Hawaiian Turkey Hot Dogs

Get more creative with your turkey dogs by adding more zip than the usual mustard and ketchup defaults. This topping is a mixture of pineapple, jalapeño, honey, onion that just might change the way you do hotdogs forever.

INGREDIENTS

2 cups chopped fresh pineapple
¼ cup thinly sliced red onion
1 jalapeño, seeded minced
3 tablespoons chopped fresh cilantro leaves
2 tablespoons fresh lime juice
1 teaspoon honey
⅛ teaspoon salt
8 JENNIE-O® Turkey Franks
8 hot dog buns
DIRECTIONS

1) In medium bowl, combine pineapple, red onion, jalapeño, cilantro, lime juice, honey and salt; set aside.
2) Prepare grill for medium-high heat. Grill turkey franks 4 to 5 minutes or until slightly charred and heated through. Place turkey franks into buns. Top with pineapple mixture.

⅔ cup whole berry cranberry sauce

1 cup baby arugula leaves
DIRECTIONS

1) Cook turkey as specified on the package. Always cook to well-done, 165°F. as measured by a meat thermometer.
2) In small bowl, combine cranberry sauce, chipotle pepper and orange juice.
3) Place turkey patties on bottom halves of each roll. Top with cranberry mixture and arugula. Cover with roll tops.

Turkey Burger Wrap with Creamy Salsa

Lighten up your dinner with these creamy salsa turkey burgers wrapped in hearty lettuce leaves. Topped with delicious Greek yogurt sauce and avocado, this dish is a total crowd pleaser and ready under 30 minutes!

 

INGREDIENTS

1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 cup LA VICTORIA® Medium Thick n’ Chunky Salsa, divided or CHI-CHI’S® Medium Thick n’ Chunky Salsa, divided
½ teaspoon ground cumin
3 tablespoons freshly chopped cilantro
¼ cup plain breadcrumbs
2 tablespoons olive oil
½ teaspoon salt and freshly ground pepper, if desired
¼ cup plain Greek yogurt
4 Bibb lettuce leaves
4 slices tomato
1 avocado, peeled and sliced
DIRECTIONS

1) In medium mixing bowl, combine ground turkey, ½ cup of salsa, cumin, cilantro, breadcrumbs, olive oil and salt and pepper, if desired; mix well and form into 4½-inch thick patties.
2) Spray skillet with non-stick cooking spray. Preheat skillet over medium-high heat. Add burger patties to hot skillet. Cook approximately 14 to 16 minutes, flipping 3 times. Always cook to well-done, 165°F as measured by a meat thermometer.
3) In small mixing bowl, combine yogurt and reserved ½ cup salsa.
4) On lettuce leaves, top with tomato, avocado, turkey burger and creamy salsa.
* Always cook to an internal temperature of 165°F.

Cheesy Turkey Quesadillas

Here’s a quesadilla recipe so tasty! Melted cheese, deli turkey, refried beans, fresh tomatoes and green onions fill this simple appetizer at under 500 calories per serving.

INGREDIENTS

2 teaspoons canola oil
4 CHI-CHI’S® taco-sized whole wheat tortillas
1 cup refried beans
1 teaspoon chili powder
12 ounces JENNIE-O® DELI FAVORITES® Oven Roasted, Reduced Sodium Turkey Breast, from the service deli
1 tomato, chopped
4 green onions, sliced
½ cup shredded reduced-fat Cheddar cheese
salsa, if desired
yogurt, if desired
DIRECTIONS

1) Heat griddle or large skillet. Brush 2 tortillas with oil. Place oiled side down on cutting board. Spread with refried beans. Sprinkle with chili powder.
2) Place on griddle. Top with turkey, tomato, green onions and cheese. Add remaining tortillas. Brush with oil. Cook 2 to 3 minutes or until browned. Turn and cook 2 minutes or until golden brown. Cut into quarters. Serve with salsa and yogurt, if desired.

1 tablespoon rice vinegar
1 cup sliced kimchi
¼ cup diced red pepper
¼ cup shredded carrot
¼ cup sliced green onion

6 brioche buns, sliced and toasted
DIRECTIONS

1) In small bowl, add garlic, ginger, sesame oil, soy sauce and barbeque sauce. Mix well; refrigerate.

Savory Tomato and Turkey Tarts

Every Easter menu needs these mini turkey tarts! The savory tomato and turkey duo with the goat cheese is the perfect flavor combo for any occasion. Perfect for a holiday brunch or appetizer for dinner.

INGREDIENTS

½ (14.1-ounce) package refrigerated pie crusts
1 (8-ounce) package cream cheese, softened
1 (4-ounce) package goat cheese
3 eggs, lightly beaten or ¾ cup egg substitute
½ cup grated Parmesan cheese
½ teaspoon kosher salt, if desired
¼ teaspoon freshly ground pepper
1½ cups JENNIE-O® GRAND CHAMPION® Oven Roasted Turkey Breast, shredded, from the service deli
1 tablespoon olive oil
½ pint cherry tomatoes
2 teaspoon chopped fresh thyme leaves
grated Parmesan cheese, if desired
DIRECTIONS

1) Place oven rack on bottom rack. Heat oven to 375°F.
2) Unroll 1 pie crust onto lightly floured surface. Roll out to 12-inch circle and cut in half lengthwise and then crosswise, creating 4 equal pieces. Press each dough quarter into and up sides of 4 (4.75-inch) mini tart pans; cutting and discarding excess dough. Refrigerate.
3) In medium bowl, combine cream cheese, goat cheese, egg, cheese, salt and pepper until smooth. Set aside.
4) In large skillet, heat oil over medium-high heat. Add tomatoes and cook 5 to 7 minutes or until blistered.
5) Spoon cheese mixture into tart pans. Top with turkey, tomatoes and thyme leaves. Bake 40 to 45 minutes or until lightly browned. Sprinkle with grated Parmesan cheese, if desired. Servings 4 to 8.
