Today’s Menu: Leftovers – Shrimp and Smoked Turkey Sausage Gumbo

 

 

Had a a light Breakfast of a Toasted Healthy Life Whole Grain English Muffin lightly buttered with I Can’t Believe It’s Not Butter along with my morning cup of Bigelow Decaf Green Tea. Another cold morning out there again, 16 degrees with a cold breeze a blowing! Partly sunny and 34 for the day. Stayed in all day and gave the house a good cleaning. Also cleaned the fridge and the oven. Then had to do some repair work on a wheelchair I keep out in the car. For Dinner tonight an always delicious dish, Leftovers! Tonight its Leftovers – Shrimp and Smoked Turkey Sausage Gumbo.

 

 

As always when I prepare Shrimp and Smoked Turkey Sausage Gumbo I have the leftovers in a day or two. And this batch is no exception, for Dinner tonight I reheated the leftover Shrimp and Smoked Turkey Sausage Gumbo. The dish reheats perfectly! It’s just as good the second time around, if not better! I also had a slice of Healthy Life Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar. I have left the original post from the other day that has the ingredients and instructions for the Shrimp and Smoked Turkey Sausage Gumbo. Enjoy!

 

What’s not to like with one of my favorite meals; Gumbo, Shrimp, and Smoked Turkey Sausage! To make it I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 1/2 Butterball Hardwood Smoked Turkey Sausages (sliced into bite size slices), a bag of Kroger Brand Jumbo Shrimp (that I precooked before adding to the Gumbo), and Frank’s Red Hot Sauce.

 

 

 

The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. It’s very easy to prepare, takes about 25-30 minutes. To start; I just boil the stock that’s in the packet, add the sliced the Turkey Sausage to the stock along with a few shakes of Frank’s Red Hot Sauce and continued to cook for 10-15 minutes. Then I added the Shrimp and simmered another 2-3 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too! I also baked a loaf of Pillsbury French Bread. For dessert later a Weight Watchers Cookies and Cream Ice Cream Bar.

YOU WILL NEED:
1 package Zatarain’s® Gumbo Pasta Dinner Mix
1 tablespoon oil
1 pound andouille or other cooked sausage, cut into 1/2-inch slices
2 3/4 cups water

DIRECTIONS:
1. HEAT oil in large skillet (12-inch) on medium-high heat. Add sausage; cook and stir 5 minutes or until lightly browned.
2. STIR in water and Pasta Dinner Mix. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 15 minutes or until pasta is tender, stirring occasionally.
3. REMOVE from heat. Let stand 5 minutes. Sauce will thicken upon standing. Stir before serving.

VARIATIONS
Chicken Gumbo: Prepare as directed, using 1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes, in place of the sausage. Cook and stir 5 minutes or until chicken is no longer pink.

Shrimp Gumbo: Prepare as directed in Step 1, using 1 pound medium shrimp, peeled and deveined, in place of the sausage. Cook and stir 3 minutes or just until shrimp turn pink. Remove shrimp from skillet. Continue as directed, stirring shrimp back into skillet after pasta is tender.

Today’s Menu: Holiday Turkey Gumbo

 

 
For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and reheated a couple of slices of turky-and-sauage-gumbo-003the leftover Ham. Also the morning cup of Bigelow Decaf Green Tea. Not a lot going on today. It being Black Friday there was no way I was going around any shopping areas today! I did get out and go to the bank and stopped and got gas. Back home did a few things around the house. I’m having computer problems since yesterday morning. I can go to 2 or 3 sites or do a couple of functions and my computer becomes sluggish and sometimes freezes up, no solution yet I may have to call to have it looked at. I’m lost without my computer!! Anyway for Dinner tonight it was all leftovers. I prepared a Turkey Sandwich w/ Mashed Potatoes and Green Beans.

 
For Dinner tonight I prepared a recipe based from a Zatarain’s Recipe I received in an email the other day, Holiday turky-and-sauage-gumbo-001Turkey Gumbo. I’ve left the original recipe at the end of the post. Mine differs in that I just used the Zatarain’s Gumbo Mix with Rice without adding additional ingredients. I’ve made the Gumbo Mix with Rice many times but usually I use Shrimp and Turkey Sausage. This time I’m substituting the Shrimp with leftover Jennie – O Turkey Breast. To prepare the dish I’ll need; 1 – Box of Zatarain’s Gumbo Mix with Rice, Butterball Hardwood Smoked Turkey Sausage (I cooked this up ahead of time and sliced it into smaller pieces), leftover Jennie – O Turkey Breast (pulled and sliced), and Frank’s Red Hot Sauce.

 
I used a box of Zatarain’s Gumbo Mix with Rice for the Gumbo base. It’s very easy to prepare, takes about 25-30 turky-and-sauage-gumbo-002minutes. I just boiled the stock that was in the packet, sliced Butterball Hardwood Smoked Turkey Sausage, and a few shakes of the Frank’s Red Hot Sauce for 15 minutes. Then I added the leftover Jennie – O Turkey Breast and simmered another 10 minutes. And the Gumbo is ready! It turned out fantastic! Nice flavor and plenty of Rice. The Butterball Turkey sausage and Jennie – O Turkey Breast worked great, made a nice hearty dinner. I just love leftovers! For dessert later a Jello Sugar Free Dark Chocolate Pudding.

 

 

 

Holiday Turkey Gumbo

After Thanksgiving or Christmas dinner, using leftover turkey to make gumbo is a holiday tradition across Louisiana. Zatarain’s Gumbo Mix with Rice makes it easy to introduce this beloved tradition to your home. Recipe courtesy of Jenny Fallo.

Serves: 9
Serving Size: 1 cup
1 pound smoked sausage, sliced 1/4-inch thick
Substitutions
1 medium onion, chopped
1 medium bell pepper, chopped
2 stalks celery, chopped
3 cloves garlic, minced
6 cups turkey stock
Substitutions
1 package ZATARAIN’S® Gumbo Mix with Rice
1 bay leaf
1 cup chopped cooked turkey
1/4 cup chopped green onions

Directions

15 mins
Prep time
35 mins
Cook time
Brown sausage in Dutch oven or large saucepan on medium-high heat. Add onion, bell pepper, celery and garlic; cook and stir 3 minutes or until vegetables begin to soften.
Stir in stock, Rice Mix and bay leaf. Bring to boil. Reduce heat to low; cover and simmer 15 minutes. Add turkey; cook 10 minutes longer or until rice is tender, stirring occasionally. Sprinkle with green onions before serving.
Cooking tip

For turkey stock, try this homemade recipe or use packaged stock: To make homemade turkey stock, add the leftover carcass from the turkey to large stockpot. Add 4 quarts of water, chopped onion, celery, carrots and garlic, bay leaf and fresh or dried parsley; bring to boil. Reduce heat and simmer 1 hour. Strain stock. Use stock to prepare Holiday Turkey Gumbo. Any leftover stock can be frozen for later use.

To start my day I made one our favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. It was in the low 40’s this morning and a light rain when I went out to fetch the morning papers. Had a high in the low 60’s with rain. Gave Mom a hand with a couple of loads of laundry. Then I did some house cleaning, ran the vacuum, dusted, etc.. Absolutely love this dinner I’m having tonight, Shrimp and Smoked Turkey Sausage Gumbo.

It was one foggy morning out this morning! Looking out the window you could barely see our next door neighbor’s house. Went to Kroger this morning as the fog was breaking to pick up some items for tonight’s dinner and back home. Was able to get some yard work done before it got to hot and humid. It’s a pain trying to get stuff done in a wheelchair or motorized cart, but you have to do what you have to do to get things done. Then later I went and picked my Dad’s Birthday Cake up for his Birthday party tomorrow at the rehab center. He’ll be 93! I was watching a Cooking Show last night and they were making Gumbo and it looked too good! So for dinner tonight I made some Shrimp and Smoked Turkey Sausage Gumbo w/ Cornbread Ears.

I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base. First time used this with the Pasta instead of Rice. Very easy to prepare, takes about 25-30 minutes. I just boiled the stock that was in the packet, Jalapeno Slices, sliced Butterball Hardwood Smoked Turkey Sausage, and a few shakes of the Frank’s Red Hot Sauce for 15 minutes. Then I added Extra Large Shrimp and simmered another 10 minutes. Said and done the Gumbo is ready to serve and It turned out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one nice hearty and delicious dinner.

I also made some Cornbread Ears. It’s normal baked Cornbread but in a cast iron baking mold in the shape of Ears of Corn. I used Martha White Corn Meal Mix. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Hardwood Smoked Turkey Sausage and Shrimp Gumbo w/ Cornbread

Another chilly morning, 30 degrees, that led to a sunny but chilly Autumn Day. It was computer clean up day today. Deleted some old stuff that I had saved and ran all the scans and clean ups. For dinner, the comfort food keeps coming, Hardwood Smoked Turkey Sausage and Shrimp Gumbo w/ Cornbread.

 

 

 

I had a bag of Kroger Brand Jumbo Shrimp and a package of Butterball Hardwood Smoked Sausage in the freezer so I laid both out in the fridge to thaw overnight. For the Gumbo stock I used my favorite, the Luzianne Gumbo Dinner Kit. So easy to prepare and just flat out delicious! The Luzianne Gumbo Dinner Kit contains a packet that contains the Rice, Vegetables, Seasoning, and Roux Mix. I add the Butterball Hardwood Smoke Turkey Sausage (14 oz. Package), Jumbo Shrimp (1 lb. Package), Water, Frank’s Red Hot Sauce and a bit of added Sea Salt.

 

Cornbread
T o prepare it; take a 4-5 Quart pot, add 6 cups of Water and 2 tablespoons of Extra Virgin Olive Oil and bring it to a boil. Add the Luzianne Gumbo, while stirring. Empty half of the Red Pepper Packet into the Gumbo. Put remainder aside. Caution with this stuff it is HOT! Reduce the Heat , Cover and simmer for 18 minutes. Meanwhile rinse the Shrimp off and in a medium skillet Brown the Hardwood Smoked Turkey Sausage and slice into smaller pieces. Taste, and if desired, add remaining Red Pepper from packet and Sea Salt. Add the Shrimp and Sausage Cover and continue to simmer for 7 more minutes. The aroma is incredible and the taste is as well! Comfort Food to the Max! I also made a small cast iron skillet of Cornbread. A perfect choice to absorb that Roux! I used Martha White Corn Meal Mix, as usual. Serve in a bowl, add Frank’s Red Hot Sauce if you desire, with a slice of Cornbread. For dessert later a Del Monte No Sugar Added Peach Chunk Cup.

Seafood Gumbo and Cornbread

Today’s Menu: Seafood Gumbo and Cornbread

 

 

I wanted Seafood and I wanted it in a hearty and healthy Gumbo. So I broke out the Luzianne Gumbo Dinner Kit. It contains a packet that contains the Rice, Vegetables, Seasoning, and Roux Mix. I cleared the freezer to make this grabbing anything Seafood! I added Shrimp, Crawfish, Scallops, and Langostino Lobster Tail Meat Pieces. The Crawfish Tail was leftover from a previous order I had purchased from The Cajun Grocer and I purchased the bag of Lobster from Jungle Jim’s market. The Seafood mixed in with the Roux, too good! This was the first time I added the Langostino Lobster Tail Meat Pieces. It fit in perfect the sweetness of the Lobster Meat and the heat of the Red Pepper and Hot Sauce was a perfect match! Plus a lot leftover to freeze and have later. I left the recipe and Gumbo description at the end of the post. For a side I baked a small skillet of Cornbread of to go along with the Gumbo and soak up some of that wonderful Roux. I used Martha White For dessert later a slice of fresh baked Pillsbury Nut Quick Bread.

 

Seafood Gumbo

Ingredients:

Scallops, Shrimp, Lobster, Crawfish Tail

1 Pound of Shrimp, Crawfish, Lobster, and Sea Scallops

6 Cups of Water

2 Tablespoons of Extra Virgin Olive Oil

Pepper, Sea Salt for seasoning

1 Box of Luzianne Gumbo Dinner Kit
Directions:

*In a 4-5 Quart pot,bring water and Olive Oil to a boil

*Add Luzianne Gumbo while stirring

*Empty half of the Red Pepper Packet into the Gumbo. Put remainder aside.

*Reduce Heat , Cover and simmer for 18 minutes. Meanwhile cut the Sea Scallops in half if their Jumbo size, peel the raw Shrimp, if needed.

*Taste, and if desired, add remaining Red Pepper from packet and Sea Salt. Add the Shrimp, Scallops, Crawfish, and Lobsterand. Cover and continue to simmer for 7 – 9 more minutes. Serve.

 
Luzianne Gumbo Dinner Kit

Description:
Gumbo is a thick Cajun “soup,” containing any combination of vegetables, meats, poultry or seafood and served over rice. Just add chicken, seafood or meat to complete a full meal for your entire family in less than 30 minutes.

Ingredients:
Rice, Red and Green Bell Peppers, Modified Food Starch, Flour, Onion, Natural Flavors, Hydrolyzed Soy Protein, Paprika, Salt, Monosodium Glutamate, Celery, Garlic Spices, Red Pepper, Sugar, Carmel Color, Sodium Sulfite As A Preservative.

Directions:
You can turn ordinary chicken, meat or seafood into exciting meals easily with Luzianne Cajun and Creole Dinners. Each Dinner is a blend of rice, authentic Cajun or Creole seasonings and chipped vegetables. All you do is add your own chicken, meat, or seafood, simmer for 25 minutes and serve. There’s a separate red pepper packet to add Cajun spice to suit your taste.

Today’s Menu: Shrimp, Scallop, Crawfish Gumbo
Gumbo for dinner tonight! If you want a quick but yet delicious and thick Gumbo you’ll have to try Luzianne Gumbo Dinner Kit. It contains a packet that contains the Rice, Vegetables, Seasoning, and Roux Mix. I added Shrimp, Crawfish, Scallops, Potatoes, and Mini Carrots. It was the first time I used Crawfish. I purchased it when I ordered the Gator Meat from the Cajun Grocer on-line the other day. The Crawfish Tail fit right in with the Shrimp and Scallops. It came out delicious! The Seafood and the Roux too good! Plus a lot leftover to freeze and have later. I left the recipe and Gumbo description at the end of the post. We had a side of Aunt Millie’s Light Whole Grain Bread to go along with the Gumbo and soak up some of that wonderful Roux. For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

Ingredients

2 Small Russet Potatoes (Diced)

10 or more Mini Carrots

6 Cups of Water

2 Tablespoons of Extra Virgin Olive Oil

Pepper, Sea Salt for seasoning

1 Box of Luzianne Gumbo Dinner Kit

*Dice the Russet Potatoes and microwave for 4 minutes to soften

*In a 4-5 Quart pot,bring water and Olive Oil to a boil

*Add Luzianne Gumbo while stirring

*Empty half of the Red Pepper Packet into the Gumbo. Put remainder aside.

*Reduce Heat , Cover and simmer for 18 minutes. Meanwhile cut the Sea Scallops in half, peel the raw Shrimp.

*Taste, and if desired, add remaining Red Pepper from packet and Sea Salt. Add the Shrimp, Scallops, Crawfish, Mini carrots and Potatoes. Cover and continue to simmer for 7 more minutes.

Gumbo for Lunch!

It’s been perfect weather out, a beautiful stretch of days! Now I have come down with this Summer Flu that’s been going around. There won’t be a lot of posts today and even less going on in the kitchen. Thank goodness for frozen leftovers! I had a froze a serving of Seafood Gumbo for just such an occaision and glad I did. For lunch I warmed up the Gumbo. I was really pleased how it froze and warmed up. It still was full of flavor and delicious! I added some dry Parsley to top it and about 6 shakes of Frank’s Red Hot Sauce to perk it up a bit. Again thank goodness for leftovers!

Today’s Menu: Shrimp and Scallop Gumbo

When it’s time it’s time and it was time for some Gumbo! Got the 5 qt. cooker out and made the Gumbo. If you want a quick but yet delicious and thick Gumbo you’ll have to try  Luzianne Gumbo Dinner Kit. It contains a packet that contains the Rice, Vegetables, Seasoning, and Roux Mix. I added Shrimp, Scallops, Potatoes, Crumbled Turkey Bacon, and Mini Carrots. It came out delicious! Plus a lot leftover to freeze and have later. I left the recipe and Gumbo description at the end of the post. I made a side of Pillsbury Reduced Fat Crescent Rolls to go along with the Gumbo and soak up some of that wonderful Roux. I’d have to say this was the best Gumbo I ever made. For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

Ingredients

2 Russet Potatoes (Diced)

10 or more Mini Carrots

6 Cups of Water

*Fry Bacon and set aside when done.

*Reduce Heat , Cover and simmer for 18 minutes. Meanwhile quarter the Sea Scallops, peel the raw Shrimp, and crumble the Turkey Bacon.

*Taste, and if desired, add remaining Red Pepper from packet and Sea Salt. Add the Shrimp, Scallops, Crumbled Turkey Bacon, Mini carrots and Potatoes. Cover and continue to simmer for 7 more minutes.

Today’s Menu: Shrimp and Scallop Gumbo

Slowly becoming one of my favorites, Shrimp and Scallop Gumbo! Added an extra ingredient this time, I added Craw Fish Tail Meat. It made a great Gumbo just a little bit better! I made a huge pot full. Enough for leftovers for tomorrow and also to freeze enough for a couple of servings. I listed the recipe below.

 

Ingredients

1 Pound of Shrimp and Sea Scallops

1 Bag of  Boudreaux Crawfish Meat

4 Slices of Turkey Bacon

2 Russet Potatoes (Diced)

6 Cups of Water

2 Tablespoons of Extra Virgin Olive Oil

Pepper, Sea Salt for seasoning

1 Box of Luzianne Gumbo Dinner Kit

*Dice the Russet Potatoes and microwave for 4 minutes to soften

*Fry Bacon and set aside when done.
