Today’s Menu; Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. One delicious Breakfast! Another cloudy day out with a passing shower, 78 degrees. Finished up some house cleaning and cleaned the Kitchen. Went and filled up Mom’s car with gas and then took mine up and filled it. Not much else going on today. For Dinner tonight I prepared a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

 

I love Sandwiches, especially Grilled ones! To prepare the Sandwiches I’ll need; Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French’s Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Sour Dough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees, for the Fries

 

 

 

While the griddle was heating I prepared the Sandwich. Took a slice of the Sour Dough Bread and topped it with some of the Kraft Mayo, the Boar’s Head Ham, the Sargento Swiss, French’s Mustard, and added the top slice of the Sour Dough Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! What a Sandwich, Sour Dough Bread just makes everything that much better!

 

 

I had already preheated the oven, so as the griddle was heating I baked my Fries, I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling meal. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Happy Birthday to my Dad, He’s 96 today! We had him a party over at the rehab center. So I was over there most of the day. For Dinner tonight I prepared a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

 

 

 

 

 

I made myself one and Mom also. To prepare the Sandwiches I’ll need; Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French’s Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Kroger Bakery Sour Dough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Today’s Menu: Marinated Bison Strip and Provolone Steak Hoagie w/ Tossed Salad

 

 

To start my Sunday off I had a Poached Egg that I served on a toasted Jennie – O Whole Grain English Muffin. I also made a cup of Bigelow Decaf Green Tea. After Breakfast I headed to Kroger for a few items I need for Dinner tonight. I also stopped by McDonald’s and picked up Breakfast for Mom. Mom went on to Church and I cleaned the house, cleaned the oven, and did a load of laundry. It’s a bit hotter and more humid out but still beautiful outside, a high of 85 degrees. Later in the day i went over to see Dad. He was having a pretty good day today, just wish he could come home. He’s been in the Hospital and Rehab Units more often than he’s been home this year. Back home, For Dinner tonight its a Marinated Bison Strip and Provolone Steak Hoagie w/ Tossed Salad.

 

 

 

I had seen on the Wild Idea Buffalo website that they had Buffalo Premium Steak Strips and had been wanting to try them. So on my latest order that I placed with Wild Idea Buffalo I ordered a package, and having them for Dinner tonight. I’m preparing them and having them as a Buffalo Steak Hoagie.

 

 

 

 

I had the package in the freezer so I let thaw overnight in the fridge. I opened the package up this morning and what beautiful cuts of Meat! The Slices were a dark red and just made your mouth water looking at them! Washed the Slices off in water and patted them dry. Then put them in a sealed plastic container where I added Kraft Lite House Italian Dressing to let them marinate until I was ready to prepare them.

 

 

 

When I was ready to start Dinner I first grabbed a skillet, sprayed it with a light coat of Pam Cooking Spray, added 2 tablespoons of Extra Light Olive Oil, and heated the skillet on medium heat. I got the container of Buffalo Strips out of the Fridge. I pulled the Strips out of the Marinade, shaking off the excess and added them to the preheated skillet. I sautéed the Buffalo Strips for about 4 minutes, tossing to turn occasionally. Removed them from the heat and put the Strips in a bowl. As the Steak was finishing I Sauteed some Mushrooms to go with the Steak Strips.

 

To make my Hoagies I’ll need; Kroger Brand 100% Whole Wheat Hoagie Rolls (these always taste so fresh), the Buffalo Strips, Sargento Provolone Sliced Cheese, Kraft Lite Italian Dressing, Emeril’s New York Deli Style Mustard, Sauteed Mushrooms, and Shredded Lettuce.

 

 

 

 

To start I split the Hoagie Roll open. On the bottom bun I added the Provolone Cheese, then the Buffalo Steak Strips, added a little of the Italian Dressing, Sauteed Mushrooms, then the Shredded Lettuce, and finally on the bottom of the bottom of the top Bun I spread some of the Emeril’s New York Deli Style Mustard. Done and ready to eat! The Buffalo Strips were even better than they looked, and look incredible! So tender and they have that incredible Wild Idea Buffalo taste. Paired with all the toppings, we have another keeper recipe! I’ll be ordering another package of the Wild Idea Buffalo – 1 LB. PREMIUM STEAK STRIPS again! They make a fantastic Steak Hoagie!

 

 

To go with the Hoagie I had a Tossed Salad topped with Kraft Classic Fat Free Catalina Dressing, I got the Salad from the Kroger Salad Bar. For the longest time my body was having trouble digesting leafy green vegetables, they would leave me with upset stomach. But as late I haven’t had any problems, which I’m glad I love Salads! Then later on for Dessert/Snack I’m having a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

One of those long and sleepless nights for me last night. I was fighting with a real case of the Phantom Pains throughout the night. Today’s Menu: Baked Rigatoni with Turkey w/ Baked Multi Grain Loaf Bread

 

 

For my Breakfast this morning I prepared a 2 Egg Scrambled Eggs, that I topped with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and Ortega Smoky Chipotle Taco Sauce. Then I reheated part of the Monster Pork Chop that was leftover from last night. I also toasted a couple of slices of Healthy Life Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. And as every morning a cup of Bigelow Decaf Green Tea. Outside it’s partly cloudy with a high around 85 degrees and a bit more humid. After Breakfast I went to the Post Office for Mom, picked up a prescription at Kroger, and stopped by the bank ATM machine. Back home not a lot going on today. After a light Lunch I headed out to Meijer Lawn and Garden. looking for some solar lights for the yard. For Dinner tonight a new recipe, Baked Rigatoni with Turkey w/ Baked Multi Grain Loaf Bread.

 

This 1 of 2 Pillsbury based recipes that I’m trying this week. The Baked Rigatoni with Turkey that I’m preparing was originally made with Ground Beef but as I do with a lot of recipes I put my little spin on them. To make the dish I’ll need; 2 1/2 cups uncooked Rigatoni Pasta (about 7 oz) – I used Racconto Rigatoni, 1 lb Jennie – O Extra Lean Ground Turkey Breast, 1 jar (23.9 oz) Ragu Mushroom Sauce, 1 1/2 cups Sargento Shredded Mozzarella Cheese (6 oz), 1/4 cup Kraft Reduced Fat Grated Parmesan Cheese, and Dried Basil Leaves.

 

 

Ready for the oven….

Then to prepare it; I started by preheating the oven to 350°F. Next spray 11×7-inch (2-quart) glass baking dish with Pam Cooking Spray. Cook and drain the Pasta as directed on package, using the minimum cooking time. Meanwhile, in 10-inch nonstick skillet, cook the Jenni – O Turkey over medium-high heat about 12 minutes, stirring occasionally, until thoroughly cooked; drain.

 

 

 

 

….and done!

In the baking dish, stir together cooked Pasta, Turkey, Sauce and 1 cup of the Mozzarella Cheese. Sprinkle with remaining 1/2 cup Mozzarella Cheese and the Parmesan Cheese. Bake uncovered for 20 minutes or until thoroughly heated. Garnish with the Basil and serve! I have another one of those “keeper recipes”, it turned out great! Rigatoni is incredible all by itself, but add in the Turkey, Sauce, and Cheese and you have a winning dish. I always substitute Beef with Jennie – O Turkey or Wild Idea Buffalo. Ground Buffalo would go great with also. I’ve left the original Pillsbury recipe and web link at the end of the post.

 

 

To go with Pasta I baked a loaf of the La Brea Bakery Multi Grain Loaf Bread. For Dessert/Snack later tonight a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple.

 

 

 

 

 

 

Baked Rigatoni with Turkey

Ingredients

2 1/2 cups uncooked Rigatoni Pasta (about 7 oz), I used Racconto Rigatoni
1 lb Jennie – O Extra Lean Ground Turkey Breast
1 jar (23.9 oz) Ragu Mushroom Sauce
1 1/2 cups Sargento Shredded Mozzarella Cheese (6 oz)
1/4 cup Kraft Reduced Fat Grated Parmesan Cheese
Dried Basil Leaves, if desired

Steps

Today’s Menu: Grilled Ham and Swiss Sandwich w/ Creamy Potato Soup

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam and I reheated a couple of Potato Pancakes that were leftover from Dinner last night. And as usual I had my morning cup of Bigelow Decaf Green Tea. A bit cooler out today, high of 67 degrees and partly cloudy with a passing shower. In the mail, I received some Meijer Coupons, some really great coupons! 60 cents off for Pam Cooking Spray, free package Sargento Cheese Sticks, 80 cents off a package of Jennie – O Ground Turkey and many more. So after Breakfast it was off to Mejier and I stopped by Kroger for Mom. Back home I cleaned the fridge and the oven, and done for the day. For Dinner tonight it’s a Grilled Ham and Swiss Sandwich w/ Creamy Potato Soup.

 

Mom and Dad were hungry so I made Dinner a bit early. It’s a Comfort Food Dinner tonight for me, Grilled Ham and Swiss Cheese Sandwich w/ Creamy Potato Soup. I’ve had this combo before and they just keep getting better! To make my Grilled Ham Cheese I’ll be using; Kraft Reduced Fat Mayo, French’s Yellow Mustard, Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread to make my Sandwich.

 

 

 

To prepare it I started by buttering the outside half of a slice of bread. Next spread the Mayo on the bottom slice of Bread, next layered the Ham, spread the Mustard, and added the slice of the Swiss. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a large skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. Love these Grilled Ham and Cheese Sandwiches.

 

 

 

For the Soup I’m using a favorite of mine, Bear Creek Creamy Potato Soup Mix. To prepare a package of it; In a 2 quart sauce pan bring 8 cups of water to a rolling boil. Whisk in the soup mix. Reduce the heat to medium and simmer for 10 minutes, stirring occasionally. Salt and pepper to taste and serve! Perfect seasoning, thickened up just right, plenty of Diced Potato and a fantastic Potato flavor. The package makes 8 cups and very easy to prepare. I really love all the Bear Creek Products I’ve tried so far. So delicious and easy to prepare. For Dessert/Snack later tonight a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple.

Bear Creek Creamy Potato Soup Mix

Today’s Menu: Turkey Frank Cincinnati Style Cheese Coneys

 

 

For Breakfast this morning I prepared a Egg Beater’s Egg White Cheese Omelet, I used Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Then I also toasted 2 slices of Healthy Life Whole Grain Bread lightly buttered with I Can’t Believe It’s Not Butter. I also had the morning cup of Bigelow Decaf Green Tea. Had a passing Thunderstorm this morning them mostly cloudy and showers and 84 degrees. Right after Breakfast I had to take my car to be worked on, had a small leak in the radiator hose. Not a lot going on today, caught up on a few things around the house. For Dinner tonight I prepared Turkey Frank Cincinnati Style Cheese Coneys.

 

 

I love my Cheese Coneys! Living here all my life here in the Cincinnati area you are raised on Cheese Coneys, Chili Spaghetti, and such. From all the classic Chili Parlors; Skyline Chili, Gold Star Chili, Camp Washington Chili, just to name a few. But having Diabetes 2 I have to watch my carbs and calories so I make mine a little healthier but keeping the incredible flavors.

 
I used Ball Park Smoked White Meat Turkey Franks, an excellent Turkey Frank! I boiled them, it took about 5 minutes and they were ready, plump, and delicious. I heated the can of Skyline Chili for my topping. I served everything on a Aunt Millie’s Reduced Calorie Hot Dog Buns. Put the Frank in the Bun then topped it with French’s Yellow Mustard, the Chili, and Sargento Reduced Fat Sharp Cheddar Shredded Cheese. Put it altogether and you have a prime example of the World Famous Cincinnati Style Cheese Coney! Had a small side of some Skyline Oyster Crackers with a few drops of Frank’s Hot Sauce on them, which is a common way to have them here in the Cincinnati area. We love our Chili, Chili Dogs, Chili Spaghetti, and Hot Sauce here in the Cincinnati area. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu; Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries

 

 


For Breakfast this morning I had a cup of Bigelow Decaf Green Tea, not much of an appetite this morning. Started the laundry up for Mom after that. About an hour later we headed up to Home Depot. Needed paint, to paint the wooden deck, bought some new plants for outside, potting soil, grass seed, and checked out the back splash for the Kitchen. Mostly sunny and 80 degrees out today! Our new grill arrived so I spent some of the day putting that together. It is one pain in the rear putting that together while in a wheelchair! Finally got it together. Also planted a couple of new shrubs in the back of the house. I’m one tired man tonight. For Dinner tonight its Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

 


To prepare the Sandwich I’ll need; Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French’s Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Kroger Bakery Sour Dough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees.

 

 

 


While the griddle was heating I prepared the Sandwich. Took a slice of the Sour Dough Bread and topped it with some of the Kraft Mayo, the Boar’s Head Ham, the Sargento Swiss, French’s Mustard, and added the top slice of the Sour Dough Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! What a Sandwich, Sour Dough Bread just makes everything that much better!

 


I had already preheated the oven, so as the griddle was heating I baked my fries, I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert later a Weight watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Mini Flatbread Pepperoni and Sausage Pizza

 

 

For Breakfast on this 1st day of April I had a Poached Egg that I served on a Healthy Life Whole Grain English Muffin. They moved Dad from the hospital back over to the Rehab Center he was just at last week. They are going to try more therapy and if that doesn’t work he will have to stay in an assisted living center, hope it doesn’t come to that. So after Breakfast I went to Kroger and picked up a few snacks that Dad likes. Then after Lunch I went on over to see Dad. Back home took it easy and watched a few shows that I had recorded. For my dinner tonight I’m preparing a Mini Flatbread Pepperoni and Sausage Pizza.

 

 

 

 

While at Jungle Jim’s Market the other day I picked up a package of Kontos Pre­Grilled Mini Oval Flatbread. I had used these once before and really liked the way they came out. It’s pregrilled so it’s ready to eat or reheat. What I liked about it was they were the perfect size to make mini Pizzas with, plus they’re only 140 calories and 24 net carbs for a whole one (one serving)!

 

 

 

 

 

To make the Pizzas I’ll need; the Kontos Pre­Grilled Mini Oval Flatbread, Hormel Turkey Pepperoni, Johnsonville Turkey Sausage Links, Sliced Black and Green Olives, Ragu Pizza Sauce, Sargento Reduced Fat Shredded Mozzarella Cheese.

 

 

 


To prepare it I started by preheating the oven on 400 degrees. The Johnsonville Turkey Sausage is precooked so all I had to do was heat up in a small skillet for 5 minutes on medium heat. Removed from the heat and sliced the Links up into small bite pieces. I then got a small baking sheet and lined it with foil and sprayed it with Pam Cooking Spray. I then took one of the Flatbreads and brushed a very light coat of Extra Virgin Olive Oil on the top of them.

 

 

 

 

Next I made my Pizza! I started by spreading 2 tablespoons of the Ragu Pizza Sauce across the top of the Flatbread. Then added the sliced Olives, Turkey sausage, Mozzarella Cheese, and topped it all with Turkey Pepperoni. Then I made a second one the same way. Laid the Flatbreads on the baking sheet and put it in the oven. I baked them for about 8 minutes, until the Cheese was melted and all items heated through.

 

 

 

 

 

The Flatbread provides a perfect Crust (Pizza Pie). It browned up great and had a fantastic flavor with a nice crunch! I’ll have to try different toppings, like Ham or Chicken, using the Kontos Pre­Grilled Mini Oval Flatbread. I’ve found a good Pizza Pie Crust and it’s only 140 calories per serving! For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Grilled Ham and Swiss Sandwich w/ Creamy Potato Soup

 

 

 

A light Breakfast this morning. I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. And as usual I had my morning cup of Bigelow Decaf Green Tea. Outside it’s mostly cloudy and a high in the mid 60’s. So after Breakfast I headed over to the hospital to see Dad. He seemed to be doing better today. They have run a series of tests on him and they all keep coming back negative. Really worried about him. Back home, I had the carpets all cleaned yesterday. So today I moved the furniture back in place. For Dinner tonight I prepared a Grilled Ham and Swiss Sandwich w/ Creamy Potato Soup.

 

 

 

It’s a Comfort Food Dinner tonight, Grilled Ham and Swiss Cheese Sandwich w/ Creamy Potato Soup. To make my Grilled Ham Cheese I’ll be using; Kraft Reduced Fat Mayo, French’s Yellow Mustard, Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread.

 

 

 

 

 

 

To prepare it I started by buttering the outside half of a slice of bread. Next spread the Mayo on the bottom slice of Bread, next layered the Ham, spread the Mustard, and added the slice of the Swiss. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. Love these Grilled Ham and Cheese Sandwiches.

 

 

 

For the Soup I’m using a new favorite of mine, Bear Creek Creamy Potato Soup Mix. To prepare a package of it; In a 2 quart sauce pan bring 8 cups of water to a rolling boil. Whisk in the soup mix. Reduce the heat to medium and simmer for 10 minutes, stirring occasionally. Salt and pepper to taste and serve! Perfect seasoning, thickened up just right, plenty of Diced Potato and a fantastic Potato flavor. The package makes 8 cups and very easy to prepare. I really love all the Bear Creek Products I’ve tried so far. So delicious and easy to prepare. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.
