Chocolate Coffee Flour Muffins Recipe {Gluten-Free}
Total Time: 30 minutes
Yield: 16 muffins

Ingredients

 

Muffins
1 1/2 cups coffee flour
1/2 cup cacao powder
1 tsp baking soda
1/2 tsp baking powder
1/2 cup sugar
1 egg, room temperature
1 cup milk of choice
1/4 cup brewed coffee, cooled
1/2 cup coconut oil, melted
1 tsp vanilla extract
1/2 tsp salt
Toppings
1/3 cup chopped hazelnuts

Instructions
1 – Preheat the oven to 350 F. Line a muffin pan with muffin liners and set aside.
2 – In a mixing bowl, add the egg, milk, sugar, brewed coffee, vanilla, melted coconut oil and combine until you obtain a smooth, even mixture.
3 – Add the coffee flour, cacao powder, baking soda, baking powder, salt and mix together with the wet ingredients. Fill each muffin liner 3/4th of the way full and top with the chopped hazelnuts.
4 – Bake in the preheated oven for 20-25 minutes or until a tester comes out clean.
5 – Remove muffins from the baking pan and transfer them to a cooling rack. Cool completely.

RECIPE FOR MANGO W/SWEET WHITE RICE

 

Recipe Ingredients:
3 to 4 Ripe Mangoes, chilled
3 cups Sweet White Rice
1 cup Coconut Milk
2 to 4 tbsp Sugar
1/4 tsp Sea Salt

Cooking Directions:
1. Rinse mangoes and chill them whole. Peel and slice mangoes just before serving to keep them fresh.

2. In a saucepan, combine sticky rice and coconut milk and cook in medium heat for 5 minutes or until thick. Stir in sugar and salt. The amount of sugar depends on the sweetness of the mangoes. Reduce heat to low and simmer, covered, for two minutes.

3. Serve warm on a platter with chilled mango slices arranged around the edge.

4. Makes 6 servings.

1/4 cup + 1 tbsp coconut flour
1/2 cup milk
2 eggs, room temperature

1. Preheat the oven to 375 degrees. Trim the boneless chicken breasts and pound out evenly. Then mix the preserves, mustard, honey and one-quarter cup of the chicken stock in a bowl. In another bowl, take the flour and finely chopped walnuts and mix together. Then dip the chicken breasts in the peach mixture and drain slightly. The roll the breasts in the walnut mixture and pat down. Place onto a cooking sheet and place in the oven for 20-25 minutes.
2. To make the sauce: put the remaining peach mixture in a small pan. Then add the cornstarch to the remaining chicken stock and mix. Add the chicken stock to the peach mixture and bring to a boil. Reduce the heat and simmer for 10 minutes. Season with salt and pepper to taste.
3. Remove the chicken from the oven and plate. Take the sauce and nap it across the chicken breast, then serve.
