Today’s Menu: Bluegrass Deliciously Lean Mettwursts

 

 


For Breakfast this morning I prepared 1 Egg Sunny Side Up, fried 3 strips of al fresco Chicken Bacon, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread that I lightly Buttered with I Can’t Believe It’s Not Butter, and had a cup of Bigelow Decaf Green Tea. Outside its cloudy but a whole lot cooler, high of 66 degrees. Got the cart out of the shed and did some yard work up until my allergies got too bad. This has to be the worst Summer with my allergies by far! For Dinner I prepared a couple of Bluegrass Deliciously Lean Mettwursts for Dinner tonight.

 

 


I had purchased a couple of packages of the Bluegrass Lean Mettwurst while at Jungle Jim’s International Market last week. I had kept one package out that I had them a few weeks ago. Mom really loves them so I got the other package out of the freezer and let it thaw in the fridge overnight.

 

 

 

To prepare them I used a medium size skillet that I sprayed with Pam Cooking Spray and added the Metts. I then added water to the pan, just enough water to cover about a 1/4 of Metts. Turned the heat on medium and covered the pan. I turned the Metts frequently to get a nice even cook on them. When the water had boiled down I cooked them an extra 3 minutes to brown them. They turned out fantastic, nice and meaty! Plus being the Bluegrass Lean type , just 1/2 the calories of other Metts. I served them on Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Buns and topped with French’s Spicy Brown Mustard. I also made a Baked Potato for Mom. A couple of Metts was plenty for Dinner tonight for me. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Bluegrass Deliciously Lean Mettwursts  (Dinner yesterday, failed to post)

 

 

 

For Breakfast I toasted a Thomas 100 Calorie Light Whole Grain English Muffin. The I heated up a an al fresco Chicken Sausage Pattie and made a Breakfast Sandwich. Also had a cup of Bigelow Decaf Green Tea. I had to be at my Eye Checkup at 8:45, one of my least favorite things to do. I hate being poked and prodded but with Diabetes 2 I have to have a yearly check. Outside its partly cloudy with passing rain showers, 87 degrees and humid. Back home not a lot going on today so I took easy, my allergies are running wild today. I prepared a couple of Bluegrass Deliciously Lean Mettwursts for Dinner tonight.

 

 

I had purchased a couple of packages of the Bluegrass Lean Mettwurst while at Jungle Jim’s International Market last week. I had kept one package out that I had been having for Lunch and froze the remaining package.

 

 

 

 

 

To prepare them I used a medium size skillet that I sprayed with Pam Cooking Spray and added the Metts. I then added water to the pan, just enough water to cover about a 1/4 of Metts. Turned the heat on medium and covered the pan. I turned the Metts frequently to get a nice even cook on them. When the water had boiled down I cooked them an extra 3 minutes to brown them. They turned out fantastic, nice and meaty! Plus being the Bluegrass Lean type , just 1/2 the calories of other Metts. I served them on Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Buns and topped with French’s Spicy Brown Mustard. A couple of Metts was plenty for Dinner tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Mango Snapple to drink.

Today’s Menu: Bluegrass Lean Bratwurst w/ Bourbon and Brown Sugar Grillin’ Beans

 

 

 

Sort of pressed for time, some family problems. For Dinner tonight I prepared some Bluegrass Lean Bratwurst w/ Bourbon and Brown Sugar Grillin’ Beans.

 

 

 

 

 

 

I used Blue Grass Lean Bratwurst which are 100 calories and 4 carbs per Brat, not bad at all for Brats. To prepare them; Just add the Brats to a large skillet and add water, until the Brats are half way covered. Bring them to a brisk boil but then immediately turn down the heat to a very low boil, more of a simmer than an active boil. Simmer for about 15 to 20 minutes, then finish off in a pan with just the Brats and a little Extra Virgin Olive Oil to get a nice crispy finish. Love this method, if you can’t grill them. Delicious, plump, and they cook up great! Served it on a Kroger Whole Grain Hot Dog Bun topped with French’s Spicy Brown Mustard.

 


Then for a side I prepared some Bush’s Grillin’ Beans Bourbon and Brown Sugar. Not sure if I’ve had these before or not, but they sure are good! As all Bush Beans are. I just emptied the can into a small sauce pan and heated them until they started to simmer, and serve. Then for Dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar. Love these, only 80 calories and 12 net carbs per bar!

Today’s Menu: Bluegrass Lean Bratwurst w/ Bourbon and Brown Sugar Grillin’ Beans

 

 

For Breakfast this morning I made Breakfast for everyone. Mom and Dad usually have McDonald’s but this morning I’m making Breakfast. I prepared a package of Jennie – O Turkey Breakfast Sausages, made Scrambled Eggs for everyone, made some packages of Instant Grits, toasted 2 types of Bread – Raisin Bread and Aunt Millie’s light Whole Grain Bread. Mom and Dad wanted the Raisin Bread, not a big fan of it myself. I also made Coffee for the Folks and a cup of Bigelow Decaf Green Tea for myself. Outside it’s in the 90’s, very humid, and rain on and off. So between the rain and humidity there wasn’t a lot going on outside. So I did some cleaning inside, vacuum and dusted. Then took the brushes out of the vacuum and cleaned them and washed out the vacuum filter. Moved on to the Pantry and straightened it up. Full day today. For Dinner tonight its Bluegrass Lean Bratwurst w/ Bourbon and Brown Sugar Grillin’ Beans.

Today’s Menu: Bluegrass Deliciously Lean Mettwursts

 

 

To start the 28th day of June off I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. We had to have dad at the Doctor’s office at 10:00 this morning for a checkup. The Doc said he was doing okay nothing new. But he did tell us that lungs are getting weaker every visit though. Not much anyone can do. Outside it’s a bit more humid, windier, and 83 degrees. I went to Kroger for Mom to pick up a prescription for Dad and stopped by the bank for her. A pretty simple Dinner tonight, I prepared a couple of Bluegrass Deliciously Lean Mettwursts.

Today’s Menu: Mettwurst on Bun w/ Spaetzle with Sage

 

 

For Breakfast this morning I a alfresco Apple Maple Chicken Sausage Breakfast Patty. I found more of these at Meijer the other day and picked a few of the packages up. I love making these and making them into a Breakfast Sandwich. I fried the patty for 8 minutes and as that was cooking I toasted a Healthy Life Whole Grain English Muffin. Along with my Breakfast Sandwich I had that morning cup of Bigelow Decaf Green Tea. Partly sunny with a passing shower, 77 degrees. After I had Breakfast I went up to McDonald’s and picked up Breakfast for Mom and Dad. Later in the day I went to Home Depot, I’m still getting estimates and picking out back splash tiles for the kitchen. Back home did a few things around the house. For dinner tonight a little German Cuisine flair tonight, Mettwurst on Bun w/ Spaetzle with Sage.

 

 

 

I came across some Bluegrass Lean Mettwurst while at Jungle Jim’s Market and grabbed a couple of packages of it. I froze one package and kept the other one in the fridge, and having them for Dinner tonight.

 

 

 

 

 

 

 

To prepare them I used a medium size skillet and added the Metts. I then added water to the pan, just enough water to cover about a 1/4 of Mett. Turned the heat on medium and covered the pan. I turned the Metts frequently to get a nice even cook on them. When the water had boiled down I cooked them an extra 3 minutes to brown them. They turned out fantastic, nice and meaty! I served it on a Healthy Life Whole Grain Hot Dog Bun topped with French’s Spicy Brown Mustard.

 

 

 

 

To go with my Mett I prepared some Maggi Spaetzle (Authentic German Dumplings). I make these from time to time, really enjoy them. To prepare them I followed the package cooking instructions; brought 4 quarts of water to a boil in a large saucepan. Stirred in the Spaetzle; boiled uncovered, for about 27 minutes (until tender). Drained it and set aside. Then melted 2 tablespoons of Blue Bonnet Light Butter over medium heat. Added 2 tablespoons of Dried Rubbed Sage and 1 Clove Minced Garlic. Added that to the finished Spaetzle and stirred until well mixed. Seasoned it with Sea Salt and Ground Pepper and served. Comes out so flavorful and Dumplings are so tender. Makes one excellent side dish. Something a little different, a very good dinner tonight!

Today’s Menu: Bluegrass Lean Bratwurst w/ Baked Vegetarian Beans

 

 
For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. After Breakfast headed to Meijer for a few items, stopped and got gas, then stopped at McDonald’s and picked up Breakfast for Mom. High of 75 degrees with showers on and off. Made Dad a couple of small loaves of Pillsbury Nut Quick Bread, his favorite. Then later in the afternoon took them over to him. It looks as though he’s got a couple more weeks of rehab before possibly coming home. Back home did a few things around the house. For Dinner tonight its Bluegrass Lean Bratwurst w/ Baked Vegetarian Beans.

To prepare the; just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Beans! For Dinner tonight I prepared some Bluegrass Lean Bratwurst with a side of Baked Ruffle’s Potato Chips.

Today’s Menu: Bluegrass Lean Bratwurst w/ Baked Ruffle’s Potato Chips

 

 
So to start my morning off I Scrambled some Egg Beater’s Egg Whites, seasoned with Sea Salt and Ground Pepper. Bluegrass Lean Bratwurst w Baked Ruffle's Chips 009Next I fried 2 Jennie – O Turkey Breakfast sausage Links and toasted 2 slices of Healthy Life Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. After Breakfast I headed up to the assisted living center to see my friend, still not much change in him yet. On the way back home stopped by Kroger for a few items and then stopped by the bank before heading back home. Not a lot to do today, I was caught up on everything. So I got the cart out drove around the neighborhood and then down by the lake for a while. Mostly sunny and near a record high for this date, 86 degrees! I don’t think I have ever seen so many Squirrels. All of them were running back and forth between all the Oak Trees we have in the neighborhood gathering Acorns. For Dinner tonight I prepared some Bluegrass Lean Bratwurst with a side of Baked Ruffle’s Potato Chips.

 

 

I used Blue Grass Lean Bratwurst which are 100 calories and 4 carbs per Brat. To prepare them; Just add the Brats toBluegrass Lean Bratwurst package on counter a large skillet and add water, until the Brats are half way covered. Bring them to a brisk boil but then immediately turn down the heat to a very low boil, more of a simmer than an active boil. Simmer for about 15 to 20 minutes, then finish off in a pan with just the Brats and a little Extra Virgin Olive Oil to get a nice crispy char and finish. Love this method, if you can’t grill them. Delicious, plump, and they cook up great! Served it on a Aunt Millie’s Reduced Fat Whole Grain Hot Dog Bun topped with French’s Spicy Brown Mustard. I also had some Baked Ruffle’s Potato Chips. Then for dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar. Love these, only 80 calories and 12 net carbs per bar!

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugarless Blackberry Jam. Really love Smucker’s sugar-free Jams and toppings, you can’t taste a difference between the sugarless and regular Jam products. I also had that morning cup of Bigelow Decaf Green Tea. Another product I love having every day. Big change in the weather out there today! Mostly sunny, a high of 79 degrees, and the big thing low or no humidity! About time. Got some cleaning done inside and then some cleaning outside. Everything done I got the cart out and spent most of the afternoon riding around enjoying this beautiful day! For Dinner tonight I prepared Bluegrass Lean Bratwurst w/ Baked Crinkle Fries.

While at Jungle Jim’s International Market yesterday I picked up a couple of packages of Bluegrass Deliciously Lean Bratwurst. These are so hard to find in this area, I had to write Blue Grass Meats last year because no local stores had any of them in stock. Now Kroger and Jungle Jim’s both carry them! So I kept one package out and put the other in the freezer.

For a side I baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup. Also had a Diet Dr. Pepper to drink. For dessert later a Jello Sugar Free Dark Chocolate Mousse.
