Today’s Menu: Turkey Frank Cincinnati Style Cheese Coneys

 

 

For Breakfast I toasted a Healthy Life Multi Grain English Muffin, topped it with some Smucker’s Sugar Free Blackberry Jam, and had a cup of Bigelow Decaf Green Tea. After I ate I went to McDonald’s and picked up Breakfast for Mom. Mom went on to Church afterward. I did a load of laundry and cleaned the house. Then watched NFL Football for the rest of the afternoon. For Dinner tonight I prepared Turkey Frank Cincinnati Style Cheese Coneys.

 

 

 

We love our Cheese Coneys around here! Living here all my life here in the Cincinnati area you are raised on Cheese Coneys. I used Ball Park Smoked White Meat Turkey Franks, an excellent Turkey Frank! I boiled them, it took about 5 minutes and they were ready, plump, and delicious.

 

 

 

 

I heated the can of Skyline Chili with Beans for my topping. I normally just use the Chili with no Beans but I decided to have it with Beans for a change. I may have to switch to the Chili with Beans, gave the Coneys even more flavor! I served everything on a Aunt Millie’s Reduced Calorie Hot Dog Buns. Put the Frank in the Bun then topped it with French’s Yellow Mustard, the Chili, and Sargento Reduced Fat Sharp Cheddar Shredded Cheese. Had a small side of some Skyline Oyster Crackers with a few drops of Frank’s Hot Sauce on them, which is a common way to have them here in the Cincinnati area. We love our Chili, Chili Dogs, Chili Spaghetti, and Hot Sauce here in the Cincinnati area. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Today’s Menu: Chili and Cheese Nachos

 

 


To start my day off I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Also a cup of Bigelow Decaf Green Tea. A bit cooler out, 80 degrees with rain showers. Bad day with my allergies today, bad headache. So I didn’t do a whole lot today. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

 

We love Chili and Cheese Nachos around here! To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!

 

 

To prepare I preheated the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert later some Honey Crisp Apple Slices.

Today’s Menu: Turkey Tacos and Refried Beans

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. I headed out this morning to Jungle Jim’s International Market. They finally got some 1/2 Runner Green Beans in. We bought enough to can 14 jars! The Beans were some of the fullest and biggest Green Beans we had found in quite some time. So back home I gave Mom a hand in getting the first 7 quarts ready and made. We’ll do the rest tomorrow. Mom loves Beets, I can’t stand them, so she’s going back to Jungle Jim’s tomorrow to get Beets to can. My leg seems to be doing better it’s not as red and the spot is somewhat smaller. Hopefully it’s just an infection. For Dinner tonight it’s Turkey Tacos.

 

Making it an official Taco Tuesday here at the house! We love our Turkey Tacos, great Comfort food for us! When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Old El Paso together make one fine Taco!

 

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Chili and Cheese Nachos

 

 

For Breakfast this morning I toasted a Thomas Light 100 Calorie Multi Grain English Muffin and topped it with a Poached Egg. And of course I had my morning cup of Bigelow Decaf Green Tea. Allergies and Sinuses still haven’t let up, really suffering this year! Sunny, humid and 88 degrees outside today. After Breakfast I went to Meijer, needed Bread and Buns. Stopped by the ATM and then by McDonald’s to pick up Breakfast for Mom. Back home got the leaf blower out and cleaned off the deck and driveway areas. Done for the day after that. Allergies kicking in! For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Today’s Menu: Baked Sliders – Ham and Swiss, Pulled Pork BBQ and Colby w/ Baked Fries

 

 

For Breakfast this morning I prepared a Breakfast Sandwich. I toasted a Thomas Light 100 Calorie Multi Grain English Muffin. Then I lightly fried some slices of Boar’s Head Sweet Slice Ham, Scrambled some Egg Beater’s Egg Whites, and topped it all with a 1/2 slice of Boar’s Head Longhorn Colby Cheese. Also had my morning cup of Bigelow Decaf Green Tea. Another day of thunderstorms, humid, and 84 degrees outside. Really battling my allergies and sinuses the last few days so I didn’t do a lot today. Sure hope this lets up soon! For Dinner tonight I prepared Baked Sliders – Ham and Swiss, Pulled Pork BBQ and Colby w/ Baked Fries.

 

For Dinner; Baked Ham and Swiss Sliders and Pulled Pork BBQ and Cheddar Sliders. To make them I’ll need Kroger Whole Wheat Slider Buns. These are only 70 calories and 13 carbs. I also used Boar’s Head Sweet Sliced Ham, Sargento Swiss Cheese, Montgomery Inn Pulled Pork BBQ, Boar’s Head Colby Longhorn Cheese. Then for the Topping Sauce I’ll need; Blue Bonnet Light Butter – 4 Tbsp (original recipe called for 8), 2 tsp. Dried Onion Powder, 1 1/2 tsp. Worcestershire Sauce, 1 1/2 tsp. Ken’s Light Poppyseed Dressing, and 1/2 tsp. French’s Yellow Mustard.

 

 

 

 

To start I heated up the Montgomery Inn Pulled Pork BBQ. Just got a small sauce pan and sprayed it with Pam Non Stick Cooking Spray. Added the Pork and heated it on low until it was time to use it.

 

 

 

 

Next I made my Bun Topping Sauce. I grabbed a medium size bowl to mix my ingredients in. I then mixed the Butter, Onion Powder, Worchestershire Sauce, Ken’s Light Poppyseed Dressing, and French’s Yellow Mustard together. Stirred until well mixed and sit it aside until ready to use it.

 

 

 

 

Then to prepare the Sliders; preheat your oven to 350 degrees. Then I got an 11 x 14 baking pan that I lined with foil and sprayed with Pam Non-Stick Cooking Spray. I placed the bottom half of the Slider Buns in the bottom of the baking pan. Next I placed the Sweet Sliced Ham on top of each Bun. You can put as much of the Ham you want on each. I then placed a 1/2 a slice of either the Swiss on top of the Ham. Next I added a 1/2 slice of the Longhorn Cheese to the remaining Buns and topped it with the Pork BBQ. Then added the the top 1/2 of each bun to each Slider. Then topped all the Sliders with Topping Sauce Mixture. Covered the baking pan with foil and baked at 350 degrees for 15 minutes. Removed the foil and baked an additional 15 minutes to allow the rolls to crisp. Remove from oven to cool and serve.

 

These Baked Ham Sliders are incredible! The Ham, Cheese, Buns are all great but the Topping Sauce makes the Dish. The Sauce gives it such great flavor, love these Sliders! And the BBQ Pulled Pork and Longhorn Cheese were mouth watering! Again that Topping Sauce makes the Slider!

 

 

 

 


As the Sliders cooled I turned the oven up to 425 degrees and baked my Fries. I used Ore Ida Crinkle Cut Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. Baked Ham Sliders or the Pulled Pork BBQ Sliders and Fries make one delicious meal! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Directions

Replace film and heat for an additional 1-2 minutes or until hot! 5. Remove from oven and stir well before serving. Stove Top: 1. Place desired amount of barbecue in a medium size sauce pan. 2. Heat over medium low heat 6-12 minutes (covered) and occasionally stir so as not to burn. 3. Remove product from stove and serve. We highly recommend cooking our barbecue from a thawed state. Remove any uncooked barbecue from original packaging and place in a sealable container and refrigerate.

Today’s Menu; Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries

 

 

 

Just a cup of Bigelow Decaf Green Tea to start the day off. I spent a long and sleepless night last night. Had a painful bout with Phantom Pains. Although I’m a left leg amputee, these Phantom Pains are very real. I can tell you what part of my leg or foot is being affected. It’s a condition that affects many of amputee patients. I just wish the Medical World would come up with something to stop or ease the pains. The pains started about 10:00 last night and didn’t end until around Noon today. So with no rest or sleep last night I spent most of the day resting and catching up on some sleep. For Dinner tonight its a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

 

 

To prepare the Sandwiches I’ll need; Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French’s Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Goldminer California Sourdough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees, for the Fries.

 

 

 

While the griddle was heating I got the Sandwich ready to grill. Took a slice of the Sour Dough Bread and topped it with some of the Kraft Mayo, the Boar’s Head Ham, the Sargento Swiss, French’s Mustard, and added the top slice of the Sour Dough Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! I love Grilled Sandwiches!

 

 

I had already preheated the oven, so as the Sandwich was finishing cooking I baked my Fries, I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Today’s Menu: Chili and Cheese Nachos

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I went to Meijer for a couple of items and then picked up Breakfast for Mom. Outside 79 degrees with rain showers early then clearing up for the day. After Lunch I got the cart out and sprayed for weeds around the house and shed. Everything done, I kicked back and took a short nap. I’m not sure what’s wrong, just feeling bad. Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

 

 


We love Chili and Cheese Nachos around here! To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!

 

To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert later a bowl of Skinny Pop – Pop Corn and an Ice Water to drink.

Directions:
Stove top: empty chili into saucepan. Stir occasionally while heating over medium heat, about 5 minutes or until hot. Microwave: empty chili into microwaveable bowl; cover loosely. Heat for 2 To 3 minutes or until hot, stirring once. Careful. Let chili stand in microwave 1 minute and stir before serving. All microwaves And stoves vary. Times given are approximate.

Today’s Menu: Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers

 

 

To start my day off I Scrambled a couple of Eggs, topped it with Sargento Reduced Fat Shredded Sharp Cheddar Cheese, toasted a Healthy Life Whole Grain English Muffin, and had my morning cup of Decaf Green Tea. Beautiful outside, sunny and 801 degrees but very windy. Long day today. I had to take Mom to 3 different places to get needed paper work for my Dad’s Medicaid started. It’s a lot of work to get it approved. Then about 1:00 this afternoon the center where Dad is at called and asked if we could come over. He was yelling and ranting out of control. We finally got him settled down. Really didn’t feel like cooking after all that so I prepared some Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers.

 

I wanted a hot good meal without a lot of effort, plus I’m always in the mood for some Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers. Nothing says comfort food more than a Skyline 3 Way! As always I used my favorite, the Skyline 3 Way – Chili, Spaghetti. It comes packaged for the microwave, a bit smaller size than what you get at a Skyline but just right for those still watching calories and carbs. It comes with Spaghetti topped with Skyline Chili. To prepare it, it couldn’t be easier!

 

 

It now comes in a microwavable pouch instead of microwavable bowl. Easily prepared – Just shake the pouch. Then tear the corner off to vent while cooking. Place the pouch standing upright in the microwave. Then microwave on high for 2 1/2 minutes. Let stand for 1 minute and it’s ready!

 

 

 

 

Poured the Chili into a bowl, added a couple of shakes of Fran’s Hot Sauce, topped it with Sargento Reduced Fa Shredded Sharp Cheddar Cheese. I also had a side of Skyline Oyster Crackers. And if you’re having Oyster Crackers, then Frank’s Red Hot Sauce is a must! Just add a few drops on top of the Crackers, it’s the local way to have your Oyster Crackers. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Turkey Frank Cincinnati Style Cheese Coneys

 

 

For Breakfast I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, Scrambled a couple of Eggs, heated up a couple of Johnsonville Turkey Breakfast sausage Links, and made my morning cup of Bigelow Decaf Green Tea. Mostly sunny and 49 degrees today. So the few inches of snow we got yesterday is quickly melting. Hospice came at 11:00 today and took Dad over to a rehab center here in West Chester for 5 days. Hospice suggested we do this so as to give us a bit of break. We are currently looking for a center for Dad too stay in. His Dementia and overall health has become so bad we can no longer keep him here. It breaks are heart but it’s for the best. For Dinner tonight I prepared Turkey Frank Cincinnati Style Cheese Coneys.

 


I wasn’t in the mood to put a lot of effort in to cooking a big meal. Mom said Cheese Coneys sounded good so that’s what I prepared for us. I love my Cheese Coneys! Living here all my life here in the Cincinnati area you are raised on Cheese Coneys, Chili Spaghetti, and such. From all the classic Chili Parlors; Skyline Chili, Gold Star Chili, Camp Washington Chili, just to name a few. But having Diabetes 2 I have to watch my carbs and calories so I make mine a little healthier but keeping the incredible flavors.

 

I used Ball Park Smoked White Meat Turkey Franks, an excellent Turkey Frank! I boiled them, it took about 5 minutes and they were ready, plump, and delicious. I heated the can of Skyline Chili for my topping. I served everything on a Aunt Millie’s Reduced Calorie Hot Dog Buns. Put the Frank in the Bun then topped it with French’s Yellow Mustard, the Chili, and Sargento Reduced Fat Sharp Cheddar Shredded Cheese. Had a small side of some Skyline Oyster Crackers with a few drops of Frank’s Hot Sauce on them, which is a common way to have them here in the Cincinnati area. We love our Chili, Chili Dogs, Chili Spaghetti, and Hot Sauce here in the Cincinnati area. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu; Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries

 

 

To start the morning of I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. After Breakfast I had to go to Kroger to pick for a couple of items for Mom. Then stopped by McDonald’s and picked up Breakfast for Mom and Dad.For Dinner tonight I prepared a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries. We ended up with about 2 or 3 inches of snow. But most of it already melted, 44 degrees for a high today! Hospice is going to help us with Dad from here on out. So we’ll be looking for an assisted living center with their help. Sure hate that we have to do it but it’s for his safety also as has fallen 5 times the last month. So it’s for the best. For Dinner tonight its a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

 

To prepare the Sandwiches I’ll need; Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French’s Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Goldminer California Sourdough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees, for the Fries.

 

 

 


While the griddle was heating I got the Sandwich ready to grill. Took a slice of the Sour Dough Bread and topped it with some of the Kraft Mayo, the Boar’s Head Ham, the Sargento Swiss, French’s Mustard, and added the top slice of the Sour Dough Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! I love Grilled Sandwiches!

 

 

 


I had already preheated the oven, so as the Sandwich was finishing cooking I baked my Fries, I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling meal. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.
