A bowl of pumpkin cream soup

Pumpkin soup is a usually ‘bound’ (thick) soup made from a purée of pumpkin. It is made by combining the meat of a blended pumpkin with broth or stock. It can be served hot or cold, and is a popular Thanksgiving dish in the United States. Various versions of the dish are known in many European countries, the United States and other areas of North America, in Asia and in Australia. Pumpkin soup was a staple for the prisoners of war in North Vietnamese prison camps during the Vietnam War.

Squash soup is a soup prepared using squash as a primary ingredient. Squash used to prepare the soup commonly includes acorn and butternut squash.

Squash that has initially been separately roasted can be used in soup preparation. The roasting of squash can serve to concentrate the gourd’s flavor. Squash soup can be prepared with chunks or pieces of squash and also with puréed squash. Pre-cooked, frozen squash can also be used, as can commercially prepared packets of pre-cooked frozen squash purée. Butternut squash soup may have a sweet flavor, due to the sugars present in the squash. Additional basic ingredients in squash soup’s preparation can include broth, onion, cream, spices such as sage and thyme, salt and pepper. Other recipes have been known to include split peas and more exotic spices such as cumin and cinnamon. Pumpkin soup can be served hot or cold, and is a popular Thanksgiving dish in the United States.

Pumpkin “pies” made by early American colonists had more similarities to being a savory soup served in a pumpkin than a sweet custard in a crust.

Squash soup

Pumpkin soup was a staple for the prisoners of war in North Vietnamese prison camps during the Vietnam War.

Squash soup is a soup in African cuisine. It is a part of the cuisine of Northern Africa, and the cuisines of Mozambique and Namibia, both of which are located in Southern Africa. Squash soup is also served in other countries and is a part of other cuisines. Soup Joumou is traditionally consumed in Haiti on New Year’s Day (January 1), as a historical tribute to Haitian independence in 1804.

CHORIZO HASH
I used half a pound of Chorizo for this recipe, but if you were wanting to feed a crowd for a casual dinner, just double it up! I think you are going to really like this!

Ingredients: (serves 6 or 4 hungry ranchers)
1 – half pound package Wild Idea Buffalo Chorizo
1 – tablespoon olive oil
1 – cup onions, chopped
2 – cups squash or yams, diced & partially cooked through
1 – teaspoon each; cumin, coriander, salt & pepper
1/4 – teaspoon chili powder
2 to 3 cups – spinach, chopped
I – lemon, juiced
Chili Flake

Preparation:

1 – Prep all ingredients as noted in ingredient list.
2 – In a large sauté pan or cast iron skillet over medium high heat, add olive oil, onions and spices. Stir to incorporate and allow to start to brown.
3 – Crumble in the Chorizo Sausage and break up into the onions with a spatula. Continue to cook until lightly browned.
4 – Stir in squash or yams and stir to incorporate, stirring occasionally. About seven minutes.
5 – Add chopped spinach and stir to incorporate. Add lemon juice and stir in. Reduce heat to low.
6 – Season to taste and finish with a sprinkle of chili flake.
Serve immediately with crusty bread. Leftovers make a great breakfast with a poached egg on the top!

Indian Summer Stew
Ingredients
Preparation time: 15 minutes
Cooking time: 50 minutes.

6 new red potatoes (about 3/4 pound)
2 tablespoons olive oil
2 cloves garlic, minced
2 medium onions, chopped
1/2 teaspoon chili powder
1 teaspoon cumin
1 teaspoon thyme
1 teaspoon basil
1 teaspoon oregano
1 small eggplant, chopped into bite-size chunks
3 medium tomatoes, chopped
2 green bell peppers, sliced into strips
1/2 pound green beans, trimmed and cut into bite-size pieces
2 yellow squash, sliced
4 tablespoons tomato paste
2 cups corn
2 teaspoons caraway seeds
1/2 teaspoon black pepper

Directions
Yield: about 12 cups
Serving size: 1 cup

1 – In a medium saucepan, boil unpeeled potatoes in water until tender, about 15 minutes. Drain and set aside. In a large soup pot or kettle, heat oil over medium-high heat. Add garlic and sauté 1 minute. Add onions, chili powder, cumin, thyme, basil, and oregano. Stir. Add eggplant and tomatoes; simmer 10 minutes. Add pepper strips and green beans; simmer 10 minutes. Cut potatoes into bite-size pieces and add to pot. Add squash, tomato paste, corn, caraway seeds, and pepper. Stir well and cook over low heat 10 to 15 minutes longer until vegetables are tender but not mushy. Serve hot.

(Serving note: 2 to 3 cups of cooked diced chicken or turkey may be added during the last 10 to 15 minutes of cooking time, if desired. Nutrition analysis does not include the added poultry.)

Buying Butternut Squash…………

Look for a squash that feels heavy for its size; one with a fat neck and small bulb will have the smallest seed cavity, yielding the most meat. Butternut squash should have a hard skin without bruises or mold. (A darker-colored spot indicating where the squash has been resting is fine).

Smoky Fiesta Rice
Recipe Ingredients:
1 tablespoon vegetable oil
2/3 cup yellow onions, 1/2-inch diceCooksrecipes 2
3/4 cup long grained white rice
1 teaspoon garlic, minced
1 1/3 cup water
1 1/2 teaspoons chipotle peppers in adobo, puréed
3/4 cup red bell peppers, 1/2-inch dice
3/4 cup yellow squash, 1/2-inch dice
3/4 cup green peas, frozen
2/3 cup California Ripe Olives, sliced
3/4 teaspoon salt
1/4 cup green onions, chopped
1/4 cup Cotija cheese, crumbled

Cooking Directions:
1 – Heat 1 teaspoon vegetable oil in a medium saucepot over medium heat. Add onions and cook for 2 to 3 minutes until translucent.
2 – Stir in rice and continue to cook for 3 to 4 minutes until just golden. Add garlic, cook for 1 minutes, then pour in water and chipotle purée. Bring to boil, then turn heat down to low, cover and cook for 20 minutes until rice is tender.
3 – In a separate sauté pan, heat remaining 2 teaspoons of oil over medium heat. Add peppers and cook for 2 to 3 minutes.
4 – Stir in squash and continue cooking for 3 to 4 minutes. Turn heat down to low, stir in peas and olives and cook until heated through. Season with salt.
5 – Toss sautéed vegetables with cooked rice. Garnish with green onions and cotija cheese just before serving.
Makes 4 servings.

Buying Acorn Squash……………

Look for an acorn squash that is heavy for its size with smooth, dull skin and no soft spots. A good balance between green and orange coloring is optimal. Avoid: acorn squash that has shiny skin, which indicates it was picked before full maturity, unless the producer has applied wax.

Chili con Carne
This chili con carne with ground beef is a serious crowd-pleaser, whether you’re hosting a football-watching party or just feeding a hungry family. It has a nice, beefy, beany flavor and just enough spice. You’ll be surprised that a chili that comes together in less than an hour has so much flavor. Three types of chile peppers (fresh poblanos, chili powder and chipotles in adobo) add depth and complexity. Poblanos also add some color to the chili–if you can’t find them, you can sub bell peppers of any color, though they won’t add heat. Using lean ground beef makes this chili healthier and also keeps it from being greasy. Be sure to brown the beef well for the best flavor: you want to stir to break up the chunks, but don’t stir too much or the beef won’t sear at all. Serve with cornbread and bowls of sour cream, chopped avocado, tomatoes, scallions, cilantro and hot sauce and let everyone customize their own bowl……………………..
