moist and tender. It came out a little more well done than I normally prepare them but Mom and dad wanted theirs this way.The JB’s BBQ Sauce was just right for the added flavor. We took Dad a plate of everything up to him at the center and I also made him some of Pioneer Peppered White Gravy, that’s where I get my love of Gravy from!

I heated up some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve. Just as good as homemade, if not better and easier to make.

Next heated up a can of Del Monte Reduced Sodium Cut Green Beans. I could have Beans every meal, love them! Finally I baked a loaf of RiverRoad Bake House Garlic Oval Loaf Bread. I usually have the Multi Grain Oval Bread but we tried the Garlic Oval last week and like it better. So I purchased another loaf for Dinner tonight! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast – Pulled Pork Sandwiches w/ Savory Herb Potatoes and Sliced Carrots

To start the morning off I fried up some Queen City Sausage Goetta Patties. They come fresh packaged and 12 Patties to the package. I had never had these before so I thought I would give them a try. Goetta is tough to keep in a patty form if you’re making them from fresh. But these come already cut into Patties, much easier to fry up. They fried up perfect and seasoned just right. I froze up the unused Patties. To go with the Goetta Patties I Scrambled a couple of Eggs and toasted a couple slices of Aunt Millie’s Light Whole Grain Bread. Also had my morning cup of Bigelow Decaf Green Tea. Went out to grab the morning paper and it was 47 degrees. It was mostly sunny and a high of 67 degrees, clouds moved in late. Cool weather for this time of year around here. Got the cart out of the shed and caught up on some yard work most of the day. For Dinner tonight I prepared a Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast – Pulled Pork Sandwiches w/ Savory Herb Potatoes and Sliced Carrots.

I had picked up a Swift Premium Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast at Kroger the other day and preparing it for Dinner tonight. The Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast comes packaged already seasoned. You can roast this in the oven or use the Slow Cooker as like I am today. I got my Crock Pot out and put a plastic liner in it and sprayed that with Pam Cooking Spray.First remove the Shoulder Roast from the package and place in slow cooker with 1 inch of water in bottom. Put the lid on and cook on high for 4 hours or until fork tender. And as always a special “Thank You” goes out to whomever invented the Crock Pot Liners! You’ve made cooking so much easier! Cover and cook on high for 4 hours.

Removed the Roast from slow cooker and allow to cool slightly. Then shred meat with two forks for my Sandwiches. The Roast came out mouth-watering delicious! Tender, moist, and well seasoned. So tender it broke apart while taking it out of the Slow Cooker. I’m serving it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun and topped with some Jack Daniels Honey Smokehouse BBQ Sauce. This is a Sandwich! I’ll use the leftovers for Sandwiches for Lunch the next few days.

A favorite I always pick up at Meijer are the Little Potato Company Savory Herb Potatoes. I have these quite often and really enjoy them. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.

Then I also heated up a can of Del Monte Sliced Carrots. These are so much easier to prepare than boiling fresh Carrots, and they taste just as fresh. For Dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar.

Today’s Menu: Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast – Pulled Pork Sandwiches w/ Slow Cooked Yukon Gold Potatoes and Carrots

For Breakfast I had the Smithfield Anytime Favorites Sliced Ham again. This made such a delicious Breakfast Sandwich yesterday I couldn’t wait to have it again! To prepare it just heat up the Ham for 1 minute in a skillet and it’s ready! I then toasted a Healthy Life Whole Grain English Muffin. I topped the Ham with a slice of Sargento Reduced Calorie Swiss Cheese and served it on the Muffin. Made a delicious Breakfast sandwich. I also had a cup of Bigelow Decaf Green Tea. Hot and muggy with a passing shower outside today, as it was yesterday. After Breakfast I went to Meijer for a few items I needed and back home. After Lunch I got the leaf blower out of the shed and cleaned off the deck and driveway areas. Then got the clippers out and trimmed back the vines along the driveway. For Dinner tonight I prepared a Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast – Pulled Pork Sandwiches w/ Slow Cooked Yukon Gold Potatoes and Carrots.

I got the Crock Pot out and lined it with a Plastic Liner and then sprayed that with Pam Cooking Spray. Added 3/4 cup of Water to the Pot and turned it on high to warm up. I began by slicing up my Yukon Gold Gourmet Potatoes and Whole Carrots. Put them into a large bowl and seasoned them with Extra Light Olive Oil, McCormick Grinder Italian Herb Seasoning, and McCormick Grinder. Tossed them in the bowl making sure they were well seasoned on all sides. I then added them to a large Pot of boiling Water and cooked them for about 12 minutes. I then added them to the Crock Pot and closed the lid. Potatoes and Carrots both take a while to get tender so that’s why I first boiled them for 12 minutes.

You can roast this in the oven or use the Slow Cooker as I am today. I removed the Shoulder Roast from the package and place in slow cooker on top of the Potatoes and Carrots. Put the lid on and cook on high for 4 hours or until everything was fork tender. A special “Thank You” goes out to whomever invented the Crock Pot Liners! You’ve made cooking so much easier!

Love this Sandwich! I’ll use the leftovers for Sandwiches for Lunch the next few days. The added Potatoes and Carrots worked great, giving it added flavor. Both came out fork tender and delicious! Later tonight I’ll have a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast – Pulled Pork Sandwiches w/ Baked Fries

To start my day off I had a Poached Egg and served it on a toasted Healthy Life Whole Grain English Muffin. Also had a cup of Bigelow Decaf Green Tea. Another rainy day outside again. We have several areas that had flooding from yesterday’s rains. So more on top of that, 85 degrees and muggy. So I stayed in and cleaned the house today. Started by getting a couple of loads of laundry started. Then dusted and vacuumed. Next into the kitchen and laundry room. Cleaned the oven, self-cleaning oven. Then dusted and cleaned around the washer and dryer. For Dinner tonight I prepared a Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast – Pulled Pork Sandwiches w/ Baked Fries.

I had picked up a Swift Premium Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast at Kroger yesterday and preparing it for Dinner tonight. To go with the Pulled Pork Sandwiches I baked some Alexia Organic Yukon Select Fries. I seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 18 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast w/ Rustic Smashed Potatoes with Sea Salt

To start this sunny Monday morning off I prepared a Poached Egg, served it with a toasted Healthy Life Whole Grain English Muffin, and my morning cup of Bigelow Decaf Green Tea. It’s sunny out but 31 degrees out there this morning! One cool May morning! It was a bit warmer out today, a high in the 60’s. A good day to get catch up on some yard work and cleaning. The last few days we’ve had a lot of rain with local flooding. Had everything done and took a ride around the neighborhood in the cart. For Dinner tonight its a Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast w/ Rustic Smashed Potatoes with Sea Salt.

I had picked up a Swift Premium Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast at Kroger yesterday and preparing it for Dinner tonight. The Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast comes packaged already seasoned. You can roast this in the oven or use the Slow Cooker as I am today. I got my Crock Pot out and put a plastic liner in it and sprayed that with Pam Cooking Spray.First remove the Shoulder Roast from the package and place in slow cooker with 1 inch of water in bottom. Put the lid on and cook on high for 4 hours or until fork tender.

Remove the Roast from slow cooker and allow to cool slightly. Then shred meat with two forks for Sandwiches or you can slice it, I’m having it sliced. The Roast came out mouth-watering delicious! Tender, moist, and well seasoned. So tender it broke apart while taking it out of the Slow Cooker. I’ll use the leftovers for Sandwiches.

For a side dish I prepared Rustic Smashed Potatoes with Sea Salt. I’ve made Smashed Potatoes before and thought I would give this recipe a try. I came across this recipe on the Swift Premium site while reading about the Shoulder Roast I’m having tonight. I’ll need the following to prepare the dish; Yukon gold new potatoes, Blue Bonnet Light Butter (melted), Extra Light Olive Oil, Garlic Powder, and McCormick Grinder Sea Salt and Peppercorn Medley Pepper.

To prepare the dish; Cook potatoes in gently boiling heavily salted water for 12 to 15 minutes or just until tender. Drain well and cool slightly. Transfer the potatoes to a large baking sheet lined with foil. Gently press each potato with the bottom of a cup until slightly crushed and flattened, but not falling apart. Next preheat oven broiler. Combine the butter, oil and garlic powder. Brush half of the butter mixture on potatoes. Broil 3 inches from heat for 3 to 5 minutes or until golden and slightly crisp. Carefully turn potatoes over using a wide spatula. Brush with butter mixture; lightly sprinkle with salt and pepper. Broil for another 2 to 4 minutes or until golden. Let cool and serve! Excellent Smashed Potato Recipe! If you love Potato Dishes as much as I do, you’ll like this recipe. The full recipe and web link is below. For Dessert later a jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Dry Rubbed Chili Lime Boneless Pork Brisket w/ Savory Potatoes and Golden Hominy

For Breakfast on this March morning I toasted a Healthy Life Whole Grain English Muffin, lightly fried slices of Boar’s Head Sweet Sliced Ham, and 1 slice of Sargento Reduced Fat Swiss Cheese.Love these Breakfast Sandwiches! I also had that morning cup of Bigelow Decaf Green Tea. After Lunch went to see Dad at the rehab center. For Dinner tonight a couple of new items. I prepared a Dry Rubbed Chili Lime Boneless Pork Brisket w/ Savory Herb Potatoes and Golden Hominy.

Second time we’ve had these, and love them! I wasn’t a fan of Brisket of any kind but this one has changed my mind on Brisket! It comes already seasoned; Dry Rubbed Chili Lime. It comes packaged in 2 pieces. I used our large Cast Iron Skillet to cook it in. To prepare it; Preheated a lightly oiled, used Extra Light Olive Oil, Cast Iron skillet over medium-high heat. Removed meat from package and coated the Brisket lightly with Pam Cooking Spray and placed in skillet. Sauté approximately 10 to 12 minutes before turning. Turn the brisket and cook another 6 to 7 minutes. Sauté until the internal temperature reached 145˚F in the thickest part of the meat.

Removed from skillet and let it rest for 3 minutes. Sliced and served! It came out delicious! It had a nice char on the outside and was tender and moist, cooked perfectly. Another good item to have handy from Swift Premium.

Another favorite I always pick up at Meijer are the Little Potato Company Savory Herb Potatoes.

For a side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy, and its been a while since I’ve any. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Dry Rubbed Chili Lime Boneless Pork Brisket w/ Cheddar and Bacon Mashed Cauliflower and Green Beans

For Breakfast on this snowy March morning I toasted a Healthy Life Whole Grain English Muffin, lightly fried slicesdry-rubbed-chili-lime-boneless-pork-brisket-w-cheddar-and-bacon-012 of Boar’s Head Sweet Sliced Ham, and 1 slice of Sargento Reduced Fat Swiss Cheese. And I had my Breakfast Sandwich! I also had that morning cup of Bigelow Decaf Green Tea. Outside another snow squall moved through the area, just like yesterday morning and about the same time of morning. Some areas had 2″ or more, we had a little over a 1/2″. Guess Old Man Winter wanted everyone to know it’s still Winter! Back into the 60’s by Monday though. After Lunch went to see Dad at the rehab center. He wasn’t looking too good today. I’m starting to really worry about him, hope he can turn it around. For Dinner tonight a couple of new items. I prepared a Dry Rubbed Chili Lime Boneless Pork Brisket w/ Cheddar and Bacon Mashed Cauliflower and Green Beans.

First time we have tried the Swift Premium Dry Rubbed Chili Lime Boneless Pork Brisket. We’ve tried a few of the dry-rubbed-chili-lime-boneless-pork-brisket-w-cheddar-and-bacon-005others so we thought we would try the Brisket. I’m not normally a fan of Brisket of any kind but this one has changed my mind on Brisket! Removed from skillet and let it rest for 3 minutes. Sliced and served! It came out delicious! It had a nice char on the outside and was tender and moist, cooked perfectly. Another good item to have handy from Swift Premium.

For one side dish I tried another new item, the Green Giant Cheddar and Bacon Mashed Cauliflower. I found it dry-rubbed-chili-lime-boneless-pork-brisket-w-cheddar-and-bacon-008Meijer the other day. I read the reviews on it and it seemed everyone enjoyed the taste but a common complaint was it too watery and thin. So I added a teaspoon of flour too it during the final 10 minutes of baking time and it seemed to cure that problem. It comes frozen in microwavable or baking tray, I baked mine. To prepare it; Preheated the oven to 425 degrees. i cut 2 slits near the center of the plastic to vent. Placed it on a baking sheet and placed it in the oven and baked it for 30 minutes. Removed it from the oven after the 30 minutes and peeled back the plastic and stirred. I also added a teaspoon of flour to it to thicken it up a bit. Replaced the film back on top and baked an additional 12 minutes. Removed it from the oven and let it stand 1 minute. Stirred it and served! Excellent taste and the flour thickened up just enough. Nice change of pace side dish.

Fried Walleye w Risotto and Cut Green Beans 004

Then I also heated up a can of my favorite, Del Monte Cut Green Beans. Just empty the can into a small sauce pan and heat to a light boil and heat until warmed. I also heated up the leftover French Bread. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Boneless Pork Loin Fillet w/ Mashed Potatoes, Cut Green Beans, and Baked Whole Grain Bread

Ham, Diced Potato, Egg, Hash 002

For Breakfast I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a Sunnyside Up Fried Egg. Just love these skillet Meals!

Another Spring like morning to start the day, about 52 degrees this morning. Had rain overnight and very foggy in places this morning. Had a high around 62 degrees, not bad at all for February in Ohio! After Breakfast I got the leaf blower out and cleaned the deck and driveway. Had a lot of leaves and debris built up through the last couple of months. Then after Lunch I headed out to go see Dad for a bit, he’s been making good progress. Might be released soon to come home. For Dinner tonight I prepared a Boneless Pork Loin Fillet w/ Mashed Potatoes, Cut Green Beans, and Baked Whole Grain Bread.

Tried another one of the Swift Premium Dry Rubbed Whiskey Black Pepper Boneless Pork Loin Fillets. I love using these Swift Premium Pork Products. So easy to prepare and all come out lean and moist with fantastic flavor! I purchased this one from Meijer.

To prepare it; Preheat the oven to 350°F. Remove the Pork Loin from package and place in an uncovered roasting boneless-pork-loin-fillet-w-mashed-potatoes-cut-green-beans-an-002pan that is sprayed with Pam Cooking Spray. I then took some JB’s Fat Boy Haug Waush and rubbed some over top of the Roast, for added flavor. Cook approximately 35 minutes or until internal temperature on a meat thermometer reached 145°F in the thickest part of the Roast. Remove it from oven and let rest 3 minutes before slicing and serving. And as the other Swift Premium Products, one delicious Roast! The Roast was very moist and tender. The JB’s BBQ Sauce was just right for the added flavor.

Mashed Potatoes

I heated up some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve. Just as good as homemade, if not better and easier to make!

Fried Walleye w Risotto and Cut Green Beans 004

I heated up a can of Del Monte Reduced Sodium Cut Green Beans. I could have Beans every meal, love them! Then I also baked a loaf of La Brea Multi Grain Loaf Bread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: BBQ Pork Shoulder Roast Sandwich w/ Baked Fries

I toasted a Healthy Life Whole Grain English Muffin topped with Smucker’s Sugar Free Blackberry Jam for Breakfast. Also had the morning cup of Bigelow Decaf Green Tea. After Breakfast I went Meijer for some items I needed. I’ve been noticing the price of Tea just keeps going up and up! I was at Walmart last week and it’s now $2.36 a box up from $2.18 a box about a year ago and at Meijer its up to $2.68 a box. Of course Kroger has the highest price at $3.12 a box! And it’s not just Tea that’s rising in cost its everything practically. Having to really watch for sales and coupons. Outside today we were near a record high out today, 81 degrees! Highs back in the 60’s by the weekend though. Raked what leaves I could with the help of my neighbor. Still a lot of leaves left in some of the bigger trees herein the neighborhood but the smaller ones are almost bare now. For Dinner tonight I prepared a BBQ Pork Shoulder Roast Sandwich w/ Baked Fries.

bbq-pork-shoulder-roast-sandwich-w-baked-fries-001
A while back I tried the Swift Premium Dry Rubbed Carnitas Boneless Petite Pork Shoulder Roast , which turned out so good! I had purchased 2 of them a while back and still had one left in the freezer. So I sat it in the fridge overnight to thaw for use for tonight’s Dinner, BBQ Pork Shoulder Roast Sandwich w/ Baked Fries.

For the BBQ Pork Shoulder Roast Sandwiches I’ll be using the Swift Premium Dry Rubbed Carnitas Boneless Petite bbq-pork-shoulder-roast-sandwich-w-baked-fries-005Pork Shoulder Roast again! And preparing it one of my favorite ways, the Slow Cooker. It’s a super easy recipe to make. Start by lining my Slow Cooker with a Reynolds Slow Cooker Liner. Using the liner makes for little or no clean up. Next, removing meat from package. Place the Roast in slow cooker with 1 inch of water in bottom. Then across the top I added a thin coat of Jack Daniel’s Honey SmokeHouse BBQ Sauce. Cover and cook on HIGH for 4 hours or until fork tender. Then remove from slow cooker and allow to cool slightly. Next shred the meat with two forks, or a pair of Bear Claws which is what I used, in a large bowl and add the BBQ Sauce. You can add the BBQ Sauce now or you can add the Sauce on to your Sandwich instead. I used Jack Daniel’s Honey SmokeHouse BBQ Sauce, you can always use your favorite. I served the sandwich on a Healthy Life Whole Grain Sandwich Bun The Pork comes out incredible! As the other Swift Premium product it came out moist, juicy, and delicious! These products are so easy to prepare and top quality. Another great product to have handy in the frig or freezer.

Grilled Cheese and Baked Fries 003
To go with the BBQ Pulled Pork sandwiches I baked some Alexia Organic Yukon Select Fries.
