Today’s Menu: Dry Rub BBQ Chicken Wings and Baked Crinkle Cut Fries

For Breakfast on this Monday Morning I Scrambled a couple of Eggs, toasted a Healthy Life Whole Grain English Muffin, and had a cup of Bigelow Decaf Green Tea. It’s 85 degrees and humid again outside rain moving in later. I was on the phone most of the day, We are in the process of moving Dad to a different Long Term Care Facility. We are not happy with the care that Dad receives. He’s not mistreated or anything like that but the Center is understaffed and the Food is pretty bad. So we’ve found a different place for him. Hope it all works out. For Dinner tonight I prepared Dry Rub BBQ Chicken Wings and Baked Crinkle Cut Fries. It’s Freezer Week Dinners for this week. The freezer is getting a little full. You buy an item and it gradually gets pushed back by other items bought and slowly becomes a “Forgotten Freezer Item” So this week I’m digging through the freezer for my meals this week. Tonight Wings and Fries.

I prepared some of the Kroger Dry Rub BBQ Chicken Wings. I really enjoy these Kroger Brand Wings! they 3 or 4 different types of Seasoned Wings. I like these and the Buffalo Wings. I’ll be baking these, I preheated the oven to 425 degrees. Used a baking sheet, lined it with foil and sprayed it with Pam Non Stick Cooking Spray. I lined the Wings up on the foil and seasoned them with the BBQ Dry Rub that came with the Wings. I then baked them for 17 minutes, flipping them over after 8 minutes. These turned out to be an excellent Wing! Excellent BBQ Dry Rub. Served these with a side of Litehouse Light Blue Cheese Dressing.

To go with my Wings I prepared some Ore Ida Golden Crinkle Cut French Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Lightly seasoned them with Morton’s Lite salt and Ground Black Pepper. Baked them for a total of 16 minutes, perfect Golden Brown! As the other Alexia Products, delicious! For Breakfast this morning I Scrambled a couple of Eggs, heated up a couple of slices of Turkey Spam, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and had my morning cup of Bigelow Decaf Green Tea. 29 degrees this morning but we had a high of 51 degrees and partly cloudy. Started a load of laundry after Breakfast and then went and picked up Breakfast for Mom and Dad at McDonald’s. Mom went on to Church and I stayed home to take care of Dad. Did some light house cleaning and a few things around the house. Not much else going on. For Dinner tonight it’s Chicken Wings. I prepared Kroger Dry Rub BBQ Chicken Wings. I had these a while back and really liked them.

Today’s Menu: Baked Zesty Herbs and Spice Fire Grilled Wings w/ Savory Herb Potatoes and Texas Toast (Light)

For Breakfast this morning I made what’s become my favorite Breakfast. I fried some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Also had my morning cup of Bigelow Decaf Green Tea. Mostly sunny and 54 degrees out, some rain showers moving in for tomorrow. Cleaned the house today, vacuum and dusted. Then did some work on the computer. Dusted and cleaned then ran all the scans and deleted old files. For Dinner tonight I prepared Baked Zesty Herbs and Spice Fire Grilled Wings w/ Savory Herb Potatoes and Texas Toast (Light).

I had tried the Cooked Perfect Buffalo Wings last week and loved them. So this week I’m trying the Cooked Perfect Zesty Herbs and Spice Fire Grilled Wings. They come Seasoned in Thyme, Sage, and Peppers. They come frozen so you can prepare them in the microwave or in the oven, I went with the oven method.

To prepare them; Preheat the oven to 375° F.Grab a baking sheet, line with Foil, and spray it with with Pam Cooking Spray. Place the Wings on the baking sheet in a single layer. Bake for 15 minutes, turn the Wings, and bake for an additional 10-15 minutes. Let stand for 2 minutes before serving. These are just as good as the Buffalo Wings, if not better! Served with some Litehouse Lite Blue Cheese Dressing.

I could just have the Wings but Mom and Dad always have to have at least one side dish so I prepared a carton of the Little Potato Company Savory Herb Potatoes. A favorite I always pick while at Meijer are the Little Potato Company Savory Herb Potatoes. We have these quite often and really enjoy them. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up. I also boiled some Green Giant Mini Eras of Sweet Corn. You can’t beat this corn, best there is! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.
