Today’s Menu: Prime Rib w/ Shredded Potatoes Casserole and Green Beans

 

 

To start this rainy morning off I made some Simply Potatoes Shredded Hash Browns and heated up some Meijer Diced Ham. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Then topped them off with Diced Ham. I love combinations of Potatoes and Ham. Also had a cup of Bigelow Decaf Green Tea. 38 degrees and a lot of rain to start off 2021. Not a lot going on, just did a few chores around the house. For Dinner tonight I prepared a Prime Rib w/ Shredded Potatoes Casserole and Green Beans.

 

 

For the Prime Rib, I purchased it at Costco. It’s a 3 1/2 lb. Heartland Farm Foods Sous Vide Prime Rib. It’s already cooked so all I do is more less is reheat it. I had it in the freezer and sat it in the fridge overnight to thaw. Then to prepare it I heated the oven on 425 degrees. Took it out of the package and heated it in a foil lined baking pan for 40 minutes. Internal temperature of 100 degrees. Removed it from the pan to a serving dish.

 

 

 

The Prime Rib turned out perfect! Very tender and moist with excellent flavor. Came out a nice Rare to Medium Rare. We’ll purchase one from Costco again next time we have one! I sliced off an extra slice. I prepared a plate for a elderly woman who lives up the street. I usually make her a plate of our Holiday Meals and take them to her.

 

 

 

 

So to go with the Prime Rib I prepared some RESER’S MAIN STREET BISTRO – BAKED SHREDDED POTATO CASSEROLE. It comes in a tray that you can microwave or bake in the oven. As usual I’m going with the Oven Baking way.

 

 

 

 

Very easy to prepare. Preheat the oven to 350 degrees. Just remove the tray from the package and remove the film covering the tray. Place the tray on a baking sheet and heat in the oven for 22 minutes. And it’s ready to serve!

 

 

 

 

Seasoned with a shake of Salt and Pepper along with a sprinkle of Kraft 2% Shredded Sharp Cheddar Cheese. This turned out delicious! Came out bubbling hot. Plenty of Potatoes and loaded with flavor! Fantastic Potato item to have in the fridge.

 

 

 

 

 

 

For a 2nd side I prepared a can of Del Monte Cut Green Beans. Easy to prepare, just empty the can into a small sauce pan and heat until heated through on medium heat. Ready to eat! Then I also baked a small can of Pillsbury Crescent Rolls. For Dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream that I topped with some Smucker’s Sugar Free Chocolate Topping. Today’s Menu: Cajun Rainbow Trout w/ Baked Macaroni and Cheese

 

To start this Sunday Morning off I made Biscuits and Gravy with Turkey Sausage. I prepared a packet of Pioneer Peppered White Gravy, Pillsbury Grands Jr. Biscuits, Johnsonville Turkey Breakfast Sausage Links, and a cup of Bigelow Decaf Green Tea. A Delicious Sunday Morning Breakfast! A high of 44 degrees and cloudy outside today. Did a load of laundry and then cleaned the house, dusted and ran the vacuum. For Dinner tonight Cajun Rainbow Trout w/ Baked Macaroni and Cheese.

 

I had the Rainbow Trout Fillet, that I had purchased from Meijer, in the freezer. So I laid a package of 1 fillet in the fridge overnight to thaw. To prepare it all I’ll need is; Rainbow Trout Fillet, 1 teaspoon Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed skin side down on broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

 

For the Mac and Cheese I used Reser’s Main Street Bistro Signature Macaroni and Cheese. We have used several of their sides now and having the Mac and Cheese tonight.

 

 

I’ll be baking it, you can also microwave it. I prefer baking items in the oven. First preheat the oven to 350°F. Next I removed the tray from the package and removed the film. I placed the container on baking tray and heated it in the oven for 22 minutes. Nice and bubbly around the edges. Let it cool a bit and it’s ready! The Mac and Cheese is delicious! Fantastic Elbow Macaroni with plenty of Cheese, seasoned just right! I also had a slice of the baked a loaf of La Baguette Roasted Garlic Oval Bread I baked the day before. For a Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper to drink.

Today’s Menu: Salmon Patties w/ Baked Shredded Potato Casserole

 

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. Mostly cloudy and 80 degrees and partly cloudy out today. I went and had a new battery put in Mom’s Car. Besides that not a thing going on today. So I caught up on some little jobs in and around the house. For Dinner tonight I prepared Salmon Patties w/ Baked Shredded Potato Casserole.

 

 

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

 

 

In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Light Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

 

 

For a side dish we had something new I came across at Meijer a couple of weeks ago, RESER’S MAIN STREET BISTRO – BAKED SHREDDED POTATO CASSEROLE. 2nd time we’ve had it, and love it! It comes in a tray that you can microwave or bake in the oven. As usual I’m going with the Oven Baking way.

Today’s Menu: Cajun Rainbow Trout w/ Baked Macaroni and Cheese

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. Gave Mom a hand doing some Fall Cleaning of the Living Room and Dining Room. Moved everything and vacuumed and dusted. Then cleaned the outside windows, we removed the screens also and sprayed them down. Finally found someone to trim a big tree we have in the front yard, a lot of dead limbs on it. For Dinner tonight Cajun Rainbow Trout w/ Baked Macaroni and Cheese.

 

I had the Rainbow Trout Fillet, that I had purchased from Meijer, in the freezer. I’m glad I bought as much Rainbow Trout and Walleye as I could because it’s tough to find some now. So I laid the package of 1 fillet in the fridge overnight to thaw. To prepare it all I’ll need is; Rainbow Trout Fillet, 1 teaspoon Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated a Cast Iron Skillet on medium heat. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed skin side down and cooked it for 3 minutes. Flipped it over and cooked it another 3 minutes until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

 

Tried another new item tonight, Reser’s Main Street Bistro – Baked Macaroni and Cheese. I came across at Meijer the other day. We had the Potato Casserole last night and having the Baked Macaroni and Cheese tonight. This one also comes in a tray that you can microwave or bake in the oven, I’m going with the Oven Baking way.
