Today’s Menu: Baked Jumbo Butterfly Shrimp w/ Garlic Bread Loaf

 

Just a Bigelow Decaf Green Tea for Breakfast this morning. 82 degrees, humid and mostly cloudy out today. I got the cart out of the shed and did some yard work. Our grass is all coming in where I had sown the grass seed. Had to work on the trim in the rear of the shed again. I think a groundhog is what is tearing it up. Just not much of an appetite tonight. So I prepared a light and easy to prepare Dinner. For Dinner tonight its Baked Jumbo Butterfly Shrimp w/ Baked Garlic Bread Loaf.

 

 

For the Shrimp I prepared a box of SeaPak Jumbo Shrimp. I preheated the oven on 425°f. I then got a small baking sheet, covered with aluminum foil and sprayed it with Pam Cooking Spray. I arranged the frozen shrimp in a single layer on the baking sheet. Then baked at 425 degrees for 13-14 minutes turning over once after 6 minutes. They came out Golden Brown and were delicious. Hard to beat these always great tasting. I served them with a side of Heinz Shrimp Cocktail Sauce.

 

 

To go with the Shrimp another easy thing but delicious to prepare, a loaf of New York Bakery Mamma Bella’s® Recipe Pre-Sliced Garlic Bread. To prepare it; Preheat the oven to 325F. Open both ends of bag for venting. Place the bread in bag on foil-lined baking sheet. Heat for 18 minutes, remove bread from bag and serve. So good! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

FRY

* place frozen shrimp in fry basket.
* for full package fry 2 minutes and 30 seconds to 3 minutes.
* drain on absorbent paper before serving.

Today’s Menu: Baked Breaded Clams w/ Cheddar Potato Bake

 

For Breakfast on this sunny morning I Scrambled a couple of Eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. 54 degrees and sunny out, another beautiful day! Got the 4 wheel cart out of the shed along with the leaf blower and rake. Cleaned off the deck and driveway areas. Then cleaned out the flower bed in the back of the house. Good to be out and active! For Dinner tonight it was Baked Breaded Clams w/ Cheddar Potato Bake.

 

To make tonight’s Dinner I’ll need the Microwave, the oven, and 1 small baking sheet. It doesn’t get much easier than that! So for the Clams I used a box of SeaPak Clam Strips. Preheat the oven on 425 degrees. I then lined a baking sheet with foil and sprayed it with a shot of Pam Cooking Spray. Placed the Clam Strips in a single layer on the sheet and baked them for 12 minutes, flipping them over after 7 minutes. These come out so delicious. Love these, very meaty strips, well seasoned, and easy to prepare. Had a side of McCormick’s Tarter Sauce, for dipping. Great product to have in the freezer for those days where you want something easy to prepare. Wow, such an easy Dinner to prepare, just bake and serve. Easy to prepare Dinners can also be a Delicious Dinner.

 

Then for a side I prepared a Stouffer’s Cheddar Potato Bake. Another easy to prepare and delicious dish. To prepare this one I’m using the microwave. It comes in a microwavable tray. I just slit the film cover on the tray and microwaved it for 6 minutes, Done! I love this side by Stouffer’s! Delicious Potato Dish, really like the bread crumb topping. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Today’s Menu: Maryland Style Crab Cakes w/ Cheddar Bake Potatoes

 

 

I just had a cup of Bigelow Decaf Green Tea for Breakfast. 56 degrees and rain showers this morning then cloudy in the afternoon. After Breakfast and in between showers I went to Meijer to grocery shop. Waiting for it to dry out around here, I have some things I have to get done outside. I’m going to Home Depot to pick up something to stop a Mole problem we have in the backyard. He’s tunneled through about 4 yards and has a mess going. I also have some minor repair work to our shed. I’m ready for Spring and warmer weather! For Dinner tonight I prepared Maryland Style Crab Cakes w/ Cheddar Bake Potatoes and Baked Garlic Loaf Bread.

 

I had a box of SeaPak Maryland Style Crab Cakes in the freezer and I’m having it for my Dinner tonight. I haven’t had these in a while and looking forward to them.They come frozen two to a box, individually vacuumed sealed. A serving size is both of the Crab Cakes.

 

 

To prepare these I preheated the oven to 425°f. Removed the frozen crab cakes from vacuum-pack and arranged on a baking sheet, flat side down. I then brushed them with melted Blue Bonnet Light Butter. Baked for 15 minutes on middle oven rack. Turned the Crab Cakes over and press gently to flatten them. Continued to bake for another 10 minutes. Let them cool for 3 minutes and ready to eat! I served these with a side of Louisiana Remoulade Sauce, my favorite for Seafood. Excellent Crab Cakes, lots of Crab Meat and great Seasoning. Another good item to have in your freezer.

 

Then to go with my Crab Cakes I prepared a Stouffer’s Cheddar Potato Bake. Another easy to prepare and delicious dish. To prepare this one I’m using the microwave. It comes in a microwavable tray. I just slit the film cover on the tray and microwaved it for 6 minutes, Done! I love this side by Stouffer’s! Delicious Potato Dish, really like the bread crumb topping. Then I also baked a loaf of La Baguette Roasted Garlic Oval Bread. Perfect Bread with any Dish! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Pretzel Sticks with a Diet Peach Snapple to drink.

Remove frozen crab cakes from vacuum-pack.

Arrange frozen crab cakes on baking sheet, flat side down.

Brush with melted butter or margarine.

Bake for 15 minutes on middle oven rack.

Turn crab cakes over and press gently to flatten.

Continue to bake for another 10-12 minutes.

Just a Bigelow Decaf Green Tea for Breakfast this morning. About 1:30 this morning I awaken by the Phantom Pains again! Not much sleep and the Pains continued till about 2:00 this afternoon. After my Tea I went to Meijer for Mom. She needed Cereal, Pretzels, Chocolate, and Mixed Nuts. I stopped and got gas, stopped by the ATM, and stopped by McDonald’s and picked up Breakfast for Mom. Back home I just tried relaxing and getting caught up on sleep. For Dinner tonight its Baked Jumbo Butterfly Shrimp w/ Mac and Cheese.

 

 

 

 

Mom loves this Shrimp so that’s what I’m preparing tonight. For the Shrimp I prepared a box of SeaPak Jumbo Shrimp. I preheated the oven on 425°f. To start my day off I toasted a Thomas 100 Calorie Multi Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Also had my morning cup of Bigelow Decaf Green Tea. Mostly sunny and 87 degrees out. After Breakfast I went to Meijer for groceries and also the Lawn and Garden Center for a few items. Then by McDonald’s to pick up Breakfast for Mom. I got the cart out of the shed I had to spray for weeds on our side yards. Then got the leaf blower out and cleaned off the deck and driveway. I also bought a battery weed whacker, had to charge for a day before using. For Dinner tonight its Baked Jumbo Butterfly Shrimp with Mac and Cheese.

Today’s Menu: Baked Jumbo Butterfly Shrimp w/ Mac and Cheese

 

 

To start my day off I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Sunnyside Up Fried Egg. Partly cloudy and 88 degrees out today, and humid! After Breakfast I went to the local Kroger, just needed a few things. Then by McDonald’s to pick up Breakfast for Mom. Then later I went with Mom to a family friend’s Funeral. For Dinner tonight its Baked Jumbo Butterfly Shrimp with Mac and Cheese.

Another Freezer Meal tonight, Shrimp and Mac/Cheese. For the Shrimp I prepared a box of SeaPak Jumbo Shrimp. I preheated the oven on 425°f. I then got a small baking sheet, covered with aluminum foil and sprayed it with Pam Cooking Spray. I arranged the frozen shrimp in single layer on the baking sheet. To go with the Shrimp another easy dish, Stouffer’s Classic Mac and Cheese Mac Cups. just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. Well that’s about as an easy Shrimp w/ Mac and Cheese dinner that you can fix!

– Keep frozen until ready to prepare.
– Due to differences in appliances, cooking times may vary and require adjustment.

PREPARATION:
BAKE
* preheat oven to 425°f.

FRY

Today’s Menu: Baked Jumbo Butterfly Shrimp w/ Whole Grain Mac and Cheese

 

 


For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. Didn’t get a lot of sleep last night, Phantom Pains kept me up. They weren’t that painful but just annoying enough to keep waking me up. After I had my Tea I went to McDonald’s to pick up Breakfast for Mom. Then later I drove Mom over to spend the afternoon with Dad. I didn’t stay long, too tired. I went back home and caught up on some sleep. Then later went back to pick her up. For Dinner tonight its Baked Jumbo Butterfly Shrimp w/ Whole Grain Mac and Cheese.

 

 


For the Shrimp I prepared a box of SeaPak Jumbo Shrimp. I preheated the oven on 425°f. I then got a small baking sheet, covered with aluminum foil and sprayed it with Pam Cooking Spray. I arranged the frozen shrimp in single layer on the baking sheet. Then baked at 425 degrees for 13-14 minutes turning over once after 6 minutes. They came out Golden Brown and delicious. Hard to beat these always great tasting. I served them with a side of Heinz Shrimp Cocktail Sauce.

 

 


While at Meijer the other day and picked up a 4 pack of the Kraft 50% Whole Grain Mac and Cheese. They come in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For Dessert/Snack later tonight a bowl of Skinny Pop – Pop Corn along with a Coke Zero to drink.

Tempura Shrimp and Baked Potato

Today’s Menu: Tempura Shrimp and Baked Potato

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea, not much of an appetite this morning. After Breakfast I headed out to Meijer, just needed a few items. Stopped by McDonald’s and picked up Breakfast for Mom and Dad. I’ve had a nagging Sinus Headache since yesterday so I took it easy this afternoon. For Dinner tonight I prepared Tempura Shrimp and Baked Potato.

 

 

 

 

I came across the SeaPak Tempura Shrimp at Meijer in the Frozen Food Aisle. I love using the SeaPak Seafood Products, first time trying the Tempura Shrimp. As all their products its easy to prepare. First I preheat oven to 400°f. Arranged the frozen shrimp in single layer on a small baking sheet covered with foil and sprayed with Pam Non Stick Cooking Spray. I baked the Shrimp for 18 minutes, turned the shrimp over after 6 minutes.

 

 

 

The Shrimp was big and came out with a great Tempura Crust, the Shrimp was delicious! Love the crunchiness and the Shrimp was so tasty. I’ll have to keep a box of these in the freezer. Served it with a side of Heinz Shrimp Cocktail Sauce.

 

 

 

 

 

To go with the Shrimp I prepared a Baked Potato. I took a medium-sized Russet Potato and took a small knife and made small punctures all around the Potato. Put the Potato in a Microwavable Bowl and cooked for 7 minutes and 20 seconds on high heat. Served the Potato Seasoned with McCormick Grinders of Sea Salt and Peppercorn Medley and I Can’t Believe It’s Not Butter. Love a good Potato! For Dessert later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

thaw unopened packet in a cup of hot water.

BAKE
1 – preheat oven to 400°f.

2 – arrange frozen shrimp in single layer on baking sheet.

3 – bake 18 minutes on middle oven rack.

4 – for best results, turn shrimp over after 6 minutes.

Today’s Menu: Fish Sticks, Maryland Style Crab Cakes, and Steak Fries

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. My favorite Breakfast anymore! Not a bad day outside, 28 in the morning and 38 degrees for a high. After Breakfast I went to the local Kroger up the road for a couple of items and the stopped by McDonald’s and picked up Breakfast for Mom and Dad. After Lunch I went over to a friend of mine that was in town, he was staying with his brother. Good seeing him, we’ve been friends since our Freshmen year in High School. For Dinner tonight it’s Seafood and Potatoes. I prepared Fish Sticks, Maryland Style Crab Cakes, and Steak Fries.

 

For the Fish Sticks I used Gorton’s Smart and Crunchy Fish Sticks. Growing up I lived on Fish Sticks. While I was at Meijer the other day I picked up a package of the Gorton’s Smart and Crunchy Fish Sticks. These are coated with Panko Bread Crumbs and to prepare them I’ll be baking them. I first preheated the oven at 375 degrees. I then took a small baking sheet and lined it with foil. Sprayed the foil with Pam Cooking Spray and lined the Fish Sticks up on the sheet. Then baked them for 22 minutes, flipping them over after 11 minutes.

 

 

They came out piping hot, nice crunch from the Panko Bread Crumb Coating and nicely Seasoned. I really like all the Gorton’s Seafood Products. Easy to prepare and good quality Seafood. Served them with a side of McCormick Tarter Sauce.

 

 

 

 

 

Then for the Crab Cakes I used SeaPak Maryland Style Crab Cakes, first time using these. Another item I picked up at Meijer the other day. They come frozen to a box, individually vacuumed sealed.

 

 

 

 

 

To prepare these I preheated the oven to 425°f. Removed the frozen crab cakes from vacuum-pack and arranged on a baking sheet, flat side down. I then brushed them with melted Blue Bonnet Light Butter. Baked for 15 minutes on middle oven rack. Turned the Crab Cakes over and press gently to flatten them. Continued to bake for another 10 minutes. Let them cool for 3 minutes and ready to eat! I served these with an Aioli Sauce that came with the Crab Cakes, excellent Sauce! Very good Crab Cakes, lots of Crab Meat and great Seasoning. Another good item to have in the freezer.

 

 

 

For a side I baked some Ore Ida Steak Fries and had a side of Hunt’s Ketchup for dipping.Also baked a loaf of Pillsbury French Bread. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

 

 

 

Gorton’s Smart and Crunchy Fish Sticks

* remove frozen crab cakes from vacuum-pack.

* brush with melted butter or margarine.
* bake for 15 minutes on middle oven rack.
* turn crab cakes over and press gently to flatten.
* continue to bake for another 10 minutes.

SAUCE
* thaw aioli sauce by placing the sealed sauce packet under running water for about 3 minutes.
