Rustic Roasted Turkey Pot Roast and Vegetables
Who doesn’t love quick, weeknight dinners? This classic comfort food recipe is not only extremely tasty, it’s ready in under 1 hour!

INGREDIENTS

2 sweet potatoes, peeled and cut into 1-inch pieces
1 red onion, cut into 8 wedges2 parsnips, peeled and cut into 1-inch pieces
1 red bell pepper, cut into 1-inch pieces
4 tablespoons olive oil
4 cloves garlic, minced
½ teaspoon salt
⅛ teaspoon freshly ground pepper
½ teaspoon dried basil
1 tablespoon apple cider vinegar
¼ teaspoon Italian seasoning
¼ cup fresh parsley, loosely torn
2 pounds JENNIE-O® Bone-in Turkey Pot Roast, cut into pieces

DIRECTIONS

1) Heat oven to 400°F.
2) In large bowl, combine sweet potatoes, onion, parsnips, bell pepper, olive oil, garlic, salt, pepper, basil, vinegar, Italian seasoning and parsley; mix well. Place vegetable in large baking pan. Bake 20 minutes, stir and add turkey pot roast. Bake 15 to 20 minutes or until vegetables are tender and golden brown.

Turkey, Onion Jam and Brie Pizza
This is pizza, all grown up. With a savory onion jam in place of pizza sauce, this taste-bud-dazzling weeknight dinner recipe is topped with Brie, Provolone and arugula. Under 500 calories per serving.

INGREDIENTS

12 ounces pizza dough
1 teaspoon chopped fresh thyme
2 tablespoons butter, melted
1 clove garlic, minced
¼ cup onion jam
¾ cup shredded JENNIE-O® Turkey Breast Roast
4 ounces Brie cheese, sliced
½ cup shredded Provolone cheese
½ cup baby arugula leaves
½ teaspoon balsamic vinegar
½ teaspoon olive oil
salt and freshly ground pepper, if desired

DIRECTIONS

1) Heat oven to 425°F. Roll or press pizza dough to 8-inch imperfect circle.
2) In small bowl, combine thyme, butter and garlic. Brush half the butter mixture over pizza dough. Spread dough with onion jam.
3) Top with turkey, Brie and Provolone cheese. Drizzle with remaining butter mixture. Bake 12 minutes or until crust is crisp and golden.
4) In small bowl, toss arugula, vinegar, oil, salt and pepper, if desired. Place on cooked pizza. Cut pizza into wedges.

Turkey Burritos

A twist on your classic burrito, this simple recipe includes tortillas piled high with hearty turkey chili, lean ground turkey, sautéed veggies and plenty of cheese.

INGREDIENTS

1 (16-ounce) package JENNIE-O® Lean Ground Turkey
½ cup chopped onion
1 green bell pepper, chopped
1 (15-ounce) can HORMEL® Turkey Chili No Beans
½ cup salsa
8 flour tortillas
½ cup shredded Cheddar cheese, divided
additional salsa and cheese, if desired
½ cup prepared queso sauce, if desired
½ cup pico de gallo, if desired
¼ cup diced avocado, if desired

DIRECTIONS

1) Cook turkey as specifed on the package. Always cook to well done, 165°F as measured by a meat thermometer. Add onion and bell pepper.
2) Stir in chili and salsa. Bring to a boil. Reduce heat. Cook 7 minutes or until thoroughly heated. Spoon turkey mixture down center of each tortilla. Top with cheese. Fold up tortilla to enclose mixture.
3) Top with queso, pico de gallo and avocado, if desired
* Always cook to an internal temperature of 165°F

New York Turkey Meatball
New York’s most famous Italian meatball—smothered with red sauce and sitting on a bed of pasta—tastes great made with ground turkey. Make this recipe tonight to see for yourself.

INGREDIENTS

1 (16-ounce) package JENNIE-O® Lean Italian Seasoned Ground Turkey
2 cloves garlic, minced
3 tablespoons chopped fresh basil leaves
1 tablespoon finely chopped fresh oregano
2 teaspoons grated lemon rind
1 large egg, lightly beaten
2 tablespoons dried bread crumbs
1 ounce buttermilk
1 (24-ounce) jar tomato-basil pasta sauce, heated
1 (16-ounce) package spaghetti, cooked according to package directions
grated Parmesan cheese, if desired

DIRECTIONS

1) Heat oven to 400°F.
2) In large bowl, combine turkey, garlic, basil, oregano, lemon rind, egg, bread crumbs and buttermilk. Shape into 1½ -inch balls. Place on a lightly greased jelly-roll pan and bake 25 minutes. Always cook turkey to well-done, 165°F as measured by a meat thermometer. Let meatballs stand 10 minutes.
3) In large bowl, toss meatballs and heated pasta sauce. Serve over pasta. Sprinkle with Parmesan cheese, if desired.

Turkey Sausage and Rice Soup
Simmer smoked turkey sausage, leeks and carrots together with bell peppers, fresh thyme and white rice in this colorful, delicious soup. Ready in under 30 minutes.

INGREDIENTS

2 tablespoons butter
1 large or 2 medium sliced leeks, white and light green parts
2 carrots, thinly sliced
1 (14-ounce) package JENNIE-O® Fully Cooked Hardwood Smoked Turkey Sausage
2 cups diced mixed bell peppers, preferably red and yellow
3 (13¾-ounce) cans reduced-sodium chicken broth
¾ cup uncooked quick cooking brown rice
¼ teaspoon freshly ground black pepper
1 tablespoon chopped fresh thyme
chives, if desired

DIRECTIONS

1) In a large saucepan, melt butter over medium heat. Add leeks and carrots; cook 5 minutes, stirring occasionally.
2) Cut sausage into ½-inch slices. Add sausage to saucepan; cook 5 minutes, stirring occasionally.
3) Add bell peppers, chicken broth, rice and pepper; bring to a boil over high heat. Reduce heat; simmer uncovered 15 minutes or until rice is tender.
4) Stir in fresh thyme. Ladle into bowls. Top with chives, if desired.

Caprese Turkey Flatbread
There’s nothing flat tasting about this flatbread! Our Caprese Turkey Flatbread comes layered with mozzarella,
JENNIE-O® Turkey Breast Roast, Roma tomatoes and a balsamic glaze on top of fresh Naan. And with turkey as the main protein, it’s all the delicious with less guilt!

INGREDIENTS

2 Naan flatbreads
1 tablespoon olive oil
½ teaspoon garlic powder
8 ounces fresh sliced mozzarella
4 ounces JENNIE-O® Turkey Breast Roast, grab-n-go dinner from the service deli
2 roma tomatoes, sliced thin
10 fresh basil leaves, torn
1 teaspoon balsamic glaze

DIRECTIONS

1) Heat oven to 350°F.
2) Mist baking sheet with non-stick cooking spray.
3) Rub flatbreads with olive oil; sprinkle with garlic powder. Top with mozzarella, shredded turkey, and sliced tomatoes.
4) Bake 30 minutes or until cheese is melted and flatbreads are golden brown.
5) Remove from oven. Sprinkle basil leaves on top of flatbread and drizzle with balsamic.

Ruffle Turkey Lasagna
If you love classic lasagna but wish it came with less guilt, this is your recipe. We’ve subbed in lean ground turkey in place of beef, to deliver big flavor without big guilt.

INGREDIENTS

1 (16-ounce) package lasagna noodles
1 tablespoon olive oil
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 onion, chopped
2 teaspoons Italian seasoning
1 (24-ounce) jar pasta sauce
1 (15-ounce) container ricotta cheese
½ cup Asiago cheese, shredded
2 tablespoons fresh basil, chopped
1 teaspoon salt
1 teaspoon black pepper
1 cup mozzarella cheese, shredded

DIRECTIONS

1) Heat oven to 375ºF.
2) Cook noodles according to package directions.
3) In large skillet heat oil. Add turkey. Cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add onion, seasoning and tomato sauce. Simmer 10 minutes. Remove from heat. Mix together ricotta cheese, asiago cheese, basil, salt and pepper.
4) Spread ¾ cup pasta sauce on the bottom of a 13 x 9-inch baking dish. Place layer of noodles over sauce. Layer ricotta mixture over the noodles. Place another layer of noodles over ricotta mixture. Spread ¾ cup pasta sauce on top of noodles. Layer remaining noodles over the ricotta mixture, overlapping slightly to create ruffled layers. Spread remaining pasta sauce and sprinkle with mozzarella cheese.
5) Cover pan with aluminum foil and bake 30 minutes. Remove foil and bake 10 more minutes or until cheese bubbles.
* Always cook to an internal temperature of 165°F.

Turkey Mushroom and Barley Soup
This hearty, flavorful soup features lean turkey cutlets, mushrooms, garlic and fresh thyme in a savory broth. It’s under 300 calories.

INGREDIENTS

½ ounce dried mushrooms, preferably porcini
1 cup boiling water
1 tablespoon butter
1 (8-ounce) package sliced mushrooms
½ cup chopped onion
2 cloves garlic, minced
2 (13¾-ounce) cans reduced-sodium beef broth
½ cup quick-cooking pearl barley
1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme leaves
1 (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets
½ teaspoon freshly ground pepper
¼ teaspoon salt, if desired

DIRECTIONS

1) Soak dried mushrooms in 1 cup boiling water 20 minutes or until softened. Meanwhile, melt butter in large saucepan over medium-high heat. Add sliced mushrooms, onion and garlic; cook 8 minutes, stirring occasionally. Drain soaked mushrooms, reserving liquid. Coarsely chop mushrooms. Add mushrooms, beef broth, barley, thyme and mushroom soaking liquid to saucepan; bring to boil. Reduce heat; cover and simmer 15 to 18 minutes or until barley is tender.
2) Cook cutlets as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer. Cut into ½ strips and sprinkle with ground pepper and salt, if desired. Stir into soup; simmer 10 minutes.

¼ cup chopped cranberry relish
¼ cup mayonnaise
1 tablespoon Dijon mustard
8 slices whole grain bread

4 ounces Gouda cheese, thinly sliced
4 thin slices red onion, separated into rings
4 leaves lettuce

DIRECTIONS

1) In small bowl, mix together cranberry relish, mayonnaise and mustard. Spread cranberry mayo on each slice of bread.
2) On 4 bread slices, layer turkey, cheese, onion and lettuce. Top with remaining bread slices and cut in half.
