Today’s Menu: Baked Chili and Cheese Nachos

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 88 degrees and sunny out. I had to break out the sunscreen. We had a heavy thunderstorm last night and more overnight tonight. Hopefully it will stay clear so we can see the Blood Moon Eclipse tonight! After my Tea I went to the Meijer Garden Center. I bought a large Planter, a bag of Potting Soil, and 3 Pepper Plants. I really didn’t need 3 more but as I said before I love growing Flowers and Vegetables! Back home I planted the new Plants. Then I added dirt to some of the other Planters and Watered everything. Beautiful outside! For Dinner tonight a real Comfort Food and Mom’s favorite, Baked Chili and Cheese Nachos.

 

Not that hungry tonight so it’s going to be an Appetizer for Dinner tonight as I prepared Baked Chili and Cheese Nachos. To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as a snack, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! I especially love the Jalapenos, nice mild heat!

 

To prepare I preheated the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a saucepan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything with the Cheese. Then just pop it in the oven for 10 minutes or until the Cheese has started to melt and everything is heated. We love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Kiwi/Strawberry Snapple.

* Stove top: empty chili into saucepan. Stir occasionally while heating over medium heat, about 5 minutes or until hot. Microwave: empty chili into microwaveable bowl; cover loosely. Today’s Menu: Baked Chili and Cheese Nachos

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Rain and 40 degrees this morning. As the rain ended the temperatures dropped also in to the mid 30’s. I went and picked up Breakfast for at Wendy’s. Back home, nothing to do today. I was caught up on everything so I kicked back and caught up on some shows I had recorded and watched some Football. Nice relaxed day. For Dinner tonight a real Comfort Food and Mom’s favorite, Baked Chili and Cheese Nachos.

 

Myself or Mom were not that hungry tonight so it’s going to be an Appetizer for Dinner tonight as I prepared Baked Chili and Cheese Nachos. To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as a snack, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! I especially love the Jalapenos, nice mild heat!

I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything with the Cheese. Then just pop it in the oven for 10 minutes or until the Cheese has started to melt and everything is heated. We love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert later a couple of slices of Kraft 2% Super Sharp Cheddar on Triscuits Whole Wheat Crackers with a Coke Zero to drink..

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 65 degrees and partly cloudy out today. After my Tea I took my car up and had it washed. Then I stopped by the ATM and then picked up Breakfast at McDonald’s for Mom. My car is on its last legs. I hope it makes it through the Winter. I really don’t use it much, I usually use Mom’s car. But it’s nice to have that 2nd car in case Mom’s has to have work done, which it does from time to time. Anyway, I did some work outside in the yard. For Dinner tonight a real Comfort Food and Mom’s favorite, Baked Chili and Cheese Nachos.

 

To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as a snack, they bake and hold their shape better than most chips. Sunny and 84 degrees , with low humidity. Another beautiful day out there! Watered all my plants and lawn early. Then later I got the cart out of the shed along with the rake, leaf blower, weed killer and grass seed. Beautiful day to do some yard work. Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. 72 degrees and sunny out, cooler out today. Plus it’s Cicada Free! Great day to get some yard work done. I got the cart out of the shed along with the rake, hedge clippers, weed spray, and leak blower. I was ready for yard work. I went over to my neighbor and gave him a hand with his yard. Good day of yard work! For Dinner tonight I prepared some Pizza Muffins.

 

One of those days I wanted something a light hot meal. So I usually have a Pizza Muffin for Lunch every now and then, so why not Dinner. I’ll be using Thomas Light English Muffins. For toppings LaRosa’s Pizza Sauce, Jennie – O Ground Turkey, Hormel Turkey Pepperoni, Dried Oregano, and Sargento Mozzarella Shredded Cheese.

 

Earlier I got the Jennie – O Ground Turkey out. I sliced a small amount off the Roll and cut that into smaller chunks. I grabbed a skillet and sprayed it with Pam Non Stick Spray. Turned the stove burner to medium heat. When heated I added the Ground Turkey Pieces. Cooked until browned and cooked through. Removed the skillet from the heat and put them in a bowl until ready to use. And yes I did sample several pieces!

 

I first turned the oven on to 400 degrees. Next I got a small baking sheet pan out and lined with foil. I sprayed a light coat of Pam Non Stick Spray on it. Time to build the Pizzas. I first sliced the English Muffins in half and laid them on the baking sheet. And added the toppings.

 

I first put the Sauce on the Muffin Halves. Followed by the Mozzarella Cheese, the Turkey Pieces, the Turkey Pepperoni, and sprinkled the Oregano over the top of each Pizza. Put the sheet pan in the oven and let them bake. You want to bake these until the ingredients are heated through and the Cheese melted.

 

The Pizza Muffins came out perfect! The Cheese and the other toppings worked out great. Delicious light Dinner, an easy cleanup also. For Dessert later a Breyer’s 90 Calories Cookies and Cream Ice Cream Cup.

Today’s Menu: Cast Iron Skillet Pizza – Turkey Pepperoni and Turkey Sausage

 

 

To start the morning off I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. 73 degrees with rain and thunderstorms on and off today. After Breakfast I went to Wendy’s to pick up Breakfast for Mom. Did a load of laundry and cleaned the house today. For Dinner tonight Cast Iron Skillet Pizza – Turkey Pepperoni and Turkey Sausage.

 

 

I had not made this in a while and a Pizza sounded good for tonight! Cast Iron Skillet Pizza, it uses my favorite piece of cookware, the Cast Iron Skillet, and it’s making one of my favorite foods, Pizza. I use Pillsbury Classic Pizza Crust when making my own Pizza. For my toppings I’m using; Hormel Turkey Pepperoni, Jennie – O Turkey Ground Sausage, Sliced Mushrooms, Sliced Black Olives, Sliced Green Olives, Sargento Shredded Mozzarella Cheese, and Ragu Original Pizza Sauce. Using a medium size Skillet, I fried the Jennie – O Turkey Ground Breakfast Sausage ahead of time. When that was done I drained what little grease there was and put the Sausage in a small bowl, and set aside.

 

 

I preheated the oven to 425 degrees. I then took out a large Cast Iron Skillet, spraying it with Pam Cooking Spray w/ Olive Oil and added a tablespoon of Extra Light Olive Oil. Got the tube of Pillsbury Pizza Crust from the fridge and removed it from the packaging. I then got a flour board out and added a little bit of flour and Cornmeal to it. I then took the Pizza Dough on it and formed a ball with it. Sprinkled on some Cornmeal and rolled it out and shaped it by hand I love that crunch texture Cornmeal gives the bottom of the Pizza Crust.

 

 

I added it to the Cast Iron Skillet and worked it out by hand, fully covering the bottom of the Skillet. I flipped the Dough Crust one time, that way I had a light coating of the Olive Oil on both sides. I then added my toppings; Hormel Turkey Pepperoni, Jennie – O Turkey Ground Sausage, Sliced Mushrooms, Sliced Black Olives, Sliced Green Olives, Sargento Reduced Fat Shredded Mozzarella Cheese, and Ragu Original Pizza Sauce. Slid that baby into the oven and wait for it to get done! Baked it a total of about 15 minutes.

 

 

It came bubbling hot and just flat out delicious! All the toppings and Sauce work great together, this makes one delicious Pizza. As all Pizzas you decide what toppings you want to use. Really enjoyed this. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: “Not So Sloppy” Turkey Joes w/ Baked Crinkle Fries

 

 

For Breakfast I made my Skillet Potatoes and Diced Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with Sargento Off the Block Sharp Cheddar Cheese. Also had my morning cup of Bigelow Decaf Green Tea. 59 degrees and partly cloudy out today. I had all the yard work done for now so I got the cart out and helped a couple of my elderly neighbors with their yards. Raked, sprayed for weeds and helped with their flower beds. For dinner tonight it was a Comfort Food Sandwich! I prepared some “Not So Sloppy” Turkey Joes w/ Baked Crinkle Fries.

 

I used my favorite Sloppy Joe Mix, the Hormel Not-So-Sloppy-Joe Sloppy Joe Sauce. I love this Sauce and it’s ingredients! It’s a nice thick Sauce that’s seasoned just right. Which is why they call it Not So Sloppy, it’s thicker than other Sauces and doesn’t drip as much. The Sauce is seasoned with Spices, Onions, Green Peppers among other ingredients (70 calories and 15 carbs per serving). I’ll also be using Jennie – O Extra Lean Ground Turkey Breast (120 calories per serving) and Healthy Life Wheat Hamburger Buns.

 

So to prepare it; I started by frying the Ground Turkey. I used a large skillet; sprayed it with Pam Cooking Spray and added a tablespoon of Extra Virgin Olive Oil. Heated it on medium heat. Added the Ground Turkey and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. Stirred and cooked until no longer pink, added the jar of Not So Sloppy Joe sauce. Stirred until heated through. Served on Aunt Millie’s Reduced Calorie Hamburger Bun. Love these! The Sauce combined with the Jennie – O Turkey is a perfect match.

 

For a side I baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Baked Chili and Cheese Nachos

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Very windy and a high of 44 degrees. After my Tea I headed to Meijer. They had Cook’s Hams on sale at 89 cents a pound. I wanted to get one before they were picked over, for an Easter Dinner Ham. They had some great looking Half Shank Bone In Hams! Meijer had a big crowd to be so early and most were grabbing a Ham. Back home I didn’t get outside, just too windy and cold. So I was Couch Potato all day! For Dinner tonight a real Comfort Food and Mom’s favorite, Baked Chili and Cheese Nachos.

 

So Mom loves Baked Chili and Cheese Nachos, as I do! So Nachos it is tonight! To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as a snack, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! I especially love the Jalapenos, nice mild heat!

 

To prepare I preheated the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a saucepan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything with the Cheese. Then just pop it in the oven for 10 minutes or until the Cheese has started to melt and everything is heated. We love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

Today’s Menu: Baked Chili and Cheese Nachos

 

For Breakfast this morning I lightly fried some Turkey Spam, had a Sunny Side Up Egg, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread and had a cup of Bigelow Decaf Green Tea. It’s one cold morning out there today! The temperature was at 9 degrees and the wind chill was Below Zero! 23 for a high and sunny, but the winds kept it in the single digits. Good day to stay in. Just did a few chores around the house and then relaxed and watched a few shows I had recorded. For Dinner tonight a real Comfort Food and Mom’s favorite, Baked Chili and Cheese Nachos.

 

So Mom loves Baked Chili and Cheese Nachos, as I do! So Nachos it is tonight! To make them I’ll need: Tostitos Multi Grain Scoops for my Chips.
