Today’s Menu: Bison Steak, Eggs, Hash Browns, and Toast Breakfast

 

To start my Morning off I Poached an Egg and served it on a Thomas Light English Muffin. I also had a cup of Bigelow Decaf Green Tea. After Breakfast I went and picked up Breakfast for Mom at McDonald’s. Back home did a couple of loads of laundry and did some light cleaning around the house. Had thunderstorms and a big change in the temperature, only a high of 79 degrees. Felt like having a Breakfast again for Dinner tonight. I prepared a Bison Fillet, one Egg Sunny Side Up, Hash Browns, and Toast!

 

 

 

 

For my Steak I fried up a SayersBrook 4 oz. Bison Fillet Mignon. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. I it came out a perfect medium rare! It was so tender and juicy.

 

 

 

 

 

Next I used the same skillet and I prepared a Sunny Side Up Egg. Fried it on medium low, seasoned with Morton’s Lite Salt and Ground Black Pepper.

 

 

 

 

 

 

As the the Steak and Egg were cooking, in another skillet I prepared some Simply Potatoes Shredded Hash Browns. I love these, I could have them every day! Again I used a small skillet, sprayed it with Pam Cooking Spray, added 1 tablespoon of Extra Light Olive Oil, and heated it on medium heat. I fried these for 14 minutes. When done I sprinkled some Sargento Off the Block Sharp Cheddar Cheese.

 

 

 

 

 

Finally I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread. Topped them with some I Can’t Believe It’s Not Butter. I had one hearty Comfort Food Dinner tonight! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Sprite Zero to drink.

Today’s Menu: Grilled Turkey Bratwursts and Baked Fries

 

 

For Breakfast this morning I Scrambled a couple of Eggs and topped them with Sargento Shredded Reduced Calorie Sharp Cheddar Cheese. Then I made some Simply Potatoes Shredded Hash Browns and toasted a slice of Aunt Millie’s Light Whole Grain Bread. I also had my morning cup of Bigelow Decaf Green Tea. I was starved this morning! 91 degrees and partly cloudy today, and very humid. My allergies kept me in most of the day. Sneezing along with one bad headache. For Dinner tonight I prepared Grilled Brats, Baked Fries and Beans.

 

 

 

 

 

Having the Johnsonville Fresh Turkey Premium Original Bratwurst. They are so delicious fresh! They are natural meat color instead of the usual white colored Brats. Love these.

 

 

 

 

 

 

 

I went out and started the grill. Back inside I got the Bratwursts out of the fridge and sprayed them with Pam Non Stick Spray. With the grill ready I added the Brats and shut the lid of the grill. Grilled them for about 18 minutes, turning links often.

 

 

 

 

 

 

To go with my Brats I prepared some Ore Ida Golden Crinkle Cut French Fries for us. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Sprite Zero to drink.

For Breakfast I toasted a Thomas Light English Muffin and topped it with some Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. 90 degrees, partly cloudy and humid out today. Typical August Summer Day out there; Hot and Humid with the Cicadas just singing away out there! After Breakfast I went Home Depot, looking for a cordless Hedge Trimmer and cordless Trimmer. Stopped by Kroger for a few items and a prescription for Mom. Not a lot going on, did a few things around the house. For Dinner tonight its all Comfort Food! I prepared Chunky Baked Potato Soup with Cheddar and Bacon Bits w/ Grilled Cheese.

 

 

 

 

I’ve always loved Soup and the Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits is one om favorites! Another easy to prepare item; just empty the contents of the can into a sauce pan and heat. Heated it on medium low heat, stirring often. I love a thick and hearty Soup and this one is perfect. Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits is the best there is, at least to me.

 

 

 

 

 


Then for my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Chicken Burger w/ Baked Fries

 

 

 

To start this day off I prepared a Poached Egg that I served on a Thomas Light English Muffin. Also had a cup of Bigelow Decaf Green Tea. Heavy Rains and Thunderstorms hit the early morning hours. We nned the rain though the grass was starting to turn brown. Cleaned the house and then put Mom’s new Hoover Vacuum together, not a lot to it. This one has a cord which she will use and we still have Hoover Cordless which I use. The Cordless are nice, especially for me being in a wheelchair. But they don’t have the power of a Vacuum with a cord. Not much else going on. For Dinner tonight I prepared a Chicken Burger w/ Baked Fries.

 

 

 

 

I had been seeing a lot of Chicken Burgers at a lot of blogs out there, and they all look incredible! So I had bought a package from Meijer. The Burgers turned out so good that I purchased another package of the Smart Chicken – Ground Chicken and having them again tonight. To make the Burger I’ll need; the Ground Chicken (1 lb. package), Ground Cumin, Paprika, Garlic Powder, Dried Oregano, McCormick’s Grinders of Sea Salt and Peppercorn Medley, and Meijer Italian Style Bread Crumbs.

For toppings I’m using Kraft Reduced Fat Mayo w/Olive Oil, Heinz 57 Sauce, Hoffman’s Sharp Cheddar Cheese, Butter Leaf Lettuce and served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I’m keeping the toppings the same as last time, the Burgers came out delicious!

 

 

 

So to prepare them, in a large bowl, combine Chicken, Ground Cumin, Paprika, Garlic Powder, Dried Oregano, Sea Salt and Peppercorn Medley, and Italian Style Bread Crumbs. The Seasonings amount are to taste and 2 tablespoons of the Italian Style Bread Crumbs. Make a little depression with your thumb in the center of each burger so they cook evenly. Divide the mixture into 4 patties.

 

 

 

 

 

In a Cast Iron Skillet over medium heat, heat oil. Add burger patties and cook, flipping once, until golden and a thermometer inserted into the center registers 165°, 8 to 10 minutes. Top with cheddar and cook until just started melting, 2 minutes. Remove from heat and transfer patties to a plate. Serve on the Buns and top with Mayo, Heinz 57 Sauce, and Lettuce. The Ground Chicken Burger is juicy, moist, and flavorful!

 

 

 

 

 

To go with the Chicken Burger I prepared Ore Ida Golden Crinkle Cut French Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Heinz 57 Sauce. For Dessert/Snack later a Snyder’s 100 Calorie Mini Bag of Pretzels along with a Diet Peach Snapple.

Today’s Menu: Seasoned Gulf Coast Grouper Fish Sandwich w/ Mac and Cheese

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Rough night, dealing with Phantom Pains all night. They finally let up about 10:00 this morning but it pretty much ruined my day today. Cleaned the house and then took it easy and caught up on some sleep. For Dinner tonight I prepared a Seasoned Gulf Coast Grouper Fish Sandwich w/ Mac and Cheese.

 

 

 

 

 

I love my Fish and Seafood, especially this Florida Gulf Coast Grouper. I had one last fillet of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Lemon Pepper Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful. I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun.

 

 

 

 

To go with Fish Sandwich I prepared a Stouffer’s Classic Mac and Cheese Mac Cup. Just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Mano Tea Snapple to drink.

Today’s Menu: Grilled Turkey Bratwursts and Baked Fries

 

 

 

For Breakfast this morning I had a Jimmy Dean Simple Scramble Cup – Crumbled Turkey Sausage, Egg Whites, Cheddar Cheese. I also had a cup of Bigelow Decaf Green Tea. Partly cloudy and 81 degrees out today. After Breakfast I went to Walmart Garden Center looking for a few things. We have a real problem with flies this year. It’s worse this year than we have ever seen. They are so bad that it makes it tough to even use the grill. I bought a couple of the Citrusnella Candles to see that could help.  Sunny, 89 degrees, and the humidity has returned! For Dinner tonight I prepared Grilled Brats, Baked Fries and Beans.

 

 

 

 

 

Having the new Brats I came across at Meijer a couple of months ago, Johnsonville Fresh Turkey Premium Original Bratwurst. They are so delicious fresh! They are natural meat color instead of the usual white colored Brats.

I’ve got a couple of packages in the freezer! Served them on a Aunt Millie’s Reduced Calorie Hot Dog Bun and topped them with French’s Spicy Brown Mustard.

Nice going out there from time to time, we really miss living out there. Lot of farm land but not too far out from different parts of Hamilton, Fairfield, and Colerain. They actually some how got their corn crop out and it should be producing before too long. Amazing they were able to plant with all the rain we have had all year. Stopped at a couple of Farmer’s Markets while out there and Mom picked up some Sweet Corn and Tomatoes. Sure was nice going back home! So back home for Dinner tonight I prepared Grilled Brats and Baked Fries.

Today’s Menu: Bacon and Cheese Buffalo Burger w/ Baked Fries

 

 


For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced Ham, and had a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I went to McDonald’s to pick up Breakfast for Mom. Hot, humid, and a passing shower out today. It’s been hot and humid out its been too bad to do about anything outside. not complaining though, this sure beats the cold, ice, and snow of Winter! For Dinner tonight I had a Bacon and Cheese Buffalo Burger w/ Baked Fries.

 

 

 


I just love these Buffalo Burgers! I made this one combining my two favorites, Wild idea Buffalo and Jennie – O Turkey! I used Boar’s Head Bacon for my Burger topping. Heated up a medium size skillet on medium heat and fried the Bacon until it was heated through. Removed it from the skillet to a Paper Towel lined plate, and set aside. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

 

 

 

 


For the Buffalo Burger I used my favorite, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers as usual. Their meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Non Stick Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Peppercorn Medley. I then pan fried it, in Extra Light Olive Oil, about 3 1/2 minutes per side. After flipping the Burger I added a slice of Kraft Deluxe Sharp Cheddar Cheese, with about 1 minute of cooking time left. Topped it with the Bacon and served it on a Aunt Millie’s Reduced Calorie Hamburger Bun. I love a good Buffalo Burger!

 

 

 


To go with my Burger I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Bluegrass Deliciously Lean Mettwursts

 

 

For Breakfast this morning I toasted a Thomas Light English Muffin and topped it with I Can’t Believe It’s Not Butter. Also had a cup of Bigelow Decaf Green Tea. Outside its mostly sunny and 90 degrees, 2 days in a row of no rain! Took my car and then took Mom’s car up to the car wash. Then went to Walmart and bought Mom some new car floor mats. Got the cart out of the shed and did some yard work and a spin around the neighborhood. For Dinner I prepared a couple of Bluegrass Deliciously Lean Mettwursts for Dinner tonight.

 

 

 

 

 

I had purchased a couple of packages of the Bluegrass Lean Mettwurst while at Jungle Jim’s International Market last week. Had them in the freezer so I took a couple of them out of the package to thaw overnight in the fridge.

 

 

 

 

 

 

 

 

To prepare them I used a medium size skillet that I sprayed with Pam Cooking Spray and added the Metts. I then added water to the pan, just enough water to cover about a 1/4 of Metts. Turned the heat on medium and covered the pan. I turned the Metts frequently to get a nice even cook on them. When the water had boiled down I cooked them an extra 3 minutes to brown them. They turned out fantastic, nice and meaty! Plus being the Bluegrass Lean type , just 1/2 the calories of other Metts. I served them on Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Buns and topped with French’s Spicy Brown Mustard. I also made a Baked Potato for Mom. A couple of Metts was plenty for Dinner tonight for me. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Sprite Zero to drink.

Today’s Menu: Breakfast for Dinner w/ Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast

 

 

 

To start my day off I prepared a Jimmy Dean Scramble Cup – Crumbled Turkey Sausage, Shredded Cheddar Cheese, Egg Whites. Also had my morning cup of Bigelow Decaf Green Tea to get this morning started. Rain and thunderstorms passing by most of the day, high of 77 degrees. Got the leaf blower and cleaned off the driveway and then swept the shed out. After Lunch I had to trim the vines along the driveway, these grow way too fast! For dinner tonight its a Breakfast Menu! I prepared Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast.

 

 

 

 

 

Nothing like a hearty, healthy, and delicious Breakfast for Dinner too! I’ll need one Egg, Simply Potatoes Shredded Hash Browns, a couple of Jennie – O Turkey Breakfast Sausage Links, and 2 slices of Aunt Millie’s Light Whole Grain Bread.

 

 

 

 

 

 

So I got out a couple of small skillets and got the toaster ready. Heated up both skillets, sprayed with Pam Cooking Spray in both and added Extra Light Olive Oil to one of them. In the skillet with no Oil I started to fry the Jennie – O Turkey Sausage Links. The skillet with Oil, I prepared the Simply Potatoes Hash Browns. When both were cooked I put each one into separate bowls and set aside.

 

 

 

 

 

Then I started toasting the Bread. Next in the skillet that had the Hashbrowns, I fried my Sunnyside Up Egg. Seasoning the Egg with Morton’s Lite Salt and Ground Black Pepper. When the Toast was done I buttered both slices with I Can’t Believe It’s Not Butter. As the Egg was ready I grabbed a plate and plated everything! And what a Breakfast Dinner! Eggs, Hash Browns, Turkey Sausage, and Toast. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.
