Today’s Menu: Sweet Italian Turkey Sausage w/ Baked Fries

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Cool morning out there this morning , 39 degrees with a cool wind. We had a high of 67 degrees and sunny, very windy out though. Not a thing going on today. Mom feels a lot better today. For me I was a slug all day! Did some work on the computer and then caught up with shows I had recorded. For Dinner tonight it’s Sweet Italian Turkey Sausage w/ Baked Fries.

 

I used one of my favorites, the healthy and delicious Jennie O Lean Sweet Italian Turkey Sausages. I bought a package of them at Meijer the other day. I prepared a few of them for our Dinner tonight. I pan fried them, using Pam w/ Olive Oil Cooking Spray and no oil needed. Heated the pan on medium and cooked a total of about 14 minutes, turning the Sausages occasionally. They fry up plump and brown, as always Jennie – O Products always have that fresh taste to them. The Sausages have 160 calories and 0 carbs per Sausage. I served them on Aunt Millie’s Live Carb Smart Hot Dog Buns and topped with French’s Spicy Brown Mustard. Love these!

 

I also baked some Ore Ida Crinkle Cut Fries. Served them with a side of Hunt’s Ketchup for dipping. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with Diet Dr. Pepper to drink.

Turkey Taco Pizza Pie
This delicious Mexican dinner recipe is as fun to eat as it is to say. Turkey Taco Pizza Pie! Made with lean ground turkey, fresh peppers and cornbread, the kids will be saying it for days to come.
Total Time – 1 Hour
Serving Size – 6 Servings

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 onion, chopped
1 small green bell pepper, chopped
1 (14-ounce) can diced tomatoes
1 (14-ounce) can whole kernel corn, drained
1 (6-ounce) can ripe olives, sliced
1 cup salsa
1 (8-ounce) package cornbread muffin mix
2 cups shredded taco cheese, divided
shredded lettuce, sour cream and taco sauce, if desired

DIRECTIONS
1) Heat oven to 400°F.
2) Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.
3) Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.
4) Add onion, green pepper, tomatoes, corn, olives and salsa. Bring to boil, stirring occasionally. Cover and simmer 15 to 20 minutes. Meanwhile, prepare cornbread muffin mix as specified on package. Spread batter into greased deep dish pizza pan. Bake 8 to 10 minutes or until lightly browned.
5) Remove cornbread from oven, sprinkle with 1 cup cheese. Spread turkey mixture on top of cheese, then top turkey mixture with remaining 1 cup of cheese.
6) Bake 4 to 5 minutes or until cheese is melted.
7) Serve with shredded lettuce, sour cream and taco sauce, if desired.
* Always cook to an internal temperature of 165°F.

Baked Turkey Rigatoni
When it comes to casseroles, you really can’t beat Baked Turkey Rigatoni. Especially when you Make the Switch® to lean turkey — then you get a big, tasty Italian meal at under 500 calories per serving!

Total Time – 1 Hour
Serving Size – 8 Servings

Ingredients
1 – (16-ounce) package rigatoni pasta
1 – (16-ounce) package JENNIE-O® Lean Ground Turkey
1 – cup diced onion
2 – (26-ounce) jars spaghetti sauce
1 – cup fat-free sour cream
6 – slices provolone cheese
1 – cup shredded mozzarella cheese
2 – tablespoons finely grated Parmesan cheese

Directions
1) Heat oven to 350°F.
2) Bring large pot of lightly salted water to boil. Add pasta and cook 12 minutes or until al dente; drain. Return to same pan.
3) Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.
4) Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F as measured by a meat thermometer. Add onion and sauce; simmer 15 minutes or until sauce is thickened and onion is soft.
5) Mist a 9 x 13-inch baking dish with cooking spray. Add turkey mixture and sour cream to pasta. Stir to combine. Spread turkey mixture in pan. Top with provolone cheese.
6) Sprinkle with mozzarella and Parmesan cheese.
7) Bake 30 minutes or until cheese is melted and browned.
8) Garnish with additional Parmesan cheese, if desired.

Cincinnati Style 3-Way Turkey Chili

1 teaspoon hot pepper sauce
1 pound spaghetti noodles, cook according to package directions
shredded Cheddar cheese, if desired

1) Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.
2) Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.
3) Add onion, garlic, chili powder, cinnamon, paprika, allspice, cloves, brown sugar and cocoa powder; stir and cook 2 minutes.
4) Add broth, tomato sauce, tomatoes, water, vinegar and hot pepper sauce. Stir until blended.
5) Bring sauce to a boil. Reduce heat and simmer. Simmer 15 minutes or until sauce thickens.
6) To serve, add cooked noodles to bowl. Ladle sauce over spaghetti. Sprinkle with cheese, if desired.

Today’s Menu: Sharp Cheddar and Bacon Turkey Burger w/ Baked Fries

 

 

For Breakfast I had my morning cup of Bigelow Decaf Green Tea. We had a lot of rain and thunder storms overnight but it gradually cleared as the morning went on. We had a high of 73 degrees and cloudy, a bit humid out also. Went to Meijer for a few items for Mom but Meijer shelves were bare in a lot of items. I’ll have to start hitting Walmart and Kroger for a while. Back home I got my cart and rake out of the shed and raked some leaves. I’m trying to stay ahead of them by raking when I can. The house across the street from us has a huge tree in their front yard and when that starts shedding it leaves it covers the whole street. So just trying to stay ahead of it. For Dinner tonight its a Sharp Cheddar and Chicken Bacon Turkey Burger w/ Baked Fries.

 

Mom Loves the Big Loaded Up Turkey Burgers! So I started by getting a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need 2 slices but fried 5 slices. Always remember when frying Bacon use the Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

 

I had bought a package of the Jennie – O Lean 93% Lean Turkey Burger Patties at Meijer and had them in the freezer. I grabbed a couple of them last night and let it thaw in the fridge overnight. To prepare the Burger I grabbed a skillet, sprayed it with Pam and added 2 teaspoons of Extra Light Olive Oil, heated it on medium heat. When ready I added the Turkey Burger and cooked it for 12 minutes flipping it 3 times. With a minute of cooking time left I added a slice of Kraft Deli Deluxe Sharp Cheddar Cheese. And done!

 

Added the Bacon, Lettuce, some Hellman’s Spicy Chipotle Mayonnaise (my favorite Mayo) and served it on a Aunt Millie’s Live Carb Smart Hamburger Bun. Just love these Burgers, juicy and delicious, and with the Sharp Cheddar and Bacon it makes it that much better! I love this Mayo. The Hellman’s Spicy Chipotle Mayonnaise is nice and creamy with excellent flavor, with a little kick to it!

 

 

I also baked some Ore Ida Crinkle Cut Fries. I baked them for 20 minutes and done. Served them with a side of Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

3) Heat slices of bacon for 6-7 minutes or until desired crispness, turning frequently. For crispier bacon; Lightly spray skillet with nonstick cooking spray before heating bacon.

4) Cut focaccia horizontally in half then into wedges. Layer lettuce, tomato, cheese, turkey, bacon and parmesan dressing onto each bottom focaccia wedge.

5) Cover with top wedge.

Today’s Menu: 3 Bean Turkey Chili w/ Cornbread

 

 

To start this morning off I toasted a couple of slices of Aunt Millie’s Live Carb Smart Wheat Bread and topped with them I can’t Believe It’s Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. We have a high of 66 degrees with light rain showers on and off all day. Did a load of laundry and cleaned the house today, dusted and ran the vacuum. What a better way than Chili to Celebrate the Autumn Season! For Dinner tonight it’s my 3 Bean Turkey Chili w/ Cornbread.

 

I love making a batch of my 3 Bean Turkey Chili! To make my Chili I’m using Jennie -O Lean Ground Turkey, 2 – 1lb. packages. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Black Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, a tablespoon of Jif Creamy Peanut Butter, 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Seeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans),4 Cloves Minced Garlic, 2 tsp Ground Anchio Chile Pepper, 2 tsp Ground Paprika, 1 Tbs. Ground Chile Seasoning, 2 Tbs. Ground Roasted Cumin, 1 tsp Ground Cinnamon, 1 Tbsp of Cilantro Leaves and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). What’s good about this recipe you can use your own favorite Spices and make your own tweaks to it.

 

First thing I do is get the Crock Pot out and put in a Glad Crock Pot Liner. The Liners are incredible, just line your Crock Pot with one and spray it with Pam Cooking Spray. Now you are set to go. It makes for one easy clean up, just remove it when done and give the inside of your Crock Pot a quick wipe down and your clean up is done! On with the recipe.

 

 

I prepared the Ground Turkey and Bean Mix last night and had it in the fridge. To prepare the Turkey, I started by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the Seasonings and Tomato Paste, stirring often. When the Turkey has browned I put it aside and mixed my Beans. I opened all 3 cans of Bush Beans into a large bowl and stirred until mixed.

 

This morning I turned the Slow Cooker on Low, sprayed the cooker liner with Pam Non Stick Spray, and added a 1/2 cup of Water to it. Let heat for about 20 minutes and I added everything to the Crock Pot. I’ll be cooking my Chili for 6 – 7 hours. Then sit back and enjoy the aroma, that usually starts after a couple of hours or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans and Spices is a perfect match. Served it topped with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. I’ll be using the Leftover Chili in a couple of different ways for meals , can’t wait! Chili is even better after sitting in the fridge for a day! I also prepared a small Cast Iron Skillet of Cornbread. For the Corn Bread I’m using Martha White White Corn Meal. The Cornbread goes perfect with Chili! Then for Dessert/Snack later some Reduced Fat Triscuits topped with Philadelphia Light Cream Cheese with a Diet Dr. Pepper to drink.

 

 

 

 

 

 

3 Bean Turkey Chili
Ingredients
2 – 1 lb. package Jennie – O Extra Lean Ground Turkey Breast
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1/2 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
4 Cloves Minced Garlic
2 Tsps Ground Anchio Chile Pepper
2 Tsps Ground Paprika
1 Tbs. Ground Chile Seasoning
2 Tbs. Ground Roasted Cumin
1 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I like to use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.

Turkey Vegetable Stew
Stew is more than just a thick soup — it’s special. Especially this one. Aromatic, savory and packed to the brim with veggies, this hearty stew makes a great weeknight dinner at under 300 calories per serving.

Total Time – 1 Hour 15 Minutes
Serving Size – 8 Servings

INGREDIENTS
1 (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins
½ cup all-purpose flour
1 tablespoon vegetable oil
2 cups sliced fresh mushrooms
1 cup chopped carrots
1 cup chopped onion
½ cup chopped celery
4 minced garlic cloves, divided
1 cup dry white wine
¼ cup tomato paste
1 tablespoon chopped fresh rosemary
¼ cup chopped fresh Italian parsley
1 teaspoon finely grated lemon zest

DIRECTIONS
1) Cube turkey tenderloin and toss in flour. In large saucepan, heat oil over medium-high heat.
2) Spray a skillet with nonstick cooking spray or add 1 to 2 teaspoons oil. Heat skillet over medium-high heat.
3) Place tenderloins in hot skillet. Brown on both sides. Add 1/3 cup water. Reduce heat to medium-low. Cook, covered, 35 to 40 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.
4) Add mushrooms, carrots, onion, celery and 2 garlic cloves. Cook 5 minutes or until vegetables are softened, stirring occasionally. Add wine, tomato paste and rosemary. Bring to boil. Reduce heat to medium-low.
5) Simmer, covered, 25 minutes or until vegetables are tender, stirring occasionally.
6) Simmer, uncovered, 5 minutes or until thickened.
7) In small bowl combine parsley, remaining 2 garlic cloves and lemon zest. Sprinkle over turkey stew.
* Always cook to an internal temperature of 165°F.
