Very cold this morning. Went out and got the morning paper and I was around 13 degrees, Brrrr! Went to Kroger around 9 am this morning and it was a ghost town, everyone at the Malls and Walmart and such for their Black Friday shopping. I compared prices with the ads in the paper yesterday and checked on-line and the prices were the same, and some even cheaper, and most with free shipping. Plus I could do it in the comfort and warmth of my home! Doesn’t make much sense. For dinner tonight it was a lot of fantastic leftovers from yesterday! I prepared a Turkey Sandwich w/ Green Beans and Deviled Eggs.

 

 

 

The Turkey was from a Jennie – O Oven Ready Turkey Breast that we prepared yesterday. The leftover was just as good as it was for dinner last yesterday. I took some slices of the Turkey and put them on an Aunt Millie’s Reduced Calorie Whole Grain Bun. i topped it with a little of the French’s Yellow Mustard and Kraft Reduced Fat Mayo and it was set to go!

 

 

 

I also warmed up some of the Green Beans. The Beans were some of the Canned Green Beans that we canned earlier this year. I also had a couple of Deviled Eggs that my Mom had prepared. I’ve had many Deviled Eggs but non as good as Mom does! Then for dessert later some more of the melt in your mouth Apple Pie. Mom made this also and used Splenda to make it with, you can’t tell the difference between a Sugar made pie and the Splenda made pie that she made. I had a slice topped with a scoop of Breyer’s Carb Smart Vanilla Ice Cream.

Today’s Menu: Seasoned Fried Haddock w/ Macaroni and Cheese, Yellow Wax and Green Beans, and Whole Grain Bread

 

 

 

House cleaning yesterday and Car and Shed cleaning today. Had the Car cleaned inside and out at a local hand car wash and then came home and cleaned and straightened up the outdoor shed. It’s that time of year with the temperatures at or below freezing that the shed turns into an extra freezer and refrigerator, just in time for all the leftovers from Holiday Dinners. For dinner tonight I prepared Seasoned Fried Haddock w/ Macaroni and Cheese, Yellow Wax and Green Beans, and Whole Grain Bread.

I had a Haddock Fillet in the freezer that I let thaw in the fridge overnight. To prepare it I rinsed the fillet in cold water and patted dry with a paper towel. Then sliced the fillet into four pieces. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. I then pan fried them in Canola Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s is a perfect combo, delicious every time!

 

 

 

I had been craving some more Macaroni and Cheese since the last time I had some. So for a side I heated up an individual cup of Bob Evan’s Macaroni and Cheese. Just microwave for 1 1/2 minutes and you have your Mac and Cheese, and quite good Mac and Cheese I might add. I also had bought a package of Kroger Private Selection Harvest Whole Yellow Wax and Green Beans, it was on sale and thought I would give it a try. It comes in a microwavable bag but I prepared by the other cooking option, boiling in water for 5-6 minutes. They were easy to prepare and not too bad for a frozen bean, I’ll use it again sometime. I also had a slice of Klosterman Wheat Bread. For dessert later tonight some Pringles Fat Free Potato Chips with Hidden Valley Smoked Bacon Ranch Dip.

A rainy day out today with cooler weather not far behind the rain. Ran a friend of mine to the Dayton Airport, he’s heading to Florida for the Winter. I’ll be picking him back up sometime in April. I have a few leftovers frozen so I’m going to using them up in the upcoming days. Tonight for dinner it’s leftovers, Crispy Cheddar Bacon Chicken w/ Cheesy Rotini Pasta and a slice of Klosterman Wheat Bread.

 

 
I tried the Betty Crocker Crispy Cheddar Bacon Chicken – Chicken Helper the other night and it instatly became one of my favorites! The Rotini and Cheese Sauce are excellent and the Seasoned Crumb Coating with Natural Bacon Flavor for the Chicken is one of the better Crumb Coatings I’ve had for Chicken. I just put everything in a microwavable plate and heated it up for about 1 minute. I also had a slice of Klosterman Wheat Bread and an Ice-Cold Diet Dr. Pepper to drink. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

 

 
If you were to prepare this from the start as all the other ones, Hamburger/Chicken Helper, this one is very easy to make. Just follow the instructions on the box. To prepare it fist go ahead and make the Pasta, by direction. Then prepare your Chicken and you have one fine meal! The Chicken Helper box contains Rotini Pasta with Naturally Flavored Cheesy Sauce Mix & Seasoned Crumb Coating with Natural Bacon Flavor. I added the Chicken, Water, 2% Milk, Canola Oil, Sea Salt and Pepper. It all comes together for one easily made and delicious dinner.

 

 

 

 

 
Betty Crocker Crispy Cheddar Bacon Chicken – Chicken HelperChicken Helper
* Rotini pasta with naturally flavored cheesy sauce mix and seasoned crumb coating with natural bacon flavor
* Add chicken
* Pasta side dish included
Directions
For Pasta:
You Will Need: 1-1/2 cups water, 1/2 cup milk, 2 tbsp butter. For Chicken You Will Need: 1 lb uncooked boneless skinless chicken breasts, 1 tbsp milk, 2 tbsp butter, 2 tbsp vegetable oil. Success Tips: Start with completely thawed chicken. Adjust heat setting, cook times and amount of oil as needed. Pasta: 1 – Stir water, 1/2 cup milk, butter, sauce mix and pasta in 2-quart nonstick sauce pan. Heat just to boiling, stirring frequently. Reduce heat. Simmer uncovered about 17 minutes, stirring frequently, until pasta is tender. Meanwhile, continue with step 2.
Chicken:
2 – Cut each chicken breast into 3 to 5 slices, holding knife at an angle. (Slices should be about 1/2 inch thick). 3 – Coat, Place chicken in medium bowl. Add 1 tbsp milk to moisten. Add seasoned crumbs to coat chicken. 4 – Brown, Heat butter and oil in 10-inch nonstick skillet over medium heat until butter is melted. Carefully add chicken to hot butter and oil; cook 4 to 6 minutes or until golden brown. Reduce heat to medium-low. Turn chicken; cook 4 to 6 minutes longer or until golden brown and centers are no longer pink (165 degrees F). Serve with potatoes. Refrigerate leftovers. Add Your Own Twist: Stir 1/2 cup cooked broccoli or shredded cheddar cheese into the finished pasta. If you want a bit of crunch, top with 1/3 cup crushed garlic croutons!

I went with my Mom to pick up some late season Green Beans that had gotten in at Jungle Jim’s Market. From there an errand or two and home. getting dark early since the time went back, about 5:30 now. Miss the long day light hours of Summer! For dinner tonight another new one, Crispy Cheddar Bacon Chicken w/ Cheesy Rotini Pasta.

 

 
I tried another of the new Hamburger Helpers, Betty Crocker Crispy Cheddar Bacon Chicken – Chicken Helper. I’ve tried a few of them now but I think I’ve found my favorite so far. This really turned out delicious! Brrrrrrrr! It didn’t get out of the 30’s today and perhaps even colder with the wind chill. Wind Chill, isn’t it a bit early to be talking Wind Chill! But then again we saw our first Snow Flurries, and it is way too early for that! For dinner tonight I wasn’t all that hungry and my parents weren’t either. So my Mom suggested some Chili and Chesse Nachos, excellent idea! So as always what Mom wants Mom gets, I prepared Chili and Cheese Nachos

 

 
I used Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, and they bake and hold their shape real good. For my toppings I used 1 can of Mario Sliced Black Olives. Before I go any further a bit about these Olives, anyone that uses small cans of Sliced Black Olives know what a pain they can be opening sometimes. Not these, they come in a can with a pull tab! About time. For my other toppings I used Mezzetta Deli Sliced Tamed Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes of Frank’s Red Hot Sauce, and a blend of Sargento Reduced Fat 4 Cheese Italian Shredded Cheese and Sargento Reduced Fat Mozzarella. I hadn’t used the Hormel Turkey Chili with Beans in a while I had been using Campbell’s Firehouse Chili with Beans but I just wanted to switch it up.

To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I start with a couple of tablespoons of Chili then I add my Scoops (Chips). I then add the Sliced Black Olives, the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese Blend. Then just pop it in the oven 10 minutes or so until the Cheese had started to melt and everything heated. For the Chili I warm it up in a sauce pan, adding a few shakes of Frank’s Red Hot Sauce, before I top the Scoops with it. Nothing better than a big plate of Chili Cheese Nachos on a very cold day! Had an ice-cold Diet Dr. Pepper to drink also. For dessert later a Del Monte No Sugar Added Mango Chunk Cup.

Today’s Menu: Fried Yellow Lake Perch w/ Potato Pancakes and Sliced Carrots

Lot of rain early and then a cold and windy day, only a high of about 41 today. Ran some errands and filled the car up with gas before it went back up. I had some Yellow Lake Perch in the freezer, had purchased it from Meijer a couple of weeks ago. Laid in the fridge overnight to thaw. For dinner tonight, Fried Yellow Lake Perch w/ Potato Pancakes and Sliced Carrots.

 

 

I like using Lake Perch, fries up a beautiful golden brown and like most fresh water fish has a fantastic taste. After thawing I rinsed the fillets in water and patted dry. I then seasoned them with Sea Salt and rolled the fillets in Zatarain’s Crispy Southern Fish Fri. Pan fried them in Canola Oil, 3 minutes per side. They came out with a golden brown crust and delicious! My Mom says I get my love of Fish from my Great Grandfather. Mom said they always knew he was coming to visit because my Grandmother would always fry up a big batch of Fish and a cast iron skillet of Cornbread, and doesn’t get any better than that!

 

 

Fried Yellow Lake Perch Pot Pancakes 002
For a side dish I made some Potato Pancakes. I used Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). I also heated up a single serving can of Kroger Brand Sliced Carrots. For dessert tonight a Healthy Choice Chocolate Swirl Frozen Yogurt.

Ingredients
Potatoes ( Contains Sulfites to Maintain Whiteness), Potato Starch, Salt, Onion, Vegetable Shortening (Partially Hydrogenated Cottonseed Oil).

Directions
Makes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil, large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.

Beautiful Autumn Day out today! Went to Meijer this morning to pick up some Jennie – O Turkey Products; Ground Breakfast Sausage,Extra Lean Ground Turkey Breast, Italian Sweet Sausages, and Breakfast Links. While there I watched the most extreme Couponer I have ever seen, she was amazing! She had a good size binder, notebook type, and on front of the binder a printout of each store aisle and the major products in that aisle. Then pockets in the binder that contained coupons for items in that aisle. I talked to her for a bit and said the biggest savings she had been just over $200! She said it took a lot of time but had a nice pay off! Quite impressive. On to Dinner. Tonight one of my favorites, Turkey and Black Bean Tacos.

 

 
I used Jennie – O Extra Lean Ground Turkey Breast, I had this leftover from the other night when I made Stuffed Peppers. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

 

 
For my other toppings I used 1 small can of Mario Sliced Black Olives, 1 small diced Tomato, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Old El Paso Taco Sauce, and all in a Ortega Whole Grain Corn Taco Shells. Love these Tacos! For dessert later a Jello Sugarless Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Seasoned Fried Haddock Sandwich w/ Mac and Cheese

 

Haddock Sandwich Mac and Cheese 006
It was mostly cloudy and about 73 out today, still waiting for this cold front to move through and drop the temperature. I love weather in the 50’s and 60’s. Not a lot going on, went to the bank and a couple of errands and that was it for the day. For dinner Seasoned Fried Haddock Sandwich w/ Mac and Cheese.

 

 
I had a couple of small pieces of Haddock leftover from dinner the other night so I had that to make my Fish Sandwich with. To prepare I rinsed the Haddock pieces in cold water and patted dry with a paper towel. I then seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. I then pan fried them in Canola Oil, frying them about 3 minutes per side until golden brown. I served them on a Aunt Millie’s Light Whole Grain Sandwich Bun. Love that Haddock!

 

 
For a side to go with my Fish Sandwich I heated up the other cup of the Bob Evans Macaroni and Cheese. Just microwave for 1 1/2 minutes and you have your Mac and Cheese. Had this for the first time just the other day and plan to keep this handy in the fridge! Very good and easily fixed Mac and Cheese. For dessert later to night, it’s all fruit, 1/2 a Banana and a couple of slices of a Honey Crisp Apple.

Today’s Menu: Cheddar Buffalo Burger w/ Baked Fries

Overcast day out today and not much going on. Updated the computer and ran all the cleanups and installed a new program and that was the extent of my day. For dinner it was a Cheddar Buffalo Burger w/ Baked Fries.

 

 
I used Great Range Ground Bison. I seasoned it with Sea Salt and Ground Black Pepper and I pan fried it in Canola Oil, about 4 minutes per side. Came out just like I like them, medium rare with a nice char on the outside with a little pink and juicy in the middle! I made the switch to Buffalo, or Bison, quite a while back and have never missed Beef. I love the taste of Buffalo over Beef and the way it cooks up. I served it on an Aunt Millie’s Light Whole Grain Bun and topped the Burger with a slice of Sargento Ultra Thin Sharp Cheddar. For a side I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Served these with a side Daisy Reduced Fat Sour Cream. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.
