Today’s Menu: Chili and Cheese Nachos

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I went to Meijer for a couple of items and then picked up Breakfast for Mom. Outside 79 degrees with rain showers early then clearing up for the day. After Lunch I got the cart out and sprayed for weeds around the house and shed. Everything done, I kicked back and took a short nap. I’m not sure what’s wrong, just feeling bad. Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

 

 


We love Chili and Cheese Nachos around here! To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!

 

To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert later a bowl of Skinny Pop – Pop Corn and an Ice Water to drink.

Directions:
Stove top: empty chili into saucepan. Stir occasionally while heating over medium heat, about 5 minutes or until hot. Microwave: empty chili into microwaveable bowl; cover loosely. Heat for 2 To 3 minutes or until hot, stirring once. Careful. Let chili stand in microwave 1 minute and stir before serving. All microwaves And stoves vary. Times given are approximate.

Today’s Menu: Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers

 

 

To start my day off I Scrambled a couple of Eggs, topped it with Sargento Reduced Fat Shredded Sharp Cheddar Cheese, toasted a Healthy Life Whole Grain English Muffin, and had my morning cup of Decaf Green Tea. Beautiful outside, sunny and 801 degrees but very windy. Long day today. I had to take Mom to 3 different places to get needed paper work for my Dad’s Medicaid started. It’s a lot of work to get it approved. Then about 1:00 this afternoon the center where Dad is at called and asked if we could come over. He was yelling and ranting out of control. We finally got him settled down. Really didn’t feel like cooking after all that so I prepared some Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers.

 

I wanted a hot good meal without a lot of effort, plus I’m always in the mood for some Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers. Nothing says comfort food more than a Skyline 3 Way! As always I used my favorite, the Skyline 3 Way – Chili, Spaghetti. It comes packaged for the microwave, a bit smaller size than what you get at a Skyline but just right for those still watching calories and carbs. It comes with Spaghetti topped with Skyline Chili. To prepare it, it couldn’t be easier!

 

 

It now comes in a microwavable pouch instead of microwavable bowl. Easily prepared – Just shake the pouch. Then tear the corner off to vent while cooking. Place the pouch standing upright in the microwave. Then microwave on high for 2 1/2 minutes. Let stand for 1 minute and it’s ready!

 

 

 

 

Poured the Chili into a bowl, added a couple of shakes of Fran’s Hot Sauce, topped it with Sargento Reduced Fa Shredded Sharp Cheddar Cheese. I also had a side of Skyline Oyster Crackers. And if you’re having Oyster Crackers, then Frank’s Red Hot Sauce is a must! Just add a few drops on top of the Crackers, it’s the local way to have your Oyster Crackers. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Turkey Frank Cincinnati Style Cheese Coneys

 

 

For Breakfast I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, Scrambled a couple of Eggs, heated up a couple of Johnsonville Turkey Breakfast sausage Links, and made my morning cup of Bigelow Decaf Green Tea. Mostly sunny and 49 degrees today. So the few inches of snow we got yesterday is quickly melting. Hospice came at 11:00 today and took Dad over to a rehab center here in West Chester for 5 days. Hospice suggested we do this so as to give us a bit of break. We are currently looking for a center for Dad too stay in. His Dementia and overall health has become so bad we can no longer keep him here. It breaks are heart but it’s for the best. For Dinner tonight I prepared Turkey Frank Cincinnati Style Cheese Coneys.

 


I wasn’t in the mood to put a lot of effort in to cooking a big meal. Mom said Cheese Coneys sounded good so that’s what I prepared for us. I love my Cheese Coneys! Living here all my life here in the Cincinnati area you are raised on Cheese Coneys, Chili Spaghetti, and such. From all the classic Chili Parlors; Skyline Chili, Gold Star Chili, Camp Washington Chili, just to name a few. But having Diabetes 2 I have to watch my carbs and calories so I make mine a little healthier but keeping the incredible flavors.

 

I used Ball Park Smoked White Meat Turkey Franks, an excellent Turkey Frank! I boiled them, it took about 5 minutes and they were ready, plump, and delicious. I heated the can of Skyline Chili for my topping. I served everything on a Aunt Millie’s Reduced Calorie Hot Dog Buns. Put the Frank in the Bun then topped it with French’s Yellow Mustard, the Chili, and Sargento Reduced Fat Sharp Cheddar Shredded Cheese. Had a small side of some Skyline Oyster Crackers with a few drops of Frank’s Hot Sauce on them, which is a common way to have them here in the Cincinnati area. We love our Chili, Chili Dogs, Chili Spaghetti, and Hot Sauce here in the Cincinnati area. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu; Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries

 

 

To start the morning of I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. After Breakfast I had to go to Kroger to pick for a couple of items for Mom. Then stopped by McDonald’s and picked up Breakfast for Mom and Dad.For Dinner tonight I prepared a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries. We ended up with about 2 or 3 inches of snow. But most of it already melted, 44 degrees for a high today! Hospice is going to help us with Dad from here on out. So we’ll be looking for an assisted living center with their help. Sure hate that we have to do it but it’s for his safety also as has fallen 5 times the last month. So it’s for the best. For Dinner tonight its a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

 

To prepare the Sandwiches I’ll need; Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French’s Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Goldminer California Sourdough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees, for the Fries.

 

 

 


While the griddle was heating I got the Sandwich ready to grill. Took a slice of the Sour Dough Bread and topped it with some of the Kraft Mayo, the Boar’s Head Ham, the Sargento Swiss, French’s Mustard, and added the top slice of the Sour Dough Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! I love Grilled Sandwiches!

 

 

 


I had already preheated the oven, so as the Sandwich was finishing cooking I baked my Fries, I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling meal. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

We have a high of 41 degrees and cloudy out today. I drove Mom and Dad to the Doctor’s, Dad had a check-up. He’s to the point where we can barely get him in and out of the car. All we can do is try to keep him comfortable here at home. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

A lot of rain overnight and into the morning. I had a long night again with dealing with some very bad phantom Pains. Didn’t get a lot sleep so with the dreary day outside I caught up on some sleep. For Dinner tonight I prepared Turkey Frank Cincinnati Style Cheese Coneys.

 

 

I love my Cheese Coneys! Living here all my life here in the Cincinnati area you are raised on Cheese Coneys, Chili Spaghetti, and such. Today’s Menu: Baked Ham and Swiss Sub w/ Baked Fries

 

 

For Breakfast I made my Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cooked the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Fried Egg Sunnyside Up. And Breakfast is served! Had my morning cup of Bigelow Decaf Green Tea. A little better day out there than yesterday, high of 32 degrees and partly sunny. After Lunch I headed up to a local rehab center to see a friend of mine’s father. He had lost part of his foot to Diabetes and was having a rough time. It was good seeing everyone, just under better circumstances next time! For Dinner tonight, a Baked Ham and Swiss Sub w/ Baked Fries

 

For my Sub I’ll need; Aunt Millie’s Deli Style Whole Grain Mini Sub Buns, Boar’s Head Sweet Sliced Ham, al fresco Uncured Chicken Bacon, 2 slices of Sargento Ultra Thin Swiss Cheese, Kraft Light Mayo w/ Olive Oil, and Kraft Fat Free Zesty Italian Dressing.

 

 

 

 

 


I started by grabbing a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. If you’ve never tried this Bacon you need to give it a try. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need to 2 slices but fried up 5 slices. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it! Sit the Bacon aside until ready to use.

 

 

To make the Sub I took the bottom half of the Bun and layered it the Mayo and a slice of Swiss Cheese. Then layered it with the Ham, 2 slices of Swiss Cheese, Chicken Bacon, a drizzle of the Italian Dressing, and topped it with the top half of the Sub Bun. Last, I drizzled more of the Italian Dressing over to of it.

 

 

 

 

I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Baked Ham and Swiss Subs!

 

 

 

 

 


I also baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later, while watching the Super Bowl, a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Today’s Menu: Egg Sandwich and Hash Browns

 

 

For Breakfast this morning I had a bowl of Honey Nut Cheerios. Also had my morning cup of Bigelow Decaf Green Tea. Had a sleepless night dealing with those Phantom Pains! These are so aggravating. They hurt so bad and not a thing you can do! Outside we got a little over an inch of new snow and 16 degrees. We had a high of 30 degrees and more snow this afternoon. Can’t do anything outside so I tried catching up on some sleep after the Phantom Pains stopped around noon. For Dinner tonight it’s an Egg Sandwich and Hash Browns.

 

I love Egg Sandwiches! hadn’t made these in years until a while back and enjoyed it so much I’m going to have it more often. To make it all I’ll need is 2 Eggs, Salt and Pepper, a slice of Kraft Sharp Cheddar, a bit of Blue Bonnet Light Butter, and 2 slices of Aunt Millie’s Light Whole Grain Bread. Just get a mixing cup or coffee cup and crack open both Eggs into it. Season it with the Salt and Pepper and whisk it all together.

 

 

 

 

Heat a small skillet on medium heat, I sprayed it with Pam Cooking Spray. I added the Butter, and when heated added the Egg Mixture. Fry it till the bottom browns and flip it. I then added my slice of Cheese on top of it. Cook until dome, and it’s ready! You can toast the Bread if you like, I didn’t toast mine.

 

 

 

 

To go with my Egg Sandwich I prepared some Simply Potatoes Shredded Hash Browns, which I love having anytime. Seasoned them with Salt and Pepper and served them sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and Diet Peach Snapple to drink.

Today’s Menu: Baked Ham and Swiss Sliders w/ Baked Fries

 

 

For Breakfast this Morning I made Toast, Gravy, and Turkey Sausage Links. I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread. Then I prepared a packet of Pioneer Peppered White Gravy. I was out of Jennie – O Turkey Breakfast Sausage Links so I picked up a package of Johnsonville Turkey Fully Cooked Breakfast Sausage Links. Just heat them up in a skillet for 8 minutes and they’re ready! A very good Breakfast Sausage Link. I also had my morning cup of Bigelow Decaf Green Tea. It snowed overnight and we ended up with about 2 inches or so. Had a low of about 15 degrees and a high of 21, but with the wind chill it felt like the single digits out all day! Not much to do today so I cleaned the house, emptied the vacuum, charged the vacuum batteries, and dusted. It really didn’t need it but it gave me a little something to do. For Dinner tonight I prepared Baked Ham and Swiss Sliders w/ Baked Fries.

 


For Dinner one my favorite recipes, Baked Ham and Swiss Sliders w/ Baked Fries. To make them I’ll need; Kroger Whole Wheat Slider Buns. These are only 70 calories and 13 carbs. I also used Boar’s Head Sweet Sliced Ham, Sargento Swiss Cheese, Sargeto Ultra Thin Sharp Cheddar Cheese, Blue Bonnet Light Butter – 4 Tbsp (original recipe called for 8), 2 tsp. Dried Onion Powder, 1 1/2 tsp. Worchestershire Sauce, 1 1/2 tsp. Ken’s Light Poppyseed Dressing, and 1/2 tsp. French’s Yellow Mustard.

 

 

Next I made my Bun Topping Sauce. I grabbed a medium size bowl to mix my ingredients in. I then mixed the Butter, Onion Powder, Worchestershire Sauce, Ken’s Light Poppyseed Dressing, and French’s Yellow Mustard together. Stirred until well mixed and sit it aside until ready to use it.

 

 

 

 

Then to prepare the Sliders; preheat your oven to 350 degrees. Then I got an 11 x 14 baking pan that I lined with foil and sprayed with Pam Non-Stick Cooking Spray. I placed the bottom half of the Slider Buns in the bottom of the baking pan. Next I placed the Sweet Sliced Ham on top of each Bun. You can put as much of the Ham you want on each. I then placed a 1/2 a slice of either the Swiss or Sharp Cheddar cheese on top of the Ham. Then added the the top 1/2 of each bun to each Slider. Then topped all the Sliders with Topping Sauce Mixture. Covered the baking pan with foil and baked at 350 degrees for 15 minutes. Removed the foil and baked an additional 15 minutes to allow the rolls to crisp. Remove from oven to cool and serve.

 

These Baked Ham Sliders are incredible! I normally just use Swiss Cheese so It’s the first time I used Sharp Cheddar Cheese on them and they turned out just as good as Swiss! The Ham, Cheese, Buns are all great but the Topping Sauce makes the Dish. The Sauce gives it such great flavor, love these Sliders!

 

 

 

 

As the Sliders cooled I turned the oven up to 425 degrees and baked my Fies. I used Alexia Organic Yukon Select Fries, my usual choice of Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. Baked Ham Sliders and Fries are perfect together! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Chili and Cheese Nachos

Today’s Menu: Chili and Cheese Nachos

 

 

To start my day off I toasted a couple of Eggo Nutrigrain Waffles. Also had the morning cup of Bigelow Decaf Green Tea. Not quite as cold this morning, 30 degrees. Had a high of 45 degrees and mostly sunny, not bad for this time of year. Mom went to Church and stayed home and watched Dad. So I cleaned the house and did a load of laundry. After Lunch I got the leaf blower out and cleaned the deck and driveway off, still a lot of leaves blowing around. Had everything done and caught up on some programs I had recorded. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

 

 

We love Chili and Cheese Nachos around here! It’s been a while since I’ve made any and they sure sounded good for Dinner tonight. To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!

 

To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! Also had a Diet Dr. Pepper to drink. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Stove top: empty chili into saucepan. Stir occasionally while heating over medium heat, about 5 minutes or until hot. Microwave: empty chili into microwaveable bowl; cover loosely. Heat for 2 To 3 minutes or until hot, stirring once. Careful. Let chili stand in microwave 1 minute and stir before serving. All microwaves And stoves vary. Times given are approximate.
