Today’s Menu: Spaghetti and Meatballs

To start the day I toasted a couple of Eggo Waffles and had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to the locaL Kroger up the road, for a few items I needed. Warmer this morning than it’s been in a while, 47 degrees. But showers most of the day and into the mid 50’s. Did a few chores around the house and then went up to spend the afternoon with Dad. Back home, for dinner tonight I prepared Spaghetti and Meatballs.

 

 

It seems like forever since I’ve made Spaghetti and Meatballs and it really sounded good for Dinner tonight! To makeSpaghetti and Meatballs 002 it I’m using my favorite, Ronzoni Healthy Harvest Whole Wheat Spaghetti. Cooks up great and an excellent tasting Pasta. It’s 180 calories and 35 net carbs per serving. Then for my Meatballs I used Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are good size, meaty, and have a fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs. For my Pasta Sauce I used Ragu Mushroom Sauce and topped with some Kroger Private Selection Shaved Parmesan Cheese.

To prepare the dish; I cooked the Spaghetti as to the package instructions. In a sauce pan I add my Meatballs and Ragu Sauce, heated on medium low until heated through. In a large bowl I added the finished Spaghetti, the Sauce and Meatballs and mixed and served. Topped the Spaghetti with the Shaved Parmesan Cheese.

 

 

Cheesy Bread

I also prepared some Baked Cheesy Bread. Another easy one, using Healthy Life Whole Grain Bread, Sargento Reduced Fat Shredded Mozzarella Cheese, and I Can’t Believe It’s Not Butter. Just Butter the Bread and add your Cheese on top. Then bake on 400 degrees until the Bread is toasted and Cheese is melted. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bars.

I only had a cup of Bigelow Decaf Green Tea for Breakfast this morning, not much of an appetite this morning. After my Tea I went to Meijer for a few items I needed. A bit warmer today, 86 degrees with some humidity later in the afternoon. Took my car up to the local car wash and had it cleaned, much needed. Then stopped by the bank and got gas before coming home. Not a whole lot to do today so I caught up on some little jobs in and around the house. For dinner tonight I prepared Spaghetti and Meatballs.

For my Pasta Sauce I used Ragu Mushroom Sauce and topped with some Kroger Private Selection Shaved Parmesan Cheese.

Today’s Menu: Spaghetti and Meatballs

 
To jump start my day I made one our favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Spaghetti and Turkey Meatballs 004Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Beautiful morning out, and NO RAIN! Sunny with a high near 70 degrees. I stayed home all day and caught up on some house cleaning and yard work. It was dusting and ran the vacuum inside and outside got the cart out pulled some weeds out of Mom’s flower beds and got the leaf blower out and cleaned around the house. I don’t know how we always end up with all the leaves, limbs, and blowing trash. Everything done took a ride on the cart around the neighborhood and enjoyed the sunshine! For dinner tonight its Spaghetti and Meatballs with a fresh baked Italian Bread Loaf.

It’s feeling like an Autumn Day out there today! I went out early this morning to get the Sunday Papers and it about 49 degrees this morning. Beautiful day out, sunny and in the 60’s. After Breakfast got the cart out and drove around the neighborhood a bit enjoying the beautiful day. Didn’t stay out long today though, it’s the first week of the NFL Season this afternoon! Today’s Menu: Spaghetti and Meatballs

 

Spaghetti LaRosa Sauce
Had a delicious and healthy Breakfast to start my day, using Jennie – O Breakfast Turkey Sausage Links. Did my daily morning work out and on to some house chores. Also they started the outside repairs today, which are much needed. They are starting with our shed, replacing the corner wood and door. Also a fresh coat of paint. When that’s completed it’s on to the wooden deck and my wooden ramp. Does no good trying to save money, always something! For tonight’s Dinner I prepared Spaghetti and Meatballs.

What a gorgeous morning outside! The colors of the sky and rising sun in the East was just incredible. After Breakfast, worked out and started a load of laundry. Then my Mom makes an announcement that sends the rest of the family into hiding, I’m going to get an early start on my Spring Cleaning today! And when she says Cleaning, she means Cleaning. Dad used to be able to get out and go somewhere and hide and now since all his health issues he’s trapped, so he has to partake in the festivities! So let the fun begin here at our house. Today’s Menu: Cincinnati Style 4 Way – Spaghetti, 3 Bean Buffalo Chili, and Cheese

A little cooler out there this morning but still not too bad, about 36 degrees and cloudy. At home all day today. Mom went to Lunch with the Seniors at her Church, she needed to get out it’s a full time job trying to take care of my Dad. I finished up a couple of loads of laundry for her, ran the vacuum, dusted for her. I told her as she was leaving to stay out a while after her Lunch, go shopping or go visit her sister a while. She needs the break. For dinner tonight I prepared Cincinnati Style 4 Way – Spaghetti, 3 Bean Buffalo Chili, and Cheese.

 

 

Usually when making a Cincinnati Style 4 Way I’m using Skyline Chili or Hormel Turkey Chili w/ Beans as my Chili, which all make a delicious Cincinnati Style 4 Way. But when I have some 3 Bean Buffalo Chili! I use for the Cincinnati Style 4 Way. I had made the Crock Pot 3 Bean Buffalo Chili the day before and froze 2 containers and kept enough out for tonight’s dinner!

I’ll be using my regular Pasta, the Ronzoni Healthy Harvest Whole Grain Spaghetti. The Spaghetti is 180 calories and 35 net carbs, which isn’t too bad for Pasta. But it’s becoming tough to find Ronzoni Products around here in the stores. Kroger sells little or none of their items and now Walmart no longer sells it, Meijer is about the only one to depend on to find it. Anyway for my Cheese I’m using Sargento Reduced Fat Shredded Sharp Cheddar. To serve I used a bowl and made a bed of Spaghetti, topped it with the 3 Bean Buffalo Chili, and topped everything with Sargento Cheese. I also added a few shakes of Frank’s Red Hot Sauce to the Chili as it was being heated. Some mighty fine Chili spaghetti! Some people like adding fine diced Onions also, which would make it a 5 Way. Then for a side, one of the most important parts, Oyster Crackers! Chili Spaghetti is always served with a bowl of Oyster Crackers, why who knows. I used Skyline Chili Oyster Crackers with a side of Frank’s Red Hot Sauce. To properly eat an Oyster Cracker you have to put 2 or 3 drops of Hot Sauce on it! At the end of the post I’ve left the 3 Bean Buffalo Chili Recipe. For dessert later a Del Monte No Sugar Added Mango Chunk Cup.

 

 

 

Crock Pot 3 Bean Buffalo Chili3-bean-buffalo-chili-0011

Ingredients:

2 lb. Ground Wild Idea Ground Buffalo
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (15 oz.) Chili Beans
1 Can (15 oz.) Dark Red Kidney Beans, rinsed
1 Can (15 oz.) Great Northern Beans, rinsed
1/2 Cup of Water
1 Packet McCormick Chili Mix
1 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
3 Cloves Minced Garlic
1 Tbs Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
1 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
Shredded Cheese, I used Grated Dutch Gouda (Topping)
Oyster Crackers

Directions:
*Brown Buffalo in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and the oyster crackers, A Tablespoon of fat-free sour cream, or serve with some home made cornbread.

Well Mom and Dad are finally much better, Mom still has a cough but feels much better. I had bought some boxes of Christmas Candy last week and today delivered them. I took one box to the staff of Family Doctor, 1 box to the staff of my Oncologist, and a box to the Head Nurse at my Oncologist. She’s a special person, she’s helped me so much throughout the past 15 years that I have been going there. Have to go to Aldi sometime this week to get our Christmas Ham. If you’re looking for a good Ham you have to try the Appleton Farms Hams, it’s the best Ham that our family has ever had! For dinner tonight I prepared Spaghetti and Meatballs.

 

 

Honeysuckle White Fresh Italian Style Turkey Meatballs

I used Ronzoni Healthy Harvest Whole Wheat Spaghetti, my favorite Pasta. Cooks up great and an excellent tasting Pasta. Then for my Meatballs I used Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are good size, meaty, and have a fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs. I almost always use Jennie -O when using Turkey but no store in this area sells Jennie – O Turkey Meatballs. I always prepare extra Meatballs so I can make a Meatball Sub with them. For my Pasta Sauce I used LaRosa’s Original Sauce. A local favorite and still one of the best Sauces I’ve had. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Spaghetti and Meatballs

 

 

 

Finally starting to feel better today! The soreness and cough have all but gone away and even woke up hungry! Made a Scrambled Egg, Turkey Sausage, Wheat Toast, and a hot cup of of Bigelow Decaf Green Tea. Now if I can just get Mom and dad healthy. Dad is still in the hospital, and Mom possibly should be. I would have to call in the SWAT to get her there though, very stubborn lady. She is some what better but still has an upset stomach. I did make Mom some soup for her lunch and soup and a Turkey Sandwich for dinner. For my dinner I prepared Spaghetti and Meatballs.

Not quite as cold this morning, about 39 degrees. Beautiful day out today, sunny and about 58 degrees. Made a light Breakfast, worked out, and ran Mom to Kroger and the Bank. Came back home and finished up some patch work around our new sod that I laid along the driveway. It seems, so far to have solved our drainage problems.For dinner tonight it’s Cincinnati Style 4 Way – Spaghetti, 3 Bean Buffalo Chili, and Cheese.

 

 

 
Last time I made this I used Hormel Turkey Chili w/ Beans as my Chili, which is a good Chili. But it’s not my 3 Bean Buffalo Chili! Made in a Crock Pot with Wild Idea I had 1 container of it left in the freezer so I set it in the fridge to thaw overnight.
