Turkey Peppers with Couscous
Middle Eastern flavors, including roasted pine nuts, crumbled goat cheese, couscous and lean ground turkey, fill colorful bell peppers for a dinner that’s under 500 calories per serving.

INGREDIENTS
4 bell peppers, mix of yellow, green and red
½ cup chopped red onion
4 cloves garlic, minced
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
2 teaspoons dried basil leaves
½ teaspoon freshly ground pepper
1 (14.5-ounce) can diced tomatoes or seasoned diced tomatoes, drained
1 (5.45-ounce) package sun-dried tomato flavored couscous, prepared according to package directions
6 ounces crumbled feta or goat cheese
¼ cup toasted pine nuts
¾ cup fresh breadcrumbs
paprika, if desired

DIRECTIONS
1) Heat oven to 375°F. Cut bell peppers lengthwise through stems keeping stem halves intact. Cut peppers in half again forming quarters. Discard seeds and veins. Cook in boiling water 5 to 6 minutes or until crisp-tender; drain and place cut side up in 13×9-inch baking dish.
2) Coat large skillet with cooking spray; heat over medium-high heat. Add onion and garlic; cook 5 minutes, stirring occasionally; add ground turkey. Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add basil leaves and pepper. Cook 5 minutes, stirring occasionally. Add diced tomatoes and prepared sun-dried tomato flavored couscous; cook 5 minutes or until heated through. Remove from heat; stir in crumbled feta cheese and toasted pine nuts. Mound mixture into pepper quarters.
3) Sprinkle fresh breadcrumbs over filled peppers. Sprinkle with paprika, if desired. Bake 30 minutes or until bread crumbs are golden brown, filling is hot and peppers are tender.
* Always cook to an internal temperature of 165°F.

Stuffed Bell Peppers
This flavorful stuffed pepper recipe features lean ground turkey, sautéed onion and topped with melted Cheddar. It’s also low-fat and under 300 calories per serving!

INGREDIENTS
olive oil spray
½ cup minced onion
1 teaspoon minced garlic
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
1 teaspoon ground cumin
¼ cup tomato sauce
½ cup low sodium chicken broth, divided
1 tablespoon chopped fresh cilantro
3 large sweet red bell peppers
¼ cup shredded reduced-fat Cheddar cheese

DIRECTIONS
1) Heat oven to 400°F. Lightly coat non-stick skillet with spray; heat over medium heat. Add onion and garlic; sauté 2 minutes or until softened. Add ground turkey and cumin. Break meat apart and cook over medium heat 14 to 16 minutes, or until well-done, 165°F as measured by a meat thermometer.
2) Add tomato sauce and ¼ cup broth. Reduce heat to low and simmer 5 minutes. Add cilantro. Cut peppers in half lengthwise and remove seeds and stem. Place in baking dish. Spoon ⅓ cup turkey mixture into each pepper half. Pour remaining ¼ cup chicken broth in baking dish. Cover with foil. Bake 35 minutes. Sprinkle with cheese.
* Always cook to an internal temperature of 165°F.

Turkey Ham Quiche
Start your weekend off right with this fresh take on a brunch favorite. And with only 15 minutes of prep time, the whole family can eat well without eating into your free time.

INGREDIENTS
1 cup diced JENNIE-O® Turkey Ham
¾ cup shredded Cheddar cheese
1 (9-inch) frozen pie shell, baked according to package directions
¾ cup egg substitue or 3 eggs, beaten
¾ cup milk
¼ cup chopped green onions

DIRECTIONS
1) Heat oven to 350°F. Sprinkle turkey ham and cheese over baked pie shell.
2) In small bowl, whisk eggs and milk. Stir in green onions; pour into pie shell. Place pie shell on baking sheet. Bake 20 to 25 minutes or until knife inserted in center comes out clean.

Bird’s Nest Breakfast Cups
Crispy hash browns, eggs and sausage all in one easy brunch recipe.

INGREDIENTS
1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Links
1 (20-ounce) package refrigerated shredded hash brown potatoes
½ cup milk
2 eggs or ½ cup egg substitute
1 cup shredded Cheddar cheese
1 cup shredded Swiss cheese

DIRECTIONS
1) Heat oven to 425°F. Cook sausage links as specified on package. Always cook to well done, 165°F as measured by a meat thermometer. Chop sausage links into small pieces.
2) Mist 12 muffin cups with cooking spray. Divide potatoes evenly among muffin cups. Bake 25 to 30 minutes or until crisp and golden brown. Reduce oven temperature to 350°F.
3) In bowl, beat together milk and eggs. Stir in chopped sausage and cheeses. Pour mixture into each muffin cup. Bake 18 to 20 minutes or until egg is set. Cool 5 minutes before removing from muffin cups.
* Always cook to an internal temperature of 165°F.

Jalapeño Jack Turkey Burgers
Fire up the grill for this fiery burger recipe! It combines the spicy taste of jalapeño with cool guacamole and salsa. The jalapeño jack turkey burger is full of bold Mexican flavors.

INGREDIENTS
1 (32-ounce) package JENNIE-O® ⅓ lb. Seasoned Turkey Burgers
2½ cups thinly sliced onions
⅓ cup chopped fresh cilantro
2 tablespoons honey
1 cup salsa
6 flat bread
1 cup baby spinach or arugula leaves
6 ounces WHOLLY GUACAMOLE® classic dip

DIRECTIONS
1) Cook turkey burgers as specified on the package. Always cook to well done, 165°F as measured by a meat thermometer.
2) In large skillet sprayed with cooking spray, cook onions over medium heat 10 minutes or until softened and lightly browned. Add cilantro, honey and salsa; stir. Cook 2 minutes or until hot.
3) Spoon onion mixture onto bottom section of flatbread. Add turkey burger, spinach leaves and guacamole. Replace sandwich top.
* Always cook to an internal temperature of 165°F.

I’m passing along another Jennie – O Turkey Burger recipe, Horseradish Turkey Burgers. This one is made using 2 Jennie – O products, JENNIE-O® Extra Lean Ground Turkey Breast and JENNIE-O® Sweet Italian Turkey Sausage Links. Just remove the casing from the Sausages and mix it with the Extra Lean Ground Turkey Breast and you have the makings of one delicious Burger! Also included is a recipe for the Jalapeño Mayo. Horseradish Turkey Burgers
Bored with burgers? It’s time to spice up your burger. Horseradish, Dijon and grilled jalapeño mayo brings the heat to this dinner recipe that’s under 500 calories per serving.

INGREDIENTS
Jalapeño mayo:
2 jalapeños, stemmed, halved lengthwise, seeded
¼ cup fat-free mayonnaise
1 teaspoon Dijon mustard
Burgers:
⅔ cup whole wheat panko breadcrumbs
¼ cup milk
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
2 links JENNIE-O® Sweet Italian Turkey Sausage Links, casings removed
4 green onions, thinly sliced
2 tablespoons horseradish, drained
1 tablespoon Dijon mustard
4 reduced-calorie wheat hamburger buns, halved
¼ cup crumbled blue cheese, if desired
4 lettuce leaves

DIRECTIONS
1) Coat grill with non-stick cooking spray and place over medium-high heat. Add jalapeños, cut side down; cook 5 minutes or until charred on all sides. Remove jalapeños from grill, and place in blender or food processor. Add mayonnaise and mustard. Blend until smooth. Set aside.
2) In medium bowl, combine breadcrumbs and milk and soak 5 minutes. Add ground turkey, sausage, green onions, horseradish and mustard to crumb mixture. Mix to combine. Form meat mixture into 4 burgers. Spray grill pan or grill with non-stick spray over medium-high heat. Grill burgers 6 minutes per side. Always cook to well-done, 165°F as measured by a meat thermometer. Toast hamburger buns, cut side down 1 minute.
3) Assemble burger with jalapeño mayo on bottom bun. Add lettuce, burger, blue cheese and bun top
* Always cook to an internal temperature of 165°F.

This turkey chili has all the flavors you love — cumin, onions, corn and two types of beans — with a short prep-time. Plus, it’s under 300 calories per serving!

INGREDIENTS
1 tablespoon olive oil
1 cup chopped onion
4 garlic cloves, minced
2 tablespoons chili powder
2 teaspoons ground cumin
2 to 3 EMBASA® chipotle chilies, chopped plus 2 tablespoons sauce
1 (15-ounce) can black beans, rinsed and drained
1 (15-ounce) can navy or great northern beans, rinsed and drained
2 cups frozen corn kernels, thawed
1 (16-ounce) jar HERDEZ® salsa
6 cups low-sodium chicken or turkey broth
2½ cups chopped leftover JENNIE-O® OVEN READY™ Turkey
1 teaspoon sugar
¼ cup chopped fresh cilantro
sour cream, if desired

DIRECTIONS
1) In large skillet, heat oil over medium-high heat. Add onion and garlic; cook 5 minutes or until softened. Add chili powder, cumin and chipotle chilies with sauce. Cook 1 minute or until fragrant.
2) Add beans, corn, salsa, broth, turkey and sugar. Heat 15 minutes or until hot.
3) Stir in cilantro. Top with sour cream, if desired.

Basketball Turkey Burger
Here’s a kid-friendly turkey burger recipe that’s great for both the college hoops tournament in March or your kids’ basketball team cookout. Under 300 calories per serving.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
2 chipotle chilies, finely chopped
⅓ cup finely chopped cilantro
4 garlic cloves, minced
3 mozzarella string cheese sticks
½ cup low-fat blue cheese dressing
1 cup shredded carrot
1 cup thinly sliced celery sticks
6 small Bibb lettuce leaves
6 reduced-calorie whole grain buns

DIRECTIONS
1) In large bowl, combine turkey, chilies, cilantro and garlic. Mix until combined. Divide meat mixture into 6 (½-inch thick) patties. Spray non-stick skillet with cooking spray. Place patties in skillet over medium-high heat. Cover. Cook 18 minutes, turning 2 to 3 times and until internal temperature reaches 165°F as measured by a meat thermometer. Always cook to well-done.
2) Separate strings from cheese. Decorate hot patties with cheese strings to resemble basketballs.
3) In small bowl, combine dressing, carrot and celery. Arrange mixture on bun bottom bun; add patties and bun top.
* Always cook to an internal temperature of 165°F.

Patty Melts with Caramelized Onions
Put a nutritious spin on a diner classic without sacrificing flavor. Each melt is full of the rich, sweet flavor of caramelized onions, hearty Swiss cheese and crunchy, toasty bread. But thanks to JENNIE-O® Lean Turkey Burger Patties, these burgers are high in protein and only 460 calories per serving.

INGREDIENTS
1 tablespoon oil
1 large sweet onion, sliced and separated into rings
1 (16-ounce) packaging JENNIE-O® Lean Turkey Burger Patties
1 tomato, sliced
4 slices Swiss cheese
8 slices sourdough bread, toasted

DIRECTIONS
1) Heat oil in large broiler safe skillet over medium heat. Add onion. Cook 15 to 20 minutes or until onions are golden, glazed and tender, stirring frequently.
2) Cook the patties as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
3) Heat broiler. Top burgers with tomato and cheese slices. Broil 3 to 5 minutes or until cheese is melted and lightly browned. On bottom slice of bread add glazed onions. Top with burgers and bread top.
* Always cook to an internal temperature of 165°F.
