BONELESS BUFFALO WINGS
Ingredients
1-1/2 teaspoon hot sauce
Pinch cayenne
1/4 teaspoon paprika
1/2 pound chicken tenders
Dressing Ingredients:
1/2 cup reduced-fat blue cheese dressing
1/4 cup low-fat mayonnaise
3 tablespoons crumbled blue cheese
Celery Sticks
Directions
1 – Preheat the oven to 375 degrees F.
2 – In a shallow bowl, combine the hot sauce, cayenne, and paprika. Roll the chicken tenders in the mixture.
3 – Place the chicken tenders on a small nonstick baking sheet.
4 – Bake, uncovered, for 15 minutes until chicken is tender.
5 – Combine the dressing ingredients.
6 – Serve the dressing with the chicken and celery sticks.
Recipe Yield: Yield: 4 servings “Serving Size: 2 oz. chicken per serving

Today’s Menu: Baked Chicken Wings w/ Baked Fries and Light Texas Toast
For Breakfast I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. 87 degrees, hazy sunshine and humid out today. I had no clue on what to have for Dinner so I headed to Kroger up the road from us to see if I could find something. Back home I did some front and side yard clean up. Raked up some paint shavings and wood shavings from the deck construction. For Dinner tonight its Baked Chicken Wings w/ Baked Fries and Light Texas Toast.
When I went to Kroger I couldn’t find anything that looked good. So I was leaving I went by the frozen foods and it happened, The Chicken Wings called out to me! And who am I not to answer the call of the Chicken Wing! So Kroger Oven Roasted Chicken Wings, it is for Dinner. I started by heating the oven on 425 degrees F., the same temperature I’ll need for my Fries and Texas Toast. I took a small Baking Sheet and lined it with foil. Then sprayed it with Pam Non Stick Cooking Spray. Spread the Wings out across the sheet and baked them for 33 minutes, turning them once after 17 minutes. I love Wings, and these are excellent Wings! Served them with Dipping Sauces of Hidden Valley Buffalo/Ranch Dressing and Litehouse Light Blue Cheese Dressing.
With the oven already heated I baked my Fries. I used Ore Ida Crinkle Cut Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup.
I also baked up some slices of New York Bakery Light Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Lip-Smackin’ Citrus Wings
Expect these zesty hot wings to fly off the appetizer table!
Recipe Ingredients:
1 cup Ocean Spray® 100% Juice Citrus Mango Pineapple
1/4 cup brown sugar, firmly packed
3 tablespoons soy sauce
1 teaspoon crushed red pepper flakes
2 teaspoons finely chopped garlic
2 teaspoons finely chopped gingerroot
3 pounds chicken drummies and wingettes
2 tablespoons chopped green onions
Cooking Directions:
1 – In 2-cup measure, stir together juice, sugar, soy sauce, pepper flakes, garlic and gingerroot. Place chicken in gallon-sized heavy resealable plastic bag; pour marinade over chicken and seal. Refrigerate chicken mixture 2 to 24 hours, turning occasionally to keep chicken coated in marinade.
2 – Preheat oven to 350°F (175°C). Line 15x10x1-inch jelly roll pan with aluminum foil. Spray with nonstick spray.
3 – Remove chicken pieces from marinade; place in single layer on baking sheet.
4 – Bake uncovered 30 minutes; drain off accumulated juices and turn chicken. Increase temperature to 425°F (220°C). Bake an additional 10 to 15 minutes or until juice of chicken is no longer pink and chicken is golden brown.
5 – Meanwhile, pour marinade into 1-quart saucepan. Heat to boiling; reduce heat and simmer, uncovered, over medium heat 15 to 25 minutes until mixture is reduced to about 1/3 cup and slightly thickened.
6 – When chicken is done, place chicken in large bowl. Drizzle reduced marinade over chicken. Stir until chicken is coated. Place on serving platter; sprinkle with green onions.
Makes 8 servings (about 3 wings each).

Broiled Chicken Wings with Two Sauces
Broiled chicken wings served with two sauces are sure to satisfy everyone’s taste buds.
Recipe Ingredients:
Chicken Wings:
2 pounds chicken wings, tips removed and discarded, then cut into 2 pieces
3 tablespoons canola oil
Seasoning salt and seasoning pepper to taste
Peach Sauce:
3/4 cup peach jam or preserves
1/3 cup lime juice
2 cloves garlic, minced
1/2 teaspoon cumin
1/2 teaspoon dried chili flakes
Jalapeño Chile Pepper Sauce:
2 jalapeño chile peppers, seeded and finely chopped
2 cloves garlic, minced
1/3 cup granulated sugar
2 tablespoons water
1/2 cup white wine vinegar
1 tablespoon grated ginger
Cooking Directions:
1 – For Chicken Wings: Preheat broiler. Prepare chicken wings. Brush wings with canola oil and sprinkle liberally with salt and pepper. Spread wings on rack of broiler pan. Broil 4 to 5 inches from heat, turning once until wings are cooked, about 20 minutes. While wings are broiling, prepare sauces.
2 – For Peach Sauce: Combine peach jam, lime juice, garlic, cumin, chili flakes in a food processor and blend mixture until smooth. Pour into small saucepan and heat and simmer mixture over low heat, about 10 minutes. Pour into sauce dish and cool to room temperature.
3 -Jalapeño Chile Pepper Sauce: Combine chopped jalapeño chile peppers, garlic, sugar, water, vinegar and ginger in saucepan. Simmer over low heat for about 10 minutes or until slightly thickened. Pour into sauce dish and cool to room temperature. Serve sauces with hot wings.
Makes 4 to 5 servings.
