Blueberry Turkey Bacon Pancakes

Blueberry turkey bacon pancakes are a flavor combination of savory yet sweet that satisfies all your taste cues! Chopped turkey bacon plus fresh blueberries are an easy way to lift up ordinary pancakes to delicious new heights. You’ll be doing a slow clap for these flapjacks.

INGREDIENTS
2 cups pancake mix
6 slices Jennie – O Turkey Bacon
½ cup coarsely chopped fresh blueberries
maple syrup
garnish: fresh blueberries, additional chopped blueberry turkey bacon

DIRECTIONS
1) Prepare pancake batter according to package directions.
2) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Chop turkey bacon.
3) Stir chopped bacon and blueberries into pancake batter. Heat griddle to medium heat (350°F). Drop batter by ¼ cup onto lightly greased hot griddle. Cook 2 to 3 minutes and flip. Cook another 2 minutes.
4) Serve with maple syrup. Garnish with blueberries and bacon, if desired.

* Always cook to an internal temperature of 165°F.

Turkey Tex-Mex Meal Bowls
Bring tacos out of their shell with these Turkey Tex-Mex Bowls! They’re a fast, wholesome meal the whole family can actually agree on.

INGREDIENTS
1 tablespoon olive oil
1 (16-ounce) package JENNIE-O® Taco Seasoned Ground Turkey
2 cups cooked brown rice
1 (15-ounce) can black beans, rinsed and drained
1 cup cooked or frozen corn
2 bell peppers, cut into strips
¼ red onion, thinly sliced
1 cup cherry tomatoes, halved
½ cup chopped fresh cilantro
lime wedges and avocado slices, if desired

DIRECTIONS
1) In large skillet, heat olive oil over medium heat. Cook taco seasoned turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) Divide turkey, rice, beans, corn, bell pepper, onion, tomatoes and cilantro into 4 sealable containers. Refrigerate until ready to use. Garnish with lime wedges and avocado, if desired.

Brussel Sprout, Turkey Sausage and Potato Hash

INGREDIENTS
1 (1-pound) package JENNIE-O® All Natural* Turkey Sausage
2 tablespoons olive oil
1 pound Yukon gold potato, cubed
1 small onion, chopped
1 pound Brussels sprouts, trimmed and thinly sliced
½ red bell pepper, chopped
½ cup chicken broth
1 teaspoon kosher salt
½ teaspoon freshly ground pepper
chopped green onion, if desired

DIRECTIONS
1) Cook turkey sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) Add oil and potatoes and cook 5 minutes. Stir in onion and cook 5 minutes. Add sprouts, bell pepper, chicken broth, salt and pepper and cook 3 minutes or until bell pepper is tender. Garnish with chopped green onion, if desired.

Butternut Squash Gnocchi with Turkey Bacon
Here’s a side dish that’ll have guests fighting for the leftovers. Fresh butternut squash roasted with rosemary blends with pillowy gnocchi and crispy turkey bacon. Under 500 calories per serving!

INGREDIENTS
6 slices JENNIE-O® Turkey Bacon
3 cups cubed butternut squash
2 sprigs rosemary
1 teaspoon olive oil
1 tablespoon maple syrup
1 (1-pound) package prepared gnocchi, cooked according to package directions
½ cup basil pesto
grated Parmesan cheese, if desired

DIRECTIONS
1) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside.
2) Toss squash, rosemary, oil and syrup on baking sheet. Roast 45 minutes or until squash is golden and tender, stirring occasionally.
3) In large bowl, toss roasted squash, gnocchi, bacon and pesto until combined. Sprinkle with cheese, if desired.

Bacon, Mushroom and Cheese Turkey Burgers
Crumbled bacon, Cheddar, mushrooms and onions combined in one creamy turkey burger topping? ALL for under 300 calories per serving? YES please! It’s the kind of recipe that could convert any Burger lover to turkey.

INGREDIENTS
4 slices JENNIE-O® Turkey Bacon
½ cup fat-free Cheddar cheese
½ cup coarsely chopped mushrooms
¼ cup fat-free mayonnaise
1 green onion, finely chopped
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
3 tablespoons finely chopped onion
2 cloves garlic, minced
¼ teaspoon freshly ground pepper
4 wheat hamburger buns, split
4 leaves lettuces

DIRECTIONS
1) Heat broiler or prepare grill.
2) Cook bacon as specified on package; chop into pieces. In small bowl, combine bacon, cheese, mushrooms, mayonnaise and green onion; mix well.
3) In bowl, mix ground turkey, onion, garlic and pepper. Shape into patties. Cook burgers as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. During the last 2 to 3 minutes of cooking, spoon bacon topping over each burger. Cook until cheese is melted.
4) On bun bottom, layer lettuce leaves and burger cover with bun top.

1 pound JENNIE-O® Turkey Thighs
1½ teaspoons ground ginger
½ teaspoon garlic powder
¼ teaspoon kosher salt
1 tablespoon olive oil
4 cups chicken stock
1 tablespoon coconut oil
½ cup sliced red sweet peppers
½ cup sliced green onions
2 small zucchini, spiraled
3 cups assorted raw vegetables
1½ teaspoons ground ginger
½ teaspoon garlic powder
¼ teaspoon kosher salt
cilantro, if desired

DIRECTIONS
1) Cook turkey thighs as specified on the package. Always cook to well-done, 180°F as measured by a meat thermometer. Shred and place in medium bowl. Combine with 1½ teaspoons ginger, garlic powder, salt and olive oil.
2) In kettle, over medium high heat, bring chicken stock to boil.
3) In wok or large skillet over high heat, add coconut oil, red peppers, green onion, zucchini spirals, assorted raw vegetables, 1½ teaspoons ground ginger, ½ teaspoon garlic powder and ¼ teaspoon kosher salt. Sauté 2 minutes.
4) In bowls or cups, evenly divide turkey mixture, vegetable mixture and broth. Garnish with cilantro, if desired.
* Always cook to an internal temperature of 165°F.

1 cup shredded mozzarella cheese
1 cup shredded Cheddar cheese
8 sesame seed buns, warmed
ketchup and mustard, if desired

DIRECTIONS
1) Prepare grill or griddle for medium heat.
2) Cook burgers on grill or griddle 14 to 16 minutes or until cooked through. Always cook to well-done 165°F as measured by a meat thermometer. Sprinkle salt on burgers.
3) Top with cheeses and place on aluminum foil-lined baking sheet.
4) Heat oven to broil. Broil 5-inches from heat source 3 to 5 minutes or until cheese is bubbly. Serve in buns with ketchup and mustard, if desired.

½ red bell pepper, sliced
2 cups broccoli florets
¼ cup plus 1 tablespoon Teriyaki Sauce
1 tablespoon Low-Sodium Soy Sauce
3 cups cooked brown rice

DIRECTIONS
1) Cook ground turkey in olive oil as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.

2) Add to the cooked turkey, green onions, garlic, ginger and cook 3 minutes. Stir in carrots, peppers, broccoli, teriyaki and soy sauce. Cook until broccoli is crisp tender. Serve over brown rice.

INGREDIENTS
2 ounces JENNIE-O® Turkey Bacon
8 ounces JENNIE-O® Slow Roasted Dark Turkey
¼ cup diced green bell peppers
1 (12-inch) pre-baked pizza crust
8 ounce sweet chili sauce
2 cups mozzarella Cheese
½ cup Cheddar cheese
½ cup Parmesan cheese

DIRECTIONS
1) Cook turkey bacon as specifed on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Dice; set aside.
2) Shred turkey pot roast, set aside.
3) Spread pizza crust with sweet chili sauce. Add cheeses. Top cheese with shredded turkey, green peppers and bacon bits. Bake 10 to 12 minutes, or until cheese is melted and crust is golden brown.
