Today’s Menu: Turkey Meatball Mini Sub w/ Baked Crinkle Fries

 

 

For Breakfast I toasted a Thomas Light English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. One cold and windy day outside today! We had a high of 34 degrees but the Wind Chill had it in the teens all day. I went and picked up Breakfast for Mom and the right front tire went flat after I got home. A neighbor came over and filled the tire for us and I took it to the car to the mechanic we always use. He repaired the tire and back home after I stopped for gas. For Dinner tonight I prepared a Turkey Meatball Mini Sub w/ Baked Crinkle Fries.

 

 

I used the Meijer Turkey Meatballs leftover from the Spaghetti I made the night before. The Meatballs are good size, meaty, and have a fantastic taste and they’re 150 calories and 5 net carbs for 6 Meatballs. Plus they’re a perfect size for Hoagie or Hot Dog Buns, I used Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Buns.

 

 

For my Pasta Sauce I had used the LaRosa’s Original Sauce. A local favorite and mine also, it’s got a perfect combination of a robust sauce with a hint of sweetness to it. To prepare it I took a medium size sauce pan and sprayed it with Pam Cooking Spray. Emptied the can of Sauce in the pan and turned the heat on medium. Then I added my Turkey Meatballs and covered the pan and let it simmer until both the Sauce and Meatballs were heated through.

 

I’m using Sargento Off the Block Shredded Mozzarella Cheese as a topping for the Sub. You can use Hoagie Buns but to save on calories and carbs I usually just use Aunt Millie’s Reduced Fat Whole Grain Hot Dog Buns or Healthy Life Wheat Hot Dog Buns. To assemble; open the Bun up, put the Meatballs and Sauce in the Bun , top it with a few shakes of McCormick Grinder Italian Seasoning, and top it with the Sargento Shredded Mozzarella Cheese. Love these Meatball Sandwiches! The Larosa’s Sauce just seems to bring the Sandwich together! Sauce is incredible, Turkey Meatballs flavorful and meaty, and the Mozzarella is perfect with Pasta and Sauces.

 

I also prepared some Ore Ida Crinkle Cut Fries with a side of Hunt’s Ketchup for dipping. For Dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream.

Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast

 

 

For Breakfast this morning I Scrambled a couple of Eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. 19 degrees out there this morning. We had a high of 36 degrees and sunny. I had to be at Kroger at 10:30 to pick up my order. I just order on line and they pull the order. Then I pick it up, they bring it to the car. I still prefer going myself but when I need something from Kroger I’m going to try this for a while. Well Mom had no side effects from her 1st Covid Shot. She had the Pfizer Vaccine which seems to be the better one. Did a load of laundry and did some cleaning in the shed and driveway. So for Dinner tonight I prepared Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast.

 

It’s Spaghetti and Meatballs tonight, one of my favorites! And you can always make it healthier by using Whole Wheat Spaghetti and Turkey Meatballs. For the Meatballs I’m using Meijer Turkey Meatballs. These Meatballs are 150 calories and 5 carbs per serving (6 Meatballs). For the Spaghetti I’ll be using Ronzoni Healthy Harvest Whole Grain Spaghetti.

 

I’ll be cooking the Meatballs in LaRosa’s Sauce, one of my favorites! The Sauce goes great on Pasta, Pizza, or as a Dipping sauce. I grabbed a small Sauce Pan, sprayed it Pam Non Stick Cooking Spray, added the sauce to it, and heated on medium low heat. As the sauce started to heat up I added the Turkey Meatballs, stirred until covered with the Sauce. Cooked them for 7 minutes and then reduced the heat to low until I was ready to use them.

 

 

As I said I’m using Ronzoni Healthy Harvest Whole Grain Spaghetti. It’s my favorite and I use all the Ronzoni Healthy Harvest Pastas. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta. To prepare the Spaghetti; I cooked the Spaghetti as to the package instructions. I used a large Sauce Pan and filled it 1/2 way up with water. Turned the burner on high and brought the water to a rapid boil. Added the Spaghetti and stirred, returning it to the rapid boil. Cooked it uncovered, stirring it occasionally. Cooked it for a total of 8 minutes and done! Love this Pasta so tender and tasty. As the Spaghetti was cooking I baked the New York Bakery Light Texas Toast. For Dessert/Snack tonight I’m having a 100 Calorie Mini Bag of Snyder’s Pretzel Sticks and a Coke Zero to drink.

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Went out to get the paper and the wind was blowing and it was 26 degrees! One chilly morning. For the day windy, mostly sunny and 45 degrees. The yard is full of leaves and branches from the strong winds we’ve had. It wouldn’t do much good to rake and clean the yard until this wind dies down. Did a few chores around the hose and that was it for the day. So for Dinner tonight I prepared Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast.

After Breakfast I picked a friend of mine up and we went out to Ross, Ohio back out to the produce markets there. We got 1/2 Runner Green Beans, White Sweet Corn, Tomatoes, and Watermelons. Back home started to do some yard work but it started raining again. So for Dinner tonight I prepared Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast.

After Breakfast I tried going to see my Uncle in the hospital but they are only letting direct family members in. They need to get back to the normal soon. Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast

 

 

For Breakfast this morning I Scrambled a couple of Eggs and toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread that I topped with I Can’t Believe It’s Not Butter Light. I also had a cup of Bigelow Decaf Green Tea. We had a freeze warning for this morning, 29 degrees out. 52 degrees and cloudy with showers moving in late. My Sinuses have let up a little so I was able to function better! Did a load of laundry after Breakfast. Later on I got the vacuum out and attached the long hose to it. Then I went around to all the heating vents and removed them from the floor. I then got the sweeper and used the long hose to vacuum the dust out of them. I was amazed at all the dust that came out of the vents. I’ll have to start doing this more often. For Dinner tonight I prepared Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast.

We love Spaghetti and Meatballs! So it’s Spaghetti and Meatballs tonight! And you can always make it healthier by using Whole Wheat Spaghetti and Turkey Meatballs. Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast

 

 

 

For Breakfast this morning I made an Egg White ham and cheese Omelet. I used Egg Beater’s Egg Whites, Meijer Cubed Ham, and Sargento Off the Block Cheddar Cheese. Partly cloudy, windy ,and 56 degrees out today. After Lunch I got the cart out of the shed and got a few things done outside. I had enough wood skirting to replace part of the trim around the shed. Then I got a long handled brush and I cleaned part of the deck. Hopefully some day I can afford to have a new deck built, hopefully soon! For Dinner tonight I prepared Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast.

For Breakfast this morning I microwaved a Jimmy Dean Simple Scrambles Cup – Crumbled Turkey Sausage, Egg Whites, and Shredded Cheddar Cheese. I also had a cup of Bigelow Decaf Green Tea. Back to cloudy and 40 degrees outside today. We need a few days of Sunshine! After Breakfast I headed out to Meijer, needed quite a few items. Back home it was freezer purge day. We have a stand up freezer that Mom uses and she wanted me to go through it and get rid of any items that were outdated. Had everything done so I took a late afternoon nap, my sinuses are running wild today. For Dinner tonight I prepared Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast.

 

 

Wasn’t sure what to have for Dinner till I came across the Meatballs in the freezer. So it’s Spaghetti and Meatballs tonight! And you can always make it healthier by using Whole Wheat Spaghetti and Turkey Meatballs. For the Meatballs I’m using Meijer Turkey Meatballs. These Meatballs are 150 calories and 5 carbs per serving (6 Meatballs). For the Spaghetti I’ll be using Ronzoni Healthy Harvest Whole Grain Spaghetti.

 

 

 

 

I’ll be cooking the Meatballs in LaRosa’s Original Pasta Sauce, one of my favorites! The Sauce goes great on Pasta, Pizza, or as a Dipping sauce. I grabbed a small Sauce Pan, sprayed it Pam Non Stick Cooking Spray, added the sauce to it, and heated on medium low heat. As the sauce started to heat up I added the Turkey Meatballs, stirred until covered with the Sauce. Cooked them for 7 minutes and then reduced the heat to low until I was ready to use them.

 

 

 

 

As I said I’m using Ronzoni Healthy Harvest Whole Grain Spaghetti. It’s my favorite and I use all the Ronzoni Healthy Harvest Pastas. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta. To prepare the Spaghetti; I cooked the Spaghetti as to the package instructions. I used a large Sauce Pan and filled it 1/2 way up with water. Turned the burner on high and brought the water to a rapid boil. Added the Spaghetti and stirred, returning it to the rapid boil. Cooked it uncovered, stirring it occasionally. Cooked it for a total of 8 minutes and done! Love this Pasta so tender and tasty. As the Spaghetti was cooking I baked the New York Bakery Light Texas Toast. For Dessert tonight a cup of Bigelow Decaf Green Tea.

Today’s Menu: Leftovers – Meatball Pasta Bake w/ Baked Garlic Oval Loaf Bread

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 37 degrees and mostly cloudy out today. After I had my Tea I headed out to the Grocery Store. I first went to Kroger for Mom and then on to Meijer for a few items. Back home cleaned the house today, dusted and ran the vacuum. Spent the rest of the day watching NFL Football. For Dinner tonight I prepared a Meatball Pasta Bake and Baked Garlic Loaf Bread. I didn’t want the leftovers to go to waste from Thursday night’s Dinner so I reheat the Meatball Pasta Bake. Just as good the 2nd time! I left the original post from the other night for directions and description. Enjoy!

 

To make this recipe I’ll be needing: Ronzoni Healthy Harvest Whole Grain Penne Rigate Pasta, LaRosa’s Sauce, Meijer Turkey Meatballs, LiteHouse Dried Oregano, Morton’s Lite Salt, Sargento Off the Block Mozzarella Cheese, Extra Light Olive Oil, and Kraft Reduced Fat Grated Parmesan Cheese.

 

 

 

I first turned the oven on to 425 degrees. To prepare it was easy! I used the Leftover Meijer Turkey Meatballs in the LaRosa’s Sauce. I put those in a sauce pan and reheated them on medium low, stirring often.

 

 

 

 

As the Meatballs and Sauce was heating I made my Pasta. I grabbed a large sauce pan and filled it 3/4 full of water, added the Salt to the water. Brought the water to a rapid boil. Added the Pasta and stirred; return to rapid boil. Cook uncovered for 8 minutes, stirring occasionally. I removed the Pasta just before it was done. It will finish in the oven without getting over cooked. Drain well.

 

 

 

I added the Pasta to casserole glass dish. Reseason with the Salt and added the Oregano and a tablespoon of Extra Light Olive Oil. Stirred until well mixed. Next I added Meatballs and Sauce and stirred until the Pasta was well coated with the Sauce and the Meatballs mixed in.

 

 

 

Topped everything with the Mozzarella Cheese and Oregano. Popped it in the preheated oven. and baked for about 20 minutes. I really wanted all those flavors to marry together. Before removing from the oven I switched it on to the broiler and left it in the oven another 3 minutes to get the Cheese a little brown on top. Done and ready to serve!

 

 

 

Served it in a bowl, I topped it with a sprinkle of the Grated Parmesan Cheese. One delicious dish! By making extra Meatballs in Sauce I got 2 delicious meals out of it. I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish, especially Pasta Dishes!

Today’s Menu: Meatball Pasta Bake w/ Baked Garlic Oval Loaf Bread

 

 

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, 3 slices of Glier’s Turkey Goetta, fried 1 medium Egg Sunny Side Up, and a cup of Bigelow Decaf Green Tea. Finally found the Glier’s Turkey Goetta on my last visit to Jungle Jim’s International Market. I love Goetta! Cloudy with rain showers late in the afternoon, high of 44 degrees. Went to Kroger for Mom after Breakfast. When I got to Kroger it was busy but the time I left it was packed. I’ll be glad when the Holidays are over and stores get back to normal. Gave Mom a hand in making Chocolate Fudge, Buckeyes, and Chex Mix. For Dinner tonight I prepared a Meatball Pasta Bake and Baked Garlic Loaf Bread.
