Today’s Menu: Lasagna with Meat and Sauce w/ Baked Garlic Toast Loaf

 

For Breakfast this morning I prepared some Simply Potatoes Southwest Style Hash Browns, a Fried Egg Sunny Side Up, and 2 Johnsonville Turkey Breakfast Sausage Links. Made a bed of the Hash Browns and topped it with Egg, a sprinkle of Sargento Reduced Fat 4 Cheese Mexican Cheese, and a few shakes of Ortega Chipotle Taco Sauce. I also had the Sausage Links and a cup of Bigelow Decaf Green Tea. 77 degrees and partly cloudy outside. Not quite as windy out so I was able to get some yard work done. Got the cart and yard tools out of the shed. It looks as though I finally have stopped the moles! Our backyard looks like a tunnel of roadways. They are tearing down some woods and a field and that’s where the moles are coming from. Hopefully I Have stopped them! For Dinner tonight I prepared a Stouffer’s Lasagna with Meat and Sauce w/ Texas Toast (Light).

 

So I had picked up a box of it at Meijer yesterday and having it tonight. I purchased the Large Size, about 2 1/2 servings. I’m also baking a New York Bakery Garlic Toast Loaf.

 

To prepare the Lasagna is very easy. It comes frozen and to prepare it; Preheat the oven to 350°F. Leave the film on tray, but do not vent. Place the tray on a baking sheet on the center rack of the oven. Cook 56 Minutes. Remove baking sheet from oven. Let stand 1 Minute and Dinner is ready. I really enjoy this Lasagna! Plenty of Sauce and Meat and the Noodles are good size and tender. One easy way to have a Lasagna Dinner! The Lasagna is 260 calories and 25 net carbs per serving.

 

 

Then I also baked a loaf of New York Bakery Garlic Loaf Bread.! I loved this hearty dish tonight, plenty leftover for a couple of lunches! Excellent Meal tonight! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

 

 

 

 

 

 

 

 

Stouffer’s Lasagna with Meat and Sauce
Large Size
Traditional lasagna noodles layered with an herb seasoned tomato and meat sauce and three kinds of natural cheese

Conventional Oven
1) Preheat to 350°F
2) Leave film on tray, do not vent.
3) Place tray on a baking sheet, center rack. Cook 56 Minutes.
4) Remove baking sheet from oven. Let stand 5 Minutes.

Cooking Tips
* Will be hot!
* Ensure product reaches an internal temperature of 160°F
* Directions developed using 1100 WATT microwave oven. Ovens vary, cooking time may need adjusting

Today’s Menu: Fried Walleye Fillet w/ Mac and Cheese

 

For Breakfast morning I had a cup of Bigelow Decaf Green. 76 degrees and sunny out. It’s another beautiful Fall day out. After my Tea I went to Meijer. Mom needed some Baking items and also an elderly neighbor needed a few things. Back home I got the cart out and did some yard work and then rode around the neighborhood and enjoyed the day. For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

 

My last visit to Meijer I picked up a Walleye Fillets that they had on sale. I had a couple in the freezer that I sat in the fridge overnight to thaw. To prepare it I first rinsed the fillets in cold water and patted it dry with a paper towel. Then I seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Fried Walleye Fillet w/ Mac and Cheese

 

For Breakfast morning I had a cup of Bigelow Decaf Green. It’s a little warmer out there today. It’s 91 degrees, sunny, and a bit more humid. After Breakfast I went to Kroger for a few items and stopped by Wendy’s and picked up Breakfast for Mom. I went back out to the ATM and then went and filled Mom’s car up with gas. Got the cart out and did some yard work and then rode around the neighborhood and enjoyed the day. For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

 

My last visit to Meijer I picked up a Walleye Fillets that they had on sale. I kept a couple of the Fillets out and froze the other 2. To prepare it I first rinsed the fillets in cold water and patted it dry with a paper towel. Then I seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Today’s Menu: Salmon Patties w/ Mac and Cheese

 

For Breakfast this morning I had Fried Bologna, Sunny Side Up Egg, toasted 2 slices of Aunt Millie’s Living Carb Smart Wheat Bread, and had a cup of Bigelow Decaf Green Tea. I love Fried Bologna, so easy to prepare and goes great with Eggs! 90 degrees, humid, cloudy with passing rain showers out today. Not too active today my allergies were running wild today. Had a headache most of the day. Just did a few things around the house. So for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

 

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

 

In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Light Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

 

 

For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I like using these because there’s one serving in each cup. Then for Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Sprite Zero to drink.

Today’s Menu: Jumbo Butterfly Shrimp w/ Mac and Cheese

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. I then headed to Meijer, I had to buy some more plastic tubs and boxes. I’ll need them for storage. I’m packing everything in boxes from the spare room and pantry. It’s easier to move everything and get it back in the room when the new flooring is in. Mostly sunny and 89 degrees out. I got the cart out of the shed along with leaf blower and rake and cleaned off deck and driveway. Then cleaned up around the flower beds. For Dinner tonight I prepared some Jumbo Butterfly Shrimp w/ Mac and Cheese.

 

Had no clue on what to have for Dinner tonight. I did know I wanted a lighter Dinner and one easy to prepare. I explored the depths of the stand up freezer and found a bag of Frozen Kroger Jumbo Butterfly Shrimp, so it’s Shrimp tonight. Easy to prepare, I just preheated the oven to 450 degrees. Grabbed a large baking sheet, lined it with foil and sprayed it with Pam Cooking Spray. When the oven was ready I baked the Shrimp for 12 minutes, turning them over after 6 minutes. Let cool for a couple of minutes and serve. These were fantastic, really nice size Shrimp and lightly breaded to give a nice crunch but not too much to make it mushy as some breading. Great product to have in the freezer. Served them with Heinz Seafood Cocktail Sauce and Louisiana Remoulade Sauce for dipping.

 

Then for a side I microwaved Stouffer’s Classic Mac & Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Nice size, excellent Cheesy Mac. For Dessert later a Jello Sugar Free Dark Cherry Jello. Couldn’t get much easier of a Meal to prepare. I have to fast starting at 11:00, I have to be at the Doctor’s at 8:00.

To start this morning off I prepared a packet of the Pioneer Peppered White Gravy. I also toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, heated up a couple of Johnsonville Turkey Breakfast Sausage Links, and had a cup of Bigelow Decaf Green Tea. 80 degrees and partly cloudy out today, also a bit humid out. I hate the humidity! Did a couple of loads of laundry . Then took out the old furnace filter and put in a new one. Later I got the cart out of the shed and went to the back yard in it. We are still having Mole problems so I had to use some Mole Bait to try to stop them. They’ve ruined a few back yards around here. Anyway for Dinner tonight I prepared a Stouffer’s Lasagna with Meat and Sauce w/ Texas Toast (Light).

 

We had not had this for quite some time. So I bought a box of it in my pick-up order from Kroger yesterday. I purchased the Large Size, about 2 1/2 servings. I’m also baking a few slices of the New York Bakery Texas Toast – Lite.

For Breakfast I toasted a Thomas Light English Muffin and I topped it with Smucker’s Sugar Free Blackberry Jam. I also had my morning cup of Bigelow Decaf Green Tea. Mostly sunny and 62 degrees out, another Fall like day. Not complaining though! I headed to Meijer for a few items and then back home. Later on I took a neighbor of mine to Home Depot, he needed a new Water Hose. He didn’t have a car, in the shop. So for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

I had to stick close to the house because they came today and installed the new carpet in Mom’s bathroom. They did a great job, it looked fantastic. Mom loved it! Today’s Menu: Salmon Patties w/ Mac and Cheese

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 69 degrees and cloudy out today. Helped out Mom with her Spring cleaning. Then after Lunch I got the 4 wheel cart and got the leaf blower out and cleaned around the flower beds, driveway and the ramp. I went back to the Family Doctor because my sugar tested a little high and we decided to keep everything the same. If it’s still the same he’s going to increase the dosage strength. So for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

 

 

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

 

In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Light Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

 

 

 

 

 

For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I like using these because there’s one serving in each cup. Then for Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper to drink.

Today’s Menu: Baked Breaded Clams w/ Cheddar Potato Bake

 

For Breakfast on this sunny morning I Scrambled a couple of Eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. 54 degrees and sunny out, another beautiful day! Got the 4 wheel cart out of the shed along with the leaf blower and rake. Cleaned off the deck and driveway areas. Then cleaned out the flower bed in the back of the house. Good to be out and active! For Dinner tonight it was Baked Breaded Clams w/ Cheddar Potato Bake.

 

To make tonight’s Dinner I’ll need the Microwave, the oven, and 1 small baking sheet. It doesn’t get much easier than that! So for the Clams I used a box of SeaPak Clam Strips. Preheat the oven on 425 degrees. I then lined a baking sheet with foil and sprayed it with a shot of Pam Cooking Spray. Placed the Clam Strips in a single layer on the sheet and baked them for 12 minutes, flipping them over after 7 minutes. These come out so delicious. Love these, very meaty strips, well seasoned, and easy to prepare. Had a side of McCormick’s Tarter Sauce, for dipping. Great product to have in the freezer for those days where you want something easy to prepare. Wow, such an easy Dinner to prepare, just bake and serve. Easy to prepare Dinners can also be a Delicious Dinner.

 

Then for a side I prepared a Stouffer’s Cheddar Potato Bake. Another easy to prepare and delicious dish. To prepare this one I’m using the microwave. It comes in a microwavable tray. I just slit the film cover on the tray and microwaved it for 6 minutes, Done! I love this side by Stouffer’s! Delicious Potato Dish, really like the bread crumb topping. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.
