Today’s Menu: Baked Salmon w/ Whole Grain Brown and Wild Rice and Baked French Bread

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Sunny, 90 degrees, and humid out today. It’s a hot one! After Breakfast I took Mom to Miracle Ear for adjustments on her hearing aid. On the way back Mom wanted to stop at the Dollar Store, although there’s nothing for a dollar anymore there. Back home I watered all the plants and Mom’s flowers. I did some touch-up painting on the wooden deck out front. For Dinner tonight I prepared a Baked Salmon w/ Whole Grain Brown and Wild Rice and Baked French Bread.

 

I just love the combo of Salmon and Rice! I had purchased a North Atlantic Salmon Fillet from Meijer and had it in the freezer. I sat the fillet in the fridge overnight to thaw. To make it I’ll need the Salmon, McCormick Grinder Sea Salt and Peppercorn Medley, Dried Parsley, Dried Chive, and Extra Light Olive Oil.

 

To prepare it; I preheated the oven to 400 degrees. I then got a small baking pan and sprayed it with Pam Cooking Spray. I washed the Fillet off in cold water and patted dry with a paper towel. Next I put a light coat of the Extra Light Olive Oil on the Fillet and then seasoned. Laid the Fillet in the pan and baked. I baked it for 10 minutes, and done. Excellent Salmon!

 

 

For my Rice I’m using Uncle Ben’s Ready Whole Grain Medley – Brown and Wild Rice. It comes in a microwavable package. I microwaved it for 90 seconds and done! I guess one of my favorites from the Uncle Ben’s Ready Rice, all though I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs perfectly with the Salmon. Then I also baked a mini loaf of French Bread. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels and a Coke Zero to drink.

Salt and Pepper Salmon Bites w/ Long Grain and Wild Rice

Today’s Menu: Salt and Pepper Salmon Bites w/ Long Grain and Wild Rice

 

 

For Breakfast this morning I prepared a 2 Egg Bacon and Cheese Omelet. I was hungry and the Omelet hit the spot! I also had my morning cup of Bigelow Decaf Green Tea. Outside a cool breeze most of the day. A high of 58 degrees and mostly cloudy. I’m beginning to wonder if Spring or Summer will ever get here! Finally got the yard done! We raked the flower beds of leaves and the older wood chips. Then put down the new Black Wood Chips, it looks great. For the lawn, the Winter was rough on everyone’s lawn. I’ve been putting lawn seed and grass fertilizer down since early March and it’s paid off. The lawn looks great also! I have everything ready for when or if it gets warm out. For Dinner tonight I prepared Salt and Pepper Salmon Bites w/ Long Grain and Wild Rice.

 

I bought a package of Salmon Bites at Meijer the other day. It seems all stores have Salmon Bites now, which must be the new trend! To prepare them I’ll be needing Cooking Olive Oil,  McCormick Dried Cilantro, McCormick Grinder Sea Salt and Grinder Black Pepper. I’ll be cooking it in a skillet that I sprayed with Pam Non Stick Cooking Spray and 1 tablespoon of the Cooking Olive Oil on medium heat. I washed the Salmon off in cold water and dried them with a paper towel. I put the Salmon Bites in a bowl and added some Olive Oil to it. I then made sure I covered all the Salmon in the Oil. I then seasoned them with Sea Salt, Black Pepper and Cilantro.

 

With the skillet heated and ready I added the Salmon to it. I cooked it 2 minutes a side, and done. The Salmon Bites were small so it took just 2 minutes a side to get done. They turned out delicious, the Seasoning was perfect. I’ll have to have the Bites more often.

 

 

 

To go with the Salmon I prepared some Uncle Ben’s Ready Rice – Long Grain and Wild Rice. It comes in a microwavable Pouch. Just heat the pouch in the microwave and serve. Love Rice! I also had a Aunt Millie’s Live Carb Smart Dinner Roll.  For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

Today’s Menu: Lemon-Parsley Baked Pacific Cod w/ Long Grain and Wild Rice and Sliced Carrots

To start my day off I prepared a fried Sunny Side Up Egg, sliced Turkey Spam, prepared some Simply Potatoes Shredded Hash Browns, and a cup of Bigelow Decaf Green Tea for Breakfast. Love that Turkey Spam and it’s only 80 calories per serving! After my shower I did a load of laundry. Later I ran the vacuum and then cleaned the microwave and kitchen counters. Done for the day and watched some College Basketball. For Dinner tonight I prepared a Lemon-Parsley Baked Pacific Cod w/ Long Grain and Wild Rice and Sliced Carrots.

 

I had this last month and it sounded good for Dinner tonight. I had ordered the Pacific Cod from Kroger a while back and had the fillets in the freezer. I laid the Cod in the freezer to thaw overnight. So for dinner tonight I prepared a Lemon Baked Pacific Cod. I’ll need the following; 3 tablespoons lemon juice, 3 tablespoons butter (melted), 1/4 cup all-purpose flour, 1/2 teaspoon sea salt, 1/4 teaspoon paprika, 1/4 teaspoon lemon-pepper seasoning, 3 Pacific Cod fillets, 2 tablespoons minced fresh parsley, and 2 teaspoons grated lemon peel.

 

To prepare the Cod I first preheated oven to 400°. In a shallow bowl, mixed lemon juice and butter. In a separate shallow bowl, mixed flour and seasonings. Dip fillets the in lemon juice mixture, then in flour mixture to coat both sides; shake off excess. Placed the fillets in a 13×9-in. baking dish coated with Pam Cooking Spray. Drizzle with remaining lemon juice mixture. Baked 12 minutes and the fish just began to flake easily with a fork. Mix parsley and lemon peel; sprinkle over fish. The Cod came out so flavorful! The Lemon is perfect with Cod.

 

For one side dish I prepared some Uncle Ben’s Ready Rice – Long Grain and Wild Rice. It comes in a microwavable Pouch. Just heat the pouch in the microwave and serve. Love Rice! Then I also heated up a small can of Del Monte Sliced Carrots. One Delicious Dinner, love that Pacific Cod! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper to drink.

 

 

 

 

 

 

Lemon-Parsley Baked Cod Recipe

Ingredients
3 tablespoons lemon juice
3 tablespoons butter, melted
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon lemon-pepper seasoning
4 cod fillets (6 ounces each)
2 tablespoons minced fresh parsley
2 teaspoons grated lemon peel
Directions
1. Preheat oven to 400°. In a shallow bowl, mix lemon juice and butter. In a separate shallow bowl, mix flour and seasonings. Dip fillets in lemon juice mixture, then in flour mixture to coat both sides; shake off excess.

For Breakfast I had a bowl of Honey Nut Cheerios also had a cup of Bigelow Decaf Green Tea afterward. Well the snow ended and we had about 3 inches or more. For the day it was sunny and 24 degrees. They did a great job on our streets, all clear today! I did a load of laundry before Lunch. Then later, I cleaned and straightened the Pantry. For Dinner tonight I prepared a Lemon-Parsley Baked Pacific Cod w/ Long Grain and Wild Rice and Sliced Carrots.

Today’s Menu: Buttermilk Marinated Thin Sliced Chicken Breasts w/ Long Grain and Wild Rice and Tossed Salad

 

Just a cup of Bigelow Decaf Green Tea to start the day. After my Tea I headed to Kroger for a few items and picked up another bag of Salt for the driveway. We may get another Snow in the upcoming days so I wanted to be prepared. On the way back home I stopped at McDonald’s and picked up Breakfast for Mom and stopped and filled her car up with gas. After Lunch I went and had her car washed and stopped by a local Car Parts place and bought a new pair of wiper blades for her car and a pair for mine. Replaced them both after I got back home. For Dinner tonight I prepared Buttermilk Marinated Thin Sliced Chicken Breasts w/ Long Grain/Wild Rice and Tossed Salad.

 

I love Chicken, Rice, and a Salad, so good! For the Chicken; I started at Noon today. I grabbed a large Hefty Bag and added a 1/2 Pint of Buttermilk to the bag. I then added several shakes of Frank’s Hot Sauce to it and shook the bag to blend it together. I then added my Chicken Breasts and let it Marinate in the fridge until it was time to use. I used my favorite, Katie’s Best Chicken.

 

To prepare the Thin Sliced Chicken Breast I grabbed a Cast Iron Skillet. Sprayed with a coat of Pam Non Stick Cooking Spray. Then I started heating the skillet on medium heat. Next I added a tablespoon and a half of Olive Oil Cooking Oil. As the skillet heated I got the Chicken out of the fridge and removed it from the bag of Marinade, shaking off the excess. Then I grabbed a pie pan and added Flour to it and seasoned the Flour with Paprika. Took the Chicken Breast and rolled them in the Seasoned Flour until well covered.

 

Added the Chicken Breasts to the heated Skillet. I cooked the Chicken for 4 minutes and then flipped them over and cooked them for 4 more minutes, until golden brown and the meat thermometer read 165 degrees. The Chicken turned out delicious! Cooked up perfect, nice crust, and love the seasoning! Served it with Kraft Hickory Smoked BBQ Sauce for dipping.

 

 

For 1 side I prepared a packet of Uncle Ben’s Ready Rice Long Grain and Wild. It comes in a microwavable bag. I microwaved it for 90 seconds and done! I guess my favorite among the Uncle Ben’s Ready Rice, all though I love using them all. An easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs perfectly with many Dishes.

 

 

 

 

I also had a Tossed Salad. I had a bag of Dole Greener Selection Salad. For the Salad Dressing I used Kraft Fat Free Classic Catalina Dressing along with a sprinkle of Oscar Mayer Real Bacon Pieces. Today’s Menu: Leftover Buttermilk Marinated Thin Sliced Chicken Breasts w/ Long Grain/Wild Rice and Tossed Salad

 

Toasted a Thomas light English Muffin, Scrambled an Egg, heated up a Johnsonville Turkey Breakfast Sausage Link and had a cup of Bigelow Decaf Green Tea to start the day. Another cold morning out there, with a wind chill at 22 degrees! For the day it’s mostly sunny and we had a high of 43 degrees, but the wind chill kept it in the 20’s. After Lunch I went to Walmart and bought a couple of bags of Salt for the driveway in case we get snow Thursday. Right now they say about 2″ but we could get as high as 6″ depending on how the storm comes through. For Dinner tonight I heated up the Leftover Buttermilk Marinated Thin Sliced Chicken Breasts w/ Long Grain/Wild Rice and Tossed Salad. That Dinner last night was so good I just reheated all the Leftovers. It was just as good as the night before! I’ve left last night’s post below for instructions and description. Today’s Menu: Almandine Crusted Cod, Citrus Herb Marinated w/ Brown and Wild Rice

 

 

For Breakfast I Scrambled a couple of Eggs, toasted a Thomas Light English Muffin, and had a cup of Bigelow Decaf Green Tea. 78 degrees with rain on and off all day. Wow, these Phantom Pains just will not stop! It’s been going on for 2 days now. They aren’t quite as powerful as they were or frequent but they are still going! Just pray they stop soon. I spent the afternoon packing stuff away and moving it out of the extra room that we are putting new flooring down. I’ll be glad to get it done. For Dinner tonight I prepared an Almandine Crusted Cod, Citrus Herb Marinated w/ Brown and Wild Rice.

 

I tried a new product tonight Signature Almandine Crusted Cod, Citrus Herb Marinated (by Robert Irvine). I purchased it at Meijer along with a box of the Crab Cakes. Something new for Dinner. There’s 2 Cod Fillets per box. They come frozen and individually packaged. Each Fillet comes Almandine Crusted and  Citrus Herb Marinated.

 

To prepare it I Baked it.  I preheat the oven to 375 degrees F. Removed the Glazed Fillet from it’s packaging. Next I lined a baking sheet with foil and sprayed it with Pam Non-Stick Cooking Spray. Placed Fillet on the foil lined baking sheet skin side down. Then baked it for 24 minutes. The Fillet came out perfect! Baked up great and the Almandine Crust and Seasoning was perfect. Good item to have in the freezer and for a good cause. A portion of the proceeds benefit the Robert Irvine Foundation. Honoring our heroes. A portion of the proceeds support our military and their families.

 

For a side I prepared a packet of Uncle Ben’s Ready Rice – Whole Grain Medley. It’s a Brown and Wild Rice with Herbs and Spices. It comes in a microwavable pouch. I just tore the top of the pouch to vent and microwaved it for 90 seconds. Done and Ready to serve! Always Delicious. I also had a Aunt Millie’s Live Carb Smart Dinner Roll. We love these rolls, they are always so fresh! Plus they are only 35 calories and 1 carb per roll! For Dessert later a Jello Sugar Free Dark Cherry Jello.

Directions
Cooking Directions: To Bake (preferred method: 1. Preheat oven to 375 degrees F. Remove glazed fillet from packaging. 2. Line a baking sheet with foil and spray with non-stick cooking oil. Place fillet on foil lined baking sheet skin side down. 3. Frozen: Bake approximately 22-24 minutes. Thawed: Bake approximately 14-16 minutes. Cook until internal temperature reaches 145 degrees F. To grill: 1. Preheat grill to 350-400 degrees F. Remove glazed fillet from packaging. 2. Spray aluminum foil with non-stick cooking oil and place foil on preheated grill. Place fillet skin side down on foil. Close lid. 3. Frozen: Grill approximately 15-17 minutes. Thawed: Grill approximately 10-12 minutes. Cook until internal temperature reaches 145 degrees F. To Thaw: Remove from pouch, cover, and refrigerate overnight. For quick thaw. Place pouch in cold water for 20-30 minutes. Cook immediately after thawing. Ovens vary; adjust times ad needed. Cook product to internal temperature of 145 degrees F.

Today’s Menu: Blackened Red Snapper w/ Cut Green Beans, Brown and Wild Rice, and Baked Garlic Loaf Bread

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast on this Sunday Morning. After my Tea I went to Kroger up the road from us. Wanted to get in and out before the crowd moved in. To Kroger’s credit they had everything fully stocked, which is unusual on a Holiday weekend. Back home got the cart and the yard tools out and did yard work. For Dinner tonight I prepared a Blackened Red Snapper w/ Cut Green Beans, Brown and Wild Rice, and Baked Garlic Loaf Bread.

I purchased a couple of Red Snapper Fillets from Meijer a while back and had them in the freezer. I laid them in the fridge overnight to thaw. The Red Snapper Fillets were nice size and look beautiful. I decided to Blacken it, I love all Blackened Fish and Seafood. I’ll need Zatarain’s Blackened Seasoning, Blue Bonnet Butter, and McCormick Grinder Sea Salt. Cooking it in a Cast Iron Skillet in Butter and Extra Light Olive Oil.

To prepare it I started by rinsing the Fillet off in cold water and patting dry and cut it in half. I melted a tablespoon of butter, Blue Bonnet Stick Butter. I then brushed both sides of the fillets with the Butter and then rubbed the fillets with Zatarain’s Blackened Seasoning and Sea Salt. Then I got out the Cast Iron Skillet. When the pan was fully heated I added my Snapper. Cooked it about 3 1/2 minutes per side, and it was ready for the table! The taste of the Red Snapper with the added Zatarain’s Blackening Seasoning makes it one delicious Fish Dish!

 

To go with my Blackened Snapper I opened up a can of Del Monte Cut Green Beans. I heated them up in a small saucepan on medium heat. Stirred often until heated, then served.

 

For my Rice I’m using Uncle Ben’s Ready Whole Grain Medley – Brown and Wild Rice. It comes in a microwavable package. I guess one of my favorites from the Uncle Ben’s Ready Rice, although I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish! For Dessert/Snack later a bowl of Skinny Pop – Popcorn with a Diet Dr. Pepper to drink. Today’s Menu: Cajun Rainbow Trout w/ Red Beans and Rice
To start this day off I Poached an Egg, heated up 2 Johnsonville Turkey Breakfast Sausage Links, toasted a Thomas Light English Muffin, and had my morning cup of Bigelow Decaf Green Tea. We had more rain overnight. Then for the day  it was 60 degrees and mostly sunny outside, still windy also. Did a load of laundry and then took my car and had it washed and stopped and got gas. Then stopped by the ATM and then dropped some letters off at the Post Office. Stopped by Walmart on my way back home. Back home I got my cart out and did some yard work. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Red Beans and Rice, I also baked a loaf of La Baguette Roasted Garlic Oval Bread.

 

I had the Rainbow Trout Fillet that I had purchased from Meijer, in the freezer. I laid the package of 1 fillet in the fridge overnight to thaw. To prepare it all I’ll need is; Rainbow Trout Fillet, 1 teaspoon Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed it skin side down on broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

 

For my Rice I used a new one for me, Uncle Ben’s Ready Rice Red Beans and Rice. It prepares as all the microwavable Ready Rice. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs perfectly with any dish. This has plenty of Red Beans along with Rice, I’ll be buying more of this. As I said I also baked a loaf of La Baguette Roasted Garlic Oval Bread. Then for Dessert later a Jello Sugar Dark Cherry Jello.

Today’s Menu: Baked Salmon w/ Whole Grain Brown and Wild Rice and Baked Garlic Oval Bread

 

 

For Breakfast this morning I Scrambled a couple of Eggs and I toasted a Thomas Light English Muffin. I also had a cup of Bigelow Decaf Green Tea. 73 degrees, rain and thunderstorms out today. Not a thing to day today, Nothing! So that’s what I did, Nothing. Caught up on some programs I had recorded. For Dinner tonight it’s a Baked Salmon w/ Whole Grain Brown and Wild Rice.

 

I love the combo of Salmon and Rice! I had purchased a North Atlantic Salmon Fillet from Meijer and had it in the freezer. I sat the fillet in the fridge overnight to thaw. To make it I’ll need the Salmon, McCormick Grinder Sea Salt and Peppercorn Medley, Dried Parsley, Dried Chive, and Extra Light Olive Oil.

 

To prepare it; I preheated the oven to 400 degrees. I then got a small baking pan and sprayed it with Pam Cooking Spray. I washed the Fillet off in cold water and patted dry with a paper towel. Next I put a light coat of the Extra Light Olive Oil on the Fillet and then seasoned. Laid the Fillet in the pan and baked. I baked it for 10 minutes, and done. Excellent Salmon!

 

For my Rice I’m using Uncle Ben’s Ready Whole Grain Medley – Brown and Wild Rice. It comes in a microwavable package. I microwaved it for 90 seconds and done! I guess one of my favorites from Uncle Ben’s Ready Rice, although I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs perfectly with the Salmon. For Dessert later a bowl of Breyer’s Carb Smart Chocolate Ice Cream.
