Today’s Menu: Baked Salmon w/ Long Grain and Wild Rice and Whole Baby Carrots

 

 
For Breakfast this morning it was Hash Browns, Smoked Turkey Sausage, Toast, and Decaf Green Tea. I had went tobaked-salmon-w-wild-and-long-grain-rice-and-whole-baby-carrots-007 Meijer and they finally had the Simply Potatoes Shredded Hash Browns back in stock! It had been a few weeks since any store had them in stock. So I prepared the Hash Browns and then I prepared a 1/2 Sausage link of the Butterball Hardwood Smoked Turkey Sausage. Added a slice of toasted Healthy Life Whole Grain Bread and a cup of Bigelow Decaf Green Tea, and that’s a Breakfast! Big change in the weather again! 50 degrees for a high with rain on and off all day, beats in the teens and snow! So with not a lot going on outside I did some cleaning on the inside. I cleaned and straightened the pantry and the the freezer and refrigerator. For Dinner tonight I prepared Baked Salmon w/ Long Grain and Wild Rice and Whole Baby Carrots.

 
I had purchased the Salmon Fillet last week from Meijer and had it in the freezer. Grabbed the fillet out of the freezerBaked Salmon w Baked Potato and Whole Baby Carrots 001 and let it thaw overnight in the fridge. To prepare it, I rinsed it off with cold water and patted it dry with a paper towel. I preheated the oven on 400 degrees. I seasoned it with McCormick’s Grinder Sea Salt and Black Peppercorn and some Dried Dill. Sprayed a small baking pan with Pam w/ Olive Oil Spray and added the Salmon Fillet. Baked it on 400 degrees until the Salmon was fork tender, about 12 minutes total. I love Salmon as I do all Fish and Seafood. The Salmon came out delicious, nicely seasoned and moist. I just love all Fish and Seafood.

To go worth the Salmon I microwaved a bag of Uncle Ben‘s Ready Rice – Long Grain and Wild. I guess my favorite among the Uncle Ben’s Ready Rice, all though I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready.

Then I also heated up a can of Kroger Brand Whole Baby Carrots. These are so much easier to prepare than boiling fresh Baby Carrots, and they taste just as fresh and good. I also baked a loaf of Pillsbury French Bread. Then for Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Sweet BBQ Chicken Kabobs w/ Whole Grain Brown Rice

 
Went outside last night about 10:00 and was able to watch several Fireworks Shows around the area. A lot of the Firework Shows were moved up because of heavy rain prediction for the 4th of July (Monday). Mom went to ChurchSweet BBQ Chicken Kabobs w Whole Grain Brown Rice 013 this morning and I stayed home to keep an eye on Dad and it was house cleaning day today. I made some Pancakes for Breakfast this morning. Made them with Bisquick Heart Smart. Also fried up 3 slices of Jennie – O Turkey Bacon. After Lunch went over to see a friend of mine, he had bought a new car and he wanted me to stop by and check it out. Amazing what the new cars are equipped with now! For dinner tonight staying with the Chicken. So last night it Chicken and Fries and tonight It’s Chicken in a different way, tonight it’s Sweet BBQ Chicken Kabobs w/ Whole Grain Brown Rice.

Came across a new item at Meijer yesterday and couldn’t wait to give it a try! Tonight I’m trying the new Johnsonville Sweet BBQ Chicken Kabobs. Meijer had 3 different kinds but I wanted to give the Sweet BBQ Chicken Kabobs first. You can grill them or bake them, so I’m baking mine. Our grill died and I haven’t replaced it. So the Kabobs come fresh and in a sealed package of 4 seasoned and skewered Kabobs.

To prepare them I preheated the oven to 425°F. Placed the Kabobs on foil-lined backing pan coated with Pam Cooking Spray. Baked for 15 minutes, turning once. And done! How easy is this, a one pan cleanup. Johnsonville has it’s self another winning dish! The Chicken is moist and so tender with nice seasoning. The easiest Kabob I’ve ever prepared! These would be great for parties or grilling out for the family. Looking forward to trying the other types.

To go with the Kabobs I prepared some Uncle Ben’s Ready Rice – Whole Grain Brown Rice. To prepare it just microwave. It comes in a microwavable Pouch. Just heat for 90 seconds and serve! Rice comes out perfect, steaming hot and fluffy.

 

 

 

 

I wanted something else to go with everything, something light and fresh. So I went with a Fruit Medley. So out of the pantry I grabbed a can of Del Monte Diced Mango and a can of Dole Pineapple Chunks. I then I chopped up someSweet BBQ Chicken Kabobs w Whole Grain Brown Rice 001 Cilantro. I opened the cans of Mango and Pineapples up and drained the Juice from each one in separate bowl. I’m going to use juices to flavor the dish. Place the Mango, Pineapple, and Cilantro in a mixing bowl. Stir in the Juice of 1 of the fruits or combinations of all the Juices, no certain amount just adjust it to your own tastes. Stir, and cover and refrigerate for at least an hour before serving. Turned out great, it hit the spot! Fresh and Fruity, nice side. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: General Tso’s Chicken w/ Brown Rice and Whole Baby Carrots

 
It was Biscuits and Gravy to start the day around here! I normally have Gravy with toast but MGeneral Tso’s Chicken w Brown Rice and Whole Baby Carrots 012om wanted Biscuits so Biscuits it was. After Breakfast I took Mom up to a battery store not far from here. She needed a new watch battery. From there stopped by the bank for her and back home. This afternoon Mom went over to see Dad and I had to stay home and wait for the delivery of Dad’s new lift chair we bought him. It arrived later in the afternoon, it’s really a nice chair and will help him to get up from the sitting position. Now we just have to get him strong enough to come back home! For Dinner tonight something new – Kahiki General Tso’s Chicken. I prepared General Tso’s Chicken w/ Brown Rice and Whole Baby Carrots.

While at Meijer last week I came across some Kahiki General Tso’s Chicken in the frozen food section. It looked and sounded good plus there was 340 calories and 32 net carbs in it, which isn’t bad at all for General Tso’s Chicken. So I bought a bag of it and had it in the freezer.

 

 

 

 
To prepare it I preheated the oven to 400 degrees. Removed the Sauce Pouch and saGeneral Tso’s Chicken w Brown Rice and Whole Baby Carrots 003t in a bowl of hot water to thaw. Next I took a baking sheet and lined it with foil and sprayed Pam on it. I placed the Chicken evenly on the sheet and baked them for 20 minutes turning them after 10 minutes. Internal temperature of Chicken was 165 degrees, used an instant read thermometer. Removed it from the oven and let it stand 1 minute before serving. I drizzled the thawed sauce across the pieces and served. I found a winner here! Nice size pieces of Chicken, nice seasoning, and excellent sauce! The Sauce had some nice heat to it, not overpowering. I’ll have to keep a bag in the freezer for sure.

 

 

Whole Baby Carrots
For one side dish I microwaved some Uncle Ben’s Natural Whole Grain Brown Rice. It comes in a single serving microwavable container. Just heat for 45 seconds and serve! Rice comes out perfect, steaming hot and fluffy. I also heated up a can of Kroger Whole Baby Carrots. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Started my morning off with a couple of Jennie – O Turkey Breakfast Sausage Links, Simply Potatoes Hash Browns, a slice of toasted Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Outside we ended up with 4 new inches of snow. Just as the snow we had was starting to melt we got hit again. The main roads are all clear but the side roads are still slick. I needed to go to the bank but all are closed today for President’s Day today. So I just did a few things around the house and on the computer. For dinner tonight I prepared a Lemon-Parsley Baked Cod w/ Long Grain and Wild Rice, Sliced Carrots, and Whole Grain Bread.

 

Lemon-Parsley Baked Cod 002

Another delicious and healthy recipe from the Taste of Home website! I love that site, som many great recipes. For dinner tonight I prepared a Lemon Baked Cod. I’ll need the following; 3 tablespoons lemon juice, 3 tablespoons butter (melted), 1/4 cup all-purpose flour, 1/2 teaspoon sea salt, 1/4 teaspoon paprika, 1/4 teaspoon lemon-pepper seasoning, 3 cod fillets, 2 tablespoons minced fresh parsley, and 2 teaspoons grated lemon peel.

To prepare the Cod I first preheated oven to 400°. In a shallow bowl, mixed lemon juice and butter. In a separate shallow bowl, mixed flour and seasonings. Dip fillets the in lemon juice mixture, then in flour mixture to coat both sides; shake off excess. Placed the fillets in a 13×9-in. baking dish coated with Pam Cooking Spray. Drizzle with remaining lemon juice mixture. Baked 12 minutes and the fish just began to flake easily with a fork. Mix parsley and lemon peel; sprinkle over fish. The Cod came out so flavorful! The Lemon is perfect with Cod.

 

 

 
For one side dish I prepared some Uncle Ben’s Ready Rice – Long Grain and Wild Rice. It comes in a microwavable Pouch. Just heat the pouch in the microwave and serve. Love Rice! Then I also heated up a small can of Del Monte Sliced Carrots. Also had a slice of Healthy Life Whole Grain Bread and a Snapple Diet Tea to drink. For dessert later a Healthy Choice Frozen Greek Yogurt.

 

 
Lemon-Parsley Baked Cod Recipe

Ingredients
3 tablespoons lemon juice
3 tablespoons butter, meltedLemon Baked Cod 005
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon lemon-pepper seasoning
4 cod fillets (6 ounces each)
2 tablespoons minced fresh parsley
2 teaspoons grated lemon peel
Directions
1. Preheat oven to 400°. In a shallow bowl, mix lemon juice and butter. In a separate shallow bowl, mix flour and seasonings. Dip fillets in lemon juice mixture, then in flour mixture to coat both sides; shake off excess.

Today’s Menu: Sweet and Sour Turkey Meatballs w/ Sugar Snap Peas, Pineapple, Water Chestnuts, and White Rice

 

 

After a light breakfast I took Mom up to Kroger so she could pick up a few items and while there they had Coffee Makers on sale so I picked one up for Mom and Dad for Christmas. They’ve needed a new for a long time. I’ve never Sweet and Sour Turkey Meatballs w Sugar Snap Peas, Pineapple, Wa 010been a Coffee drinker, Green Tea is about it. I also stopped by McDonald’s so she could pick their Breakfast up. Outside it was in the 50’s and cloudy early, as day went on rain moved in. We have cooler weather moving in for the weekend they say, high in the 30’s Saturday. The hospital called and I going Tuesday morning for my finger surgery. Shouldn’t been in there but about 20 minutes. I’m having the cyst removed and they have to do it at the Hospital due to possible infection. Anyway not much else going on today. For dinner tonight something new, I prepared Sweet and Sour Turkey Meatballs w/ Sugar Snap Peas, Pineapple, Water Chestnuts, and White Rice.

 

 
Wanted something different tonight so it’s Sweet and Sour Turkey Meatballs w/ Sugar Snap Peas, Pineapple, Water Sweet and Sour Turkey Meatballs w Sugar Snap Peas, Pineapple, Wa 002Chestnuts, and White Rice. I had seen the Sweet and Sour Meatballs on an episode of Pioneer Woman so I thought I would do a version of that for dinner. Wasn’t sure what to have with it so I raided the pantry and came out with the Pineapple, Water Chestnuts, and White Rice. I had the Sugar Snap Peas in a container in the fridge. I used Honeysuckle White Turkey Meatballs, La Choy Sweet Sour Sauce, Kroger fresh Sugar Snap Peas, 1 can of Dole Pineapple Tidbits, 1 can of Sliced water Chestnuts, and Uncle Ben’s White Rice.

 

 

Sweet and Sour Turkey Meatballs w Sugar Snap Peas, Pineapple, Wa 003
To prepare the Meatballs; I heated up a medium size skillet on medium heat (sprayed with Pam Cooking Spray). Added the Turkey Meatballs. The meatballs are precooked so all you have to do is reheat them. So I added then to the skillet and topped them with La Choy Sweet Sour Sauce. I let them simmer, turning them several times, for 15 minutes; until they were heated through. Se the skillet aside, putting the lid on the skillet.

I then took another medium size skillet, sprayed it with Pam Cooking Spray and added 2 tablespoons of Extra Virgin Olive Oil. Heated this on medium heat also. As the skillet was heating I opened up the Sliced Water Chestnuts, draining the can of all the liquid. I then opened up the can of Dole Pineapple Tidbits, I drained the juice from the can and reserving it in a small bowl. The Sugar Snap Peas come in a sealed plastic container, just cut it open and gave the Peas a quick wash with water.

 

 
So the skillet is heated and I first add the Water Chestnuts, they take the longest to get done. Cooked them for aboutSweet and Sour Turkey Meatballs w Sugar Snap Peas, Pineapple, Wa 006 10 minutes, stirring often. I then added Sugar Snap Peas, these don’t take long at all. Stirring the Peas and Chestnuts together. I turned the heat down to low and added the Pineapple Tidbits and the reserved Pineapple Juice. The amount of juice you add is up to your preference. I added about 1/4 of the juice. Continued cooking for another 5 minutes; turned the heat off and put the lid on the skillet. To prepare the Uncle Ben’s White Rice is the easy part. It comes in a microwavable package; just heat for 90 seconds and serve! I love Uncle Ben’s Rice, I don’t care if you boil it or microwave it always turns out perfect.

 

 
So to serve this, in a bowl, I made a bed of the White Rice. Topped it with Water Chestnuts, Sugar Snap Peas, and Sweet and Sour Turkey Meatballs w Sugar Snap Peas, Pineapple, Wa 011Pineapple Tidbits. The topped that with the Turkey Meatballs, and chow down! This made one delicious dish! The Turkey Meatballs were incredible. The Meatballs absorbed all that Sweet and Sour Sauce and just made the Meatballs pop with flavor. Then you have a mixture of Water Chestnuts, Sugar Snap Peas, and Pineapple Tidbits. All just had such a fantastic flavor, the Pineapple Juice just tied all 3 ingredients together. With the bed of White Rice it made everything perfect, Rice is good with any dish! I’ll have to add this to the “Keeper Recipes” I had a Diet Peach Snapple to drink. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Another hot and humid day out, might as well get used to it as it’s settled in here for a while they say. For Breakfast I made a Breakfast Sandwich consisting of Egg Beater’s Egg Whites (1 serving), 2 Slices of Simple Truth Canadian Bacon, 1 slice of Sargento Colby Longhorn Ultra Thin Cheese, and all on a toasted Healthy Life Whole Grain English Muffin. Love that Canadian Bacon! After my morning workout went outside and cleaned up the driveway and around the house before it got too humid, lot of leaves out there already! Back in helped out Mom with laundry and did some light cleaning around the house. For dinner tonight it’s Spicy Baked Buttermilk Chicken Tenders w/ White Rice and Asparagus.

I had picked up a package of Simple Truth Chicken Breast Tenderloins at Kroger the other day. To prepare them I’ll need; 1 Cup Low – Fat Buttermilk, 1/2 Cup Hot or Medium Wing Sauce (I used Kroger Brand Hot Wing Sauce), 1 Cup Whole Grain Bread Crumbs (I made my own by putting 2 slices of Whole Grain Bread in a Food Processor), 1 Package Shake and Bake Panko Bread Crumbs, 3 tablespoons Kraft Grated Reduced Fat Parmesan Cheese, Sea Salt and Ground Black Pepper (to taste), and 2 Tablespoons Canola Oil. A combination of some great ingredients, that will give the Chicken a fantastic flavor!

To start I mixed the buttermilk and hot wing sauce together in a shallow pan. Added in the chicken, coating well. Marinate in the refrigerator for 1 to 1-1/2 hours (I actually let it marinate for 3 hours). Preheated the oven to 400 degrees. Combined the Bread Crumbs, Panko, and Parmesan cheese (mixing well) in a shallow dish. Allow excess marinade to drip off each chicken strip before dredging it in the crumb mixture. Season to taste with Salt and Pepper and then dredge the strips in the crumb mixture. Spread 2 Teaspoons Extra Virgin Olive Oil over the bottom of a large baking sheet. Heat the pan in the oven for 5 minutes. Remove baking sheet from the oven and place the coated chicken strips in a single layer. Bake for 15-20 minutes until cooked through (165 degrees). Winner, Winner, Chicken Dinner (sorry had to use that)! The Chicken had a great crust on it and was moist and just bursting with flavor! You have the heat of the Wing Sauce along with the creaminess of the Buttermilk, and the crust of the Panko, it’s a perfect trio. A for sure “Keeper Recipe”

 

Roasted Asparagus 2
Then for one side dish I prepared Roasted Asparagus. To prepare the Asparagus I needed Extra Virgin Olive Oil, Garlic (minced), Sea Salt, Freshly grated Black Peppercorn, Lemon Juice, and Shredded Parmesan Cheese. To prepare it; Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in the preheated 400 degree oven and roast for approximately 8-10 minutes, depending on how thick your asparagus spears are, until lightly browned and tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving.

Then for the other side I prepared some Uncle Ben’s White Rice. I usually have Brown Rice but Mom and dad like White Rice so White it is! Easy to prepare; Just bring Water and Rice to a boil. Reduce heat and cover for 20 minutes and done! Rice is so good! For dessert later a Dole Mini Banana and a Honey Crisp Apple Slice.

Spicy Baked Buttermilk Chicken Tenders

Ingredients:

1 Package; Chicken Tenderloin, or Chicken Breasts cut lengthwise into 1″ wide strips
1 Cup Low – Fat Buttermilk
1/2 Cup Hot or Medium Wing Sauce
1 Cup Whole Grain Bread Crumbs (I made my own by putting 2 slices of Whole Grain Bread in a Food Processor)
1 Package Shake and Bake Panko Bread Crumbs
3 Tablespoons Kraft Grated Reduced Fat Parmesan Cheese
Sea Salt and Ground Black Pepper, to taste
2 Tablespoons Canola Oil
Bleu Cheese Dip or Wing Sauce, for dipping (optional)
Instructions:
* Mix buttermilk and hot wing sauce together in a shallow pan. Add in chicken, coating well. Marinate in the refrigerator for 1 to 1-1/2 hours.

It’s been a down day. Woke up with an upset stomach and just haven’t felt up to par all day. Feel good or not had things around the house that had to get done. For breakfast just had a small bowl of Kashi 7-Grain Puffs Cereal and my morning Bigelow Decaf Green Tea. Mom had to be somewhere at 11:00 this morning so I finished up a load of laundry for her. Then dusted and vacuumed the house and swept up outside. After getting everything done I took a nap for the rest of the afternoon. For dinner tonight; Thai Chili Seasoned Baked Salmon w/ Sugar Snap Peas and Whole Grain Brown Rice.

While at Kroger the other day I came across an item I had never seen, Rebel Fish. It was in the Seafood Department and it’s a Salmon Fillet seasoned with a Thai Chili Rub. The rub has blend of sweet coconut milk, spicy chili and zesty lemongrass. Rebel Fish has 6 different Rubs, they only had the Thai in stock. So I grabbed a package to give it a try, and glad I did! You can prepare by the Microwave or by Oven, I opted to go with the oven prep.

To start preheat oven to 400°F. Cut away soft film from tray; remove salmon and place on a foil-lined baking sheet. Discarded the extra liquid in pouch. Shake the seasoning pouch to make sure contents flow freely and sprinkle over salmon. Using the back of a spoon press to adhere seasonings to fish. Bake for 12-15 minutes, until salmon is cooked through (internal temperature of 145°), and flakes easily. Very little mess to clean up, easy to prepare, and it’s delicious! Excellent seasoning, nice heat to it but not overpowering. I’ll have to keep this in stock.

For one side I prepared some Sugar Snap Peas. To prepare them I heated 1/2 tablespoon of Extra Olive Oil in a medium saute pan over medium-high heat. Added the Sugar Snap Peas, tossing occasionally for 5 to 6 minutes, until the Sugar Snap Peas were crisp tender. I also prepared some Uncle Ben’s Whole Grain Brown Ready Rice. Comes in a microwave ready pouch, just heat for 90 seconds and serve! For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Happy Memorial Day to all our Military Men currently serving and protecting our Country and to all the fallen heroes that lost their lives protecting our Country. It’s been a cloudy one here, hot and humid with rain on and off. Had a grilled Ham, Egg, and Cheese Sandwich to start my day off with. So not much going on, did a little house cleaning inside and outside and that was about it. For dinner tonight I prepared a Baked Atlantic Salmon Fillet w/ Roasted Asparagus and Whole Grain Brown Rice.

I picked the Atlantic Wild Caught Salmon up at Kroger yesterday, they had some beautiful fillets! To prepare it I rubbed it with a light coat of Extra Virgin Olive Oil and seasoned it with McCormick Grinder Sea Salt and Black Peppercorn and Dill. I preheated the oven on 400 degrees. Then got a small roasting pan and sprayed that with Pam Cooking Spray. Baked until it was fork tender, about 12 minutes. The Salmon was delicious! Very moist, fresh tasting, and seasoned just like I like it.

 

 

 

To go with the Salmon I prepared some Roasted Asparagus and Whole Grain Brown Rice. To prepare the Asparagus Roasted Asparagus 2I just needed Extra Virgin Olive Oil, Cloves Garlic (minced), Sea Salt, Freshly grated Black Peppercorn, Lemon Juice, and Shredded Parmesan Cheese. To prepare it; Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Then for another side I prepared some Uncle Ben’s Whole Grain Brown Ready Rice. Comes in a microwave ready pouch, just heat for 90 seconds and serve! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

A taste of Spring was in the air! It’s been a sunny day out with a high in the mid 50’s! Which is nice but you have to remember it’s only February and a whole lot of Winter left. Went to Meijer and Kroger early this morning for a few items. Came back home and took my Mom’s car up and had washed. Spent some time outside enjoying the Weather and then came back in and baked a pan of Philadelphia Marble Walnut Brownies! For dinner tonight I prepared a Blackened Grouper w/ Whole Grain Medley and Sugar Snap Peas.

I’ll be using the Gulf Coast Grouper that I in the freezer. It’s the last piece of the Fillets a friend of mine gave on their return from Florida. I put it in the fridge to thaw overnight. To prepare it I rinsed the fillets off in cold water and patting dry and cut it into smaller pieces. I melted a tablespoon of butter, Blue Bonnet Light Stick Butter. I then brushed both sides of the fillets with the Butter and seasoned them with Sea Salt and then with Zatarain’s Blackened Seasoning. I then I got out my favorite skillet, The Cast Iron Skillet. When the pan was fully heated, on medium heat, I added my Grouper. At this point turn on your Stove Overhead Exhaust Fan on, it will start smoking from the seasoning. Cooked it about 4 minutes per side, and it was ready for the table! Cast Iron Skillets are perfect to use for any cooking but especially when Blacken something. The Skillet heats up and holds it heat and the heat evenly distributes across the Skillet, perfect for Blackening Meats. This fish turned out so good, hard to describe! Moist and bursting with flavor. Just something about Gulf Seafood. The Zatarain’s Seasonings are perfect for any Seafood.

For one side I prepared some Uncle Ben’s Ready Whole Grain Medley. I love the Whole Grain Medley, It has Brown Rice,Red Rice, Wild Rice. It’s only 210 calories and 35 net carbs per serving. It comes in a microwave pouch, just heat for 90 seconds and it’s ready! I also heated up a bag of Walmart Marketside Sugar Snap Peas, just microwave in the steamable bag for 2 minutes and done! For dessert later, I baked a pan of Philadelphia Marble Brownies, I’ll have a Brownie Square. I’ll post the recipe for these on the next post.

Today’s Menu: Bush’s One Pot Chicken, Rice & Beans

 

One Pot Chicken, Rice, Beans, and Corn 005
A sunny but cold morning starting off on the first day of 2015, about 15 degrees with a wind chill. But the sunshine is beautiful today. I guess about 5 years or so I had a total hip replacement on my right hip and haven’t had much pain since. The last few days though I’m having pain again in the hip, hope it’s nothing serious. May have to get it checked out if it continues to get worse. No Eating Out tonight, back in the Kitchen! I prepared a new recipe, Bush’s One Pot Chicken, Rice & Beans.

 

 

 

Came across this recipe in the latest issue of EatingWell, it was ad page for Bush’s Bean’s.And it looked and sounded so good I had to give it a try! So at Kroger earlier I bought the Bush’s Beans, Uncle Ben’s White Ready Rice, some Fresh Cilantro, and a Kroger Simple Truth Rotisserie Chicken. Which are all the main ingredients for tonight’s meal. Kroger has had Roasted Whole Chickens for quite a while now, but recently some Krogers have been using the Simple Truth Whole Chickens. It’s like a night and day difference between the two, Simple Truth is the best Rotisserie Chicken I have ever had.

 

 

One Pot Chicken, Rice, Beans, and Corn 002

So to prepare this new dish I’ll need the following; 3 cups cooked white rice, 1 can (16 ounce) BUSH’S® Reduced Sodium Vegetarian Baked Beans, 1 can (15 ounce) BUSH’S® Reduced Sodium Black Beans, drained and rinsed, 8 ounce rotisserie chicken, cut into ¾-inch pieces (1½ cups), and 1 cup frozen corn, thawed. I used a can of Green Giant Steam Crisp Super Sweet Yellow and White Whole Kernel Corn instead of the Frozen Corn. Optional Topping include Frank’s Hot Sauce, Sargento Shredded Reduced-Fat Sharp Cheddar Cheese, Salsa, diced Avocado, Daisy Reduced Sour Cream, or Cilantro. With these ingredients you know why this just sounded delicious! To prepare it, it couldn’t be much easier! Place Rice, Beans, Chicken and Corn in large saucepan. Stir to combine. Heat over medium heat until warmed through, about 5 minutes. Stir frequently. Serve with optional toppings, and your done and you have one hearty and delicious Dish! We have another “Keeper Recipe”! All these ingredients combine so well, just fantastic flavor. Mom had prepared her and Dad something else for dinner, but they both started eating this Dish instead. For dessert later a Del Monte No Sugar Added Peach Chunk Bowl. Settling in for an evening of College Football Bowl Games.
