Today’s Menu: Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs

For Breakfast I made a Ham and Cheese Egg White Omelet. I used Bob Evan’s Egg Whites, Meijer Cubed Ham, and Sargento Off the Block Cheddar Cheese. I also had a cup of my favorite Tea, Bigelow Decaf Green Tea. More rain today and every day until next Monday. So rain today and a high of 54 degrees. Well its week 2 of isolation. The Governor of Ohio has shutdown everything but Hospitals, Doctor’s Offices, Grocery Stores, essential Repair shops, and Drive Thru or Curb Side Restaurants. My cousin has been bringing us food and such when she ventures out. Also I’ve been ordering what food and needs on line but its tough finding it anymore. Most Stores are out of a lot of items but its starting to better. So wait is what we’ll do until the virus passes or a cure comes along. I hope all of you stay healthy! For Dinner tonight a favorite of mine, Shrimp w/ Pasta Roni.

Thank goodness for our 2 freezers! We have a good supply of items in the freezer. So for the Shrimp part of the dish I used Meijer Brand Frozen Jumbo Shrimp. This is my frozen Shrimp of choice, best I’ve found. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat. I seasoned them with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Shrimp to the skillet. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.

I love having Shrimp with the Pasta Roni – Angel Hair Pasta with Herbs. It comes with the Pasta Special Seasonings Packet and I added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons of Blue Bonnet Light Butter. Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box, leftovers coming tomorrow. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one easily prepared and delicious Shrimp and Pasta Dish! Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. For Dessert/Snack later a bowl of Smart Pop – Pop Corn with a Diet Peach Snapple to drink.

Today’s Menu: Tomato and Fresh Ricotta Chicken Breasts w/ Olive Oil and Italian Herb Linguine

For Breakfast this morning I toasted a Thomas English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. 85 degrees and a bit more humid, passing rain showers around the area. Well spent the day breaking up Half Runner Green Beans and helping Mom can 14 quarts! Plenty of Green Beans for a while. I’m glad I’ve learned how to can. Not a lot of people can anymore. For Dinner tonight I prepared Tomato and Fresh Ricotta Chicken Breasts w/ Olive Oil and Italian Herb Linguine.

I picked the Chicken up at Meijer, Katie’s Best Skinless and Boneless Chicken Breasts, and had the package in the freezer. Sat the package in the fridge overnight to thaw. To prepare it I’m seasoning the Chicken with Morton’s Lite Salt and Ground Black Pepper. I grabbed a skillet and sprayed it with Pam Non Stick Cooking Spray and a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat.

When the skillet was heated I added the Chicken Breasts. Cooked the Chicken for 7 minutes a side. With a couple of minutes of cooking time left I turned the heat down to medium low and added the jar of Prego Cooking Sauce. Flipped the Chicken one last time with a minute left. I cooked it an extra minute to let those flavors of the Tomato and Fresh Ricotta marinate the Chicken Breasts. Checked temperature of the Chicken with a thermometer and it read just a tad over 165°. Removed the skillet from the heat and let it sit a couple of minutes until the Pasta finished. I came across the Prego Cooking Sauce – Tomato and Fresh Ricotta Sauce at Meijer last week, looking forward to trying their other Sauces!

I’m serving the Chicken with Pasta Roni Rustic Recipes Olive Oil and Italian Herb. I’ve had this many times but usually with Shrimp. Easy to preapre and makes a delicious Pasta Dish, I’m preparing this as my Chicken is cooking. To prepare it In medium saucepan, bring Water and Olive Oil to a boil. Then slowly stir in Pasta and Special Seasonings. Return to a boil. Reduce the heat to medium. Boil uncovered, 10-12 min., stirring frequently. The Sauce will be thin so just let it stand for 3min. to thicken. Pasta Done! I love these Rice A Roni and Pasta Roni products! Added a sprinkle of Morton’s Light Salt to it.

To serve it I made a bed of the Pasta in a bowl and top it with a one of the Chicken Breasts and the Sauce. Topped it all with some Kraft Reduced Fat Grated Parmesan Cheese. I really like this Prego Cooking Sauce! Excellent flavor and Seasoning, perferct for the Chicken. Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. For Dessert later a bowl of South Carolina grown fresh sliced Peaches, love these Peaches!

For Breakfast I Scrambled some Egg Beater’s Egg Whites and topped those with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Then I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. Also had a cup of Bigelow Decaf Green Tea. More rain today, heavy at times. High of 47 degrees. Cleaned the house today, dusted and vacuumed. Caught up on everything so I caught up on some shows I had recorded. For Dinner tonight Leftovers – Shrimp w/ Pasta Roni. I’ve left the original post from yesterday for the dish preparation and description.

So for the Shrimp part of the dish I used Meijer Brand Jumbo Shrimp.

Let stand 3-5 min. to thicken. There’s 2 servings per box. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one delicious Shrimp and Pasta Dish! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

For Breakfast I toasted a Thomas Light 100% Multi Grain English Muffin that I lightly buttered with I Can’t Believe It’s Not Butter and made a cup of Bigelow Decaf Green Tea. Cloudy, rainy, and 52 degrees out today. Well today was clean and straighten the Kitchen day. Cleaned the counters, fridge, freezer, and stove. Then hit the canned good shelves and straightened those out, had to toss a few cans that were buried in the back that had expired. For Dinner tonight a favorite of mine,Shrimp w/ Pasta Roni.
