Today’s Menu: Chicken Tenders and Butter/Herb Fettuccine and Garlic Loaf Bread
I had a cup of Bigelow Decaf Green Tea for Breakfast this morning. 86 degrees and sunny, with a lot less humid today! After my Tea I grabbed my face mask and headed to Kroger for a few items. On the way back home I got Mom’s car washed for her, filled it with gas, and stopped by Wendy’s and picked up Breakfast for her. Later on I took my car up and had it washed and got gas. Back home I vacuumed both cars interiors and cleaned the windows. Took it easy the rest of the day. For Dinner tonight its Chicken Tenders and Butter/Herb Fettuccine and Garlic Loaf Bread.
I grabbed a 1/2 package of Simple Truth Chicken Tenderloins (Tenders) that I had in the freezer and I sat it in the fridge overnight to thaw. To prepare them I’ll need McCormick Grinders of Sea Salt and Peppercorn Medley, LiteHouse Poultry Herb Blend, Garlic Salt, Flour, Pam Cooking Spray, and Extra Light Olive Oil.
I seasoned and Floured the Tenders and set then aside. I grabbed a large skillet and sprayed it with the Pam Spray and heated the skillet on medium heat. As the skillet heated I added 2 tablespoons of Extra Light Olive Oil. When the skillet was heated I added the Tenders, I cooked them in 2 batches so not to over crowd the skillet. I cooked them for about 5 minutes and flipped them over to continue cooking them another 4 minutes. I checked the Tenders with a meat thermometer and I had the correct reading of 165 degrees F. Removed the first batch on to a paper towel lined plate and cooked the next batch.
They came out excellent! Good Seasoning and the Flour gave it a good crust. Served these with sides of LiteHouse Lite Blue Cheese and Hidden Valley Ranch Buffalo Dressing.
For my Pasta I used a package of Knorr Pasta Sides – Butter and Herb Fettuccine. I love these Knorr Pasta Sides. I’ve tried 2 or 3 of them and they all make delicious Pasta Dishes! To prepare it; In medium saucepan, bring 2 cups water and 1 Tbsp. of I Can’t Believe It’s Not Butter to a boil. Stir in contents of package and return to a boil. Reduce heat and continue boiling gently for 7 minutes or until pasta is tender, stirring occasionally. Let stand at least 2 minutes. Stir and serve. Easy to prepare and delicious! Excellent Pasta with good Butter and Herb Seasoning! I also baked a loaf of the LaBrea Garlic Oval Loaf Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.
