Turkey Tenderloin with Grilled Corn-Mango Salsa
Sometimes the right salsa can make all the difference in the world. This grilled corn mango salsa puts a colorful, tropical spin on our seasoned turkey tenderloin. The juxtaposition will leave your guests with jaws dropped – in a good way!
INGREDIENTS
2 cups grilled corn kernels
1 mango, chopped
½ cup diced red bell pepper
1 jalapeño, seeded and diced
¼ cup thinly sliced red onion
2 tablespoons chopped fresh cilantro leaves
2 tablespoons fresh lime juice
1 tablespoon olive oil
¼ teaspoon kosher salt
1 (24-ounce) package JENNIE-O® Turkey Breast Tenderloin
1 teaspoon seasoned pepper
fresh cilantro leaves
DIRECTIONS
1) In medium bowl, combine corn, mango, red bell pepper, jalapeno, onion, cilantro, lime juice, olive oil and salt. Set aside.
2) Sprinkle turkey breast with seasoned pepper. Preheat oven to 350°F. Place breasts in a shallow baking pan. Bake until meat thermometer inserted into thickest portion of the meat reaches 165°F., approximately 1 hour 15 minutes to 1 hour 30 minutes. Remove from oven, cover and let stand 10 minutes.
3) Slice and top with corn mixture.
4) Garnish with cilantro leaves, if desired.
* Always cook to an internal temperature of 165°F.

Ingredients
1 – teaspoon coconut oil
1 – (16-ounce) package JENNIE-O® Lean Ground Turkey
2 – tablespoons minced ginger
2 – cloves garlic, minced
salt and pepper to taste
1 – cup chicken broth
1/4 – cup tahini
2 – tablespoons chili oil
2 – tablespoons red wine vinegar
2 – tablespoons soy sauce
1 – teaspoon Sichuan peppercorns, optional
1 – teaspoon honey
3 – zucchini, spiralized
1 – cup chopped green onions
1/4 – cup chopped roasted peanuts
Sesame seeds, if desired
Directions
1) In large skillet over medium-high heat, heat oil. Add turkey. Season with salt and pepper. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer. Add ginger and garlic. Cook 30 seconds or until fragrant. Add chicken stock, tahini, chili oil, red wine vinegar, soy sauce, peppercorns and sugar; stir until tahini is totally melted into the sauce. Add in spiralized zucchini noodles and toss to combine. Cover. Cook 1 to 2 minutes.
2) Serve sprinkled with green onions, chopped peanuts and sesame seeds, if desired.

8 ounces shiitake mushrooms, stems discarded and caps sliced
2 teaspoons minced garlic

2 cups coleslaw mix (shredded cabbage and carrots) or sliced napa cabbage
½ cup hoisin sauce
⅓ cup plum sauce or sweet-and-sour sauce
6 tortillas, warmed
DIRECTIONS
1) Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.
2) Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.
3) Add mushrooms, garlic and gingerroot; stir-fry 2 minutes. Add bell pepper and cook 10 minutes, stirring occasionally. Add coleslaw mix and hoisin sauce; stir-fry 3 minutes.
4) Spread plum sauce evenly over each warm tortilla; top with turkey mixture. Fold bottom of tortilla up over filling and fold sides in and roll up.

1/4 – cup all-purpose flour
1 – teaspoon lemon pepper seasoning
2 – tablespoons olive oil
6 – ounces whole wheat angel hair pasta
1/2 – cup dry white wine
2 – cloves garlic, minced
1 – cup reduced sodium fat-free chicken broth
2 – tablespoons lemon juice
1/2 – cup milk
1 – tablespoon unsalted butter
1 – sprig fresh parsley, chopped
4 – lemon wedges, for garnish, if desired
Directions
1) Cut turkey tenderloin into ¼-inch thick medallions and and place between two pieces of plastic wrap.
2) With a meat mallet or rolling pin gently pound to ⅛-inch thickness.
3) In pie plate, combine flour and lemon pepper seasoning; reserve 1 tablespoon flour mixture. Dip turkey in flour mixture to coat.
4) Heat oil in large skillet over medium-high heat. Add turkey and cook 1-1½ minutes on each side, 3 minutes total and until temperature reaches 165°F. as measured by a meat thermometer. Always cook to well-done.
5) Remove turkey from pan. Cover to keep warm. Set aside. Repeat as necessary with remaining turkey until all are cooked.
6) Meanwhile, cook pasta as specified on the package; drain and set aside. For sauce, simmer wine and garlic in skillet until the wine has reduced to about half the amount. Whisk in reserved tablespoon of flour and chicken broth. Add lemon juice.
7) Simmer 5 minutes or until slightly thickened. Whisk in milk and butter. Toss together cooked pasta and sauce.
8) To serve, divide pasta among 4 plates. Top with turkey cutlets, drizzle with any extra sauce, and sprinkle with the fresh parsley. Garnish with lemon wedges, if desired.
