Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast

 

Just a cup of Bigelow Decaf Green Tea to start the day. 84 degrees and sunny out today, a bit windy at times. After my Tea I went and had my car washed. Then I went to Walmart. I only bought a couple of things, I was bored and not a thing to do today. Back home I watered all the plants then took off to a friend’s house. I had not seen him in a while and just wanted to catch up. For Dinner tonight I prepared Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast.

 

It’s Spaghetti and Meatballs tonight, one of our favorites! And you can always make it healthier by using Whole Wheat Spaghetti and Turkey Meatballs. For the Meatballs I’m using Meijer Turkey Meatballs. These Meatballs are 150 calories and 5 carbs per serving (6 Meatballs). For the Spaghetti I’ll be using Ronzoni Healthy Harvest Whole Grain Spaghetti.

 

I’ll be cooking the Meatballs in LaRosa’s Sauce, one of my favorites! The Sauce goes great on Pasta, Pizza, or as a Dipping sauce. I grabbed a small Saucepan, sprayed it Pam Non Stick Cooking Spray, added the sauce to it, and heated on medium low heat. As the sauce started to heat up I added the Turkey Meatballs, stirred until covered with the Sauce. Cooked them for 7 minutes and then reduced the heat to low until I was ready to use them.

 

As I said, I’m using Ronzoni Healthy Harvest Whole Grain Spaghetti. It’s my favorite and I use all the Ronzoni Healthy Harvest Pastas. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta. To prepare the Spaghetti; I cooked the Spaghetti as to the package instructions. I used a large Saucepan and filled it 1/2 way up with water. Turned the burner on high and brought the water to a rapid boil. Added the Spaghetti and stirred, returning it to the rapid boil. Cooked it uncovered, stirring it occasionally. Cooked it for a total of 8 minutes and done! Love this Pasta so tender and tasty. As the Spaghetti was cooking I baked the New York Bakery Garlic Bread Loaf. For Dessert later a Jello Sugar Free Dark Cherry Jello Cup.

Today’s Menu: Pizza Muffins

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. 72 degrees and sunny out, cooler out today. Plus it’s Cicada Free! Great day to get some yard work done. I got the cart out of the shed along with the rake, hedge clippers, weed spray, and leak blower. I was ready for yard work. I went over to my neighbor and gave him a hand with his yard. Good day of yard work! For Dinner tonight I prepared some Pizza Muffins.

 

One of those days I wanted something a light hot meal. So I usually have a Pizza Muffin for Lunch every now and then, so why not Dinner. I’ll be using Thomas Light English Muffins. For toppings LaRosa’s Pizza Sauce, Jennie – O Ground Turkey, Hormel Turkey Pepperoni, Dried Oregano, and Sargento Mozzarella Shredded Cheese.

 

Earlier I got the Jennie – O Ground Turkey out. I sliced a small amount off the Roll and cut that into smaller chunks. I grabbed a skillet and sprayed it with Pam Non Stick Spray. Turned the stove burner to medium heat. When heated I added the Ground Turkey Pieces. Cooked until browned and cooked through. Removed the skillet from the heat and put them in a bowl until ready to use. And yes I did sample several pieces!

 

I first turned the oven on to 400 degrees. Next I got a small baking sheet pan out and lined with foil. I sprayed a light coat of Pam Non Stick Spray on it. Time to build the Pizzas. I first sliced the English Muffins in half and laid them on the baking sheet. And added the toppings.

 

I first put the Sauce on the Muffin Halves. Followed by the Mozzarella Cheese, the Turkey Pieces, the Turkey Pepperoni, and sprinkled the Oregano over the top of each Pizza. Put the sheet pan in the oven and let them bake. You want to bake these until the ingredients are heated through and the Cheese melted.

 

The Pizza Muffins came out perfect! The Cheese and the other toppings worked out great. Delicious light Dinner, an easy cleanup also. For Dessert later a Breyer’s 90 Calories Cookies and Cream Ice Cream Cup.

Today’s Menu: Turkey Frank Cincinnati Style Cheese Coneys

 

 

For Breakfast I toasted a Thomas Lite English Muffin, topped it with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. Sunny and 60 degrees out today. After Breakfast I went to Kroger and Walgreen for Mom. I stopped and picked up Breakfast for at Wendy’s. After Lunch I took her car and had the oil changed and then stopped and her car washed. For Dinner tonight I prepared Turkey Frank Cincinnati Style Cheese Coneys.

 

We love our Cheese Coneys around here! Living here all my life here in Cincinnati you are raised on Cheese Coneys and Chili! I used Ball Park Smoked White Meat Turkey Franks, an excellent Turkey Frank! I boiled them, it took about 5 minutes and they were ready, plump, and delicious. Plus they are lower in calories and carbs than most other Hot Dogs, 45 calories and 5 carbs!

I heated a can of Skyline Chili with Beans for my topping. We prefer the Chili with Beans over the Chili with no Beans. It just gives the Coneys even more flavor with the added Beans! I served everything on a Healthy Life Wheat Hot Dog Buns. Put the Frank in the Bun then topped it with French’s Yellow Mustard, the Chili, and Sargento Reduced Fat Sharp Cheddar Shredded Cheese. Had a small side of some Skyline Oyster Crackers with a few drops of Frank’s Hot Sauce on them, which is a common way to have them here in the Cincinnati area. We love our Chili, Chili Dogs, Chili Spaghetti, and Hot Sauce here in the Cincinnati area. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

After Breakfast I tried going to see my Uncle in the hospital but they are only letting direct family members in. They need to get back to the normal soon. Got the cart out and did a little yard work. For Dinner tonight I prepared Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast.

Today’s Menu: Meatball Pasta Bake w/ Baked Garlic Oval Loaf Bread

 

 

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, 3 slices of Glier’s Turkey Goetta, fried 1 medium Egg Sunny Side Up, and a cup of Bigelow Decaf Green Tea. Finally found the Glier’s Turkey Goetta on my last visit to Jungle Jim’s International Market. I love Goetta! Cloudy with rain showers late in the afternoon, high of 44 degrees. Went to Kroger for Mom after Breakfast. When I got to Kroger it was busy but the time I left it was packed. I’ll be glad when the Holidays are over and stores get back to normal. Gave Mom a hand in making Chocolate Fudge, Buckeyes, and Chex Mix. For Dinner tonight I prepared a Meatball Pasta Bake and Baked Garlic Loaf Bread.

 

To make this recipe I’ll be needing: Ronzoni Healthy Harvest Whole Grain Penne Rigate Pasta, LaRosa’s Sauce, Meijer Turkey Meatballs, LiteHouse Dried Oregano, Morton’s Lite Salt, Sargento Off the Block Mozzarella Cheese, Extra Light Olive Oil, and Kraft Reduced Fat Grated Parmesan Cheese.

 

 

 

 

I first turned the oven on to 425 degrees. To prepare it was easy! I used the Leftover Meijer Turkey Meatballs in the LaRosa’s Sauce. I put those in a sauce pan and reheated them on medium low, stirring often.

 

 

 

 

As the Meatballs and Sauce was heating I made my Pasta. I grabbed a large sauce pan and filled it 3/4 full of water, added the Salt to the water. Brought the water to a rapid boil. Added the Pasta and stirred; return to rapid boil. Cook uncovered for 8 minutes, stirring occasionally. I removed the Pasta just before it was done. It will finish in the oven without getting over cooked. Drain well.

 

 

 

 

I added the Pasta to casserole glass dish. Season again with the Salt and added the Oregano and a tablespoon of Extra Light Olive Oil. Stirred until well mixed. Next I added Meatballs and Sauce and stirred until the Pasta was well coated with the Sauce and the Meatballs mixed in.

 

 

 

 

 

Topped everything with the Mozzarella Cheese and Oregano. Popped it in the preheated oven. and baked for about 20 minutes. I really wanted all those flavors to marry together. Before removing from the oven I switched it on to the broiler and left it in the oven another 3 minutes to get the Cheese a little brown on top. Done and ready to serve!

 

 

 

 

Served it in a bowl, I topped it with a sprinkle of the Grated Parmesan Cheese. One delicious dish! By making extra Meatballs in Sauce I got 2 delicious meals out of it. I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish, especially Pasta Dishes! This made one excellent Dish. The Penne Rigate Pasta along with Turkey Meatballs, Sauce, and the Mozzarella Cheese all come together to make this dish so delicious! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Stick Pretzels with a Diet Mango/Tea Snapple.

For Breakfast this morning I prepared a Jimmy Dean Simple Scramble Cup – Crumbled Turkey Sausage, Egg Whites, Shredded Cheddar Cheese. Also had my morning cup of Bigelow Decaf Green Tea. 58 degrees and partly cloudy out today. After Breakfast I went to McDonald’s and picked up Breakfast for Mom. Cloudy with passing showers, high around 57 degrees. Not a lot to do today which is fine since it was one of those long nights again, had to deal with Phantom Pains! So a lot of rest today. Don’t know why these have been so often lately! For dinner tonight I prepared Spaghetti and Meatballs w/ Light Texas Toast.

 

 

 

 

Spaghetti and Meatballs tonight, we love Spaghetti and Meatballs! And you can make it healthier by using Whole Wheat Spaghetti and Turkey Meatballs. For the Meatballs I’m using my favorite, Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are some of the best I’ve found, fantastic taste and they’re 190 calories and 6 carbs for 3 large Meatballs. But this all the Meatballs I have left of them. And no one carries them any longer in this area. So I’ll have to find something new.

To serve I used a bowl and made a bed with Spaghetti. added a little Morton’s Lite Salt and Kraft Reduced Fat Grated Parmesan Cheese. I then topped with Sauce and Meatballs. Wow these Turkey Meatballs are so good, don’t understand why no one carries them any longer. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: The Kitchen is closed!……..LaRosa’s MEAT DELUXE Pizza

 

 

For Breakfast this morning I tries a new Bacon I cam across at Meijer yesterday, al fresco Uncured Chicken Bacon. It fried up good and was crispy after frying. It had good taste, I’ll have this more often! So for Breakfast I had the Chicken Bacon, 1 Egg Sunnyside Up, 2 toasted slices of Aunt Millie’s Light Whole Grain Bread (lightly buttered), and that morning cup of Bigelow Decaf Green Tea. Another morning of below zero temperatures, minus 2 degrees. Mostly cloudy and 18 degrees for a high. It was good to get out for a while yesterday. I had a case of cabin fever! I’ll be glad when this weather breaks and we have days with sunshine and above freezing temperatures! So anyway I cleaned the, vacuum and dusted. Then later a load of laundry. For Dinner tonight I shut down the Kitchen and ordered a Pizza. Tonight it’s a LaRosa’s MEAT DELUXE Pizza.

 

It has been a very long time since I’ve had a Pizza from LaRosa’s Pizzeria! My Cousin’s son was selling LaRosa’s Gift Cards to earn money for their Football Team so I bought 1 for Mom and 1 for my neighbor next door. Mom and Dad wanted a Pizza so we’re using her LaRosa’s Gift Card. We ordered a LaRosa’s MEAT DELUXE Pizza.

 

 

 

 

We ordered a large Pizza. It comes with toppings of LaRosa’s Family Recipe Pizza Sauce and Provolone, topped with lots of Pepperoni, Sausage, Ground Beef, Capocolla Ham, and Bacon. We added Mushrooms and Olives to it also. The Pizza arrived right on time and piping hot! I forgot just how good the Pizza is at LaRosa’s. The Crust, LaRosa’s Sauce, and all the toppings make for one delicious Pizza and Meal! We really enjoyed this! More calories and carbs than I’m used to having but worth it. I make my Pizza, Lasagna, and Spaghetti Sauce all using the LaRosa’s Sauce. For Dessert later a Dole No Sugar Added Peach Chunk Cup. Well the Kitchen will reopen tomorrow, later!

A little LaRosa’s History……

LaRosa’s Pizzeria

LaRosa’s Pizzeria is a chain of pizzerias serving neighborhoods in Cincinnati, Greater Dayton, Central Ohio, Northern Kentucky, Southeast Indiana and central Tennessee. It was founded in 1954 by Donald “Buddy” LaRosa, along with partners Richard “Muzzie” Minella, Mike Soldano and Frank “Head” Serraino. Originally called Papa Gino’s, LaRosa later bought out his partners, and changed the name to LaRosa’s.

In addition to serving guests in its pizzerias, LaRosa’s is also the exclusive pizza served at the Kings Island and Coney Island amusement parks, the Cincinnati Zoo and Botanical Garden, Riverbend Music Center, Perfect North Slopes and the Great American Ball Park (home of the Cincinnati Reds).

Beginning with just one location on Boudinot Avenue in the Westwood area of Cincinnati, the family and franchise owners now operate more than 60 pizzerias, with total annual sales of over $130 million.

In 1991, LaRosa’s invested heavily in the implementation and marketing of a single number call distribution center for delivery and carry out orders. Its phone number is prominently featured in advertising. LaRosa’s is very popular in Greater Cincinnati, exceeding Domino’s, Donatos PizzaPizza Hut and Papa John’s in consumer reported purchase frequency.

LaRosa’s has always been active in the neighborhoods it serves, sponsoring local youth sports programs. On February 27, 2008, Michael Larosa became CEO of LaRosa’s, Inc., succeeding T.D. Hughes (CEO, LaRosa’s 1990-2007).

LaRosa’s signature pizza is a thin crust variety made with a distinctive thick, sweet sauce (a family recipe created by Buddy’s Aunt Dena) and topped with provolone cheese. Their menu also includes subs or “hoagys” with a variety of fillings and condiments, as well as calzones, salads, and pastas.
