Today’s Menu: Thanksgiving Leftovers

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. It started off Cool and cloudy but the sun came out later and a high of 57 degrees. Got the cart out of the shed and did a little yard work and got Mom’s Christmas Decorations out of the shed for her. Put out a couple of things outside and then gave a neighbor a hand and put up some lights on his shrubs. It’s Thanksgiving Leftovers for Dinner tonight. I’ve left part of the post from yesterday for item descriptions. Enjoy and take care everyone!

 

Our Food lineup for today is – a baked Jennie – O Turkey Breast, Stuffing, Cranberry Sauce, Bob Evans Mashed Potatoes, a jar of canned Green Beans, Sweet Potato Casserole, Deviled Eggs, Hawaiian Rolls, and Heinz Brown Gravy. For Dessert Mom made an Apple Pie made with Splenda. I hope all of you had a great Thanksgiving. Grilled Turkey and Swiss Sandwich
This delicious Grilled Turkey and Swiss Sandwich (the grown-up version of a grilled cheese) is ready in just 15 minutes. Your entire family will love the layers of melted cheese, oven roasted deli turkey and flavorful mustard spread in this sandwich.

Ingredients
1½ tablespoons mustard
1½ tablespoons reduced-calorie salad dressing
½ teaspoon dried tarragon leaves
8 slices sourdough bread
8 ounces sliced JENNIE-O® Original Oven Roasted Slicing and Shaving Turkey Breast, from the service deli
8 slices reduced-calorie Swiss cheese
2 tablespoons butter

Directions
1) In small bowl, combine mustard, dressing and tarragon.

2) Spread bread slice with mustard mixture. Layer 4 slices of bread with turkey and cheese. Top with remaining bread slices.

3) In skillet, melt butter over medium heat.

4) Cook sandwiches 3 minutes per side or until golden brown and cheese is melted.

Waffled Stuffing Turkey Sandwich

Total Time 20 minutes
Serving Size Makes 2 Servings

Ingredients
2 cups leftover stuffing

1 egg

1/2 cup chicken broth

Non-stick cooking spray, as needed

1/2 cup leftover mashed potatoes, warmed

4 ounces leftover JENNIE-O® turkey, warmed

6-8 leftover steamed green beans, if desired

2 tablespoons cranberry sauce

1/2 cup turkey gravy, warmed

Directions
1) In large bowl, combine stuffing, egg and chicken broth until stuffing is moistened. Prepare 4-waffle iron for medium heat. Spray with non-stick cooking spray. Distribute stuffing evenly into prepared waffle iron. Cook waffles 10 minutes or until crisped and browned or according to manufacturer’s instructions.

2) Spread mashed potatoes on 2 waffles. Divide turkey, beans and cranberry sauce on top of each. Drizzle with gravy. Top with remaining waffles.

Colorful Turkey Stuffed Peppers
If you’re craving stuffed peppers, this Colorful Turkey Stuffed Peppers recipe is for you. Extra lean ground turkey and cheese make this dish irresistible. You can also make it using our lean mild turkey breakfast sausage roll for another delicious option.

Ingredients
2 bell peppers, preferably a mix of yellow, green or red
½ (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
¼ cup chopped onion
2 cloves garlic, minced
1 tablespoon fresh basil or 1 teaspoon dried basil leaves
¼ teaspoon salt, if desired
¼ teaspoon freshly ground black pepper
1 (14½-ounce) can low-sodium diced tomatoes or seasoned diced tomatoes, drained
½ cup cooked white or brown rice
¾ cup shredded low-fat Cheddar cheese, divided
paprika, if desired
fresh parsley, if desired

Total Time 1 Hour
Serving Size 4 Servings

Directions

1) Heat oven to 375°F.

2) Cut bell peppers lengthwise through stems keeping stem halves intact to hold stuffing.

3) Discard seeds and veins.

4) Cook peppers in boiling salted water 5 to 6 minutes or until crisp-tender.

5) Drain and immediately place peppers in ice water to stop cooking process.

6) Drain peppers well and place cut side up in 8 x 8-inch baking dish.

7) Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

8) Add onion, garlic, basil, salt, if desired, ground pepper, tomatoes, and rice; continue to cook 5 to 6 minutes or until heated through and most of the juices have reduced.

9) Remove meat mixture from heat and stir in ½ cup cheese.

10) Mound heaping ½ cup of mixture into each pepper half.

11) Bake 20 minutes or until filling is hot and peppers are tender.

12) Remove peppers from oven and sprinkle remaining ¼ cup cheese on top of peppers.

13) Sprinkle with paprika and parsley, if desired.

* Always cook to an internal temperature of 165°F.

Thanksgiving Turkey Pie

Take Thanksgiving leftovers from blah to brilliant in less than 15 minutes of prep. Using your leftover stuffing, this fun, kid-friendly savory pie recipe will have the whole family gobble-gobbling all over again.

INGREDIENTS

2½ cups prepared stuffing
1½ cups cubed JENNIE-O® Extra Lean Oven Roasted Turkey Breast
¼ cup chopped onion
1 cup shredded low-fat Swiss cheese
¾ cup milk
1 cup egg substitute or 4 eggs
2 teaspoons mustard
¼ teaspoon pepper
garnish with chopped parsley, if desired

DIRECTIONS

1) Heat oven to 350°F. Spray 9-inch pie plate with cooking spray. Press stuffing in pie plate to form pie crust.

2) Add turkey to crust. Sprinkle with onion and cheese.

3) In small bowl, whisk milk, eggs, mustard and pepper. Pour into pie crust. Bake 35 to 40 minutes or until set.

4) Garnish with chopped parsley, if desired.

Today’s Menu: 3 Bean Turkey Chili w/ Cornbread

 

 

To start this morning off I prepared a cup of Bigelow Decaf Green Tea for Breakfast. 34 degrees to start the day and had a high of 44 degrees and windy out again. After my Tea I did a load of laundry. Then got my Chili in the Slow Cooker and cooking. Then I headed out to Meijer for a few items we needed. Stopped by the ATM and then got gas before heading home. Just did a few things around the house. What a better way than Chili to heat up a cold day! For Dinner tonight its my 3 Bean Turkey Chili w/ Cornbread.

 

 

I love making a batch of my 2 Bean Turkey Chili! To make my Chili I’m using Jennie -O Lean Ground Turkey, 2 – 1lb. packages. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Black Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Seeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans),4 Cloves Minced Garlic, 2 tsp Ground Anchio Chile Pepper, 2 tsp Ground Paprika, 1 Tbs. Ground Chile Seasoning, 2 Tbs. Ground Roasted Cumin, 1 tsp Ground Cinnamon, 1 tbsp of Cilantro Leaves and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). What’s good about this recipe you can use your own favorite Spices and make your own tweaks to it.

 

 

First thing I do is get the Crock Pot out and put in a Glad Crock Pot Liner. The Liners are incredible, just line your Crock Pot with one and spray it with Pam Cooking Spray. Now you are set to go. It makes for one easy clean up, just remove it when done and give the inside of your Crock Pot a quick wipe down and your clean up is done! On with the recipe.

 

 

I prepared the Beans and Ground Turkey last night. To prepare the Turkey, I started by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the Seasonings and Tomato Paste, stirring often. When the Turkey has browned I put it in a large plastic container and on into the fridge after it had cooled a bit. Next I opened all 3 cans of Bush Beans into a large bowl and stirred until mixed. Stored them in a bowl and in the fridge also.

 

 

Then this morning I sat the prepared Beans and Turkey out of the fridge to warm up a bit. Next I turned the Slow Cooker on Low, sprayed the cooker liner with Pam Non Stick Spray, and added a 1/2 cup of Water to it. Let heat for about 20 minutes and I added everything to the Crock Pot. I’ll be cooking my Chili for 6 – 7 hours. Then sit back and enjoy the aroma, that usually starts after a couple of hours or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans and Spices is a perfect match. Served it topped with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. I’ll be using the Leftover Chili in a couple of different ways for meals , can’t wait! Chili is even better after sitting in the fridge for a day! I also prepared a small Cast Iron Skillet of Cornbread. For the Corn Bread I’m using Martha White White Corn Meal. The Cornbread goes perfect with Chili! Then for Dessert later a Jello Sugar Free Dark Cherry Jello.

 

 

 

 

 

 

 

 

3 Bean Turkey Chili

Ingredients
2 – 1 lb. package Jennie – O Extra Lean Ground Turkey Breast
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1/2 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
4 Cloves Minced Garlic
2 Tsps Ground Anchio Chile Pepper
2 Tsps Ground Paprika
1 Tbs. Ground Chile Seasoning
2 Tbs. Ground Roasted Cumin
1 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I like to use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.

Chile Rellenos Casserole
This casserole is great because it’s prepped in 20 minutes, and extremely delicious. Try this Chile Rellenos Casserole recipe for dinner tonight!

INGREDIENTS

6 Anaheim green chilies
6 ounces JENNIE-O® Lean Hot Italian Turkey Sausage
1 cup shredded sharp Cheddar cheese
2 eggs or ½ cup egg substitute
¾ cup milk
⅔ cup flour
½ teaspoon salt
1 (10-ounce) can diced tomatoes and green chilies
2 tablespoons chopped fresh cilantro
1 teaspoon minced garlic
½ teaspoon dried oregano leaves
¼ teaspoon coarsely ground pepper
chopped fresh cilantro
sour cream

DIRECTIONS

1) Heat oven to 400°F.

2) Line baking sheet with foil.

3) Place chilies on baking sheet.

4) Broil 6 inches from heat source 10 minutes or until chilies are blackened and blistered, turning frequently.

5) Place blackened chilies in bowl and seal with plastic wrap. Let stand 15 minutes. Remove outer skin.

6) Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat.

7) Place dinner sausage in hot skillet. Cook uncovered, turning occasionally, 17-19 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer. Cut into bite size pieces.

8) Cut slit in each chili lengthwise down one side.

9) Fill each chili with sausage and cheese.

10) Place cut-side-down in greased 8x8x2-inch baking dish.

11) In large bowl, beat together eggs, milk, flour and salt. Pour egg mixture over chilies. Bake 25 to 30 minutes or until golden brown.

12) In small saucepan, combine diced tomatoes and green chilies, cilantro, garlic, oregano and pepper. Bring to a boil. Cook 5 minutes, stirring occasionally. Spoon sauce over chilies.

13) Serve with chopped fresh cilantro and sour cream.
* Always cook to an internal temperature of 165°F.

Today’s Menu: Sharp Cheddar and Bacon Turkey Burger w/ Baked Fries

 

 

For Breakfast this morning I toasted a Thomas Light English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Also had my morning cup of Bigelow Decaf Green Tea. Partly cloudy and 59 degrees, a bit cooler today after all the rain overnight. We had leaves and tree branches all over the deck and yard from the wind and rain from last night. So I grabbed the rake, leaf blower, and my cart out of the shed and cleaned the yard and deck. Such a pain trying to get stuff done while in a wheelchair or mobility cart sometimes. But thankful I’m able to get things done! For Dinner tonight its a Sharp Cheddar and Chicken Bacon Turkey Burger w/ Baked Fries.

 

So I started by getting a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need 2 slices but fried 5 slices. Always remember when frying Bacon use the Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

 

I had bought a package of the Jennie – O Lean 93% Lean Turkey Burger Patties at Meijer and had them in the freezer. I grabbed a couple of them last night and let it thaw in the fridge overnight. To prepare the Burger I grabbed a skillet sprayed it the Pam and added 2 teaspoons of Extra Light Olive Oil, heated it on medium heat. When ready I added the Turkey Burger and cooked it for 14 minutes flipping it several times. With a minute of cooking time left I added a slice of Kraft Deli Deluxe Sharp Cheddar Cheese. And done!

 

 

Added the Bacon, Lettuce, some Hellman’s Spicy Chipotle Mayonnaise and served it on a Healthy Life Wheat Bun. Just love these Burgers, juicy and delicious, and with the Sharp Cheddar and Bacon it makes it that much better! I love this Mayo, you have to try it! I tried the Hellman’s Spicy Chipotle Mayonnaise on the last Turkey Burger and loved it! It’s nice and Creamy with excellent flavor and a nice little kick to it!

 

 

I also baked some Ore Ida Crinkle Cut Fries. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert later a Diet Peach Snapple to drink.

 

 

 

 

 

 

 

 

 

 

Jennie – O Lean Turkey Burger Patties

CONSUMER GAS GRILL:
TO GRILL:
Spray grill rack with nonstick cooking spray. Preheat grill over medium-high heat. Place burger patties on grill rack 4 inches from heat source. Grill approximately 15 to 17 minutes turning occasionally (2-3 times). Always cook to well-done, 165°F. as measured by a meat thermometer.
CONSUMER STOVETOP SKILLET:
STOVETOP:
Spray skillet with nonstick cooking spray or add 1 to 2 teaspoons of oil. Preheat skillet over medium heat. Place burger patties in hot skillet. Cook approximately 15 to 17 minutes turning occasionally (2-3 times). Always cook to well-done, 165°F. as measured by a meat thermometer.
* Always cook to an internal temperature of 165°F.
