Today’s Menu: Chili and Cheese Nachos
To start my day off I just had a cup of Bigelow Decaf Green Tea. After my Tea I went to Kroger for a few items and then to McDonald’s to pick up Breakfast for Mom – a Sausage, Egg, and Cheese Bagel with a Senior Coffee with 1 Cream. Mom went on to Church. Me, I did a couple of loads of laundry and light cleaning of the house. Later I got the leaf blower out and cleaned off the deck. After that I returned to being a slug for the afternoon! Watched NFL Football the rest of the afternoon. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.
Just no motivation to prepare a big meal so why not Chili and Cheese Nachos. We love Chili and Cheese Nachos around here! To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!
To prepare I preheated the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert/Snack later a few slices of Boar’s Head Block Sharp Cheddar and Wheat Crackers.
Hormel: Turkey w/Beans 98% Fat Free Chili

Directions:
Stove top: empty chili into saucepan. Stir occasionally while heating over medium heat, about 5 minutes or until hot. Microwave: empty chili into microwaveable bowl; cover loosely. Heat for 2 To 3 minutes or until hot, stirring once. Careful. Let chili stand in microwave 1 minute and stir before serving. All microwaves And stoves vary. Times given are approximate.

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I went to Meijer for a couple of items and then picked up Breakfast for Mom. Outside 79 degrees with rain showers early then clearing up for the day. After Lunch I got the cart out and sprayed for weeds around the house and shed. Everything done, I kicked back and took a short nap. I’m not sure what’s wrong, just feeling bad. Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

For Dessert later a bowl of Skinny Pop – Pop Corn and an Ice Water to drink.

It’s all about cheese at Jungle Jim’s Big Cheese Festival. With over 1,400 cheeses offered everyday in our amazing Cheese Shop, it’s no surprise that we have enough to dedicate an entire festival to celebrate its deliciousness. Experience a world of cheese featuring 40+ booths from over 80 companies, sharing their goods across a range of styles and flavors. We’ll have local, artisan, and international cheeses as well as charcuterie and more, all under one roof!
Life is Great But Cheese Makes it Better
Cheese is good when served alone, but you will excite your taste buds even more with the delectable selection of meats, olives, breads, and a variety of condiments including spreads, jams, and fruits we’ll have throughout. So be on the lookout for a variety of food booths amongst the tables of cheese.
Where There’s Wine, There’s a Whey!
Nothing goes better with cheese than a cold beer or glass of wine – the flavors are enhanced when they’re paired together. There will be multiple stations throughout the festival, all placed by region so finding the perfect pair will be easy as possible. Wine and beer will be available for purchase at the event by the glass, or get a VIP or drinking wristband and enjoy samples throughout the day.

This is a family friendly show, with exciting things planned for all ages! There will be lively music to complement the experience, and there will be several entertaining photo opportunities available throughout the day. 3 Bean Turkey Chili w/ Johnny Cakes

Today’s Menu: 3 Bean Turkey Chili w/ Johnny Cakes
For Breakfast on this Monday morning I Poached an Egg and toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread that I lightly buttered with I Can’t Believe it’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. It’s quite a weather day out there today. When I got up this morning it was snowing. After Breakfast it was sleeting. Then by 11:00 it was freezing rain! So we’ve had it all today. We had a high of 38 degrees, which is the highest we’ve had in 3 weeks. They say 40’s tomorrow and 50’s by Wednesday, hope they have it right! It’s a good day to have some Slow Cooker 3 Bean Turkey Chili! So for Dinner tonight its 3 Bean Turkey Chili along with some Johnny Cakes.
I had the 3 Bean Chili in the freezer. So I sat a container of it in the fridge overnight to thaw. The Chili freezes and reheats so easy. I’ll have to make some more, it’s my last container! To reheat the Chili; I’ll use a small sauce pan, spray it with Pam Non Stick Cooking Spray, add the Chili to the pan, and heat slowly on medium low heat until heated through. The Chili is just as good as it was when it was made! To go with the Chili I made some Johnny Cakes. I love the combination of Chili and Cornbread! I’ve left the original post which gives the ingredients and directions on making the Chili. For Dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar.
When I prepare my Chili I prepare the Ground Turkey and mix the Beans the night before. So the morning I’m making it everything is ready! I had the Crock Pot set up also. To make the Chili I’m using Jennie -O Lean Extra Lean Ground Turkey Breast. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Black Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in a 1/2 a Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Seeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). What’s good about this recipe you can use your own favorite Spices and make your own tweaks to it and it turns out delicious.
The first thing I do is get the Crock Pot out and put in a Glad Crock Pot Liner. The Liners are incredible, just line your Crock Pot with one and spray it with Pam Cooking Spray. Now you are set to go. It makes for one easy clean up, just remove it when done and give the inside of your Crock Pot a quick wipe down and your clean up is done! On with the recipe.
The Beans and Ground Turkey were prepared last night. I started by opening all 3 cans of Bush Beans into a large bowl and stirred until mixed. Then in the morning, I added the Beans to Crock Pot. To prepare the Turkey, I started by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the Seasonings and Tomato Paste, stirring often. When the Turkey has browned I put it in a large plastic container and on into the fridge after it had cooled a bit. Then this morning I added everything to the Crock Pot. Throw in a 1/2 cup of Water, stirred twice, and put the lid on the Crock Pot and set on low for 5-6 hours.
Then sit back and enjoy the aroma, that usually starts after an hour or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans and Spices is a perfect match. Served it topped with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. Also a side of Johnny Cakes, recipe below.
To prepare the Johnny Cakes (I love these…) all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Light Virgin Olive Oil, 1 3/4 cups Low Fat Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. I love the combination of Chili and Cornbread!
3 Bean Turkey Chili
Ingredients
1 lb. package Jennie – O Extra Lean Ground Turkey Breast
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1/2 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
1/2 Tsp Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
2 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.
Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).
*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.
Johnny Cakes (My way)
Ingredients:
Pam w/ Olive Oil Non – Stick Spray
1/4 cup Extra Virgin Olive Oil
1 3/4 cups Buttermilk

A little background on the Chili I raised on, Cincinnati Chili!
Cincinnati chili (or Cincinnati-style chili) is a Mediterranean-spiced meat sauce used as a topping for spaghetti (a”two-way”) or hot dogs (“coneys”), both dishes developed by Greek-Macedonian immigrant restaurateurs in the 1920s. Ingredients include ground beef, stock, tomato paste, cinnamon, other Mediterranean spices and sometimes chocolate in a soup-like consistency. Other toppings include cheese, onions, and beans; specific combinations of toppings are known as “ways”. The name “Cincinnati chili” is often confusing to those unfamiliar with it, who expect the dish to be similar to chili con carne; as a result, it is common for those encountering it for the first time to conclude it is a poor example of chili.
While served in many local restaurants, it is most often associated with the over 250 “chili parlors”, restaurants specializing in Cincinnati chili, found throughout greater Cincinnati with franchise locations throughout Ohio and in Kentucky, Indiana, and Florida. The dish is the area’s best-known regional food.
Ordering Cincinnati chili is based on a specific ingredient series: chili, spaghetti, grated cheddar cheese, diced onions, and kidney beans. The number before the “way” of the chili determines which ingredients are included in each chili order. Customers order a:
Two-way: spaghetti topped with chili (also called “chili spaghetti”)
* Three-way: spaghetti, chili, and cheese
* Four-way: spaghetti, chili, cheese, and onions
* Four-way bean: spaghetti, chili, cheese, and beans (beans substituted for the onions)
* Five-way: spaghetti, chili, cheese, onions, and beans
Some restaurants, among them Skyline and Gold Star, do not use the term “four-way bean”, instead using the term “four-way” to denote a three-way plus the customer’s choice of onions or beans. Some restaurants may add extra
ingredients to the “way” system; for example, Dixie Chili offers a “six-way”, which adds chopped garlic to a five-way. “Ways” are traditionally served in a shallow oval bowl. Cincinnati chili is also used as a hot dog topping to make a “coney”, a regional variation on the Coney Island chili dog, which is topped with grated cheddar cheese to make a “cheese coney”. The standard coney also includes mustard and chopped onion. The “Three-way” and the “Cheese Coney” are the most popular orders and very few customers order a bowl of plain chili. Most chili parlors do not offer plain chili as a regular menu item. Oyster crackers are usually served with Cincinnati chili, and a mild hot sauce such as Tabasco is frequently used as an optional topping.

Today’s Menu: Grilled Cheese and Baked Fries
For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with some Boar’s Head Sweet Sliced Ham and a 1/2 slice of Sargento Reduced Fat Swiss Cheese, for a Breakfast Sandwich. Also had my morning cup of Bigelow Decaf Green Tea. It’s another Spring like Winters day here, 63 degrees and partly cloudy. From what they are saying the upcoming week is going to be in the 60’s! So nice out that the flowers are already coming up around the neighborhood. After Lunch I headed over to spend some time with Dad at the rehab care center. He continues getting stronger and walking a lot better! Back home finished up some housework and took it easy the rest of the day. For Dinner tonight I prepared a Grilled Cheese and Baked Fries.
A Grilled Cheese and Baked Fries just sounded good. To make my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread.
I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. Oh, nothing like a good and toasty Grilled Cheese sometimes!
Then for a side I baked some Alexia Organic Yukon Select Fries. First time I’ve had these in a long time. Found the at Meijer and thought I would get a bag. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 18 minutes. They bake up beautifully and seasoned just right! Plus they are only 120 calories and 15 net carbs. I love my Potatoes! Grilled Cheese and Baked Fries for a Sunday Dinner, not too bad! For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Creamy Chicken Pasta w/ Baked French Bread

Today’s Menu: Creamy Chicken Pasta w/ Baked French Bread
For Breakfast this morning I Poached an Egg and served it on a toasted Healthy Life Whole Grain English Muffin. And as always my morning cup of Bigelow Decaf Green Tea. I prepared Mom a Scrambled Egg and toasted her some Raisin Bread. After Breakfast it house cleaning day, vacuumed and dusted. Then cleaned the fridge also. After Lunch I went and spent the day with Dad. He seems to be getting somewhat better. His appetite is back and a lot less stomach pain. They have him on light therapy until later in the week. Not a bad Winters Day out, partly sunny and 34 degrees. For Dinner tonight I’m trying a new item, Bear Creek Country Kitchens Creamy Chicken Pasta Mix. Tonight its Creamy Chicken Pasta w/ Baked French Bread.
I had seen the Bear Creek ads in all the Cooking Magazines so when I came across several of their products I grabbed a couple to try. One of the items is the Bear Creek Country Kitchens Creamy Chicken Pasta Mix. It uses Orecchiette Pasta, which comes in a rich and creamy Chicken flavored Sauce with Carrots. All I added was Water and some Pulled Chicken.
To prepare the dish I’ll need; 1 package of Bear Creek Country Kitchens Creamy Chicken Pasta Mix, water, and Pulled Chicken. While at Kroger I had purchased a Simple Truth Whole Roasted Chicken. Pulled all the Meat and I had my Chicken.
To make the Dish; I took a 2 Quart Saucepan, gave it a light spray of Pam Cooking Spray and added 3 1/2 cups water to it. Heated the water to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought the mixture back to a rolling boil. Reduced the heat to a medium boil. Cooked 14 minutes, stirring it occasionally. Removed it from the heat and let it set for 8 minutes. as it cooled it thickened up. As it was cooking it had a mouth watering aroma. And the taste is just as good! Good Chicken and Cheese taste and along with the Pasta, Carrots, and added Chicken makes a delicious Dinner! Love hearty, comfort food, meals.
I also reheated the Pillsbury French Bread which went perfect with the Chicken/Pasta Mixture. For Dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with some Smucker’s Sugar Free Hot Fudge Topping.
