Today’s Menu: Turkey Tacos and Refried Beans
For Breakfast I had a cup of Bigelow Decaf Green Tea. 27 degrees this morning, a bit nippy out there! After my Tea I warmed the car up for a bit and then headed off to Meijer. Wow grocery items just keep going up and up in price! From what they say it’s going to get worse! Gas this morning is up to $3.35 a gallon and across town it’s $3.59 a gallon! We’ll have to make sure every trip counts. I stopped on the way home and picked up Breakfast at McDonald’s for Mom. Back home I had to get the rake and leaf blower out, we overrun with leaves. For Dinner it’s Turkey Tacos and Refried Beans. Enjoy and Take Care!
We love our Turkey Tacos, great Comfort food for us! When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, and Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Old El Paso together make one fine Taco!
For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. The Tacos hit the spot! For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Cast Iron Skillet Pizza – Turkey Pepperoni and Turkey Sausage
To start the morning off I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. Cloudy and and a high of 31 degrees. I had to have my Mom out to Ross, Ohio at the CVS Drugstore. She got her 1st COVID Vaccination Shot. I’m really surprised that she got it, she’s been saying she was not getting one. Her friends talked her into it, they all got theirs this past Tuesday at the same place. I’m glad she did though, she’ll be 93 next month! I’m so lucky to still have around! Back home just did a few chores around the house. For Dinner tonight Cast Iron Skillet Pizza – Turkey Pepperoni and Turkey Sausage.
I had not made this in quite some time and a Pizza sounded good for tonight! Cast Iron Skillet Pizza, it uses my favorite piece of cookware, the Cast Iron Skillet, and it’s making one of my favorite foods, Pizza. I use Pillsbury Classic Pizza Crust when making my own Pizza. For my toppings I’m using; Hormel Turkey Pepperoni, Jennie – O Turkey Ground Sausage, Sliced Mushrooms, Sliced Black Olives, Sliced Green Olives, Sargento Shredded Mozzarella Cheese, and Ragu Original Pizza Sauce. Using a medium size Skillet, I fried the Jennie – O Turkey Ground Breakfast Sausage ahead of time. When that was done I drained what little grease there was and put the Sausage in a small bowl, and set aside.
I preheated the oven to 425 degrees. I then took out a large Cast Iron Skillet, spraying it with Pam Cooking Spray w/ Olive Oil and added a tablespoon of Extra Light Olive Oil. Got the tube of Pillsbury Pizza Crust from the fridge and removed it from the packaging. I then got a flour board out and added a little bit of flour and Cornmeal to it. I then took the Pizza Dough on it and formed a ball with it. Sprinkled on some Cornmeal and rolled it out and shaped it by hand I love that crunch texture Cornmeal gives the bottom of the Pizza Crust.
I added it to the Cast Iron Skillet and worked it out by hand, fully covering the bottom of the Skillet. I flipped the Dough Crust one time, that way I had a light coating of the Olive Oil on both sides.
I then added my toppings; Hormel Turkey Pepperoni, Jennie – O Turkey Ground Sausage, Sliced Mushrooms, Sliced Black Olives, Sliced Green Olives, Sargento Reduced Fat Shredded Mozzarella Cheese, and Ragu Original Pizza Sauce. Slid that baby into the oven and wait for it to get done! Baked it a total of about 15 minutes.
It came bubbling hot and just flat out delicious! All the toppings and Sauce work great together, this makes one delicious Pizza. As all Pizzas you decide what toppings you want to use.
Really enjoyed this. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Black Bean and Turkey Tacos with Fiesta Flats Tacos
A beautiful sunny day out for the first day of Spring! Had a cool breeze blowing all day but it still hit about 40 degrees. Nothing going on today but the NCAA March Madness! The Tournamentstarted today at 12:15 with games on till Midnight. So if you’re a College Basketball fan, which I am, It’s your time of year! For dinner tonight, one of my favorites, Taco Night! Black Bean and Jennie – O Turkey Tacos with the new Ortega Fiesta Flats.
As usual when it’s Turkey Tacos it’s Jennie -O Ground Turkey! Love the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I had drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos, added flavor and protein. Mixed well until everything was coated and then simmered another 5 minutes until heated through. As i said the Black Bean and Gound Turkey mix is a perfect one for Tacos, they complement each other very well.
For my other toppings I used 1 small can of Mario Sliced Black Olives, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Dean’s Guacamole Dip, Old El Paso Taco Sauce, and all in a Ortega Fiesta Flats. I love Taco Nights! You can have so many different types of Tacos with so many different toppings, just endless options for dinner. The New Ortega Fiesta Flats have quickly become one of our favorite Taco Shells. They make a nice option to the regular Taco Shell. Their 150 calories and 17 net carbs per serving, 2 Shells make a serving. They’re nice size, so you can load them up with healthy toppings. Another plus is they hold their shapes, even after you add toppings and after a couple of bites. We keep box of these in the pantry. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Fairly nice day out today, a high in the 50’s. This sinus infection has really kicked my butt! Still not feeling up to par but managed to get out and pick up a few items at the store I needed and then back to bed. Dinner tonight; Healthy Harvest Turkey Lasagna w/ Baked French Bread.
I wanted a hot dinner but I wanted something easy to prepare so I went to the freezer and pulled out some of the frozen Healthy Harvest Turkey Lasagna. I had made a batch of this a while back and froze some of it. It freezes up and reheats real good. I let it thaw in the fridge and then microwaved it. Came out as good as the day it was made! I’ll leave the recipe for this from a previous post. Along with the Lasagna I baked a loaf of Pillsbury Rustic French Bread. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.
I used the recipe that was on back of the Ronzoni Healthy Harvest Lasagna Box, Healthy Harvest Easy Lasagna. I made using the following; 1lb Jennie – O Extra Lean Ground Turkey Breast, 3 cups (26 oz jar) Ragu Light Tomato and Basil Spaghetti Sauce, 1 small container of Baby Bella Mushrooms (sliced), 1 1/2 cups Water, 1 3/4 cups (15 oz container) Miceli’s Lite Ricotta Cheese, 2 cups (8 oz) Sargento Shredded Mozzarella/Provolone Cheese, divided, 1/2 cup grated Kraft Parmesan Cheese, 2 Eggs, 1/4 cup chopped fresh Parsley, 1/2 tsp Sea Salt, 1/4 tsp ground Black Pepper, and 9 pieces Ronzoni Healthy Harvest Lasagna, uncooked. Cutting calories and carbs by using Ground Turkey Breast and the Miceli’s Lite Ricotta Cheese.
Then to prepare it I just went by the instructions on the box which are: Heat oven to 350°F. In 3-quart saucepan over medium-high heat, brown meat; drain. Add spaghetti sauce, mushrooms, and water; simmer about 10 minutes. Meanwhile, in medium bowl, stir together ricotta cheese, one-half mozzarella cheese, Parmesan cheese, eggs, parsley, salt and pepper. 5. Pour about 1 cup sauce on bottom of 13×9-inch baking dish. Arrange 3 UNCOOKED pasta pieces lengthwise over sauce; cover with 1 cup sauce. Spread one-half cheese filling over sauce. Repeat layers of RONZONI HEALTHY HARVEST LASAGNA, sauce and cheese filling. Top with layer of RONZONI HEALTHY HARVEST LASAGNA and remaining sauce; sprinkle with mozzarella cheese. Cover with foil. Bake 45 minutes. Remove foil; bake additional 10 minutes or until hot and bubbly. Let stand 10 minutes before cutting. The Lasagna came out perfect! You should come out with one delicious dish of Homemade Lasagna!
Ronzoni Healthy Harvest Easy Turkey Lasagna
Ingredients
1lb ground beef
3 cups (26 oz jar) spaghetti sauce
1 small container of baby bella mushrooms, sliced
1 1/2 cups water
1 3/4 cups (15 oz container) ricotta or small curd cottage cheese
2 cups (8 oz) shredded mozzarella or Monterey Jack cheese, divided
1/2 cup grated Parmesan cheese
2 eggs
1/4 cup chopped fresh parsley
1/2 tsp salt
1/4 tsp ground black pepper
9 pieces RONZONI HEALTHY HARVEST LASAGNA, uncooked
Directions
Heat oven to 350°F. In 3-quart saucepan over medium-high heat, brown meat; drain. Add spaghetti sauce, mushrooms, and water; simmer about 10 minutes. Well our fling of Spring Weather ended, only a high in the mid 30’s out today. It rained a bit this morning and then turned to snow flurries on and off the rest of the day. Not much warmer next week and they say it will be in the single digits a few mornings. It sure seems like it’s been one long Winter. So what better way to heat the inside up than some Turkey Lasagna! For dinner tonight I made some Healthy Harvest Turkey Lasagna w/ Baked French Bread.
I used the recipe that was on back of the Ronzoni Healthy Harvest Lasagna Box, Healthy Harvest Easy Lasagna. The Lasagna came out perfect! Everything tasted so fresh and as usual the Jennie -O Turkey was star bringing everything together to make one delicious dish! Plenty of leftovers for another meal or to freeze for later use. I’ve frozen this several times and it always comes out great after reheating. I left the original recipe at the bottom of the post. With just a few changes I saved on calories, carbs, and fat grams.I also baked a loaf of Pillsbury Rustic French Bread. For dessert later tonight, while watching The Amazing Race All-Stars, a Healthy Choice Frozen Dark Fudge Swirl Frozen Yogurt.
Ronzoni Healthy Harvest Easy Turkey Lasagna
Ingredients
1lb ground beef
3 cups (26 oz jar) spaghetti sauce
1 small container of baby bella mushrooms, sliced
1 1/2 cups water
1 3/4 cups (15 oz container) ricotta or small curd cottage cheese
2 cups (8 oz) shredded mozzarella or Monterey Jack cheese, divided
1/2 cup grated Parmesan cheese
2 eggs
1/4 cup chopped fresh parsley
1/2 tsp salt
1/4 tsp ground black pepper
9 pieces RONZONI HEALTHY HARVEST LASAGNA, uncooked
Directions
Heat oven to 350°F. In 3-quart saucepan over medium-high heat, brown meat; drain. Add spaghetti sauce, mushrooms, and water; simmer about 10 minutes. Meanwhile, in medium bowl, stir together ricotta cheese, one-half mozzarella cheese, Parmesan cheese, eggs, parsley, salt and pepper. 5. Pour about 1 cup sauce on bottom of 13×9-inch baking dish. Arrange 3 UNCOOKED pasta pieces lengthwise over sauce; cover with 1 cup sauce. Spread one-half cheese filling over sauce. Repeat layers of RONZONI HEALTHY HARVEST LASAGNA, sauce and cheese filling. Top with layer of RONZONI HEALTHY HARVEST LASAGNA and remaining sauce; sprinkle with mozzarella cheese. Cover with foil. Bake 45 minutes. Remove foil; bake additional 10 minutes or until hot and bubbly. Let stand 10 minutes before cutting.

Today’s Menu: Black Bean and Turkey Tacos with Fiesta Flats Tacos
We missed the damaging part of the storm that moved through the region. Got a lot of heavy rain with some strong winds from time to time. The rain did get rid of most of our snow that was left though. I actually think it’s more windy today than overnight. Went to Kroger to pick up a few items and was heading home on I-75 and it was struggle for everyone driving as the winds were very high. For dinner tonight, one of my favorites, Taco Night! Black Bean and Jennie – O Turkey Tacos with the new Ortega Fiesta Flats.
As usual when it’s Turkey Tacos it’s Jennie -O Ground Turkey! Love the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I had drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos, added flavor and protein. Mixed well until everything was coated and then simmered another 5 minutes until heated through. The Black Bean and Gound Turkey mix is a perfect one for Tacos, they complement each other very well.
For my other toppings I used 1 small can of Mario Sliced Black Olives, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Dean’s Guacamole, Old El Paso Taco Sauce, and all in a Ortega Fiesta Flats. I love Taco Nights! You can have so many different types of Tacos with so many different toppings, just endless options for dinner. First time we tried the New Ortega Fiesta Flats. They make a nice option to the regular Taco Shell. Their 150 calories and 17 net carbs per serving, 2 Shells make a serving. They’re nice size, so you can load them up with healthy toppings. Another plus is they seem to hold their shapes, even after a couple of bites. I’ll keep box of these in the pantry. For dessert later a Weight Watchers Mini Ice Cream Cone.

Not to bad out this morning, in the low 20’s! A beautiful Winter’s Day out today, high around 31 and sunny all day. We just missed a good snow overnight though. We usually are the area that gets hit but this one went just south and east. They got 6″ or more in some areas. We’ll wait and see what happens with the next storm coming through Tuesday Night into Wednesday. I’ll have to stock up on some products this week, some nice sales going on at Meijer and Kroger this week. For dinner tonight I prepared Black Bean and Turkey Tacos, also adding some of my new favorite ingredients the Delallo Tri-Color Pepperazzi Spicy Sweet Peppers.
I used Jennie – O Extra Lean Ground Turkey Breast. Love the Jennie -O Turkey Products, always fresh and low calorie and low carb. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. Turkey-Stuffed Peppers
Old fashioned stuffed bell peppers with a healthy twist, made with Ground Turkey and Brown Rice!
Ingredients:
1 pound Jennie – O Extra Lean Ground Turkey Breast
4 medium green, red or yellow Bell Peppers
1/4 cup chopped onion
1/4 cup uncooked Brown Rice
3 tablespoons Hunt’s Ketchup
1/2 teaspoon Sea Salt
1/2 teaspoon dried oregano
1/4 teaspoon Ground Black Pepper
Sauce:
1 (14 1/2-ounce) can Hunt’s Italian-style Stewed Tomatoes, undrained
1 tablespoon Hunt’s Ketchup
1 tablespoon Worcestershire Sauce
1/2 teaspoon Dried Oregano
Directions:
1. Preheat oven to 350°F (175°C). Cut tops off bell peppers; remove seeds.
2. Combine ground turkey, onion, brown rice, 3 tablespoons ketchup, sea salt, 1/2 teaspoon oregano and pepper in large bowl, mixing lightly but thoroughly. Spoon into peppers; stand peppers in 8 x 8-inch baking dish.
3. Combine sauce ingredients; pour over peppers. Cover dish tightly with aluminum foil.
4. Bake for 1 1/2 hours to medium (160°F | 70°C) doneness, until turkey is not pink in center and juices show no pink color.
Makes 4 servings.
