Turkey Meatloaf Makeover
This meatloaf recipe will leave you wondering why you didn’t switch to turkey sooner. It’s tender, it’s juicy and it has all the flavor you expect — but this one’s under 300 calories per serving.

INGREDIENTS
MEATLOAF
½ white onion, chopped
1 carrot, peeled, chopped
½ red bell pepper, chopped
½ cup arugula
2 cloves garlic, minced
2 (16-ounce) packages JENNIE-O® Lean Ground Turkey
1 cup gluten free breadcrumbs
1 teaspoon ground thyme
1 teaspoon chili powder
1 teaspoon freshly ground pepper
1 teaspoon salt
½ cup plain unsweetened almond milk
¼ cup egg substitute or 1 egg
olive oil spray

GLAZE
½ cup ketchup
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
1 teaspoon cumin
1 teaspoon honey
2 tablespoons chopped flat leaf parsley

DIRECTIONS
1) Heat oven to 350°F. In food processor, combine onion, carrot, red bell pepper, arugula and garlic. Pulse to chopped.
2) In large bowl, combine ground turkey and onion mixture. Using hands, work ingredients in gently. In medium bowl, combine breadcrumbs, thyme, chili powder, pepper and salt. Mix well. In small bowl, combine almond milk and egg, whisk to combine. Sprinkle dry mixture over meat and gently mix in, add the wet mixture and continue to gently mix until just combined. Do not over mix.
3) Spray large foil or parchment lined baking sheet with olive oil spray and shape meat into a 6-inch by 11-inch x 1 ½-inch rectangle in the middle of the pan.
4) For glaze, in a small bowl mix together ketchup, Worcestershire sauce, hot sauce, cumin and honey and brush over meatloaf top and sides.
5) Bake 1 hour 30 minutes and until 165°F. as measured by
6) a meat thermometer in the center. Always cook to well-done. Let stand at room temperature 5 minutes before slicing. Sprinkle with freshly chopped parsley.

This one uses the JENNIE-O® Lean Ground Turkey also. Some of the other ingredients you’ll need is; Red Bell Pepper, White Onion, Oats, and Spices. Then topped with some Chipotle Pepper Adobo Sauce and served on Whole Wheat Sandwich Thins. It’s only 270 calories and 26 net carbs per serving! Hannah’s Meatloaf Sandwich
One bite of this meatloaf sandwich and you’ll wonder how you’ve managed to go this long without it. under 300 calories per serving.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 red bell pepper, finely diced
½ green bell pepper, finely diced
1 cup finely diced white onion
¾ cup old fashioned oats, uncooked
2 tablespoons minced garlic
1 tablespoon onion powder
½ package dry onion soup mix
2 tablespoons Worcestershire sauce
¼ cup unsweetened applesauce
½ cup ketchup, divided
6 whole wheat sandwich thins
mustard, if desired
celery leaves, if desired

DIRECTIONS
1) Heat oven to 350°F. In medium bowl, mix turkey, bell peppers, onion, oats, garlic, onion powder, onion soup mix, Worcestershire sauce, applesauce and ¼-cup ketchup. Mold into 9 x 5 x 3-inch loaf pan.
2) Bake 1 hour 30 minutes or until the internal temperature is 165°F as measured by a meat thermometer. Remove from oven and top with remaining ¼-cup ketchup. Turn oven temperature to broil. Broil meatloaf 3 to 4 minutes to glaze ketchup topping.
3) Slice and serve on whole wheat sandwich thins. Add mustard and celery leaves, if desired.
* Always cook to an internal temperature of 165°F.

Turkey Tenderloin Crostini
The term “crostini” in Italian means “little toast”. With various toppings, they’re the perfect appetizer before any meal. Our Turkey Tenderloin crostinis combine sweet and savory with whole canberry sauce, blue cheese crumbles and tender turkey on top. Make them, and you might be the toast of your next dinner!

INGREDIENTS
1 (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins
1 teaspoon seasoned salt
½ teaspoon garlic powder
½ teaspoon freshly ground pepper
15 crostini bread slices
¾ cup whole-berry cranberry sauce
1 tablespoon country-Dijon mustard
⅓ cup blue cheese crumbles
fresh marjoram leaves, if desired

DIRECTIONS
1) Season turkey with seasoned salt, garlic powder and pepper. Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Let stand 15 minutes and slice into about 15 ¼-inch slices.
2) In small bowl, stir together cranberry sauce and mustard.
3) Place 1 tenderloin slice on each crostini bread slice and top with cranberry mixture and blue cheese crumbles.
4) Garnish with fresh marjoram leaves, if desired.

Biscuits with Spinach Turkey Gravy
Looking for something special for breakfast? Try this: Freshly baked biscuits smothered in a savory spinach and turkey sausage gravy. An amazing breakfast at under 300 calories per serving.

INGREDIENTS
BISCUITS
2 cups white whole wheat flour
1 tablespoon baking powder
pinch of salt
⅛ teaspoon freshly ground pepper
¾ cup plus 1 tablespoon very cold milk
¼ cup very cold butter, cubed
GRAVY
1 small shallot, diced
1 (16-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Roll – Mild
1 teaspoon ground cumin
1 teaspoon ground paprika
1 teaspoon dried thyme leaves
2 cups chopped fresh spinach
¼ cup white whole wheat flour
2 cups milk
1 cup low-sodium chicken broth
pinch of salt
2 teaspoons freshly ground pepper

DIRECTIONS
1) Heat oven to 425°F. In large mixing bowl, combine flour, baking powder, salt and pepper. Add milk and butter, use your hands (or a pastry blender) to rub it into the flour until mixture is crumbly. Do not over mix.
2) Turn dough out onto a clean lightly floured surface. With a rolling pin, roll dough into a 1-inch thick rectangle. Use a round biscuit cutter or the top of a water glass to cut out biscuits. Place the biscuits onto a lined and lightly sprayed baking sheet. Bake 12 minutes or until golden brown.
3) Meanwhile, in large non-stick skillet, saute shallot. Remove to a small bowl; set aside. In same skillet, add sausage and cook as specified on the package. Always cook to well-done, 165°F. as measured by a meat thermometer. Drain off any excess fat and add the shallot back to the pan. Sprinkle with cumin, paprika, thyme and fold in the spinach, stirring gently allowing the heat to wilt the spinach. Transfer mixture to a bowl and cover to keep warm.
4) In medium bowl, whisk flour, milk, broth, salt and pepper until smooth. Add mixture to the same pan used to cook the sausage. Cook over medium-low heat stirring continuously, 15 minutes or until mixture has thickened and flour is completely cooked off. Add the reserved turkey sausage mixture and cook until the gravy is heated through.
5) Cut the cooled biscuits in half. Spoon turkey gravy over biscuits and serve.

Spicy Turkey Breakfast Skillet
Some mornings need a serious kick-start. This breakfast skillet recipe is just the thing — chopped chipotle peppers, jalapeño jack cheese and lean turkey sausage. Under 300 calories per serving!

INGREDIENTS
2 teaspoons canola oil
½ cup diced onion
½ cup diced red bell pepper
½ cup diced green bell pepper
2 cups southern-style hash browns
1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Links
2 chipotle chilies in adobo sauce, finely chopped
2 cups baby spinach leaves
1 cup shredded jalapeño jack cheese
1 tablespoon lime juice
1 avocado, diced
cilantro leaves

DIRECTIONS
1) In large skillet, heat oil over medium-high heat. Add onion and peppers. Cook 5 minutes or until softened, stirring occasionally; set aside.
2) In same pan, cook hash browns over medium-high heat 10 to 15 minutes or until golden brown, stirring occasionally. Return pepper mixture to skillet.
3) Cook links as specified on the package. Always cook to well-done,165°F. as measured by a meat thermometer. Cut sausage into 1-inch lengths. Add to skillet.
4) Add chipotle chilies and spinach. Stir to combine. Sprinkle with cheese. Stir to combine. Remove from heat. Drizzle lime juice over avocado. Pile avocado in center of skillet. Scatter with cilantro leaves.

Stuffed Turkey Mushrooms
Kansas City might be known for its barbeque, but it turns out they know mushrooms too. These loaded appetizers will make a half rack jealous. They’re bite size but they pack a savory punch.

INGREDIENTS
2 tablespoons brown sugar
2 tablespoons ground paprika
1 tablespoon white sugar
1 tablespoon garlic salt
2 teaspoons freshly ground black pepper
1 teaspoon ground cayenne pepper
3 pounds JENNIE-O® All Natural* Turkey Breast
4 green onions, chopped
1½ cups prepared mustard barbeque sauce
4 slices JENNIE-O® Turkey Bacon
32 large fresh mushrooms, cleaned and stems trimmed
¼ cup olive oil
½ cup Colby cheese, shredded

DIRECTIONS
1) In small bowl, combine rub ingredients: brown sugar, paprika, sugar, garlic salt, black pepper and cayenne pepper. With mixture, rub entire surface of turkey. Preheat oven to 350°F. Always cook to well-done, 165°F as measured by a meat thermometer.
2) While turkey is cooking, to make mustard sauce add onions and barbeque sauce into a sauté pan and simmer over low heat for 30 minutes. Let cool.
3) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Cut into small pieces

4) Heat broiler. Line broiler pan with aluminum foil. Place rack in broiler pan.
5) Brush mushroom caps lightly on all sides with olive oil; place turkey, turkey bacon and cheese into each mushroom cap. Place stuffed mushrooms on rack in broiler pan. Broil 4 to 5 inches from heat source 5 to 6 minutes or until hot. Drizzle with mustard sauce.
* Always cook to an internal temperature of 165°F.

Fresh Citrus and Mint Smoked Turkey
These herbs might sound fit for a cocktail, but they can add a bright, refreshing flavor to your turkey as well. Go from mixologist to chef and spritz up your next meal! This turkey tonic will be gobbled right up.

INGREDIENTS
⅓ cup paprika
¼ cup sugar
2 tablespoons cayenne
2 tablespoons salt, if desired
4 teaspoons black pepper
3 pounds JENNIE-O® All Natural* Turkey Breast
1½ cups packed fresh mint leaves
¼ cup olive oil
2 cloves garlic
1 tablespoon balsamic vinegar
1 tablespoon lemon juice
1 teaspoon lemon zest
3 oranges, segmented
peanuts, chopped and toasted, if desired

DIRECTIONS
1) In large bowl, mix rub ingredients: paprika, sugar, cayenne, salt and pepper. Coat turkey breast evenly with rub. Cover with plastic wrap and let marinate in the refrigerator, 8 hours to overnight. Preheat smoker to 300°F. Smoke until well-done, 165°F as measured by a meat thermometer. Slice turkey breast
2) To make mint pesto: Combine mint, olive oil, garlic, balsamic vinegar and lemon juice and zest in food processor and pulse until smooth.
3) Peel orange and cut into segments. Heat large skillet on medium-high heat. When pan is hot, add a single layer of nuts. Do not add any oil or cooking spray – the nuts have enough oils on their own to cook. Stir frequently until nuts turn golden brown. Remove from pan. To assemble, top turkey with orange segments, a drizzle of mint pesto, and toasted peanuts.

Warm Turkey Sausage and Couscous Salad
Searching for new and adventurous pasta salad recipes? Try this: Grilled turkey sausage, couscous, cilantro and peppers, drizzled with a citrus honey cumin dressing. Serve as the main event or as a delicious side.

INGREDIENTS
1 (14-ounce) JENNIE-O® Cooked Hardwood Smoked Turkey Kiebasa
2 cups low-sodium chicken broth
2 cups couscous
2 teaspoons olive oil
½ cup dark raisins
½ cup almonds
⅓ cup cilantro leaves
¼ cup fresh mint leaves
2 roasted red peppers, chopped

ORANGE DRESSING
⅓ cup orange juice
2 tablespoons honey
1 tablespoon olive oil
½ teaspoons ground cumin
1 garlic clove, minced

DIRECTIONS
1) Grill sausage according to package directions. Set aside; keep warm.
2) In medium saucepan, bring broth to boil. Remove from heat. Add cous cous and oil; stir. Cover and let stand 10 minutes; fluff with fork. Spoon into large bowl.
3) Cut sausage into ½-inch thick slices. Add to cous cous. Add almonds, raisins, cilantro, mint and peppers.
4) To make orange dressing, in jar add orange juice, honey, oil, cumin and garlic; shake to combine. Drizzle over salad. Toss gently.

Avocado, Turkey and Rice Salad

This salad recipe is full of fresh flavor. Tangy green chilies, cilantro and avocado mingle with sunflower seeds, golden raisins and lean turkey. Under 500 calories per serving!

INGREDIENTS
SALAD
4 cups cooked jasmine rice
½ cup thinly sliced green onions
2 cups chopped leftover JENNIE-O® OVEN READY™ Turkey
1 cup sliced celery
½ cup sunflower seed kernels, toasted
½ cup golden raisins
2 avocados, peeled and diced

GREEN CHILI DRESSING
⅓ cup cilantro leaves
¼ cup canned green chilies
2 garlic cloves, minced
2 tablespoons olive oil
2 tablespoons white wine vinegar
1 tablespoon honey

DIRECTIONS
1) In large bowl, combine rice, onions, turkey, celery, sunflower seeds, raisins and avocados. Set aside.
2) To make the dressing, process cilantro, chilies, garlic, oil, vinegar and honey in a food processor or blender until smooth. Drizzle over salad.

Easiest Thanksgiving Turkey
If everything about the holidays were as easy as this delicious turkey recipe, we’d have a lot to be thankful for! 10-minute prep with a lemon, garlic and rosemary baste.

INGREDIENTS
1 (11-13 pound) JENNIE-O® OVEN READY™ Whole Turkey
¼ cup butter
1 tablespoon grated lemon peel
2 garlic cloves, minced
1 tablespoon chopped fresh rosemary

DIRECTIONS
1) Heat oven to 375°F.
2) From frozen, cook turkey as specified on the package. Always cook turkey to well done, 165°F in the breast and 180°F in the thigh, as measured by a meat thermometer.
3) Melt butter in a small saucepan. Add lemon peel, garlic and rosemary. Cook over medium-low heat for two to three minutes or until fragrant.
4) Cut slit in bag and brush with butter mixture. Bake additional 5 minutes. Let turkey stand 20 minutes before carving.
