Today’s Menu: Cajun Rainbow Trout w/ Red Beans and Rice

 

 

To start this day off I Poached an Egg and served it on a a slice of toasted Aunt Millie’s Light Whole Grain Bread. Also had my morning cup of Bigelow Decaf Green Tea. Mostly cloudy and 70 degrees out. It looks as though Spring is creeping in, now lets get rid of the Coronavirus!! So Isolation continues as does life. Everyone just trying to make the best of the things. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Red Beans and Rice, I also baked a loaf of La Baguette Roasted Garlic Oval Bread.

 

 

I had the Rainbow Trout Fillet, that I had purchased from Meijer, in the freezer. I laid the package of 1 fillet in the fridge overnight to thaw. To prepare it all I’ll need is; Rainbow Trout Fillet, 1 teaspoon Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed skin side down on broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

 

For my Rice I used a new one for me, Uncle Ben’s Ready Rice Red Beans and Rice. It prepares as all the microwavable Ready Rices. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs perfectly with any dish. This has plenty of Red Beans along with Rice, I’ll be buying more of this. As I said I also baked a loaf of La Baguette Roasted Garlic Oval Bread. Then for Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Red Beans, Hardwood Smoked Turkey Sausage and Rice

 

 

For Breakfast this morning I made some French Toast. I used Aunt Millie’s Light Whole Grain Bread, Egg Beater’s, Ground Cinnamon, and Ground Nutmeg. I topped the Pancakes with Log Cabin Sugarless Maple Syrup and i Can’t Believe It’s Not Butter Light. Also had a cup of Bigelow Decaf Green Tea. 64 degrees and partly cloudy out. Got the cart out of the shade and did some more work outside around the house. So good to be able to get outdoors again! For Dinner tonight I prepared Red Beans, Hardwood Smoked Turkey Sausage and Rice.

 

 

What better way to start your week of than with Red Beans, Hardwood Smoked Turkey Sausage and Rice. To make mine I’ll need a can of Bush’s Chili Beans – Red Beans, Frank’s Red Hot Sauce, Butterball Hardwood Smoked Turkey Sausage, Uncle Ben’s Original Long Grain Rice, Litehouse Spring Onion, and Pam Non Stick Cooking Spray, Extra Light Olive Oil.

 

 

 

To prepare the Bush’s Red Beans was the easiest part. Just opened the can, got a small sauce pan, sprayed it with Pam Non Stick Cooking Spray, emptied the can of Beans in the pan and heated on medium till it started to boil and turned the heat to low and simmered till heated through. Took the pan off the burner and let it set until needed.

 

 

I got a skillet out as the Beans was cooking, sprayed it with Pam Non Stick Spray and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Sliced the Hardwood Smoked Turkey Sausage into bite size slices and added them to the heated skillet until heated through. Removed them from the heat and set aside until needed.

 

 

 

On a third burner as the Beans and Sausage was finishing I cooked my Rice. Combined the Rice, Water and Butter in a saucepan. Bring it to a boil. Reduce the heat medium low, simmer covered for 20 minutes. Then remove from the heat. Let stand covered 5 minutes until the water is absorbed. Fluffed it with a fork and served!

 

 

 

To serve I made a bed of the Rice in a bowl. Topped the Rice with some of the Red Beans. Added the sliced Smoked Sausage. Then added a few shakes of Frank’s Hot Sauce and a sprinkle of the Spring Onions. This turned out to be a true Comfort Food Meal! Really Enjoyed it. Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish! I loved this dish tonight, plenty leftover for a couple of lunches! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Pretzel Sticks with a Sprite Zero to drink.

Today’s Menu: Fried Oysters w/ Long Grain and Wild Rice and Baked Multi Grain Loaf Bread

 

 

For Breakfast this morning I prepared a packet of Pioneer Peppered White Gravy, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, heated 2 Johnsonville Turkey Sausage Links, and had a cup of Bigelow Decaf Green Tea. That’s the way to start the day! Sunny and 38 degrees outside today. After Breakfast I went to Kroger for Mom and then stopped by McDonald’s and picked up Breakfast for her. I had picked up a bottle of Spray Invisible Fence the other day at Meijer. They say the odor will drive dogs away from your yard. Myself and a couple of neighbors yard’s are being used by other people dog’s as their personal dump centers! They are supposed to be picking up after their dogs but someone is too lazy to do it. So I bought enough spray for 3 of yards. I got the cart out of the shed and went around and sprayed our yards. Hope it works!! For Dinner tonight I prepared Fried Oysters w/ Long Grain and Wild Rice and Baked Multi Grain Loaf Bread.

 

As usual I used Hilton’s Fresh Farm Raised Pacific Willapoint Oysters, my favorite. To prepare them; Place shucked oysters in a colander rinse in cold water and drain. Dredge drained Oysters in the Flour, then Egg Beater’s, and then in Panko Crumbs seasoned with Sea Salt and Pepper (coating each oyster thoroughly). Set aside to dry at least 1/2 hour. An easy way to coat the oysters with the Panko Crumbs is to place the Crumbs in a resealable plastic bag, add egg-dipped oysters, seal bag, and then shake.

 

 

 

Next, heat the Extra Light Olive Oil in a frying pan (I like to use my cast-iron frying pan) to 370 degrees F. or until quite hot. Fry oysters until golden brown on one side, then turn over each Oyster carefully to brown the other side, approximately 1 to 2 minutes on each side Fry oyster until golden brown and edges are curled. Do not overcook or overcrowd in frying pan. Remove from frying pan and serve immediately. Serve with Lemons Wedges, Tartar Sauce, Cocktail Sauce and/or your favorite hot sauce. I served mine with some McCormick’s Tarter Sauce with a side of my favorite hot sauce Frank’s Hot Sauce. These are so delicious, golden brown and with an incredible fresh flavor.

 

 

To go with my Oysters I prepared some Uncle Ben’s Ready Rice – Long Grain and Wild Rice. It comes in a microwavable Pouch. Just heat the pouch in the microwave and serve. Love that Rice! Then I also baked a loaf of La Baguetterie Multi-Grain Oval Bread. For Dessert later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

 

 

 

 

 

 

 

 

 

Pan-Fried Oysters Recipe:
Ingredients:

12 large-medium Oysters, shucked
1 tablespoon Flour
1 Eggs, beaten or 1/4 cup egg Beater’s
1 cup Shake and Bake Seasoned Panko Bread Crumbs
Sea Salt and Pepper, to taste
2 to 3 tablespoons Extra Light Olive Oil
Lemon Wedges, optional
Hot sauce, optional
Seafood Cocktail Sauce, optional

Preparation:

Today’s Menu: Baked Salmon w/ Whole Grain Brown and Wild Rice

 

 

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, heated up some Kroger Diced Ham, and had a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Also had a cup of Bigelow Decaf Green Tea. We ended up getting about 3 inches of snow overnight. It caused some bad roads overnight but most of it was melted by late afternoon off the roads. Cloudy and rain later in the day, high of 37 degrees. More bad weather due overnight. Not much going on today. Did a few jobs around the house. For Dinner tonight I prepared a Baked Salmon w/ Whole Grain Brown and Wild Rice.

 

I purchased a a North Atlantic Salmon Fillet from Meijer yesterday. To make it I’ll need the Salmon, McCormick Grinder Sea Salt and Peppercorn Medley, Dried Parsley, Dried Chive, and Extra Light Olive Oil.

 

 

 

To prepare it; I preheated the oven on 400 degrees. I then got a small baking pan and sprayed it with Pam Cooking Spray. I washed the Fillet off in cold water and patted dry with a paper towel. Next I put a light coat of the Extra Light Olive Oil on the Fillet and then seasoned. Lined the Fillet in the pan and baked. I baked it for 8 minutes, and done. Excellent Salmon!

 

 

 

For my Rice I’m using Uncle Ben’s Ready Whole Grain Medley – Brown and Wild Rice. It comes in a micowavable package. I microwaved it for 90 seconds and done! I guess one my favorites from the Uncle Ben’s Ready Rice, all though I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs perfectly with the Salmon.Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper to drink.

Today’s Menu: Blackened Red Snapper w/ Cut Green Beans, Brown and Wild Rice, and Baked Garlic Loaf Bread

 

 

 

To start my morning off I toasted a Thomas Light English Muffin, lightly fried a couple of Johnsonville Turkey Breakfast Sausage Links, and had a cup of Bigelow Decaf Green Tea. Excellent way to start the day! Cloudy with passing rain showers, 47 degrees for a high. I was able to rake the side yard s before it started raining. Went to post office and bank later on. For Dinner tonight I prepared a Blackened Red Snapper w/ Cut Green Beans, Brown and Wild Rice, and Baked Garlic Loaf Bread.

 

 

While at Meijer the other day I purchased a Red Snapper Fillet that they had on sale in their Seafood Department. I also purchased a Walleye Fillet, that I froze, and some Cooked Shrimp that was also on sale. The Red Snapper Fillet was nice size and looks beautiful. I decided to Blacken it, I love all Blackened Fish and Seafood. I’ll need Zatarain’s Blacken Seasoning, Blue Bonnet Butter, and McCormick Grinder Sea Salt. Cooking it in a Cast Iron Skillet in Butter and Extra Light Olive Oil.

 

 

 

To prepare it I started by rinsing the Fillet off in cold water and patting dry and cut it in half. I melted a tablespoon of butter, Blue Bonnet Stick Butter. I then brushed both sides of the fillets with the Butter and then rubbed the fillets with Zatarain’s Blackened Seasoning and Sea Salt. Then I got out the Cast Iron Skillet. When the pan was fully heated I added my Snapper. Cooked it about 3 1/2 minutes per side, and it was ready for the table! The taste of the Red Snapper with the added Zatarain’s Blackening Seasoning makes it one delicious Fish Dish!

 

 

To go with my Blackened Snapper I opened up a can of Del Monte Cut Green Beans. I heated them up in a small sauce pan on medium heat. Stirred often until heated, then served.

Today’s Menu: Baked Pacific Cod w/ Long Grain and Wild Rice and Baked Garlic Oval Loaf Bread

 

 

For Breakfast this morning I fried a couple of Johnsonville Turkey Breakfast Sausage Links. These are fresh Sausage Links, a new product. They fried up great and tasted just as good! Johnsonville has a full line of Turkey Sausage Products, love them all! I also made some Simply Potatoes Shredded Hash Browns and made a cup of Bigelow Decaf Green Tea. Good way to start a Sunday Morning. I went to Kroger up the road to their Seafood Dept. I wanted some Fish for Dinner. We have one of those late Summer Hot August Day out there today! 98 degrees, sunny and very humid. I’m still not 100%, allergies still bothering me. So not a lot going on again. For Dinner tonight I prepared a Baked Pacific Cod w/ Long Grain and Wild Rice and Baked Garlic Oval Loaf Bread.

 

At Kroger this morning I purchased a package of fresh California Garlic Medley Seasoned Pacific Cod Fillets. These really looked good so I purchased a package. To prepare it I’ll be baking it. First I preheat the oven at 350 degrees. Then I placed the fillets in a 13×9-in. baking dish coated with Pam Cooking Spray. When the oven was ready I baked the Cod for 25 minutes.

 

 

 

 

 

Removed the baking dish from the oven and served the Cod. It came out perfect, moist with excellent Seasoning. The Garlic Medley was a perfect Seasoning for it. I’ll have to purchase another package soon, makes a great Meal!

 

 

 

 

 

 

To go with my Cod I prepared some Uncle Ben’s Ready Rice – Long Grain and Wild Rice. It comes in a microwavable Pouch. Just heat the pouch in the microwave and serve. Love Rice! Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. For Dessert later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

 

 

 

 

 

 

 

 

Cod

Today’s Menu: Lemon-Parsley Baked Cod w/ Long Grain and Wild Rice, Sliced Carrots, and Whole Grain Bread

 

 

 


Started my morning off with a couple of Jennie – O Turkey Breakfast Sausage Links, Simply Potatoes Hash Browns, a slice of toasted Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. 84 degrees, low humidity, mostly sunny and a nice light breeze blowing out today! After Breakfast I did a couple loads of laundry. Next I cleaned the house, dusted and ran the vacuum. Later on got the cart out and took a ride around the neighborhood. For dinner tonight I prepared a Lemon-Parsley Baked Cod w/ Long Grain and Wild Rice, Sliced Carrots, and Whole Grain Bread.

 

 

 

 

 

 


For dinner tonight I prepared a Lemon Baked Cod. I’ll need the following; 3 tablespoons lemon juice, 3 tablespoons butter (melted), 1/4 cup all-purpose flour, 1/2 teaspoon sea salt, 1/4 teaspoon paprika, 1/4 teaspoon lemon-pepper seasoning, 3 cod fillets, 2 tablespoons minced fresh parsley, and 2 teaspoons grated lemon peel.

 

 

 

 

 

 


To prepare the Cod I first preheated oven to 400°. In a shallow bowl, mixed lemon juice and butter. In a separate shallow bowl, mixed flour and seasonings. Dip fillets the in lemon juice mixture, then in flour mixture to coat both sides; shake off excess. Placed the fillets in a 13×9-in. baking dish coated with Pam Cooking Spray. Drizzle with remaining lemon juice mixture. Baked 12 minutes and the fish just began to flake easily with a fork. Mix parsley and lemon peel; sprinkle over fish. The Cod came out so flavorful! The Lemon is perfect with Cod.

 

 

 

 

 

 


For one side dish I prepared some Uncle Ben’s Ready Rice – Long Grain and Wild Rice. It comes in a microwavable Pouch. Just heat the pouch in the microwave and serve. Love Rice! Then I also heated up a small can of Del Monte Sliced Carrots. Also had a slice of Healthy Life Whole Grain Bread, buttered it with I Can’t Believe It’s Not Butter. For dessert later a bowl of fresh sliced Peaches!

 

 

 

 

 

Lemon-Parsley Baked Cod Recipe

Ingredients
3 tablespoons lemon juice
3 tablespoons butter, meltedLemon
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon lemon-pepper seasoning
4 cod fillets (6 ounces each)
2 tablespoons minced fresh parsley
2 teaspoons grated lemon peel
Directions

Today’s Menu: Walnut Crusted Baked Salmon w/ Long Grain and Wild Rice

 

 

For Breakfast I prepared some Simply Potato Shredded Hash Browns, a couple of Johnsonville Turkey Breakfast Sausage Links, toasted a slice of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. A beautiful day out today, 79 degrees and sunny! I had to buy new batteries for my cart I keep in the shed. So today I installed the new batteries and it was job! Had to remove the seat to get to everything. Finally got them changed but it was tough. Took a ride around the neighborhood and enjoyed the beautiful weather. For Dinner tonight its a Walnut Crusted Baked Salmon w/ Long Grain and Wild Rice.

 

 

 

 

I purchased the fresh Atlantic Salmon from the Kroger Seafood Department. I had it in the freezer and let it thaw overnight in the fridge. I’m going to prepare it using the Walnut Crusted Baked Salmon recipe. I haven’t had Salmon or used this recipe in a while. To make I’ll need; Salmon Fillets (4 ounces each), 4 teaspoons Dijon Mustard, 4 teaspoons Honey, 2 slices Whole Grain Bread (torn into pieces), 3 tablespoons finely chopped Walnuts, 2 teaspoons Extra Light Olive Oil, and 1/2 teaspoon Dried Thyme. To prepare it; Start by preheating the oven to 400°. Place the Salmon on a baking sheet coated with Pam cooking spray. Mix the Mustard and Honey; brush over the Salmon. Next I placed the Bread in a food processor; pulse until coarse crumbs form. Transfer to a small bowl. Stir in Walnuts, Olive Oil and Thyme; press it onto the Salmon Fillet.

 

 

 

Bake 12-15 minutes or topping is lightly browned and fish just begins to flake easily with a fork. The Salmon came out perfect, moist and delicious. The Walnut Crust is perfect for the Salmon. The Walnuts, Honey, Dijon Mustard, Thyme, and fresh Bread Crumbs all combine perfectly. Love this recipe.

 

 

 

 

 

I also prepared a packet of Uncle Ben’s Ready Rice Long Grain and Wild. It comes in a microwavable bag. I microwaved it for 90 seconds and done! I guess my favorite among the Uncle Ben’s Ready Rice, all though I love using them all. An easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs with Fish perfect. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

 

 

 

 

 

 

 

Walnut-Crusted Salmon
Ingredients:

4 salmon fillets (4 ounces each)
4 teaspoons Dijon mustard
4 teaspoons honey
2 slices whole wheat bread, torn into pieces
3 tablespoons finely chopped walnuts
2 teaspoons canola oil
1/2 teaspoon dried thyme

Directions:

Preheat oven to 400°. Place salmon on a baking sheet coated with cooking spray. Mix mustard and honey; brush over salmon. Place bread in a food processor; pulse until coarse crumbs form. Transfer to a small bowl. Stir in walnuts, oil and thyme; press onto salmon.
Bake 12-15 minutes or topping is lightly browned and fish just begins to flake easily with a fork. Yield: 4 servings.

Today’s Menu: Smoked Salmon w/ Whole Grain Medley – Brown and Wild Rice and Baked Garlic Loaf Bread

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. I had to be at my family Doctor to discuss the results of my test that showed I have severe Diabetic Neuropathy. I think I may have the test redone. I’m just not showing the signs that the tests says I should be showing, or at least not showing right now. Either way it’s just something new I have to deal with if I do have the damage. More to come. Anyway after I left the doctor’s I picked up Breakfast for Mom at McDonald’s. Then I went and got her car washed and filled up with gas. Next I went to Meijer for a few items. It’s a beautiful Spring Day out there today! 74 degrees and Sunny! For Dinner tonight I prepared Smoked Salmon w/ Whole Grain Medley – Brown and Wild Rice and Baked Garlic Bread Loaf.

 

 

 

 

I came across a new item while at Meijer, Latitude 45 Smoke Roasted Atlantic Salmon. So I’ll be using this for the first time along with a packet of Uncle Ben’s Ready Whole Grain Medley – Brown and Wild Rice.

 

 

 

 

 

 

The Salmon comes in a sealed plastic container. I sampled it at Meijer and it was Love after one taste! I bought a couple of containers of it, with more to come! It’s all ready, just open and serve. Has such a delicious and fresh taste to it, huge fan already!

 

 

 

 

 

 


For my Rice I’m using Uncle Ben’s Ready Whole Grain Medley – Brown and Wild Rice. It comes in a micowavable package. I microwaved it for 90 seconds and done! I guess one my favorites from the Uncle Ben’s Ready Rice, all though I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs perfectly with the Smoked Salmon.

 

 

 

 

To serve I made a bed of the Rice and topped it with the Smoked Salmon. I love this dish! Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. For Dessert later Jello Sugar Free Dark Chocolate Pudding topped with Coll Whip Free.

Crispy Pan Fried Tilapia w/ Long Grain and Wild Rice

Today’s Menu: Crispy Pan Fried Tilapia w/ Long Grain and Wild Rice

 

 

To start this Tuesday off I had one of favorites, French Toast and Turkey Sausage Links. For the French Toast I used Aunt Millie’s Light Whole Grain Bread, 1/2 cup of 2% Milk, 1 medium Egg, Ground Nut Meg, Ground Cinnamon, and Blue Bonnet Light Butter. Mix the Milk, Egg and Spices together in a bowl and dip the Bread in mixture. Fry until each side is golden brown. For the Sausage I used Johnsonville Turkey Breakfast sausage Links. Just fry for 8 minutes and done. For the Syrup topping I used Log Cabin Sugar Free Maple Syrup. Oh how I love French Toast! It’s 50 degrees and partly sunny out today. Ran a couple of errands and stopped by Meijer for a few items. Back home I was all caught up on everything and just took it easy. For Dinner tonight its Crispy Pan Fried Tilapia w/ Long Grain and Wild Rice.

 

 

 

 

I purchased the Tilapia while at Meijer earlier. I purchased 2 big and beautiful fillets of the Tilapia, having 1 for Dinner and froze the other one. I also bought a Red Snapper Fillet. So I had already rinsed the fillet in cold water and had it in plastic bag the fridge. To prepare it I’ll need; the Tilapia, McCormick Grinder Sea Salt and Peppercorn Medley, and Zatarain’s Crispy Southern Fish Fri. To start I heated Extra Light Olive Oil in a skillet over medium-high heat. When the skillet was ready I cooked the Tilapia until Golden Brown, about 3 minutes per side. I had not had Tilapia in a while and it tasted great! Moist with that excellent Zatarain’s Seasoning.

 

 

 

 

I also prepared a packet of Uncle Ben’s Ready Rice Long Grain and Wild. It comes in a microwavable bag. I microwaved it for 90 seconds and done!
