Today’s Menu: Egg Sandwich and Hash Browns

 

 

For Breakfast this morning I had a bowl of Honey Nut Cheerios. Also had my morning cup of Bigelow Decaf Green Tea. Had a sleepless night dealing with those Phantom Pains! These are so aggravating. They hurt so bad and not a thing you can do! Outside we got a little over an inch of new snow and 16 degrees. We had a high of 30 degrees and more snow this afternoon. Can’t do anything outside so I tried catching up on some sleep after the Phantom Pains stopped around noon. For Dinner tonight it’s an Egg Sandwich and Hash Browns.

 

I love Egg Sandwiches! hadn’t made these in years until a while back and enjoyed it so much I’m going to have it more often. To make it all I’ll need is 2 Eggs, Salt and Pepper, a slice of Kraft Sharp Cheddar, a bit of Blue Bonnet Light Butter, and 2 slices of Aunt Millie’s Light Whole Grain Bread. Just get a mixing cup or coffee cup and crack open both Eggs into it. Season it with the Salt and Pepper and whisk it all together.

 

 

 

 

Heat a small skillet on medium heat, I sprayed it with Pam Cooking Spray. I added the Butter, and when heated added the Egg Mixture. Fry it till the bottom browns and flip it. I then added my slice of Cheese on top of it. Cook until dome, and it’s ready! You can toast the Bread if you like, I didn’t toast mine.

 

 

 

 

To go with my Egg Sandwich I prepared some Simply Potatoes Shredded Hash Browns, which I love having anytime. Seasoned them with Salt and Pepper and served them sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and Diet Peach Snapple to drink.

Today’s Menu: Baked Ham and Swiss Sliders w/ Baked Fries

 

 

For Breakfast this Morning I made Toast, Gravy, and Turkey Sausage Links. I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread. Then I prepared a packet of Pioneer Peppered White Gravy. I was out of Jennie – O Turkey Breakfast Sausage Links so I picked up a package of Johnsonville Turkey Fully Cooked Breakfast Sausage Links. Just heat them up in a skillet for 8 minutes and they’re ready! A very good Breakfast Sausage Link. I also had my morning cup of Bigelow Decaf Green Tea. It snowed overnight and we ended up with about 2 inches or so. Had a low of about 15 degrees and a high of 21, but with the wind chill it felt like the single digits out all day! Not much to do today so I cleaned the house, emptied the vacuum, charged the vacuum batteries, and dusted. It really didn’t need it but it gave me a little something to do. For Dinner tonight I prepared Baked Ham and Swiss Sliders w/ Baked Fries.

 


For Dinner one my favorite recipes, Baked Ham and Swiss Sliders w/ Baked Fries. To make them I’ll need; Kroger Whole Wheat Slider Buns. These are only 70 calories and 13 carbs. I also used Boar’s Head Sweet Sliced Ham, Sargento Swiss Cheese, Sargeto Ultra Thin Sharp Cheddar Cheese, Blue Bonnet Light Butter – 4 Tbsp (original recipe called for 8), 2 tsp. Dried Onion Powder, 1 1/2 tsp. Worchestershire Sauce, 1 1/2 tsp. Ken’s Light Poppyseed Dressing, and 1/2 tsp. French’s Yellow Mustard.

 

 

Next I made my Bun Topping Sauce. I grabbed a medium size bowl to mix my ingredients in. I then mixed the Butter, Onion Powder, Worchestershire Sauce, Ken’s Light Poppyseed Dressing, and French’s Yellow Mustard together. Stirred until well mixed and sit it aside until ready to use it.

 

 

 

 

Then to prepare the Sliders; preheat your oven to 350 degrees. Then I got an 11 x 14 baking pan that I lined with foil and sprayed with Pam Non-Stick Cooking Spray. I placed the bottom half of the Slider Buns in the bottom of the baking pan. Next I placed the Sweet Sliced Ham on top of each Bun. You can put as much of the Ham you want on each. I then placed a 1/2 a slice of either the Swiss or Sharp Cheddar cheese on top of the Ham. Then added the the top 1/2 of each bun to each Slider. Then topped all the Sliders with Topping Sauce Mixture. Covered the baking pan with foil and baked at 350 degrees for 15 minutes. Removed the foil and baked an additional 15 minutes to allow the rolls to crisp. Remove from oven to cool and serve.

 

These Baked Ham Sliders are incredible! I normally just use Swiss Cheese so It’s the first time I used Sharp Cheddar Cheese on them and they turned out just as good as Swiss! The Ham, Cheese, Buns are all great but the Topping Sauce makes the Dish. The Sauce gives it such great flavor, love these Sliders!

 

 

 

 

As the Sliders cooled I turned the oven up to 425 degrees and baked my Fies. I used Alexia Organic Yukon Select Fries, my usual choice of Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. Baked Ham Sliders and Fries are perfect together! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Chili and Cheese Nachos

 

 

To start my day off I toasted a couple of Eggo Nutrigrain Waffles. Also had the morning cup of Bigelow Decaf Green Tea. Not quite as cold this morning, 30 degrees. Had a high of 45 degrees and mostly sunny, not bad for this time of year. Mom went to Church and stayed home and watched Dad. So I cleaned the house and did a load of laundry. After Lunch I got the leaf blower out and cleaned the deck and driveway off, still a lot of leaves blowing around. Had everything done and caught up on some programs I had recorded. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

 

 

We love Chili and Cheese Nachos around here! It’s been a while since I’ve made any and they sure sounded good for Dinner tonight. To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!

 

To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! Also had a Diet Dr. Pepper to drink. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu; Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. One of my favorite Breakfasts! Brrrr, 31 degrees out there this morning with a cool breeze! Our coldest morning in quite a while. Sunny and 59 degrees for the day. Finished up some house cleaning and cleaned the Kitchen. Not much else going on today. For Dinner tonight I prepared a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

 

To prepare the Sandwiches I’ll need; Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French’s Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Sour Dough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees, for the Fries.

 

 

 

While the griddle was heating I got the Sandwich ready to grill. Took a slice of the Sour Dough Bread and topped it with some of the Kraft Mayo, the Boar’s Head Ham, the Sargento Swiss, French’s Mustard, and added the top slice of the Sour Dough Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! What a Sandwich, Sour Dough Bread just makes everything that much better!

 

 

I had already preheated the oven, so as the griddle was heating I baked my Fries, I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling meal. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. Happy Birthday to my Dad, He’s 96 today! We had him a party over at the rehab center. So I was over there most of the day. For Dinner tonight I prepared a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

 

 

 

 

 

I made myself one and Mom also. To prepare the Sandwiches I’ll need; Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French’s Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Kroger Bakery Sour Dough Bread. Today’s Menu: Marinated Bison Strip and Provolone Steak Hoagie w/ Tossed Salad

 

 

To start my Sunday off I had a Poached Egg that I served on a toasted Jennie – O Whole Grain English Muffin. I also made a cup of Bigelow Decaf Green Tea. After Breakfast I headed to Kroger for a few items I need for Dinner tonight. I also stopped by McDonald’s and picked up Breakfast for Mom. Mom went on to Church and I cleaned the house, cleaned the oven, and did a load of laundry. It’s a bit hotter and more humid out but still beautiful outside, a high of 85 degrees. Later in the day i went over to see Dad. He was having a pretty good day today, just wish he could come home. He’s been in the Hospital and Rehab Units more often than he’s been home this year. Back home, For Dinner tonight its a Marinated Bison Strip and Provolone Steak Hoagie w/ Tossed Salad.

 

 

 

I had seen on the Wild Idea Buffalo website that they had Buffalo Premium Steak Strips and had been wanting to try them. So on my latest order that I placed with Wild Idea Buffalo I ordered a package, and having them for Dinner tonight. I’m preparing them and having them as a Buffalo Steak Hoagie.

 

 

 

 

I had the package in the freezer so I let thaw overnight in the fridge. I opened the package up this morning and what beautiful cuts of Meat! The Slices were a dark red and just made your mouth water looking at them! Washed the Slices off in water and patted them dry. Then put them in a sealed plastic container where I added Kraft Lite House Italian Dressing to let them marinate until I was ready to prepare them.

 

 

 

When I was ready to start Dinner I first grabbed a skillet, sprayed it with a light coat of Pam Cooking Spray, added 2 tablespoons of Extra Light Olive Oil, and heated the skillet on medium heat. I got the container of Buffalo Strips out of the Fridge. I pulled the Strips out of the Marinade, shaking off the excess and added them to the preheated skillet. I sautéed the Buffalo Strips for about 4 minutes, tossing to turn occasionally. Removed them from the heat and put the Strips in a bowl. As the Steak was finishing I Sauteed some Mushrooms to go with the Steak Strips.

 

To make my Hoagies I’ll need; Kroger Brand 100% Whole Wheat Hoagie Rolls (these always taste so fresh), the Buffalo Strips, Sargento Provolone Sliced Cheese, Kraft Lite Italian Dressing, Emeril’s New York Deli Style Mustard, Sauteed Mushrooms, and Shredded Lettuce.

 

 

 

 

To start I split the Hoagie Roll open. On the bottom bun I added the Provolone Cheese, then the Buffalo Steak Strips, added a little of the Italian Dressing, Sauteed Mushrooms, then the Shredded Lettuce, and finally on the bottom of the bottom of the top Bun I spread some of the Emeril’s New York Deli Style Mustard. Done and ready to eat! The Buffalo Strips were even better than they looked, and look incredible! So tender and they have that incredible Wild Idea Buffalo taste. Paired with all the toppings, we have another keeper recipe! I’ll be ordering another package of the Wild Idea Buffalo – 1 LB. PREMIUM STEAK STRIPS again! They make a fantastic Steak Hoagie!

 

 

To go with the Hoagie I had a Tossed Salad topped with Kraft Classic Fat Free Catalina Dressing, I got the Salad from the Kroger Salad Bar. For the longest time my body was having trouble digesting leafy green vegetables, they would leave me with upset stomach. But as late I haven’t had any problems, which I’m glad I love Salads! Then later on for Dessert/Snack I’m having a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Today’s Menu; Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries

 

 

One of those long and sleepless nights for me last night. I was fighting with a real case of the Phantom Pains throughout the night. Had a Poached Egg on a toasted slice of Aunt Millie’s Whole Grain Bread. Started a load of laundry for Mom and I’m done for the day. The Phantom Pains continued till almost Noon. Caught up some sleep and relaxed for most of the Afternoon. For Dinner tonight its Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

 

 

 

To prepare the Sandwich I’ll need; Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French’s Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Kroger Bakery Sour Dough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees, for the Fries.

 

 

 

While the griddle was heating I prepared the Sandwich. Took a slice of the Sour Dough Bread and topped it with some of the Kraft Mayo, the Boar’s Head Ham, the Sargento Swiss, French’s Mustard, and added the top slice of the Sour Dough Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! What a Sandwich, Sour Dough Bread just makes everything that much better!

 

 

I had already preheated the oven, so as the griddle was heating I baked my Fries, I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert later a Weight watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Baked Rigatoni with Turkey w/ Baked Multi Grain Loaf Bread

 

 

For my Breakfast this morning I prepared a 2 Egg Scrambled Eggs, that I topped with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and Ortega Smoky Chipotle Taco Sauce. Then I reheated part of the Monster Pork Chop that was leftover from last night. I also toasted a couple of slices of Healthy Life Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. And as every morning a cup of Bigelow Decaf Green Tea. Outside it’s partly cloudy with a high around 85 degrees and a bit more humid. After Breakfast I went to the Post Office for Mom, picked up a prescription at Kroger, and stopped by the bank ATM machine. Back home not a lot going on today. After a light Lunch I headed out to Meijer Lawn and Garden. looking for some solar lights for the yard. For Dinner tonight a new recipe, Baked Rigatoni with Turkey w/ Baked Multi Grain Loaf Bread.

 

This 1 of 2 Pillsbury based recipes that I’m trying this week. The Baked Rigatoni with Turkey that I’m preparing was originally made with Ground Beef but as I do with a lot of recipes I put my little spin on them. To make the dish I’ll need; 2 1/2 cups uncooked Rigatoni Pasta (about 7 oz) – I used Racconto Rigatoni, 1 lb Jennie – O Extra Lean Ground Turkey Breast, 1 jar (23.9 oz) Ragu Mushroom Sauce, 1 1/2 cups Sargento Shredded Mozzarella Cheese (6 oz), 1/4 cup Kraft Reduced Fat Grated Parmesan Cheese, and Dried Basil Leaves.

 

 

Ready for the oven….

Then to prepare it; I started by preheating the oven to 350°F. Next spray 11×7-inch (2-quart) glass baking dish with Pam Cooking Spray. Cook and drain the Pasta as directed on package, using the minimum cooking time. Meanwhile, in 10-inch nonstick skillet, cook the Jenni – O Turkey over medium-high heat about 12 minutes, stirring occasionally, until thoroughly cooked; drain.

 

 

 

 

….and done!

In the baking dish, stir together cooked Pasta, Turkey, Sauce and 1 cup of the Mozzarella Cheese. Sprinkle with remaining 1/2 cup Mozzarella Cheese and the Parmesan Cheese. Bake uncovered for 20 minutes or until thoroughly heated. Garnish with the Basil and serve! I have another one of those “keeper recipes”, it turned out great! Rigatoni is incredible all by itself, but add in the Turkey, Sauce, and Cheese and you have a winning dish. I always substitute Beef with Jennie – O Turkey or Wild Idea Buffalo. Ground Buffalo would go great with also. I’ve left the original Pillsbury recipe and web link at the end of the post.

 

 

To go with Pasta I baked a loaf of the La Brea Bakery Multi Grain Loaf Bread. For Dessert/Snack later tonight a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple.

 

 

 

 

 

 

Baked Rigatoni with Turkey

Ingredients

2 1/2 cups uncooked Rigatoni Pasta (about 7 oz), I used Racconto Rigatoni
1 lb Jennie – O Extra Lean Ground Turkey Breast
1 jar (23.9 oz) Ragu Mushroom Sauce
1 1/2 cups Sargento Shredded Mozzarella Cheese (6 oz)
1/4 cup Kraft Reduced Fat Grated Parmesan Cheese
Dried Basil Leaves, if desired

Steps

Today’s Menu: Grilled Ham and Swiss Sandwich w/ Creamy Potato Soup

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam and I reheated a couple of Potato Pancakes that were leftover from Dinner last night. And as usual I had my morning cup of Bigelow Decaf Green Tea. A bit cooler out today, high of 67 degrees and partly cloudy with a passing shower. In the mail, I received some Meijer Coupons, some really great coupons! 60 cents off for Pam Cooking Spray, free package Sargento Cheese Sticks, 80 cents off a package of Jennie – O Ground Turkey and many more. So after Breakfast it was off to Mejier and I stopped by Kroger for Mom. Back home I cleaned the fridge and the oven, and done for the day. For Dinner tonight it’s a Grilled Ham and Swiss Sandwich w/ Creamy Potato Soup.

 

Mom and Dad were hungry so I made Dinner a bit early. It’s a Comfort Food Dinner tonight for me, Grilled Ham and Swiss Cheese Sandwich w/ Creamy Potato Soup. I’ve had this combo before and they just keep getting better! To make my Grilled Ham Cheese I’ll be using; Kraft Reduced Fat Mayo, French’s Yellow Mustard, Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread to make my Sandwich.

 

 

 

To prepare it I started by buttering the outside half of a slice of bread. Next spread the Mayo on the bottom slice of Bread, next layered the Ham, spread the Mustard, and added the slice of the Swiss. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a large skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. Love these Grilled Ham and Cheese Sandwiches.

 

 

 

For the Soup I’m using a favorite of mine, Bear Creek Creamy Potato Soup Mix. To prepare a package of it; In a 2 quart sauce pan bring 8 cups of water to a rolling boil. Whisk in the soup mix. Reduce the heat to medium and simmer for 10 minutes, stirring occasionally. Salt and pepper to taste and serve! Perfect seasoning, thickened up just right, plenty of Diced Potato and a fantastic Potato flavor. The package makes 8 cups and very easy to prepare. I really love all the Bear Creek Products I’ve tried so far. So delicious and easy to prepare. For Dessert/Snack later tonight a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple.
