Today’s Menu: Salmon Patties w/ Mac and Cheese

 

For Breakfast I toasted a Thomas Light English Muffin and I topped it with Smucker’s Sugar Free Blackberry Jam. I also had my morning cup of Bigelow Decaf Green Tea. Mostly sunny and 62 degrees out, another Fall like day. Not complaining though! I headed to Meijer for a few items and then back home. Later on I took a neighbor of mine to Home Depot, he needed a new Water Hose. He didn’t have a car, in the shop. So for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

 

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

 

In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Light Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

 

 

 

 

 

For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I like using these because there’s one serving in each cup. Then for Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper to drink.

Both canned and fresh fish are a good source of protein and other important nutrients, and one isn’t necessarily healthier than the other. … In fact, a USDA study found slightly higher levels of two omega-3s in canned pink and red salmon than it found in fresh. Canned salmon has other merits, too. Canned salmon is also rich in protein, vitamin D, calcium (from the bones) and healthy omega-3 fats. Omega-3 fats are heart healthy fats. They also promote healthy brain development in babies.

Today’s Menu: Fried Walleye Fillet w/ Mac and Cheese

 

For Breakfast morning I had a cup of Bigelow Decaf Green. Mostly sunny and 80 degrees out today. I moved the cart out of thed and swept and cleaned the shed out. I had to stick close to the house because they came today and installed the new carpet in Mom’s bathroom. They did a great job, it looked fantastic. Mom loved it! After they finished I took a spin around the neighborhood in the cart. For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

 

My last visit to Meijer I picked up a Walleye Fillet that they had on sale. To prepare it I first rinsed the fillet in cold water and patted it dry with a paper towel. Then I seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Mango/Tea Snapple to drink.

Just a cup of Bigelow Decaf Green Tea for Breakfast. 69 degrees and cloudy out today. Helped out Mom with her Spring cleaning. Then after Lunch I got the 4 wheel cart and got the leaf blower out and cleaned around the flower beds, driveway and the ramp. I went back to the Family Doctor because my sugar tested a little high and we decided to keep everything the same. If it’s still the same he’s going to increase the dosage strength. So for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

 

 

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Today’s Menu: Baked Breaded Clams w/ Cheddar Potato Bake

 

For Breakfast on this sunny morning I Scrambled a couple of Eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. 54 degrees and sunny out, another beautiful day! Got the 4 wheel cart out of the shed along with the leaf blower and rake. Cleaned off the deck and driveway areas. Then cleaned out the flower bed in the back of the house. Good to be out and active! For Dinner tonight it was Baked Breaded Clams w/ Cheddar Potato Bake.

 

To make tonight’s Dinner I’ll need the Microwave, the oven, and 1 small baking sheet. It doesn’t get much easier than that! So for the Clams I used a box of SeaPak Clam Strips. Preheat the oven on 425 degrees. I then lined a baking sheet with foil and sprayed it with a shot of Pam Cooking Spray. Placed the Clam Strips in a single layer on the sheet and baked them for 12 minutes, flipping them over after 7 minutes. These come out so delicious. Love these, very meaty strips, well seasoned, and easy to prepare. Had a side of McCormick’s Tarter Sauce, for dipping. Great product to have in the freezer for those days where you want something easy to prepare. Wow, such an easy Dinner to prepare, just bake and serve. Easy to prepare Dinners can also be a Delicious Dinner.

 

Then for a side I prepared a Stouffer’s Cheddar Potato Bake. Another easy to prepare and delicious dish. To prepare this one I’m using the microwave. It comes in a microwavable tray. I just slit the film cover on the tray and microwaved it for 6 minutes, Done! I love this side by Stouffer’s! Delicious Potato Dish, really like the bread crumb topping. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Today’s Menu: Catfish Nuggets w/ Mac and Cheese

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 41degrres, cloudy, with rain moving in this evening. I went to Meeijer for a few items Mom wanted that Kroger was out of from our order yesterday. On the way back home I got her car washed. It needed it bad with all the salt build up on it. Then I stopped at Wendy’s and picked up Breakfast for her. Did laundry when I got home. I always wash the clothes that I had on while at the grocery. Then later scrubbed the kitchen down with the Lysol Wipes. For Dinner tonight Catfish Nuggets w/ Mac and Cheese.

 

Picked up the Catfish Nuggets at Kroger yesterday. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.

 

To go with the Catfish, Stouffer’s Classic Mac and Cheese Cups. Just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

For Breakfast morning I had a cup of Bigelow Decaf Green. Light Rain in the morning and cloudy in the afternoon, 47 degrees. Took my car and then Mom’s up to the Car Wash and swept both cars out. Not much else going on. For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

After Lunch a good friend of mine from High School days came over to help me change the tires on my Hoveround Mobility Chair. We replaced the rear Caster Wheels, only took about 20 minutes. He stayed for a bit and we caught up a bit. He’s going to be a Grandfather in a couple of weeks, his first and he’s excited! I’ve known him and his brother since our Freshman year in High School and have been great friends ever since. Afterward I did a few things out in the shed and got the leaf blower out and cleaned around the driveway and the ramp. So for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

Today’s Menu: Catfish Nuggets w/ Mac and Cheese

 

 

For Breakfast this morning I toasted a Thomas Light English Muffin that I topped with I Can’t Believe It’s Not Butter. I also had a cup of Bigelow Decaf Green Tea. We had a high of 39 degrees, windy, and cloudy out today. After the first of the year I do a Freezer’s Purge. We have 2 freezers so this is going to take a while. Amazing the things you can find that’ve been buried and pushed to back of the freezers. Wiped down the freezers and the fridge. I replaced 2 of the shelves in the fridge. I have insurance on the fridge so I just report what I need and they send it. What a job! For Dinner tonight Catfish Nuggets w/ Mac and Cheese.

 

Picked up the Catfish Nuggets at and had them in the freezer. Laid the bag of them in the fridge overnight to thaw. Today’s Menu: Fried Freshwater Shrimp w/ Mac and Cheese

 

 

To start this rainy morning off I made some Simply Potatoes Shredded Hash Browns and heated up some Meijer Diced Ham. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Then topped them off with Diced Ham. I love combinations of Potatoes and Ham. Also had a cup of Bigelow Decaf Green Tea. We ended up with about 1 1/2 inches of snow, our first of the year. Gloomy day out there today. A few snow flurries with a high of 36 degrees. Cleaned the house today and did a few things around the house, not a lot to do today. For Dinner tonight it’s Fried Freshwater Shrimp w/ Mac and Cheese.

 

We’re having Shrimp tonight, I could eat Shrimp and Seafood every day! While at Meijer the other day I picked up some of the huge Freshwater Colossal Shrimp, first time I’ve seen Meijer have these! I cleaned them and put them in the fridge until needed for Dinner tonight. I love these, they are so meaty. They don’t have that Ocean taste like Ocean Shrimp but they’re awfully good! To prepare these I’m using McCormick Golden Dipt Cracker Meal Seafood Fry Mix.

 

Poured about 1/2 inch of Extra Light Olive Oil into large skillet. Heated the oil to 350°F on medium heat. I then took a 1/2 cup of the Cracker Meal Mix in a Hefty Zip Lock Plastic Bag. Take the peeled shrimp, 3 at a time and place them in the bag and shake until Shrimp had a nice coating on them. Had all the Shrimp coated I then began to fry them. Frying them about 3 minutes the shrimp, a few pieces at a time, in the hot oil until light golden brown turning after 1 1/2 minutes. Drain on paper towel lined plate . Love using the McCormick Cracker Meal Mix, nice light crust and seasoning.

 

To go with the Shrimp I prepared some Stouffer’s Classic Mac and Cheese Cups. just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. I also baked a Loaf of Garlic Loaf Bread. For Dessert later a Jello Sugar Free Dark Cherry Jello.

 

 

 

 

 

 

 

 

McCormick Cracker Meal Seafood Fry Mix
Cracker Meal Seafood Fry Mix adds extra crunchiness to fried and baked foods. All ingredients have been specially selected to provide a superior coating that seals in natural juices for fish, seafood, poultry, meats and vegetables.
Ingredients
Enriched Bleached Wheat Flour (Flour, Niacin, Reduced Iron, Thiamine Mononitrate, Riboflavin, And Folic Acid), Whey (Milk), Dextrose, And Soybean Oil.

Serving size
1/4 cup Mix (32g)
All You Need
1/2 cup Cracker Meal
1 lb. Fish or Seafood*
Water or Milk
Vegetable Oil
Directions
1. POUR Cracker Meal into shallow dish or large plastic bag. Moisten fish, cut into serving-size pieces, or seafood with water or milk. Shake off excess.
2. COAT fish, several pieces at a time, evenly with Cracker Meal. Let stand 5 minutes. Discard any remaining Cracker Meal. Fry as directed below. Serve with McCormick® Cocktail Sauce or Tartar Sauce. Use the entire package to coat 4 lbs. fish or seafood.

*Best with tilapia, trout, catfish, shrimp, or scallops. Also try with shucked oysters and clams, or soft-shell crabs (pierce several times before coating).

Pan Fry: Pour oil to a depth of 1/4 inch in a large skillet; heat to 350°F on medium heat. Fry fish, in batches, 2 to 4 minutes on each side or until fish flakes easily with a fork. Drain on paper towels.

Oven Fry: Cover bottom of shallow baking pan with melted butter. Arrange fish or seafood in a single layer in pan; turn to coat with butter. Bake in preheated 425ºF oven 10 to 20 minutes until golden brown around edges and fish flakes easily with a fork.

Flavorful Tips:
• For a thicker coating, dip fish in a mixture of 3 tbsp. milk and 2 beaten eggs before coating with Cracker Meal.
• Coat boneless skinless chicken breast halves or chicken parts as directed. Bake in 400ºF oven 20 to 30 minutes for chicken breast halves or 45 to 50 minutes for chicken parts.
• Use Cracker Meal instead of bread crumbs when making meat loaf or meat balls.

Today’s Menu: Fried Walleye Fillet w/ Fried Potatoes and Baked Garlic Loaf Bread

 

 

For Breakfast morning I prepared a Poached Egg and served it on a Thomas Light English Muffin. Also had a cup of Bigelow Decaf Green. 72 degrees and rain out today. Much needed rain, everything is dry! We’ve been watering our lawn every other day to help out the front lawn and bushes. Couldn’t do much outside with the rain so I cleaned and straightened the Fridge and then the Pantry. For Dinner tonight I prepared Fried Walleye Fillet w/ Fried Potatoes and Baked Garlic Loaf Bread. I had Stouffer’s Mac and Cheese with mine Mom had the Potatoes.

 

I had a few packages of Walleye Fillets that I had bought from Meijer in the freezer. So I laid a package in the Fridge to thaw overnight. I had already cut the fillets into smaller pieces before freezing them. So to prepare it I first rinsed the fillets in cold water and patted it dry with paper towel. Then I seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

Then for a side I made a Cast Iron Skillet of Fried Potatoes. I love these! I bought a bag of Medium Size Red Potatoes, which we’ll be using. To prepare them; first wash the Whole Potatoes and dry with a paper towel. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on medium high.

 

With the skillet heated add the Potatoes. After adding the Potatoes add your Seasoning, we just used Salt and Pepper. Then fry until the Potatoes start to turn brown. Then flip them with a spatula and continue frying until done. I love these Potatoes and they are so easy to prepare.

 

 

Then I also baked a loaf of La Baguette Roasted Garlic Oval Bread For Dessert later a Jello Sugar Free Dark Chocolate Pudding.
