Today’s Menu: Chili and Cheese Nachos

 

 

For Breakfast this morning I toasted a Thomas Light 100 Calorie Multi Grain English Muffin and topped it with a Poached Egg. And of course I had my morning cup of Bigelow Decaf Green Tea. Allergies and Sinuses still haven’t let up, really suffering this year! Sunny, humid and 88 degrees outside today. After Breakfast I went to Meijer, needed Bread and Buns. Stopped by the ATM and then by McDonald’s to pick up Breakfast for Mom. Back home got the leaf blower out and cleaned off the deck and driveway areas. Done for the day after that. Allergies kicking in! For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

 

We love Chili and Cheese Nachos! To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!

 

 

To prepare I preheated the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert later a Jello Sugar Free Dark Chocoilate Pudding topped with Cool Whip Free.

 

 

Hormel: Turkey w/Beans 98% Fat Free Chili

Directions:
Stove top: empty chili into saucepan. Stir occasionally while heating over medium heat, about 5 minutes or until hot. Microwave: empty chili into microwaveable bowl; cover loosely. Heat for 2 To 3 minutes or until hot, stirring once. Careful. Let chili stand in microwave 1 minute and stir before serving. All microwaves And stoves vary. Times given are approximate.

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I went to Meijer for a couple of items and then picked up Breakfast for Mom. Outside 79 degrees with rain showers early then clearing up for the day. After Lunch I got the cart out and sprayed for weeds around the house and shed. Everything done, I kicked back and took a short nap. I’m not sure what’s wrong, just feeling bad. Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

We have a high of 41 degrees and cloudy out today. I drove Mom and Dad to the Doctor’s, Dad had a check-up. He’s to the point where we can barely get him in and out of the car. All we can do is try to keep him comfortable here at home. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

To start my day off I toasted a couple of Eggo Nutrigrain Waffles. Also had the morning cup of Bigelow Decaf Green Tea. Not quite as cold this morning, 30 degrees. Had a high of 45 degrees and mostly sunny, not bad for this time of year. Mom went to Church and stayed home and watched Dad. So I cleaned the house and did a load of laundry. After Lunch I got the leaf blower out and cleaned the deck and driveway off, still a lot of leaves blowing around. Had everything done and caught up on some programs I had recorded. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Quick n’ Easy Turkey Nachos
Are they amazing nachos because they’re piled high with melted cheese and taco-seasoned lean ground turkey? Or because they’re ready in just under 30 minutes? We’ll let you decide.

INGREDIENTS

1 (16-ounce) package JENNIE-O® Lean Taco Seasoned Ground Turkey
½ cup baked tortilla chips
1 cup shredded Mexican blend cheese
½ cup fat-free sour cream
1 medium tomato, seeded and diced
1 jalapeño pepper, sliced into thin rounds
¼ cup chopped cilantro leaves

DIRECTIONS

1) Cook turkey as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer.
2) Spoon turkey over tortilla chips. Top with cheese, sour cream, tomato, jalapeño and cilantro leaves.
* Always cook to an internal temperature of 165°F.

(Crock Pot Ribs) – Barbecue Rib Nachos

Today’s Menu: (Crock Pot Ribs) – Barbecue Rib Nachos

 

 

Had a toasted Healthy Life English Muffin, lightly buttered, and a cup of my Bigelow Decaf Green Tea. Right after Breakfast Me and Mom headed to Jungle Jim’s Market in Fairfield. The most amazing grocery store you could ever be in! It’s tough going in and leaving with what you wanted, you always end up with more! We didn’t stay long though, we can’t leave Dad alone too long. Outside it is miserable! It’s sunny and 92 degrees with the humidity at 88%! So no outdoor activities today. Did a few things around the house and watched a couple of shows I had recorded. For Dinner tonight a new recipe, and one I was looking forward to try. Tonight its Barbecue Rib Nachos.

 

 

I came across this recipe on Facebook and could not wait to try it, Barbecue Rib Nachos! This has no choice but to be good, Ribs and Nachos, no choice! I purchased the Pork Back Ribs at Meijer yesterday. I’m using Meijer Pork Back Ribs. The Meijer Pork products always turn out great, very moist and tender. I’m preparing them the same way I always do Ribs, in the Crock Pot.

 

 

 

 

 

I started by Marinating the Ribs in JB’s Fat Boy HaugWaush BBQ Sauce. My favorite BBQ Sauce, I purchase this at Kroger. I Ribs came packaged as 1/2 Racks. First time I’ve seen 1/2 Racks like that, good idea though if you are just cooking for one. Plus it saves me time by not having to cut the Ribs, which I have to do to fit in the Crock Pot. So I put the Ribs into a gallon Hefty Bag, added the BBQ Sauce to them, sealed the bag, and let them Marinate overnight in the fridge.

 

 

 

Next day to prepare them I first got out the Crock Pot and put the plastic liner in. I love these liners, they make clean up a breeze. I then sprayed the liner with Pam Cooking Spray, added a 1/2 cup of Water, and turned the Crock Pot on to low and put the lid on. Got the Ribs out of the fridge and let them sit for about 20 minutes before adding them to the Crock Pot. I shook off the excess Sauce before putting them in the Crock Pot. The Ribs are in and I put the lid on and let them cook for 7 hours. In about the 4th hour the you can start to smell the aroma of the Ribs!

 

 

Ready to bake!

 

As the Ribs were cooking I gathered my Ingredients to make the Nachos. I’ll need Ribs (which were already coking), JB’s Fat Boy HaugWaush BBQ Sauce (Some for the Ribs and extra for the Nacho Dish), Sargento Shredded Mozzarella, Tostito’s Whole Grain Scoops , Litehouse Spring Onions, Lettuce, and Jalapeno Slices.
 

 

 

 

After 7 hours of Slow Cooking the Ribs are fall off the bone Ribtastic! I removed the Rib Meat from the bones, which was very easy as the bones just pulled out, and set aside. I got out the large Cast Iron Skillet and gave it a light coat of Pam Cooking Spray. Set the oven to Broil. Layer 1/3 of the Scoops with 1/3 of the cheese and BBQ Sauce into the Skillet. Repeat 2 more times until the nachos are built. Broil for 90 seconds or until the Cheese is melted and bubbly. I garnished with some Litehouse Spring Onions, Lettuce, and some Jalapeno Slices.

 

 

 

…and ready to eat!

All I can say is INCREDIBLE! Hats off to the Seasoned Sprinkle website, nothing less than excellent recipe! The Ribs, BBQ Sauce, Cheese, and Scoop Chips all blend together to make this one delicious dish. Ribs and Nachos, go figure! The original recipe and web link is at the end of the post. The original recipe has a recipe for the BBQ Sauce, where i used the JB’S Fat Boy Sauce. Also they used Spare Ribs and I used Pork Back Ribs. It all turned out to be a winning recipe! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

 

 

 

BARBECUE RIB NACHOS
Barbecue Rib Nachos make the perfect summer party food

Ingredients

For the Sauce:
3 cans peaches
2 adobe peppers
5 teaspoons chili powder
3 teaspoons paprika
1 teaspoon cayenne pepper
3 teaspoons garlic powder
1/2 teaspoon salt
1 teaspoon black pepper
4 teaspoons cumin
1/2 cup molasses
3 teaspoons vinegar
1/3 cup brown sugar

For the Rub:
1/4 cup evoo
Salt and pepper
1 T garlic powder
2 T paprika
1 t cayenne pepper
2 T chili powder
1 T cumin
1/4 cup brown sugar

For the nachos
3-4 pounds Smithfield extra tender ribs, cut from the bone and shredded
1 large bag of tortilla chips
4 cups of cheddar cheese
the reserved barbecue sauce

Instructions

For the sauce
Drain about half of each can of peaches and add remainder to blender with peppers and garlic.Blend them until smooth.
Combine all sauce ingredients in pot and cook over low heat for 1-2 hours. This sauce gets better the longer it cooks.

For the ribs
Combine all rub ingredients in bowl. Rub directly on to ribs. Brush sauce on over ribs. Cook over indirect heat of coals for 4-6 hours or until the meat is falling off the bone, brushing with more sauce periodically.

For the nachos
Remove the rib meat from the bones and set aside. Layer 1/3 of the chips with 1/3 of the cheese and reserved barbecue sauce. Repeat 2 more times until the nachos are built. Broil for 90 seconds or until the cheese is melted and bubbly. Garnish with green onions and jalapenos if desired. Enjoy!

Today’s Menu: Chili and Cheese Nachos

 

 

For Breakfast this morning I prepared Turkey Sausage and Hash Browns. I had a package of Eckrich Smoked Turkey Links in the freezer, so I put the package in the fridge to thaw overnight. They are very easy to prepare, just heat in a skillet for 6 minutes and done. For the Hash Browns I used Simply Potatoes Shredded Hash Browns. Had a very bad night of dealing with Phantom Pains. These were almost violent pains I had to deal with. I just pray that one day they come up with a cure for these! Then last night we got a call from the rehab center where Dad is at and they told us he has Shingles! So now he is under quarantine for 3-5 days! What else can happen!! Weather wise we hit about 75 degrees yesterday afternoon and the temps dropped quickly and we had snow flurries in the early morning, this weather is crazy! After Breakfast I headed up the road to the local Kroger for a few items we needed. Didn’t do a whole lot today but rest, didn’t get a lot of sleep last night. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

 

We love Chili and Cheese Nachos and I haven’t had them in a while! Ingredients; I used Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some sliced Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!

 

 

To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! Also had a Diet Dr. Pepper to drink. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

For Breakfast this morning I prepared Turkey Sausage and Hash Browns. I was out of the Jennie – O Turkey sausage Links, I haven’t found any at Meijer lately, and Meijer is the only store I can find Jennie – O products. So I had a package of Eckrich Smoked Turkey Links in the freezer, so I put the package in the freezer to thaw overnight. They are very easy to prepare, just heat in a skillet for 6 minutes and done. For the Hash Browns I used Simply Potatoes Shredded Hash Browns. Not a bad day out today, partly sunny and in the 50’s. After Breakfast I got the leaf blower out and cleaned our deck and driveway, lot of leaves. After that I cleaned the house, vacuum and dusted. Everything done and this afternoon its NFL Football, love Football! For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Started this rainy morning off with a Gouda Egg White Omelet with Turkey Sausage Links and Toast. The Shredded Gouda worked perfect as the Cheese filling in the Omelet. For the Omelet I used Meijer Brand Egg White Substitute. My Sausage was Jennie – O Turkey Breakfast Sausage Links along with toasted Healthy Life Whole Grain Bread. And not forgetting, my morning cup of Bigelow Decaf Green Tea.

We went from being very dry out to very wet, with flooding! A whole lot of rain yesterday evening through the morning. It finally slowed and cleared up somewhat as the day went on. When we finally got a break I headed out to Meijer and Kroger. Purchased the majority of the items at Meijer. Then at Kroger a few items I needed and all of Mom’s items she needed. Noticed a most of the trees have turned to their Fall Colors throughout the area now. Lot of bright colors this year. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Got to have my Chili and Cheese Nachos every so often, and tonight’s the night! Ingredients; I used Tostitos Multi Grain Scoops for my Chips. Anyone that uses small cans of Sliced Black Olives know what a pain they can be opening sometimes. Not these, they come in a can with a pull tab About time! For my other toppings I sliced up some sliced Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good!

They moved my dad from the hospital to a rehab center, his breathing is getting worse and we are all fearing the worst. He’s come back before but he’s never been this bad. Just hope he pull through! Went to Meijer early this morning for Mom and myself. Excellent buy on Hefty Zip Freezer and Stoirage Bags, 50% off! Stocked up on some Jennie O Turkey Products also. Back home put everything away and off the see Dad at the rehab center. Got back and did some much needed straightening up and organizing of the kitchen cabinets. For dinner tonight Mom requested some Chili and Cheese Nachos. So guess what we are having, Chili and Cheese Nachos!

 

 

 

Make a bed of Tostito’s Multi Grain Scoops, Hormel Turkey Chili with Beans, Black Olives, Green Olives, Sliced Jalapenos, all covered up  with a blanket of Sargento Shredded Mozzarella. That’s Dinner Tonight!
