Red Beans Turkey and Rice
This recipe is the epitome of classic Cajun comfort food. Fill your house with the aroma of thyme, lean turkey and stewed tomatoes. This low-fat recipe is ready to eat in under 60 minutes!

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey

Red Beans Turkey and Rice

1 cup finely chopped onion
1 green pepper, finely chopped
½ cup sliced celery
2 teaspoons minced garlic
1½ teaspoons thyme
1 teaspoon hot pepper sauce
½ teaspoon salt
1 (14½-ounce) can cajun-style stewed tomatoes
1 (15-ounce) can red kidney beans, rinsed and drained
¼ cup tomato paste
4 cups cooked white or brown rice
¼ cup chopped fresh parsley

DIRECTIONS
1) In large deep skillet, cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add onion, green pepper, celery and garlic; cook 5 minutes or until slightly softened; stirring occasionally.
2) Sprinkle with thyme, hot pepper sauce and salt; cook 5 minutes, stirring occasionally. Add cajun-style stewed tomatoes, kidney beans and tomato paste. Cook, uncovered, 10 minutes or until hot and flavors are blended, stirring occasionally.
3) Serve over cooked rice. Sprinkle with fresh parsley and serve with additional hot sauce, if desired.
* Always cook to an internal temperature of 165°F.

Turkey Taco Cups
Impress a brunch crowd with these cute, flavorful mini-breakfast cups. Baked with eggs, Cheddar and lean turkey sausage, this recipe is under 300 calories per serving!

INGREDIENTS
3 corn tortillas
olive oil cooking spray
1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Links, casing removed, sliced
½ cup tomato salsa
2¼ cups egg whites or egg substitute
¼ cup shredded low-fat Cheddar cheese
¼ cup sliced ripe olives
2 tablespoons chopped fresh cilantro
salsa, if desired

DIRECTIONS
1) Heat oven to 400°F. Stack corn tortillas and cut into quarters. Cut quarters in half 8 wedges for each tortilla (and a total of 24 wedges). Spray muffin cups with cooking spray.
2) Cook and crumble turkey sausage links as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
3) To assemble: Place one tortilla wedge in each muffin cup, with the widest side at the bottom of the cup. Place a second tortilla wedge on the opposite side of the muffin cup so that the wide edges will be overlapping in the bottom of the cup, by about ½-inch. The tortilla wedge points will extend outside of the cup, about ½-inch straight up. Repeat with remaining. Place about 1½ tablespoon sausage (from one whole link) in each muffin cup, on top of the tortilla wedges. Place a tablespoon of salsa on top of the sausage.
4) Measure 3 tablespoons of egg white (or egg substitute) into each muffin cup. Bake 10 minutes or until eggs are just set. They will be slightly puffed. Carefully remove “muffins” from pan and place two on each serving plate. Sprinkle each “muffin” with cheese. Top each muffin with few olive slices and sprinkle with cilantro. Serve with extra salsa, if desired.
* Always cook to an internal temperature of 165°F.

Sweet Potato Turkey Bacon ‘Toast’
Who needs bread to have toast? Sweet potatoes are the base of this fall-themed snack. Topped with JENNIE-O® Lower Sodium Turkey Bacon made with Sea Salt, avocado dip and a poached egg, this recipe makes a nutritious breakfast or brunch that’s sure to impress.

INGREDIENTS
2 large sweet potatoes
1 teaspoon kosher salt
6 slices JENNIE-O® Lower Sodium Turkey Bacon made with Sea Salt
1 (8-ounce) package WHOLLY® SIMPLY AVOCADO™ dip
6 poached eggs, kept warm, if desired
1 tablespoon smoked paprika or Aleppo pepper

DIRECTIONS
1) Slice sweet potatoes into 6 ½-inch slices. Place on parchment paper-lined baking sheet or jellyroll pan in a single layer. Lightly spray with cooking spray and sprinkle with salt. Bake 20 minutes, flipping half way through.
2) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside.
30 Top sweet potatoes slices with avocado, bacon slices, and poached egg. Sprinkle with smoked paprika.
* Always cook to an internal temperature of 165°F.

Italian Turkey Meatloaf
Looking for a lean Italian meatloaf recipe without all the carbs? Bake up flavors of the old country with basil tomato sauce, garlic and sweet Italian turkey sausage. A great weeknight dinner.

INGREDIENTS

1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 (19.5-ounce) package JENNIE-O® Lean Sweet Italian Turkey Sausage, casings removed
½ cup fresh breadcrumbs
¼ cup egg substitute or 1 egg
1 cup prepared tomato and basil pasta sauce, divided
1 clove garlic, minced
½ teaspoon freshly ground pepper
¾ teaspoon salt, if desired

DIRECTIONS
1) Heat oven to 350ºF. Spray a 8½ x 4½-inch loaf pan with cooking spray. In large bowl, combine ground turkey, sausage, breadcrumbs, egg, ½ cup pasta sauce, garlic, pepper and salt, if desired; mix well.
2) Put turkey mixture into loaf pan. Spread remaining ½ cup pasta sauce over meatloaf. Bake 1 hour and 45 minutes or until loaf is well-done, 165°F as measured by a meat thermometer. Let stand at room temperature 10 minutes before slicing.
* Always cook to an internal temperature of 165°F.

Grilled Turkey Tenderloin and Veggies
This is a Gluten Free Recipe

INGREDIENTS
1 tablespoon olive oil
¼ teaspoon freshly ground pepper
1 cup zucchini, cut ¼-inch thick slices
½ cup strips red bell pepper
½ cup strips yellow bell pepper
1 (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin
2 tablespoons chopped fresh cilantro
6 lemon wedges, if desired

DIRECTIONS
1) In bowl combine oil and pepper; add zucchini and bell peppers. Toss to coat. Grill zucchini and bell peppers 5 minutes or until tender.
2) Grill tenderloin as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Cut tenderloin into 6 pieces.
3) Serve tenderloin with vegetables sprinkled with cilantro and lemon wedges, if desired.
* Always cook to an internal temperature of 165°F.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
½ cup CHI-CHI’S® salsa
2 tablespoons red wine vinegar
1 tablespoon chili powder
1 (15-ounce) can kidney beans or garbanzo beans, rinsed and drained
4 cups shredded lettuce, divided
2 tomatoes, chopped
½ cup chopped bell pepper
6 tablespoons shredded Cheddar cheese
sour cream, if desired
1 avocado, sliced, if desired

DIRECTIONS
1) Cook turkey as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer. Stir in salsa, vinegar, chili powder and beans; cook until hot.
2) On 5 plates, layer lettuce, turkey mixture, tomatoes, bell pepper and cheese.
3) Serve with sour cream and avocado, if desired.

Mouth-Watering Turkey Patty Melts
The name says it all! Caramelized onions, melted cheese and lean turkey patties served on rye. At under 500 calories per serving, this is a lean burger favorite that the whole family will love.

INGREDIENTS
1½ tablespoons butter, divided
1 cup chopped onion
1 (16-ounce) package JENNIE-O® Lean Turkey Burger Patties
8 slices American or Cheddar cheese
8 slices rye or pumpernickel bread

DIRECTIONS
1) In skillet, melt 1 tablespoon butter over medium heat. Add onion and cook 5 to 10 minutes or until tender and golden brown, stirring occasionally.
2) Cook turkey patties as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer.
3) Place 1 cheese slice over each slice of bread. Add patties and top with onions. Close sandwiches with remaining bread, cheese side down. In skillet, melt 1 tablespoon butter. Cook sandwiches 3 minutes per side or until browned and cheese is melted.
* Always cook to an internal temperature of 165°F.

Slow Cooker Italian Vegetable Gnocchi Soup
Soup’s on! Enjoy a hearty mix of seasonal veggies, gnocchi, and hardwood smoked turkey kielbasa in a savory broth! All you have to do is throw the ingredients into the slow cooker and the rest is magic. Thaw yourself out from the cold outside with a steamy cup or – who are we kidding – bowl!

INGREDIENTS
1 yellow onion, chopped
3 celery stalks, chopped
2 carrots, peeled and chopped
1 medium fennel bulb, stalks removed and chopped
3 garlic cloves, thinly sliced
2 tablespoons tomato paste
1 (28-ounce) can whole peeled tomatoes
1 (15-ounce) can garbanzo beans, rinsed and drained
1 (32-ounce) box vegetable broth
3 cups kale leaves, chopped
2 teaspoons chopped fresh oregano leaves
2 teaspoons chopped fresh thyme leaves
½ (16-ounce) package gnocchi
1 cup chopped fresh basil leaves
½ (14-ounce) package JENNIE-O® Fully Cooked Hardwood Smoked Turkey Kielbasa

DIRECTIONS
1) In slow cooker place, onion, celery, carrots, fennel, garlic, tomatoes, beans, vegetable broth, kale, oregano and thyme. Cook on HIGH 4 hours or LOW 6 to 8 hours.

2) Add gnocchi, basil and kielbasa and cook 30 minutes or until gnocchi is tender.

Turkey Sausage and Cheese Crescent Rolls
Add a little more substance to your crescent rolls for the holidays—like crumbled turkey sausage and gooey Gruyere cheese! Combine sausage and cheese together and spoon into premade, crescent dinner roll dough. Super simple, super delicious and super fast! These instant hits can be made quickly (under 20 minutes) and will likely disappear off your serving plate even quicker.

INGREDIENTS

6 ounces JENNIE-O® All Natural Turkey Sausage
1 cup shredded Gruyere cheese
1 (8-ounce) refrigerated crescent dinner rolls
1 egg, lightly beaten or ¼ cup egg substitute
1 tablespoon water
2 tablespoons poppy seeds
DIRECTIONS

1) Cook turkey sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Let stand 10 minutes. In medium bowl, combine sausage and cheese.
2) Separate dough into 8 triangles.
3) Spoon 1 tablespoon sausage mixture onto each triangle. Roll up loosely as directed on package. Place on cookie sheet.
4) In small bowl, whisk together egg and water. Brush egg mixture over crescents. Sprinkle with poppy seeds.
5) Bake 14 to 16 minutes or until golden brown.
* Always cook to an internal temperature of 165°F

Apple Brined Whole Turkey

INGREDIENTS

1 (12 to 18-pound) JENNIE-O® All Natural Fresh Whole Turkey
1 gallon cold water
4 cups apple cider
1¼ cups kosher salt
1 cup firmly packed brown sugar
1 orange, cut in quarters
1 apple, cut in quarters
1 tablespoon whole allspice
6 whole cloves
1 cinnamon stick
4 sprigs fresh thyme leaves
2 sprigs fresh sage
2 dried bay leaves
2 teaspoons whole peppercorns

DIRECTIONS

1) NOTE: Do not brine a turkey if the turkey has been enhanced with a solution.

2) Rinse the turkey in cool water.

3) In clean container large enough to hold the turkey, mix water, apple cider, salt, brown sugar, orange, apple, allspice, clove, cinnamon stick, thyme, sage, bay leaves and peppercorn; stirring to dissolve salt.

4) Submerge turkey in brine solution. Cover and refrigerate 6 to 8 hours.

5) Remove the turkey from brine. Rinse thoroughly under a slow stream of cold water. Pat skin and cavities dry.

6) Cook whole bird as specified on the package. Roast until timer pops up and turkey is fully-cooked, 180°F as measured by a meat thermometer inserted into the thickest part of the thigh. ALWAYS confirm doneness with a meat thermometer. Juices should run clear. Let stand tented with foil 20 minutes before carving.
