Today’s Menu: Skillet Velveeta Whole Grain Rotini and Cheese w/ Hardwood Smoked Turkey Sausage

Rolled out to grab the morning papers and it was a bit nippy out, about 26 degrees with a breeze. The day turned out sunny and in the 40’s. Started the morning off with Simply Potatoes Hash Browns, Eckrich Turkey Breakfast SausageSkillet Velveeta Whole Grain Rotini and Cheese w Hardwood Smoked 003 Links, 1 slice Aunt Millie’s Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Bad day with Dad today, did Mom’s laundry for her she had her hands full today. Dad’s health is getting worse every day. For lunch I made everybody Pot Roast Sandwiches for lunch, used the delicious leftovers from last night’s dinner. That’s one fine recipe to keep! Did some light cleaning around the house and cleaned both our cutting boards. Used a combo of Course Sea Salt and a Lemon, works great as a cleaner on cutting boards. For dinner tonight I prepared Skillet Velveeta Whole Grain Rotini and Cheese w/ Hardwood Smoked Turkey Sausage and Baked French Bread.

Wanted a good Comfort Food Dinner tonight and what better combination than a Skillet Velveeta Whole Grain Rotini and Cheese w/ Hardwood Smoked Turkey Sausage Dinner. I love Mac and Cheese but don’t have it a lot due to the carbs and calories, I have Diabetes 2. But every now and then I give in to the craving and fix a bowl. I do always try to use Whole Grain or Whole Wheat Pastas.

Skillet Velveeta Whole Grain Rotini and Cheese w Hardwood Smoked 001

For the Pasta I used Velveeta Whole Grain Rotini and Cheese. I don’t use a lot of mac and Cheese due to the calories and carbs but the Velveeta Whole Grain Rotini and Cheese isn’t too bad, plus every now and then doesn’t hurt. Just follow the easy instructions on the box and you are set. It’s just a flat out Pasta and Cheese Comfort Food Heaven! Excellent tasting Rotini Pasta and with the Cheese, perfect. Put the lid on Sauce Pan and removed it from the heat.

Beans and Smoked Turkey Sausage (Beans and Weenies) 003
Then for the Turkey Sausage I used Butterball Hardwood Smoked Turkey Sausage. I took one of the Sausages and cut it in to bite size pieces. I took a medium size skillet and sprayed it Pam Cooking Spray. Added a 1/2 tablespoon of Extra Virgin Olive Oil, and heated it on medium heat. When the skillet was heated up I added the Turkey Sausage pieces. I cooked them about 12 minutes, stirring them frequently until browned and heated through. When the Sausage was ready I then added it to my pan of Pasta, gently stirring till mixed.

Skillet Velveeta Whole Grain Rotini and Cheese w Hardwood Smoked 006
Served it in a bowl and added a few shakes of Frank’s Hot Sauce. The pasta and sausage are a perfect pairing, and the Hot Sauce just kicks it up a bit! Comfort Food Deluxe tonight, I also baked a loaf of Pillsbury French Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Hardwood Smoked Turkey Sausage w/ Red Beans and Rice

Smoked Turkey and Beans Rice 005

Cleaned out a couple of closets today, which was way over due.Amazing the stuff you can find that you had forgot about. That was about the extent of my day. For dinner tonight a Hardwood Smoked Turkey Sausage w/ Red Beans and Rice along with a slice of Whole Grain Bread.

I had this a while back and had frozen the leftovers, I wasn’t sure how the Beans and Rice would hold up after freezing. I let it thaw in the fridge overnight. To reheat it I emptied the container in a small sauce pan on medium heat. When done I added a few shakes of Frank’s Red Hot Sauce and it was ready! The Beans and Rice along with the Sausage froze and reheated perfectly and tasted as good as the first time I had made it!

Smoked Turkey and Beans Rice 002
To make this I used my favorite Smoked Turkey Sausage, Butterball Hardwood Smoked Turkey Sausage. For me this is a perfect Smoked Turkey Sausage; fantastic flavor, great seasoning, and cooks up just right. To prepare it I pan fried it in a medium size skillet. Just sprayed the skillet with Pam and fried them on medium heat about 12 minutes, turning the sausages frequently until done. When done I sliced 1 1/2 of the two sausages up into quarter size pieces and set aside.

Then for the Red Beans and Rice I used Zatarain’s New Orleans Style Reduced Sodium Red Beans and Rice. Esay way to have some excellent Red Beans and Rice, plus it’s Reduced Sodium. If you love Red Beans and Rice you’ll love this! To prepare; In a 2 quart saucepan, combine 2 3/4 cups water, 2 tablespoons olive oil or margarine and Zatarain’s Black Beans and Rice. Stir well and bring to boil. Stir, reduce heat, cover and simmer over Low heat for 25 minutes. Stir occasionally to prevent sticking. Remove from heat and let stand 5 minutes. Stir and serve. Black Beans and Rice will be saucy. Before serving this I added the sliced Smoked Turkey Sausage and a few shakes of the Frank’s Red Hot Sauce, too good! I also had a slice of Klosterman Wheat Bread. One delicious meal! For dessert later Weight watchers Chocolate Swirl Ice Cream Bar.

Zatarain’s Reduced Sodium Red Beans and RiceZatarains Red Sodium Red Beans Rice

25% Less sodium than our original Red Beans and Rice. Serves 4. A New Orleans tradition. Since 1889. This easy-to-prepare dinner mix has just the right blend of ingredients for a great tasting, authentic New Orleans style meal. Zatarain’s has been the leader in authentic New Orleans style food since 1889. So when you want great flavor, Jazz it up with Zatarain’s! This product contains 720 mg of sodium per serving. Our original Red Beans & Rice contains 1200 mg sodium per serving.

Tips: Try adding a half pound of sliced smoked sausage or diced ham to make a delicious dinner entrée.

Directions
Easy Stove Top: 1. In a 2 quart saucepan, combine 2 3/4 cups water, 2 tablespoons olive oil or margarine and Zatarain’s Black Beans and Rice. Stir well and bring to boil. 2.Stir, reduce heat, cover and simmer over Low heat for 25 minutes. Stir occasionally to prevent sticking. 3. Remove from heat and let stand 5 minutes. Stir and serve. Black Beans and Rice will be saucy. For less saucy product reduce water by 1/4 cup. Allow to stand covered for 5 minutes before serving.
Ingredients:

Turkey Sausage and Turkey Pepperoni Pizza

Today’s Menu: Turkey Sausage and Turkey Pepperoni PizzaTurkey Sausage pepperoni Pizza 004

A perfect day out today. It’s been 77 degrees, a slight cool breeze, and sunny. They say in the morning a low in the mid 40’s! Just spent the day outside enjoying the weather. For dinner it was Pizza Night, Turkey Sausage and Turkey Pepperoni Pizza.

I tried a new Pizza Crust (Pie), Meijer Pizza Thin Crusts. Their 130 calories and 19 net carbs for a half Pizza. So eating a full one would only be 260 calories and 38 carbs, not too bad. For my toppings I used Jennie – O Lean Breakfast Sausage (Which I fried ahead of time), Hormel Turkey Pepperoni, Sargento Reduced Fat Shredded Mozzarella, Ragu Original Pizza Sauce, Sliced Baby Bella Mushrooms, 1/2 (Small) Can Sliced Black Olives, and 3 Thin Slices of Anchovies (Chopped).

I preheated the oven on 425 degrees. I then brushed a light coating of Extra Virgin Olive Oil and then added my toppings. Baked for about 7 minutes and then turned the broiler on and baked it an additional 1 minute. By using the broiler for a minute or so it crisped the crust a little and browned the cheese a bit, perfect! Great call on dinner tonight as it the spot, made 2 of them one for my dinner and one for Mom and Dad to snack on later tonight. For dessert later a Del Monte Mango Chunk Cup.
