Grilled Honey Mustard Chicken Thighs with Grape and Lime Salsa
By the end of May, the days are lengthening and the temperatures are beginning to rise—ideal conditions for dining ‘al fresco’, Italian for ‘in the fresh air’. To best enjoy the fresh air, try this light and simple chicken recipe to celebrate the end of cooler days and usher in the first months of summer.

Recipe Ingredients:
8 boneless chicken thighs, pounded thin (about 2 pounds)
1/2 cup prepared honey mustard

Salsa:
1 medium cucumber, peeled, seeded and chopped
2 cups red or green seedless grapes (or a combination of the two), cut in half
1/4 cup lime juice
1 teaspoon lime zest (optional)
2 tablespoons extra virgin olive oil
1/4 teaspoon salt, or to taste
Freshly ground black pepper to taste

Cooking Directions:
1 – Prepare the grill. Chicken may be cooked on an oiled grilling pan. (The pan should be very hot before placing the chicken on it.)
2 – Brush both sides of each thigh with some honey mustard and set them aside.
3 – In a medium bowl, stir together the ingredients for the salsa and set it aside.
4 – Grill or sauté the chicken until just firm. Serve the chicken immediately with some of the salsa spooned alongside.

Southwestern Chicken Skillet
Add this tasty Southwestern skillet entrée to your repertoire of quick and easy “busy day” recipes.

Recipe Ingredients:
1 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon salt
4 skinless, boneless chicken breast halves
2 teaspoons vegetable or olive oil
2 cloves garlic, minced
1/2 cup prepared tomato-based salsa
1 tablespoon Dijon mustard
1 cup (4 ounces) shredded Wisconsin Monterey Jack or Pepper Jack Cheese
2 tablespoons chopped cilantro or green onion

Cooking Directions:
1 – Sprinkle chili powder, cumin and salt over chicken.
2 – Heat oil in a large nonstick skillet over medium heat. Add chicken and garlic; cook 5 minutes. Turn chicken over.
3 – Combine salsa and mustard; spoon over and around chicken. Continue cooking, turning chicken and stirring sauce, 5 minutes or until chicken is cooked through.
4 – Sprinkle cheese and cilantro over chicken. Continue cooking 1 to 2 minutes or until cheese is melted.

Chicken Pepper Skillet
Diabetic-friendly, spicy low-fat, low-sugar chicken, jalapeño and bell pepper stir-fry.

Recipe Ingredients:
1 tablespoon vegetable oil
12 ounces skinless, boneless chicken breasts, cut into 1/2-inch strips
2 garlic cloves, finely minced
3 bell peppers (red green and yellow) cut into thin strips
2 medium onions, sliced
1 teaspoon ground cumin
1 1/2 teaspoon dried oregano leaves
2 teaspoons chopped fresh jalapeño peppers
3 tablespoons fresh lemon juice
2 tablespoons chopped fresh parsley
1/4 teaspoon salt
Freshly ground black pepper to taste

Cooking Directions:
1 – In a large non-stick skillet, heat oil oven medium-high heat; add chicken and stir-fry until done and lightly browned, about 3 to 4 minutes.
2 – Add garlic and cook 15 seconds, stirring constantly. Add bell pepper strips, sliced onion, cumin, oregano, and chilies. Stir-fry for 2 to 3 minutes or until crisp tender.
3 – Add lemon juice, parsley, salt and pepper; toss to combine well and serve.
Makes 4 servings.

Spicy Cuban Rotisserie Chicken
A whole chicken is marinated several hours in a zesty Cuban-style herb and lime juice marinade and roasted on a rotisserie spit.

Recipe Ingredients:
1 large broiler-fryer whole chicken
1/4 cup fresh lime juice
3 tablespoons olive oil
1 shallot, minced
2 large cloves garlic, minced
1 teaspoon grated lime peel
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon ground cumin
1/4 teaspoon ground black pepper
Cilantro sprigs for garnish
Lime wedges for accompaniment

Cooking Directions:
1 – Truss chicken or tie drumsticks together.
2 – In large glass bowl, mix together lime juice, olive oil, shallot, garlic, lime peel, oregano, salt, cumin and pepper. Place chicken in mixture, turning to coat completely. Cover and refrigerate several hours or overnight, turning chicken several times.
3 – At cooking time, pour off marinade and place chicken on rotisserie spit. Cook about 1 1/2 hours or until drumsticks move easily in their sockets and juices run clear. When done, a meat thermometer inserted into the thigh will register 180°F (85°C). Remove chicken from rotisserie and place on rack; let sit about 10 minutes.
4 – Transfer chicken to platter and discard strings. Garnish with cilantro sprigs and serve with lime wedges.
Makes 4 servings.

Creamy Baked Chicken with Artichokes and Mushrooms

Ingredients
6 boneless skinless chicken breasts (about 4 ounces each)
1 1/2 teaspoons paprika
1 1/2 teaspoons dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
1 can (14 ounces) artichokes packed in water, drained
1 tablespoon butter
1 package (8 ounces) sliced cremini mushrooms
2 tablespoons all-purpose flour
3/4 cup low-sodium chicken broth
1/2 cup fat-free half-and-half

 

Directions
1 – Preheat oven to 375°F.
2 – Place chicken in 13X9-inch baking dish. Combine paprika, thyme, salt, and pepper in small bowl; mix well. Reserve 1 teaspoon seasoning mixture; set aside. Sprinkle remaining seasoning mixture evenly over chicken. Cut artichokes in half; arrange around chicken.
3 – Melt butter in large saucepan over medium heat. Add mushrooms and reserved 1 teaspoon seasoning mixture; cook and stir 5 minutes or until tender. Sprinkle flour over mushrooms; cook and stir 1 minute. Stir in broth; simmer 3 minutes or until thickened. Stir in half-and-half; cook 1 minute. Pour evenly over chicken and artichokes.
4 – Bake 30 minutes or until no longer pink.

Serving Suggestion: Serve with a steamed green vegetable such as asparagus, broccoli, or green beans.

Yield: 6 servings.

Asparagus and Cheddar Stuffed Chicken Breasts for Diabetics

Ingredients
20 asparagus spears (about 2 bunches)
2 cups fat-free reduced-sodium chicken broth
1 medium red bell pepper, chopped
1/2 teaspoon roasted crushed garlic
1 teaspoon dried parsley
1/4 teaspoon black pepper
4 boneless skinless chicken breasts (about 1/4 pound each)
4 tablespoons shredded reduced-fat Cheddar cheese
4 tablespoons corn relish (optional)

Directions
1 – Snap woody stem ends off asparagus and discard. Cut off asparagus tips about 4 inches long; set aside. Slice asparagus stalks and combine with broth, red pepper, garlic, parsley, and black pepper in saucepan. Cook over medium-high heat 25 minutes, stirring occasionally.

2 – While vegetables cook, place each chicken breast half between plastic wrap, and pound with rolling pin until approximately 1/4 inch thick.

3 – Preheat electric indoor grill with lid. Lay 5 asparagus tips across one end of each pounded breast. Top each with 1 tablespoon cheese and fold in half. Place stuffed breasts on grill and cook with lid closed for 6 minutes.

4 – Spoon vegetable sauce onto serving plates and top with cooked breast. Garnish with corn relish, if desired.

* Gelatin Salad: If desired, serve with Gelatin Salad. Mix together 4 cups ready-to-use shredded cabbage, 1 cup mandarin orange segments, and 1/2 cup fat-free vinaigrette in medium bowl. Divide mixture evenly among 4 salad plates. Remove orange gelatin from 4 ready-to-use, sugar-free gelatin dessert cups and slice gelatin with egg slicer or knife. Top each salad with gelatin slices. Garnish each serving with 1/2 tablespoon dried cranberries. Refrigerate until ready to serve.

Yield: 4 servings.

Serving size: 1 stuffed chicken breast.

Greek Lemon Chicken
Ingredients
4 boneless skinless chicken breasts (about 1/4 pound)
2 tablespoons lemon juice
2 teaspoons extra virgin olive oil
1 teaspoon grated lemon peel
1 teaspoon dried oregano
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
Nonstick cooking spray
1 lemon, cut into wedges (optional)
Baby spinach leaves (optional)

Directions
1 – Place chicken in large resealable food storage bag. Add lemon juice, olive oil, lemon peel, oregano, garlic, salt, and pepper. Seal bag. Shake to coat chicken. Marinate in refrigerator at least 30 minutes or up to 8 hours.

2 – Spray large nonstick skillet with nonstick cooking spray; heat over medium heat. Remove chicken from marinade; discard marinade. Add chicken to skillet; cook 3 minutes. Turn chicken. Reduce heat to medium-low. Cook 7 minutes or until no longer pink in center.

3 – Remove from heat. Serve with lemon wedges and spinach leaves, if desired.

Yield: 4 servings.
Serving size: 1 breast.

Spicy Apricot Glazed Chicken

Preparation time: 5 minutes. Cooking time: 25 minutes.
Ingredients
Nonstick cooking spray
2 four-ounce boneless, skinless chicken breasts
1/2 teaspoon grated fresh ginger
2 tablespoons Smuckers Simply Fruit Apricot Spreadable Fruit
1 tablespoon rice wine vinegar
1/2 teaspoon crushed red pepper flakes
1 teaspoon extra-virgin olive oil
Black pepper

Directions
* Preheat oven to 375°F. Spray a small baking sheet with nonstick cooking spray. Place the chicken breasts on the sheet. Combine the ginger, apricot spread, vinegar, pepper flakes, and olive oil in a small bowl with a fork or small whisk. Using a pastry brush or small spoon, spread the mixture evenly on the tops of the chicken breasts. Place in the oven, and bake for approximately 25 minutes until chicken is cooked through. Sprinkle with black pepper before serving.

Yield: 2 servings. Serving size: 1 breast.

Diabetic Grilled Chicken Recipe
Ingredients
1 1/2 pounds boneless, skinless chicken breasts
1/4 cup olive oil
1/2 cup balsamic vinegar
1 tablespoon (or 3 cloves) minced garlic
1/2 teaspoon dry parsley
1 teaspoon dry rosemary
3/4 teaspoon dry sage
1 teaspoon dry thyme
1 teaspoon salt
1/2 teaspoon coarse ground pepper

Directions
1 – Place chicken in a zip-top bag. In a small bowl, whisk together remaining ingredients and pour over chicken. Seal bag tightly and shake gently to coat chicken well. Allow chicken to marinate in the refrigerator for at least 2 hours, shaking bag gently twice during marinating to recoat chicken.

2 – After chicken has marinated, discard remaining marinade. Preheat grill to medium-high heat, or preheat oven broiler. Grill or broil chicken about 8–10 minutes per side, or until chicken is no longer pink and the juices are clear (cooking time may vary depending on the thickness of the meat).

Yield: 6 servings. Serving size: 4 ounces.

Baked Chicken Breasts Supreme
Recipe Ingredients:
1 1/2 cups plain yogurt or sour cream
1/4 cup lemon juice
1/2 teaspoon Worcestershire sauce
1/2 teaspoon celery seed
1/2 teaspoon Hungarian sweet paprika
1 garlic clove, minced
1/2 teaspoon salt (optional)
1/4 teaspoon freshly ground pepper
8 boneless, skinless chicken breast halves
2 cups fine dry bread crumbs

Cooking Directions:
1 – In a large bowl, combine first eight ingredients. Place chicken in mixture and turn to coat. cover and marinate overnight in the refrigerator.
2 – Remove chicken from marinade; coat each piece with crumbs.
3 – Arrange on a lightly greased shallow baking pan.
4 – Bake, uncovered, at 350°F (175°C) for 45 minutes or until juices run clear.
Makes 8 servings.
