Cracked Pepper Philly Melt
Layers of melted Swiss cheese, thinly sliced deli turkey, bell peppers, sautéed onion and pepperoncini make up this flavorful melt. Ready in under 15 minutes, this recipe makes for an easy weeknight dinner. And this one uses thin sliced JENNIE-O® DELI FAVORITES® Oven Roast Turkey Breast

INGREDIENTS
1 tablespoon vegetable oil
1 cup sliced yellow onion
½ cup thinly sliced green bell peppers
½ cup thinly sliced red bell peppers
¼ cup pepperoncini peppers, drained and sliced
8 ounces JENNIE-O® DELI FAVORITES® Oven Roast Turkey Breast, from the service deli
¼ cup mayonnaise
4 hoagie buns, split and grilled
4 slices Swiss cheese, halved

DIRECTIONS
1) In skillet over medium-high, heat oil. Add onion and cook 5 minutes or until softened. Add peppers; cook until tender. Remove from heat and reserve.
2) Heat turkey in microwave 10 to 15 seconds or until hot. Spread mayonnaise on hoagie bottoms. Top with turkey, pepper mixture and cheese. Replace bun top.

Turkey Taco Salad
This is a Gluten Free Recipe

Looking for a lean twist on a classic Mexican salad? With this quick, simple recipe you can say yes to amazing taco flavors while also saying no to gluten. It’s low in carbs, too!

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
½ cup CHI-CHI’S® salsa
2 tablespoons red wine vinegar
1 tablespoon chili powder
1 (15-ounce) can kidney beans or garbanzo beans, rinsed and drained
4 cups shredded lettuce, divided
2 tomatoes, chopped
½ cup chopped bell pepper
6 tablespoons shredded Cheddar cheese
sour cream, if desired
1 avocado, sliced, if desired

DIRECTIONS
1) Cook turkey as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer. Stir in salsa, vinegar, chili powder and beans; cook until hot.
2) On 5 plates, layer lettuce, turkey mixture, tomatoes, bell pepper and cheese.
3) Serve with sour cream and avocado, if desired.

Stuffed Rio Grande Turkey Popper
You’ve never seen anything like this before: it’s a giant burger stuffed with jalapeños, crisp bacon and melted cheese that serves six. Perfect for a party or as a creative weeknight dinner.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
½ cup quick cooking oats
¼ cup egg substitute or 1 egg
1 teaspoon chili powder
½ teaspoon ground cumin
¼ teaspoon cayenne pepper
1 tablespoon dried onion
½ teaspoon garlic powder
⅛ teaspoon salt
1 (4-ounce) can sliced jalapeño peppers, drained
½ cup shredded Monterey jack cheese
4 slices JENNIE-O® Turkey Bacon, cooked and cut into ¼- pieces
2 teaspoons olive oil
sour cream and salsa, if desired

DIRECTIONS
1) In bowl, combine ground turkey, oats, egg, chili powder, cumin, cayenne pepper, onion, garlic powder and salt. Divide turkey mixture in half. On 2 (11 x 11-inch) pieces wax paper or parchment paper, shape each half into an 8-inch round patty.
2) Arrange half jalapeño peppers in a spoke pattern over one formed patty. Top with cheese and bacon leaving a ½-inch border around the outside edges. Lay remaining sliced jalapeño peppers in spoke pattern over cheese. Carefully place remaining patty on top of pepper slices. Remove waxed paper. Press turkey layers together around edges to seal.
3) In large skillet over medium heat, add oil and large patty. Cover. Cook 35 minutes, turning 2 or 3 times and until internal temperature reaches 165°F as measured by a meat thermometer. Always cook to well-done.
4) Cut burger into 6 pie-shaped wedges. Serve with sour cream and salsa, if desired.

Today’s Menu: 3 Bean Turkey Chili w/ Johnny Cakes

 

 

 

For Breakfast on this Monday morning I Poached an Egg and toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread that I lightly buttered with I Can’t Believe it’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. It’s quite a weather day out there today. When I got up this morning it was snowing. After Breakfast it was sleeting. Then by 11:00 it was freezing rain! So we’ve had it all today. We had a high of 38 degrees, which is the highest we’ve had in 3 weeks. They say 40’s tomorrow and 50’s by Wednesday, hope they have it right! It’s a good day to have some Slow Cooker 3 Bean Turkey Chili! So for Dinner tonight its 3 Bean Turkey Chili along with some Johnny Cakes.

I had the 3 Bean Chili in the freezer. So I sat a container of it in the fridge overnight to thaw. The Chili freezes and reheats so easy. I’ll have to make some more, it’s my last container! To reheat the Chili; I’ll use a small sauce pan, spray it with Pam Non Stick Cooking Spray, add the Chili to the pan, and heat slowly on medium low heat until heated through. The Chili is just as good as it was when it was made! To go with the Chili I made some Johnny Cakes. I love the combination of Chili and Cornbread! I’ve left the original post which gives the ingredients and directions on making the Chili. For Dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar.

 

When I prepare my Chili I prepare the Ground Turkey and mix the Beans the night before. So the morning I’m making it everything is ready! I had the Crock Pot set up also. To make the Chili I’m using Jennie -O Lean Extra Lean Ground Turkey Breast. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Black Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in a 1/2 a Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Seeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). What’s good about this recipe you can use your own favorite Spices and make your own tweaks to it and it turns out delicious.

 

The first thing I do is get the Crock Pot out and put in a Glad Crock Pot Liner. The Liners are incredible, just line your Crock Pot with one and spray it with Pam Cooking Spray. Now you are set to go. It makes for one easy clean up, just remove it when done and give the inside of your Crock Pot a quick wipe down and your clean up is done! On with the recipe.

 

 

 

 

The Beans and Ground Turkey were prepared last night. I started by opening all 3 cans of Bush Beans into a large bowl and stirred until mixed. Then in the morning, I added the Beans to Crock Pot. To prepare the Turkey, I started by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the Seasonings and Tomato Paste, stirring often. When the Turkey has browned I put it in a large plastic container and on into the fridge after it had cooled a bit. Then this morning I added everything to the Crock Pot. Throw in a 1/2 cup of Water, stirred twice, and put the lid on the Crock Pot and set on low for 5-6 hours.

 

Then sit back and enjoy the aroma, that usually starts after an hour or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans and Spices is a perfect match. Served it topped with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. Also a side of Johnny Cakes, recipe below.

 

 

 


To prepare the Johnny Cakes (I love these…) all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Light Virgin Olive Oil, 1 3/4 cups Low Fat Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. I love the combination of Chili and Cornbread!

 

 

3 Bean Turkey Chili
Ingredients
1 lb. package Jennie – O Extra Lean Ground Turkey Breast
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1/2 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
1/2 Tsp Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
2 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.

 

 

Johnny Cakes (My way)
Ingredients:

Pam w/ Olive Oil Non – Stick Spray
1/4 cup Extra Virgin Olive Oil

Roasted Applewood Smoke Flavor Turkey Breast Tenderloin w/ Mashed Potatoes……..

Today’s Menu: Blackberry Glazed Roasted Applewood Smoke Flavor Turkey Breast Tenderloin w/ Mashed Potatoes, Cut Green Beans, and French Bread

 

 

To start my morning off I prepared a Potato and Ham Skillet. I prepared a bag of the Simply Potatoes Steakhouse Seasoned Diced Potatoes. Midway through the cooking time I added a 1/2 bag of Meijer Brand Diced Ham. Also had a cup of Bigelow Decaf Green Tea. Its 3 below outside this morning and we had a high of 19 degrees. It’s supposed to be above freezing Sunday! If it is it’s our first day above freezing in 2 weeks, hope they are right. Caught up on some work around the house and that was about it for the day. For Dinner tonight I tried a new Jennie – O Product. I prepared a Blackberry Glazed Roasted Applewood Smoke Flavor Turkey Breast Tenderloin w/ Mashed Potatoes, Cut Green Beans, and French Bread.

 

I purchased the Jennie – O Applewood Smoke Flavor Turkey Breast Tenderloin from Meijer the other day. I had been wanting to try one of these for a while now and finally purchased one. It comes pre-seasoned and is 100 calories, 4 carbs, and 99% fat free. Besides this beautiful Tenderloin all I’ll need to prepare it is some McCormick Grinders of Sea Salt and Peppercorn Medley and Extra Light Olive Oil. To make the Blackberry Glaze I’ll need Smucker’s Sugarless Blackberry Jam, Red Wine Vinegar, Splenda Sugar, and Ground Cinnamon.

 

 

First I mixed my Blackberry Glaze and set it aside until ready to use. Ileft the recipe for this at the end of the post. To prepare the Tenderloin I’ll be baking it. Preheat the oven to 350°F. Next sprayed a shallow baking pan with Pam Non Stick Cooking Spray and add a tablespoon of the Extra Light Olive Oil to it. Then place the Tenderloins in the baking pan. With about 10 minutes of cooking time left I Glazed on of the Tenderloins. Bake until meat thermometer inserted into thickest portion of the meat reaches 165°F, approximately 62 minutes. Remove from the oven, cover and let rest 5-10 minutes before slicing.

 

 

 

Started slicing it and it’s so very tender and moist. It has a fantastic taste. The Applewood Smoke and combination of Spices it was marinated in was perfect! First time trying it and not the last! Good job Jennie- O. For the added Blackberry Glaze , it was perfect! It went with the Turkey like it was meant to be. I only Glazed 1 of the Tenderloins, I wasn’t sure Mom and Dad would like it. But they loved it and we ended up putting Glaze on the other Tenderloin also.

 

 

 

To go with the Turkey Tenderloin I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.

 

 

 

 

 

I also heated up a can of Del Monte Cut Green Beans. I also baked a loaf of Pillsbury French Loaf Bread.Wow, that was one delicious Dinner. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.
 

 

 

 

 

 

BLACKBERRY GLAZE
INGREDIENTS Nutrition
1⁄2 cup Smucker’s Sugarfree Blackberry Jam
2 tablespoons Red Wine Vinegar
1 tablespoon Splenda sugar substitute
1⁄4 teaspoon Ground Cinnamon

DIRECTIONS
Whisk Blackberry Jam, Red Wine Vinegar, Splenda, and Cinnamon,in small bowl until blended, set aside.

Preheat oven to 350°F. Place tenderloins in a shallow baking pan. Bake until meat thermometer inserted into thickest portion of the meat reaches 165°F, approximately 60-70 minutes. Remove from oven, cover and let rest 5-10 minutes before slicing.
SLOW COOKER:
Peel back and remove packaging. Place tenderloins (two in each packet) in slow cooker, add ½ cup water, and cover with lid. Cook according to chart below AND until internal temperature reaches 165°F. as measured by a meat thermometer. Remove and serve. Slow cookers may vary in cooking performance.* Always cook to an internal temperature of 165°F.

Mouth-Watering Turkey Patty Melts
The name says it all! Caramelized onions, melted cheese and lean turkey patties served on rye. At under 500 calories per serving, this is a lean burger favorite that the whole family will love.

INGREDIENTS
1½ tablespoons butter, divided
1 cup chopped onion
1 (16-ounce) package JENNIE-O® Lean Turkey Burger Patties
8 slices American or Cheddar cheese
8 slices rye or pumpernickel bread

DIRECTIONS
1) In skillet, melt 1 tablespoon butter over medium heat. Add onion and cook 5 to 10 minutes or until tender and golden brown, stirring occasionally.
2) Cook turkey patties as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer.
3) Place 1 cheese slice over each slice of bread. Add patties and top with onions. Close sandwiches with remaining bread, cheese side down. In skillet, melt 1 tablespoon butter. Cook sandwiches 3 minutes per side or until browned and cheese is melted.

Roast Pepper and Turkey Stroganoff
Who knew you could have comfort food without the guilt? This home cooked meal features a creamy garlic and wine sauce over lean turkey tenderloins and thick egg noodles—all for under 300 calories per serving!

INGREDIENTS
2 tablespoons vegetable oil, divided
1 (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin, cut into strips
8 ounces sliced mushrooms
4 garlic cloves, minced
½ cup dry white wine
1 cup low-sodium chicken broth
¼ cup tomato paste
2 roasted red peppers, cut into strips
¼ cup chopped fresh parsley
16 ounces thick egg noodles, cooked

DIRECTIONS
1) In large skillet, heat 1 tablespoon oil over medium-high heat. Cook tenderloins as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Remove from pan; keep warm.
2) Heat remaining oil in skillet. Add mushrooms and garlic; cook 5 minutes or until softened.
3) Add wine; simmer until reduced by half. Stir in broth, tomato paste and roasted peppers. Return all turkey to pan. Reduce heat to low and simmer 5 minutes. Cover and simmer for 10 minutes, stirring occasionally, until sauce is thickened.
4) Stir in parsley. Serve over hot cooked noodles.

Honey Kissed Turkey Sausage Biscuit
This kid-friendly breakfast treat is great for kids of any age. With a quick, easy-to-follow recipe and under 300 calories per serving, you can get the kids filled and out the door in no time!

INGREDIENTS
½ (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Patties
6 buttermilk biscuits
2½ tablespoons honey
DIRECTIONS
Cook sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer; set aside.
Split biscuits. Drizzle honey on sausage patty. Place patty on split biscuit.

This week’s Jennie – O Recipe of the Week is a – Turkey Schnitzel. Made using JENNIE-O® Extra Lean Turkey Breast Cutlets. Turkey Schnitzel

INGREDIENTS
2 egg whites
½ cup milk
5 tablespoons flour, divided
2 tablespoons grated Parmesan cheese
⅛ teaspoon ground nutmeg
1 tablespoon butter
1 (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets
2 tablespoons fresh lemon juice, if desired
¼ cup chicken broth, if desired

DIRECTIONS
1) Heat oven to 200ºF. In shallow dish or pie plate whisk together egg whites and milk. Add 2 tablespoons flour, cheese, pepper and nutmeg; mix well. Heat a large non-stick skillet over medium heat. Add butter and heat until butter sizzles.
2) Place remaining 3 tablespoons flour in plastic bag. Add 2 turkey cutlets at a time to bag; shake to coat. Dip into milk mixture, turning to coat and letting excess mixture drip off. Add turkey to skillet. Cook cutlets as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer.
3) Transfer to a heat-proof serving platter; keep warm in oven. Repeat with remaining turkey and butter. After all the turkey is cooked, add fresh lemon juice and chicken broth, if desired to skillet; boil 1 to 2 minutes, stirring constantly and pour over the turkey.
* Always cook to an internal temperature of 165°F.

This one is made again using the JENNIE-O® Extra Lean Turkey Breast Cutlets along with toppings of Green Peppers, Chopped Jalapeño, Picante Sauce, Diced Tomato, Seasoning, Crumbled Queso Fresco Cheese, and served on a Soft Flour Tortillas. 2018 is going to be a good year so start it off right by eating healthy. Chunky Santa Fe Turkey Tacos
Spice up weeknight dinner with the savory flavors of Santa Fe Tex-Mex. This taco recipe takes just 30 minutes to make and features an irresistible combination of sautéed peppers and lean turkey.

INGREDIENTS
1 (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets
1 tablespoon chili powder
1 tablespoon vegetable oil
1 diced yellow or green pepper
1 teaspoon ground cumin
2 teaspoons minced garlic
2 tablespoons finely chopped jalapeño
¼ cup picante sauce
1 large tomato, diced
¼ cup chopped fresh cilantro
16 soft flour tortillas
2 cups crumbled queso fresco cheese or shredded Mexican cheese

DIRECTIONS
1) Cut turkey into ½-inch thick strips; toss with chili powder.
2) Heat vegetable oil in skillet over medium-high heat. Add turkey, yellow pepper, cumin, garlic and jalapeño. Cook turkey according to package directions. Always cook to well-done, 165ºF as measured by a meat thermometer.
3) Add picante sauce. Cook, 3 minutes, stirring occasionally. Stir in tomato and cilantro. Cook 1 to 2 minutes or until hot. Spoon mixture into tortillas; sprinkle with cheese.
* Always cook to an internal temperature of 165°F.
