Today’s Menu Hormel Turkey Chili w/Beans

 

I had a Dinner planned out but due to a Family Emergency I had to go with something quick and easy. My Dad fell last night around 8:30 and we were at the Hospital until 2:00 this morning. He’s doing fine and they sent him back home with us. The time I finally got to bed was around 4:00 this morning. So something quick and easy was Dinner tonight. I prepared a can of Hormel Turkey Chili w/Beans. Topped it with some Sargento Reduced Calorie Shredded Sharp Cheddar and a side of Oyster Crackers. See everyone tomorrow, take care!

Today’s Menu: “Not So Sloppy” Buffalo Joes Sliders w/ Baked Fries

 

 

 

For Breakfast this morning something a little different, Wild Boar Bacon! I had ordered some from SayersBrook Bison Ranch and just received my order yesterday afternoon. Couldn’t wait to try it so I’m having it now. The slices were not as long as most Bacon Slices, but it made no difference. It fried up as normal Bacon and tasted great! Wild Boar Bacon has a richer taste and is leaner than Pork Bacon. Really enjoyed this and will have it again. Along with the Bacon I prepared some Simply Potatoes Shredded Hash Browns, toasted a slice of Healthy Life Whole Grain Bread, and my usual cup of Bigelow Decaf Green Tea.

 

 

 

After Breakfast did a few chores around the house and finished up a load of laundry for Mom. Then after Lunch I went out to the shed and pulled out the rest of the deck furniture and cleaned it up. Rain moved back in again, a high in the 60’s. For dinner tonight I prepared “Not So Sloppy” Buffalo Joes Sliders w/ Baked Fries.

 

 

It’s Sloppy Joe Night tonight for dinner! A delicious and a super easy meal to make. To make the Sloppy Joes I used a 1 lb. package of Wild Idea Buffalo Ground Round, 1 jar of Hormel Not So Sloppy Joe Sauce, and Kroger Lite Wheat Buns. Using Buffalo, or Bison, instead of Beef will give your Sloppy Joe a deeper and richer flavor. Really looking forward to tonight’s Dinner, been a while since I’ve had these!

 

 

 

 

Using a large skillet to brown the Buffalo in I seasoned it with Morton’s Salt Substitute, Ground Black Pepper, and Roasted Ground Cumin. After the Buffalo was browned and no longer pink I added the jar of Not So Sloppy Joe Sauce stirring and making sure the Sauce and Buffalo was well mixed. Simmer until it’s warm, and served. I love the Hormel Not So Sloppy Joe Sauce. It’s a good thick sauce well seasoned with Spices, Onions, Green Peppers among other ingredients (70 calories and 15 carbs per serving). I served them this time on Kroger 100% Whole Wheat Sliders Mini Buns. Sloppy Joes make a perfect Slider! Another delicious dish using Wild Idea Buffalo.

 

For a side I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Smart Pop – Pop Corn.

Today’s Menu: BBQ Shredded Pork Sandwiches w/ Potato Chips

 

 

 


For Breakfast this morning I fried up a couple of Jennie – O Turkey Breakfast Sausage Links along with some Simply Potatoes Shredded Hash Browns. Also had that morning cup of Bigelow Decaf Green Tea. Lot of rain out there today. Showers on and off all day, had a high of 55 degrees. Good day to stay in and I did! So today I cleaned the house, vacuum and dusted. Then cleaned the fridge and oven in the Kitchen. Later on caught up on some shows I had recorded. For Dinner tonight i prepared BBQ Shredded Pork Sandwiches w/ Potato Chips.

 

 

 

I had used the Hormel Slow Simmered Pork Roast Au Jus but it had been a while since I’ve used it. It comes fully cooked in a sealed microwavable plastic tray. To prepare it first remove the outer sleeve and place vacuum-sealed tray in microwave, do not pierce or vent film. Then heat on high for 4 minutes. Self-venting film expands as it heats, forming a bubble to lock in flavor and juiciness. Let stand for 2 minutes. Peel back film and serve! Excellent Pork!

 

 


I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun. I topped the Pork with some Jack Daniel’s Honey Smokehouse BBQ Sauce. For a side I had some Ruffle’s Reduced Fat Potato Chips. Also had an Ice-Cold Diet Dr. Pepper to drink. For Dessert later a Breyer’s 100 Calorie Vanilla Ice Cream Cup.

Today’s Menu: Mini Flatbread Pepperoni and Sausage Pizza

 

 

For Breakfast on this 1st day of April I had a Poached Egg that I served on a Healthy Life Whole Grain English Muffin. They moved Dad from the hospital back over to the Rehab Center he was just at last week. They are going to try more therapy and if that doesn’t work he will have to stay in an assisted living center, hope it doesn’t come to that. So after Breakfast I went to Kroger and picked up a few snacks that Dad likes. Then after Lunch I went on over to see Dad. Back home took it easy and watched a few shows that I had recorded. For my dinner tonight I’m preparing a Mini Flatbread Pepperoni and Sausage Pizza.

 

 

 

 

While at Jungle Jim’s Market the other day I picked up a package of Kontos Pre­Grilled Mini Oval Flatbread. I had used these once before and really liked the way they came out. It’s pregrilled so it’s ready to eat or reheat. What I liked about it was they were the perfect size to make mini Pizzas with, plus they’re only 140 calories and 24 net carbs for a whole one (one serving)!

 

 

 

 

 

To make the Pizzas I’ll need; the Kontos Pre­Grilled Mini Oval Flatbread, Hormel Turkey Pepperoni, Johnsonville Turkey Sausage Links, Sliced Black and Green Olives, Ragu Pizza Sauce, Sargento Reduced Fat Shredded Mozzarella Cheese.

 

 

 


To prepare it I started by preheating the oven on 400 degrees. The Johnsonville Turkey Sausage is precooked so all I had to do was heat up in a small skillet for 5 minutes on medium heat. Removed from the heat and sliced the Links up into small bite pieces. I then got a small baking sheet and lined it with foil and sprayed it with Pam Cooking Spray. I then took one of the Flatbreads and brushed a very light coat of Extra Virgin Olive Oil on the top of them.

 

 

 

 

Next I made my Pizza! I started by spreading 2 tablespoons of the Ragu Pizza Sauce across the top of the Flatbread. Then added the sliced Olives, Turkey sausage, Mozzarella Cheese, and topped it all with Turkey Pepperoni. Then I made a second one the same way. Laid the Flatbreads on the baking sheet and put it in the oven. I baked them for about 8 minutes, until the Cheese was melted and all items heated through.

 

 

 

 

 

The Flatbread provides a perfect Crust (Pizza Pie). It browned up great and had a fantastic flavor with a nice crunch! I’ll have to try different toppings, like Ham or Chicken, using the Kontos Pre­Grilled Mini Oval Flatbread. I’ve found a good Pizza Pie Crust and it’s only 140 calories per serving! For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Open-Faced Roast Beef Sandwich w/ Mashed Potatoes, Mushroom Gravy, and Green Beans

 

 

 


This morning for Breakfast I had a Poached egg, 2 Jimmy Dean Turkey Sausage Links, toasted Healthy Life Whole Grain English Muffin, and a cup of Bigelow Decaf Green Tea. A bit warmer out today and less windy, high of 57 degrees. Did a few things around the house then after Lunch went outside and got a few things out of storage from the shed. Pulled out some of the outdoor chairs and table and cleaned them up and also repaired a couple of the chairs. Back inside finished some laundry up for Mom. For Dinner tonight I prepared a Open-Faced Roast Beef Sandwich w/ Mashed Potatoes, Mushroom Gravy, and Green Beans.

 

 

It’s very seldom that I have Beef but when I was at Walmart the other day this just looked good and I had not had this in quite some time, a package of Hormel Slow Simmered Beef Roast Au Jus. And made into a an Open Face Roast Beef sounded real good! It comes packaged in a sealed microwave container and easy to prepare. Start by removing it from the outer sleeve and place the tray in microwave, do not pierce or vent film. Heat on high for 4 minutes or until hot. the self-venting film expands as it heats, forming a bubble to lock in flavor and juiciness. Let it stand for 2 minutes. Peel back and serve. Can’t get much easier and it’s really delicious. Plenty of Beef with excellent flavor. All I added was a bit Sea Salt to it. I lightly toasted a slice of Healthy Life Whole Grain Bread and served the Beef on top of the Toast. I also heated up a jar of Heinz Mushroom Gravy that I topped it with.

 

 

 

For a side I prepared my favorite Mashed Potatoes, Bob Evan’s Mashed Potatoes. Easy to fix and delicious. To prepare it just heat it up in the microwave for 6 minutes and it’s ready. Topped them with some of the Mushroom Gravy.

 

 

 

 

 

I also heated up a can of Del Monte Cut Green Beans. I could have Beans every meal, love them! For Dessert later tonight I’ll be having a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Turkey Sausage, Turkey Pepperoni 7″ Whole Grain Crust Pizza

 

 
For Breakfast this morning I reheated the leftover Pork Chop from last night. Then I prepared some Simply Potatoes Shredded Hashbrowns, toasted 2 slices of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. Went out to get the Sunday Papers and its a cold one out there this morning, 18 degrees! For the day it was sunny and 39 degrees. After I ate I went to McDonald’s and picked up Breakfast for Mom. Finished up some laundry Mom had started before she went to Church. After Lunch I headed over to see Dad at Rehab. He’s wanting to come home, he’s homesick and bored. It shouldn’t be too much longer before they’ll release him. Hopefully he can stay home once he gets here. Back home watched some College Basketball and relaxed. For Dinner tonight I prepared a Turkey Sausage, Turkey Pepperoni 7″ Whole Grain Crust Pizza.

 


To make the Pizza I used a Mama Mary’s 7″ Whole Grain Pizza Crust. For toppings I used Jennie – O Ground Mild Breakfast Sausage, Hormel Turkey Pepperoni, Mushrooms, Sliced Green and Black Olives, Sargento Shredded Mozzarella Cheese, and Ragu Homestyle Pizza Sauce.

 

 

 

 

To prepare my Pizza; I first preheated my oven to 450 degrees. I then got a medium size skillet, sprayed it with Pam Cooking Spray and heated it on medium heat. Next I got the roll of Jennie – O Turkey Sausage out and sliced about 1/4 of the roll off. I put the remainder in a plastic bag and put it back in the fridge to use later for a meal. I crumbled the Sausage and fried until done. Removed it from the skillet onto a paper towel lined plate and set aside.

 

 

 

I removed the pizza crust from package. Lightly brushed crust with Extra Light Olive Oil. I then gathered my toppings up. The Black Olives are already sliced but the Green Olives come whole and I had to slice them. I then topped the crust with with; the Ragu Pizza Sauce, the Sargento Mozzarella Cheese, Hormel Turkey Pepperoni, Jennie – O Turkey Sausage, and finally the Black and Green Olives. The order of layers is all up to you.

 

 

 

Next I lowered the oven temperature to 425 degrees F. Then baked on oven Pizza Pan (middle position) for about 10 minutes. You can turn the oven on broil if you want to get the crust crisper if you want. I stopped at 10 minutes and it came out perfect! The Crust baked up with a nice crunch to it and all the ingredients worked great together. I love adding these Pizza Nights! For Dessert tonight a Weight Watcher’s Cookies and Cream Ice Cream Bar.

For Breakfast this morning I prepared Turkey Sausage and Hash Browns. I was out of the Jennie – O Turkey sausage Links, I haven’t found any at Meijer lately, and Meijer is the only store I can find Jennie – O products. So I had a package of Eckrich Smoked Turkey Links in the freezer, so I put the package in the freezer to thaw overnight. They are very easy to prepare, just heat in a skillet for 6 minutes and done. For the Hash Browns I used Simply Potatoes Shredded Hash Browns. Not a bad day out today, partly sunny and in the 50’s. After Breakfast I got the leaf blower out and cleaned our deck and driveway, lot of leaves. After that I cleaned the house, vacuum and dusted. Everything done and this afternoon its NFL Football, love Football! For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

 
I love have my Chili and Cheese Nachos! Ingredients; I used Tostitos Multi Grain Scoops for my Chips. I love these Chili and Cheese Nachos 001with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some sliced Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos!

 

 

 
To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I chili-and-cheese-nachosfirst opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! Also had a Diet Dr. Pepper to drink. For dessert later a Weight Watchers Cookies and Cream Ice Cream Bar.

Today’s Menu: Chili and Cheese Nachos

Started this rainy morning off with a Gouda Egg White Omelet with Turkey Sausage Links and Toast. The Shredded Gouda worked perfect as the Cheese filling in the Omelet. For the Omelet I used Meijer Brand Egg White Substitute. My Sausage was Jennie – O Turkey Breakfast Sausage Links along with toasted Healthy Life Whole Grain Bread. And not forgetting, my morning cup of Bigelow Decaf Green Tea.

We went from being very dry out to very wet, with flooding! A whole lot of rain yesterday evening through the morning. It finally slowed and cleared up somewhat as the day went on. When we finally got a break I headed out to Meijer and Kroger. Purchased the majority of the items at Meijer. Then at Kroger a few items I needed and all of Mom’s items she needed. Noticed a most of the trees have turned to their Fall Colors throughout the area now. Lot of bright colors this year. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Got to have my Chili and Cheese Nachos every so often, and tonight’s the night! Ingredients; I used Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives. Anyone that uses small cans of Sliced Black Olives know what a pain they can be opening sometimes. Not these, they come in a can with a pull tab About time! For my other toppings I sliced up some sliced Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good!

To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or so until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! Also had an ice-cold Diet Dr. Pepper to drink. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Started my morning off by making a Breakfast Sandwich. Toasted a Healthy Life Whole Grain English Muffin and as that toasted I fried up some Boar’s Head Deluxe Ham and as that was finishing I took a slice of Sargento Swiss Cheese and layered that on to top of the Ham while in the skillet. Love these English Muffin Breakfast Sandwiches! Heat, humidity, and showers throughout the day,seems to a holding pattern. We got a whole lot of rain overnight and into today. Helped out Mom on a couple of loads of laundry. Then had to do some minor repair on the Hoveround. For Dinner tonight I prepared some “Not So Sloppy” Buffalo Joe’s w/ Baked Crinkle Fries.

It’s Sloppy Joe Night tonight for dinner! A delicious and a super easy meal to make. To make the Sloppy Joe’s I used a 1 lb. package of Wild Idea Buffalo Premium Ground Buffalo, 1 jar of Hormel Not So Sloppy Joe Sauce, and Healthy Life Whole Grain Hamburger Buns. Using Buffalo, or Bison, instead of Beef will give your Sloppy Joe’s a deeper and richer flavor.

Using a large skillet to brown the Buffalo in I seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley. After the Buffalo was browned and no longer pink I added the jar of Not So Sloppy Joe Sauce stirring and making sure the Sauce and Buffalo was well mixed. Simmer until it’s warm, and served. I love the Hormel Not So Sloppy Joe Sauce. It’s a good thick sauce well seasoned with Spices, Onions, Green Peppers among other ingredients (70 calories and 15 carbs per serving). I served them on the Healthy Life Bun. Another delicious dish using Wild Idea Buffalo. For a side I baked some Ore Ida Crinkle Fries, with a side of Hunt’s Ketchup for the Fries. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Just had a cup of Bigelow Decaf Green Tea for Breakfast this morning. Really been dreading today. Today is my Aunt’s Funeral, really a rough day for the family. I was very close to her and I’m really going to miss her. She had dementia, so at least she’s not suffering no more from that terrible disease. It was very tough watching her healthy slowly decline due to the dementia. Love you Aunt Dorthy! I wanted a light Dinner and something easy to fix. So tonight I prepared Chili and Cheese Nachos.

One of those days where something lighter sounded right for dinner so it was Chili and Cheese Nachos! Make a bed of Tostito’s Multi Grain Scoops. Top with Hormel Turkey Chili with Beans, Black Olives, Green Olives, Sliced Jalapenos, all covered up with a blanket of Sargento Shredded Mozzarella. That’s my Dinner Tonight!
