Turkey Sausage and Apple Stuffing Bites
Mini stuffing bites are sure to steal the show at your holiday party. Featuring lean turkey sausage, tart apple and sautéed onion, this flavorful appetizer will go fast.

INGREDIENTS
2 tablespoons olive oil
1 large Granny Smith apple, chopped
1 cup chopped celery
1 cup chopped onion
1 (16-ounce) package JENNIE-O® Lean Hot Turkey Breakfast Sausage Roll
4 cups crumbled cornbread
1 cup grated Parmesan cheese
6 large eggs, lightly beaten or 1½ cups egg sustitute
1 cup low-sodium chicken broth
½ cup half-and-half
½ cup chopped fresh parsley leaves
3 tablespoons finely chopped fresh sage leaves

DIRECTIONS
1) Heat oven to 350°F.
2) In large skillet over medium heat, heat oil. Sauté apple, celery, and onion 7 to 10 minutes, or until translucent. Stir in turkey sausage and cook 8 minutes or until sausage is cooked through.
3) In large bowl, combine onion mixture, corn bread, cheese, eggs, broth, half-and-half, parsley and sage. Cover and let stand 30 minutes. Spoon mixture evenly into lightly greased muffin pan. Bake 20 minutes or until set. Always cook turkey to well-done, 165°F as measured by a meat thermometer.
* Always cook to an internal temperature of 165°F.

Savory Crescent Turkey Squares
Hit a homerun with the family tonight with these homemade pockets of hot, savory turkey in a creamy sauce. Great for cooking with leftovers, this great American dinner is extremely kid-friendly.

INGREDIENTS
1 (3-ounce) package cream cheese, softened
3 tablespoons butter, divided, softened
2 cups cubed JENNIE-O® Turkey Breast Roast
2 tablespoons milk
1 tablespoon chopped onion
¼ teaspoon salt, if desired
⅛ teaspoon black pepper
1 (8-ounce) can refrigerated crescent roll dough
½ cup seasoned croutons, crushed

DIRECTIONS
1) Heat oven to 350°F.
2) In bowl, combine cream cheese and 2 tablespoons butter. Stir until smooth. Add turkey, milk, onion, salt and pepper; mix together.
3) Separate dough into 4 rectangles, sealing perforations. Spoon turkey mixture on one end of rectangle. Fold other end of dough over filling. Seal edges with fork. Place on baking pan. Brush tops with 1 tablespoon melted butter. Sprinkle with crushed croutons.
4) Bake 20 to 25 minutes or until golden brown.

Turkey and Stuffing Roll-Ups
When cooking with holiday leftovers, sometimes you need a little variety. These bite-sized roll-ups let you enjoy the best of Thanksgiving Dinner in one delicious bite at under 500 calories per serving, you won’t need a nap afterwards!

INGREDIENTS
2 cups dried cubed bread
½ cup chopped onions
½ cup chopped celery
2 cloves garlic, minced
1 teaspoon poultry seasoning
¼ teaspoon freshly ground pepper
2 tablespoons butter, melted
1 cup low-sodium chicken broth
8 slices JENNIE-O® Tender Browned Turkey Breast, from the service deli
2 cups turkey gravy, warmed

DIRECTIONS
1) Heat oven to 350°F. Grease 8-inch square baking pan; set aside. In large bowl, combine bread cubes, onion, celery, garlic, poultry seasoning, pepper and butter. Add broth and mix to moisten. Add to baking dish. Bake 30 to 40 minutes or until top is browned and crunchy.
2) Add stuffing to slices of turkey. Roll up turkey; secure with toothpicks. Top with warm gravy.

Habanero Apricot Spaghetti Squash
Lighten up your pasta without going light on taste. This veggie-packed dish boasts a deliciously sweet heat thanks to all-natural JENNIE-O® Habanero Apricot Seasoned Turkey Sausage.

INGREDIENTS
1 (3-pound) spaghetti squash
½ cup water
2 tablespoons olive oil
1 (19.5-ounce) package JENNIE-O® Habanero Apricot Seasoned Turkey Sausage
1 medium onion, sliced
1 (8-ounce) package white mushrooms, sliced
1 (24-ounce) jar marinara sauce
½ teaspoon kosher salt, if desired
freshly grated Parmesan cheese, if desired
chopped fresh basil leaves, if desired

DIRECTIONS
1) Heat oven to 350°F.
2) Cut squash in half lengthwise. Scrape out and discard seeds and membranes. Place cut sides down in large baking dish, add water and bake 50 minutes or until tender. Turn cut sides up and let stand 10 minutes. Shred flesh with fork.
3) Meanwhile, in large skillet, heat oil over medium heat. Add turkey, mushrooms and onions and cook 10 minutes or until turkey is cooked through. Always cook sausage links to well-done, 165°F as measured by a meat thermometer and cut into 1-inch pieces. Add marinara sauce and salt and simmer 10 minutes.
4) Spoon squash onto serving plates and top with turkey mixture. Garnish, with cheese and basil, if desired.
* Always cook to an internal temperature of 165°F.

Good morning, flavor! This breakfast recipe is bursting with the fiery deliciousness of JENNIE-O® Hot All Natural Turkey Sausage, spicing up your morning and leaving you happy all day long.

1 (16-ounce) package JENNIE-O® Hot All Natural Turkey Sausage
1 (14.4-ounce) package pepper and onion stir fry blend
1 tablespoon extra-virgin olive oil

½ cup salsa

DIRECTIONS

Cincinnati Style 3-Way Turkey Chili

INGREDIENTS

1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 cup diced onion
2 cloves garlic, minced
3 tablespoons chili powder
¾ teaspoon ground cinnamon
¾ teaspoon paprika
¾ teaspoon ground allspice
pinch ground cloves
2 tablespoons packed brown sugar
1½ tablespoons unsweetened cocoa powder
1 cup low-sodium chicken broth
1 (14-ounce) can low-sodium tomato sauce
1 (14-ounce) can diced tomatoes
1 cup water
1½ tablespoons cider vinegar
1 teaspoon hot pepper sauce
1 pound spaghetti noodles, cook according to package directions
shredded Cheddar cheese, if desired

DIRECTIONS

1) Cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add onion, garlic, chili powder, cinnamon, paprika, allspice, cloves, brown sugar and cocoa powder; stir and cook 2 minutes.
2) Add broth, tomato sauce, tomatoes, water, vinegar and hot pepper sauce. Stir until blended. Bring sauce to a boil. Reduce heat and simmer. Simmer 15 minutes or until sauce thickens.
3) To serve, add cooked noodles to bowl. Ladle sauce over spaghetti. Sprinkle with cheese, if desired.

Pasta with Pumpkin and Turkey Sausage
A hearty, delicious skillet pasta recipe that’s tailor-made for fall. Toss sweet Italian turkey sausage with a savory mix of chicken broth, white wine and pumpkin. Ready in under 30 minutes.

INGREDIENTS
1 (19.5-ounce) package JENNIE-O® Lean Sweet Italian Turkey Sausage
1 tablespoon olive oil
4 cloves garlic, chopped
1 medium onion, finely chopped
1 bay leaf
1 cup dry white wine
1 cup chicken broth
1 (14½-ounce) can pumpkin
½ cup heavy cream
⅛ teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 pound penne rigate, cooked al dente, drained
grated Parmesan cheese and sage leaves, if desired

DIRECTIONS
1) Cook sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Slice sausage into ¼-inch slices and set aside.
2) In skillet, add oil, garlic and onion; sauté 3 to 5 minutes or until onion is tender. Add bay leaf and wine. Cook until wine reduces by half; about 2 minutes. Add chicken broth and pumpkin; cook, stirring, until sauce bubbles. Add sausage and reduce heat and stir in cream. Season with cinnamon and nutmeg. Simmer 5 to 10 minutes to thicken sauce.
3) Place cooked penne rigate in large pot or saucepan. Remove bay leaf from sauce and pour sauce over pasta. Toss together over low heat 1 minute. Garnish with grated cheese and sage leaves, if desired.
*Always cook to an internal temperature of 165°F.
