Today’s Menu: Smoked Turkey Sausage Dogs w/ Baked Fries

For Breakfast this morning I lightly fried a couple of al fresco Country Style Chicken Sausage Breakfast Patties – With a hint of Sage and Thyme. I love these, they’re fully cooked so they fry up in 6 to 8 minutes per side. One of the best Breakfast Patties I’ve found. Great seasoning and the perfect size for my Healthy Life Whole Grain English Muffins. So I made me and Mom a couple of Breakfast Sandwiches. I also added a 1/2 a slice of Boar’s Head Vermont Cheddar to the Sandwich. So Mom had a couple of errands to run and I had to do a few things around the house. I had the wooden deck repaired a while back and my neighbor came over did some touch up painting for me this afternoon. It’s another hot and humid day out again, 99 degrees. Later on I went through my closet and dresser gathering up some clothes that were too small or I just didn’t wear anymore. I then took them to the local Goodwill Store. I also gave them Dad’s old clothes and some things that my Mom had gathered up also. So for Dinner tonight I prepared Smoked Turkey Sausage Dogs w/ Baked Fries.

I used the Butterball Hardwood Smoked Turkey Sausage. I cut the Sausage Links into Bun length pieces. I absolutely love the Butterball Hardwood Smoked Turkey Sausage. It’s got such a fantastic flavor and always cooks up just right. To prepare them I used a large skillet, added about a 1/2 tablespoon of Extra Virgin Olive Oil and preheated it on medium heat. Put the Sausage in the skillet when it was heated up and covered with a lid. I turned the Sausage every few minutes to get an even char on them, cooked about 11 minutes total. As always they came out just bursting with flavor and flat-out delicious! I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Bun and topped with French’s Spicy Brown Mustard.

To go with the Sausage Dog I baked up some Alexia Organic Yukon Select Fries. Seasoned them with Morton’s Lite salt and Ground Black Pepper. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right.! Plus they are only 120 calories and 15 net carbs. Served with a side of my favorite Ketchup, Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

For Breakfast this morning I prepared 2 Eggs Scrambled, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, heated up some Johnsonville Turkey Breakfast Sausage Links, and a cup of Bigelow Decaf Green Tea. I sprinkled some Sargento Reduced Fat Colby-Jack Shredded Cheese and Ortega Chipotle Taco Sauce on my Scrambled Eggs. I buttered the Toast with I Can’t Believe It’s Not Butter. Great Breakfast to start the day off with! Outside its Hot and Humid! A high of 98 degrees and the Heat Index had it over 100 degrees! They say we 4-5 days of this with each day getting hotter before cooling down a bit. But after last Winter I’m not complaining! Did some housework and cleaned up a bit outside. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

For my Sandwich I’ll be using the Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffle’s Reduced Fat Potato Chips with some Dean’s Ranch Dressing Dip. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Chicken Bacon and Vermont Cheddar Cheese Buffalo Burger w/ Baked Fries

I just had a cup of Bigelow Decaf Green Tea for Breakfast. Rain Showers, Humid, and 86 degrees out. Not looking forward to the Funeral tomorrow for Dad. We are hoping there’s no rain but it doesn’t look good. Cleaned the house and cleaned up around the outside between showers. For Dinner tonight I prepared a Chicken Bacon and Vermont Cheddar Cheese Buffalo Burger w/ Baked Fries.

I started by grabbing a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need to 2 slices but fried up 5 slices. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

For the Buffalo Burger I used my favorite, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers as usual. Their meaty, juicy and just flat out delicious! Preheated up a small skillet, on medium heat, that I sprayed with Pam Non Stick Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Peppercorn Medley. I then pan fried it, in Extra Light Olive Oil, about 3 1/2 minutes per side. After flipping the Burger I added a slice of Boar’s Head Vermont Cheddar with about 1 minute of cook time left. Topped with the Chicken Bacon and served the Burger on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun. The Burger was juicy and delicious, as all the Wild Idea Burgers are. Just love a good Burger, Buffalo Burger!

For the Cheese I used Boar’s Head Vermont Cheddar. I tried a sample of it at Kroger a while back and really loved the taste. It melts perfectly and has an excellent Cheddar taste. Our Cheese of choice lately!

To go with my Burger I baked some of my favorite Fries – Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Turkey Frank Cincinnati Style Cheese Coneys

For Breakfast I toasted a Healthy Life Whole Grain English Muffin and topped with I Can’t Believe It’s Not Butter. I also made my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to McDonald’s and picked up Breakfast for Mom. Mom went to Church and spent most of the day doing some laundry and cleaning the house. Dad had been out of the house for a while, living at the Center. But it was knowing we could hop in the car and go see him at anytime. Now with his passing it just seems so empty. For Dinner tonight I prepared Turkey Frank Cincinnati Style Cheese Coneys.

Just wasn’t in the mood to cook I wanted something easy to prepare so Cheese Coneys sounded good and that’s what I prepared for us. I love my Cheese Coneys! Living here all my life here in the Cincinnati area you are raised on Cheese Coneys, Chili Spaghetti, and such. From all the classic Chili Parlors; Skyline Chili, Gold Star Chili, Camp Washington Chili, just to name a few. But having Diabetes 2, I have to watch my carbs and calories so I make mine a little healthier but keeping the incredible flavors.

I used Ball Park Smoked White Meat Turkey Franks, an excellent Turkey Frank! I boiled them, it took about 5 minutes and they were ready, plump, and delicious. I heated the can of Skyline Chili for my topping. I served everything on a Aunt Millie’s Reduced Calorie Hot Dog Buns. Put the Frank in the Bun then topped it with French’s Yellow Mustard, the Chili, and Sargento Reduced Fat Sharp Cheddar Shredded Cheese. Had a small side of some Skyline Oyster Crackers with a few drops of Frank’s Hot Sauce on them, which is a common way to have them here in the Cincinnati area. We love our Chili, Chili Dogs, Chili Spaghetti, and Hot Sauce here in the Cincinnati area. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Green Tea Snapple to drink.

Today’s Menu: Roast Beef and Vermont Cheddar on Whole Grain w/ Tossed Salad

It was a very long evening and morning for me. As I battled Phantom Pains throughout that time. I didn’t get much sleep if any overnight as the pains were very intense. Why can’t they come up with something to control them. But for now all I can do is grit my teeth and hope they pass. When they finally slowed and stopped I didn’t do a whole lot of anything today but try to catch up on some sleep and relaxation. For Dinner I wanted something that didn’t take a lot of effort to prepare so I went with a Roast Beef and Vermont Cheddar on Whole Grain with a Tossed Salad.

On our visit to Jungle Jim’s International Market I picked up a few Boar’s Head items from the Deli, Boar’s Head, Deluxe Roast Beef, Honey Smoked Turkey, Sweet Sliced Ham, and Vermont Cheddar Cheese (Yellow). I’m using the Roast Beef and Vermont Cheddar. I served it on Aunt Millie’s Light Whole Grain Bread, topped it with some French’s Yellow Mustard. I also had a small side of Ruffle’s Reduced Fat Potato Chips.

I also had a Tossed Salad. I had a bag of Dole Greener Selection Salad. For the Salad Dressing I used Kraft Fat Free Classic Catalina Dressing along with a sprinkle of Oscar Mayer Real Bacon Pieces. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Today’s Menu: Ham, Eggs, Hash Browns, and Toast

For Breakfast this Morning I had a cup of Bigelow Decaf Green Tea. At 10:30 this morning we had to be over at the office of where Dad is staying. We are applying for Medicade for Dad. They seem to want everything you have but your first-born children. Hope we get it worked out, very stressful! Rain showers this morning and very windy. There’s a lot of flooding all over the area, even had a Tornado watch last night. Very windy and a of 40 today, but the wind chill made it about 30. For Dinner tonight I wanted some Breakfast! So Breakfast it is, I prepared Ham, Eggs, Hash Browns, and Toast.

Breakfast for Dinner sounded perfect for Dinner tonight! I sliced up the rest of our Ham off the bone, I had prepared the Ham the day before. The Ham is so moist and delicious! We used Cook’s Bone In Ham. To prepare it I used a small skillet, sprayed it with Pam Cooking Spray, and heated it on medium heat. I then took a few slices of it and reheated it i tin the skillet for about 5 minutes. I love this Ham! It has such good flavor, perfect for Breakfast or Dinner.

Next I used the same skillet and I prepared a Sunny Side Up Egg. Fried it on medium low, seasoned with Morton’s Lite Salt and Ground Black Pepper.

As the the Ham and Egg were cooking, in another skillet I prepared some Simply Potatoes Shredded Hash Browns. I love these, I could have them every day! Again I used a small skillet, sprayed it with Pam Cooking Spray, added 1 tablespoon of Extra Light Olive Oil, and heated it on medium heat. I fried these for 14 minutes. When done I sprinkled some Sargento Reduced Fat Shredded Sharp Cheddar Cheese.

Finally I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread. Topped them with some I Can’t Believe It’s Not Butter. Had a glass of 2% White Milk to drink. I had one hearty Comfort Food Dinner tonight! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Simply Potatoes Shredded Hash Browns

Simply Potatoes Shredded Hash Browns fry up perfectly to a crisp, golden brown because they’re made from quality potatoes. They’re always fresh, never frozen so you’ll never have to worry about freezer burn. Fresh, delicious potatoes mean you never have to sacrifice great homemade taste.

Today’s Menu: Ham Sandwich w/ Applewood Smoked Bacon Potato Casserole

For Breakfast this I toasted a Healthy Life Whole Grain Muffin and topped it with Smucker’s Sugarless Blackberry Jam, Love that Jam. I also had my morning cup of Bigelow Decaf Green Tea. Well Winter just will not go away! Overnight a snow system moved through and gave us over an inch of snow. It melted pretty quick though as we had a of 52 degrees for the day. After Breakfast I went up to Kroger, they had Hams on sale and Bought a Cook’s Semi-Boneless Ham. It was close to 7 3/4 lbs. and got it for $6.21. We usually have a Ham for Easter but went to Easter Dinner at a Family member. I love a good baked Ham and to me the leftovers are the best part! Ham Sandwiches like tonight and fried Ham for Breakfast. Dad is doing a lot better today, he’s getting to know everyone and adjusting to it. We sure do miss him here at home! For Dinner tonight I prepared a Ham Sandwich w/ Applewood Smoked Bacon Potato Casserole.

We almost always use Cook’s Ham when we bake a Ham. So with the Ham I baked earlier, we made some into Ham Sandwiches. Just took a few slices and serving it on Aunt Millie’s Light Whole Grain Bread. The Ham is so delicious and moist. And as always with Cook’s Ham, perfect seasoning! We’ll have quite a few Breakfasts and Lunches out of this.

I served the Ham on Aunt Millie’s Light Whole Grain Bread. I was going to add Mayo or Mustard but I just wanted the taste of that delicious Ham!

To go with the Ham I prepared a box of Idahoan Applewood Smoked Bacon Homestyle Casserole. Like the other Idahoan dishes their a breeze to prepare and a delicious Potato Dish. And like the others this turned out fantastic! Very well seasoned, and you can taste that Applewood bacon flavor. I love my Potatoes! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

* Last minute add was Del Monte Cut Green Beans

Cook’s Hams

Semi-Boneless Hams
Classic Reduced Sodium Half (Serves: 15-20)
Half (Serves: 15-20)
Whole (Serves: 30-40)
Semi-Boneless Hams
Cook’s Semi-Boneless Hams are now fully cooked! This means they may be eaten cold or heated. The ham only needs to be heated through if serving warm.
With fewer bones and less fat, Cook’s Semi-Boneless Hams are a great value. With two of the three bones removed, carving and serving are much easier. With only the center bone remaining, your family can still can enjoy the great taste and flavor that only a Cook’s bone-in ham can offer, plus the added value of more lean meat and the convenience of less bone.

Today’s Menu: Bacon Double Cheddar Chicken Sandwich w/ Tater Tots

For Breakfast I had a bowl of Cherrio’s along with a cup of Bigelow Decaf Green Tea. After Breakfast I headed to the local Kroger up the road. Needed a few things for tonight’s Dinner. Usually when I go early to Kroger there’s hardly anyone there. But not today, I forgot it was Valentine’s Day! I was luck to find a handicap parking space, someone happened to be pulling out and they left their electric cart ou also. Kroger made a fortune on Cars, Flowers, and Candy sales! I got what I needed and headed back home. I’m glad I did go early though as it started pouring the rain as I got back home. Not much else going on today. I did put a Pork Loin Roast in the Crock Pot and let it cook on low for 7 hours for tomorrow’s Dinner. For my Dinner tonight I prepared a Bacon Double Cheddar Chicken Sandwich w/ Tater Tots.

I purchased a package of Tyson Thin Cut Boneless Chicken Breasts at Kroger. I’ll also need the following to make the Dish; al fresco Uncured Chicken Bacon, Boar’s Head Deli Sliced Yellow Cheddar and White Cheddar Cheese, Jack Daniel’s Honey Smokehouse BBQ Sauce, Lettuce, and Aunt Millie’s Whole Grain Mini Sub Buns.

I first fried the al fresco Uncured Chicken Bacon. I started by grabbing a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. This Bacon fries up perfect with an excellent taste.

Next I fried the Thin Cut Chicken Breasts. I’m using the Tyson Thin Cut Boneless Chicken Breasts. I got a large skillet that I sprayed with pam Non Stick Cooking Spray and added a tablespoon of Extra Light Olive Oil. I then heated the skillet on medium heat. I seasoned the Chicken with Morton’s Lite Salt and Ground Pepper. Then rolled the Chicken in seasoned Flour. I had seasoned the Flour with Ground Smoked Paprika. With the skillet heated I added the Chicken. I fried it 2 minutes and flipped it over and cooked it another 2 minutes and flipped it back again. Cooked it until the Chicken had an internal temperature of 165°. Cooked it a total of 15 minutes. With about 1 minute or so of cooking time left I topped the Chicken Breasts with a slice of Yellow and slice of White Cheddar Cheese. The Chicken came out perfect. Nice browning on the outside moist and juicy inside, and the Cheese melted beautifully!

As my Chicken was cooking I preheated the oven on 425° to bake some Tater Tots.I used Ore Ida Golden Tater Tots. Just bake at 425 degrees for about 15 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup.

As the Tater Tots were finishing up I made my Sandwich. I got the Mini Sub Buns and took the bottom half and put Lettuce down, added the Chicken Breast, topped that with the Jack Daniel’s BBQ Sauce, the Bacon, and the top half of the Sub Bun. Quite a sandwich! I’ll have to start having this more often! With the Tater Tots it came out one delicious Dinner! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple.
