Today’s Menu: Leftovers – Chicken ‘n’ Noodles w/ Sliced Carrots and Baked Garlic Bread Loaf
Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. Partly Cloudy and a high of 80 degrees, Thunderstorms moved in later in the day. We had to move everything off the Kitchen Counters and Kitchen walls, we had the Kitchen painted today. So not much else going on. For Dinner Tonight I reheated the leftovers from last night’s Dinner, Chicken ‘n’ Noodles w/ Sliced Carrots and Baked Garlic Bread Loaf.
Leftovers come in handy on days like today. I’ve left yesterday’s post for the Ingredients and Directions for the dish.
To start; I cut up 2 Perdue Perfect Portions Chicken Breasts into bite size pieces, seasoning them with Sea Salt, Ground Black Pepper, and Litehouse Poultry Seasoning . I then fried them in Extra Light Olive Oil in a large skillet until done.
As the Chicken finished I then added the can of Fixins’ to the skillet. The Fixins’ is a can of Margaret Holmes Simple Suppers Chicken n Noodles Fixins’. Margaret Holmes no longer makes it, lack of sales they say. I’ve been purchasing cans of it on various web sites but I can no longer can find it online and I’m down to my final 2 cans. But anyway, it comes in a 5 serving can and contains the Noodles and Seasoning, Cooked until it the Sauce was bubbling and heated throughout. The broth that’s with Noodles is incredible! Rich and thick and seasoned just right. The Sauce coats the Chicken and gives it incredible flavor. I see a lot of delicious leftovers!
I also had heated up a small can of Del Monte Sliced Carrots. I also baked a loaf of the RiverRoad Bake House Garlic Oval Loaf Bread. This Bread is so good. I buy it at Meijer.

Today’s Menu: Chicken ‘n’ Noodles w/ Sliced Carrots and Baked Garlic Bread Loaf
So for Breakfast this morning I had some more of the Artisan Crafted Kentucky Legend Hickory Smoked Ham. I sliced off a few slices and heated it up in a skillet. Served it with a Sunnyside Up fried Egg and 2 slices of toasted Aunt Millie’s Bread (lightly buttered). Also had my morning cup of Bigelow Decaf Green Tea. I really enjoy the Ham! Had a couple of Thunderstorms this morning and showers on and off later with a high of 80 degrees. We had to have Mom’s car towed last night, the starter went out. So after Breakfast we had to go pick it up. Back home; It was clean the Kitchen today. We are having the our Kitchen painted Thursday and finishing up on Friday. Today cleaned the stove, microwaves, floor, and cabinets. For Dinner Tonight I prepared Chicken ‘n’ Noodles w/ Sliced Carrots and Baked Garlic Bread Loaf.

Today’s Menu: Blackened Chicken Breast w/ Seasoned Pinto Beans, Sliced New Potatoes, and Baked Texas Toast
For Breakfast this morning I prepared Scrambled Eggs, 3 slices of al fresco Uncured Chicken Bacon, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread (lightly buttered), and that morning cup of Bigelow Decaf Green Tea. Outside it’s mostly cloudy and a high of 50 degrees. After Breakfast I went to Costco. First time here in a while. Bought a few items I needed and bought a couple of cases of canned Fruit and Vegetables. On the way home I dropped the cases off at Reach Out Lakota, food and shelter center here in West Chester. Then mailed a couple of letters and stopped by the ATM. Not a lot going on today, did a few things around the house then some work on my computer. For Dinner tonight its a Blackened Chicken Breast w/ Seasoned Pinto Beans, Sliced New Potatoes, and Baked Texas Toast.
I was at Kroger yesterday and picked up a package of Kroger Blackened Chicken Breast. It contained 1 Chicken Breast that was Seasoned with Blackened Spices. The only thing I added to prepare it was some McCormick Grinders of Sea Salt and Peppercorn Medley. I’ll be preparing it in a Cast Iron Skillet.
I started by heating the oven on 400 degrees. I sprayed the Cast Iron Skillet with Pam Non Stick Cooking Spray and added a tablespoon of Bertoli Extra Light Olive Oil. I heated the Skillet on medium heat. When the Skillet was heated I added the Chicken Breast. I seared it for 2 minutes per side. I then moved it to the oven. I love using Cast Iron Skillets. Not only do they hold heat and cook evenly but you can go from the stove on to the oven like I did with the Chicken. I continued cooking the Chicken for 10 minutes, flipping it over one time. Checked the Chicken with an internal meat thermometer, and it read 166 degrees. Took the Skillet out of the oven and let the Chicken rest for 3 minutes before serving. Excellent Blackened Seasoning and the Chicken came out moist and delicious. I’ll have to get another package of this sometime, enjoyed it.
As my Chicken was cooking I prepared my side dishes. I prepared a can of Margaret Holmes Seasoned Pinto Beans. It doesn’t get much better for a canned Beans than these! To prepare it just empty the contents into a medium saucepan. Cover it and bring it to a boil. Stir and reduce the heat to slow simmer and serve when ready. I love Beans of all kinds and these Seasoned Pinto Beans are at the top of the list, love the Seasoning.
For another side dish I heated up a can of Del Monte Sliced New Potatoes. I use a lot of Del Monte Vegetable Products, always delicious and store a lot longer than fresh Vegetables. Finally I baked a slice of New York Bakery Light Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Cumin Spiced Pork Chop w/ Seasoned Pinto Beans and Mashed Potatoes
For Breakfast on this morning I toasted a Healthy Life Whole Grain English Muffin. I topped it with a Poached Egg and I also had a cup of Bigelow Decaf Green Tea. About 12 degrees out this morning, not quite as cold as it’s been. Mostly cloudy and 24 degrees. Warmer temps on the way starting tomorrow, none too soon for me! Well the house is clean, the pantry is straight, oven clean, so not a thing to do today! Did a few things on the computer and then caught up on shows I had recorded. For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Seasoned Pinto Beans and Mashed Potatoes.
I picked A couple of Pork Tenderloin Center Cut Pork Chops at Meijer a while back and them in the freezer. I laid one of the Chops in the fridge overnight to thaw. They have some of the finest Pork Chops you can find.
So to prepare my Chop I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. I always have some of the Rub made up in a large Spice Jar I have To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.
For one side I heated up a can of Margaret Holmes Seasoned Pinto Beans. I purchased a few of cans of this at a nearby Walmart, they carry a good selection of a lot of the Margaret Holmes Products. To prepare it just empty the contents into a medium saucepan. Cover it and bring it to a boil. Stir and reduce the heat to slow simmer and serve when ready. And I have delicious side dish! I love Beans of all kinds and these Seasoned Pinto Beans are delicious, love the Seasoning.
For a second side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. I also baked a loaf of LaBrea Multi-Grain Bread. For Dessert later a Jello Sugarfree Dark Chocolate Pudding.

To start this cloudy Monday morning off I prepared a Thin Cut Breakfast Pork Chop. Seasoned it with Salt and Pepper then rolled it in flour. Fried it in Extra Light Olive Oil, about 3 minutes per side. Then I Scrambled a couple of Eggs, toasted a slice of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. What better way to start a Gloomy Monday morning! Cloudy and 48 degrees outside, and a passing shower. Gave Mom a hand with a couple of loads of laundry and that about it for the day. I had a Sinus Headache that would not quit all day. So it was a lot of rest today. For Dinner tonight I prepared a 6 oz. Buffalo Sirloin Steak w/ Seasoned Pinto Beans and Sliced Potatoes.
Nothing like a Wild Idea Buffalo Steak! So tonight I’m having a Wild Idea 6 oz. Fine Cut Buffalo Sirloin. I had the Sirloin in the freezer so I laid it in the fridge overnight to thaw. To prepare the it I rubbed the Steak with a teaspoon of Extra Light Olive Oil. Then seasoned it with Dried Rosemary and McCormick’s Grinder Sea Salt and Black Peppercorn. As the Steak rested I preheated a Skillet, that I sprayed with Pam Cooking Spray, on medium heat. When the skillet was heated I added my Buffalo Sirloin, I cooked it 4 minutes per side to a beautiful Medium Rare! The Wild Idea Buffalo Steaks are just incredible. So juicy and tender.

For Dessert later a Weight watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Fried Thin Sliced Chicken Breast Cutlets w/ Loaded Baked Potato Casserole and Seasoned Pinto Beans
For Breakfast I made my favorite – Hash Browns, Ham, and Egg. I made some Simply Potatoes Shredded Hash Browns, Heated up some Kroger Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Out side it was 22 degrees this morning and for the day it was mostly sunny and 37 degrees. Went to Walmart after Breakfast. I needed to get some Christmas Candy Canes and Christmas Decorated Cupcakes for all the kids in the family. Then I dropped those off at my cousin’s house later on. Spent the rest of the day baking. I baked Mini Loaves of Pillsbury Pumpkin Cheesecake and Banana Quick Bread. Along with Mini Loaves of Pillsbury Sugar Free Chocolate Cake, also Sugar Free Chocolate Icing. And finally baked a pan of Pillsbury Sugar Free Chocolate Fudge Brownies. I kept the Brownies for here. I make Mini Loaves of Cakes for Christmas and pass them out to our neighbors. Love doing stuff like this! For Dinner tonight its Fried Thin Sliced Chicken Breast Cutlets w/ Loaded Baked Potato Casserole and Seasoned Pinto Beans.
I purchased a package of Simple Truth Chicken Breast Cutlets Thin Sliced at Kroger. I really love using all the Simple Truth items, especially their Chicken and Pork items. To prepare the Chicken Cutlets I’ll need; Morton’s Lite Salt, Ground Black Pepper, Litehouse Poultry Seasoning, Low Fat Buttermilk, Frank’s Hot Sauce, Flour, and Extra Light Olive Oil. Early this morning I poured a 1/2 of Low Fat Buttermilk into a plastic container. Then I added 5 or so shakes of the Frank’s Hot Sauce to the Buttermilk and mixed it together. Next I got my Chicken Cutlets out of the fridge and added the Chicken to the Buttermilk mixture. Sealed the container and put it in the fridge until ready to cook.
Okay, to prepare the Chicken I grabbed the container with the Chicken out of the fridge. I got a plate and I removed the Chicken from the Buttermilk mixture, shaking off the excess. Then seasoned them with Salt, Pepper, and Poultry Seasoning. Then rolled the Chicken in flour. I let the Chicken rest for 5 minutes. And as that was happening I got my skillet ready. Sprayed it with Pam Cooking Spray, added a tablespoon of Extra Light Olive Oil, and heated it on medium heat. When the skillet was heated I fried the Chicken. Fried them for 9 minutes and flipped them over and continued to cook them for another 10 minutes. I checked the Chicken with a thermometer and got a 169 degree reading, done. This Chicken turned out great! The Buttermilk/Hot Sauce brine gave the Chicken a fantastic flavor, excellent dish!
For a side dish I prepared a box of Idahoan Loaded Baked Potato Homestyle Casserole. Being a Potato Lover like I am, I really enjoy all the Idahoan Potato Products. I’ve made the Loaded Potato many times. To prepare it; Preheat the oven to 450°F. Combined the Potatoes and Sauce mix in a 1 1/2 quart baking dish. Stir in 1 1/2 cups boiling Water, 3/4 cup 2% Milk, and 1 1/2 Tbsp. Blue Bonnet Light Butter with whisk. Bake uncovered for 25 minutes or until the top is golden brown and potatoes are tender. Remove from oven and let stand a few minutes before serving. The sauce will thicken slightly as it cools. Such an easy way to get a delicious Potato Casserole!

Oven Directions
Best for Golden Browning
1 – PREHEAT oven to 450°F. COMBINE potatoes and sauce mix in 1 1/2 quart baking dish.
2 – STIR in 1 1/2 cups boiling water, 3/4 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
3 – BAKE uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling).
4 – Remove from oven and let stand a few minutes before serving.
BAKING NOTES: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min. To bake potatoes and roast meat at the same time, bake at 375°F for about 45 min; 350°F for about 50 min; or 325°F for about 60 min.
Stove Top Directions

Today’s Menu: Beef Cubed Steak w/ Peppered White Gravy, Mashed Potatoes, and Seasoned Pinto Beans
For Breakfast this morning I prepared a favorite of mine. I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Mostly sunny out there but its one cold start this morning, 24 degrees! We had a high of 45. After Breakfast I headed off to Kroger to pick up a few things for Mom and our Christmas Tree. Stopped by McDonald’s and picked up Breakfast for Mom and Dad. Cleaned the house this afternoon and had to replace a couple of our floor heat registers. For Dinner tonight I prepared Beef Cubed Steaks w/ Peppered White Gravy, Mashed Potatoes, and Seasoned Pinto Beans.
When at Meijer I always pick up a couple of packages of the Meijer Beef Cubed Steak. They are the best Cubed Steak I have ever found by far and one of the very few times I have Beef. They’re good size patties so I’m able to cut them in half and get 2 meals out of 1 patty. They come 2 to a package and cooked the other Cubed Steak for Mom. This is one of the few times I use Beef. Normally I use Buffalo but as far as I know no one makes Cubed Bison Steak, at least not yet!
To prepare the Cubed Steak I seasoned them with Sea Salt and Ground Black Pepper and I then dusted them in flour that I had mixed with a bit of Hungarian Paprika. Shook off the excess flour and pan fried them in Extra Light Olive Oil, about 4 minutes per side. They came out delicious! Excellent flavor and very tender, especially for Cubed Steak which sometimes can be somewhat tough and stringy. I also made a packet of the Pioneer Peppered White Gravy Mix. Topped the Cubed Steak and Mashed Potatoes with it.
To go with the Cubed Steak you always have to have Mashed Potatoes! I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. I also made a packet of the Pioneer Peppered White Gravy to top the Mashed Potatoes.
Then I heated up a can of Margaret Holmes Seasoned Pinto Beans. To prepare them just empty the can into a sauce pan and heat until heated through. One delicious meal tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.
Cube Steak
Cube steak is a cut of beef, usually top round or top sirloin, tenderized by fierce pounding with a meat tenderizer, or use of an electric tenderizer. The name refers to the shape of the indentations left by that process (called “cubing”). To start this Saturday morning off I had Steak and Egg. I fried up a SayersBrook 4 oz. Bison Fillet Mignon. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. I it came out a perfect medium rare! It was so tender and juicy. Then I fried up a Sunny Side Egg and toasted a couple of slices of Healthy Life Whole Grain Bread. Sure tough to beat a Steak and Egg Breakfast! Also, as usual, my morning cup of Bigelow Decaf Green Tea.
Cold morning out there this morning, 28 degrees. For the day mostly cloudy and a high of 54 degrees. I did a load of laundry after Breakfast. Later on I got the leaf blower out and cleaned off the deck and driveway ares of leaves. Back inside I cleaned the house, dusted and vacuum. Then settled in to watch some College Basketball and Football. For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Seasoned Pinto Beans and Mashed Potatoes.
I picked A couple of Pork Tenderloin Center Cut Pork Chops at Meijer yesterday. I froze one of the Chops and having the other one for Dinner tonight. I really love the Meijer selection and quality of all their meats, and all their products and produce. They have some of the finest Pork Chops you can find.
So to prepare my Chop I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. I always have some of the Rub made up in a large Spice Jar I have To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.
For one side I heated up a can of Margaret Holmes Seasoned Pinto Beans. I purchased a few of cans of this at a nearby Walmart, they carry a good selection of a lot of the Margaret Holmes Products. To prepare it just empty the contents into a medium saucepan. Cover it and bring it to a boil. Stir and reduce the heat to slow simmer and serve when ready. And I have delicious side dish! I love Beans of all kinds and these Seasoned Pinto Beans are delicious, love the Seasoning.
For a second side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. I also baked a loaf of LaBrea Multi-Grain Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. Not feeling real good this morning, restless night, not a lot of sleep. I’ve had a very bad Sinus Headache the past day or so and it’s really wore me down. So I took it easy most of the day. It finally eased up around 2:00 this afternoon. For Dinner tonight I prepared a Boneless and Seasoned Pork Tenderloin w/ Mashed Potatoes and Seasoned Pinto Beans.
While at Meijer I picked up a Meijer Brand Boneless and Seasoned Pork Tenderloin w/ Garlic and Olive Oil. Already Seasoned with Garlic and Olive Oil I then Seasoned it with Morton’s Lite Salt, Ground Roasted Cumin, Chili Powder, and Oregano. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Then took a Cast Iron Skillet, added a 1/2 tablespoon of Extra Light Olive Oil, and heated it over medium-high heat. With the Skillet hot I added the Pork Roast to the pan; cook 4 minutes, browning on all sides. From the stove to the oven; Baked at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! The other “White Meat” sure is good!

A bit nippy out there this morning, 38 degrees. We had a high of 57 degrees and it was sunny. I just love the Fall Season, my favorite time of the year! After Breakfast I headed to Meijer for a few items. Stopped by the bank and dropped off some letters at the Post Office before heading back home. So for Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Mashed Potatoes, Green Beans, and Baked Multi Grain Bread.
