Today’s Menu: Salmon Patties w/ Mac and Cheese

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced Ham,and made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns and served.And had my morning cup of Bigelow Decaf Green Tea. Mostly sunny and a high of 85 degrees. Got the cart out and took a spin around the neighborhood before it got too hot out this morning. After Lunch I cleaned and straightened the pantry and then straightened up both freezers. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

 

 

 

 

Golden Brown

In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Virgin Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

 

 

 

 

 


For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I like using these because there’s one serving in each cup. So no waste if I’m just cooking for myself. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Fried Shrimp w/ Cheddar Potato Bake and Sliced Italian Bread

 

 

For Breakfast on this Sunday Morning I prepared a Scrambled Egg, heated up 2 Johnsonville Turkey Breakfast Sausage Links, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had my morning cup of Bigelow Decaf Green Tea. Outside it’s 93 degrees and very humid. After Breakfast I went to Kroger for a couple of items and then stopped by McDonald’s to pick up Breakfast for Mom, and stopped and filled her car up with gas. Gas is still around 2.89 a gallon around here. Mom went to Church and it house cleaning and laundry for me. Later I cleaned the oven and fridge. For Dinner tonight I prepared Fried Shrimp w/ Cheddar Potato Bake and Sliced Italian Bread.

 

So for the Shrimp I used Meijer Brand Jumbo Shrimp. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray, added a 1 tablespoon of Extra Light Olive Oil, and I heated on medium heat. I seasoned the Shrimp with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Shrimp to the skillet. Cooked them 2 minutes per side, turning the Shrimp once. Cooked up perfect! The Meijer Shrimp is some of the best!

 

 

For a side I prepared a Stouffer’s Cheddar Potato Bake. Another easy to prepare and delicious dish. To prepare this one I’m using the microwave. It comes in a microwavable tray. I just slit the film cover on the tray and microwaved it for 6 minutes, Done! I love this side by Stouffer’s! Delicious Potato Dish, really like the bread crumb topping.

 

 

 

 

I was at Walmart yesterday afternoon and I bought a loaf of Sliced Italian Bread, couldn’t resist buying a loaf it looked so fresh! Topped it with I Can’t Believe It’s Not Butter. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Trop A Rocka Snapple.

Today’s Menu: Baked Jumbo Butterfly Shrimp w/ Mac and Cheese

 

 

To start my day off I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Sunnyside Up Fried Egg. Partly cloudy and 88 degrees out today, and humid! After Breakfast I went to the local Kroger, just needed a few things. Then by McDonald’s to pick up Breakfast for Mom. Then later I went with Mom to a family friend’s Funeral. For Dinner tonight its Baked Jumbo Butterfly Shrimp with Mac and Cheese.

 

 

For the Shrimp I prepared a box of SeaPak Jumbo Shrimp. I preheated the oven on 425°f. I then got a small baking sheet, covered with aluminum foil and sprayed it with Pam Cooking Spray. I arranged the frozen shrimp in single layer on the baking sheet. Then baked at 425 degrees for 13-14 minutes turning over once after 6 minutes. They came out Golden Brown and delicious. Hard to beat these always great tasting. I served them with a side of Heinz Shrimp Cocktail Sauce.

 

 

 

To go with the Shrimp another easy dish, Stouffer’s Classic Mac and Cheese Mac Cups. just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. Well that’s about as an easy Shrimp w/ Mac and Cheese dinner that you can fix! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

 

 

 

 

SeaPak JUMBO BUTTERFLY SHRIMP

– Keep frozen until ready to prepare.
– Due to differences in appliances, cooking times may vary and require adjustment.
– Microwaving not recommended.
– For food safety this product must be cooked to an internal temperature of 165°F
– Caution – Product will be hot!
PREPARATION:
BAKE
* preheat oven to 425°f.
* arrange frozen shrimp in single layer on baking sheet so shrimp are not touching.
* for full package, bake 13 to 14 minutes.
* for best results, turn product over halfway through cooking.

FRY
* preheat oil to 350°f.
* place frozen shrimp in fry basket.
* for full package fry 2 minutes and 30 seconds to 3 minutes.
* drain on absorbent paper before serving.

Today’s Menu: Fried Freshwater Shrimp w/ Mac and Cheese

 

To start the day off I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. I love combinations of Potatoes and Ham , especially for Breakfast! Outside on the 2nd day of June its Partly Sunny and 84 degrees. Did a few things around the house then went outside and got the leaf blower out. Cleaned the deck and driveway areas off. After Lunch we went up and spent most of the afternoon with Dad. Dad is down to 120 lbs. now and he barely eats anything at all. He’s not doing good at all. For Dinner tonight it’s Fried Freshwater Shrimp w/ Mac and Cheese.

 

We’re having Shrimp tonight, we could eat Shrimp and Seafood every day! While at Kroger yesterday I picked up some of the huge Freshwater Colossal Shrimp, I cleaned them and put them in the fridge until needed for Dinner tonight. I love these, they are so meaty. They don’t have that Ocean taste like Ocean Shrimp but they’re not bad. To prepare these I’m using McCormick Golden Dipt Cracker Meal Seafood Fry Mix.

 

 

 

 


Poured about 1 inch of Extra Light Olive Oil into large skillet. Heated the oil to 350°F on medium heat. I then took a 1/2 cup of the Cracker Meal Mix in a Hefty Zip Lock Plastic Bag. Take the peeled shrimp, 3 at a time and place them in the bag and shake until Shrimp had a nice coating on them. Had all the Shrimp coated I then began to fry them. Frying them about 3 minutes the shrimp, a few pieces at a time, in the hot oil until light golden brown turning after 1 1/2 minutes. Drain on paper towel lined plate . Love using the McCormick Cracker Meal Mix, nice light crust and seasoning.

 


To go with the Shrimp I prepared some Stouffer’s Classic Mac and Cheese Cups. just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. I baked a loaf of La Brea Bakery Multi Grain Bread. For Dessert later a Jello Sugar Free Dark Chocolate

Today’s Menu: Baked Jumbo Butterfly Shrimp w/ Mac and Cheese

For Dinner tonight its Baked Jumbo Butterfly Shrimp with Mac and Cheese.

 

Another Freezer Meal tonight, Shrimp and Mac/Cheese. For the Shrimp I prepared a box of SeaPak Jumbo Shrimp. I preheated the oven on 425°f. For Breakfast I had my morning cup of Bigelow Decaf Green Tea. It’s a beautiful day out there today, 78 degrees and mostly sunny! After Breakfast I went to Meijer for a few items and then on the way back home I picked up Breakfast for Mom at McDonald’s. After she ate we headed out to go see Dad. His health is really declining and not a thing we can do about it. Back home I got the cart out and did some yard work and then repotted a couple of plants for Mom. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

Today’s Menu: Fried Rockfish Fillets w/ Mac and Cheese

 

 

For Breakfast this morning I Poached an Egg and served it on a Healthy Life Whole Grain English Muffin. Then I heated up a couple of Johnsonville Turkey Breakfast Sausage Links. Also had my morning cup of Bigelow Decaf Green Tea. Partly cloudy and a high of 49 degrees out. After Breakfast headed out to Mernard’s. They had a few things on sale this week we needed around and for outside the house. Waiting for it to dry out around here, getting behind on some outside work that needs to be done. For Dinner tonight I prepared Fried Rockfish Fillets w/ Mac and Cheese.

 

 

Last time I was at Meijer I purchased 2 Rockfish Fillets. Ocean Rockfish tastes similar to Snapper. The Fillets cost less than 1/2 than what you pay for Snapper. So I picked up a couple of Fillets washed them off in cold water, cut the fillets in half, and stored them in a hefty plastic bag and had them in the freezer. I laid 1 of the bags out in the fridge to thaw overnight. I’ll be cooking it in a Cast Iron Skillet and will need McCormick Grinder Sea Salt and Grinder Peppercorn Medley along with Zatarain’s Seasoned Seafood Breading Mix, and Extra Light Olive Oil.

 

 

Seasoned on both sides with Grinders Sea Salt and Peppercorn Medley. Then rolled the Fillets in the Zatarain’s Seasoned Fish Fri Mix. Seasoned on both sides with Grinders Sea Salt and Peppercorn Medley. Then rolled the Fillets in the Zatarain’s Seasoned Fish Fri Mix. Next heated a Cast-Iron Skillet over high heat. As the Pan is heating I added the Extra Light Olive Oil. When the skillet was heated I placed the fillets in the pan, skin side down. Press down gently on the fillets with a spatula for about 20 seconds to prevent curling. Lowered the heat to medium and let cook until the fish is golden and caramelized around edges, about 2 to 3 minutes. Carefully flip fillets and until golden all over and cooked through, 45 to 90 seconds more.

 


The Rockfish fried up to a perfect Golden Brown. It does have a taste similar to Snapper. Really a delicious meaty version of Snapper, and costs a lot less! Really enjoyed it and Mom, who isn’t a huge Fish Lover, really likes them.

 

 

 

 


To go with the Rockfish I prepared some Stouffer’s Classic Mac and Cheese Cups. just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. I love Mac and Cheese with Fish. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

 

 

 

 

 

Rockfish – Sebastes

Sebastes is a genus of fish in the family Sebastidae (though some include this in Scorpaenidae), most of which have the common name of rockfish. A few are called ocean perch, sea perch or redfish instead. Most of the Sebastes species live in the north Pacific, although two (Sebastes capensis and Sebastes oculatus) live in the south Pacific/Atlantic and four (Sebastes fasciatus, Sebastes mentella, Sebastes norvegicus and Sebastes viviparus) live in the north Atlantic. The coast off South California is the area of highest rockfish diversity, with 56 species living in the Southern California Bight.

Rockfish are an important sport and commercial fish, and many species have been overfished. As a result, seasons are tightly controlled in many areas. Sebastes are sometimes fraudulently substituted for the more expensive northern red snapper.

Rockfish has a sweet, mild flavor, with a flaky, medium-firm texture. It is best baked, sautéed, broiled or poached. Since the flesh tends to flake easily, it is not the best fish for grilling. Try it with a little lemon to bring out the sweet flavor without overpowering.

Today’s Menu: Fried Freshwater Shrimp w/ Mac and Cheese

Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Sunny and 48 degrees for a high today, plus a lot less windy! Caught up on most everything. I did a couple of loads of laundry for Mom and that was about it. Got the leaf blower out and cleaned off the wooden deck and around the driveway are. Still a bit brisk outside. Watched some College Basketball afterward. For Dinner tonight it’s Fried Freshwater Shrimp w/ Mac and Cheese.

 

I’m having Shrimp for the second day in a row, I could eat Shrimp and Seafood every day! Take the peeled shrimp, 3 at a time and place them in the bag and shake until Shrimp had a nice coating on them. Had all the Shrimp coated I then began to fry them. Frying them about 3 minutes the shrimp, a few pieces at a time, in the hot oil until light golden brown turning after 1 1/2 minutes. Drain on paper towel lined plate . Love using the McCormick Cracker Meal Mix, nice light crust and seasoning.

 

 

To go with the Shrimp I prepared some Stouffer’s Classic Mac and Cheese Cups. just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. I baked a loaf of La Brea Bakery Multi Grain Bread. For Dessert later a Jello Sugar Free Dark Chocolate

Today’s Menu: Cumin Spiced Pork Chop w/ Harvest Apples and Roasted Asparagus

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Dealing with Phantom Pains again overnight and into the morning. This has been happening way too often lately! Sure wish the Medical World would find a cure or something to ease the pain. 50 degrees out this morning but rain showers. Had a high of 70 degrees! But not a lot going on for me except catching up on some sleep. For Dinner tonight a Cumin Spiced Pork Chop w/ Harvest Apples and Roasted Asparagus.

 

 

 


I had picked a Pork Tenderloin Center Cut Pork Chop at Meijer and had it in the freezer. I laid the Chop in the fridge overnight to thaw. They have some of the finest Pork Chops you can find at Meijer.

 

 

 

 

 

So to prepare my Chop I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. I always have some of the Rub made up in a large Spice Jar I have To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.

 

For a side dish. I prepared a package of Stouffer’s Harvest Apples, haven’t had this in a while. Easy to prepare; It comes in a microwavable tray. Microwave on high for 6 minutes, let cool and serve! Apples and Pork Chops are always go great together. This is a good one to have in the freezer!

 

 

 

 

I prepared Roasted Asparagus for one side. To prepare the Asparagus I just needed Extra Virgin Olive Oil, Cloves Roasted Asparagus Garlic (minced), Sea Salt, Freshly grated Black Pepper, Lemon Juice, and Shredded Parmesan Cheese. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. (Alternatively you can put the asparagus and oil in a plastic bag, and rub the bag so that the oil gets evenly distributed.) Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Fried Oysters w/ Mac and Cheese

 

 

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, Johnsonville Turkey Breakfast Sausage Links, toasted a slice of Aunt Millie’s Light Whole Grain Bread, and had my morning cup of Bigelow Decaf Green Tea. After Mom and Dad got up I prepared the same thing for them and added Scrambled Eggs for them. Another fairly nice day out again, 45 degrees and partly cloudy. After Lunch I took Mom’s car up to a much needed Car Wash. I brought her car back and I took my car up to have it washed. Back home I got the mini vacuum out and vacuumed both cars. Then got the Windex out and cleaned the inside windows of both cars. So for Dinner tonight I prepared Fried Oysters w/ Mac and Cheese.

 

 

To prepare my Fried Oysters I’ll need; 1 can Hilton’s Fresh Farm Raised Pacific Willapoint Oysters, 1 tablespoon Flour, 1/4 cup Egg Beaters, 1 cup Shake and Bake Seasoned Panko Bread Crumbs, Sea Salt and Pepper (to taste), 2 to 3 tablespoons Extra Light Olive Oil. Hot sauce, Seafood Cocktail Sauce are all optional. I love these Hilton’s Fresh Farm Raised Pacific Willapoint Oysters. They taste so fresh!

 

 

 

I used Hilton’s Fresh Farm Raised Pacific Willapoint Oysters, my favorite. To prepare them; Place shucked oysters in a colander rinse in cold water and drain. Dredge drained oysters in the Flour, then Egg Beater’s, and then in Panko Crumbs seasoned with Sea Salt and Pepper (coating each oyster thoroughly). Set aside to dry at least 1/2 hour. An easy way to coat the oysters with the Panko Crumbs is to place the Crumbs in a resealable plastic bag, add egg-dipped oysters, seal bag, and then shake.

 

 

Next, heat the Oil in a frying pan (I like to use my cast-iron frying pan) to 370 degrees F. or until quite hot. Fry oysters until golden brown on one side, then turn over each oysters carefully to brown the other side, approximately 1 to 2 minutes on each side Fry oyster until golden brown and edges are curled. Do not overcook or overcrowd in frying pan. Remove from frying pan and serve immediately. Serve with Lemons Wedges, Tartar Sauce, Cocktail Sauce and/or your favorite hot sauce. I served mine with some Tarter Sauce with a side of my favorite hot sauce Frank’s Hot Sauce. They’re so delicious, golden brown, and with an incredible fresh flavor.

 

 

 


To go with the Oysters I prepared a Stouffer’s Classic Mac and Cheese Mac Cup, one of my favorites. Just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a 7.5 ounce can of Coke Zero to drink

 

 

 

 

 

Pan-Fried Oysters Recipe:

Ingredients:

12 large-medium Oysters, shucked
1 tablespoon Flour
1 Eggs, beaten or 1/4 cup egg Beater’s
1 cup Shake and Bake Seasoned Panko Bread Crumbs
Sea Salt and Pepper, to taste
2 to 3 tablespoons Extra Light Olive Oil
Lemon Wedges, optional
Hot sauce, optional
Seafood Cocktail Sauce, optional

Preparation:

Serve with Lemons Wedges, Tartar Sauce, Cocktail Sauce and/or your favorite hot sauce.

Makes 2 servings.
