Today’s Menu: Blackened Red Snapper w/ Cut Green Beans, Brown and Wild Rice, and Baked Garlic Loaf Bread

 

 

 

To start my morning off I toasted a Thomas Light English Muffin, lightly fried a couple of Johnsonville Turkey Breakfast Sausage Links, and had a cup of Bigelow Decaf Green Tea. Excellent way to start the day! Cloudy with passing rain showers, 47 degrees for a high. I was able to rake the side yard s before it started raining. Went to post office and bank later on. For Dinner tonight I prepared a Blackened Red Snapper w/ Cut Green Beans, Brown and Wild Rice, and Baked Garlic Loaf Bread.

 

 

While at Meijer the other day I purchased a Red Snapper Fillet that they had on sale in their Seafood Department. I also purchased a Walleye Fillet, that I froze, and some Cooked Shrimp that was also on sale. The Red Snapper Fillet was nice size and looks beautiful. I decided to Blacken it, I love all Blackened Fish and Seafood. I’ll need Zatarain’s Blacken Seasoning, Blue Bonnet Butter, and McCormick Grinder Sea Salt. Cooking it in a Cast Iron Skillet in Butter and Extra Light Olive Oil.

 

 

 

To prepare it I started by rinsing the Fillet off in cold water and patting dry and cut it in half. I melted a tablespoon of butter, Blue Bonnet Stick Butter. I then brushed both sides of the fillets with the Butter and then rubbed the fillets with Zatarain’s Blackened Seasoning and Sea Salt. Then I got out the Cast Iron Skillet. When the pan was fully heated I added my Snapper. Cooked it about 3 1/2 minutes per side, and it was ready for the table! The taste of the Red Snapper with the added Zatarain’s Blackening Seasoning makes it one delicious Fish Dish!

 

 

To go with my Blackened Snapper I opened up a can of Del Monte Cut Green Beans. I heated them up in a small sauce pan on medium heat. Stirred often until heated, then served.

 

 

 

 

 

 

For my Rice I’m using Uncle Ben’s Ready Whole Grain Medley – Brown and Wild Rice. It comes in a micowavable package. I guess one my favorites from the Uncle Ben’s Ready Rice, all though I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish! I loved this dish tonight, plenty leftover for tomorrow’s Dinner! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Today’s Menu: Baked Pacific Cod w/ Long Grain and Wild Rice and Baked Garlic Oval Loaf Bread

 

 

For Breakfast this morning I fried a couple of Johnsonville Turkey Breakfast Sausage Links. These are fresh Sausage Links, a new product. They fried up great and tasted just as good! Johnsonville has a full line of Turkey Sausage Products, love them all! I also made some Simply Potatoes Shredded Hash Browns and made a cup of Bigelow Decaf Green Tea. Good way to start a Sunday Morning. I went to Kroger up the road to their Seafood Dept. I wanted some Fish for Dinner. We have one of those late Summer Hot August Day out there today! 98 degrees, sunny and very humid. I’m still not 100%, allergies still bothering me. So not a lot going on again. For Dinner tonight I prepared a Baked Pacific Cod w/ Long Grain and Wild Rice and Baked Garlic Oval Loaf Bread.

 

At Kroger this morning I purchased a package of fresh California Garlic Medley Seasoned Pacific Cod Fillets. These really looked good so I purchased a package. To prepare it I’ll be baking it. First I preheat the oven at 350 degrees. Then I placed the fillets in a 13×9-in. baking dish coated with Pam Cooking Spray. When the oven was ready I baked the Cod for 25 minutes.

 

 

 

 

 

Removed the baking dish from the oven and served the Cod. It came out perfect, moist with excellent Seasoning. The Garlic Medley was a perfect Seasoning for it. I’ll have to purchase another package soon, makes a great Meal!

 

 

 

 

 

 

To go with my Cod I prepared some Uncle Ben’s Ready Rice – Long Grain and Wild Rice. It comes in a microwavable Pouch. Just heat the pouch in the microwave and serve. Love Rice! Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. For Dessert later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Started my morning off with a couple of Jennie – O Turkey Breakfast Sausage Links, Simply Potatoes Hash Browns, a slice of toasted Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. 84 degrees, low humidity, mostly sunny and a nice light breeze blowing out today! After Breakfast I did a couple loads of laundry. Next I cleaned the house, dusted and ran the vacuum. Later on got the cart out and took a ride around the neighborhood. For dinner tonight I prepared a Lemon-Parsley Baked Cod w/ Long Grain and Wild Rice, Sliced Carrots, and Whole Grain Bread.

 

 

 

 

 

 


For dinner tonight I prepared a Lemon Baked Cod. I’ll need the following; 3 tablespoons lemon juice, 3 tablespoons butter (melted), 1/4 cup all-purpose flour, 1/2 teaspoon sea salt, 1/4 teaspoon paprika, 1/4 teaspoon lemon-pepper seasoning, 3 cod fillets, 2 tablespoons minced fresh parsley, and 2 teaspoons grated lemon peel.

 

 

 

 

 

 


To prepare the Cod I first preheated oven to 400°. In a shallow bowl, mixed lemon juice and butter. In a separate shallow bowl, mixed flour and seasonings. Dip fillets the in lemon juice mixture, then in flour mixture to coat both sides; shake off excess. Placed the fillets in a 13×9-in. baking dish coated with Pam Cooking Spray. Drizzle with remaining lemon juice mixture. Baked 12 minutes and the fish just began to flake easily with a fork. Mix parsley and lemon peel; sprinkle over fish. The Cod came out so flavorful! The Lemon is perfect with Cod.

 

 

 

 

 

 


For one side dish I prepared some Uncle Ben’s Ready Rice – Long Grain and Wild Rice. It comes in a microwavable Pouch. Just heat the pouch in the microwave and serve. Love Rice! Then I also heated up a small can of Del Monte Sliced Carrots. Also had a slice of Healthy Life Whole Grain Bread, buttered it with I Can’t Believe It’s Not Butter. For dessert later a bowl of fresh sliced Peaches!

 

 

 

 

 

Lemon-Parsley Baked Cod Recipe

Ingredients
3 tablespoons lemon juice
3 tablespoons butter, meltedLemon
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon lemon-pepper seasoning
4 cod fillets (6 ounces each)
2 tablespoons minced fresh parsley
2 teaspoons grated lemon peel

Today’s Menu: Walnut Crusted Baked Salmon w/ Long Grain and Wild Rice

 

 

For Breakfast I prepared some Simply Potato Shredded Hash Browns, a couple of Johnsonville Turkey Breakfast Sausage Links, toasted a slice of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. A beautiful day out today, 79 degrees and sunny! I had to buy new batteries for my cart I keep in the shed. So today I installed the new batteries and it was job! Had to remove the seat to get to everything. Finally got them changed but it was tough. Took a ride around the neighborhood and enjoyed the beautiful weather. For Dinner tonight its a Walnut Crusted Baked Salmon w/ Long Grain and Wild Rice.

 

 

 

 

I purchased the fresh Atlantic Salmon from the Kroger Seafood Department. I had it in the freezer and let it thaw overnight in the fridge. I’m going to prepare it using the Walnut Crusted Baked Salmon recipe. I haven’t had Salmon or used this recipe in a while. To make I’ll need; Salmon Fillets (4 ounces each), 4 teaspoons Dijon Mustard, 4 teaspoons Honey, 2 slices Whole Grain Bread (torn into pieces), 3 tablespoons finely chopped Walnuts, 2 teaspoons Extra Light Olive Oil, and 1/2 teaspoon Dried Thyme. To prepare it; Start by preheating the oven to 400°. Place the Salmon on a baking sheet coated with Pam cooking spray. Mix the Mustard and Honey; brush over the Salmon. Next I placed the Bread in a food processor; pulse until coarse crumbs form. Transfer to a small bowl. Stir in Walnuts, Olive Oil and Thyme; press it onto the Salmon Fillet.

 

 

 

Bake 12-15 minutes or topping is lightly browned and fish just begins to flake easily with a fork. The Salmon came out perfect, moist and delicious. The Walnut Crust is perfect for the Salmon. The Walnuts, Honey, Dijon Mustard, Thyme, and fresh Bread Crumbs all combine perfectly. Love this recipe.

 

 

 

 

 

I also prepared a packet of Uncle Ben’s Ready Rice Long Grain and Wild. It comes in a microwavable bag. I microwaved it for 90 seconds and done! I guess my favorite among the Uncle Ben’s Ready Rice, all though I love using them all. An easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs with Fish perfect. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

 

 

 

 

 

 

 

Walnut-Crusted Salmon
Ingredients:

4 salmon fillets (4 ounces each)
4 teaspoons Dijon mustard
4 teaspoons honey
2 slices whole wheat bread, torn into pieces
3 tablespoons finely chopped walnuts
2 teaspoons canola oil
1/2 teaspoon dried thyme

Directions:

Preheat oven to 400°. Place salmon on a baking sheet coated with cooking spray. Mix mustard and honey; brush over salmon. Place bread in a food processor; pulse until coarse crumbs form. Transfer to a small bowl. Stir in walnuts, oil and thyme; press onto salmon.
Bake 12-15 minutes or topping is lightly browned and fish just begins to flake easily with a fork. Yield: 4 servings.

Today’s Menu: Smoked Salmon w/ Whole Grain Medley – Brown and Wild Rice and Baked Garlic Loaf Bread

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. I had to be at my family Doctor to discuss the results of my test that showed I have severe Diabetic Neuropathy. I think I may have the test redone. I’m just not showing the signs that the tests says I should be showing, or at least not showing right now. Either way it’s just something new I have to deal with if I do have the damage. More to come. Anyway after I left the doctor’s I picked up Breakfast for Mom at McDonald’s. Then I went and got her car washed and filled up with gas. Next I went to Meijer for a few items. It’s a beautiful Spring Day out there today! 74 degrees and Sunny! For Dinner tonight I prepared Smoked Salmon w/ Whole Grain Medley – Brown and Wild Rice and Baked Garlic Bread Loaf.

 

 

 

 

I came across a new item while at Meijer, Latitude 45 Smoke Roasted Atlantic Salmon. So I’ll be using this for the first time along with a packet of Uncle Ben’s Ready Whole Grain Medley – Brown and Wild Rice.

 

 

 

 

 

 

The Salmon comes in a sealed plastic container. I sampled it at Meijer and it was Love after one taste! I bought a couple of containers of it, with more to come! It’s all ready, just open and serve. Has such a delicious and fresh taste to it, huge fan already!

Crispy Pan Fried Tilapia w/ Long Grain and Wild Rice

Today’s Menu: Crispy Pan Fried Tilapia w/ Long Grain and Wild Rice

 

 

To start this Tuesday off I had one of favorites, French Toast and Turkey Sausage Links. For the French Toast I used Aunt Millie’s Light Whole Grain Bread, 1/2 cup of 2% Milk, 1 medium Egg, Ground Nut Meg, Ground Cinnamon, and Blue Bonnet Light Butter. Mix the Milk, Egg and Spices together in a bowl and dip the Bread in mixture. Fry until each side is golden brown. For the Sausage I used Johnsonville Turkey Breakfast sausage Links. Just fry for 8 minutes and done. For the Syrup topping I used Log Cabin Sugar Free Maple Syrup. Oh how I love French Toast! It’s 50 degrees and partly sunny out today. Ran a couple of errands and stopped by Meijer for a few items. Back home I was all caught up on everything and just took it easy. For Dinner tonight its Crispy Pan Fried Tilapia w/ Long Grain and Wild Rice.

 

 

 

 

I purchased the Tilapia while at Meijer earlier. I purchased 2 big and beautiful fillets of the Tilapia, having 1 for Dinner and froze the other one. I also bought a Red Snapper Fillet. So I had already rinsed the fillet in cold water and had it in plastic bag the fridge. To prepare it I’ll need; the Tilapia, McCormick Grinder Sea Salt and Peppercorn Medley, and Zatarain’s Crispy Southern Fish Fri. To start I heated Extra Light Olive Oil in a skillet over medium-high heat. When the skillet was ready I cooked the Tilapia until Golden Brown, about 3 minutes per side. I had not had Tilapia in a while and it tasted great! Moist with that excellent Zatarain’s Seasoning.

 

 

 

 

I also prepared a packet of Uncle Ben’s Ready Rice Long Grain and Wild. It comes in a microwavable bag. I microwaved it for 90 seconds and done! Today’s Menu: Flame Seared Chili Lime Tilapia w/ Long Grain and Wild Rice

 

 

For Breakfast this morning I Poached an Egg and served it on a toasted Healthy Life Whole Grain English Muffin. Also had my morning cup of Bigelow Decaf Green Tea. Not as hot today, had a high of 83 degrees. Finished painting in the shed and moved a few things around. That was about it for the day. I’m dealing with my allergies and sinuses today. For Dinner tonight Flame Seared Chili Lime Tilapia w/ Long Grain and Wild Rice.
 

 

 

I’m trying another new item for Dinner tonight, Aqua Star Chili Lime Tilapia w/ Mango Salsa. I came across this one at the local Kroger Frozen Seafood. It looked great and the description sounded delicious so why not give it a try! It comes frozen and there is 2 Tilapia Fillets in the package. To prepare it you can Boil the package, Microwave, or Bake the fillets. I chose to Bake them.

 

 

 

 

So to prepare it; I first turned the oven on to 400 degrees. Next I got a small baking sheet and lined it with foil. Then sprayed it with Pam w/Olive Oil Non-Stick Cooking Spray. I removed the Tilapia from the packaging and lined the 2 fillets up on the pan. With the oven heated I baked the fillets. I’ll be baking them for 17 minutes. As the Tilapia was baking I got the Mango Salsa package that came with the Fish. I just ran the package under cold water until it was thawed. I took the Tilapia out and they looked delicious!

 

 

 

I added the Mano Salsa across the tops of the Fillets. The Fillets were fork tender and flaked real easy. The Seasoning was spot on, nice mild heat, and the Mango Salsa worked perfect with the Tilapia. I’ll purchase this again, easy to prepare and delicious!

 

 

 

 

 

I also prepared a packet of Uncle Ben’s Ready Rice Long Grain and Wild. It comes in a microwavable bag. I microwaved it for 90 seconds and done! I guess my favorite among the Uncle Ben’s Ready Rice, all though I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs with Fish perfect. Also had a slice of Aunt Millie’s Light Whole Grain Bread that I lightly buttered with I Can’t Believe It’s Butter. Very good Meal tonight! For Dessert later a Blue Bunny Sweet Freedom Mini Cone Ice Cream.

Today’s Menu: Fried Rockfish Fillets w/ Long Grain and Wild Rice, Whole Baby Carrots, and Light Texas Toast

 

 

 

For Breakfast this rainy morning I prepared some al fresco Uncured Chicken Bacon, 1 Egg Sunnyside Up, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Outside its raining again, big shocker! We have a high of 62 degrees and heavy rain at times. Not much to do so it was house cleaning today. Dusted and vacuumed then cleaned the refrigerator. For Dinner tonight I tried a fish I had never tried before, Rockfish. Tonight its Fried Rockfish Fillets w/ Long Grain and Wild Rice, Whole Baby Carrots, and Light Texas Toast.

 

 

 

I was at Meijer yesterday to pick up a few items and going by the Seafood Department and noticed they had Rockfish Fillets in the display case. I had heard of Rockfish but never I had tried it, until now. Growing up there was a creek that ran across the street and we would go fishing and catch a Fish we called Rockfish. But this (Ocean) Rockfish is totally different. I was told it has a taste similar to Snapper, which I love. The Fillets cost lass than 1/2 than what you pay for Snapper. So I picked up a couple of Fillets to try it out. I’ll be cooking it in a Cast Iron Skillet and will need McCormick Grinder Sea Salt and Grinder Peppercorn Medley along with Zatarain’s Seasoned Seafood Breading Mix, and Extra Light Olive Oil.

 

 

To prepare it; I first washed and cleaned the Fillets in cold water. Pat the fillets dry with a paper towel. Seasoned on both sides with the Sea Salt and Peppercorn Medley. Then rolled the Fillets in the Zatarain’s Seasoned Fish Fri Mix.

 

 

 

 

 

Next heated a Cast-Iron Skillet over high heat. When the Pan is hot, added the Extra Light Olive Oil. Place the fillets in the pan, skin side down. Press down gently on the fillets with a spatula for about 20 seconds to prevent curling. Lower heat to medium and let cook until the fish is golden and caramelized around edges, about 2 to 3 minutes. Carefully flip fillets and until golden all over and cooked through, 45 to 90 seconds more.

 

 

 

The Rockfish fried up to a perfect Golden Brown. It does have a taste similar to Snapper. Really a delicious meaty version of Snapper, and costs a lot less! Really enjoyed it and will purchase more of it. Mom, who isn’t a huge Fish Lover, really liked them.

 

 

 

 

 

For one side dish I prepared a packet of Microwavable Uncle Ben’s Long Grain and Wild Rice. It comes in a microwavable bag. I microwaved it for 90 seconds and done! I guess my favorite among the Uncle Ben’s Ready Rice, all though I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready.

 

 

 

 


Then I also heated up a can of Kroger Brand Whole Baby Carrots. These are so much easier to prepare than boiling fresh Baby Carrots, and they taste just as fresh and good. I also baked a loaf of Bake House RiverRoad Multi Grain Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

 

 

 

 

 

Rockfish – Sebastes

Sebastes is a genus of fish in the family Sebastidae (though some include this in Scorpaenidae), most of which have the common name of rockfish. A few are called ocean perch, sea perch or redfish instead. Most of the Sebastes species live in the north Pacific, although two (Sebastes capensis and Sebastes oculatus) live in the south Pacific/Atlantic and four (Sebastes fasciatus, Sebastes mentella, Sebastes norvegicus and Sebastes viviparus) live in the north Atlantic. The coast off South California is the area of highest rockfish diversity, with 56 species living in the Southern California Bight.

Rockfish are an important sport and commercial fish, and many species have been overfished. As a result, seasons are tightly controlled in many areas. Sebastes are sometimes fraudulently substituted for the more expensive northern red snapper.

Rockfish has a sweet, mild flavor, with a flaky, medium-firm texture. It is best baked, sautéed, broiled or poached. Since the flesh tends to flake easily, it is not the best fish for grilling. Try it with a little lemon to bring out the sweet flavor without overpowering.

Today’s Menu: Fried Walleye w/ Whole Grain Brown Rice and Whole Baby Carrots

 

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Then I prepared some Simply Potatoes Shredded Hash Browns along with frying up a couple of Jennie – O Turkey Breakfast Sausage Links. Also had a cup of Bigelow Decaf Green Tea. Lot of rain overnight, a couple of thunderstorms had the night lit up. Mostly cloudy today high in the 70’s. After Breakfast did a load of laundry for Mom. Then after Lunch went up to see Dad for a while at rehab. He’s been doing a lot better of late. Back home not a lot going on so I caught up on some shows I had recorded. For Dinner tonight its Fried Walleye w/ Whole Grain Brown Rice and Whole Baby Carrots.

 

 


I had purchased a couple of small Walleye Fillets at Meijer yesterday and had them in the fridge. To prepare them I rinsed them off in cold water and patted them dry with a paper towel. Seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillets in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried them in Extra Light Olive Oil on medium heat, about 3 to 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

 

To go with the Walleye I prepared some Uncle Ben’s Ready Rice – Whole Grain Brown Rice. To prepare it just microwave. It comes in a microwavable Pouch. Just heat for 90 seconds and serve! Rice comes out perfect, steaming hot and fluffy.

Baked Salmon w/ Long Grain and Wild Rice and Whole Baby Carrots

Today’s Menu: Baked Salmon w/ Long Grain and Wild Rice and Whole Baby Carrots

 

 
For Breakfast this morning it was Hash Browns, Smoked Turkey Sausage, Toast, and Decaf Green Tea. I had went tobaked-salmon-w-wild-and-long-grain-rice-and-whole-baby-carrots-007 Meijer and they finally had the Simply Potatoes Shredded Hash Browns back in stock! It had been a few weeks since any store had them in stock. So I prepared the Hash Browns and then I prepared a 1/2 Sausage link of the Butterball Hardwood Smoked Turkey Sausage. Added a slice of toasted Healthy Life Whole Grain Bread and a cup of Bigelow Decaf Green Tea, and that’s a Breakfast! Big change in the weather again! 50 degrees for a high with rain on and off all day, beats in the teens and snow! So with not a lot going on outside I did some cleaning on the inside. I cleaned and straightened the pantry and the the freezer and refrigerator. For Dinner tonight I prepared Baked Salmon w/ Long Grain and Wild Rice and Whole Baby Carrots.

 
I had purchased the Salmon Fillet last week from Meijer and had it in the freezer. Grabbed the fillet out of the freezerBaked Salmon w Baked Potato and Whole Baby Carrots 001 and let it thaw overnight in the fridge. To prepare it, I rinsed it off with cold water and patted it dry with a paper towel. I preheated the oven on 400 degrees. I seasoned it with McCormick’s Grinder Sea Salt and Black Peppercorn and some Dried Dill. Sprayed a small baking pan with Pam w/ Olive Oil Spray and added the Salmon Fillet. Baked it on 400 degrees until the Salmon was fork tender, about 12 minutes total. I love Salmon as I do all Fish and Seafood. The Salmon came out delicious, nicely seasoned and moist. I just love all Fish and Seafood.
