Today’s Menu: Baked Salmon w/ Whole Grain Brown and Wild Rice and Baked Garlic Oval Bread
For Breakfast this morning I Poached an Egg and served it on a toasted Thomas Light English Muffin. I also had a cup of Bigelow Decaf Green Tea. After Breakfast I had to have Mom at her Family Doctor for a check up. Doctor said she looked great. She’s 92 and gets around better than a lot of people in their 60’s or 70’s! So lucky to have her this long, very thankful. Back home just did a few things around the house. For Dinner tonight I prepared a Baked Salmon w/ Whole Grain Brown and Wild Rice and Baked Garlic Oval Bread.
I just love the combo of Salmon and Rice! I had purchased a a North Atlantic Salmon Fillet from Meijer and had it in the freezer. I sat the fillet in the fridge overnight to thaw. To make it I’ll need the Salmon, McCormick Grinder Sea Salt and Peppercorn Medley, Dried Parsley, Dried Chive, and Extra Light Olive Oil.
To prepare it; I preheated the oven on 400 degrees. I then got a small baking pan and sprayed it with Pam Cooking Spray. I washed the Fillet off in cold water and patted dry with a paper towel. Next I put a light coat of the Extra Light Olive Oil on the Fillet and then seasoned. Laid the Fillet in the pan and baked. I baked it for 10 minutes, and done. Excellent Salmon!
For my Rice I’m using Uncle Ben’s Ready Whole Grain Medley – Brown and Wild Rice. It comes in a micowavable package. I microwaved it for 90 seconds and done! I guess one my favorites from the Uncle Ben’s Ready Rice, all though I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs perfectly with the Salmon.
Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels and a Diet Raspberry Snapple to drink.

Today’s Menu: Walnut Crusted Baked Salmon w/ Long Grain and Wild Rice
For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns and heated up some Kroger Diced Ham. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I heated up the Ham and put it over top the Hash Browns. One of my favorite Breakfast Dishes. Sunny and 53 degrees, very windy out. Also had a cup of Bigelow Decaf Green Tea. Got the cart out of the shed after Lunch. We had some very strong winds yesterday and had leaves, tree branches, and blown trash all the yard. Everyone’s yard was a mess. So clean up took most of the afternoon. For Dinner tonight its a Walnut Crusted Baked Salmon w/ Long Grain and Wild Rice.
I purchased the fresh Atlantic Salmon from the Kroger Seafood Department. I had it in the freezer and let it thaw overnight in the fridge. I’m going to prepare it using the Walnut Crusted Baked Salmon recipe. I haven’t had Salmon or used this recipe in a while. To make I’ll need; Salmon Fillets (4 ounces each), 4 teaspoons Dijon Mustard, 4 teaspoons Honey, 2 slices Whole Grain Bread (torn into pieces), 3 tablespoons finely chopped Walnuts, 2 teaspoons Extra Light Olive Oil, and 1/2 teaspoon Dried Thyme. To prepare it; Start by preheating the oven to 400°. Place the Salmon on a baking sheet coated with Pam cooking spray. Mix the Mustard and Honey; brush over the Salmon. Next I placed the Bread in a food processor; pulse until coarse crumbs form. Transfer to a small bowl. Stir in Walnuts, Olive Oil and Thyme; press it onto the Salmon Fillet.
Bake 12-15 minutes or topping is lightly browned and fish just begins to flake easily with a fork. The Salmon came out perfect, moist and delicious. The Walnut Crust is perfect for the Salmon. The Walnuts, Honey, Dijon Mustard, Thyme, and fresh Bread Crumbs all combine perfectly. Love this recipe.
I also prepared a packet of Uncle Ben’s Ready Rice Long Grain and Wild. It comes in a microwavable bag. I microwaved it for 90 seconds and done! I guess my favorite among the Uncle Ben’s Ready Rice, all though I love using them all. An easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs with Fish perfect. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels and a Diet Peach Snapple to drink.
Walnut-Crusted Salmon
Ingredients:
4 salmon fillets (4 ounces each)
4 teaspoons Dijon mustard
4 teaspoons honey
2 slices whole wheat bread, torn into pieces
3 tablespoons finely chopped walnuts
2 teaspoons canola oil
1/2 teaspoon dried thyme
Directions:
Preheat oven to 400°. Place salmon on a baking sheet coated with cooking spray. Mix mustard and honey; brush over salmon. Place bread in a food processor; pulse until coarse crumbs form. Transfer to a small bowl. Stir in walnuts, oil and thyme; press onto salmon.
Bake 12-15 minutes or topping is lightly browned and fish just begins to flake easily with a fork. Yield: 4 servings.

Maybe Fall has arrived! I’m glad I’m caught up with everything. I had one of those sleepless and rough nights dealing with Phantom Pains! Little to no sleep overnight. They started about 10:00 last night and finally let up about 11:00 this morning so I spent the day resting and catching up on sleep. I’m totally exhausted. For Dinner tonight I prepared a Baked Salmon w/ Whole Grain Brown and Wild Rice and Baked Garlic Oval Bread.

Grilled Salmon w/ Long Grain and Wild Rice and Cut Green Beans

Today’s Menu: Grilled Salmon w/ Long Grain & Wild Rice and Cut Green Beans
For Breakfast this morning I Poached an Egg. Then I toasted a Thomas Light English Muffin and served the Poached Egg on 1/2 of it. I also had a cup of Bigelow Decaf Green Tea. 84 degrees and a passing Thunderstorm with some strong winds. Rain on and off throughout the day. After Breakfast I washed Mom’s bed linens and pillow cases. Later on cleaned and straightened the Pantry. For Dinner tonight I prepared a Grilled Salmon w/ Long Grain & Wild Rice and Cut Green Beans.
I picked up a Wild Caught North Atlantic Salmon Fillet from Kroger and had it in the Freezer, sat it in the fridge overnight to thaw. I’ll be seasoning it with McCormick Grinders of Sea Salt and Peppercorn Medley, LiteHouse Dried Dill, and Extra Light Olive Oil. To prepare it I’ll be grilling it in a Fish Fillet Grill Basket.
I had forgot I had a Fish Grill Basket. I had it stored in the shed and came across it the other day when I was moving things around. Cleaned it up and it was ready to go. To start I seasoned my Salmon. Then went out and started the grill. Back inside I put some Extra Light Olive Oil on the Basket. Next I got my Salmon loaded into the Grill Basket. With the Grill heated I set the Grill Basket into the Grill and shut the lid. After 3 minutes I flipped the Grill Basket to the other side of the Salmon. That’s why I like these Grill Baskets, just flip them over to grill the other side of your Fish. I cooked that side for about 3 minutes and shut the Grill off and removed the Grill Basket from inside the Grill.
The Salmon came out Grilled perfectly! Heated just right to where the Salmon was just starting to flake. Delicious! Grilling Salmon is the way to go!
To go with the Salmon I prepared a packet of Uncle Ben’s Ready Rice Long Grain and Wild. It comes in a microwavable bag. I microwaved it for 90 seconds and done! I guess my favorite among the Uncle Ben’s Ready Rice, all though I love using them all. An easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs with Fish perfect.
I also opened up a can of Del Monte Cut Green Beans. I heated them up in a small sauce pan on medium heat. Stirred often until heated, then served.I also baked a slice of the New York Bakery Light Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Cajun Rainbow Trout w/ Red Beans and Rice
To start this day off I had a Poached Egg and served it on a Thomas Light English Muffin. Also had my morning cup of Bigelow Decaf Green Tea. Thunderstorms and 74 degrees outside. It looks like we are in for rain almost all week! I was outside under our car port and only lasted a few minutes, the pollen is sky high again out here! I cam back in my allergies were killing me! I don’t ever remember the pollen being this bad as it is now. Anyway for Dinner tonight I prepared a Cajun Rainbow Trout w/ Red Beans and Rice, I also baked a loaf of La Baguette Roasted Garlic Oval Bread.
I had the Rainbow Trout Fillet, that I had purchased from Meijer, in the freezer. I’m glad I bought as much Rainbow Trout and Walleye as I could because it’s tough to find some now. So I laid the package of 1 fillet in the fridge overnight to thaw. To prepare it all I’ll need is; Rainbow Trout Fillet, 1 teaspoon Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed skin side down on broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

Today’s Menu: Baked Salmon w/ Whole Grain Brown and Wild Rice
For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, heated up some Kroger Diced Ham, and Fried a Sunny Side Up Egg. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Then placed the Sunny Side Egg on top of all of it. One of my favorite Breakfast Dishes. Also had a cup of Bigelow Decaf Green Tea. Rain, windy, and 54 degrees out today. Cleaned the house, did laundry, and gave the Kitchen Counters a good cleaning. For Dinner tonight I prepared a Baked Salmon w/ Whole Grain Brown and Wild Rice.
I purchased a a North Atlantic Salmon Fillet from Meijer yesterday on my food delivery. To make it I’ll need the Salmon, McCormick Grinder Sea Salt and Peppercorn Medley, Dried Parsley, Dried Chive, and Extra Light Olive Oil.
To prepare it; I preheated the oven on 400 degrees. I then got a small baking pan and sprayed it with Pam Cooking Spray. I washed the Fillet off in cold water and patted dry with a paper towel. Next I put a light coat of the Extra Light Olive Oil on the Fillet and then seasoned. Lined the Fillet in the pan and baked. I baked it for 8 minutes, and done. Excellent Salmon!

In the skillet

Today’s Menu: Cajun Rainbow Trout w/ Red Beans and Rice
To start this day off I Poached an Egg and served it on a a slice of toasted Aunt Millie’s Light Whole Grain Bread. Also had my morning cup of Bigelow Decaf Green Tea. Mostly cloudy and 70 degrees out. It looks as though Spring is creeping in, now lets get rid of the Coronavirus!! So Isolation continues as does life. Everyone just trying to make the best of the things. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Red Beans and Rice, I also baked a loaf of La Baguette Roasted Garlic Oval Bread.
I had the Rainbow Trout Fillet, that I had purchased from Meijer, in the freezer. I laid the package of 1 fillet in the fridge overnight to thaw. To prepare it all I’ll need is; Rainbow Trout Fillet, 1 teaspoon Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed skin side down on broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

Today’s Menu: Red Beans, Hardwood Smoked Turkey Sausage and Rice
For Breakfast this morning I made some French Toast. I used Aunt Millie’s Light Whole Grain Bread, Egg Beater’s, Ground Cinnamon, and Ground Nutmeg. I topped the Pancakes with Log Cabin Sugarless Maple Syrup and i Can’t Believe It’s Not Butter Light. Also had a cup of Bigelow Decaf Green Tea. 64 degrees and partly cloudy out. Got the cart out of the shade and did some more work outside around the house. So good to be able to get outdoors again! For Dinner tonight I prepared Red Beans, Hardwood Smoked Turkey Sausage and Rice.
What better way to start your week of than with Red Beans, Hardwood Smoked Turkey Sausage and Rice. To make mine I’ll need a can of Bush’s Chili Beans – Red Beans, Frank’s Red Hot Sauce, Butterball Hardwood Smoked Turkey Sausage, Uncle Ben’s Original Long Grain Rice, Litehouse Spring Onion, and Pam Non Stick Cooking Spray, Extra Light Olive Oil.
To prepare the Bush’s Red Beans was the easiest part. Just opened the can, got a small sauce pan, sprayed it with Pam Non Stick Cooking Spray, emptied the can of Beans in the pan and heated on medium till it started to boil and turned the heat to low and simmered till heated through. Took the pan off the burner and let it set until needed.
I got a skillet out as the Beans was cooking, sprayed it with Pam Non Stick Spray and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Sliced the Hardwood Smoked Turkey Sausage into bite size slices and added them to the heated skillet until heated through. Removed them from the heat and set aside until needed.
On a third burner as the Beans and Sausage was finishing I cooked my Rice. Combined the Rice, Water and Butter in a saucepan. Bring it to a boil. Reduce the heat medium low, simmer covered for 20 minutes. Then remove from the heat. Let stand covered 5 minutes until the water is absorbed. Fluffed it with a fork and served!
To serve I made a bed of the Rice in a bowl. Topped the Rice with some of the Red Beans. Added the sliced Smoked Sausage. Then added a few shakes of Frank’s Hot Sauce and a sprinkle of the Spring Onions. This turned out to be a true Comfort Food Meal! Really Enjoyed it. Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish! I loved this dish tonight, plenty leftover for a couple of lunches! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Pretzel Sticks with a Sprite Zero to drink.
