Today’s Menu: Turkey Frank Cincinnati Style Cheese Coneys

 

For Breakfast this morning I toasted a Thomas Light English Muffin and heated up a couple of Johnsonville Turkey Breakfast Sausage Links. I also had a cup of Bigelow Decaf Green Tea. Did a load of laundry after Breakfast and the cleaned the house, dusted and ran the ran the vacuum. For Dinner tonight it’s Turkey Frank Cincinnati Style Cheese Coneys.

 

Loving these Cheese Coneys!. I used Ball Park Smoked White Meat Turkey Franks, an excellent Turkey Frank! I boiled them, it took about 6 minutes and they were ready, plump, and delicious. Plus they are lower in calories and carbs than most other Hot Dogs, 45 calories and 5 carbs!

 

I heated a can of Skyline Chili with Beans for my topping. We prefer the Chili with Beans over the Chili with no Beans. It just gives the Coneys even more flavor with the added Beans! I served everything on a Aunt Millie’s Live Carb Smart Hot Dog Buns. Put the Frank in the Bun then topped it with French’s Yellow Mustard, the Chili, and Sargento Reduced Fat Sharp Cheddar Shredded Cheese. Had a small side of some Skyline Oyster Crackers with a few drops of Frank’s Hot Sauce on them, which is a common way to have them here in the Cincinnati area. We love our Chili, Chili Dogs, Chili Spaghetti, and Hot Sauce here in the Cincinnati area. For Dessert/Snack later a bowl of Breyer’s Carb Smart Chocolate Ice Cream.

Today’s Menu: Baked Chili and Cheese Nachos

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Rain and 40 degrees this morning. As the rain ended the temperatures dropped also in to the mid 30’s. I went and picked up Breakfast for at Wendy’s. Back home, nothing to do today. I was caught up on everything so I kicked back and caught up on some shows I had recorded and watched some Football. Nice relaxed day. For Dinner tonight a real Comfort Food and Mom’s favorite, Baked Chili and Cheese Nachos.

 

Myself or Mom were not that hungry tonight so it’s going to be an Appetizer for Dinner tonight as I prepared Baked Chili and Cheese Nachos. To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as a snack, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! I especially love the Jalapenos, nice mild heat!

 

To prepare I preheated the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a saucepan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything with the Cheese. Then just pop it in the oven for 10 minutes or until the Cheese has started to melt and everything is heated. We love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert later a couple of slices of Kraft 2% Super Sharp Cheddar on Triscuits Whole Wheat Crackers with a Coke Zero to drink..

Today’s Menu: Sharp Cheddar and Bacon Turkey Burger w/ Baked Fries

 

 

For Breakfast I had my morning cup of Bigelow Decaf Green Tea. 52 degrees and sunny out today. After my Tea I did a load of laundry. Then after Lunch I got the cart and rake out of the shed and raked the side and back yards. I love getting outside and doing yard work. I worked for a couple of different yard services during the Summertime. I really enjoyed the work, and still do! For Dinner tonight it’s a Sharp Cheddar and Chicken Bacon Turkey Burger w/ Baked Fries.

 

I started by grabbing a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need 2 slices but fried 5 slices. Always remember when frying Bacon use the Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fry as you’re preparing it!

 

I had bought a package of the Jennie – O Lean 93% Lean Turkey Burger Patties at Meijer and had them in the freezer. I grabbed a couple of them last night and let it thaw in the fridge overnight. To prepare the Burger I grabbed a skillet, sprayed it with Pam and added 2 teaspoons of Extra Light Olive Oil, heated it on medium heat. When ready I added the Turkey Burger and cooked it for 12 minutes flipping it 3 times. With a minute of cooking time left I added a slice of Kraft Deli Deluxe Sharp Cheddar Cheese. And done!

 

Added the Bacon, Lettuce, some Hellman’s Spicy Chipotle Mayonnaise (my favorite Mayo) and served it on a Aunt Millie’s Live Carb Smart Hamburger Bun. Just love these Burgers, juicy and delicious, and with the Sharp Cheddar and Bacon it makes it that much better! I love this Mayo. The Hellman’s Spicy Chipotle Mayonnaise is nice and creamy with excellent flavor, with a little kick to it!

 

 

 

I also baked some Ore Ida Crinkle Cut Fries. I baked them for 20 minutes and done. Served them with a side of Hunt’s Ketchup. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Spray skillet with nonstick cooking spray or add 1 to 2 teaspoons of oil. Preheat skillet over medium heat. Place burger patties in hot skillet. Cook approximately 15 to 17 minutes turning occasionally (2-3 times). Always cook to well-done, 165°F. as measured by a meat thermometer.

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 58 degrees and sunny out today. After my Tea I headed out to Meijer and then to Kroger for Mom. Next I stopped and filled up Mom’s car with gas and then on to Wendy’s to pick up Breakfast for her. Back home I got my cart out of the shed and helped a neighbor of mine get his Christmas Decorations out of his shed and then gave him a hand putting some of the outside Decorations. For Dinner tonight it’s Turkey Frank Cincinnati Style Cheese Coneys.

 

We just love our Cheese Coneys around here. I used Ball Park Smoked White Meat Turkey Franks, an excellent Turkey Frank! I boiled them, it took about 6 minutes and they were ready, plump, and delicious. Plus they are lower in calories and carbs than most other Hot Dogs, 45 calories and 5 carbs!

Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 54 degrees, windy and sunny out there today. After my Tea I headed off to Meijer for a few items. Stopped by McDonald’s on the way back and picked up Breakfast for Mom. We got the results back on the biopsy they took on Mom. It was confirmed that she has Basal Skin Cancer and will have to have both places removed. Thank goodness it wasn’t Melanoma like I had! I’m waiting on a Surgeon to call and get this scheduled and taken care of. Did a few chores around the house this afternoon. For Dinner tonight it’s a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

 

I wanted something easy to prepare, and what can be easier than making a Sandwich and having some Potato Chips! I had purchased some of the Boar’s Head London Broil Cap-Off Top Round Oven Roast Beef from Kroger. It was a beautiful cooked medium rare and too good to sit in the fridge for long! So for my Sandwich I’ll be using the Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Live Carb Smart Wheat Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Mike Sell’s Reduced Fat Potato Chips with some Lay’s Ranch Dip. For Dessert later a Jello Sugar Free Dark Cherry Jello.

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 65 degrees and partly cloudy out today. After my Tea I took my car up and had it washed. Then I stopped by the ATM and then picked up Breakfast at McDonald’s for Mom. My car is on its last legs. I hope it makes it through the Winter. I really don’t use it much, I usually use Mom’s car. But it’s nice to have that 2nd car in case Mom’s has to have work done, which it does from time to time. Anyway, I did some work outside in the yard. For Dinner tonight a real Comfort Food and Mom’s favorite, Baked Chili and Cheese Nachos.

Today’s Menu: Turkey Tacos and Refried Beans

For Breakfast I had a cup of Bigelow Decaf Green Tea. 27 degrees this morning, a bit nippy out there! After my Tea I warmed the car up for a bit and then headed off to Meijer. Wow grocery items just keep going up and up in price! From what they say it’s going to get worse! Gas this morning is up to $3.35 a gallon and across town it’s $3.59 a gallon! We’ll have to make sure every trip counts. I stopped on the way home and picked up Breakfast at McDonald’s for Mom. Back home I had to get the rake and leaf blower out, we overrun with leaves. For Dinner it’s Turkey Tacos and Refried Beans. Enjoy and Take Care!

 

We love our Turkey Tacos, great Comfort food for us! When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, and Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Old El Paso together make one fine Taco!

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. The Tacos hit the spot! For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Leftover Hickory Smoked Ham and Swiss Sandwich

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. High of 60 degrees and mostly sunny outside today. After my Tea I went to Wendy’s and picked up Breakfast for Mom. We had to drop Mom’s car off to change the radiator fluid and she got 4 new tires put on. For Dinner tonight I had another Hickory Smoked Ham and Swiss Sandwich. I love Baked Ham! I’ve left the post from last night below for Ingredients and Description. Take Care All!

 

The other day at Meijer I bought another of the Kentucky Legend Hickory Smoked Ham. It was a small 3 1/4 lb. Ham, and it looked delicious as always! I’ve baked a couple of these now and really enjoy them.

 

 

 

 

 

To prepare it; Preheat the oven to 350 degrees Fahrenheit. Remove the Kentucky Legend ham from the packaging and place it in a baking dish that’s at least 2 inches deep. Add enough water to just cover the bottom of the pan. Cover the baking dish with aluminum foil. Crimp the edges of the foil tightly over the pan edges to prevent steam from escaping. Place the baking dish into the oven and heat the Ham until a meat thermometer shows an internal temperature of at least 140 degrees Fahrenheit. The amount of time this takes depends on the size and shape of the ham. Mine took 80 minutes. When the Ham is heated through, remove the baking pan from the oven. Leave the foil on the pan for 15 minutes to rest the meat before removing it and carving.

 

I then began slicing it, I sliced it somewhat thin. I’m using Aunt Millie’s Live Carb Smart Wheat Bread and I’ll need Woeber’s Horseradish Mustard, Boar’s Head Imported Switzerland Swiss Cheese. I assembled my Sandwich, Ham, French’s Spicy Brown Mustard, served on Aunt Millie’s Light Whole Grain Bread. What a Sandwich! The Ham is delicious and moist. Excellent Ham Sandwich! We had plenty of leftovers. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper to drink.

Today’s Menu: 3 Bean Turkey Chili w/ Cheese and Tortilla Rounds

 

For Breakfast this morning I had a toasted Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. Had some rain showers this morning. We had a high of 67 degrees and cloudy for the day. I had a very rough night last night because of Phantom Pains. They started about 11:00 last night and continued till about 10:00 this morning. I spent the afternoon resting and catching up on some sleep. Hopefully better tomorrow. For Dinner tonight I prepared some 3 Bean Turkey Chili w/ Cheese and Tortilla Rounds.

 

I made some of my Crock Pot 3 Bean Turkey Chili last week and had a couple of containers in the freezer. I sat one of the containers in the fridge to thaw overnight. So it’s an easy dish to make tonight. I’ll need to heat up the leftover 3 Bean Turkey Chili, Frank’s Hot Sauce, Daisy Reduced Fat Sour Cream, Sargento Off the Block Sharp Cheddar Cheese, and Mission Tortilla Rounds. When making my Chili I use a Crock Pot and let it simmer all day! To make it I use; 2 – 1 lb. packages of Jennie – O Ground Turkey Breast, many Spices, 1 Packet McCormick Chili Mix, and Frank’s Hot Sauce. To reheat; I just added the Chili to a sauce pan and heated it on low, stirring often until heated through. Set aside until needed.

 

As I said I’m serving the Chili with some Frank’s Hot Sauce, Daisy Reduced Fat Sour Cream, and Sargento Off the Block Sharp Cheddar Cheese. For the Tortilla Chips I’m using Mission Tortilla Rounds.

 

To make it I got a bowl and made a bed of the Tortilla Rounds. Topped with some of the Chili, Hot Sauce, and Cheese. I had the Sour Cream on the side of the Bowl. Fantastic Light Meal. The Mission Tortilla Rounds are excellent Chips! I love using the 3 Bean Chili as many ways as I can, its so delicious! So for Dessert later a Jello Sugar Free Dark Cherry Jello.

 

 

 

 

 

 

 

 

3 Bean Turkey Chili
Ingredients
1 lb. package Jennie – O Extra Lean Ground Turkey Breast
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1/2 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
2 Tsps. Ground Anchio Chile Pepper
2 Tsps. Ground Paprika
1 Tbs. Ground Chile Seasoning
2 Tbs. Ground Roasted Cumin
1 Tsps. Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.
