Wild Idea Buffalo – Italian Buffalo Meatballs

Here’s the third and final Buffalo Meatball recipe from Jill O’Brien of Wild Idea Buffalo. The first two were made of Ground Buffalo and this one is made with Buffalo Italian Sausage, which can be purchased on line at the Wild Idea Buffalo web site.

 

 

Wild Idea Buffalo Italian Buffalo Meatballs
Italian Buffalo Meatballs (Makes 20 to 24 meatballs)

Ingredients:

1 lb. Buffalo Italian Sausage

¼ cup basil, chopped

¼ cup sundried tomatoes, chopped

2 cloves garlic, minced

4 oz. mozzarella cheese, shredded

2 teaspoons butter

1 medium onion, diced

1 tablespoon sugar

1 teaspoon fennel

Preparation:

1) Mix basil, sundried tomatoes, garlic and cheese together.

2) In sauce pan over medium high heat, heat oil. Add onions, sugar and fennel and sauté until slightly caramelized. Transfer to plate and allow to cool before adding to other ingredients.

3) Crumble ground buffalo meat into other ingredients. Mix thoroughly with hands.

4) Place mixture in food processor and flash pulse process, until slightly sticky. Allow meat mixture to rest 2 to 24 hours before cooking. This can be done before or after making meatballs.

5) Form into 1 oz. or desired size meatballs and place on lightly oiled baking sheet.

6) Broil meatballs in oven on middle rack, until browned, about 5 minutes.

Serve warm. Great by themselves or serve with marinara on a bed of creamy risotto.

Here’s the second of three Buffalo Meatball recipes from Jill O’Brien of Wild Idea Buffalo, Enjoy!

 

 
Asian Style Meatballs with Cilantro Yogurt SauceWild Idea Buffalo Asian Style Meatballs with Cilantro Yogurt Sauce
(Makes 16 to 20 meatballs)

 

 

Ingredients:

1 lb. Ground Buffalo

1½ tablespoons fish sauce

1 tablespoon sesame oil

1 teaspoon lemon zest

1 tablespoon lemon juice

½ cup shallots, finely diced

3 cloves garlic, minced

½ cup cilantro, finely chopped

1 tablespoons mint, finely chopped

¼ teaspoon salt

½ teaspoon black pepper

 

Preparation:

1) Mix all ingredients together, except buffalo.

2) Crumble ground buffalo meat into spice mixture. Mix thoroughly with hands.

3) Place mixture in food processor and flash pulse process, until slightly sticky. Allow meat mixture to rest 2 to 24 hours before cooking. This can be done before or after forming meatballs.

4) Form into 1 oz. or desired size meatballs and place on lightly oiled baking sheet.

5) Broil meatballs in oven on middle rack, until browned, about 5 minutes.

Serve with cucumbers and radishes with Cilantro Yogurt Sauce. *Optional: Serve on a bed of brown basmati rice.

 

Cilantro Yogurt Sauce (Makes 1 ½ cups)
Ingredients:

2 cups fresh cilantro, chopped

¼ cup fresh mint leaves

1 jalapeno, seeded

2 tablespoons garlic, chopped

1 teaspoon cumin

1 tablespoon lemon juice

½ teaspoon salt

1 cup whole milk or low-fat yogurt, room temperature
Instructions: Place all ingredients but yogurt into blender and puree. Pour yogurt into bowl and whisk in cilantro mixture. This sauce is great on so many things and will keep well in refrigerator for later use.

Curried Buffalo Meatballs (Makes16 to 20 meat balls)Wild Idea Buffalo Curry Meatballs

 
Ingredients:

1 lb. Ground Buffalo

1 teaspoon cardamom

1 teaspoon cumin

1 teaspoon cinnamon

½ teaspoon cloves

½ teaspoon coriander

¼ teaspoon nutmeg

1 teaspoon black pepper

1 teaspoon salt

½ teaspoon cayenne pepper

1 tablespoon olive oil

1 tablespoon butter

3 green onion, sliced *reserve dark green tops for garnish

2 cups unsweetened coconut milk

1 tablespoons yellow curry paste

1 dried hot chili, or 1 tsp crushed red pepper

1 tablespoon fish sauce

1 tablespoons brown sugar

1 tablespoon fresh ginger

 

 

Preparation:

1) Mix all dry spices together with olive oil.

2) Crumble ground buffalo meat into spice mixture. Mix thoroughly with hands. Allow meat mixture to rest 2 to 24 hours before cooking. This can be done before or after making meatballs.

3) Form into 1 oz. or desired size meatballs and place on lightly oiled baking sheet.

4) In sauce pan over medium high heat melt butter. Add onions and sauté for 3 minutes.

5) Add remaining ingredients and bring to a boil. Reduce heat and let simmer for 15 minutes. Reheat sauce before serving.

6) Broil meatballs in oven on middle rack, until browned, about 5 minutes.

Pour curry sauce over meatballs and garnish with green onions.

Today’s Menu: Spaghetti and Meatballs

 

 

 

Another cloudy day but it’s in the low 50’s, not bad for December! Went to Walmart and picked up a few items that were on sale for Christmas Gifts and picked up a couple of items for tonight’s dinner. Tonight one of my favorites, Spaghetti and Meatballs.

Spaghetti LaRosa Sauce

 

 

I used Ronzoni Healthy Harvest Whole Wheat Spaghetti, my favorite Pasta. Then for my Meatballs I used Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are the best I’ve found, fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs.

 
I normally use Bella Vita Low Carb Pasta Sauce but here lately I’ve been using LaRosa’s Original Pasta Sauce. I added my Meatballs and Sauce to a Sauce Pan and then added a small jar of Green Giant Sliced Mushrooms and simmered on low until all was heated. I topped the Spaghetti and Meatballs with some fresh grated Murray’s Parmigiano-Reggiano Cheese. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Today’s Menu: Spaghetti and Meatballs

 

 
A little warmer out today, in the low 50’s. I’m having a new ramp entrance to our kitchen built. I had the old since 2001 when I lost my left leg. So it served it’s purpose but the wood is old and cracking, so it’s time for a new one. A couple of neighborhood guys that build sheds and decks are doing the work for me. Not much else happening besides, what else on Saturday, College Football! For dinner tonight its Spaghetti and Meatballs.

Grilled Buffalo Meatball Salad with Mint Vinaigrette

Wild Idea Buffalo Grilled Buffalo Meatball Salad with Mint Vinaigrette
Grilled Buffalo Meatball Salad with Mint Vinaigrette

(Inspired by Food & Wine recipe). Serves 4

Grills across the country will be fired up for this Fathers Day, covered with burgers, steaks and Ribs (check out our Rib specials this month– recipes included). All delicious, but if you are in the mood for something on the lighter side, this recipe is for you. Enjoy.

 

 
Meatball Ingredients:

1 – 1 lb. Ground Buffalo
2 – cloves garlic, minced
2 – green onions, minced

1 – tablespoon soy sauce
2 – tablespoons hoisin sauce
1 – teaspoon salt
2 – teaspoons black pepper
2 – tablespoons olive oil
24 –cherries, pitted
8 – mushrooms, halved
8 wooden skewers, soaked in water
foil

Vinaigrette Ingredients:

½ – cup rice vinegar
¼ – cup honey
¼ – cup sesame oil
1 – tablespoon pickled ginger
¼ cup fresh mint leaves
½ – teaspoon salt
1 – teaspoon black pepper

Salad Ingredients:

4 – handfuls mixed greens
1 – cup prepared quinoa
½ – cucumber, diced

*optional garnish: cherries, sesame seeds or Marcona Almond
Instructions:

1.) In mixing bowl combine: ground buffalo, minced garlic, minced onion, soy, salt and pepper. Mix thoroughly with hands.
2.) Shape into 16 oval meatballs, and roll in olive oil. Refrigerate for ½ hour.
3.) Mix all Vinaigrette ingredients in blender a pulse until mixed.
4.) Thread skewer: cherry, mushroom, meatball, cherry, meatball, mushroom, cherry. Repeat with remaining skewers.
5.) Wrap exposed wooden tips with foil.
6.) Place skewers over medium high grill, about 400* and grill for 3 minutes each side.
7.) Remove skewers from grill and cover with foil, allowing to rest for 5 minutes.
8.) Toss salad greens with ¼ cup of the vinaigrette, arrange on 4 separate plates.
9.) Mix cucmber and jalapeno together in bowl and toss with ¼ cup viniagerette.
10.) Divide prepared quinoaand sprinkle on top of greens. Repeat with diced cucumbers. Top Salad with two skewers and drizzle with additional vinaigrette. Garnish as desired.

Serve with grilled flat bread.

A cool but sunny and beautiful Autumn Day out again. Got the 4 wheel mobility scooter out and helped with the yard work, raking leaves. Then took it out for a spin through the neighborhood and on down to the lake area. Then some College Football for the afternoon! For dinner, Meatballs in Marinara Sauce on Bun w/ Baked Fries.

 

 
A Meatball Sandwich on a cool Autumn Day just sounded right! I used Hormel Sandwich Makers Meatballs in Marinara Sauce. I came across this at Walmart yesterday and thought I would give it a try. It comes in a plastic microwavable container. To,prepare it just puncture the plastic film and microwave for 60 seconds. Let it cool for a minute or so and it’s ready! The Meatballs were good tasting and an excellent Marinara Sauce! There’s 2 servings per package, so I have my lunch for tomorrow. I served them on a Aunt Millie’s Reduced Calorie Whole Grain Hotdog Bun. Topped it with some Sargento Reduced fat Shredded Mozzarella Cheese. I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. For dessert/snack later some slices of Cracker Barrel 2% Sharp Cheddar on Ritz Whole Grain Crackers.

 

 
Hormel Sandwich Makers Meatballs in Marinara SauceHormel Sandwich Maker Meatball
Your start to a perfect sandwich and more, like family favorite spaghetti and meatballs! Look for them in the soup and pasta aisle.
Microwave Instructions:
Puncture plastic film in several spots on top of tray or peel film back on tray about 1/4-inch. Place tray in microwave. Heat on HIGH for 60 seconds or until hot. Let tray stand for 1 minute, if desired. The tray and its contents are hot after microwaving. Carefully remove film by peeling it back around the tray. Stir, serve with your favorite bread and enjoy!

Wow some heavy rains the past 24 hours! They say the heaviest rains have passed but still more on the way. A little cooler days coming in for next week. For dinner tonight I prepared some Spaghetti and Meatballs. Whole Wheat Spaghetti, Turkey Meatballs, and Low Carb Pasta Sauce.

 

 

I used Ronzoni Healthy Harvest Whole Wheat Spaghetti and Turkey Meatballs along with Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are the best I’ve found, fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs. Topped everything with some fresh grated Parmesan Cheese, fresh grated Dutch Gouda and Bella Vita Low Carb Pasta Sauce (Meat Flavored). I was out of fresh Mushrooms so I added a jar of Pennsylvania Dutch Sliced Mushrooms to the Sauce as it simmered. For dessert later a Del Monte No Sugar Added Peach Chunks Cup.

This weeks recipe is a soup, Italian Wedding Soup. This ones made with Wild Idea Buffalo‘s Ground Buffalo. As always I’ve the link to this and many other healthy Buffalo recipes below.

 

 
Italian Wedding SoupWild Idea Buffalo Italian Wedding Soup

Italian Wedding Soup
Serves 6
My rendition of a classic favorite. Easy and elegant for a perfect light meal.

 

Ingredients:

1 egg, beaten
½ teaspoon fennel
1 teaspoon basil
1 teaspoon garlic, minced
1 teaspoon onion powder
1 teaspoon salt
2 teaspoons black pepper
2 tablespoon olive oil
1 pound ground bison
2 quarts chicken stock
½ cup orzo pasta
3 cups spinach, chopped and packed
grated parmesan to pass, optional

 

 
Preparation:

* Mix eggs, seasoning and olive oil together.
* Add ground bison and mix thoroughly.
* Form into small meatballs, making 40.
* Place on baking sheet and bake meatballs in a 425* preheated oven.
* In stock pot, over medium high heat bring chicken stock to a boil.
* Add orzo, meatballs and juices from meatball pan to the stock. Bring to a boil.
* Reduce heat and cook until pasta is tender, about 8 minutes.
* Add spinach and cook for 2 minutes
* Ladle soup into bowl and pass with grated parmesan.

Today’s Menu: Whole Grain Noodles Topped w/ Turkey Meatballs in a Brown Mushroom Gravy and a Stuffed Peppadews AppetizerNoodles and Turkey Meatballs Gravy 006

 
I’m pretty sure to predict the weather they write down all the possibilities, put them in a hat, and pull one out for our forecast! They had predicted 2 1/2″ to 3″ of rain and a front to move through and move out all the humidity, wrong. We did get a couple of brief cloud bursts of rain but not close to the amount they said and it’s still humid! Never trust the weather report. Tried a couple of new dishes for dinner, one I wasn’t real sure on but it turned out to be a keeper of a recipe! I prepared some Whole Grain Noodles Topped w/ Turkey Meatballs in a Brown Mushroom Gravy and a Stuffed Peppadews Appetizer.

 

 

 

The Whole Grain Noodles Topped w/ Turkey Meatballs in a Brown Mushroom Gravy is loosely based on a Rachael Ray dish that I had seen earlier on TV. I did a few things to shorten the cooking and prep time and I also lightened it up, fewer calories and carbs. I used Ronzoni Health Harvest Whole Grain Noodles. I love Egg Noodles but I always try to stay with the Whole Wheat when possible. As I was boiling my Noodles I went ahead and started preparing the Meatballs and Gravy.

 

 

 

I found some Jennie – O Turkey Meatballs at Jungle Jim’s Market a while back and them frozen waiting to try them with a Meatball Noodles and Turkey Meatballs Gravy 007Dish. First time I’ve tried the Jennie – O Turkey Meatballs, I usually use Honeysuckle White Turkey Meatballs. These were 10 fewer calories per serving, they’re not quite as big as the Honeysuckle White’s though but every bit as good! I pan fried them in a 1/2 tablespoon of Extra Virgin Olive Oil and took them off the heat before they were quite done. Then in another skillet I heated up my Heinz Mushroom Gravy, I had added additional sliced baby Bella Mushrooms to the gravy. As the gravy was heating I added my Meatballs and let them simmer in the gravy until heated through. First time I had ever had Turkey Meatballs in a Mushroom Gravy and it was as they say “Off the Hook”! What a great combo. My Noodles were just finishing up as my Meatball/Gravy mix was. To serve I made a bed of the Noodles and topped it with the Meatballs/Gravy. I then topped it with some freshly grated Asiago Cheese and fresh chopped Parsley. What a hearty comfort food! A keeper recipe. Everything just seemed like a natural pairing and the Asiago Cheese was the perfect topper. I also baked a mini loaf of Kroger Bakery Harvest Grain Bread.

 

 
For an appetizer another new one with Peppadew Peppers, which I had never heard of until this morning when I was at Kroger doing Noodles and Turkey Meatballs Gravy 009some early morning shopping. They had these in the Deli/Cheese Shop already seeded and marinated. There was 6 whole ones and 2 small ones in the container. I stuffed 3 of them with fresh grated Havarti Cheese and the other 3 with Turkey Sausage and Havarti Cheese. After stuffing them I put them in a microwave plate and heated them for about 40 seconds. I love them! Wasn’t sure how they would turn out but they came out a winner. A good appetizer to have around. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Whole Grain Wide Noodles are short flat pasta strips made with eggs. Whole Grain Noodles come in wide or extra wide. Whole Grain Wide Noodles are best in soup, entrées, side dishes or oven bakes. Cream or cheese sauces, gravy, light tomato sauce or simple butter (or olive oil) tosses are complementary.
Ingredients
Durum whole wheat flour and semolina blend, wheat fiber, egg whites, thiamin mononitrate, niacin, riboflavin, iron (ferrous sulfate), folic acid.

Directions
Cooking directions. see perfect pasta guide for quantities and cook times. bring water to a rapid boil. to add flavor and reduce stickiness, add salt. add pasta and stir; return to rapid boil. cook uncovered, stirring occasionally. drain well. serve as desired. Perfect pasta guide. 1 portion, 1/4 bag of pasta, 2 quarts of water, 1 tsp of salt. 2 portions, 1/2 bag of pasta, 3 quarts of water, 2 tsp of salt. 4 portions, full bag of pasta, 5 quarts

This type of piquante pepper was first discovered in early 1993 and introduced to market later that same decade. The name is a portmanteaux of pepper and dew.
Although the pepper is sometimes described as a cross between a pepper and a tomato, this description is not botanically accurate, and refers only to the resemblance in color and size between peppadew and cherry tomatoes.
Applications have been made by the various owners of the brand to secure international breeders right by application to the UPOV.
In 2000 the South African mushroom producer, Denny Mushrooms, acquired the Peppadew brand and business. Denny has in turn since been acquired by AVI.

 
The fruit is processed for removal of the seeds and reduction of the heat of the pepper to more pleasant levels. It is then pickled and bottled. The flavor of the Peppadew fruit is sweet, with mild heat of around 1,177 on the Scoville scale.
