Today’s Menu: Cumin Spiced Pork Chop w/ Whole New Potatoes, Cut Green Beans and Harvest Apples

 

 

 

For Breakfast on this Sunday morning I fried 2 Jennie – O Turkey Breakfast Sausages and toasted 2 slices of Aunt Millie’s Light Whole Grain Bread that I lightly Buttered with I Can’t Believe It’s Not Butter. Also had a cup of Bigelow Decaf Green Tea. After Breakfast went to Meijer, needed Bread and Buns. After Lunch went to see Dad for a bit. Back home all caught up on everything so it was an afternoon of NFL Football! For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Whole New Potatoes, Cut Green Beans and Harvest Apples.

 

 

I picked up a couple of large Center Cut Pork Chops from the Meijer Meat Department and had them in the freezer. I laid one of them in the fridge overnight to thaw. Just love the Meijer selection and quality of all their meats, and all their products and produce. I like using these large Chops, plenty leftover for Breakfast or Lunch the next day!

 

 

 

 

To prepare my Chops I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the Chop. Let stand 20 minutes. I’ll be using a Cast Iron Skillet for the Chop. I love using Cast Iron Skillets, not only do the heat up evenly and retain that heat but you can also go from using it on the stove and right into the oven. So I start by heating the Extra Virgin Olive oil in the Cast Iron Skillet over medium-high heat. Add the Chop to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which gives a fantastic flavor and perfect browning to the Chop. The inside being so tender and moist! Love this seasoning on Pork.

 

For 1 side dish I heated up a can of Del Monte Whole New Potatoes. Just heat and serve, seasoned with McCormick Grinder Sea Salt and Black Peppercorn Medley, Parsley, and I Can’t Believe It’s Not Butter.

 

 

 

 

 

Then I reheated the leftover Del Monte Cut Green Beans from last night’s Dinner, I love Beans!

 

 

 

 

 

Then for another side dish. I prepared a package of Stouffer’s Harvest Apples, first time I’ve tried this one. An easily prepared way to get a delicious and savory Apple Dish. Easy to prepare; It comes in a microwavable tray. Microwave on high for 6 minutes, let cool and serve! Apples and Pork Chops are always go great together. This is a good one to have in the freezer! For Dessrt later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Seasoned Gulf Coast Grouper Fish Sandwich w/ Mac and Cheese

 

 

For Breakfast this morning I toasted a couple of Eggo Waffle’s and topped them with some I Can’t Believe It’s Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. Went out to grab the morning papers this morning and its 55 degrees. Another beautiful day out again, 81 degrees and sunny! Today is the neighborhood’s annual community yard sale, as always it draws a lot of people. So I got the cart out and went around the neighborhood to look at all junk people were trying to unload! Later in the afternoon I went to see Dad. We hope he gets to come home soon! For Dinner tonight I prepared a Seasoned Gulf Coast Grouper Fish Sandwich w/ Mac and Cheese.

 

I love my Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me back up from Florida! It’s good to have friends that also own a house off the Florida Gulf side. I had a fillet of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish and Love this Grouper! I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun.

 

To go with Fish Sandwich I prepared a Stouffer’s Classic Mac and Cheese Mac Cup. Just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

I just had a cup of Bigelow Decaf Green Tea for Breakfast, no appetite this morning. Did my morning workout, took a quick shower, and off to Walmart. I needed some Bigelow Decaf Green Tea, Copy Paper, and a few other things. Back home after Lunch, I went to see Dad. Still having good days and bad days, hope he can come home soon. Another pretty nice day out again. After getting back home I got the cart out for a ride around the neighborhood. For Dinner tonight it’s a Gulf Coast Grouper w/ Mac and Cheese.

 

 

I love my Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me back up from Florida! It’s good to have friends that also own a house off the Florida Gulf side, thank you Jim and Linda! I had a fillet of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish and Love this Grouper!

 

 

To go with the Grouper I prepared some Stouffer’s Classic Mac and Cheese Mac Cups. Just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac.For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Salmon Patties w/ Mac and Cheese

 

 

 

Started my morning off with a light Breakfast of a toasted Healthy Life Whole Grain English Muffin and a cup of Bigelow Decaf Green Tea. Well the rain has finally passed but it’s real windy out, in the 50’s again. Finished up cleaning the house. After Lunch headed over to spend the afternoon with Dad. He looked better than he did the other day. Still up in the air weather he’ll make it home or not. Just hope for the best. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

 

 

 

Ready for the skillet!

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

 

 

 

Golden Brown!

In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Virgin Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

 

 

 

 

 

For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I also had a slice of Healthy Life Whole Grain Bread, lightly buttered. For dessert later a bowl of Dole Sliced Peaches.

Today’s Menu: Fried Ocean Perch w/ Mac & Cheese

 

 

For Breakfast on this cold March morning I Scrambled a couple of Eggs, toasted 2 slices of Healthy Life Whole Grain Fried Ocean Perch w Mac & Cheese 009Bread, and had my morning cup of Bigelow Decaf Green Tea. Well they say if March comes in like a Lion it will go out like Lamb. So we got the Lion part covered so now we”l wait and see if it goes out like a Lamb! Mid 20’s this morning with very light snow flurries and still windy out. But they say by Sunday it will be 60 degrees again, hope they have it right! Did some house cleaning today and cleaned up around the outside a bit. I didn’t go see Dad today, he had some testing and 2 therapy sessions today. For my dinner tonight I prepared Fried Ocean Perch w/ Mac & Cheese.

 

 

I picked up the Ocean Perch at Meijer yesterday. Really love the Meijer Seafood Department. Good selection, always Fried Ocean Perch w Mac & Cheese 001fresh and some good items on sale. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Virgin Olive, on medium heat. Rinsed the Perch with cold water and patted dry with a paper towel. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them for 6 minutes. 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Toady’s Menu: Crispy Battered Fish Fillets w/ Cheddar Potato Bake and Baked Multi Grain Loaf Bread

 

 
For Breakfast this morning I Scrambled a couple of Eggs that I sprinkled with Sargento Shredded Sharp Cheddar crispy-battered-fish-fillets-w-cheddar-potato-bake-011Cheese. Then I toasted a couple of slices of Healthy Life Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter, and my morning cup of Bigelow Decaf Green Tea. Finished up some laundry for Mom. After Lunch I went and spent the afternoon with Dad. He’s doing somewhat better but still a long ways off for coming back home. Back home I took a nap, just still not feeling up to par. Really didn’t feel like cooking but I still wanted a hot meal. So I took the easy way out, I prepared Crispy Battered Fish Fillets w/ Cheddar Potato Bake and Baked Multi Grain Loaf Bread.

Couldn’t get more easy to prepare my Dinner tonight, used the microwave and the oven! I prepared Crispy Battered Fish Fillets w/ Cheddar Potato Bake and Baked Multi Grain Loaf Bread. For my Fish I used Gorton’s Crispy Battered Fish Fillets. Good Fish, already seasoned and battered. To prepare it I preheated the oven on 425 degrees. i used a small baking pan, sprayed it with Pam Cooking Spray. I baked the fillets for 25 minutes, flipping them over after 12 minutes. The fillets came out perfect! Nice size fillets and lave the seasoning and batter.

Then to go with my Fish I prepared a Stouffer’s Cheddar Potato Bake. Another easy to prepare and delicious dish. To prepare this one I’m using the microwave. It comes in a microwavable tray. I just slit the film cover on the tray and microwaved it for 6 minutes, Done! I love this side by Stouffer’s! Delicious Potato Dish, really like the bread crumb topping. I also baked a quarter loaf of the La Brea Multi Grain Loaf Bread. Fish, Potatoes, and Baked Bread! I’ll take this easy prepared meal anytime. For dessert later a Weight Watcher’s Cookie and Cream Ice Cream Bar.

Today’s Breakfast Menu included Jennie -O Turkey Breakfast Sausage Links, 1 Egg Sunnyside Up, 2 slices of toasted Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. That’s a very good way to start the day! After Breakfast I headed out to see a friend of mine who’s been moved to assisted living. It might have to be a permanent move for him, hope not though. It’s another beautiful Fall Day out, but a bit warmer out at 82 degrees. Back home did some cleanup outside and that was about it for the day. And for Dinner tonight I prepared Popcorn Shrimp w/ Mac and Cheese.

I used my favorite frozen boxed Shrimp, SeaPak. I love all the SeaPak Seafood Products. Easy to prepare and fresh tasting. To prepare it; arrange the frozen Shrimp in single layer on baking sheet and place on middle rack of oven. Bake the Shrimp on 450 degrees for 11 minutes, turning the shrimp over after 5 minutes. And your done! If you don’t have fresh Shrimp this is the way to go. Had a side of Heinz Cocktail Sauce for dipping.

Salmon Patties Mac and Cheese 006It’s a beautiful morning out there today, sunny and 55 degrees! Another gorgeous day out there, plenty of sunshine and a high around 81 degrees with no humidity. After Breakfast I started a load of laundry for Mom. Then headed outdoors to do some work. I got the leaf blower out and cleaned the deck and driveway areas. Then got the cart out and pulled some weeds out of the flower beds. Then got the trusty hammer, nails, and saw out and did some repairs to the side of the shed. Things sure would be a lot easier to do if I wasn’t in a wheel chair, or cart, but thankful I can get around in either to get things done. Nice day to be out! For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up!

I’m using a can of Kroger Brand Pink Salmon, Egg Beater’s, Old Bay Seasoning, Dried Parsley, and Kroger Low Fat Saltine Wheat Crackers. In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Virgin Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

For one side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I also had a slice of Healthy Life Whole Grain Bread. For dessert later a bowl of Dole Sliced Peaches.

Skipped Breakfast this morning, just had a cup of Bigelow Decaf Green Tea. I’ve had a headache on and off since yesterday. My sinuses having been driving me crazy! Really did,’t do a lot today but try to get some sleep. I had a Dinner planned out but just wasn’t in the mood to cook or a big meal. Mom had made some Salmon Patties so I took the leftovers and made my own. For dinner tonight I prepared Salmon Patties w/ Mac & Cheese.

I just had a cup of Bigelow Decaf Green Tea for breakfast, just not hungry this morning. I then headed to Kroger for Mom, she just needed a couple of items. I stopped by McDonald’s then to pick up her breakfast and coffee. Did some house cleaning today and cleaned up around the outside before the rains moved back in, lot of rain here. I didn’t go see Dad today, he some testing and 2 therapy sessions today. For my dinner tonight i prepared Fried Ocean Perch w/ Mac & Cheese.

I picked up the Ocean Perch at Meijer yesterday. Really like the Meijer Seafood Department. Good selection, always fresh and some good items on sale. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Virgin Olive, on medium heat. Rinsed the Perch with cold water and patted dry with a paper towel. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them for 6 minutes. 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!

Then for a side I microwaved Stouffer’s Classic Mac & Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Finally a great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.
