Healthy Tuna Casserole

 
Ingredients:

4 cups dry whole wheat penne pasta
1 small onion, finely chopped
2 (6 ounce) cans solid white tuna, water packed, well drained (can use 3 cans)
2 (10 ounce) cans fat free cream of celery soup or 2 (10 ounce) cans cream of mushroom soup, undiluted
1/2 cup low-fat mayonnaise
1 cup 1% low-fat milk
1 (10 ounce) can sliced mushrooms, well drained
1 tablespoon Mrs. Dash seasoning mix
1/2 teaspoon garlic powder
1/2 teaspoon coarse black pepper (or to taste)
1 cup grated reduced-fat cheddar cheese (or to taste)

 

 
Directions:

1 Set oven to 350 degrees F.
2 Grease an 11 x 7 or 13 x 9-inch baking dish with cooking spray (or use a casserole dish large enough to hold the mixture).
3 Boil the pasta in a large pot of boiling water until al dente; drain then transfer to a large bowl.
4 Add in onion and tuna; toss to combine.
5 In a saucepan heat soup with milk until smooth.
6 Stir in mushrooms mayonnaise, Mrs Dash seasoning, garlic powder and black pepper until combined; pour into the bowl and toss to combine.
7 Transfer mixture to prepared baking dish.
8 Bake for about 30 minutes.
9 Remove from oven then sprinkle with cheddar cheese, return to oven for 2-4 minutes to melt the cheese.

I’m pretty sure to predict the weather they write down all the possibilities, put them in a hat, and pull one out for our forecast! They had predicted 2 1/2″ to 3″ of rain and a front to move through and move out all the humidity, wrong. We did get a couple of brief cloud bursts of rain but not close to the amount they said and it’s still humid! Never trust the weather report. Tried a couple of new dishes for dinner, one I wasn’t real sure on but it turned out to be a keeper of a recipe! I prepared some Whole Grain Noodles Topped w/ Turkey Meatballs in a Brown Mushroom Gravy and a Stuffed Peppadews Appetizer.

 

 

 

The Whole Grain Noodles Topped w/ Turkey Meatballs in a Brown Mushroom Gravy is loosely based on a Rachael Ray dish that I had seen earlier on TV. I did a few things to shorten the cooking and prep time and I also lightened it up, fewer calories and carbs. I used Ronzoni Health Harvest Whole Grain Noodles. I love Egg Noodles but I always try to stay with the Whole Wheat when possible. As I was boiling my Noodles I went ahead and started preparing the Meatballs and Gravy.

 

 

 

I found some Jennie – O Turkey Meatballs at Jungle Jim’s Market a while back and them frozen waiting to try them with a Meatball Noodles and Turkey Meatballs Gravy 007Dish. First time I’ve tried the Jennie – O Turkey Meatballs, I usually use Honeysuckle White Turkey Meatballs. These were 10 fewer calories per serving, they’re not quite as big as the Honeysuckle White’s though but every bit as good! I pan fried them in a 1/2 tablespoon of Extra Virgin Olive Oil and took them off the heat before they were quite done. Then in another skillet I heated up my Heinz Mushroom Gravy, I had added additional sliced baby Bella Mushrooms to the gravy. As the gravy was heating I added my Meatballs and let them simmer in the gravy until heated through. First time I had ever had Turkey Meatballs in a Mushroom Gravy and it was as they say “Off the Hook”! What a great combo. My Noodles were just finishing up as my Meatball/Gravy mix was. To serve I made a bed of the Noodles and topped it with the Meatballs/Gravy. I then topped it with some freshly grated Asiago Cheese and fresh chopped Parsley. What a hearty comfort food! A keeper recipe. Everything just seemed like a natural pairing and the Asiago Cheese was the perfect topper. I also baked a mini loaf of Kroger Bakery Harvest Grain Bread.

 

 
For an appetizer another new one with Peppadew Peppers, which I had never heard of until this morning when I was at Kroger doing Noodles and Turkey Meatballs Gravy 009some early morning shopping. They had these in the Deli/Cheese Shop already seeded and marinated. There was 6 whole ones and 2 small ones in the container. I stuffed 3 of them with fresh grated Havarti Cheese and the other 3 with Turkey Sausage and Havarti Cheese. After stuffing them I put them in a microwave plate and heated them for about 40 seconds. I love them! Wasn’t sure how they would turn out but they came out a winner. A good appetizer to have around. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

This type of piquante pepper was first discovered in early 1993 and introduced to market later that same decade. The name is a portmanteaux of pepper and dew.
Although the pepper is sometimes described as a cross between a pepper and a tomato, this description is not botanically accurate, and refers only to the resemblance in color and size between peppadew and cherry tomatoes.
Applications have been made by the various owners of the brand to secure international breeders right by application to the UPOV.
In 2000 the South African mushroom producer, Denny Mushrooms, acquired the Peppadew brand and business. Denny has in turn since been acquired by AVI.

 
The fruit is processed for removal of the seeds and reduction of the heat of the pepper to more pleasant levels. It is then pickled and bottled. The flavor of the Peppadew fruit is sweet, with mild heat of around 1,177 on the Scoville scale.

Spent the morning and early afternoon at the Findlay Market in Cincinnati. First time I’ve been down there in about 12 years or more. It’s really grown since I was there last. Any and all fruits, vegetables, meats, and baked goods. Really a neat place to visit! For dinner I prepared Chicken ‘n’ Noodles w/ Boiled Mini Carrots and Whole Grain Bread.

 

 

 

I used Margaret Holmes Simple Suppers Chicken n Noodles Fixins’. Another of my favorite Comfort Foods! It comes in a 5 serving can and contains the Noodles and Seasoning, I added the Chicken. I cut up 2 Chicken Breasts seasoning them with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsley. I then fried them in a large skillet until done and added the can of Fixins’. Cooked until it the Sauce was bubbling and heated throughout. The broth that’s with Noodles is incredible! Rich and thick and seasoned just right. For dessert later a Jello Sugarless Double Chocolate Pudding topped with Cool Whip Free.

Cook pasta only until it is slightly chewy ( What the Italians call al dente, or “to the tooth”). Always use plenty of water, and keep the water at a rapid boil-the pasta needs to move around as it cooks, to keep it from sticking together. Some cooks like to salt the water, but we find it tends to toughen pasta. Use a pinch of sugar instead, and salt before serving. After it’s cooked, don’t rinse it. The sauce will cling better to the residual starch, and the noodles will retain nutrients.

I wanted to try a new recipe for Sunday Dinner and I came across Steak Tips with Peppered Mushroom Gravy. So for dinner I prepared Steak Tips with Peppered Mushroom Gravy w/ Whole Wheat Noodles and Potato Pancakes. When I first read it sounded delicious, and I was right! Another keeper recipe. The Steak is tender and the Mushroom Gravy is perfect with the Staek and Noodles. I am a Gravy Lover and this makes one good mushroom Gravy! I’ll be using this quite often.

 
The recipe called for Egg Noodles but I replaced that with Ronzoni Healthy Harvest 100% Whole Grain Extra Wide Noodles. Their 100% Whole Grain and 180 calories and 41 carbs. For my Steak Tips I used a Sirloin Steak, I purchased from Walmart, that I trimmed and cut into about 3/4″ cubes. Then to prepare it you’ll need, along with the Noodles and Sirloin Steak, Pam Cooking Spray, 1 tablespoon Blue Bonnet Light Butter, 1 (8-ounce) package presliced baby bella mushrooms, 1 teaspoon Minced Garlic, 1 tablespoon Low-Sodium Soy Sauce, 3 tablespoons all-purpose Flour, 1 1/2 cups Swanson Fat-Free, Low-Sodium Beef Broth, 1/2 teaspoon Black Pepper, 1/4 teaspoon Sea Salt, 3 fresh Thyme Sprigs, and 1 teaspoon fresh or dried Thyme Leaves (optional).

 
To prepare just cook the noodles according to package directions, omitting salt and fat; drain. While noodles are cooking, heat a large Steak Tips Mushroom Gravy 002nonstick skillet over medium-high heat. Coat the pan with cooking spray. Add steak; sauté 5 minutes, browning on all sides. Remove from pan; and cover. Melt the butter in the pan over medium-high heat. Add mushrooms; sauté 4 minutes. Add garlic; sauté 30 seconds. Stir in the soy sauce. Sprinkle flour over the mushroom mixture; cook 1 minute, stirring constantly. Gradually add broth, stirring constantly. Add pepper, salt, and thyme sprigs. Bring to a boil; cook 2 minutes or until thickened. Return beef to pan; cook 1 minute or until thoroughly heated. Discard thyme sprigs and garnish with thyme leaves, if desired. To serve make a bed in your plate with the noodles and top it off with Steak Tips with Peppered Mushroom Gravy. I also made some Potato Pancakes as a side, more of my Mom’s request than anything. I used Manischewitz Reduced Sodium Potato Pancake Mix. Easy to prepare and delicious!! These are great with any meal. Plus for 3 cakes it’s only 80 calories and 18 carbs.

 

 
Steak Tips with Peppered Mushroom Gravy
Ingredients:
2 cups Ronzoni Healthy Harvest 100% Whole Grain Extra Wide Noodles, uncooked
Pam Cooking Spray
1 pound top Sirloin Steak, cut into 3/4-inch pieces
1 tablespoon Blue Bonnet Light Butter
1 (8-ounce) package presliced baby bella mushrooms
1 teaspoon Minced Garlic
1 tablespoon Low-Sodium Soy Sauce
3 tablespoons all-purpose Flour
1 1/2 cups Swanson Fat-Free, Low-Sodium Beef Broth
1/2 teaspoon Black Pepper
1/4 teaspoon Sea Salt
3 fresh Thyme Sprigs
1 teaspoon fresh or dried Thyme Leaves (optional)

It comes in a 5 serving can and contains the Noodles and Seasoning, I added the Chicken. I cut up 2 Chicken Breasts seasoning them with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsley. I then fried them in a large skillet until done and added the can of Fixins’. A beautiful sunny but crisp Fall Day out today! So for dinner tonight I wanted something hot and hearty so I went with Margaret Holmes Simple Suppers Chicken ‘n’Noodles Fixins’. It comes in a 5 serving can and contains the Noodles and Seasoning, For the Chicken I purchased a Roasted Chicken from Walmart earlier in the day and pulled all the meat off the bone. I first started the Noodles and Sauce and heated it until the Sauce was bubbling and heated throughout. I then added the Chicken that I had pulled off the bone and stirred until the chicken was mixed in and heated and served. The broth that’s with Noodles is incredible! Busy running errands most of the day. It was another perfect day out, about 81degrees, sunny with a slight breeze. Anyway for dinner tonight I went with the Margaret Holmes Simple Suppers Chicken ‘n’Noodles Fixins’. It comes in a 5 serving can and contains the Noodles and Seasoning, I added the Chicken. I cut up 2 Chicken Breasts seasoning them with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsley. I then fried them in a large skillet until done and added the can of Fixins’. Cooked until it the Sauce was bubbling and heated throughout. The broth that’s with Noodles is incredible! Rich and thick and seasoned just right. I left the info and web site link to Margaret Holmes at the end of the post. I had sides of sliced Carrots and Baked 9 Grain Bread. First time I tried the 9 Grain Loaf. It’s from the Walgreen Bakery and it’s a keeper! It’s a real moist and delicious tasting bread. The combination of all the different grains come together to give it a unique and delicious fresh taste. Just baked at 400 degrees for 12 minutes and it’s done. For dessert later a Jello Sugar Free Dark Cherry Jello, only 10 calories!

Today’s Menu: Tofu Spaghetti and Turkey Meatballs

Tofu Spaghetti! This is a great Pasta substitute. I used House Tofu Shirataki Spaghetti Shaped. I rinsed and heated the Tofu by the instructions, which I left at the bottom of the post along with description and web links. Plus it’s only 20 calories and 3 carbs per serving! It comes packaged 2 servings per bag and with the low calories and low carbs you can have both servings for only 40 calories and 6 carbs. That’s a huge difference between whole wheat pasta and the tofu calorie and carb count. You’ll have to give this a try I think you’ll be surprised. I left the Tofu info and web site link at the bottom of the post.

For my sauce I used my favorite pasta Sauce, Bella Vita Low Carb Meat Flavored Pasta Sauce. If you watching the calories and carbs this sauce is the Bomb! Comes in Roasted Garlic and Meat Flavored and is only 70 calories and 6 carbs! The Meatballs were Honey Suckle White Turkey Meatballs. Love these Meatballs great flavor and they make a delicious Meatball Sub! They are 190 calories and 6 carbs per serving (3 Meatballs). I seasoned it with McCormick Grinder Italian Seasoning and topped everything with a sprinkle of Kraft Shredded Parm and Kraft 2% Shredded Sharp Cheddar. 330 Calories and 16 carbs for a Spaghetti Dinner, not including your bread. For dessert later a Yoplait Chocolate/Banana Smoothie.

Directions:
Step 1: Empty your noodles into a strainer, and rinse them with water to get rid of the liquid they were packed in.

Step 2: Dry them as thoroughly as possible by blotting with paper towels — remove as much moisture as possible. We cannot stress enough how important this is.

Step 3: Cut them up a bit; they can be VERY long. (Fun fact: We once found a noodle that was six feet long!) Kitchen shears (scissors you use only for food) make this super-easy.

Step 4: Heat your noodles for a minute or two in the microwave or in a skillet on the stove. (If microwaving, you may want to blot for liquid one more time before adding sauce.)

Today’s Menu: Chicken ‘n’ Noodles

 

I’m feeling a whole lot better today! I’m glad it was just a 24 hour bug. The rest of the family is dealing with it though. So for dinner tonight I went with the Margaret Holmes Simple Suppers Chicken ‘n’Noodles Fixins’. It comes in a 5 serving can and contains the Noodles and Seasoning, I added the Chicken. I cut up 2 Chicken Breasts seasoning them with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsley. I then fried them in a large skillet until done and added the can of Fixins’. Cooked until it the Sauce was bubbling and heated throughout. The broth that’s with Noodles is incredible! Rich and thick and seasoned just right. I left the info and web site link to Margaret Holmes at the end of the post. I had sides of sliced Carrots and Healthy Life Whole Grain Bread. For dessert later I made some Chocolate Cupcakes using Pillsbury Sugar free Cake Mix and Sugar Free Frosting!
