Today’s Menu: Turkey Tacos and Refried Beans

 

For Breakfast I Scrambled a couple of Eggs and toasted 2 slices of Aunt Millie’s Live Carb Smart Wheat Bread that I topped with I Can’t Believe It’s Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. 94 degrees, very humid and partly sunny out. Not a good day to be out. Well today was Slug Day. I stopped by Cousin’s house as her Kids had a Pop Corn and Lemonade Stand set up in their front yard. So I stopped by and gave all the Kid’s some money. Then it was back home, taking it easy. My lower back is sore and bruised. I fell last night while on my walker and fell backwards. I’m ok except for my back a bit. One of the hazards of a leg amputee1 For Dinner tonight I prepared Turkey Tacos and Refried Beans.

 

We love our Turkey Tacos, great Comfort food for us! When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, and Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Old El Paso together make one fine Taco!

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. The Tacos hit the spot! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper to drink.

STOVE TOP METHOD:
* Spray skillet with nonstick cooking spray.
* Preheat skillet over medium-high heat.

Simple Stuffed Peppers
Stuffed peppers are a timeless recipe, and easy to make too. In less than 40 minutes you’ll be enjoying colorful bell peppers filled with turkey, black beans and cheddar cheese.
Total Time – 30 Minutes
Serving Size – Makes 4 Servings

Ingredients
4 bell peppers, tops and cores removed
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 packet gluten free taco seasoning
2/3 cup water
1 cup canned black beans
1 1/2 cups shredded cheddar cheese
1 cup sour cream
1/2 cup salsa

Directions
1) Heat oven to 350°F. Place peppers cut side up in baking dish just large enough to hold them upright.

2) Prepare ground turkey according to package directions. Season ground turkey with taco seasoning. Add water. Always cook to well-done, 165°F as measured by a meat thermometer. Remove from heat. Stir in black beans and cheese.

3) Fill peppers with turkey mixture. Cover baking dish with foil. Bake 30 to 40 minutes or until peppers are tender. Serve with sour cream and salsa.

Ingredients
4 – tablespoons butter, divided

Directions
1) In large skillet, melt 1 tablespoon butter over medium heat; add onions.

2) Cook 10 minutes or until onions are golden brown. Add water. Cover.

3) Cook 10 minutes or until onions are very soft, stirring occasionally.

4) Divide ground turkey into 12 equal balls. Press 1 teaspoon butter into each ball. Shape into patties.

5) Place in large skillet over medium-high heat. Cook 8 minutes covered, turning twice and internal temperature reaches 165°F. as measured by meat thermometer. Always cook to well-done.

6) Top each patty with two cheese pieces.

7) Place lettuce on bottom halves of buns. Top with onion mixture and patties; replace bun tops.

Roast Pepper and Turkey Stroganoff
Who knew you could have comfort food without the guilt? This home cooked Roast Pepper & Turkey Stroganoff features a creamy garlic and wine sauce over lean turkey tenderloins and thick egg noodles! Under 500 calories per serving.

Total Time – 1 Hour
Serving Size – 6 Servings

INGREDIENTS
2 tablespoons vegetable oil, divided
1 (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin, cut into strips
8 ounces sliced mushrooms
4 garlic cloves, minced
½ cup dry white wine
1 cup low-sodium chicken broth
¼ cup tomato paste
2 roasted red peppers, cut into strips
¼ cup chopped fresh parsley
16 ounces thick egg noodles, cooked

DIRECTIONS
1) In large skillet, heat 1 tablespoon oil over medium-high heat. Place tenderloins in hot skillet. Brown on both sides.

2) Add ⅓ cup liquid. Reduce heat to medium-low. Cook, covered, 35 to 40 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer. Remove from pan; keep warm.

3) Heat remaining oil in skillet. Add mushrooms and garlic; cook 5 minutes or until softened.

4) Add wine; simmer until reduced by half. Stir in broth, tomato paste and roasted peppers. Return all turkey to pan.

5) Reduce heat to low and simmer 5 minutes. Cover and simmer for 10 minutes, stirring occasionally, until sauce is thickened.

6) Stir in parsley. Serve over hot cooked noodles.

Make your own zucchini tortillas to fill with cauliflower rice, turkey and pineapple guacamole for a paleo diet friendly taco night!

Ingredients

1 – (16-ounce) package JENNIE-O® Lean Ground Turkey
1 – packet taco seasoning
⅔ – cup water

Zucchini Tortillas

2 – zucchini, shredded and squeezed dry
½ – cup super fine almond flour
2 – eggs
½ – cup shredded dairy-free mozzarella cheese
¼ – teaspoon garlic powder
¼ – teaspoon onion powder
¼ – teaspoon sea salt, if desired

Cilantro Lime Cauliflower Rice

1 – tablespoon olive oil
4 – cups riced cauliflower
½ – teaspoon sea salt, if desired
¼ – teaspoon pepper
¼ – cup cilantro leaves, rough chopped
zest of 1 lime

Pineapple Guacamole

¾ – cup prepared guacamole
½ – cup prepared pineapple Pico de Gallo

Directions

1) Cook turkey according to package directions. Stir in taco seasoning. Add water. Always cook to well-done, 165°F as measured by a meat thermometer.

2) Fill zucchini tortillas with cilantro lime cauliflower rice, turkey mixture, and pineapple guacamole.

Zucchini Tortillas

3) Heat oven to 375°F. Line 2 baking sheets with parchment paper.

4) In large bowl, combine all ingredients. Mix well. Divide batter by dropping 8 (¼ cup) mounds on prepared baking sheets, spacing them far enough apart to flatten into 5-inch circles.

5) Bake 20 minutes or until golden brown. Let cool before removing by peeling off parchment.

Cilantro Lime Cauliflower Rice

6) In large skillet over medium heat, heat oil. Add riced cauliflower and season with salt and pepper. Cook 5 to 7 minutes, stirring frequently, or until cauliflower rice is tender. Remove from the heat and stir in cilantro and lime zest.

Pineapple Guacamole

7) In small bowl, combine all ingredient. Mix well. Refrigerate until ready to use.

Ingredients

7 – hard-boiled eggs, peeled

3 – tablespoons mayonnaise

1 – tablespoon chopped fresh dill

1 – clove garlic, minced

6 – cups torn Bibb lettuce

2 – cups grape or cherry tomatoes, halved

1 – medium red bell pepper, chopped

3 – green onions, sliced

1.) Cut eggs in half lengthwise and place yolks in a small bowl. Set whites aside. Mash yolks with fork. Stir in mayonnaise, dill, garlic, hot pepper sauce, and salt. Fill egg white halves with yolk mixture. Set aside.

2.) On large serving platter arrange lettuce, tomatoes, bell pepper and green onions. Arrange eggs on greens. Drizzle with Dill Vinaigrette. Top with bacon.

3.) In small bowl, whisk together ingredients.

Buttermilk Coleslaw
This homemade coleslaw recipe brings together shredded cabbage, carrots and onion in a tasty buttermilk dressing to compliment your dinner menu.

Total Time – 40 Minutes
Serving Size – Makes 6 Servings

Ingredients
4 – cups shredded green cabbage

1- cup shredded red cabbage

1/2 – cup shredded carrots

1/4 – cup grated onion

3/4 – cup buttermilk

1/4 – cup mayonnaise

1 – tablespoon Dijon mustard

2 – teaspoons apple cider vinegar

2 – teaspoons sugar

Kosher salt and freshly ground black pepper

Directions
1.) In large bowl, combine cabbage, carrots, and onion.

2.) In medium bowl, whisk together buttermilk, mayonnaise, mustard, vinegar, and sugar. Season to taste with salt and pepper. Pour mixture over cabbage mixture. Toss to combine. Refrigerate until serving.
