Today’s Menu: Cajun Rainbow Trout w/ Hash Browns and Green Beans

 

For Breakfast it was a cup of Bigelow Decaf Green Tea. Another hot and humid day out there. We have a high of 88 degrees and the humidity almost as high. Rain showers by late afternoon. A heavy thunderstorm moved in late yesterday. Heavy rain and strong winds. As the storm passed us it got worse, a tornado and it caused a lot of damage to a County next to ours. So after my Tea I watered the Tomato and Pepper Plants. After Lunch I took a friend to a local Home Depot. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

 

I had the Rainbow Trout Fillet that I had purchased from Meijer the other day. To prepare it all I’ll need is; Rainbow Trout Fillet, 1 teaspoon Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheat the broiler. Pat the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Place skin side down on a broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

 

Then for one side I prepared some Simply Potatoes Hash Browns. Fried in Extra Light Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Dish! I also heated up the leftover Del Monte Cut Green Beans from last night. I just love the trio of the Cajun Rainbow Trout, Hash Browns, and Green Beans, one of my favorites for sure! For Dessert/Snack later a Diet Peach Snapple.

Today’s Menu: Cajun Rainbow Trout w/ Hash Browns and Green Beans

 

For Breakfast it was a cup of Bigelow Decaf Green Tea. 35 degrees and partly sunny outside. I had to have Mom up for her 3rd Treatment at 11:00 this morning. Everything is going great! 17 Treatments left!. On the way back home Mom wanted a Cheeseburger from Burger King so we stopped there before coming home. Back home I did a load of laundry and cleaned the house. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

 

I had the Rainbow Trout Fillet that I had purchased from Meijer the other day. To prepare it all I’ll need is; Rainbow Trout Fillet, 1 teaspoon Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheat the broiler. Pat the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. For Breakfast it was a cup of Bigelow Decaf Green Tea. 89 degrees, humid, and mostly sunny out today. A Friend of mine broke her leg yesterday. She needed a few items from the store and prescription filled so I went to Walgreens and then on to Meijer for her. Back home I gave a couple of neighbors a hand getting their yard sale tables ready for tomorrow. Tomorrow is our community yard sale. They do this once a year and usually get a huge turnout. Ready to relax tonight! For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

 

I had the Rainbow Trout Fillet that I had purchased from Meijer, in the freezer. I’m glad I bought as much Rainbow Trout and Walleye as I could because it’s tough to find some now. So I laid the package of 1 fillet in the fridge overnight to thaw. Today’s Menu: Cajun Rainbow Trout w/ Red Beans and Rice
To start this day off I Poached an Egg, heated up 2 Johnsonville Turkey Breakfast Sausage Links, toasted a Thomas Light English Muffin, and had my morning cup of Bigelow Decaf Green Tea. We had more rain overnight. Then for the day  it was 60 degrees and mostly sunny outside, still windy also. Did a load of laundry and then took my car and had it washed and stopped and got gas. Then stopped by the ATM and then dropped some letters off at the Post Office. Stopped by Walmart on my way back home. Back home I got my cart out and did some yard work. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Red Beans and Rice, I also baked a loaf of La Baguette Roasted Garlic Oval Bread.

For my Rice I used a new one for me, Uncle Ben’s Ready Rice Red Beans and Rice. It prepares as all the microwavable Ready Rice. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs perfectly with any dish. This has plenty of Red Beans along with Rice, I’ll be buying more of this. As I said I also baked a loaf of La Baguette Roasted Garlic Oval Bread. Then for Dessert later a Jello Sugar Dark Cherry Jello.

Spent most of the morning trying to get registered to get my Covid Vaccine but everywhere was full. I’m starting to get frustrated! Then my Family Doctor called and I have to go back Monday, my Sugar was high. What next!  After Lunch I got the cart, rake, and leaf blower out. I raked and cleaned the back yard. Not much else going on. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

Today’s Menu: Cajun Rainbow Trout w/ Baked Macaroni and Cheese

 

To start this Sunday Morning off I made Biscuits and Gravy with Turkey Sausage. I prepared a packet of Pioneer Peppered White Gravy, Pillsbury Grands Jr. Biscuits, Johnsonville Turkey Breakfast Sausage Links, and a cup of Bigelow Decaf Green Tea. A Delicious Sunday Morning Breakfast! A high of 44 degrees and cloudy outside today. Did a load of laundry and then cleaned the house, dusted and ran the vacuum. For Dinner tonight Cajun Rainbow Trout w/ Baked Macaroni and Cheese.

For the Mac and Cheese I used Reser’s Main Street Bistro Signature Macaroni and Cheese. We have used several of their sides now and having the Mac and Cheese tonight.

 

 

I’ll be baking it, you can also microwave it. I prefer baking items in the oven. First preheat the oven to 350°F. Next I removed the tray from the package and removed the film. I placed the container on baking tray and heated it in the oven for 22 minutes. Nice and bubbly around the edges. Let it cool a bit and it’s ready! The Mac and Cheese is delicious! Fantastic Elbow Macaroni with plenty of Cheese, seasoned just right! I also had a slice of the baked a loaf of La Baguette Roasted Garlic Oval Bread I baked the day before. For a Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper to drink.

Today’s Menu: Cajun Rainbow Trout w/ Baked Macaroni and Cheese

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. Gave Mom a hand doing some Fall Cleaning of the Living Room and Dining Room. Moved everything and vacuumed and dusted. Then cleaned the outside windows, we removed the screens also and sprayed them down. Finally found someone to trim a big tree we have in the front yard, a lot of dead limbs on it. For Dinner tonight Cajun Rainbow Trout w/ Baked Macaroni and Cheese.

 

I had the Rainbow Trout Fillet, that I had purchased from Meijer, in the freezer. I’m glad I bought as much Rainbow Trout and Walleye as I could because it’s tough to find some now. So I laid the package of 1 fillet in the fridge overnight to thaw. To prepare it all I’ll need is; Rainbow Trout Fillet, 1 teaspoon Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated a Cast Iron Skillet on medium heat. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed skin side down and cooked it for 3 minutes. Flipped it over and cooked it another 3 minutes until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

 

Tried another new item tonight, Reser’s Main Street Bistro – Baked Macaroni and Cheese. I came across at Meijer the other day. We had the Potato Casserole last night and having the Baked Macaroni and Cheese tonight. This one also comes in a tray that you can microwave or bake in the oven, I’m going with the Oven Baking way.

 

 

Very easy to prepare , as the other one was. Preheat the oven to 350 degrees. Just remove the tray from the package and remove the film covering the tray. Place the tray on a baking sheet and heat in the oven for 22 minutes. And it’s ready to serve!

 

Seasoned with a shake of Salt and Pepper along with a sprinkle of Kraft 2% Shredded Sharp Cheddar Cheese. This turned out delicious! Came out bubbling hot. Plenty of Mac and Cheese and loaded with Cheesy flavor! Another Fantastic item to have in the fridge. I also had a slice of the baked a loaf of La Baguette Roasted Garlic Oval Bread I baked yesterday. For Dessert later a Jello Sugar Free Dark Cherry Jello.
