Turkey Shepherd’s Pie
Shepherd’s pie is a classic and a great way to incorporate more veggies. Add this clean recipe to your weeknight dinner rotation.

Total Time – 50 minutes
Serving Size – Makes 8 Servings

Ingredients
1 – tablespoon olive oil
1 – medium red onion, diced
4 – cloves garlic, minced
1 – cup red wine
1 – (16-ounce) package JENNIE-O® Lean Ground Turkey
3 – tablespoons tomato paste
1 – teaspoon Worcestershire sauce
Salt and pepper, to taste
1 1/2 – vegetable broth
2 – carrots, diced
1 – cup frozen peas

Mashed Potato Topping:
2 – pounds Yukon gold potatoes, scrubbed and cut into large chunks
¼ – cup butter
¼ – cup sour cream
¼ – cup milk
½ – teaspoon garlic powder
Salt and pepper, to taste

Directions
1) Heat oven to 350°F. Lightly spray a 2-quart baking dish with non-stick cooking spray.

2) Filling: In large skillet over medium-high heat, heat oil. Add onions and garlic. Cook 3 to 5 minutes or until onions are beginning to brown.

3) Pour in wine. Simmer 5 to 6 minutes or until liquid is reduced by half.

4) Add turkey. Cook, crumbling with back of spoon, 5 to 7 minutes or until turkey is cooked through.

5) Stir in tomato paste and Worcestershire sauce. Season to taste with salt and pepper. Add broth, carrots and peas. Cook 3 to 5 minutes or until vegetables are tender. Set aside.

6) Mashed Potato Topping: In large saucepan add potatoes and enough water to cover them. Bring to a boil over high heat. Cook potatoes 15 to 20 minutes or until tender. Drain. Mash lightly. Add remaining ingredients. Mash until fluffy.

7) Spread Filling into prepared baking dish. Top with Mashed Potato Topping, spreading to edges. Bake 25 to 30 minutes or until filling is bubbly and potatoes are lightly browned.

Asian Noodle Turkey Salad
Chock full of crispy veggies, this lean twist on a classic Asian recipe makes for a memorable dinner that’s also less than 500 calories per serving. Made with snow peas, garlic and fresh ginger.
Total Time – More than an hour
Serving Size – 6 Servings

INGREDIENTS
1 (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin
¼ cup plus 2½ tablespoons low-sodium soy sauce, divided
2 teaspoons finely chopped garlic
2 tablespoons peanut butter
3 tablespoons vegetable oil
2 tablespoons seasoned rice vinegar
2 teaspoons dark sesame oil
½ teaspoon finely grated ginger
½ teaspoon crushed red pepper flakes
8 ounces vermicelli or thin spaghetti, broken in half
½ cup julienne-cut carrots
1 red bell pepper, cut into short, thin strips
1½ cups fresh snow pea pods, cut lengthwise into thin strips
½ cup chopped and roasted peanuts
½ cup diagonally sliced green onions

DIRECTIONS
1) Cut tenderloins into strips and place in plastic bag. Add 2½ tablespoons soy sauce and garlic; close bag securely, turning to coat. Refrigerate 30 minutes or up to 4 hours. Prepare grill.
2) In large bowl, whisk together peanut butter and vegetable oil. Whisk in remaining ¼ cup soy sauce, vinegar, sesame oil, ginger and red pepper flakes. Cook vermicelli according to package directions.
3) Combine carrots and bell pepper in microwave safe dish. Cover and cook on HIGH (100%) 1 minute. Add snow peas; cover and continue cooking 1 minute or until crisp-tender.
4) Drain tenderloins. Grill tenderloins as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer. Transfer to carving board; cut each tenderloin lengthwise in half and then cut crosswise into ¼-inch thick slices. Add turkey to noodle mixture. Add peanuts and green onion to noodle mixture and toss.
* Always cook to an internal temperature of 165°F.

Today’s Menu: Turkey and Black Bean Tacos

 

To start the day off I had a cup of Bigelow Decaf Green Tea. 17 degrees this morning. We had a high of 31 degrees with some snow showers. Got the Salt and Snow Shovel out of the Shed in case we get any of the snow storm that’s just East of us. Cleaned and straightened the Pantry and did a few things around the house. Mom wanted one of her favorites for Dinner so I prepared Turkey and Black Bean Tacos.

 

When making Turkey Tacos I always use Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Virgin Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added 1 can Bush’s Chili Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make some fine Tacos!

 

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce (my favorite), Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Turkey and you have some mouth watering and delicious Tacos! Love these Taco Meal Nights. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Stick Pretzels with a Diet Peach Tea Snapple to drink.

Today’s Menu: Leftover Jennie – O OVEN READY™ Boneless Turkey Breast w/ Mashed Potatoes, Shellie Beans, and Dinner Rolls

 

For Breakfast I had a cup of Bigelow Decaf Green Tea. Cloudy and a high of 34 degrees, one dreary day out there. Also not a good day if you have sinus problems like me. These shifting temperatures are not good for me. Had a headache all day. Did a few things around the house and laid down for a while. Easy Dinner tonight, Leftovers! I heated up the Leftovers from our Dinner last night. So it’s Jennie – O OVEN READY™ Boneless Turkey Breast w/ Mashed Potatoes, Shellie Beans, and Dinner Rolls. I’ve left the post from last night for description and directions. Enjoy, Stay Safe Everyone!

 

For the Turkey I used the Jennie – O Oven Ready Skinless Boneless Turkey Breast. Such an easy way to have a moist and fantastic tasting Turkey, along with little to clean-up! Comes in a Jennie O Turkey Breast Oven Ready Bag, that you bake at 375 degrees for about 2 to 3 hour until it reads 165 degrees. The Turkey comes out moist, juicy and delicious, with an excellent flavor! So cooking usually for just myself and Mom, it’s just the right size (2-3 lbs.). Enough leftovers for Dinner tomorrow. I also prepared a Blackberry Glaze, which works great on Turkey or Pork! To make the Blackberry Glaze I’ll need Smucker’s Sugarless Blackberry Jam, Red Wine Vinegar, Splenda Sugar, and Ground Cinnamon. I left the recipe for this at the end of the post.

 

For a side I prepared a package of Bob Evan’s Mashed Potatoes. Just microwave for 6 total minutes and serve, just as good as homemade, if not better. I could make a meal out of just Mashed Potatoes.

 

 

For a 2nd side I prepared a can of Libby’s Shellie Beans. I had picked up a couple of cans at Meijer. I opened 1 can and added them to a small sauce pan that I sprayed with Pam Non Stick Cooking Spray. I brought the beans to a rolling boil and reduced the heat to low until heated through. These are so good, it’s been a while since I’ve had any. Shellie Beans are Green Beans with added Pinto Beans. I also heated up some of Aunt Millie’s Live Carb Smart Dinner Rolls. These are great for those of us with Diabetes 2, or for anyone who loves good rolls. The Rolls are only 35 calories and 1 carb per roll! That’s right 1 net Carb per roll! So a big thank you to Aunt Millie’s for these! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink. .

SLOW COOKER:

Place cooking bag with frozen turkey in the bottom of the slow cooker. Add one cup water to the crock pot. Cut three 1/2 inch slits in top of fool-proof cooking bag. Cook for approximately 3-1/2 hours with the slow cooker in high setting or 5 on low setting.
CONSUMER OVEN:

Preheat oven to 375°F. Remove frozen turkey from white outer package. Do not remove turkey from cooking bag. Place in a roasting pan with at least 2″ high sides.
NOTE:

Do not increase oven temperature. Cooking bag may melt at higher temperatures. Cut three 1/2 inch slits in top of cooking bag. Place pan in oven, allowing room for bag to expand without touching the oven racks or walls. Roast the turkey until a meat thermometer reaches 165°F.
NOTE:

Meat temperature increases rapidly during last hour of cooking. Let turkey rest 10 minutes, cut open top of oven bag. Be cautious of hot steam and juices. Heat gravy as directed on pouch.

Air Fryer Asian Turkey Meatballs
This easy, versatile, and carb-conscious dish is made in your air fryer. Add the Asian Turkey Meatballs over cauliflower rice.

Total Time – 30 minutes
Serving Size – Makes 4 Servings

Ingredients
1 – 16-ounce) package JENNIE-O® Lean Ground Turkey
¾ cup – panko breadcrumbs
1 – egg
3 teaspoons – garlic powder
2 teaspoons – pepper
1 teaspoon – sesame oil
1 teaspoon – salt
½ teaspoon – ground ginger

Sauce:
½ cup – stir fry sauce
1 tablespoon – soy sauce
2 teaspoons sriracha sauce
1 teaspoon – sesame oil
1 teaspoon – garlic paste –
Salt, to taste
Cauliflower Rice, for serving
Chopped green onions and sesame seeds, if desired

Directions
1) Preheat air fryer to 400°. In large bowl, combine meatball ingredients. Shape into 1-1/2-in. balls.

2) In batches, arrange meatballs in a single layer on greased tray in air-fryer basket. Cook 12 to 15 minutes or until lightly browned and cooked through. Always cook to well-done, 165°F as measured by a meat thermometer.

3) Meanwhile, in small saucepan, combine sauce ingredients. Cook and stir over low heat until warmed. Prepare cauliflower rice according to package directions.

4) Serve meatballs and sauce over cauliflower rice. Garnish with chopped green onions and sesame seeds, if desired.

When it comes to sandwiches, the Turkey Club is the best there is. With crunchy cucumbers, toasted bread and crispy turkey bacon, this is a Club the whole family will want to join.
Total Time – 30 Minutes
Serving Size – 4 Servings

INGREDIENTS

8 slices JENNIE-O® Turkey Bacon
4 tablespoons fat-free mayonnaise
1 teaspoon prepared horseradish
8 slices reduced-calorie whole grain bread, toasted
8 ounces thinly sliced JENNIE-O® DELI FAVORITES® Oven Roasted, or Reduced Sodium Turkey Breast
4 ounces thinly sliced reduced-fat Cheddar cheese
1 small red onion, thinly sliced
2 roma tomatoes, thinly sliced
4 lettuce leaves

DIRECTIONS
1) Preheat a nonstick skillet or electric griddle over medium heat (375°F.). Heat slices of bacon for 6-7 minutes or until desired crispness, turning frequently. Set aside
2) In small bowl, mix mayonnaise and horseradish. Spread mixture on toasted bread slices.
3) Top with turkey breast, cheese, onion, tomato, bacon and lettuce.
4) Place remaining toasted bread on top.

For Breakfast I made a Breakfast Sandwich. I used an al fresco Chicken Breakfast Sausage Patty, a 1/2 slice of Kraft Deli Style Sharp Cheddar Cheese, and a toasted Thomas Light English Muffin. I also had that Morning Cup of Bigelow Decaf Green Tea. The day started off sunny but as the day went on it clouded up, we even had a real light shower. A high of 48 degrees today. After Lunch I grabbed my leaf blower out of the shed and went up to a neighbor’s house. I cleaned around her driveway and walkway, she had a lot of leaves. She’s elderly and she’s in the rehab right now. She took a hard fall on her kitchen floor and really got banged up. So I’ve been keeping an eye out on her home for her. Then came back to the house and cleaned off the deck and driveway her. We had a Thanksgiving style Dinner tonight! I prepared a Jennie – O OVEN READY™ Boneless Turkey Breast w/ Mashed Potatoes, Shellie Beans, and Dinner Rolls.

Comforting Paleo Ground Turkey Soup
Keep it clean with this quick, comforting, and paleo Ground Turkey Soup. Cubed butternut squash, baby spinach, and paleo pasta are sure to delight your guests.

Total Time – 30 minutes
Serving Size – Makes 6 Servings

Ingredients
1 – tablespoon olive oil or ghee
1 – tablespoon garlic, minced
1 – small sweet yellow onion, diced
1 – (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
1 – teaspoon kosher salt
2 – stalks celery, sliced
2 – large carrots, diced
3 – cups cubed butternut squash
6 – cups chicken broth
1 – tablespoon lemon juice
3 – handfuls baby spinach leaves
8 – ounces paleo pasta noodles, cooked and drained

Directions
1 – In large pot over medium-high heat add olive oil; swirl to coat. Add garlic. Cook 1 minute or until fragrant. Add onions. Cook 2 minutes or until translucent.

2 – Add turkey. Cook, stirring 5 to 7 minutes or until cooked through. Season with salt. Stir in celery, carrots and butternut squash. Cook 5 minutes. Add broth and lemon juice.

3 – Reduce heat. Cover and simmer 8 to 10 minutes or until squash is tender.

4 – To serve, stir in spinach leaves and cooked pasta.

5 – Kitchen tip: Adding paleo pasta to individual servings instead of the whole pot of soup is a great way to keep the pasta in shape. Try storing the cooked pasta separately if there are leftovers.

Turkey Wild Rice Casserole
A classic casserole recipe for fans of comfort food. Sautéed mushrooms, wild rice and water chestnuts baked into a hearty dinner. This Turkey Wild Rice Casserole recipe is 320 calories per serving!

Total Time – 1 Hour
Serving Size – 6 Servings

INGREDIENTS

2 cups sliced mushrooms
¼ cup butter
6 tablespoons flour
2 chicken flavored instant bouillon cubes
1 cup water
1 (12-ounce) can evaporated milk
4 cups cubed JENNIE-O® Extra Lean Oven Roasted Turkey Breast
1 cup uncooked wild rice
1 (8-ounce) can sliced water chestnuts, drained
½ cup almonds, sliced

DIRECTIONS
1) Heat oven to 350°F.

2) In skillet, sauté mushrooms in butter until tender. Blend in flour, bouillon cubes and water. Stir in evaporated milk. Cook over medium heat, stirring constantly, until mixture comes to boil.

3) Add cubed turkey, wild rice and water chestnuts. Pour mixture into buttered baking dish. Sprinkle top with almonds. Cover. Bake 30 minutes. Uncover.

4) Bake 30 minutes or longer until hot and bubbly.

1/2 – red bell pepper, diced
1/2 – green bell pepper, diced
3 – cloves garlic, minced
1 – (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
2 – tablespoons Worcestershire sauce
1 – teaspoon Italian seasoning
1 – teaspoon garlic powder
Dash – curry powder
Salt and pepper, to taste
1 ½ – cups tomato sauce
1 ½ – cups diced fresh tomatoes
1/4 – cup marinara sauce
1 ½ – cups water
elbow macaroni

Directions
1) In large skillet over medium-high heat, heat oil. Add onions and peppers. Cook 3 to 5 minutes or until beginning to brown.

2) Add garlic. Cook 1 minute or until fragrant.

3) Stir in turkey. Cook, stirring and crumbling with back of spoon 5 to 7 minutes or until turkey is cooked through.

4) Stir in Worcestershire sauce, Italian seasoning, garlic powder and curry powder. Season to taste with salt and pepper. Add tomato sauce, tomatoes, marinara sauce and water. Simmer 10 minutes.

5) Add macaroni. Simmer, stirring occasionally 12 to 15 minutes or until macaroni is tender.
