Today’s Menu: Smoked Turkey Sausage Dogs w/ Baked Fries

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 91 degrees and mostly sunny outside today. Not a lot today. I did get the cart out and raked the side and backyards. We already have a few trees where the leaves are falling. Not much else going on. Kicked back and got caught up on a couple of movies I had recorded. For Dinner tonight it’s a Smoked Turkey Sausage Dogs w/ Baked Fries.

 

I used the always delicious Butterball Hardwood Smoked Turkey Sausage, one of my favorites. I cut the Sausage Links into Bun length pieces. I absolutely love the Butterball Hardwood Smoked Turkey Sausage and I had been wanting some for a while. It’s got such a fantastic flavor and always cooks up just right. To prepare them I used a large skillet, added about a 1/2 tablespoon of Extra Virgin Olive Oil and preheated it on medium heat. Put the Sausage in the skillet when it was heated up and covered with a lid. I turned the Sausage every few minutes to get an even char on them, cooked about 11 minutes total. As always they came out just bursting with flavor and flat-out delicious! I served it on a Aunt Millie’s Live Carb Smart Hot Dog Bun and topped with French’s Spicy Brown Mustard. I love these Smoked Sausages.

 

I also prepared some Ore Ida Golden Crinkle Cut French Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Popcorn and a Coke Zero to drink.

Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 91 degrees, humid and mostly sunny out today. I had a very bad night as I struggled with Phantom Pains all last night until around 10:00 this morning. So all I wanted was peace and quiet and to get caught up on sleep. So that was my day! For Dinner tonight it’s a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

 

 

After a very restless and sleepless night I wanted something easy to prepare, and what can be easier than making a Sandwich and having some Potato Chips! I had purchased some of the Boar’s Head London Broil Cap-Off Top Round Oven Roast Beef from Kroger. It was a beautiful cooked medium rare and too good to sit in the fridge for long! So for my Sandwich I’ll be using the Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Live Carb Smart Wheat Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Mike Sell’s Reduced Fat Potato Chips with some Lay’s Ranch Dip. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Stick Pretzels along with a Coke Zero to drink.

Today’s Menu: Applewood Smoke Bacon and Sharp Cheddar Cheese Ground Chicken Burger w/ Baked Fries

 

 

To start this beautiful morning off I baked a small 5 Biscuit can of Pillsbury Flakey Biscuits. I also heated up 5 Johnsonville Turkey Sausage Patties. And I have my Sausage Breakfast Sandwich! I also added a 1/4 slice of Hoffman’s Super Sharp Cheese. Had my morning cup of Bigelow Decaf Green Tea. It’s another perfect day out there today! A high of 79 degrees, Sunny and low humidity. So beautiful out! Got the cart out did yard work most of the day. I also helped a neighbor of ours with his yard. So good to be out here enjoying this weather! For Dinner tonight I prepared a Applewood Smoke Bacon and Sharp Cheddar Cheese Ground Chicken Burger w/ Baked Fries.

 

I had purchased a package of Smart Ground Chicken from Meijer a while back and had it in the freezer. I set the package in the fridge overnight to thaw. To make the Burger I’ll need; the Ground Chicken (1 lb. package), Litehouse Poultry Herb Seasoning, McCormick’s Grinders of Sea Salt and Peppercorn Medley, and Meijer Italian Style Bread Crumbs. For toppings I’m using Kraft Reduced Fat Mayo w/Olive Oil, Heinz 57 Sauce, John Morrell Applewood Smoked Bacon, and Hoffman Super Sharp Cheese. Served it on a Aunt Millie’s Live Carb Smart Hamburger Bun.

 

First thing I did was fry the Bacon. I’m using John Morrell Applewood Smoked Bacon. I rarely use John Morrell but you have to use what you can find in stock right now at the stores. John Morrell Bacon is great tasting Bacon, just don’t use it. So I grabbed a large skillet and sprayed it with Pam cooking Spray. Then heated it on medium heat. When the skillet was heated I added the Bacon. Mom loves Bacon so I just fried the whole package. Fried up great and was delicious! I set it aside until I needed it.

 

Next I made my Chicken Burger patties. To prepare them, in a large bowl, combine Chicken, Ground Cumin, Paprika, Garlic Powder, Dried Oregano, Sea Salt and Peppercorn Medley, and Italian Style Bread Crumbs. The Seasonings amount are to taste and 2 tablespoons of the Italian Style Bread Crumbs. Make a little depression with your thumb in the center of each burger so they cook evenly. Divide the mixture into 4 patties.

 

In a Cast Iron Skillet over medium heat, heat oil. Add burger patties and cook, flipping once, until golden and a thermometer inserted into the center registers 165°, 8 to 10 minutes. Top with Cheddar and cook until just started melting, 2 minutes. Remove from heat and transfer patties to a plate. Serve on the Buns and top with Mayo, Heinz 57 Sauce, and the Bacon. The Ground Chicken Burger is juicy, moist, and flavorful! I’ll have to start having a lot more often!

 

To go with the Chicken Burger I prepared Ore Ida Golden Crinkle Cut French Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Heinz 57 Sauce. For Dessert later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper to drink.

Today’s Menu: Boneless Pork Ribeye Chop w/ Red Beans and Mashed Potatoes

 

For Breakfast on this hot and humid morning I toasted a Thomas Light English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. 94 degrees, mostly sunny and humid out again. Had showers move in late afternoon. So I got out side and got my work done outside. Life is so much easier with ramp they installed on our wooden deck! Worth every Penny! Cleaned the counters and microwave later on. For Dinner tonight I prepared a Boneless Pork Ribeye Chop w/ Red Beans and Mashed Potatoes.

 

I had a package of the AdapTable Chophouse Seasoned Boneless Pork Ribeye Chops in the freezer, sat it in the fridge overnight to thaw. The Chops comes Seasoned with Garlic, Onion and Bell Pepper. I’m so happy that Meijer started carrying these AdapTable Pork Products!

 

I’ll be preparing them on the stove in a Cast Iron Skillet. To prepare them I heated one tablespoon of oil in a skillet on medium-high. Cooked the Chops in a covered skillet for 8-9 minutes per side until product reaches 145°F on a meat thermometer. Removed them from heat, and let them rest for 3 minutes. And serve!

 

For one side I prepared a can of Bush’s Chili Beans – Red Beans in Medium Chili Sauce. Easy to prepare; Just open the can and empty it into a small sauce pan. Heat to low boil then reduce the heat and simmer until heated through. And done!

 

For another side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. Being a Potato Lover I think Potatoes are meant for every meal! I also had a Aunt Millie’s Live Carb Smart Dinner Roll, love these fresh and 1 carb! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper to drink.

Today’s Menu: Sweet Italian Turkey Sausage w/ Baked Fries

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Well after my Tea I headed to Kroger for a couple of items and to pick up Mom’s Prescriptions. I picked up Breakfast for her at Wendy’s on the way back home. They almost have our wooden deck done. All the rain we have had it now has to dry out a bit before going on. I replaced our outside garden hose with a ne one one and I also got some grass seed out, trying a new type to see if it works better. For Dinner tonight it’s Sweet Italian Turkey Sausage w/ Baked Fries.

 

I used one of my favorites, the healthy and delicious Jennie O Lean Sweet Italian Turkey Sausages. I bought a package of them at Meijer the other day. I prepared a few of them for our Dinner tonight. I pan fried them, using Pam w/ Olive Oil Cooking Spray and no oil needed. Heated the pan on medium and cooked a total of about 14 minutes, turning the Sausages occasionally. They fry up plump and brown, as always Jennie – O Products always have that fresh taste to them. The Sausages have 160 calories and 0 carbs per Sausage. I served them on Aunt Millie’s Live Carb Smart Hot Dog Buns and topped with French’s Spicy Brown Mustard. Love these!

 

I also baked some Ore Ida Crinkle Cut Fries. Served them with a side of Hunt’s Ketchup for dipping. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

Today’s Menu: Turkey Frank Cincinnati Style Cheese Coneys

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. It’s another scorcher out there! 95 degrees and with the  humidity we had a heat index of 105 degrees! So I did some yard work and watering of bushes early before the heat and humidity set in. Right now everyone’s yard is baked and brown. We haven’t had a good soaking rain in a long time. Sure hope we get a break in this soon. For Dinner tonight it’s Turkey Frank Cincinnati Style Cheese Coneys.

We just love our Cheese Coneys around here I used Ball Park Smoked White Meat Turkey Franks, an excellent Turkey Frank! I boiled them, it took about 6 minutes and they were ready, plump, and delicious. Plus they are lower in calories and carbs than most other Hot Dogs, 45 calories and 5 carbs!

I heated a can of Skyline Chili with Beans for my topping. We prefer the Chili with Beans over the Chili with no Beans. It just gives the Coneys even more flavor with the added Beans! I served everything on a Healthy Life Wheat Hot Dog Buns. Put the Frank in the Bun then topped it with French’s Yellow Mustard, the Chili, and Sargento Reduced Fat Sharp Cheddar Shredded Cheese. Had a small side of some Skyline Oyster Crackers with a few drops of Frank’s Hot Sauce on them, which is a common way to have them here in the Cincinnati area. We love our Chili, Chili Dogs, Chili Spaghetti, and Hot Sauce here in the Cincinnati area. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper to drink.

Today’s Menu: Boneless Pork Ribeye w/ Green Beans and Sweet Corn on the Cob

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 92 degrees and humid outside today. The humidity had the heat index at 101 degrees! I went to Meijer after my Tea for a few items. Back home I took a quick nap, my allergies are still hitting me hard. Later cleaned off the deck and driveway areas. That’s about it for my day. For Dinner tonight it’s a Boneless Pork Ribeye w/ Green Beans and Sweet Corn on the Cob.

 

I bought another of the AdapTable Pork Products at my last visit to Meijer. The Chophouse Seasoned Boneless Pork Ribeye, Seasoned with the Chophouse – Garlic, Onion and Bell Pepper. I’m so happy that Meijer started carrying the AdapTable Products!

I also boiled a couple of Ears of the Sweet Corn I purchased earlier at the Fresh Produce Markets. Tasted so fresh and good! For the Corn, we purchased a dozen Ears of Yellow and White Sweetcorn. For that I boiled an Ear of it until done. Then when ready to eat I sliced the Kernels of Corn off and served it like that. I also had a couple Aunt Millie’s Live Carb Smart Dinner Rolls. For Dessert later a Jello Sugar Free Dark Cherry Jello. Take Care all!

Today’s Menu: Panko Crusted Cod Fish Sandwich w/ Baked Crinkle Fries

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. Partly cloudy, humid and 88 degrees, rain moving in later tonight. Much needed rain. Everything is so dry out, the grass is turning brown. Right after my Tea I went to Menard’s. I picked up a few items I needed. Back home I finished touching up the shutters up with black paint. Later I got the leaf blower out and cleaned off the deck and driveway areas. So for dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Crinkle Fries.

 

I had purchased the Cod from Kroger and had it in the freezer. I laid the Cod in the fridge to thaw overnight. To prepare the Cod I rinsed the fillet off with cold water and patted dry. I then cut the fillet in half. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss the fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Healthy Life Wheat Burger Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish.

 

I also baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup for dipping. For Dessert later a 90 Calorie Mini Cup of Breyer’s Vanilla Ice Cream Cup.
 

 

 

 

 

 

 

 

 

 

Panko Crusted Cod Fish Sandwich

Ingredients:

(4) 4oz. Orange Roughy or Cod Fillets
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Extra Virgin Olive Oil

Directions:

* Dip floured fillets into Paprika Seasoned Egg Beater’s, allowing excess to drip off.
* Place fillets, one at a time, in Panko Bread Crumbs and lightly toss fillets until both sides are covered.
* Meanwhile, heat canola oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.

Today’s Menu: Buffalo Cheese Burger w/ Baked Fries

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 82 degrees, humid, and cloudy outside today. Did a load of laundry after my Tea. Cleaned the house today, dusted and vacuumed. Then I put a new brush on the vacuum. I’m so happy with new flooring in the spare room, it turned out great! For Dinner tonight I prepared a 4oz. Buffalo Cheese Burger and Baked Fries.

 

As always when it’s a Buffalo Burger I’m using the Wild Idea Buffalo Burger Patties. I’m having the new 4 oz. Possible Burger. Same great taste and quality but these are 4 oz. Just love all the Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small Cast Iron Skillet that I sprayed with Pam Cooking Spray and 1/2 tablespoon of Extra Light Olive Oil, seasoned my Burger with the Wild Idea Omnivore Salt. I then pan fried it about 3 minutes per side, and done. After I flipped the Burger I added a slice of Kraft Deli Style Sharp Cheddar Cheese. I’m serving it on a Aunt Millie’s Live Carb Smart Bun.

 

I also baked some Ore Ida Crinkle Cut Fries, served these with a side of Hunt’s Ketchup for dipping. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Boneless Pork Ribeye w/ Au Gratin Potato Casserole, Sugar Snap Peas, and Baked Dinner Rolls

 

Just a cup of Tea for Bigelow Decaf Green Tea Breakfast. 92 degrees and very humid out today.  Then I went to Meijer, they had a few things on Sale we needed. Back home it was another busy day. We had a tree trimmed down and we had our home washed down, driveway sprayed wash, and gutter’s cleaned. Next having the deck treated and painted. For Dinner tonight we had a Boneless Pork Ribeye w/ Au Gratin Potato Casserole, Sugar Snap Peas, and Baked Dinner Rolls.

 

I bought another of the AdapTable Pork Products at my last visit to Meijer. This on is the Chophouse Seasoned Boneless Pork Ribeye, Seasoned with the Chophouse – Garlic, Onion and Bell Pepper. I’m so happy that Meijer started carrying the AdapTable Products!

 

I’ll be preparing them on the stove in a Cast Ron Skillet. To prepare them I heated one tablespoon of oil in a skillet on medium-high. Cooked the Chops in a covered skillet for 8-9 minutes per side until product reaches 145°F on a meat thermometer. Removed them from heat, and let them rest for 3 minutes. And serve!

 

 

 

 

These came out just as Delicious as the other ones we tried! Seasoned just right and the Chops came out moist and juicy! You have to give the AdapTable Products a try!

 

 

For one side dish I prepared some Idahoan Au Gratin Homestyle Casserole. I love using these, Delicious and easy to prepare. I left the Idahoan Product info and instructions at the end of the post.

 

For a second Side I prepared a bag of Mann’s Stringless Sugar Snap Peas. To prepare them I used a medium size skillet. I added a tablespoon of Extra Light Olive Oil and heated it on medium heat. As the skillet was heating I emptied the bag of Snap Peas into the skillet. Stirred a few times and cooked them for 5 minutes. Ready to serve. Very good Snap Peas, nice and full!

 

 

 

 

I also heated up some of Aunt Millie’s Live Carb Smart Dinner Rolls. These are great for those of us with Diabetes 2, or for anyone who loves good rolls. The Rolls are only 35 calories and 1 carb per roll! That’s right 1 net Carb per roll! So a big thank you to Aunt Millie’s for these! For Dessert later a Jello Sugar Free Dark Cherry Jello.

Chophouse Blend Pork Ribeye Chops
Seasoned With: Garlic, Onion and Bell Pepper

Directions:
1 – Briefly heat one tablespoon of oil in a skillet on medium-high.
2 – Cook chops in a covered skillet for 8-9 minutes per side until product reaches 145°F on a meat thermometer.

Idahoan Au Gratin Homestyle Casserole

Product Description

There’s no better way to start a savory Au Gratin homestyle casserole than with world-famous Idaho® potatoes, which is why you’ll taste only 100% grown-in-Idaho potatoes in this rich & cheesy side. For family meals or for special occasions, this cheesy, delicious dish is sure to please.

Best for Golden Browning

PREHEAT oven to 450°F. COMBINE potatoes and sauce mix in 1 1/2 quart baking dish.
STIR in 1 1/2 cups boiling water, 3/4 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
BAKE uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling).
Remove from oven and let stand a few minutes before serving.
BAKING NOTES: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min. To bake potatoes and roast meat at the same time, bake at 375°F for about 45 min; 350°F for about 50 min; or 325°F for about 60 min.
