Turkey Tenderloin with Grilled Corn-Mango Salsa
Sometimes the right salsa can make all the difference in the world. This grilled corn mango salsa puts a colorful, tropical spin on our seasoned turkey tenderloin. The juxtaposition will leave your guests with jaws dropped – in a good way!

INGREDIENTS
2 cups grilled corn kernels
1 mango, chopped
½ cup diced red bell pepper
1 jalapeño, seeded and diced
¼ cup thinly sliced red onion
2 tablespoons chopped fresh cilantro leaves
2 tablespoons fresh lime juice
1 tablespoon olive oil
¼ teaspoon kosher salt
1 (24-ounce) package JENNIE-O® Turkey Breast Tenderloin
1 teaspoon seasoned pepper
fresh cilantro leaves

DIRECTIONS
1) In medium bowl, combine corn, mango, red bell pepper, jalapeño, onion, cilantro, lime juice, olive oil and salt. Set aside.
2) Sprinkle turkey tenderloin with seasoned pepper. Cook turkey tenderloin as specified on package. Always cook to well-done, 165°F as measured by a meat thermometer. Let stand 10 minutes. Slice and top with corn mixture.
3) Garnish with cilantro leaves, if desired.
* Always cook to an internal temperature of 165°F.

Easy Greek Turkey Pitas
Ready in under 15 minutes these delicious pita sandwiches are perfect for a quick snack, lunch or weeknight dinner. Made with fresh deli turkey, crumbled feta, crunchy cabbage and mint, they’re sure to go fast.

INGREDIENTS
4 (6-inch) whole wheat pita bread pockets
½ pound JENNIE-O® Mesquite Smoked Turkey Breast from the service deli, sliced
8 tablespoons shredded cabbage
8 tablespoons crumbled feta cheese
8 tablespoons three-bean salad
8 tablespoons plain yogurt
2 tablespoons chopped fresh mint or basil

DIRECTIONS
1) Halve pita bread pockets and open. Roll turkey breast and place in each pocket. Evenly divide among pockets cabbage, feta cheese, three-bean salad and yogurt among pita pockets. Top with fresh mint.

Tropical Turkey Salad
This is a Gluten Free Recipe.

A taste of the tropics, right in your salad bowl. Enjoy fresh lime and pomegranate juice drizzled over avocado, julienned jicama and grilled turkey tenderloins. This recipe has gluten free.

INGREDIENTS
3 tablespoons pomegranate juice
3 tablespoons lime juice
1 packet sugar substitute
¼ teaspoon jerk seasoning blend
1 tablespoon olive oil
1 (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin
1½ cups julienned jicama
1 ripe avocado, pitted
1 small red onion, cut into thin wedges
8 cups mixed salad greens
cilantro sprigs, if desired

DIRECTIONS
1) In small bowl, combine pomegranate juice, lime juice, sugar, seasoning and oil; whisk until well combined. Set aside.
2) Grill turkey according to package directions. Always cook to well-done, 165°F as measured by a meat thermometer. Cut into strips.
3) In large bowl, combine jicama, avocado, turkey, onion, salad greens and dressing. Toss to combine. Garnish with cilantro, if desired.

Hearty Turkey Tuscan Soup
Take your taste buds to Tuscany with this savory Italian soup recipe. Simmer garlic, potatoes, fresh baby spinach and lean turkey Kielbasa together for a perfect comfort food that’s ready in 60 minutes.

INGREDIENTS
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
¼ teaspoon crushed red pepper flakes
5 cups diced peeled potatoes
6 cups water
3 tablespoons reduced sodium chicken bouillon granules
1 (12-ounce) package JENNIE-O® Lean Turkey Kielbasa, halved lengthwise and cut into ½ -inch half-moons
1 cup fresh baby spinach, coarsely chopped

DIRECTIONS
1) In Dutch oven or large pot, heat olive oil over medium heat. Add onion. Cook 5 minutes, stirring frequently. Add garlic and red pepper flakes. Cook 1 minute. Add potatoes, water and bouillon. Bring to a boil. Reduce heat to low and simmer 10 to 15 minutes or until potatoes are tender.
2) Working in batches, if necessary, transfer half the soup to a blender. Puree. Return to pot. Add kielbasa and spinach. Simmer 5 minutes or until thoroughly heated.

Southwestern Turkey-Sweet Potato Breakfast Hash

INGREDIENTS
1 tablespoon olive oil
1 (1-pound) package JENNIE-O® All Natural* Turkey Sausage
1 small onion, chopped
1 medium sweet potato, peeled and chopped
1 small red bell pepper, chopped
1 small green bell pepper, chopped
1 jalapeño, seeded and sliced
1 teaspoon ground chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon kosher salt, if desired
6 medium eggs, if desired
¼ cup chopped fresh cilantro leaves

DIRECTIONS
1)Heat oven to 400°F.
2) In large cast-iron skillet, heat oil over medium heat. Cook turkey sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer; crumble. Add onion and sweet potato and cook 5 minutes. Stir in bell peppers, jalapeño, chili powder, cumin, paprika and salt, if desired. Make 6 wells and pour eggs into wells, if desired. Remove from heat.
3) Bake 20 minutes or until egg whites are set and yolk is cooked to desired degree of doneness. Sprinkle with cilantro.
* Always cook to an internal temperature of 165°F.

Southwest Pesto Turkey Burgers
Avocado? Salsa? PEPPER JACK CHEESE? These are the makings of an epic burger. The addition of cilantro pesto cinches it. Get ready for a tasty southwestern weeknight dinner that’s ready in under 30 minutes.

INGREDIENTS
1 (19-ounce) package JENNIE-O® Lean Seasoned Turkey Burger Patties
4 slices pepper jack cheese
2 tablespoons mayonnaise
1 tablespoon prepared cilantro pesto
4 Kaiser rolls, split
1 ripe avocado, peeled and sliced
4 tablespoons CHI-CHI’S® salsa, divided

DIRECTIONS
1) Cook turkey patties as specified on the package. Always cook to well-done,165°F. as measured by a meat thermometer. Add cheese to patties during last minute of cooking.
2) While patties are cooking, combine mayonnaise and cilantro pesto in small bowl; mix well. Top cooked patties with mayonnaise mixture. Serve on rolls with avocado and salsa.
* Always cook to an internal temperature of 165°F.

3 Bean Turkey Chili w/ Johnny Cakes

Today’s Menu: 3 Bean Turkey Chili w/ Johnny Cakes

 

 

For Breakfast this morning I fried up some of the Baked Ham I had prepared yesterday. Then I also fried up an Egg Sunnyside Up, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Mostly sunny and 48 degrees and not quite as windy. The winds yesterday were strong and down right freezing! Mom wanted to go to Jungle Jim’s International Market, which I’m always ready to go to! The most incredible Market that I’ve ever seen or been to. The Deli, Meat, Produce, and Seafood Departments are 2nd to none. Love shopping there. Back home I put everything away. Then after Lunch we went up to spend the afternoon with Dad. So I’m making my 3 Bean Turkey Chili for Dinner! I prepared the Turkey and mixed the Beans last night. So this morning I already had the Crock Pot set up and ready along having the Turkey and Beans. So its my 3 Bean Turkey Chili and I made some Johnny Cakes for Dinner tonight.

 

To make my Chili I’m using Jennie -O Lean Ground Turkey. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Black Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Seeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans), 1/2 Tsp Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). What’s good about this recipe you can use your own favorite Spices and make your own tweaks to it and it turns out delicious.

 

First thing I do is get the Crock Pot out and put in a Glad Crock Pot Liner. The Liners are incredible, just line your Crock Pot with one and spray it with Pam Cooking Spray. Now you are set to go. It makes for one easy clean up, just remove it when done and give the inside of your Crock Pot a quick wipe down and your clean up is done! On with the recipe.

 

 

 

I prepared the Beans and Ground Turkey last night. To prepare the Turkey, I started by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the Seasonings and Tomato Paste, stirring often. When the Turkey has browned I put it in a large plastic container and on into the fridge after it had cooled a bit. Next I opened all 3 cans of Bush Beans into a large bowl and stirred until mixed. Stored them in a bowl and in the fridge also. Then this morning I added everything to the Crock Pot. I also added a 1/2 cup of Water, stirred twice, and put the lid on the Crock Pot and set on low for 5-6 hours. The full recipe and list of ingredients is at the end of the post.

 

 

 

Then sit back and enjoy the aroma, that usually starts after an hour or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans and Spices is a perfect match. Served it topped with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. Also a side of Johnny Cakes, recipe below.

 

 

To prepare the Johnny Cakes (I love these…) all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Light Virgin Olive Oil, 1 3/4 cups Low Fat Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. The Cornbread works perfect with Chili! I had a Diet Peach Snapple to go with my Dinner. I took some of the Johnny Cakes and 3 Bean Turkey Chili over to Dad at the rehab center, which he loved. For Dessrt tonight a bowl of Breyer’s Low Carb Vanilla Bean Ice Cream.

 

3 Bean Turkey Chili
Ingredients
1 lb. package Jennie – O Extra Lean Ground Turkey Breast
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1/2 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
1/2 Tsp Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
2 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.

 

 

Johnny Cakes (My way)

Ingredients:

Pam w/ Olive Oil Non – Stick Spray
1/4 cup Extra Virgin Olive Oil
1 3/4 cups Buttermilk

Turkey Mac and Cheese

INGREDIENTS
2 cups uncooked macaroni
1 (12-ounce) package JENNIE-O® Turkey Franks, cut into ½-inch pieces
2 tablespoons butter
2 tablespoons flour
2 cups milk
1½ cups shredded fat-free Cheddar cheese

DIRECTIONS
1) Cook macaroni as specified on the package or until al dente; drain.
2) Heat skillet over medium heat. Add turkey franks. Cook 5 minutes or until browned, stirring occasionally; remove from pan. In same pan over medium heat, melt butter. Add flour; stir 1 minute.
3) Gradually whisk in milk. Whisk to remove any lumps. Cook 5 minutes or until thickened, stirring occasionally. Add cheese. Stir until cheese is melted. Add macaroni and turkey franks; stir to combine.

1) Prepare grill. Grill burgers as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Place cheese over patties during last minute of cooking.
2) On bun bottoms, layer lettuce leaves, grilled patties, tomato and onion; add bun top. Serve with condiments, if desired.
