Sweet Potato and Turkey Salad
Here’s a savory salad recipe that’s totally sweet. This Sweet Potato & Turkey Salad recipe is low-carb without sacrificing any delicious down-home flavor. This meal is made with sweet potatoes, sweet turkey sausage, arugula and crunchy cashews. Under 300 calories per serving.

Total Time – 1 Hour
Serving Size – 6 Servings

Ingredients
DRESSING

1/3 – cup olive oil
2 – tablespoons red wine vinegar
2 – teaspoons Dijon mustard
1 – clove garlic, minced
2 – teaspoons packed brown sugar

SALAD

1 – tablespoon olive oil
3/4 – lb. sweet potato, peeled and cut into ¾-inch cubes
1 – (19.5-ounce) package JENNIE-O® Lean Sweet Italian Turkey Sausage
2 – cups arugula
1/2 – cup chopped cashews, toasted

Directions

1) For dressing, in bowl, add 1/3 cup oil, vinegar, mustard, garlic and brown sugar; whisk to mix.

2) For salad, heat oven to 375°F.

3) Line baking sheet with parchment paper. Combine oil and sweet potato on prepared baking sheet and arrange in a single layer.

4) Roast, 30 to 40 minutes or until tender and golden turning once.

5) While sweet potatoes are cooking, cook turkey as specifed on the package.

6) Always cook to well-done, 165°F. as measured by a meat thermometer.

7) Slice links into 1/4-inch rounds. In large bowl, add sweet potato, turkey, arugula and cashews. Drizzle with dressing and toss gently to coat.

Italian Turkey Sausage Sloppy Joes

INGREDIENTS

1 tablespoon olive oil
1 bell pepper, chopped
2 teaspoons fresh minced garlic
1 (19.5-ounce) package JENNIE-O® Lean Sweet Italian Turkey Sausage
1 cup marinara sauce
1 tablespoon chopped fresh basil
5 Italian or French bread rolls, split

 

DIRECTIONS
1) Heat oil in skillet over medium heat.

2) Add bell pepper and garlic.

3) Cook 3 minutes stirring occasionally.

4) Crumble sausage into skillet; discard casings.

5) Cook 12 to 14 minutes or until well-done, 165°F. as measured by a meat thermometer; stirring frequently.

6) Add marinara sauce and basil; simmer uncovered 5 to 7 minutes or until thickened.

7) Spoon mixture onto bottom of rolls and cover with roll top.

* Always cook to an internal temperature of 165°F.

Turkey Sausage, Pepper and Onion Hoagies
A hoagie is just a hoagie…except when it’s made with JENNIE-O® sweet Italian turkey sausage, drizzled with marinara and topped with sautéed peppers and onions! Then it’s a Turkey Sausage, Pepper & Onion Hoagie— totally different!
Total Time – 35 Minutes
Serving Size – 5 Servings

Ingredients
1 green bell pepper
1 yellow or red bell pepper
2 tablespoons olive oil, divided
4 slices red or yellow onion, separated into rings
1 (19.5-ounce) package JENNIE-O® Lean Sweet Italian Turkey Sausage
5 hoagie buns split and toasted
¾ cup prepared pizza or spaghetti sauce

Directions
1) Prepare grill. Cut bell peppers lengthwise into ¼-inch strips. Heat 1 tablespoon oil in skillet over medium heat. Add bell pepper strips and onion rings; cook 15 minutes or until vegetables are tender; stirring frequently.

2) Meanwhile, brush remaining oil over sausages.

3) Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Place dinner sausage in hot skillet. Cook uncovered, turning occasionally, 17-19 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

4) Serve sausages in hoagies, topped with heated sauce and vegetables.

It’s amazing how fast, lean and delicious dinner can be. Case in point: this sandwich. Sweet Italian turkey sausage, fresh basil, marinara and melted cheese top this low-carb Open Face Turkey Meatball Sandwich.

Total Time 30 Minutes
Serving Size 8 Servings

Ingredients
2 – teaspoons olive oil
1 – (19.5-ounce) package JENNIE-O® Lean Sweet Italian Turkey Sausage
1 – cup pizza sauce
2 – tablespoons chopped fresh basil
4 – sub rolls, split and toasted
1 – cup shredded pizza cheese
grated Parmesan and fresh bail leaves, if desired

Directions
1) In large skillet, heat oil over medium-high heat. Pinch and squeeze meat from each sausage into hot pan to form small meatballs; these will not be perfectly round.
2) Cook meatballs for about 12 minutes, turning occasionally, until cooked thoroughly. Always cook to well-done, 165°F. as measured by a meat thermometer.
3) Add sauce and stir to coat. Cook until sauce is hot. Stir in basil. Spoon meatballs into roll; top with cheese.
4) Place under heated broiler for about 2 minutes or until cheese is melted.
5) Garnish with grated Parmesan and fresh basil leaves, if desired.

1 tablespoon olive oil
2 tablespoons Cajun seasoning
1 pound large shrimp, peeled, deveined and patted dry, tails on
chives
sriracha mayonnaise

DIRECTIONS
1) Grill turkey sausage as specified on the package. Always cook until well done, 165°F as measured by meat thermometer. Slice sausage.
2) In medium bowl, combine oil and seasoning. Add shrimp and toss to coat.
3) Thread shrimp and turkey onto skewers. Cook skewers on grill 5 to 7 minutes or until shrimp are cooked through.
4) Garnish with chopped chives. Serve with sriracha mayonnaise if desired.
* Always cook to an internal temperature of 165°F.

Pasta with Pumpkin and Turkey Sausage
A hearty, delicious skillet pasta recipe that’s tailor-made for fall. Toss sweet Italian turkey sausage with a savory mix of chicken broth, white wine and pumpkin. Ready in under 30 minutes.

INGREDIENTS
1 (19.5-ounce) package JENNIE-O® Lean Sweet Italian Turkey Sausage
1 tablespoon olive oil
4 cloves garlic, chopped
1 medium onion, finely chopped
1 bay leaf
1 cup dry white wine
1 cup chicken broth
1 (14½-ounce) can pumpkin
½ cup heavy cream
⅛ teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 pound penne rigate, cooked al dente, drained
grated Parmesan cheese and sage leaves, if desired

DIRECTIONS
1) Cook sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Slice sausage into ¼-inch slices and set aside.
2) In skillet, add oil, garlic and onion; sauté 3 to 5 minutes or until onion is tender. Add bay leaf and wine. Cook until wine reduces by half; about 2 minutes. Add chicken broth and pumpkin; cook, stirring, until sauce bubbles. Add sausage and reduce heat and stir in cream. Season with cinnamon and nutmeg. Simmer 5 to 10 minutes to thicken sauce.
3) Place cooked penne rigate in large pot or saucepan. Remove bay leaf from sauce and pour sauce over pasta. Toss together over low heat 1 minute. Garnish with grated cheese and sage leaves, if desired.
*Always cook to an internal temperature of 165°F.

Turkey Sausage n’ Veggie Wrap
This savory wrap is packed with fresh veggies and sweet Italian turkey sausage. Herb goat cheese and a tangy vinaigrette bring the flavor profile to the next level. All for under 500 calories per serving!

INGREDIENTS
1 (19.5-ounce) package JENNIE-O® Lean Sweet Italian Turkey Sausage
1 red bell pepper, cut into thin strips
1 yellow bell pepper, cut into thin strips
1 orange bell pepper, cut into thin strips
1 cucumber, cut into thin strips
1 small red onion, cut into thin strips
½ cup vinaigrette or Italian dressing
6 tortillas
6 ounces soft herb goat cheese

DIRECTIONS
1) Cook sausage as specified on the package. Always cook to well done, 165°F as measured by a meat thermometer. Remove sausages from skillet, let cool slightly and cut diagonally into ¼-inch slices.
2) In a medium bowl, toss bell peppers, cucumber and red onion with the vinaigrette. Spread center portion of wrap with cheese. Divide vegetable strips and sausage slices evenly among the wraps. Fold or roll each wrap.
* Always cook to an internal temperature of 165°F.

Quick and Easy Turkey Lasagna
Bake up this simple Italian lasagna recipe with lean, sweet Italian turkey sausage and three kinds of cheese. Less than 500 calories per serving, done in under 60 minutes and super kid-friendly!

INGREDIENTS
1 (19.5-ounce) package JENNIE-O® Lean Sweet Italian Turkey Sausage
1 (26-ounce) spaghetti sauce
8 no-boil lasagna noodles
1 (15-ounce) container ricotta cheese
¼ cup grated Parmesan cheese
2 cups shredded mozzarella cheese, divided

DIRECTIONS
1) Heat oven to 450ºF. Crumble turkey sausage into a large pre-heated saucepan; discard casings. Cook over medium-high heat 5 to 7 minutes, breaking sausage into chunks and stirring frequently. Always cook turkey to well-done, 165°F as measured by a meat thermometer.
2) Add spaghetti sauce; bring to a boil. Reduce heat; simmer uncovered 5 minutes, stirring occasionally. Place 2 noodles on bottom of 9-inch square baking dish. Spread ¼ of sauce on noodles. Combine ricotta and Parmesan cheese; spoon ⅓ of mixture over sauce. top with ⅓ cup mozzarella cheese. Repeat layering 2 more times and place last 2 noodles on top. Cover with remaining sauce.
3) Cover with foil; bake 25 minutes or until noodles are tender and sauce is bubbly. Uncover; top with remaining 1 cup mozzarella cheese. Return to oven; bake 5 minutes or until cheese is melted. Let stand 5 minutes before serving.
* Always cook to an internal temperature of 165°F.

Turkey Sausage Pizza
Sick of everyday pepperoni pizza? This easy-to-make homemade pizza recipe will break you out of your rut, featuring flavorful sweet Italian turkey sausage, bell peppers and freshly chopped basil.

INGREDIENTS
1 (19.5-ounce) package JENNIE-O® Lean Sweet Italian Turkey Sausage
1 medium green or yellow bell pepper, chopped
1 (12-inch) pre-baked pizza crust
½ cup prepared pizza sauce
2 cups shredded mozzarella or Italian blend cheese, divided
2 thin slices red onion, separated into rings
fresh basil, chopped, if desired

DIRECTIONS
1) Heat oven to 450ºF. Remove and discard casing from sausage. In skillet, cook sausage and bell pepper as specified on the package. Always cook turkey to well-done, 165ºF as measured by a meat thermometer. Break sausage into chunks and stir occasionally.
2) Place pizza crust on baking sheet. Spread sauce over crust and add 1 cup cheese. Top with sausage mixture and onion rings. Sprinkle with remaining 1 cup cheese. Bake 10 to 12 minutes or until crust is golden brown and cheese is melted. Sprinkle with fresh basil, if desired.
* Always cook to an internal temperature of 165°F.

Italian Turkey Meatloaf
Looking for a lean Italian meatloaf recipe without all the carbs? Bake up flavors of the old country with basil tomato sauce, garlic and sweet Italian turkey sausage. A great weeknight dinner.

INGREDIENTS

1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 (19.5-ounce) package JENNIE-O® Lean Sweet Italian Turkey Sausage, casings removed
½ cup fresh breadcrumbs
¼ cup egg substitute or 1 egg
1 cup prepared tomato and basil pasta sauce, divided
1 clove garlic, minced
½ teaspoon freshly ground pepper
¾ teaspoon salt, if desired

DIRECTIONS
1) Heat oven to 350ºF. Spray a 8½ x 4½-inch loaf pan with cooking spray. In large bowl, combine ground turkey, sausage, breadcrumbs, egg, ½ cup pasta sauce, garlic, pepper and salt, if desired; mix well.
2) Put turkey mixture into loaf pan. Spread remaining ½ cup pasta sauce over meatloaf. Bake 1 hour and 45 minutes or until loaf is well-done, 165°F as measured by a meat thermometer. Let stand at room temperature 10 minutes before slicing.
* Always cook to an internal temperature of 165°F.
