Today’s Menu: Turkey and Black Bean Mini Street Tacos and Refried Beans

 

 

 

For Breakfast I had a cup of Bigelow Decaf Green Tea. I had to be at the Optometrist for my yearly checkup. Afterward I stopped by McDonald’s and picked up Breakfast for Mom. I’m not sure what’s wrong, just not feeling up to par. Did a few things outside and then rested the rest of the afternoon. For Dinner tonight I prepared Turkey and Black Bean Mini Street Tacos and Refried Beans.

 

When making my Turkey Tacos I always use my favorite, Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie –O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have a good selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Mission Tacos together make one fine Taco!

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. These Tortilla are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Chili and Cheese Nachos

 

 

For Breakfast this morning I made a 2 Egg Cheese Omelet and had a cup of Bigelow Decaf Green Tea. 87 degrees and sunny outside today. After Breakfast did a couple of loads of laundry. Then on outside to get some yard work done. Got my cart out of the shed and finished raking the back yard. Then sprayed for weeds around the house and deck. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

 

I didn’t have much of an appetite tonight and Mom didn’t want anything heavy. So Mom loves Chili and Cheese Nachos, as I do! So Nachos it is tonight! To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! I especially love the Jalapenos, nice mild heat!

To prepare I preheated the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. We love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert later a Diet Peach Snapple to drink. Take care and Stay safe all!

Stove top: empty chili into saucepan. Stir occasionally while heating over medium heat, about 5 minutes or until hot. Microwave: empty chili into microwaveable bowl; cover loosely. Today’s Menu: Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers

 

 

For Breakfast it was a cup of Bigelow Decaf Green Tea. 91 degrees and mostly sunny out today. After I had my Tea I went to Meijer, I needed a new water hose nozzle and I purchased a couple large potting pots and grass seed. Got a few things done outside before the heat kicked in. Back inside the rest of the day. For Dinner tonight I prepared a package of Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers.

 

It’s one of those days where I wanted something easy to prepare. So why not some Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers. Nothing says comfort food more than a Skyline 3 Way! As always I used my favorite, the Skyline 3 Way – Chili, Spaghetti. It comes packaged for the microwave, a bit smaller size than what you get at a Skyline but just right for those that want a few lower calories and carbs than the normal size. It comes with Spaghetti topped with Skyline Chili. To prepare it, it couldn’t be easier!

 

It comes in a microwavable pouch. Easily prepared – Just shake the pouch. Then tear the corner off to vent while cooking. Place the pouch standing upright in the microwave. Then microwave on high for 2 1/2 minutes. Let stand for 1 minute and it’s ready! And I needed this. I had not had this in a while and as always it really hit the spot!

Poured the Chili/Spaghetti into a bowl, added a couple of shakes of Frank’s Hot Sauce, topped it with Sargento Reduced Fat Shredded Sharp Cheddar Cheese. I also had a side of Skyline Oyster Crackers. And if you’re having Oyster Crackers, then Frank’s Red Hot Sauce is a must! Just add a few drops on top of the Crackers, it’s the local way to have your Oyster Crackers. For Dessert/Snack later a 100 Calorie Mini Bag of Hanover Stick Pretzels with a Diet Peach Snapple to drink.

Today’s Menu: Turkey Frank Cincinnati Style Cheese Coneys

 

 

For Breakfast I toasted a Thomas Lite English Muffin, topped it with a Poached Egg. Also had a cup of Bigelow Decaf Green Tea. 80 degrees, humid, and rain on and off. Well my allergies got the best of me, sneezing and a headache most of the day. There’s a high pollen count out there today! Plus they cut weeds behind us near the tree line. For Dinner tonight I prepared Turkey Frank Cincinnati Style Cheese Coneys.

 

We love our Cheese Coneys around here! Living here all my life here in Cincinnati you are raised on Cheese Coneys and Chili! I used Ball Park Smoked White Meat Turkey Franks, an excellent Turkey Frank! I boiled them, it took about 5 minutes and they were ready, plump, and delicious. Plus they are lower in calories and carbs than most other Hot Dogs, 45 calories and 5 carbs!

 

I heated a can of Skyline Chili with Beans for my topping. We prefer the Chili with Beans over the Chili with no Beans. It just gives the Coneys even more flavor with the added Beans! I served everything on a Aunt Millie’s Reduced Calorie Hot Dog Buns. Put the Frank in the Bun then topped it with French’s Yellow Mustard, the Chili, and Sargento Reduced Fat Sharp Cheddar Shredded Cheese. Had a small side of some Skyline Oyster Crackers with a few drops of Frank’s Hot Sauce on them, which is a common way to have them here in the Cincinnati area. We love our Chili, Chili Dogs, Chili Spaghetti, and Hot Sauce here in the Cincinnati area. For Dessert later a Mini Vanilla Ice Cream Sandwich.

For Breakfast I had a cup of Bigelow Decaf Green Tea. Rain and more rain out again, a high of 64 degrees. We had just over an inch of rain yesterday and another 1 1/2 inch today. There’s a lot local flooding all through our area. There are having to evacuate businesses here in West Chester, bringing people out by boat. I’ve never seen it rain so hard for so long! It was raining so hard this morning for about 5 hours that you could hardly see the other side of the street. So more things are being opened up again here in Ohio. They are asking no matter where we go to always be wearing a mask. Also for seniors to remain indoors for a bit longer. We sure hope it gets back to normal very soon! For Dinner tonight I prepared Turkey Frank Cincinnati Style Cheese Coneys.

Today’s Menu: Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers

 

 

 

For Breakfast it was Skillet Diced Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a an Egg Sunny Side Up and sprinkle of Sargento Reduced Fat Cheddar/Jack Cheese. I also had a cup of Bigelow Decaf Green Tea. Good Breakfast! Cloudy, light rain showers, and 82 degrees outside today. It sure would be nice to have 3 or 4 days of sunshine and in the 70’s! But the upcoming week is supposed to be below normal temperatures. We have had a very high Pollen count in this area and my head feels like it! So not too active today, dealing with a bad headache. For Dinner tonight I prepared a package of Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers.

Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries

Today’s Menu: Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries

 

 

 

For Breakfast this morning I had my morning cup of Bigelow Decaf Green Tea. 53 degrees and mostly cloudy outside today. Did a load of laundry after my Tea. Later on I took my car up and had it washed and vacuumed it out. Then stopped by the ATM and then stopped at the gas station and filled the car up with gas. Not a lot going on today. For Dinner tonight I prepared a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

 

I picked up a loaf the Goldminer California Sourdough Bread at Kroger the other day. I love this Bread especially grilled! But don’t have too often because of the calories and carbs. To prepare the Sandwich I’ll need; Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French’s Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Goldminer California Sourdough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees, for the Fries.

 

While the griddle was heating I got the Sandwich ready to grill. Took a slice of the Sour Dough Bread and topped it with some of the Kraft Mayo, the Boar’s Head Ham, the Sargento Swiss, French’s Mustard, and added the top slice of the Sour Dough Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 3 minutes. Until both sides were golden brown! I love Grilled Sandwiches!

 

I also baked some Ore Ida Crinkle Cut Fries, served with a side of Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Stick Pretzels with a Sprite Zero to drink.

Today’s Menu: 3 Bean Turkey Chili w/ Cheese and Tortilla Rounds

 

 

To start my day off I toasted Thomas Light English Muffin and topped it with Smucker’s Sugar Free Black Raspberry Jam. I also had a cup of Bigelow Decaf Green Tea. Beautiful Spring Day out there, sunny and 65 degrees out! But once again we have a beautiful day today with 2 days of rain moving in tonight. Lot of rain this year. So I got a few things done here in the house and after Lunch I got the Cart, rake, weed spray, and leaf blower all out of the shed. Did some yard work and enjoyed that sunshine! I helped one of my neighbors, he was clearing some space to get his garden out. It’s been a good day! For Dinner tonight I prepared some 3 Bean Turkey Chili w/ Cheese and Tortilla Rounds.

 

I had made some of my Crock Pot 3 Bean Turkey Chili over the weekend. We had it for Dinner Saturday and I froze one container. I kept out enough for Dinner tonight. So it’s an easy dish to make tonight. I’ll need to heat up the leftover 3 Bean Turkey Chili, Frank’s Hot Sauce, Daisy Reduced Fat Sour Cream, Sargento Off the Block Sharp Cheddar Cheese, and Mission Tortilla Rounds. When making my Chili I use a Crock Pot and let it simmer all day! To make it I use; 2 – 1 lb. packages of Jennie – O Ground Turkey Breast, many Spices, 1 Packet McCormick Chili Mix, and Frank’s Hot Sauce. To reheat; I just added the Chili to a sauce pan and heated it on low, stirring often until heated through. Set aside until needed.

 

I’m serving the Chili with some Frank’s Hot Sauce, Daisy Reduced Fat Sour Cream, and Sargento Off the Block Sharp Cheddar Cheese. For the Tortilla Chips I’m using Mission Tortilla Rounds.

 

 

 

To make it I got a bowl and made a bed of the Tortilla Rounds. Topped with some of the Chili, Hot Sauce, and Cheese. I had the Sour Cream on the side of the Bowl. Fantastic Light Meal. The Mission Tortilla Rounds are excellent Chips! I love using the 3 Bean Chili as many ways as I can, its so delicious! So for Dessert later tonight I’m having a Jello Sugar Free Dark Chocolate Pudding topped with Reddi Wip Light Topping.

 

 

 

 

 

 

 

3 Bean Turkey Chili

Ingredients
1 lb. package Jennie – O Extra Lean Ground Turkey Breast
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1/2 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
1/2 Tsp Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
2 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.

Today’s Menu: Leftover Turkey and Black Bean Mini Street Tacos and Refried Beans

 

For Breakfast this morning I had my morning cup of Bigelow Decaf Green Tea. 61 degrees and partly cloudy out today, still windy though! Had to move the cars out of the driveway and all outdoor furniture off the deck this morning. We are having our house sprayed down and cleaned. We get it done once a year in early Spring. They also spray down and scrub the driveway and shed. We might as well get everything in shape while we are in isolation! For Dinner tonight, Leftover Turkey and Black Bean Street Tacos and Refried Beans. I reheated some of items for this and cooked the remaining Ground Turkey. I left the original post from the other day below for instructions and description of the recipe. Take Care All!

 

When making Turkey Tacos I always use my favorite, Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have a good selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Mission Tacos together make one fine Taco!

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. These Tortilla are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Sprite Zero to drink.

Today’s Menu: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage

 

 

For Breakfast to start this morning off I prepared Sausage links and Scrambled Eggs. I fried up a couple of Jennie – O Turkey Breakfast Sausage Links. Next I Scrambled a couple of eggs, topped them with a sprinkle of Sargento Off the Block Cheddar Cheese and Ortega Smoky Chipotle Taco Sauce. I love the Ortega Sauce, it gives food such excellent flavor. Also had my morning cup of Bigelow Decaf Green Tea. A whole lot cooler out today! It was 31 degrees this morning and a high of 46 degrees, it was a record high of 84 degrees 2 days ago! This Ohio weather is something! Still windy out there! I got the cart, rake, and leaf blower out and did some storm cleanup from the bad storm the other night. Lot of Tree Limbs and branches, leaves, and trash all over. I got my yard and helped 3 of my neighbors out cleaning theirs. I’m so glad I’ve got the 4 wheel mobility cart so I can do things like this! For Dinner tonight Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage.

We love these Naan Bread Pizzas so much! These are so easy to fix and so delicious! I had a package of Stonefire Mini Naan Ancient Grain Bread in the freezer, laid it in the fridge overnight to thaw. For my toppings for the Pizza I’m using Hormel Turkey Pepperoni, Jennie – O Lean Turkey Sausage, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce. I love this Stonefire Mini Naan Ancient Grain Bread, it tastes so fresh and bakes up perfect!

 

 

I first Preheated the oven on 400 degrees. Next I grabbed a small skillet, sprayed it with Pam No Stick Cooking Spray, and heated it on medium heat. As the skillet was heating I opened up a roll of the Jennie – O Lean Turkey Sausage. I cut off a slice of it and crumbled up. Added it to the heated skillet and fried Sausage Crumbles. When they were browned and heated through removed them from the skillet into a small bowl until ready to use.

 

With the oven preheated I lined the Naan Bread to the baking sheet and baked it for 2 minutes. When the Bread cooled I added the toppings on top. I started with the Ragu Pizza Sauce. Next slices of Hormel Turkey Pepperoni. Then the Jennie – O Turkey Sausage Crumbles, next the Black and Green Sliced Olives, Lite House Dried Oregano, Oscar Mayer Bacon Bits, and finally the Sargento Shredded Mozzarella Cheese. Slid the baking sheet back into the oven to bake.

 

I baked the Naan Bread Pizzas for about 8 minutes, until the ingredients had heated through and Cheese melted. Pulled the baking sheet from the oven and let the Pizzas cool for 3 minutes. With the first bite you’ll knew the Naan Bread is the perfect Pizza Crust! The Crust has excellent taste and bakes up perfect. Then with all my toppings had some great Pizzas. Plus a lot fewer calories and carbs than normal Pizza Pies. I keep a couple of packs of the Stonefire Mini Naan Ancient Grain Bread and keep them in the freezer. For Dessert later a Sugar Free Dark Cherry Jello.
