Multi-Cooker Turkey Meatballs
Ready in about 40 minutes, these tender, juicy classic meatballs make a quick and easy main dish that everyone will love! Just add rice or pasta and dinner is ready!

Total Time – 40 minutes
Serving Size – Servings: 4

Ingredients
1 – (16-ounce) package JENNIE-O® Lean Ground Turkey
1/3 – cup chopped onion
1/3 – cup panko breadcrumbs
1/3 – cup grated parmesan cheese
1 – egg, plus 1 egg yolk
4 – cloves garlic, minced
1 – tablespoon milk
3/4 – teaspoons kosher salt
1/2 – teaspoon oregano
1/4 – teaspoon pepper
3 1/2 – +cups pasta sauce

Directions
1) In large bowl, combine turkey, onion, breadcrumbs, cheese, egg, egg yolk, garlic, milk, salt, oregano and pepper. Shape mixture into 16 balls.

2) Spray bottom of multi-cooker with non-stick cooking spray. Pour in pasta sauce. Place meatballs in sauce.

3) Secure lid; set pressure valve to SEALING. Select MANUAL; cook on high pressure 7 minutes. Select CANCEL. Keep pressure valve in SEALING position to release pressure naturally 5 minutes. Set pressure valve to VENTING to release pressure. Always cook to well-done, 165°F as measured by a meat thermometer.

4) Serve meatballs and sauce with pasta or rice, if desired.

1 cup light sour cream
1 cup shredded Cheddar cheese

8 ounces tortilla chips

DIRECTIONS
1) Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat.

2) Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

Spicy Gremolata Seasoned Turkey Breast
Whether you are having a smaller holiday gathering or making a delicious dinner for your family these turkey breast halves seasoned with a spicy gremolata are perfect. The JENNIE-O® Tender & Juicy Young Turkey Breast is seasoned to perfection with hints of garlic, lemon zest and red pepper flakes.

Total Time – 1 hour, 15 minutes
Serving Size – Makes 8 Servings

Ingredients
1 – JENNIE-O® Tender & Juicy Young Turkey Breast (4½ – 5 pounds), thawed if frozen, split into 2 halves
2 – tablespoons olive oil

Spicy Gremolata
1 1/2 – cups packed flat leaf parsley leaves, finely chopped
1/4 – cup sage leaves, finely chopped
4 – garlic cloves, smashed
3 – tablespoons finely grated lemon zest
1 – teaspoon crushed red pepper flakes
2 – teaspoons kosher salt
1/2 – cup olive oil

Directions
1) Heat oven to 375°F.

2) Loosen turkey skin. Rub half of the Spicy Gremolata under the skin of turkey breast halves.

3) In large heavy bottomed skillet over medium-high heat, heat oil. Sear each breast half 6 to 8 minutes, or until golden brown on both sides.

4) Place seared turkey on large, rimmed baking sheet. Roast 30 to 60 minutes or until meat thermometer inserted into the thickest part of the breast registers 165°F. Remove turkey from oven. Rub turkey breasts with remaining Spicy Gremolata. Let stand 15 minutes for easier carving.

Spicy Gremolata

1) In medium bowl, combine parsley, sage, garlic, lemon zest, red pepper flakes and kosher salt. Mix to combine. Stir in olive oil.

Ingredients
1 – (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
⅓ – cup chopped parsley
½ – tablespoon freshly ground pepper
1 – cup garbanzo beans, pureed
½ – cup egg substitute
1 – (14-ounce) can tomato sauce
1 – medium tomato, chopped or 1 (6-ounce) can tomato paste
3 – cloves garlic, chopped
3 – cups uncooked whole wheat pasta

Directions
1) Heat oven to 375ºF.

2) Spray baking sheet with non-stick cooking spray.

3) In large bowl, mix turkey, parsley, pepper, beans and egg. Roll turkey mixture into ½-inch meatballs and place on prepared baking sheet.

4) Bake meatballs 20 minutes or until well-done, Always cook to 165ºF. as measured by a meat thermometer.

5) While meatballs are cooking, in sauce pan on stove top heat tomato sauce, fresh tomato or tomato paste and garlic. Once meatballs are finished cooking, add to sauce and simmer 15 minutes.

6) Cook pasta according to package , drain. Top pasta with meatballs and sauce.

Quick Pickled Carrots
1 – cup water
1/2 – cup white vinegar
3 – tablespoons sugar
1 – teaspoon salt
1 – (10-ounce) bag shredded carrots

Sriracha Aioli
1 – cup mayonnaise
1 – tablespoon sriracha sauce, or to taste

Directions
For Quick Pickled Carrots
1) In small saucepan over medium-high heat, combine water, vinegar, sugar and salt. Bring to boil. Place carrots in heatproof container. Pour vinegar mixture over carrots. Let cool 30 minutes. Chill.

For Sriracha Aioli
1) In small bowl, combine mayonnaise and sriracha.

Directions:
1) In small bowl, whisk together coconut aminos, lime juice, ginger and garlic powder.

2) In large skillet over medium-high heat, heat oil. Add patties to skillet. Pour half of the coconut aminos mixture over patties. Cook 3 to 5 minutes. Flip patties. 1 – head cauliflower, leaves and stem removed, coarsely chopped
3 – tablespoons olive oil, divided
1 – zucchini, chopped
1 – onion, chopped
1 – (3.5-ounce) package shiitake mushrooms, chopped
1 – (16-ounce) package JENNIE-O® Lean Ground Turkey
1 – tablespoon soy sauce; plus, more for serving, if desired
1/2 – tablespoon sesame oil; plus, more for serving, if desired
Suggested accompaniments; kimchi, gim (roasted seaweed sheets), diced scallions and toasted sesame seeds

Directions
1) In bowl of food processor, place chopped cauliflower. Pulse to small pieces, similar to grains of rice.

2) Using three separate skillets, heat 1 tablespoon of olive oil in each over medium-high heat. In first skillet, sauté cauliflower rice 5 to 6 minutes, or until tender. In second skillet, cook zucchini, onions and mushrooms 6 to 8 minutes or until tender and browned. In third skillet, cook turkey 8 to 10 minutes or until thoroughly cooked and browned. Always cook to well-done, 165°F as measured by a meat thermometer. Add soy sauce and sesame oil to cooked turkey. Mix together. Remove from heat.

3) To serve: Place some cauliflower rice on the bottom of serving dish. Top with cooked vegetables and turkey mixture. Add a light drizzle of sesame oil if desired. Add kimchi. Garnish with scallions and toasted sesame seeds. Crush gim and sprinkle over top or use gim as a wrap.

½ cup minced onion
1 teaspoon minced garlic
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
1 teaspoon ground cumin
¼ cup tomato sauce
½ cup low sodium chicken broth, divided
1 tablespoon chopped fresh cilantro
3 large sweet red bell peppers
¼ cup shredded reduced-fat Cheddar cheese

DIRECTIONS
1) Heat oven to 400°F.

2) Lightly coat non-stick skillet with spray; heat over medium heat. Add onion and garlic; sauté 2 minutes or until softened. Add ground turkey and cumin. Break meat apart and cook over medium heat 14 to 16 minutes, or until well-done, 165°F. as measured by a meat thermometer.

3) Add tomato sauce and ¼ cup broth. Reduce heat to low and simmer 5 minutes. Add cilantro. Cut peppers in half lengthwise and remove seeds and stem. Place in baking dish. Spoon ⅓ cup turkey mixture into each pepper half. Pour remaining ¼ cup chicken broth in baking dish. Cover with foil.

4) Bake 35 minutes. Sprinkle with cheese.
* Always cook to an internal temperature of 165°F.
