Today’s Menu: Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs

To start this day off I fried an Egg Sunny Side Up, heated up 3 slices of Ham, toasted 2 slices of Aunt Millie’s Live Carb Smart Wheat Bread, and a cup of Bigelow Decaf Green Tea. Good Breakfast for having as rough as early morning as I did. About 4:30 this morning some really painful Phantom Pains hit and continued to about 10:00 this morning. These were really painful! So I was pretty much beat for the day. 74 degrees, overcast, and humid out today. Rain moving in later this evening. After Breakfast I watered all the plants and bushes out front. Cleaned off the deck and I was done for the day. Just rested and caught up on some sleep. For Dinner tonight a favorite of mine, Shrimp w/ Pasta Roni.

 

So for the Shrimp part of the dish I used Meijer Brand Frozen Jumbo Shrimp. This is my frozen Shrimp of choice, best I’ve found. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat. I seasoned them with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Shrimp to the skillet. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.

 

I love having Shrimp with the Pasta Roni – Angel Hair Pasta with Herbs. It comes with the Pasta Special Seasonings Packet and I added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons of Blue Bonnet Light Butter. Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box, leftovers coming tomorrow for Lunch. Nice seasoning, the Pasta is so tender, and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one easily prepared and delicious Shrimp and Pasta Dish! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Mango/Tea Snapple to drink.

Today’s Menu: Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. Started off at 55 degrees but it fell through out the day to around 45 degrees, rain on and off all day. Not up to par today, Sinus Headache most of the day. Did a few things around the house and took a couple of naps. Hopefully up to par tomorrow. For Dinner tonight a favorite of mine, Shrimp w/ Pasta Roni.

 

So for the Shrimp part of the dish I used Meijer Brand Frozen Jumbo Shrimp. This is my frozen Shrimp of choice, best I’ve found. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat. I seasoned them with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Shrimp to the skillet. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.

Just a cup of Bigelow Decaf Green Tea for Breakfast. 29 degrees and light snow out today. About noon it started snowing heavy. We weren’t supposed to get nothing but a dusting but we’ll end up with 3-4 inches. Must be great to be a weatherman. No matter how far you are off, you still have a job! Anyway we met with doctor that will be doing the radiation treatments on Mom to remove the Basal Cancer. I have to have her there 5 days a week for 4 weeks for a 20 minute treatment. She will be glad to get it started and over! Well it’s back outside, I’m trying to keep the driveway clear of snow. For Dinner tonight a favorite of mine, Shrimp w/ Pasta Roni.

So another year Cancer Free! They fell behind at the Doctor’s Office and I was there for over 2 hours! Way too long for 20 minute examination. So many people with Cancer, It’s heartbreaking. Let’s just hope there is a cure all one day. For Dinner tonight a favorite of mine, Shrimp w/ Pasta Roni.

For Breakfast I Poached an Egg and served it on a toasted Thomas Light English Muffin. I also heated up a couple of Johnsonville Turkey Breakfast Sausage Links and had a cup of Bigelow Decaf Green Tea. Another perfect Fall Day outside today! 67 degrees and sunny out. Spent the day outside working on the yard. I got my cart out and the yard tools. I had a guy till part of our backyard the other day. So I bought some grass seed and a couple of bales of hay. I first watered the area and then got the grass seed down. I then spread the hay over the area. Then I finished cleaning the shed and getting items stored for the upcoming Winter. It felt good to be out all day. For Dinner tonight a favorite of mine, Shrimp w/ Pasta Roni.

Too hot to do anything outside, and they say the next couple of days it will be even hotter. After my Tea I went out and watered everything down. I bought some Peaches, Cantaloupe and Half Runner Green Beans. She picked up that and much more while out there. Back home I rested the rest of the afternoon. Allergies are killing me again. For Dinner tonight I heated up the Leftover Shrimp w/ Pasta Roni from last night’s Dinner. I left the post from last night for directions and recipe ingredients.

What You’ll Do
1 – In a medium saucepan bring water, milk and butter or margarine to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil.

Today’s Menu: Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs

 

For Breakfast I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam and had a cup of Bigelow Decaf Green Tea. High of 90 degrees with rain moving in later in the day. After Breakfast I got the cart and my yard tools out of the shed and got some yard work done. Took the leaf blower and cleaned off the deck and driveway areas. For Dinner tonight a favorite of mine, Shrimp w/ Pasta Roni.

 

So for the Shrimp part of the dish I used Meijer Brand Frozen Jumbo Shrimp. This is my frozen Shrimp of choice, best I’ve found. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat. I seasoned them with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Shrimp to the skillet. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.

 

I love having Shrimp with the Pasta Roni – Angel Hair Pasta with Herbs. It comes with the Pasta Special Seasonings Packet and I added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons of Blue Bonnet Light Butter. Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box, leftovers coming tomorrow. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one easily prepared and delicious Shrimp and Pasta Dish! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Sprite Zero to drink.

I had a cup of Bigelow Decaf Green Tea for Breakfast. Real Foggy out early this morning, cleared up by 10:00. 62 degrees and mostly sunny out today. After my Tea I headed out to check out a couple of the local Garden Centers. After that I stopped by Meijer to grab a couple of items and from there to the ATM Machine and finally stopped and got gas. Back home I got the cart out of the shed and did some yard work. For Dinner tonight a favorite of mine, Shrimp w/ Pasta Roni. Take Care and Stay Safe everyone!

Today’s Menu: Sea Scallops w/ Pasta Roni – Butter and Garlic and Baked Italian Loaf Bread

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. After Tea I went and picked up Breakfast at Wendy’s for Mom. Well Mom and her other friends from Church all went to Church today. First time she and her 3 friends have been since last November! They were so glad to go and to see each other again. That is the longest Mom and ever not been to Church in her life, and she really missed going. So I was very glad she’s going back finally. I spent most of the afternoon cleaning and trying to get my Covid Vaccine scheduled. Everything is booked solid right now. I’ll keep trying. For Dinner tonight I’m preparing Sea Scallops w/ Pasta Roni – Butter and Garlic and Baked Italian Loaf Bread.

First time using Sea Scallops with the Pasta Roni, I’ve always used Shrimp. So for the Scallops part of the dish I used Meijer Sea Scallops. I had purchased these last week. I already had washed them and had them in the freezer. I sat the bag in the fridge overnight to thaw. I love Scallops and all Seafood. For the Scallops; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray, 1 tablespoon of Extra Virgin Olive Oil and 1 pat of Blue Bonnet Light Butter, that I heated on medium heat. I seasoned the Scallops with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Scallops to the skillet. Cooked them 2 minutes per side, turning the Scallops once. And as the Scallops was cooking I started to prepare the Pasta.

 

I’m having the Pasta Roni – Butter and Garlic. As all the Pasta Roni’s, it’s Delicious!
