Turkey and Shrimp Dumpling Soup

Warm up with this irresistible, low fat soup. Featuring ground turkey, shrimp, cilantro and garlic dumplings simmered in a savory hoisin and lemongrass broth.

INGREDIENTS

DUMPLINGS
½ (16-ounce) package JENNIE-O® Lean Ground Turkey
10 ounces medium raw shrimp, peeled and deveined
2 tablespoons chopped fresh cilantro
2 tablespoons hoisin sauce
2 garlic cloves, minced
¼ cup egg substitute or 1 egg
½ teaspoon freshly ground pepper
BROTH
2 quarts low-sodium chicken broth
2 lemongrass stalks, white and tender green part only
2 tablespoons hoisin sauce
⅓ cup finely chopped green onion

DIRECTIONS

1) To make dumplings, put turkey, shrimp, cilantro, 2 tablespoons hoisin sauce, garlic, egg and pepper in food processor bowl and process until finely chopped; set aside.
2) To make broth, combine broth, lemongrass and 2 tablespoons hoisin sauce in saucepan. Bring to boil. Reduce heat to medium-low. Simmer, covered, 10 minutes. Remove lemongrass.
3) Drop turkey mixture into broth mixture. Cook 8 to 10 minutes or until dumplings are thoroughly cooked. Always cook turkey to well done, 165°F as measured by a meat thermometer. Stir in green onions.
* Always cook to an internal temperature of 165°F

Get more creative with your turkey dogs by adding more zip than the usual mustard and ketchup defaults. This topping is a mixture of pineapple, jalapeño, honey, onion that just might change the way you do hotdogs forever.

INGREDIENTS

2 cups chopped fresh pineapple
¼ cup thinly sliced red onion
1 jalapeño, seeded minced
3 tablespoons chopped fresh cilantro leaves
2 tablespoons fresh lime juice
1 teaspoon honey
⅛ teaspoon salt
8 JENNIE-O® Turkey Franks
8 hot dog buns
DIRECTIONS

1) In medium bowl, combine pineapple, red onion, jalapeño, cilantro, lime juice, honey and salt; set aside.
2) Prepare grill for medium-high heat. Grill turkey franks 4 to 5 minutes or until slightly charred and heated through. Place turkey franks into buns. Top with pineapple mixture.

Turkey Burger Wrap with Creamy Salsa

Lighten up your dinner with these creamy salsa turkey burgers wrapped in hearty lettuce leaves. Topped with delicious Greek yogurt sauce and avocado, this dish is a total crowd pleaser and ready under 30 minutes!

 

INGREDIENTS

1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 cup LA VICTORIA® Medium Thick n’ Chunky Salsa, divided or CHI-CHI’S® Medium Thick n’ Chunky Salsa, divided
½ teaspoon ground cumin
3 tablespoons freshly chopped cilantro
¼ cup plain breadcrumbs
2 tablespoons olive oil
½ teaspoon salt and freshly ground pepper, if desired
¼ cup plain Greek yogurt
4 Bibb lettuce leaves
4 slices tomato
1 avocado, peeled and sliced
DIRECTIONS

1) In medium mixing bowl, combine ground turkey, ½ cup of salsa, cumin, cilantro, breadcrumbs, olive oil and salt and pepper, if desired; mix well and form into 4½-inch thick patties.
2) Spray skillet with non-stick cooking spray. Preheat skillet over medium-high heat. Add burger patties to hot skillet. Cook approximately 14 to 16 minutes, flipping 3 times. Always cook to well-done, 165°F as measured by a meat thermometer.
3) In small mixing bowl, combine yogurt and reserved ½ cup salsa.
4) On lettuce leaves, top with tomato, avocado, turkey burger and creamy salsa.
* Always cook to an internal temperature of 165°F.

8 strips JENNIE-O® Turkey Bacon
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
2 tablespoons butter
3 cloves garlic, chopped
1 large sweet onion, peeled and thinly sliced
¼ cup whiskey
4 hamburger buns
¼ cup barbecue sauce
4 slices American cheese
DIRECTIONS

1) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside.
2) Shape turkey into 4 patties. Prepare grill for medium heat. On preheated grill over medium heat, grill burgers 9 to 10 minutes per side turning twice. Always cook to well-done, 165°F as measured by a meat thermometer.
3) In skillet, over medium heat add butter, garlic, onion and whiskey. Cook onions 8 minutes or until brown and caramelized.
4) On bun bottom, spread barbecue sauce, add turkey burger, cheese, bacon and onion mixture. Add bun top.
* Always cook to an internal temperature of 165°F.

Mexican Turkey Frittata

This flavorful egg and turkey frittata recipe will wake up your taste buds.
Makes 9 servings

Ingredients

1 (16-ounce) package JENNIE-O Extra Lean Ground Turkey Breast
1/4 teaspoon cumin
1 tablespoon vegetable oil
1 green bell pepper, chopped
2 cups sliced small mushrooms
1 tablespoon chipotle peppers in adobo sauce, finely chopped
3 cups egg substitute or 12 eggs
1/2 cup milk
1/4 cup chopped fresh cilantro
1 cup shredded low-fat Mexican blend cheese
1/3 cup sliced green onions

 

DIRECTIONS

1) Heat oven to 350°F. Mist 8 x 8-inch baking dish with cooking spray. Cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Sprinkle with cumin; stir to mix.
2) In large skillet over medium-high heat, add oil, green pepper, mushrooms and chipotle peppers. Cook 5 minutes, stirring occasionally, until mushrooms are cooked.
3) In large bowl, whisk eggs, milk and cilantro until well mixed. Stir in turkey, cheese, mushroom mixture and green onions. Spoon mixture into baking dish. Bake 30 to 40 minutes or until set.
* Always cook to an internal temperature of 165F

2 tablespoons olive oil
1 small onion, chopped
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 carrot, peeled and chopped
1 tablespoon curry powder
1 tablespoon tomato paste
1 (15-ounce) can chickpeas, rinsed and drained
1 small zucchini, chopped
1½ cups vegetable broth
1 cup coconut milk
1 tablespoon fresh lime juice
1 tablespoon brown sugar
¼ cup chopped fresh cilantro leaves

 
DIRECTIONS

10 Cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) Heat oil and add onion and carrot and cook 7 minutes or until onion is translucent. Stir in curry powder and tomato paste and cook 2 minutes. Add chickpeas, zucchini, vegetable broth, coconut milk, lime juice and brown sugar. Bring mixture to a boil. Reduce heat to low and simmer 10 minutes. Sprinkle with cilantro leaves.

6 cups water
2 tablespoons HERB-OX® chicken flavored bouillon granules
½ cup uncooked wild rice, rinsed
½ cup dried cranberries
½ teaspoon poultry seasoning
½ teaspoon dried thyme leaves
¼ teaspoon freshly ground pepper
½ cup flour
2 cups milk
DIRECTIONS

1) Cook turkey as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer. Stir in onion and carrots. Cook over medium-high heat 3 to 5 minutes or until vegetable are tender.
2) Stir in water, bouillon granules, wild rice, cranberries, poultry seasoning, thyme and pepper; bring to boil. Reduce heat. Cover and simmer 45 to 55 minutes or until rice is tender.
3) In small bowl place flour. Gradually add milk, stirring until smooth. Stir flour mixture into soup. Cook over medium heat until soup bubbles and thickens slightly.
* Always cook to an internal temperature of 165°F.

2 tablespoons chili powder
1 tablespoon garlic powder

1 tablespoon dried oregano leaves

1) In bowl, combine chili powder, garlic powder, cumin, oregano and red pepper. Stir in water to make a paste. Rub spice mixture on turkey.
2) Cook turkey as specified on the package. Roast until timer pops up and turkey is fully cooked, 180°F as measured by a meat thermometer inserted into the thickest part of the thigh. ALWAYS confirm doneness with a meat thermometer. Juices should run clear. Let turkey stand 20 minutes before carving.
