Rustic Roasted Turkey Pot Roast and Vegetables
Who doesn’t love quick, weeknight dinners? This classic comfort food recipe is not only extremely tasty, it’s ready in under 1 hour!

INGREDIENTS

2 sweet potatoes, peeled and cut into 1-inch pieces
1 red onion, cut into 8 wedges2 parsnips, peeled and cut into 1-inch pieces
1 red bell pepper, cut into 1-inch pieces
4 tablespoons olive oil
4 cloves garlic, minced
½ teaspoon salt
⅛ teaspoon freshly ground pepper
½ teaspoon dried basil
1 tablespoon apple cider vinegar
¼ teaspoon Italian seasoning
¼ cup fresh parsley, loosely torn
2 pounds JENNIE-O® Bone-in Turkey Pot Roast, cut into pieces

DIRECTIONS

1) Heat oven to 400°F.
2) In large bowl, combine sweet potatoes, onion, parsnips, bell pepper, olive oil, garlic, salt, pepper, basil, vinegar, Italian seasoning and parsley; mix well. Place vegetable in large baking pan. Bake 20 minutes, stir and add turkey pot roast. Bake 15 to 20 minutes or until vegetables are tender and golden brown.

School mornings get can a little crazy. Don’t let that stop you from making this crazy delicious Turkey Waffle Sandwich! When the only sound is chewing, you’ll appreciate a moment of sanity.

INGREDIENTS

1 tablespoon butter
4 large eggs, well beaten or 1 cup egg substitute
salt and pepper, if desired
4 frozen waffles
4 ounces JENNIE-O® All Natural Oven Roasted Turkey Breast, from the service deli
2 slices Cheddar cheese

DIRECTIONS

1) In small skillet, melt butter over medium heat. Stir in eggs and cook 2 minutes, stirring often. Season with salt and pepper, if desired.
2) Heat waffles according to package directions. Divide eggs among 2 waffles. Top with oven roasted turkey, cheese and remaining waffles.

A wrap recipe so fresh and ready for the beach, you can almost smell the suntan lotion. Crispy turkey bacon, creamy avocado, and fresh Roma tomatoes fill this picnic wrap that’s ready in under 15 minutes.

INGREDIENTS

4 slices JENNIE-O® Turkey Bacon
½ cup garden vegetable flavored cream cheese
4 (8-10-inch) flour tortillas
¼ pound JENNIE-O® Oven Browned Turkey Breast, from the service deli, thinly sliced
¼ pound JENNIE-O® Extra Lean Turkey Ham, 25% water added, thinly sliced, from the service deli
2 Roma tomatoes, thinly sliced
1 avocado, peeled and diced

DIRECTIONS

Turkey Breakfast Pizza

Brunch doesn’t get as much respect as other meals. But that stops today. With flaky crust, bell peppers and crispy turkey bacon, they’ll remember this meal all week.

INGREDIENTS

1 (13.8-ounce) can refrigerated pizza dough
½ (12-ounce) package JENNIE-O® Turkey Bacon
2 tablespoons butter
2 tablespoons flour
1¼ cups milk
½ cup shredded Cheddar cheese
¼ cup sliced green onions
¼ cup chopped red bell pepper

DIRECTIONS

1) Heat oven to 425°F. Spray 13×9-inch baking dish with non-stick cooking spray.
2) In prepared dish, press dough in bottom and up sides of pan. Bake 5 minutes. Remove from oven; set aside.
3) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Crumble; set aside.
4) Melt butter in saucepan over medium heat. Stir in flour until smooth. Gradually whisk in milk. Cook 5 to 10 minutes or until thickened, stirring occasionally. Remove from heat and add cheese; stir until melted. Spread cheese sauce evenly over baked crust.
5) Sprinkle with bacon, green onions and bell pepper. Bake 15 minutes or until crust is golden brown.
* Always cook to an internal temperature of 165°F.

1 cup Greek yogurt
¼ cup fat-free sour cream
½ cup finely chopped cucumber
¼ cup fresh mint leaves
½ teaspoon kosher salt, if desired
¼ teaspoon freshly ground pepper, if desired

8 Bibb lettuce leaves
red onion slices
cucumber slices
fresh spinach leaves
fresh mint leaves

DIRECTIONS
