Today’s Menu: Baked Jumbo Butterfly Shrimp w/ Whole Grain Mac and Cheese

 

 


For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. Didn’t get a lot of sleep last night, Phantom Pains kept me up. They weren’t that painful but just annoying enough to keep waking me up. After I had my Tea I went to McDonald’s to pick up Breakfast for Mom. Then later I drove Mom over to spend the afternoon with Dad. I didn’t stay long, too tired. I went back home and caught up on some sleep. Then later went back to pick her up. For Dinner tonight its Baked Jumbo Butterfly Shrimp w/ Whole Grain Mac and Cheese.

 

 


For the Shrimp I prepared a box of SeaPak Jumbo Shrimp. I preheated the oven on 425°f. I then got a small baking sheet, covered with aluminum foil and sprayed it with Pam Cooking Spray. I arranged the frozen shrimp in single layer on the baking sheet. Then baked at 425 degrees for 13-14 minutes turning over once after 6 minutes. They came out Golden Brown and delicious. Hard to beat these always great tasting. I served them with a side of Heinz Shrimp Cocktail Sauce.

 

 


While at Meijer the other day and picked up a 4 pack of the Kraft 50% Whole Grain Mac and Cheese. They come in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For Dessert/Snack later tonight a bowl of Skinny Pop – Pop Corn along with a Coke Zero to drink.

Today’s Menu: Tempura Shrimp and Baked Potato

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea, not much of an appetite this morning. After Breakfast I headed out to Meijer, just needed a few items. Stopped by McDonald’s and picked up Breakfast for Mom and Dad. I’ve had a nagging Sinus Headache since yesterday so I took it easy this afternoon. For Dinner tonight I prepared Tempura Shrimp and Baked Potato.

 

 

 

 

I came across the SeaPak Tempura Shrimp at Meijer in the Frozen Food Aisle. I love using the SeaPak Seafood Products, first time trying the Tempura Shrimp. As all their products its easy to prepare. First I preheat oven to 400°f. Arranged the frozen shrimp in single layer on a small baking sheet covered with foil and sprayed with Pam Non Stick Cooking Spray. I baked the Shrimp for 18 minutes, turned the shrimp over after 6 minutes.

 

 

 

The Shrimp was big and came out with a great Tempura Crust, the Shrimp was delicious! Love the crunchiness and the Shrimp was so tasty. I’ll have to keep a box of these in the freezer. Served it with a side of Heinz Shrimp Cocktail Sauce.

 

 

 

 

 

To go with the Shrimp I prepared a Baked Potato. I took a medium-sized Russet Potato and took a small knife and made small punctures all around the Potato. Put the Potato in a Microwavable Bowl and cooked for 7 minutes and 20 seconds on high heat. Served the Potato Seasoned with McCormick Grinders of Sea Salt and Peppercorn Medley and I Can’t Believe It’s Not Butter. Love a good Potato! For Dessert later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Fish Sticks, Maryland Style Crab Cakes, and Steak Fries

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. My favorite Breakfast anymore! Not a bad day outside, 28 in the morning and 38 degrees for a high. After Breakfast I went to the local Kroger up the road for a couple of items and the stopped by McDonald’s and picked up Breakfast for Mom and Dad. After Lunch I went over to a friend of mine that was in town, he was staying with his brother. Good seeing him, we’ve been friends since our Freshmen year in High School. For Dinner tonight it’s Seafood and Potatoes. I prepared Fish Sticks, Maryland Style Crab Cakes, and Steak Fries.

 

For the Fish Sticks I used Gorton’s Smart and Crunchy Fish Sticks. Growing up I lived on Fish Sticks. While I was at Meijer the other day I picked up a package of the Gorton’s Smart and Crunchy Fish Sticks. These are coated with Panko Bread Crumbs and to prepare them I’ll be baking them. I first preheated the oven at 375 degrees. I then took a small baking sheet and lined it with foil. Sprayed the foil with Pam Cooking Spray and lined the Fish Sticks up on the sheet. Then baked them for 22 minutes, flipping them over after 11 minutes.

 

 

They came out piping hot, nice crunch from the Panko Bread Crumb Coating and nicely Seasoned. I really like all the Gorton’s Seafood Products. Easy to prepare and good quality Seafood. Served them with a side of McCormick Tarter Sauce.

 

 

 

 

 

Then for the Crab Cakes I used SeaPak Maryland Style Crab Cakes, first time using these. Another item I picked up at Meijer the other day. They come frozen to a box, individually vacuumed sealed.

 

 

 

 

 

To prepare these I preheated the oven to 425°f. Removed the frozen crab cakes from vacuum-pack and arranged on a baking sheet, flat side down. I then brushed them with melted Blue Bonnet Light Butter. Baked for 15 minutes on middle oven rack. Turned the Crab Cakes over and press gently to flatten them. Continued to bake for another 10 minutes. Let them cool for 3 minutes and ready to eat! I served these with an Aioli Sauce that came with the Crab Cakes, excellent Sauce! Very good Crab Cakes, lots of Crab Meat and great Seasoning. Another good item to have in the freezer.

 

 

 

For a side I baked some Ore Ida Steak Fries and had a side of Hunt’s Ketchup for dipping.Also baked a loaf of Pillsbury French Bread. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

For Breakfast this morning I prepared a al fresco Chicken Breakfast Sausage Patty, toasted a Healthy Life Whole Grain English Muffin, and had a cup of Bigelow Decaf Green Tea. Same weather outside as yesterday except it’s a bit hotter and more humid. Our heat index is over 100. Not a good day to be doing a whole lot outside. After Lunch I headed up to the hospital and spent the afternoon with Dad. He’s doing good, they just have to clear the pneumonia up in his right lung. Stopped and got gas on the way home and that was about it for the day. For Dinner tonight its Baked Jumbo Butterfly Shrimp w/ Whole Grain Mac and Cheese.

 

It’s so hot out I wanted something sort of light and easy to prepare. So I baked 1 item and microwaved the other one, don’t get much easier! So I prepared a box of SeaPak Jumbo Shrimp. Today’s Breakfast Menu included Jennie -O Turkey Breakfast Sausage Links, 1 Egg Sunnyside Up, 2 slices of toasted Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. That’s a very good way to start the day! After Breakfast I headed out to see a friend of mine who’s been moved to assisted living. It might have to be a permanent move for him, hope not though. It’s another beautiful Fall Day out, but a bit warmer out at 82 degrees. Back home did some cleanup outside and that was about it for the day. And for Dinner tonight I prepared Popcorn Shrimp w/ Mac and Cheese.

I used my favorite frozen boxed Shrimp, SeaPak. I love all the SeaPak Seafood Products. Easy to prepare and fresh tasting. To prepare it; arrange the frozen Shrimp in single layer on baking sheet and place on middle rack of oven. Bake the Shrimp on 450 degrees for 11 minutes, turning the shrimp over after 5 minutes. And your done! If you don’t have fresh Shrimp this is the way to go. Had a side of Heinz Cocktail Sauce for dipping.

Then for a side I microwaved Stouffer’s Classic Mac & Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Finally a great tasting Mac and Cheese in a single serving cup! I had a bowl of Cheerio’s for Breakfast along with the morning cup of Bigelow Decaf Green Tea. The heavy rains have finally stopped, just a light shower for the day! But more rain coming back in over the weekend they say. After Breakfast I headed out Grocery Shopping. I first stopped at Meijer for all my items and then on to Kroger for a few items for Mom. Feels good to get out again! Between the heat and humidity and all the rain of late I haven’t been out a lot. I can’t believe August is almost over, the Summer really flew by! So for Dinner tonight its Shrimp Poppers w/ Baked Potato.

I wanted something light and easy to prepare for tonight, Shrimp Poppers w/ Baked Potato. So I put the microwave to use for the Potato and the oven for the Shrimp. It doesn’t get much easier than that!

I turned the shrimp over after 5 minutes. When done let them cool for 3 minutes. Love these Shrimp, nice flavor and just the right amount of breading. Served them with some Heinz Cocktail Sauce, perfect for any seafood.

Had a rough night last night. I had to deal with the Phantom Pains, and they were bad! So not a whole lot of sleep last night. For Breakfast I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugarless Black Berry Jam. Not a lot going on today, thankfully. Beautiful day out, sunny and high in the low 60’s. Had the cart out for a while this afternoon enjoying all the sunshine! Come dinner time I was really getting tired from lack of sleep overnight so I wanted something easy to prepare for dinner. So it was the oven and microwave to prepare my meal tonight. I prepared some Shrimp Poppers w/ Mac and Cheese.

Tastes great, excellent Cheesy Mac. Well that’s about as an easy Shrimp and Mac & Cheese dinner that you can fix! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt. Off to bed early to catch up on some tonight, hopefully!

For Breakfast toasted up a couple of Low Fat Eggo’s. Easy to prepare and I’ve always loved them. Morning workout and a shower, then off to Kroger for a few items I needed. Stocked up on those Honey Crisp Apples, huge and sweet tasting crop this season! I wanted to purchase some Haddock but they said they no longer carry it, said they don’t sell enough of it. Had some nice looking Walleye but at $14.98 a pound! Anyway back home I finished up some laundry for Mom, ran the vacuum, and cleaned up around the house outside. It’s a huge change in our weather. In the 50’s this morning and a high in the low 60’s, and no humidity. For dinner tonight something easy to prepare and a comfort food, Popcorn Shrimp w/ Mac and Cheese.

I used my favorite frozen boxed Shrimp, SeaPak. I love all the SeaPak Seafood Products. Easy to prepare and fresh tasting. To prepare it; arrange the frozen Shrimp in single layer on baking sheet and place on middle rack of oven. Bake the Shrimp on 450 degrees for 11 minutes, turning the shrimp over after 5 minutes. And your done! If you don’t have fresh Shrimp this is the way to go. Had a side of Heinz Cocktail Sauce for dipping.

 

 
Then for a side I microwaved Stouffer’s Classic Mac & Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Finally a great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

It’s just been one of those days where nothing seemed to workout and everything going wrong. Without going into details, was having problems trying to take care of my Dad again. Then I have a new Hoveround Chair that’s basically  my legs here in the house. Life would be so difficult without it. But I just got this new version of the chair and it was not designed for people who are disabled in mind. So I spent quite a while on the phone with Hoveround, expressing my displeasure over the chair. They are going to send a repairman out to help me out and correct the problem, probably be a week or so. All right enough ranting, time for dinner! Tonight I prepared Clam Strips and Baked Fries.

After the day I’ve had today I wanted something very easy to prepare, but still a good meal. So what be easier than baking everything, Clam Strips and Baked Fries! I used a box of SeaPak Clam Strips. Preheat the oven on 400 degrees. I then lined a baking sheet with foil and sprayed it with a shot of Pam Cooking Spray. Placed the Clam Strips in a single layer on the sheet and baked them for 12 minutes, flipping them over after 7 minutes. These come out so delicious. Love these, very meaty strips, well seasoned, and easy to prepare. Had a side of McCormick’s Tarter Sauce, for dipping. Great product to have in the freezer for those days where you want something easy to prepare.

 
For a side I baked some Ore Ida Steak Fries. Seasoned these with Sea Salt and Ground Black Pepper, with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Rain, rain, and more rain! Anywhere from 2″ to 3″ inches around here and even more South of us. Started my day off with an Egg Beater’s Egg Whites Cheese Omelet. I used Sargento Reduced Fat Shredded Sharp Cheddar for the filling. I also had a couple of Eckrich Smoked Turkey Sausage Links along with my morning cup of Bigelow DeCaf Green Tea. So with all the rain going on outside it was a good day to stay in and get some things done inside. Repaired a drawer in the kitchen and dusted and ran the vacuum. Then outside I did repair a down spout replacing the clamp that kept it in place. For dinner tonight it’s Surf (Pop Corn Shrimp) and Turf 5 oz. Buffalo Top Sirloin.

It’s a Surf and Turf night here at old homestead! For the Surf part I used my favorite frozen boxed Shrimp, SeaPak. I love all the SeaPak Seafood Products. Easy to prepare and great tasting. To prepare it; arrange the frozen Shrimp in single layer on baking sheet and place on middle rack of oven. Bake the Shrimp on 450 degrees for 11 minutes, turning the shrimp over after 5 minutes. For the Turf part I’ll be using Wild Idea Buffalo Petite Top Sirloin Steak (5 oz.). To prepare the Steak; I rubbed theSurf (Pop Corn Shrimp) and Turf 5 oz. Buffalo Top Sirloin 002 Steak with a 1 teaspoon of Extra Virgin Olive Oil. Then seasoned it with McCormick’s Grinder Sea Salt and Black Peppercorn. As the Steak rested I preheated a small Cast Iron Skillet on medium heat. When the skillet was heated I added my Buffalo Sirloin, I cooked it 4 1/2 minutes per side to a beautiful Medium Rare! The Wild Idea Buffalo Steaks are just incredible. So juicy and the best flavor of any Steak, Beef or Buffalo, I’ve ever had. I also prepared some Sauteed Baby Bella Mushrooms to go with the Buffalo. For dessert later a Jello Sugar Free Dark Chocolate Pudding, only 60 calories and 10 net carbs per cup!
