Today’s Menu: Bacon Double Cheddar Chicken Sandwich w/ Tater Tots

 

 

For Breakfast I had a bowl of Cherrio’s along with a cup of Bigelow Decaf Green Tea. After Breakfast I headed to the local Kroger up the road. Needed a few things for tonight’s Dinner. Usually when I go early to Kroger there’s hardly anyone there. But not today, I forgot it was Valentine’s Day! I was luck to find a handicap parking space, someone happened to be pulling out and they left their electric cart ou also. Kroger made a fortune on Cars, Flowers, and Candy sales! I got what I needed and headed back home. I’m glad I did go early though as it started pouring the rain as I got back home. Not much else going on today. I did put a Pork Loin Roast in the Crock Pot and let it cook on low for 7 hours for tomorrow’s Dinner. For my Dinner tonight I prepared a Bacon Double Cheddar Chicken Sandwich w/ Tater Tots.

 

I purchased a package of Tyson Thin Cut Boneless Chicken Breasts at Kroger. I’ll also need the following to make the Dish; al fresco Uncured Chicken Bacon, Boar’s Head Deli Sliced Yellow Cheddar and White Cheddar Cheese, Jack Daniel’s Honey Smokehouse BBQ Sauce, Lettuce, and Aunt Millie’s Whole Grain Mini Sub Buns.

 

 

 

 

I first fried the al fresco Uncured Chicken Bacon. I started by grabbing a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. This Bacon fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need to 2 slices but fried up 5 slices. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

 

 

Next I fried the Thin Cut Chicken Breasts. I’m using the Tyson Thin Cut Boneless Chicken Breasts. I got a large skillet that I sprayed with pam Non Stick Cooking Spray and added a tablespoon of Extra Light Olive Oil. I then heated the skillet on medium heat. I seasoned the Chicken with Morton’s Lite Salt and Ground Pepper. Then rolled the Chicken in seasoned Flour. I had seasoned the Flour with Ground Smoked Paprika. With the skillet heated I added the Chicken. I fried it 2 minutes and flipped it over and cooked it another 2 minutes and flipped it back again. Cooked it until the Chicken had an internal temperature of 165°. Cooked it a total of 15 minutes. With about 1 minute or so of cooking time left I topped the Chicken Breasts with a slice of Yellow and slice of White Cheddar Cheese. The Chicken came out perfect. Nice browning on the outside moist and juicy inside, and the Cheese melted beautifully!

 

As my Chicken was cooking I preheated the oven on 425° to bake some Tater Tots.I used Ore Ida Golden Tater Tots. Just bake at 425 degrees for about 15 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup.

 

 

 

 

 


As the Tater Tots were finishing up I made my Sandwich. I got the Mini Sub Buns and took the bottom half and put Lettuce down, added the Chicken Breast, topped that with the Jack Daniel’s BBQ Sauce, the Bacon, and the top half of the Sub Bun. Quite a sandwich! I’ll have to start having this more often! With the Tater Tots it came out one delicious Dinner! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple.

Today’s Menu: Chicken Bacon and Vermont Cheddar Cheese Buffalo Buff Burger w/ Baked Fries

 

 

To start my Sunday morning off I Scrambled a couple of Eggs, fried a couple of slices of al fresco Uncured Chicken Bacon, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Good start to a dreary Sunday Morning. Outside it’s a mix of light rain and snow and like this most of the day. We need some sunshine above freezing weather! Gave Mom a hand with a couple of loads of laundry. After Lunch I laid back down for a while. I’ve had a Sinus Headache since yesterday. Not much else going on. For Dinner tonight I prepared a Chicken Bacon and Vermont Cheddar Cheese Buffalo Buff Burger w/ Baked Fries.

For Dinner tonight I’m having a Wild Idea Buffalo Burger but not my normal 1/3 lb. Buffalo Burger. I’m having the Wild Idea Buffalo Buff Burgers. I’ve these several times but usually I have them for Lunch. The Buff Burger is a 6 oz., seasoned, handcrafted Buffalo Burger.

 

 

 

 

 

Next I sprayed another skillet with Pam Non Stick Cooking Spray, added a 1/2 tablespoon of Extra Light Olive Oil, and heated it on medium low heat. I then fried it about 3 1/2 minutes per side. After flipping the Burger I added a slice of Boar’s Head Vermont Cheddar with about 1 minute of cook time left. Topped with the Chicken Bacon and served the Burger on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun. The Burger was juicy and delicious as all the Wild Idea Burgers are. I love buffalo or Bison if you prefer.

 

 

For the Cheese I used Boar’s Head Vermont Cheddar. I tried a sample of it at Kroger and really loved the taste. First time trying it. It melted perfectly and has an excellent Cheddar taste. I’ll have to buy some more of this.

 

 

 

 

 

To go with my Burger I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later, while watching the Super Bowl, a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Today’s Menu: Turkey Meatball Mini Sub w/ Baked Crinkle Fries

 

 

 

To start the Sunday morning off I made some Simply Potatoes Shredded Hash Browns. Next I prepared some Ekrich Smoked Turkey Sausage Links. I also had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to the local Kroger and picked up a few items then went to Burger King and picked up Mom and Dad’s Breakfast. They normally have McDonald’s but I switched it up a bit and picked up the Burger King Breakfast items. And they really enjoyed them! Cloudy out all day and a high of 42 degrees. Rain Showers moved in the afternoon. Cleaned the house and kept an eye on Dad while Mom was at Church. So for Dinner tonight I prepared a Turkey Meatball Mini Sub w/ Baked Fries.

 

 

I had used the Honeysuckle White Fresh Italian Style Turkey Meatballs leftover from yesterday meal. I’ve been using the Honeysuckle White Fresh Italian Style Turkey Meatballs for quite a few years now. So thank goodness Kroger finally started carrying them again! The Meatballs are good size, always fresh, meaty, and have a fantastic taste and they’re 190 calories and 5 net carbs for 3 Meatballs. Plus they’re a perfect size for Hoagie or Hot Dog Buns, I used Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Buns.

 

 

For my Pasta Sauce I had used the LaRosa’s Original Sauce. A local favorite and mine also, it’s got a perfect combination of a robust sauce with a hint of sweetness to it. To prepare it I took a medium size sauce pan and sprayed it with Pam Cooking Spray. Emptied the can of Sauce in the pan and turned the heat on medium. Then I added my Turkey Meatballs and covered the pan and let it simmer until both the Sauce and Meatballs were heated through.

 

 

 

I’m using Sargento Shredded Mozzarella Cheese as a topping for the Sub. You can use Hoagie Buns but to save on calories and carbs I usually just use Aunt Millie’s Reduced Fat Whole Grain Hot Dog Buns. To assemble; open the Bun up, put the Meatballs and Sauce in the Bun , top it with a few shakes of McCormick Grinder Italian Seasoning, and top it with the Sargento Shredded Mozzarella Cheese. Love these Meatball Sandwiches! The Larosa’s Sauce just seems to bring the Sandwich together! Sauce is incredible, Turkey Meatballs flavorful and meaty, and the Mozzarella is perfect with Pasta and Sauces.

Today’s Menu: Ham, Eggs, Hash Browns, and Toast

 

 

For Breakfast this Morning I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Also had that morning cup of Bigelow Decaf Green Tea. This morning it was cloudy and 28 degrees. As the day went on we seen some sunshine and a high of 51 degrees. Did a few things around the house and then starting at Noon I watched College Football for the rest of the afternoon. For Dinner tonight some Breakfast! I prepared Ham, Eggs, Hash Browns, and Toast.

 

 

Breakfast for Dinner sounded perfect for Dinner tonight! I sliced up the rest of our Thanksgiving Ham off the bone. The Ham, as it is most years, was moist and delicious! We used Cook’s Bone In Ham. To prepare it I used a small skillet, sprayed it with Pam Cooking Spray, and heated it on medium heat. I then took a few slices of it and reheated it i tin the skillet for about 5 minutes. I love this Ham! It has such good flavor, perfect for Breakfast or Dinner.

 

 

 

Next I used the same skillet and I prepared a Sunny Side Up Egg. Fried it on medium low, seasoned with Morton’s Lite Salt and Ground Black Pepper.

 

 

 

Simply Potatoes Hash Browns

As the the Ham and Egg were cooking, in another skillet I prepared some Simply Potatoes Shredded Hash Browns. I love these, I could have them every day! Again I used a small skillet, sprayed it with Pam Cooking Spray, added 1 tablespoon of Extra Light Olive Oil, and heated it on medium heat. i fried these for 14 minutes. When done I sprinkled some Sargento Reduced Fat Shredded Sharp Cheddar Cheese.

 

 

 

 

Finally I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread. Topped them with some I Can’t Believe It’s Not Butter. Had a glass of 2% White Milk to drink. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Sweet Italian Turkey Sausage w/ Baked Fries

 

For Breakfast this morning I had a bowl of Cheerios’s Cereal and a cup of Bigelow Decaf Green Tea. After Breakfast I had to get the hedge clippers and leaf blower out. I had to trim back Mom’s Rose Bushes they growing up over on to the wooden deck out front. Then used the leaf blower and cleaned off the deck and driveway areas. I went to see Dad at the rehab center. He seems to be doing good. Hopefully he’ll be home in a couple of weeks. Back home, I got the cart out and finished up some yard work and took a spin around the neighborhood. It’s a little hotter and the humidity was a tad worse. For Dinner tonight I prepared a Sweet Italian Turkey Sausages w/ Baked Shoestring Fries.

 

 

I used the healthy and delicious Jennie O Lean Sweet Italian Turkey Sausages. I had bought a package at Meijer the other day. I pan fried them, using Pam w/ Olive Oil Cooking Spray and no oil needed. Heated the pan on medium and cooked a total of about 17 minutes, turning the Sausages occasionally. They fry up plump and brown, as always Jennie – O Products always have that fresh taste to them. The Sausages have 160 calories and 0 carbs per Sausage.

 

 

 

I served it on a Aunt Millie’s New England Style Potato Hot Dog Bun. Second time we’ve used these Buns. They’re a bit higher in calories and carbs than the Aunt Millie’s Reduced Calories Buns I normally buy. The buns are a top loaded bun. Plus they have a Potato flavor to them. I topped the Sausage with French’s Spicy Brown Mustard. Love these Sweet Italian Sausages, thank you Jennie – O! I made 2 of them having one tonight and the other for Lunch tomorrow.

 

 

 

Then for a side I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. Today’s Menu: Bacon and Cheese Turkey Burger w/ Baked Fries

 

 

For Breakfast this morning it was Eggs and Bacon with Toast. I fried up one Egg Sunnyside Up, fried up some SayersBrook Wil Boar Uncured Bacon, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread (lightly buttered), and made a cup of Bigelow Decaf Green Tea. I thought I was out of the Wild Boar Bacon but I found a package in the freezer so I let it thaw overnight in the fridge. I love the Wild Boar Bacon, if you never tried it you should!

 

 

 

 

Outside today it’s 88 degrees and humid. Got the cart out after Breakfast and got some yard work done before it got too hot out. After Lunch went to Meijer to see if the Garden Center had any of the Fall Mum plants in yet. Which they didn’t, it’s still a bit early to have any in. Did a few things around the house and then kicked back for a couple of hours and got caught up on some shows I recorded. For my Dinner tonight its a Bacon and Cheese Turkey Burger w/ Baked Fries.

 

 

 

I had the Honeysuckle White Lightly Seasoned Turkey Pattie in the freezer so I grabbed one and let it thaw overnight in the fridge. They are 1/4 lb. patties (4 to a package) and 170 calories per burger

 

 

 

 

 

For the Bacon I’m using the Kroger Simple Truth Turkey Bacon. It fries or bakes up real easy and has excellent taste.I was going to use Jennie – O Turkey Bacon but didn’t have any, I thought I had a package in the freezer.

 

 

 

 

 

To prepare the Turkey Burger, I’m using a medium size skillet that I sprayed with Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium. When the skillet was ready I added the Turkey Burger. I fried it about 6 minutes per side. After flipping the Burger I topped it with a slice of Kraft Deluxe Sharp Cheddar with a bout 1 minute of cooking time left. I served the Burgers on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun. Topped the Turkey Burger with some Heinz 57 Sauce and the Turkey Bacon. The Burgers fried up great and the toppings all worked well together.

 

For a side I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

For Breakfast this morning I cooked up some Simply Potatoes Shredded Hash Browns, topped them with some cooked diced Ham, Sargento Reduced Fat Shredded Sharp Cheddar, and finally a Sunnyside Up Fried Egg. Also toasted a slice of Aunt Millie’s Light Whole Grain Bread and a cup of my Bigelow Decaf Green Tea. I love this Breakfast Skillet! After Breakfast I went to see Dad at the rehab center. It’s a little hotter and the humidity was a tad worse. For Dinner tonight I prepared a Sweet Italian Turkey Sausages w/ Baked Shoestring Fries.

 

 

I used the healthy and delicious Jennie O Lean Sweet Italian Turkey Sausages. I had bought a package at Meijer the other day. I pan fried them, using Pam w/ Olive Oil Cooking Spray and no oil needed. Heated the pan on medium and cooked a total of about 17 minutes, turning the Sausages occasionally. They fry up plump and brown, as always Jennie – O Products always have that fresh taste to them. The Sausages have 160 calories and 0 carbs per Sausage.

 

 

 

 

I served it on a new Aunt Millie’s Hot Dog Bun, the Aunt Millie’s New England Style Potato Hot Dog Bun. It’s a bit higher in calories and carbs than the Aunt Millie’s Reduced Calories Buns I normally buy, but these looked so good I had to try them! The buns are a top loaded bun. Plus they have a Potato flavor to them. After trying them I really like them, jut wish they were a bit lower in calories and carbs. I topped Sausage with French’s Spicy Brown Mustard. Love these Sweet Italian Sausages, thank you Jennie – O! I made 2 of them having one tonight and the other for Lunch tomorrow.

 

 

Then for a side I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Bluegrass Deliciously Lean Mettwursts

 

 

To start the 28th day of June off I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. We had to have dad at the Doctor’s office at 10:00 this morning for a checkup. The Doc said he was doing okay nothing new. But he did tell us that lungs are getting weaker every visit though. Not much anyone can do. Outside it’s a bit more humid, windier, and 83 degrees. I went to Kroger for Mom to pick up a prescription for Dad and stopped by the bank for her. A pretty simple Dinner tonight, I prepared a couple of Bluegrass Deliciously Lean Mettwursts.

 

 

I had purchased a couple of packages of the Bluegrass Lean Mettwurst while at Jungle Jim’s Market. I had kept one package out that I had been having for Lunch and froze the remaining package. Which I had laid in the fridge overnight to thaw.

 

 

 

 

To prepare them I used a medium size skillet that I sprayed with Pam Cooking Spray and added the Metts. I then added water to the pan, just enough water to cover about a 1/4 of Mett. Turned the heat on medium and covered the pan. I turned the Metts frequently to get a nice even cook on them. When the water had boiled down I cooked them an extra 3 minutes to brown them. They turned out fantastic, nice and meaty! I served them on Aunt Millie’s Whole Grain Hot Dog Buns topped with French’s Spicy Brown Mustard. A couple of Metts was plenty for Dinner tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn.

Today’s Menu: Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast – Pulled Pork Sandwiches w/ Baked Fries

 

 

To start my day off I had a Poached Egg and served it on a toasted Healthy Life Whole Grain English Muffin. Also had a cup of Bigelow Decaf Green Tea. Another rainy day outside again. We have several areas that had flooding from yesterday’s rains. So more on top of that, 85 degrees and muggy. So I stayed in and cleaned the house today. Started by getting a couple of loads of laundry started. Then dusted and vacuumed. Next into the kitchen and laundry room. Cleaned the oven, self-cleaning oven. Then dusted and cleaned around the washer and dryer. For Dinner tonight I prepared a Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast – Pulled Pork Sandwiches w/ Baked Fries.

 

 

I had picked up a Swift Premium Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast at Kroger yesterday and preparing it for Dinner tonight. The Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast comes packaged already seasoned. You can roast this in the oven or use the Slow Cooker as I am today. I got my Crock Pot out and put a plastic liner in it and sprayed that with Pam Cooking Spray.First remove the Shoulder Roast from the package and place in slow cooker with 1 inch of water in bottom. Put the lid on and cook on high for 4 hours or until fork tender. A special “Thank You” goes out to whomever invented the Crock Pot Liners! You’ve made cooking so much easier!

 

 

 

Removed the Roast from slow cooker and allow to cool slightly. Then shred meat with two forks for my Sandwiches. The Roast came out mouth-watering delicious! Tender, moist, and well seasoned. So tender it broke apart while taking it out of the Slow Cooker. I’m serving it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun and topped with some Jack Daniels Honey Smokehouse BBQ Sauce. This is a Sandwich! I’ll use the leftovers for Sandwiches for Lunch the next few days.

Swift Premium Dry Rubbed Santa Maria Boneless Petite Pork Shoulder Roast

Cooking Directions:
Slow Cooker (preferred method):

1 – Remove meat from package.
2 – Place in slow cooker with 1 inch of water in bottom.
3 – Cover and cook on HIGH for 4 hours or until fork tender. Increase cooking time to 6 hours if cooking from frozen.
4 – Remove from slow cooker and allow to cool slightly.
5 – Shred meat with two forks.
Oven:

1 – Preheat oven to 350°F.
2 – Remove meat from package.
3 – Place pan on stovetop, add two tablespoons of oil and heat pot briefly on medium-high heat.
4 – When oil is hot, brown the roast on all sides.
5 – Place roast in oven safe dish with 1/2 cup of water. Cover and cook for 3 hours or until internal temperature in the thickest part of the meat reaches 185°F.
6 – Remove from oven and allow to rest for 15 minutes.
7 – Slice and serve.
8 – If shredded roast is desired, cook an additional hour.
*Slow cooker and oven temperatures may vary, adjust cooking times accordingly.

Seasoning Ingredients: Spices including paprika, sea salt, dextrose, dehydrated garlic & onion, yeast extract, natural flavors and citric acid.

Today’s Menu: Cubed Pork Steak Sandwich w/ Baked Crinkle Fries

 

 
For Breakfast this morning I reheated the Skillet Potatoes and Ham leftover from Breakfast yesterday. I used 1 Cubed Pork Steak Sandwich w Baked Fries 007package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped everything with a fried Sunny Side Up Egg and a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar. I went out to get the Sunday Morning Papers and it is down right cold out there! About 24 degrees with one cold wind blowing, chill factor in the teens. Had a of 40 degrees and cloudy out for the day. After I had Breakfast I went to McDonald’s to pick up Breakfast for Mom and Dad. Not a lot to do today so I got the paper shredder out and shredded a few months of past bills and old insurance statements. After that it was an afternoon of NFL Football. For Dinner tonight I prepared a Cubed Pork Steak Sandwich w/ Baked Fries.

 
I had a of package of Cubed Pork Steak that I purchased from Walmart a day ago. To prepare it I got the big three of Cubed Pork Steak Sandwich Shake and Bake 001breading out to bread it with; Flour, Egg Beater’s, and Panko Bread Crumbs. I seasoned the Steak with Sea Salt and Black Ground Pepper. Next I seasoned the Flour with Hungarian Paprika and rolled the Cube Pork in that and shook off the excess. Then I dipped it in the Egg Beater’s shaking off the excess and then pressed both sides in the Shake and Bake Seasoned Panko Bread Crumbs, making sure both sides was well covered. I heated up a medium size skillet, that I drizzled with Extra Virgin Olive Oil, on medium high heat. Added my Cubed Pork and fried about 4 minutes per side, till each side was golden brown. The Walmart Cubed Pork Steaks were very good, tender and moist.

The Cubed Pork Steak came out delicious! Moist and very tender with a good flavor from the Paprika and all the other ingredients. Served it on a Aunt Millie’s Reduced Calorie Hamburger Bun and topped with some French’s Brown Spicy Brown Mustard. I fried both patties in the package, I’ll have the other one for Lunch tomorrow. The Pork and Panko are a perfect match and the Spicy Brown Mustard tops everything off. First time I had tried the Walmart Cubed Pork Steaks. They were very good, tender and moist.

For a side I baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup. For dessert later a Weigh Watchers Divine Triple Chocolate Ice Cream Bars.
