Today’s Menu: Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries

For Breakfast this morning I had my morning cup of Bigelow Decaf Green Tea. 36 degrees and partly cloudy outside today. After I had the Tea I headed to Meijer for a few items. Stopped by the Bank ATM and then by McDonald’s to pick up Breakfast for Mom. Back home did laundry and cleaned and straightened the Pantry. For Dinner tonight I prepared a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

I picked up a loaf the Goldminer California Sourdough Bread at Meijer. I love this Bread especially grilled! But don’t have too often because of the calories and carbs. To prepare the Sandwich I’ll need; Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French’s Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Goldminer California Sourdough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees, for the Fries.

While the griddle was heating I got the Sandwich ready to grill. Took a slice of the Sour Dough Bread and topped it with some of the Kraft Mayo, the Boar’s Head Ham, the Sargento Swiss, French’s Mustard, and added the top slice of the Sour Dough Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 3 minutes. Until both sides were golden brown! I love Grilled Sandwiches!

I also baked some Ore Ida Crinkle Cut Fries, served with a side of Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Stick Pretzels with a Diet Peach Snapple to drink.

Today’s Menu: Chili and Cheese Nachos

For Breakfast this morning I Scrambled a couple of Eggs and toasted a Thomas Light English Muffin. I also made a cup of Bigelow Decaf Green Tea. 42 degrees and partly cloudy outside today. After Breakfast Mom wanted me to drive her to Walmart, she needed a few things. Then we stopped at McDonald’s and picked up Breakfast for her. Back home got the cart, rake, and leaf blower out and raked the front and side yards and cleaned off the deck and driveway areas. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Mom loves these Chili and Cheese Nachos, as I do too! So Nachos it is tonight! To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!

To prepare I preheated the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. We love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Today’s Menu: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage

For Breakfast this morning I toasted a Thomas Light English Muffin that I topped with I Can’t Believe It’s Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. Partly cloudy and 53 degrees out today. After Breakfast I went to Kroger for a couple of items and stopped by McDonald’s and picked up Breakfast for Mom. Back home did a load of laundry and did a few things around the house. Later on I drove to the airport and picked up a friend of mine who was coming into town for a couple of weeks. For Dinner tonight Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage.

I love these Naan Bread Pizzas! These are so easy to fix and so delicious! I had a package of Stonefire Mini Naan Ancient Grain Bread in the freezer, laid it in the fridge overnight to thaw. For my toppings for the Pizza I’m using Hormel Turkey Pepperoni, Jennie – O Lean Turkey Sausage, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce. I love this Stonefire Mini Naan Ancient Grain Bread, it tastes so fresh and bakes up perfect!

I first Preheated the oven on 400 degrees. Next I grabbed a small skillet, sprayed it with Pam No Stick Cooking Spray, and heated it on medium heat. As the skillet was heating I opened up a roll of the Jennie – O Lean Turkey Sausage. I cut off a slice of it and crumbled up. Added it to the heated skillet and fried Sausage Crumbles. When they were browned and heated through removed them from the skillet into a small bowl until ready to use.

With the oven preheated I lined the Naan Bread to the baking sheet and baked it for 2 minutes. When the Bread cooled I added the toppings on top. I started with the Ragu Pizza Sauce. Next slices of Hormel Turkey Pepperoni. Then the Jennie – O Turkey Sausage Crumbles, next the Black and Green Sliced Olives, Lite House Dried Oregano, Oscar Mayer Bacon Bits, and finally the Sargento Shredded Mozzarella Cheese. Slid the baking sheet back into the oven to bake.

I baked the Naan Bread Pizzas for about 8 minutes, until the ingredients had heated through and Cheese melted. Pulled the baking sheet from the oven and let the Pizzas cool for 3 minutes. With the first bite you’ll knew the Naan Bread is the perfect Pizza Crust! The Crust has excellent taste and bakes up perfect. Then with all my toppings had some great Pizzas. Plus a lot fewer calories and carbs than normal Pizza Pies. I keep a couple of packs of the Stonefire Mini Naan Ancient Grain Bread and keep them in the freezer. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Mango/Tea Snapple to drink.

Today’s Menu: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage

For Breakfast this morning I toasted a Thomas Light English Muffin and topped it with a Smucker’s Sugar Free Blackberry Jam. Cloudy and 64 degrees out today. Moving slow today I think I’ve picked up a bit of the stomach virus going around. I had an upset stomach all last night and most of the day. So I rested and tried catching up on some sleep. For Dinner tonight Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage.

Today’s Menu: Meatball Pasta Bake w/ Baked Garlic Oval Loaf Bread

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, 3 slices of Glier’s Turkey Goetta, fried 1 medium Egg Sunny Side Up, and a cup of Bigelow Decaf Green Tea. Finally found the Glier’s Turkey Goetta on my last visit to Jungle Jim’s International Market. I love Goetta! Cloudy with rain showers late in the afternoon, high of 44 degrees. Went to Kroger for Mom after Breakfast. When I got to Kroger it was busy but the time I left it was packed. I’ll be glad when the Holidays are over and stores get back to normal. Gave Mom a hand in making Chocolate Fudge, Buckeyes, and Chex Mix. For Dinner tonight I prepared a Meatball Pasta Bake and Baked Garlic Loaf Bread.

To make this recipe I’ll be needing: Ronzoni Healthy Harvest Whole Grain Penne Rigate Pasta, LaRosa’s Sauce, Meijer Turkey Meatballs, LiteHouse Dried Oregano, Morton’s Lite Salt, Sargento Off the Block Mozzarella Cheese, Extra Light Olive Oil, and Kraft Reduced Fat Grated Parmesan Cheese.

I first turned the oven on to 425 degrees. To prepare it was easy! I used the Leftover Meijer Turkey Meatballs in the LaRosa’s Sauce. I put those in a sauce pan and reheated them on medium low, stirring often.

As the Meatballs and Sauce was heating I made my Pasta. I grabbed a large sauce pan and filled it 3/4 full of water, added the Salt to the water. Brought the water to a rapid boil. Added the Pasta and stirred; return to rapid boil. Cook uncovered for 8 minutes, stirring occasionally. I removed the Pasta just before it was done. It will finish in the oven without getting over cooked. Drain well.

I added the Pasta to casserole glass dish. Season again with the Salt and added the Oregano and a tablespoon of Extra Light Olive Oil. Stirred until well mixed. Next I added Meatballs and Sauce and stirred until the Pasta was well coated with the Sauce and the Meatballs mixed in.

Topped everything with the Mozzarella Cheese and Oregano. Popped it in the preheated oven. and baked for about 20 minutes. I really wanted all those flavors to marry together. Before removing from the oven I switched it on to the broiler and left it in the oven another 3 minutes to get the Cheese a little brown on top. Done and ready to serve!

Served it in a bowl, I topped it with a sprinkle of the Grated Parmesan Cheese. One delicious dish! By making extra Meatballs in Sauce I got 2 delicious meals out of it. I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish, especially Pasta Dishes! This made one excellent Dish. The Penne Rigate Pasta along with Turkey Meatballs, Sauce, and the Mozzarella Cheese all come together to make this dish so delicious! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Stick Pretzels with a Diet Mango/Tea Snapple.

Today’s Menu: Chili and Cheese Nachos

For Breakfast this morning I prepared some Simply Potatoes. As they were cooking I cooked up some Meijer Cubed Ham and I fried an Egg Sunny Side Up. Made a bed of the Hash Browns, sprinkled some Sargento Off the Block Sharp Cheddar Cheese. Then topped that with the Ham and then the Egg. One of favorite Breakfast Dishes! I also had a cup of Bigelow Decaf Green Tea. Wild weather outside! The morning started off at 50 degrees but heavy wind and rain. We have wind gusts of 40 mph today! So nothing going on outside today. Cleaned the house then cleaned the fridge. Later caught up on some shows I had recorded. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Mom had been wanting some Chili and Cheese Nachos, me too! So Nachos it is tonight! To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. Today’s Menu: Turkey and Black Bean Mini Street Tacos and Refried Beans

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced Ham, and had a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I went to Kroger up the road for a couple of items. Then stopped by a ATM and then picked up Breakfast at McDonald’s for Mom. Sunny and 73 degrees out, a perfect Autumn Day! Did some things around the house and then a little yard work. For Dinner tonight, Turkey and Black Bean Street Tacos and Refried Beans.

When making Turkey Tacos I always use my favorite, Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Mission Tacos together make one fine Taco!

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. These Tortilla are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

It’s Turkey Frank Cincinnati Style Cheese Coneys for Dinner tonight! I used Ball Park Smoked White Meat Turkey Franks, an excellent Turkey Frank! I boiled them, it took about 5 minutes and they were ready, plump, and delicious. We love our Cheese Coneys around here!

I heated the can of Skyline Chili with Beans for my topping. I normally just use the Chili with no Beans but I decided to have it with Beans for a change and really enjoy it! I may have to switch to the Chili with Beans, gave the Coneys even more flavor! I served everything on a Aunt Millie’s Reduced Calorie Hot Dog Buns. Put the Frank in the Bun then topped it with French’s Yellow Mustard, the Chili, and Sargento Reduced Fat Sharp Cheddar Shredded Cheese. Had a small side of some Skyline Oyster Crackers with a few drops of Frank’s Hot Sauce on them, which is a common way to have them here in the Cincinnati area. We love our Chili, Chili Dogs, Chili Spaghetti, and Hot Sauce here in the Cincinnati area. For Dessert/Snack later I had a bowl of Skinny Pop – Pop Corn with a Sprite Zero to drink.

Today’s Menu: Turkey Frank Cincinnati Style Cheese Coneys

For Breakfast I toasted a Thomas Light Multi Grain English Muffin topped the haves with I Can’t Believe It’s Not Butter. Next I Scrambled a couple of Eggs and then also made a cup of Bigelow Decaf Green Tea. Partly cloudy, 84 degrees, and humid out today. After Breakfast I went to McDonald’s and picked up Breakfast for Mom. Got the cart out today and did some yard work. Swept out the shed and raked leaves. So many leaves this year. Happy Labor Day to everyone! For Dinner tonight I prepared Turkey Frank Cincinnati Style Cheese Coneys.

Today’s Menu: Turkey and Black Bean Mini Street Tacos and Refried Beans

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Another day of 95 degrees and humid weather outdoors today. 81 degrees and sunny, low humidity and a pollen alert out for our area. I have to wear a surgical mask if the pollen count gets real high if I’m outside. Here the last few years my allergies have gotten worse. After Breakfast I went to McDonald’s to pick up Breakfast for Mom. All caught up on everything I loafed all day, and it felt great! For Dinner tonight, Turkey and Black Bean Street Tacos and Refried Beans.

When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast!

I usually use the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn) when making Tacos but tonight I’m using Mission – Street Tacos Flour Tortillas. First time using these and not the last! These are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert later a Dole Diced Peaches Cup.
