Today’s Menu: Seasoned Gulf Coast Grouper Fish Sandwich w/ Mac and Cheese

 

 

For Breakfast this morning I Scrambled 2 Eggs, topped them with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and Ortega Smokey Chipotle Taco Sauce. I also toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread topping the toast with Smucker’s Sugar Free Blackberry Jam. And as always a cup of Bigelow Decaf Green Tea. Passing Showers and 74 degrees out today. My allergies seem to be a little better today! Went to home Depot and picked up some grass seed and fertilizer. Well my small garden is in full bloom. I have 2 Strawberry plants, 3 Tomato plants, 2 Bell Pepper plants, 2 Jalapeno plants, and a Thai Pepper plant. Not a lot going on today. For Dinner tonight I prepared a Seasoned Gulf Coast Grouper Fish Sandwich w/ Mac and Cheese.

 

 

 

 

I love my Fish and Seafood, especially this Florida Gulf Coast Grouper. Thanks again to my friends that keep bringing me the Grouper up from Florida! I had a fillet of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Lemon Pepper Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful. I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun.

 

 

 

 

To go with Fish Sandwich I prepared a Stouffer’s Classic Mac and Cheese Mac Cup. Just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Lemon Pepper Seasoned Ocean Perch w/ Mac and Cheese and French Bread

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning, not hungry this morning. Dealing with allergies again! Everyone seems to be dealing with it this year. Nothing seems to work to get it to ease up but rest and quiet. So that was my day today. Mostly sunny, humid and a high of 90 out today. For Dinner tonight its Lemon Pepper Seasoned Ocean Perch w/ Mac and Cheese and French Bread.

 

 

 

 

 

I wanted something light and easy to prepare for Dinner tonight. So I had bought a small package of Lemon Pepper Seasoned Ocean Perch from Kroger yesterday and I’m having it tonight.

 

 

 

 

 

 

 

Its Wild Caught Ocean Perch and it comes seasoned with a Lemon Pepper Blend Seasoning. There’s a little over 1/2 a pound of the Fillets and they came packaged in a ready bake tin pan. I decided to pan fry them instead. I used a medium size skillet. Heated the skillet on medium heat and added a tablespoon of Extra Light Olive Oil. Added the Perch and fried them for 2 minutes. Flipped them over and continued to cook them for 2 minutes and they were done. The fillets were not that big but big enough for a light Dinner. The seasoning was perfect and they cooked up perfect.

 

 

 

 

For a side I prepared I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Today’s Menu: Lasagna with Meat and Sauce w/ Texas Toast (Light)

 

To start this morning off I prepared a SayersBrook 4 oz. Bison Fillet Mignon. These are so tender and delicious! Cooked it for a total of 5 minutes and done, a perfect medium rare. I also Poached an Egg and served it on a Thomas Light Multi Grain English Muffin. I also had a cup of Bigelow Decaf Green Tea. Cloudy and 67 degrees out today. I had to have Mom at Dermatologist at 10:15 this morning. She didn’t want to go but I’m forcing her. She has mole and it’s been getting darker so she needed to go! On the way home we stopped by Meijer and stopped and grabbed Mom a Breakfast Sandwich from McDonald’s. For Dinner tonight I prepared a Stouffer’s Lasagna with Meat and Sauce w/ Texas Toast (Light).

 

 

 

 

I had picked up a box of Stouffer’s Lasagna with Meat and Sauce at Meijer earlier and having it tonight. I purchased the Large Size, about 2 1/2 servings. I’m also baking a few slices of the New York Bakery Texas Toast – Lite.

 

 

 

 

 

To prepare it s very easy. It comes frozen and to prepare it; Preheat the oven to 350°F. Leave the film on tray, but do not vent. Place the tray on a baking sheet on the center rack of the oven. Cook 56 Minutes. Remove baking sheet from oven. Let stand 1 Minute and Dinner is ready. I really enjoy this Lasagna! Plenty of Sauce and Meat and the Noodles are good size and tender. One easy way to have a Lasagna Dinner! The Lasagna is 260 calories and 25 net carbs per serving.

 

 

 

 

 

I also baked a slice of New York Bakery Lite Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

 

 

 

 

 

 

 

Stouffer’s Lasagna with Meat and Sauce
Large Size
Traditional lasagna noodles layered with an herb seasoned tomato and meat sauce and three kinds of natural cheese

1) Preheat to 350°F
2) Leave film on tray, do not vent.

Today’s Menu: Seasoned Haddock w/ Mac and Cheese

 

For Breakfast this morning I Scrambled a couple of eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Partly sunny and 74 degrees, rain and thunderstorms moving in toward evening. Had the other half of the outside deck painted, looks great. Went to Meijer Lawn and Garden and picked up another bag of the dark Mulch. Ran a little short of Mulch for around the tree out front. Got the front and side yards looking good! Next is the back yard flower bed and replacing some skirting around the back of the shed. For Dinner tonight I prepared Seasoned Haddock w/ Mac and Cheese.

 

 

 

 

Had not had Haddock in a while and it sounded good! I had purchased the Haddock from Kroger a couple of weeks ago and had them in the freezer. I sat the bag of them in the fridge overnight to thaw. I had already rinsed the fillets off in cold water and cut the fillets in half before I froze them. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until the pieces were well coated. Shook off the excess and pan fried them in Extra Light Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

 

 

 

 

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Today’s Menu: Fried Walleye Fillet w/ Mac and Cheese

 

For Breakfast morning I prepared Scrambled Eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, heated 2 Johnsonville Turkey Breakfast Sausage Links, and had a cup of Bigelow Decaf Green. Rain in the morning and cloudy in the afternoon, 68 degrees. After Lunch I went to Lowes and they had Gas Grills on sale. I purchased a Char – Broil Grill. I paid extra to have it assembled and delivered. I’ve put together my share of grills and having to build them while in a wheelchair is just too much trouble. Worth the extra money to have it done! Waiting on the arrival, we’ll finally have a grill again! For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

 

 

 

 

While at Meijer the other day I picked up a couple of Walleye Fillets. I’m Preparing one of the fillets tonight and froze the other one. To prepare it I first rinsed the fillet in cold water and patted it dry with paper towel. Then I seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

 

 

 

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Today’s Menu: Salmon Patties w/ Mac and Cheese

 

 

For Breakfast this morning I Poached an Egg, heated up a couple of Johnsonville Turkey Breakfast Sausage Links, toasted a Thomas Light English Muffin, and a cup of Bigelow Decaf Green Tea. It may be Spring but it feels like Winter out there! It was 24 degrees and a wind chill in the teens! Had a high of 48 degrees and mostly sunny. Went to Lowe’s and checked out some new outdoor chairs for Mom. She’s been wanting some new ones so Lowe’s had some on sale. They were okay but I’m going to look around some more. Got the leaf blower out and cleaned off the deck and drive way areas. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

 

 

 

 

Ready for the skillet!

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

 

 

 

 

 

Golden Brown

In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Light Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

 

 

 

 

 

For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I like using these because there’s one serving in each cup. So no waste if you’re just cooking for 1. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Fried Walleye Fillet w/ Mac and Cheese

 

For Breakfast morning I prepared a Poached Egg, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, heated 2 Johnsonville Turkey Breakfast Sausage Links, and had a cup of Bigelow Decaf Green. Mostly cloudy and very windy out, 46 degrees. Not a lot to do today, I was all caught up with chores around the house. After Lunch I went over to a friend of mine I hadn’t seen in a while. For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

 

 

 

 

 

While at Kroger yesterday I bought a couple of packages small fresh Walleye Fillets. To prepare it I first rinsed the fillets in cold water and patted it dry with paper towel. For Dinner tonight I prepared a Stouffer’s Lasagna with Meat and Sauce w/ Texas Toast (Light).

Conventional Oven
1) Preheat to 350°F
2) Leave film on tray, do not vent.
3) Place tray on a baking sheet, center rack. Cook 56 Minutes.
4) Remove baking sheet from oven. Let stand 5 Minutes.

Today’s Menu: Catfish Nuggets w/ Mac and Cheese

 

 

For Breakfast this morning I prepared Scrambled Eggs, heated up some Johnsonville Turkey Sausage Links, a toasted slice of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. After Breakfast I did a load of laundry. Everything is caught up around the house so I caught up on some shows I had recorded. For Dinner tonight Catfish Nuggets w/ Mac and Cheese.

 

 

 

 

 

Picked up the Catfish Nuggets at Meijer last week and had them in the freezer. Laid the bag of them in the fridge overnight to thaw. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.

 

 

 

 

To go with the Catfish, Stouffer’s Classic Mac and Cheese Cups. just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later some slices of Boar’s Head Colby Longhorn Cheese and Kroger Wheat Saltine Crackers.

Today’s Menu: Lasagna with Meat and Sauce w/ Texas Toast (Light)

 

 


To start this Monday morning off I prepared a Jimmy Dean Simple Scrambles Cup – Turkey Sausage, Egg Whites, Cheddar Cheese. Outside its cloudy and a high of 47 degrees with rain moving in later, temperatures dropped all afternoon. We have below zero weather moving in for the next couple of days. After Breakfast I went to Walmart, I needed some printing ink and paper. Picked up Breakfast for Mom from McDonald’s on the way back. Not a lot going on today, just did a few things around the house and cleaned off the deck and driveway areas outside. For Dinner tonight I prepared a Stouffer’s Lasagna with Meat and Sauce w/ Texas Toast (Light).

 

 

 

 


I tried a bit of the Stouffer’s Lasagna with Meat and a while back and really liked it! So I had picked up another box of it at Kroger’s the other day and having it tonight. I purchased the Large Size, about 2 1/2 servings which is perfect for me and Mom. I’m also baking a few slices of the New York Bakery Texas Toast – Lite.

 

 

 

 

 


To prepare it s very easy. It comes frozen and to prepare it; Preheat the oven to 350°F. Leave the film on tray, but do not vent. Place the tray on a baking sheet on the center rack of the oven. Cook 56 Minutes. Remove baking sheet from oven. Let stand 1 Minute and Dinner is ready. I really enjoy this Lasagna! Plenty of Sauce and Meat and the Noodles are good size and tender. One easy way to have a Lasagna Dinner! The Lasagna is 260 calories and 25 net carbs per serving.

 

 

 

 


I also baked a slice of New York Bakery Lite Texas Toast. For Dessert later a few slices of a Honey Crisp Apple.
