Today’s Menu: Turkey Tacos and Refried Beans

 

 

To start my morning off I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I had to go to the local Kroger up the road for just a couple of items. I stopped by McDonald’s then to pick up Breakfast for Mom and Dad. Finished up some house cleaning and then did some work on the computer. I took the back off the processor and cleaned the inside of the computer, a lot of dust. Deleted some old files and ran all the scans. For Dinner tonight Turkey Tacos and Refried Beans.

 

 

I had been wanting Tacos for some time, and tonight is the night! When making Turkey Tacos I love using Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make one fine Taco!

 

 

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Love the Taco Shells that stand! Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom and Dad. For dessert later a Blue Bunny No Sugar Added Vanilla Mini Cone.

Today’s Menu: Turkey Tacos and Refried Beans

 

 

 

For Breakfast I prepared some Pioneer Peppered White Gravy along with 2 slices of toasted Healthy Life Whole Grain Bread. I love Gravy!! Also fried up 2 Jennie – O Turkey Breakfast Sausage Links and topped it off with that morning cup of Bigelow Decaf Green Tea. I also baked up a pan of Pillsbury Biscuits for Mom and Dad to have with the gravy. I love Biscuits but 2 slices of toast has way less carbs and calories than one Biscuit. Not a lot going on today, caught up on everything. I took a ride later over to Home Depot to look at some plants and trees. Not sure what I’m going to do yet for some new shrubbery. It’s our warmest day of the year so far, high near 90 degrees and mostly sunny. For Dinner tonight its Turkey Tacos and Refried Beans for Taco Tuesday!

Today’s Menu: Pulled Chicken, Black Bean, and Corn Soft Tacos

 

 

 

For Breakfast this morning I had something a little different, Grilled Cheese and Egg Spam Sandwich. Came across this recipe on Spam’s Facebook page. The Sandwich turned out fantastic! Very good combination of ingredients and easily prepared. Your using; 2 slices Turkey SPAM® , 2 slices Healthy Life Whole Grain Bread, 1 slice Sargento Ultra Thin Sharp Cheddar Cheese, and 1 large Egg. Mom even had one and loved it, so its Parent Approved! I also had my morning cup of Bigelow Decaf Green Tea. After Breakfast I headed over to the rehab center to see Dad. I went with him for his morning therapy. He did real good today, proud of him! Still up in the air whether or not he can back home, hope so! Back home did a few things around the house. Outside it’s mostly cloudy, windy, and a high of 53 degrees. For Dinner tonight I prepared Pulled Chicken, Black Bean, and Corn Soft Tacos.

 


I wanted something light and delicious so what better than some Soft Tacos, haven’t had any in a while and it sounded good. To make these I’ll need the following; Old El Paso Flour Tortillas, 1 Rotisserie Chicken (Pulled Chicken), various Spices (to season the Chicken), 1 can Bush’s Chili Beans (Black Beans in Mild Chili Sauce), 1 can Green Giant Steam Crisp Nibblets (Whole Kernel Sweet Corn, sliced Black Olives, chopped Lettuce, Daisy Light Sour Cream, and Old El Paso Taco Sauce (Smoky Chipotle). The makings of something good!

 

 

I had purchased the Rotisserie Whole Chicken from Kroger yesterday afternoon. After getting it home I pulled all the meat and stored it in a plastic container in the fridge until today when it was time to make the Tacos. I put the Chicken in a skillet and reheated it on medium heat. As the Chicken was heating I seasoned it with Ground Cumin, Dried Cilantro, Chili Seasoning, McCormick Grinder Sea Salt and McCormick Grinder Peppercorn Medley.

 

 

 

 

As the Chicken was heating I got my other ingredients ready. I opened up a can of Early California Whole Large Black Olives (Reduced Salt) and sliced them up. Then I got 2 small sauce pans; 1 for the Chili Beans and 1 for the Corn. Heated both until heated through.

 

 

 

 

With all the ingredients heated and ready I got the Soft Tortillas ready. I wrapped the Tortillas in paper towels and microwaved them for 40 seconds. Now to make the Soft Tacos. I first layered in the Chicken, followed by the Taco Sauce, Chili Beans, Corn Kernels, Taco Sauce, Lettuce, and topped with a dab of Light Sour Cream. Loaded and ready to eat! Love these Soft Tacos. All the ingredients just come together to make one flavorful meal. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Simple Grilled Cheese and Egg SPAM® Sandwich

This SPAM® sandwich recipe calls for eggs. But we’re not going to use all kinds of silly made-up egg words to describe it. Like, for example, we could say the taste is “eggscellent” or “eggstraordinary.” And that it’ll fill you with “eggscitement.” But that just feels too “eggspected” and there’s no “eggspletive” way we’re going to go there.

Ingredients

2 slices SPAM® Single Classic
2 slices bread
1 slice cheese
1 large egg

 

1.In small skillet, fry SPAM® Singles over medium-high heat, turning once, about 15 mintues.
2.In separate small skillet, cook egg to desired doneness.
3.Spread 1 side of each slice bread with butter. Place in skillet, butter-side-down; top 1 slice with cheese. Cook until cheese starts to melt and bread is toasted. Top cheese with SPAM® and egg. Cover with top slice bread.

For Breakfast this morning I heated up a couple of Jimmy Dean Turkey Sausage Links, Poached an Egg, toasted 2 slices of Healthy Life Whole Grain Bread, and made a cup of Bigelow Decaf Green Tea. Cold and windy day out there today. About 26 this morning and a high of 33 degrees. Had some Snow Flurries on and off also. Good day to stay in and get caught up on a few things around the house. For Dinner tonight its Turkey Whole Wheat Taco Boats.

 

 

 

It had been a while since I had the Old El Paso Taco Boats, and the first time I’ve had the Whole Wheat Boats. Love these things but I just don’t have them that often. They are nice size and are perfect for stuffing them with ingredients. The Whole Wheat version is 130 calories and 19 net carbs per serving, 2 Boats per serving. And 2 of them is plenty for your meal!

 
To make these I’ll need; For the Taco – 1 package Old El Paso Whole Wheat Taco Boats, 1 packturkey-whole-wheat-taco-boats-001age Old El Paso Taco Seasoning Mix – 25% Less Sodium, 1 tablespoon Extra Light Olive Oil, 1 lb Jennie – O Extra Lean Ground Turkey Breast, Ground Roasted Cumin and Dried Cilantro – to taste, 2/3 cup Water. For the Toppings – 1 cup canned Old El Paso™ refried beans – heated, 1 cup Daisy Reduced Fat Sour Cream, 1 cup shredded Sargento 4 Cheese Mexican Reduced Fat Cheese, 1 small can Lindsay Sliced Black Olives, and 1 cup Shredded Lettuce. With these ingredients you know this is going to be delicious! The Ortega Smoky Chipotle Taco Sauce that I use has to be the best Taco Sauce I’ve ever had! Love this stuff. It has a fantastic taste to it with just the right amount of heat.

To start I prepared the Taco Boats. I preheated the oven on 325 degrees. Next I wrapped 2 of the Tortillas in foil and placed them on a small cookie sheet. Baked them for 7 minutes, until warmed through. Removed them from the oven, left the foil on them to keep them warm.

As the Tortillas were heating up in the oven I prepared the I’m using Jennie -O extra Lean Ground Turkey Breast. Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make one fine Taco!

And as the Turkey was cooking and the Taco Boats baking, I heated up the can of Refried Beans. I used a small sauce pan that I sprayed with Pam Cooking Spray and added a 1/2 tablespoon of the Extra Light Olive Oil. I always add the Olive Oil to the Refried Beans,it gives a creamier texture and prevents it from sticking in the sauce pan. Always be careful of over heating these besides extra cleaning of your pan it also affects the texture of the Beans. Took the pan off the burner when heated and set aside until needed.

 

 
With everything heated I assembled my Taco Boat. Unwrapped the heated Taco Boats, I first added some Lettuce to turkey-whole-wheat-taco-boats-015the bottom of the Boat. The Lettuce down first helps to keep too much moisture from softening up the bottom of the Taco Boats. Next I added a layer of Turkey Taco Meat, then I sprinkled some of the sliced Black Olives, next a thin coat of the Refried Beans, more Lettuce, the Shredded Cheese, and finally the Chipotle Taco Sauce. And what a meal, Taco Night just got better! The Taco Boats held together great and the ingredients all worked together to make one delicious dish. Below I left a list of all the ingredients. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

For Breakfast this morning I got the Egg Poacher out and made a Poached Egg. I served it on a toasted Healthy Life Whole Grain English Muffin also had my morning cup of Bigelow Decaf Green Tea. It’s another beautiful Fall Day out there, Sunny and 81 degrees. Finally got all the yard work done yesterday so today we gathered all the tables and chairs off the deck and driveway and stored them all in the shed. Our Fall Outside Cleaning is done! Took the cart out for a spin and picked up the mail. Tuckered out, rested up before Dinner. And for Dinner tonight I prepared Popcorn Shrimp w/ Mac and Cheese.

Today’s Menu: Slow Cooker Honey Chipotle Chicken Tacos

For Breakfast this morning I heated up the remainder of the Potato and Ham Skillet along with the morning cup of Bigelow Decaf Green Tea. After Breakfast i went to the local Kroger here up the road. Wanted to go early before the rain returned. I didn’t need much but as always I picked up a few extra items. Back home finished up some laundry for Mom. Then later I took everything out of the fridge and gave it a good cleaning. My how time flies when you’re having fun! For Dinner tonight a new Chicken Dish. I prepared Slow Cooker Honey Chipotle Chicken Tacos.

 
The minute I saw this recipe I knew I had to try it! I’m using the one from the with salt and wit website (http://withsaltandwit.com/). A very good website with a load of great recipes, check it out! To make the dish I’ll need the following; For the Chicken: – 2 pounds skinless and boneless chicken breasts, ⅓ cup honey. For the Honey Chipotle Marinade: – 1½ teaspoons chili powder, 2 teaspoons chipotle in adobo sauce (or ground chipotle powder if gluten-free), 1 tablespoon ground cumin, 1½ teaspoons paprika, 1½ teaspoon garlic salt, 1 teaspoon onion powder, heaping ½ teaspoon ground coriander, and ½ teaspoon pepper. Just by the list of seasonings, you can tell that the Chicken will be packed with flavor!

 
I had the Chicken Breasts in the freezer so I sat them in the fridge and let them thaw overnight. To prepare the dish; slow-cooker-honey-chipotle-chicken-tacos-003Got the Slow Cooker out and lined it with a Slow Cooker Liner, then sprayed it with Pam Cooking Spray. Placed the chicken in the bottom of the Slow Cooker. Then mixed together the Chicken Rub Ingredients. Sprinkled the Rub evenly over the Chicken. Next take the Honey and pour over top the Chicken. Cover and cook on high for 3 – 3½ hours or low for 5-6 hours or until meat is cooked through and easily falls apart. I cooked mine on high for 4 hours. Once the Chicken was cooked, remove it from the slow cooker and shred it with two forks. Then return the shredded chicken back to the slow cooker to absorb the cooking liquid. Taste and seasoned it with salt and pepper.

 
To serve them; I used Old El Paso Flour Tortillas. I wrapped the Tortillas in a paper towel and heated them up in theslow-cooker-honey-chipotle-chicken-tacos-005 microwave, 30 seconds. In the center of each Tortilla, added the Chicken mixture and topped with the other toppings. Toppings I used; Red Cabbage, Kraft 2% Shredded Colby/Jack Cheese, sliced Black Olives, and a light touch of Ortega Smokey Chipotle Taco Sauce. And these Soft Tacos are ready to serve! One huge problem I came across with this recipe, when you shred the Chicken, trying not to eat it as you shred it! The Chicken is incredible, just bursting with flavor! You have all the Spices, with heat from the Chipotle, and then the Honey giving it a sweet taste. Truly a “Keeper Recipe”. So if you love Chicken and Soft Tacos, you have to try this one! For Dessert later a Jello Sugar Free Dark Chocolate Pudding. The original recipe and web link is below.

Slow Cooker Honey Chipotle Chicken Tacos

 

Slow Cooker Honey Chipotle Chicken Tacos are slightly sweet and slightly spicy! The slow cooked chicken is fall apart tender, juicy and full of chipotle and honey! Delicious in tacos or over lettuce for a lighter option!
Serves: 8 servings

Ingredients
2 pounds skinless, boneless chicken breasts
⅓ cup honey
Honey Chipotle Marinade:
1½ teaspoons chili powder
2 teaspoons chipotle in adobo sauce (or ground chipotle powder if gluten-free)
1 tablespoon ground cumin
1½ teaspoons paprika
1½ teaspoon garlic salt
1 teaspoon onion powder
heaping ½ teaspoon ground coriander
½ teaspoon pepper
Garnishes:
8 taco sized corn or flour tortillas
½ cup Pepper Jack cheese, shredded, if desired
Red Cabbage, diced
Avocados, sliced thin
Lime wedges

Instructions

Place chicken in the bottom of a slow-cooker.
Mix together the chicken rub ingredients. Sprinkle evenly over the chicken. Pour honey over top.
Cover and cook on high for 3 – 3½ hours or low for 5-6 hours or until meat is cooked through and easily falls apart.
Once the chicken is cooked, remove from the slow cooker and shred with two forks.
Return the shredded chicken back to the slow cooker to absorb the cooking liquid. Taste and season with salt and pepper, if desired.
You can either char your tortillas by placing over a gas grill until lightly charred or you can wrap them in a paper towel and microwave for 10 seconds.
In the center of each tortilla, add the chicken mixture and top with desired garnishes. Serve immediately.

Today’s Menu: Turkey Tacos

For Breakfast I had a toasted Healthy Life Whole Grain English Muffin, topped with I Can’t Believe It’s Not Butter. Also had the morning cup of Bigelow Decaf Green Tea. I started a load of laundry for Mom and then I headed out to Meijer. After Meijer I headed to Kroger, Mom had a list of things she needed from there. It may be the first day of the Fall Season but it was still feeling like a hot August Summer day out there. Sunny, 88 degrees, and muggy. I had no clue on what to have for Dinner tonight. Up until around 12:30, this is when Fed – Ex dropped a package off from Jennie – Turkey. Tonight its Turkey Tacos!

 

Jennie - O Lean Ground Turkey
I had no clue on what Dinner was going to be and then as if Jennie – O read my mind, a Fed -Ex truck pulled up and brought out the Green and White shipping box. When I see that headed to the door I know Jennie – O Turkey has sent me some Turkey Products to use! As a member of the Jennie -O Switch Club they send me Jennie – O Turkey products, coupons, and recipes to try and blog about. This shipment had a package of Jennie – O Ground Turkey and a package of Jennie – O Turkey Breast Tenderloins. My Dinner problem was solved! Ton ight I’m using the Ground Turkey and its going to be a Taco Night!

I used the Jennie -O Ground Turkey I received from Jennie – O this afternoon! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make one fine Taco!

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. For Dessert later a bowl of Dole Sliced Peaches.

Today’s Menu: Turkey Tacos and Refried Beans

For Breakfast I prepared a packet of the Pioneer Peppered White Gravy along with 2 slices of toasted Healthy Life Whole Grain Bread. Also fried up 2 Jennie – O Turkey Breakfast Sausage Links and topped it off with that morning cup of Bigelow Decaf Green Tea. After Breakfast it was house cleaning day. Dusted (my least favorite chore), vacuumed, and cleaned the stove and oven. With the inside done moved the cleaning outdoors. Got the leaf blower out and cleaned the wooden deck and driveway areas. Got the weed killer spray and the cart and sprayed around the house flower beds for weeds. Starting to get hot and muggy out. Sunny and a high in the 90’s, plus more humid out. Dad was released from the hospital and resting here at home, good to have him back. For Dinner tonight Turkey Tacos and Refried Beans.

Today’s Menu: Pulled Chicken, Black Bean, and Corn Soft Tacos

 
For Breakfast I made some hash Browns and a slice of Toast. I used Simply Potatoes Hash BroPulled Chicken, Black Bean, and Corn Soft Tacos 012wns and for the Toast I used Healthy Life Whole Grain Bread. Did a few things around the house and then I was off to the hospital. My best friend was going to have surgery this morning. I went up to be with his sister and we waited together. He’s going to be fine as everything went well. It seems like I’ve been at this hospital way too much of late, 2 friends of mine and my dad all have been up here the last few weeks. So often that the Parking Valets know me by name. Back at home I laid down for a bit for a short nap and to relax a bit. For dinner tonight it’s Pulled Chicken, Black Bean, and Corn Soft Tacos.

 

 

Pulled Chicken, Black Bean, and Corn Soft Tacos 002

I wanted something light and delicious so what better than some Soft Tacos. To make these I’ll need the following; Old El Paso Flour Tortillas, 1 Rotisserie Chicken (Pulled Chicken), various Spices (to season the Chicken), 1 can Bush’s Chili Beans (Black Beans in Mild Chili Sauce), 1 can Green Giant Steam Crisp Niblets (Whole Kernel Sweet Corn, sliced Black Olives, chopped Lettuce, Daisy Light Sour Cream, and Old El Paso Taco Sauce (Smoky Chipotle). The makings of something good!

 

 

 

Pulled Chicken, Black Bean, and Corn Soft Tacos 003
I had purchased the Rotisserie Whole Chicken from Kroger yesterday afternoon. After getting it home I pulled all the meat and stored it in a plastic container in the fridge until today when it was time to make the Tacos. I put the Chicken in a skillet and reheated it on medium heat. As the Chicken was heating I seasoned it with Ground Cumin, Dried Cilantro, Chili Seasoning, McCormick Grinder Sea Salt and McCormick Grinder Peppercorn Medley.

As the Chicken was heating I got my other ingredients ready. I opened up a can of Early California Whole Large Black Olives (Reduced Salt) and sliced them up. Then I got 2 small sauce pans; 1 for the Chili Beans and 1 for the Corn. Heated both until heated through.

 

 

 

 
With all the ingredients heated and ready I got the Soft Tortillas ready. I wrapped the Tortillas in paper towels and Pulled Chicken, Black Bean, and Corn Soft Tacos 006microwaved them for 40 seconds. Now to make the Soft Tacos. I first layered in the Chicken, followed by the Taco Sauce, Chili Beans, Corn Kernels, Taco Sauce, Lettuce, and topped with a dab of Light Sour Cream. Loaded and ready to eat! Love these Soft Tacos. All the ingredients just come together to make one flavorful meal. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

For Breakfast this morning it was a toasted Healthy Life Whole Grain English Muffin topped with I Can’t Believe It’s Not Butter. After that I ran up to the local Kroger to pick up some Lettuce for tonight’s dinner and stopped by the bank before heading back home. Beautiful day outside today, mostly sunny and near 70 degrees! Had everything done in and around the house so I got the cart out for a while this afternoon. Then for dinner tonight I prepared Turkey Tacos with a side of Refried Beans.
