Today’s Menu: Bluegrass Lean Bratwurst w/ Baked Ruffle’s Potato Chips

So to start my morning off I toasted a couple of Eggo Waffles and had a cup of Bigelow Decaf Green Tea. After Breakfast I headed up to the rehab center to see Dad. He’s making good progress, getting stronger and starting to walk some now. Stopped by the bank on the way back home and dropped by a friends house for a bit. For Dinner tonight I prepared some Bluegrass Lean Bratwurst with a side of Baked Ruffle’s Potato Chips.

 

 

I used Blue Grass Lean Bratwurst which are 100 calories and 4 carbs per Brat, not bad at all for Brats. To prepare Bluegrass Lean Bratwurst w Baked Potato Puffs 001them; Just add the Brats to a large skillet and add water, until the Brats are half way covered. Bring them to a brisk boil but then immediately turn down the heat to a very low boil, more of a simmer than an active boil. Simmer for about 15 to 20 minutes, then finish off in a pan with just the Brats and a little Extra Virgin Olive Oil to get a nice crispy finish. Love this method, if you can’t grill them. Delicious, plump, and they cook up great! Served it on a Kroger Whole Grain Hot Dog Bun topped with French’s Spicy Brown Mustard. I also had some Ruffle’s Reduced Fat Potato Chips. Then for dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar. Love these, only 80 calories and 12 net carbs per bar!

So to start my morning off I Scrambled some Egg Beater’s Egg Whites, seasoned with Sea Salt and Ground Pepper. Bluegrass Lean Bratwurst w Baked Ruffle's Chips 009Next I fried 2 Jennie – O Turkey Breakfast sausage Links and toasted 2 slices of Healthy Life Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. After Breakfast I headed up to the assisted living center to see my friend, still not much change in him yet. On the way back home stopped by Kroger for a few items and then stopped by the bank before heading back home. Not a lot to do today, I was caught up on everything. So I got the cart out drove around the neighborhood and then down by the lake for a while. Mostly sunny and near a record high for this date, 86 degrees! I don’t think I have ever seen so many Squirrels. All of them were running back and forth between all the Oak Trees we have in the neighborhood gathering Acorns. For Dinner tonight I prepared some Bluegrass Lean Bratwurst with a side of Baked Ruffle’s Potato Chips.

 

 

I used Blue Grass Lean Bratwurst which are 100 calories and 4 carbs per Brat. Bring them to a brisk boil but then immediately turn down the heat to a very low boil, more of a simmer than an active boil. Simmer for about 15 to 20 minutes, then finish off in a pan with just the Brats and a little Extra Virgin Olive Oil to get a nice crispy char and finish. Love this method, if you can’t grill them. Delicious, plump, and they cook up great! Served it on a Aunt Millie’s Reduced Fat Whole Grain Hot Dog Bun topped with French’s Spicy Brown Mustard. I also had some Baked Ruffle’s Potato Chips. For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugarless Blackberry Jam. Really love Smucker’s sugar-free Jams and toppings, you can’t taste a difference between the sugarless and regular Jam products. I also had that morning cup of Bigelow Decaf Green Tea. Another product I love having every day. Big change in the weather out there today! Mostly sunny, a high of 79 degrees, and the big thing low or no humidity! About time. Got some cleaning done inside and then some cleaning outside. Everything done I got the cart out and spent most of the afternoon riding around enjoying this beautiful day! For Dinner tonight I prepared Bluegrass Lean Bratwurst w/ Baked Crinkle Fries.

While at Jungle Jim’s International Market yesterday I picked up a couple of packages of Bluegrass Deliciously Lean Bratwurst. These are so hard to find in this area, I had to write Blue Grass Meats last year because no local stores had any of them in stock. Now Kroger and Jungle Jim’s both carry them! So I kept one package out and put the other in the freezer.

For Breakfast it was a couple of Jennie – O Turkey Breakfast Sausage links and a toasted Healthy Life Whole Grain English Muffin. Along with my morning cup of Bigelow Decaf Green Tea, I was set to start my day. After Breakfast I Bluegrass Lean Bratwurst w Baked Potato Puffs 008headed up to the local Kroger, I needed a few items and Mom needed a couple of things. Back home got everything put away and did some light cleaning. I spent the afternoon yesterday over seeing Dad at the rehab center. He’s finally getting stronger and walking with a walker on his own. He’ll be home Tuesday! So anyway I didn’t get a whole lot of sleep last night, Phantom Pains started a little after midnight. Hate dealing with those, so painful and aggravating! For dinner tonight I prepared a Bluegrass Lean Bratwurst w/ Baked Potato Puffs.

While digging in the freezer I found a couple of packages of Bluegrass Deliciously Lean Bratwurst. Then for a side dish I prepared something new, Alexia Potato Puffs. To prepare them; Preheat the oven to 425 Bluegrass Lean Bratwurst w Baked Potato Puffs 002degrees F. Arrange the frozen potatoes in a single layer on a baking sheet lined with foil. Baked for 25, stirring halfway through the cooking time. And Bam got another Keeper Potato Product! Browned up perfect with excellent seasoning. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

It was one of those long and sleepless nights for me as I battled with a very bad case of Phantom Pains. They started last night around 8:00 and continued through most of today. So little to no sleep last night. About 4:30 this morning I had just managed to doze off and we got hit by one strong thunderstorm, and I mean strong! The thunder was so loud it was rattling pictures and the China in Mom’s China Cabinet. We had to well over 1-2 inches of rain. Then through the day we had rain on and off. Good day to stay in and get caught up on some sleep and relaxation. For dinner tonight I prepared a couple of Bluegrass Lean Bratwurst w/ Baked Ruffle’s Potato Chips

Started my morning off with some Waffles. I used Bisquick Heart Healthy Mix to make them. I also had a couple of Eckrich Smoked Turkey Sausage Links and my morning cup of Bigelow Decaf Green Tea. Cleaning today, vacuum, dusting, and such. Out in our backyard we have 2 different Rabbit nests, 1 nest is already gone it had about 6 or 7 babies in it. Mostly cloudy out had a high of 78 degrees, a bit cooler. Had the cart out later in the day. For dinner tonight Bluegrass Lean Bratwurst w/ BBQ Baked Beans.

For a side to go with my Brats I prepared some BBQ Baked Beans. I made a very small amount, I used a 2 Serving Bluegrass Lean Bratwurst w BBQ Baked Beans 002can of Bush’s Original Baked Beans Seasoned with Bacon and Brown Sugar. Just the right size if cooking for one. I emptied the can into a small sauce pan. I added 3 tablespoons of Jack Daniels Honey Smoked BBQ Sauce to it, stirred until well mixed. Simmered for about 8 minutes and it’s done. The BBQ Sauce gives it a nice Smokey Flavor. Makes a nice little side, easily made and easy clean-up. Brats and Beans on a Saturday! For dessert later a Jello Sugar Free Dark Chocolate Pudding. Love these Sugarless Pudding Cups, only 60 calories and 10 net carbs per cup.

Today’s Menu: Mettwurst on Bun w/ Spaetzle with Sage
It’s been a very laid back day around the house. Mom and Dad went to Church and then out for a salad afterwards Mettwurst on Bun w Spaetzle with Sage 005with friends. I’ve just been puttering around the house catching up on some minor repairs around the house and some cleaning. Everything is done so I settled back for an afternoon of Nascar and Baseball. For dinner tonight a little German Cuisine flair tonight, Mettwurst on Bun w/ Spaetzle with Sage.

 
I’ve been looking for more Bluegrass Lean Bratwurst for quite a while now, another item you can’t find in this area no longer. I’m beginning to think that stores want you to eat the fattest version of foods, so they just don’t have to carry the leaner and healthier versions of food! I emailed Bluegrass Meats and they replied that the item is carried by all Kroger stores, Which is Wrong! I’ve checked all local Kroger stores and none do. So anyway I came across bluegrass Lean Mettwurst and thought I would give them a try. I really had not had a Mett in years, a lot of years! So I bought a package at Kroger the other day.

To prepare them I used a medium size skillet and added the Metts. I then added water to the pan, just enough water to cover about a 1/4 of Mett. Turned the heat on medium and covered the pan. I turned the Metts frequently to get a nice even cook on them. When the water had boiled down I cooked them an extra 3 minutes to brown them. They turned out fantastic! Nice and meaty, no Brats but now I’ve got the Bluegrass Lean Mettwurts! Just wonder when Kroger will stop carrying them! Anyway I served it on a Kroger Lite Wheat Hot Dog Bun and topped it with French’s Spicy Brown Mustard.

 

To go with my Mett I prepared some Maggi Spaetzle (Authentic German Dumplings). I make these from time to Mettwurst on Bun w Spaetzle with Sage 001time, really enjoy them. To prepare them I followed the package cooking instructions; brought 4 quarts of water to a boil in a large saucepan. Stirred in the Spaetzle; boiled uncovered, for about 27 minutes (until tender). Drained it and set aside. Then melted 2 tablespoons of Blue Bonnet Light Butter over medium heat. Added 2 tablespoons of Dried Rubbed Sage and 1 Clove Minced Garlic. Stirred frequently for another 2 minutes. Added the finished Spaetzle. Reduced the heat to low; cook, stirring occasionally, for 4 minutes. Seasoned with Sea Salt and Pepper and served. Comes out so flavorful and Dumplings so tender. Makes one excellent side dish. Very good dinner tonight! For dessert later a bowl of Del Monte No Sugar Added Peach Slices.
