Today’s Menu: Fried Walleye Fillet w/ Mac and Cheese

 

To start the morning Toasted a Aunt Millie’s Carb Smart English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had my morning cup of Bigelow Decaf Green Tea. Went out and got the Paper about 6:45 this morning, 60 degrees out! About 8:00 this morning a storm moved through with rain and strong winds. By 11:00 it went from 60 degrees to 42 degrees. The afternoon was Sunny with dropping temps thru the day. Cleaned the house, ran the sweeper and dusted. Then I did a load of laundry. All the indoor fun today! Did a few things around the house. For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

 

I had a couple of Walleye Fillets that I had purchased from Meijer yesterday. To prepare them I first rinsed the fillets in cold water and patted it dry with a paper towel. I cut the Fillets in half and then I seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with Coke Zero to drink. Stay Safe and Take Care All!

Today’s Menu: Salmon Patties w/ Mac and Cheese

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 79 degrees and cloudy, humid as always. I had to have Mom at the Dermatologists at 8:30 this morning. Back home I went back to bed. I didn’t sleep well at all last night. I took a 1 hour nap. I’m still achy from my fall over the weekend. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

 

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

 

In a large bowl I mixed all the ingredients until it was well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Light Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

 

 

 

For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I like using these because there’s one serving in each cup. Then for Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Stick Pretzels with a Diet Peach Snapple to drink.

Both canned and fresh fish are a good source of protein and other important nutrients, and one isn’t necessarily healthier than the other. … In fact, a USDA study found slightly higher levels of two omega-3s in canned pink and red salmon than it found in fresh. Canned salmon has other merits, too. Canned salmon is also rich in protein, vitamin D, calcium (from the bones) and healthy omega-3 fats. Omega-3 fats are heart healthy fats. They also promote healthy brain development in babies.

Today’s Menu: Salmon Patties w/ Mac and Cheese

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 95 degrees, sunny, and extremely humid. The heat index has at 105 degrees. I had to be at the Doctor at 8:10 this morning, just a check up. Then it was back home for major cleanups. I’ve lived here since 2001 and last night was the worst and strongest storm to this area. We were lucky as a lot of people had damage to their home or car, we had none. Plus a lot of people have been without power since 9:00 last night. So with no air condition in this weather is bad! A lot of areas are still without power. The damage we did have was my garden. I have just 1 maybe 2 Tomato Plants left and 2 or 3 Pepper Plants left. But at least we have power and no other damage, very thankful for that. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

Today’s Menu: Fried Ocean Perch w/ Mac and Cheese

 

For Breakfast this morning I prepared a toasted Thomas English Muffin that I topped with I Can’t Believe It’s Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. We had heavy rain and thunderstorms overnight again. For the day it’s 68 degrees and cloudy, cooler and no humidity today. After my Tea I went outside and cleaned the yard and deck from the storm last night. Later did a few things inside. For Dinner tonight I prepared Fried Ocean Perch w/ Mac and Cheese.

 

I picked up the Ocean Perch at Meijer the other day, cleaned them and had them in the fridge. Really love the Meijer Seafood Department, very good selections. To prepare them I preheated a medium size skillet that I had sprayed with Pam Cooking Spray and added Cooking Olive Oil, on medium heat. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them 2 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!

 

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack I had a Diet Peach Snapple to drink.

Ocean perch is mild tasting yet a bit sweet, with a moderately firm texture. The meat is lean, moist and flaky. Large ocean perch develop a coarse texture. Deep-skinned ocean perch with the fat line removed has the most delicate flavor. The flesh is white, though not as light as cod, and it turns opaque white when cooked. Whole fish may have bulging eyes and distended air bladders, which is a result of being brought up from great depths, not an indication of poor quality.

Today’s Menu: Fried Ocean Perch w/ Mac and Cheese
For Breakfast this morning I prepared some Simply Potatoes Seasoned Diced Potatoes along with some Ham Slices. That ham for Dinner last night was so good I had to have for Breakfast! I also had a cup of Bigelow Decaf Green Tea. The Ohio Weather was in full gear today. It was pouring the rain this morning and then it switched over to sleet, back to rain and finally to snow. It snowed so hard that it covered the ground. Later back to rain and all the snow melted. Ohio Weather! Mom is feeling better, not 100% yet but much better. Sprayed Lysol all through the house and then wiped everything down in the Kitchen with Lysol Wipes. Not great Weather for my Sinuses. For Dinner tonight I prepared Fried Ocean Perch w/ Mac and Cheese.

She had been in rehab for 2 months from a fall in her house. So I’m helping her out with whatever I can. Took Mom for her last Radiation Treatment! She goes to the doctor in 3 weeks for an exam, hopefully they got it all! Back home I did some yard work. For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

 

I had a couple of Walleye Fillets in the freezer that I had purchased from Meijer. I sat a Fillet in the fridge overnight to thaw. To prepare it I first rinsed the fillets in cold water and patted it dry with a paper towel. Back home I had to have my car towed to the repair shop. I need a new battery, oil change, and radiator flush. The battery was gone, it wouldn’t even charge. Did a few things around the house. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

 

In a large bowl I mixed all the ingredients until it was well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Light Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

 

 

 

 

 

For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I like using these because there’s one serving in each cup. Then for Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

Today’s Menu: Lasagna with Meat and Sauce w/ Baked Garlic Toast Loaf

 

For Breakfast this morning I prepared some Simply Potatoes Southwest Style Hash Browns, a Fried Egg Sunny Side Up, and 2 Johnsonville Turkey Breakfast Sausage Links. Made a bed of the Hash Browns and topped it with Egg, a sprinkle of Sargento Reduced Fat 4 Cheese Mexican Cheese, and a few shakes of Ortega Chipotle Taco Sauce. I also had the Sausage Links and a cup of Bigelow Decaf Green Tea. 77 degrees and partly cloudy outside. Not quite as windy out so I was able to get some yard work done. Got the cart and yard tools out of the shed. It looks as though I finally have stopped the moles! Our backyard looks like a tunnel of roadways. They are tearing down some woods and a field and that’s where the moles are coming from. Hopefully I Have stopped them! For Dinner tonight I prepared a Stouffer’s Lasagna with Meat and Sauce w/ Texas Toast (Light).

 

So I had picked up a box of it at Meijer yesterday and having it tonight. I purchased the Large Size, about 2 1/2 servings. I’m also baking a New York Bakery Garlic Toast Loaf.

 

To prepare the Lasagna is very easy. It comes frozen and to prepare it; Preheat the oven to 350°F. Leave the film on tray, but do not vent. Place the tray on a baking sheet on the center rack of the oven. Cook 56 Minutes. Remove baking sheet from oven. Let stand 1 Minute and Dinner is ready. I really enjoy this Lasagna! Plenty of Sauce and Meat and the Noodles are good size and tender. One easy way to have a Lasagna Dinner! The Lasagna is 260 calories and 25 net carbs per serving.

 

 

Then I also baked a loaf of New York Bakery Garlic Loaf Bread.! I loved this hearty dish tonight, plenty leftover for a couple of lunches! Excellent Meal tonight! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

 

 

 

 

 

 

 

 

Stouffer’s Lasagna with Meat and Sauce
Large Size
Traditional lasagna noodles layered with an herb seasoned tomato and meat sauce and three kinds of natural cheese

Conventional Oven
1) Preheat to 350°F
2) Leave film on tray, do not vent.
3) Place tray on a baking sheet, center rack. Cook 56 Minutes.
4) Remove baking sheet from oven. Let stand 5 Minutes.

Cooking Tips
* Will be hot!
* Ensure product reaches an internal temperature of 160°F
* Directions developed using 1100 WATT microwave oven. Ovens vary, cooking time may need adjusting
* Do not prepare in toaster oven
* Do not reheat tray
