Turkey Burger with Chipotle Cranberry Relish

Feed your adventurous side something tasty: Savory turkey burgers cooked to perfection and topped with a spicy citrus cranberry sauce and under 300 calories per serving!

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Turkey Burger Patties
⅔ cup whole berry cranberry sauce
1 tablespoon finely chopped chipotle pepper in adobo sauce
2 tablespoons orange juice
4 ciabatta rolls, split and toasted
1 cup baby arugula leaves

DIRECTIONS
1) Cook turkey as specified on the package. Always cook to well-done, 165°F. as measured by a meat thermometer.
2) In small bowl, combine cranberry sauce, chipotle pepper and orange juice.
3) Place turkey patties on bottom halves of each roll. Top with cranberry mixture and arugula. Cover with roll tops.
* Always cook to an internal temperature of 165°F.

Barbeque Turkey Burgers

Just like the burgers you’d find at a classic BBQ joint, this turkey burger is piled high with creamy coleslaw and slathered with barbeque sauce. Set the table with extra napkins tonight and dig in.

INGREDIENTS
CLASSIC COLESLAW
2 cups thinly shredded cabbage
¼ cup shredded carrot
¼ cup thinly sliced red onion
3 tablespoons reduced-calorie mayonnaise
2 teaspoons lime juice
2 teaspoons sugar
TURKEY BURGERS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
¼ cup barbeque sauce
2 tablespoons breadcrumbs
4 whole-grain sandwich buns,split

DIRECTIONS
1 – CLASSIC COLESLAW
2 – In bowl, combine cabbage, carrot, onion, mayonnaise, lime juice and sugar. Mix well. Set aside.
3 – TURKEY BURGERS
4 – In medium bowl, combine turkey, barbeque sauce and breadcrumbs; mix. Shape into 4 patties. Cook turkey patties as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Serve burgers topped with coleslaw in buns.
* Always cook to an internal temperature of 165°F.

INGREDIENTS
4 JENNIE-O® Turkey Burgers – All White Meat
4 burger buns
2 ounces cotija cheese, if desired
¼ cup pico de gallo
8 large leaf lettuce
4 teaspoons fresh chopped cilantro
squeeze of fresh lime juice
4 ounces non-fat Greek yogurt
4 ounces WHOLLY GUACAMOLE® dip, if desired
4 ounces HERDEZ® salsa, if desired

DIRECTIONS
1) Cook turkey burgers as specified on the package. Always cook until well-done, 165°F as measured by a meat thermometer.
2) Toast buns and top with turkey burger, cheese, if desired, Pico de Gallo, lettuce, cilantro and squeeze of fresh lime. Spread yogurt on the bottom side of top bun. Serve dip and salsa, if desired.

Great for an easy breakfast or brunch, this Quick Breakfast Turkey Burritos recipe features scrambled eggs, turkey bacon and colby cheese in a warm flour tortilla for a filling breakfast that’s great at any time of day! Under 300 calories per serving!

Ingredients
1 (12-ounce) package JENNIE-O® Turkey Bacon
1 tablespoon butter
1 ½ cups egg substitute or 6 eggs
1 cup shredded Colby cheese
4 (8-inch) flour tortillas
salsa and sour cream, if desired

Directions
1 – Preheat a nonstick skillet or electric griddle over medium heat (375°F.). Heat slices of bacon for 6-7 minutes or until desired crispness, turning frequently.

2 – Crumble bacon and set aside. In large skillet, melt butter. Add eggs; cook until soft scrambled. Stir in cheese and bacon.

3 – Meanwhile, heat tortillas according to package . Spoon egg mixture evenly down center of each tortilla; roll up.

4 – Serve immediately with salsa and sour cream, if desired.

Egg and Turkey Bacon Enchiladas
Sure, breakfast burritos are amazing, but have you had Egg & Turkey Bacon Enchiladas? You’re in for a treat: Turkey bacon, egg and cheese burritos baked in a tangy red sauce. Under 300 calories per serving!

Ingredients
12 – slices JENNIE-O® Turkey Bacon

2 ½ – cups egg substitute or 10 eggs

½ – cup milk

¼ – teaspoon garlic powder

½ – teaspoon onion powder

½ – teaspoon ground cumin

1 – (10-ounce) cans red enchilada sauce

10 – flour tortillas

1 ½ – cups Mexican cheese blend

sour cream, taco sauce, cilantro or onion, if desired

DIRECTIONS
1) Heat oven to 350°F.

2) Spray 13 x 9-inch baking pan with cooking spray, set aside.

3) Preheat a nonstick skillet or electric griddle over medium heat (375°F.). Heat slices of bacon for 6-7 minutes or until desired crispness, turning frequently.

4) Remove from skillet; crumble and set aside. In mixing bowl whisk eggs, milk, garlic powder, onion powder and cumin; whisk until well blended. Pour in skillet. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom. Cook 5 to 7 minutes or until eggs are thickened throughout but still moist.

5) Pour ½ can of enchilada sauce on bottom of baking dish. Fill each tortilla with about ⅓ cup of eggs, 2 tablespoons cheese and 1 tablespoon crumbled bacon. Roll up and place seam side down in baking dish. Pour remaining enchilada sauce over tortillas. Top with remaining cheese and bacon.

6) Bake 20 minutes or until hot and bubbly. Top with sour cream, taco sauce, cilantro or sliced onion, if desired.

Turkey Enchiladas
Start your weekend off right with this fresh take on a brunch favorite. And with only 15 minutes of prep time, the whole family can eat well without eating into your free time with this Turkey Enchiladas recipe.

Ingredients
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast

1 cup chopped onion

1 (2-ounce) can chopped ripe olives

1 (32-ounce) can enchilada sauce, divided

12 corn tortillas, heated

1 ½ cups shredded Cheddar and/or Monterey jack cheese

Directions
1) Heat oven to 350ºF.

2) Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.

3) Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer. Add onion; sauté 5 minutes. Stir in olives.

4) In small saucepan heat half enchilada sauce. Dip each tortilla in sauce. Spoon 2 tablespoons meat mixture down center of each tortilla. Fold sides over and place seam side down in 9×13-inch baking pan. Sprinkle with cheese. Bake 30 minutes or until heated through.

5) Serve with remaining sause.

This breakfast skillet is packed with a ton of fresh veggies, turkey ham and melted Cheddar cheese. And this Easy Turkey Ham Skillet Breakfast is ready in under 30 minutes!

Ingredients

2 medium potatoes, cooked and cubed

1 onion, chopped

3 tablespoons vegetable oil

1 green bell pepper, chopped

1 zucchini, chopped

2 cups diced JENNIE-O® Turkey Ham

1 tomato, chopped

½ cup shredded Cheddar cheese

Directions

1) In large skillet, add cooked potatoes and onion to oil and simmer over medium high heat 5 minutes or until golden brown and almost tender. Add bell pepper and zucchini; cook 5 minutes longer or until tender.

2) Add turkey ham and tomato to skillet. Sprinkle with cheese. Cover and cook 3 to 5 minutes or until cheese is melted.

Ingredients
2 – (10-ounce) package frozen puff pastry shells

½ – cup egg substitute or 2 eggs, beaten

¾ cup shredded Cheddar cheese, divided

½ cup cooked and chopped broccoli

fresh chopped chives, if desired

Directions
1) Cook puff pastry shells according to package .

2) Heat oven to 350ºF. Spray large skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Crumble and cook in hot skillet approximately 15 to 17 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

3) In same skillet, pour eggs. Cook until softly scrambled; stir in ¼ cup cheese, reserve sausage and broccoli. Fill each puff pastry shell with turkey sausage mixture. Sprinkle with remaining ½ cup cheese. Place on baking sheet.

4) Bake 10 minutes or until heated through. Sprinkle with fresh chives, if desired.

Creamy Turkey Breakfast Casserole
With lean ground turkey, mushrooms and bacon, this Creamy Turkey Breakfast Casserole recipe is a twist on the classic American biscuits and gravy. Less than 300 calories per serving, ready in under 60 minutes and serves 12!
Ingredients
6 slices JENNIE-O® Turkey Bacon
1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Links
½ cup butter, divided
½ cup flour
4 cups milk
½ cup sliced fresh mushrooms
¼ teaspoon black pepper
4 cups egg substitute or 16 eggs
1 (7.5-ounce) package refrigerated biscuit dough

Directions
1 – Heat oven to 350ºF. In large skillet, cook bacon as specified on the package. Drain on paper towels; chop. In large skillet, cook sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Drain on paper towels; chop.

2 – In skillet, melt 6 tablespoons butter. Add flour and whisk until smooth. Cook over low heat, stirring constantly, 1 minute. Gradually whisk in milk. Cook, stirring constantly, until thickened. Add sausage, bacon, mushrooms and pepper; set aside.

3 – Whisk eggs. Melt remaining butter in large skillet over medium heat. Add eggs, stirring until soft scrambled. Pour ⅓ sauce into lightly greased 13 x 9-inch baking pan; top with half the egg mixture. Repeat layers. Top with remaining sauce. Lay biscuits on top of sauce. Bake uncovered 30 minutes or until thoroughly heated and biscuits are golden brown.
* Always cook to an internal temperature of 165°F.

INGREDIENTS
4 slices JENNIE-O® Turkey Bacon
4 multigrain sandwich thins
2 teaspoons olive oil
3 ounces garlic herb cream cheese
4 teaspoons raspberry jam
8 ounces JENNIE-O® Tender Browned Turkey, from the service deli
8 teaspoons pecan pieces, candied
4 tablespoons caramelized sweet onions
12 slices cucumber, if desired

DIRECTIONS
1) Cook turkey bacon as specified on the package; set aside. Always cook to well-done, 165°F as measured by a meat thermometer. Heat panini grill to medium. Brush sandwich thin with olive oil. Spread cream cheese and jam on each sandwich top and bottom. Layer turkey on bottom layer of sandwich. Top with pecans and bacon. Add caramelized sweet onions and place sandwich tops on.
2) Place on panini grill for 4 minutes or until golden brown and heated through. Add fresh cucumber slices, if desired.
