Ingredients
1 – (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast

3 – cups cooked quinoa

1 – (15-ounce) can black beans, drained and rinsed

1 – cup corn kernels

1 – avocado, sliced

4 – lime wedges

Creamy Salsa Sauce

1/2 – cup salsa

1/4 – cup plain Greek yogurt

Directions
1.) Cook ground turkey according to package directions. Always cook to well-done, 165°F as measured by a meat thermometer. Divide quinoa, cooked ground turkey, black beans, corn, avocado slices, Creamy Salsa Sauce, and lime wedge among 4 serving bowls.

Southwest Pesto Turkey Burgers
Avocado? Salsa? PEPPER JACK CHEESE? These are the makings of an epic burger. The addition of cilantro pesto cinches it. Get ready for a tasty southwestern weeknight dinner that’s ready in under 30 minutes.
Total Time – 30 Minutes
Serving Size – 4 Servings

INGREDIENTS
1 (19-ounce) package JENNIE-O® Lean Seasoned Turkey Burger Patties
4 slices pepper jack cheese
2 tablespoons mayonnaise
1 tablespoon prepared cilantro pesto
4 Kaiser rolls, split
1 ripe avocado, peeled and sliced
4 tablespoons CHI-CHI’S® salsa, divided

DIRECTIONS
1) Spray skillet with nonstick cooking spray or add 1 to 2 teaspoons of oil. Preheat skillet over medium heat.

2) Place burger patties in hot skillet. Cook approximately 15 to 17 minutes turning occasionally (2-3 times). Always cook to well-done, 165°F. as measured by a meat thermometer. Add cheese to patties during last minute of cooking.

3) While patties are cooking, combine mayonnaise and cilantro pesto in small bowl; mix well. Top cooked patties with mayonnaise mixture.

4) Serve on rolls with avocado and salsa.
* Always cook to an internal temperature of 165°F.

Lemon Garlic Turkey Kabobs
Fire up the grill and put this simple Lemon Garlic Turkey Kabobs recipe to the test. Grilled pineapple, fresh cherry tomatoes and delicious chunks of turkey breast tenderloins make up this no-gluten meal.

Ingredients
½ cup fat-free Italian dressing
2 tablespoons fresh lemon juice
3 cloves garlic, minced
2 teaspoons finely grated lemon peel
1 (24-ounce) package JENNIE-O® Lemon Garlic Turkey Tenderloin, cut into 1-inch cubes
1 red bell pepper, cut into chunks
1 small red onion, cut into wedges
cherry tomatoes, if desired
pineapple chunks, if desired

Directions
1) Combine dressing, lemon juice, garlic and lemon peel. Set aside small amount of marinade to brush on kabobs while grilling.

2) Place tenderloin, bell pepper, onion, cherry tomatoes and pineapple in large reclosable food storage bag.

3) Add marinade to bag. Refrigerate 30 minutes.

4) Prepare grill. Drain turkey, vegetables, and fruit; discard marinade. Thread turkey, vegetables and fruit on skewers. Brush reserved marinade over kabobs.

5) Grill 6 minutes; turn and brush with remaining marinade and continue grilling 7 to 8 minutes or until the turkey is well-done, 165°F. as measured by a meat thermometer.

Turkey Enchilada Lasagna

Ingredients
1 – (1-pound) package JENNIE-O® Lean Ground Turkey

2 – tablespoons tomato paste

1 – (15-ounce) can pinto beans, rinsed and drained

1 – (15-ounce) diced tomatoes and green chilies

2 – (15-ounce) cans mild enchilada sauce, divided

½ – teaspoon kosher salt

9 – corn tortillas

1 ½ – cups shredded Mexican 4-cheese blend

garnish: chopped fresh cilantro leaves, sliced fresh jalapeños, sliced ripened olives, sour cream

 

Directions

1) Add ground turkey to a nonstick cooking sprayed hot skillet over medium-high heat. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

2) Stir in tomato paste and cook 1 minute.

3) Add beans, tomatoes, 1 can enchilada sauce and salt.

4) Heat oven to broil and place rack 5 inches under broiler.

5) Place tortillas on baking rack and broil 3 to 5 minutes or until slightly charred on each side.

6) Place 3 corn tortillas in bottom of 13 x 9-inch baking dish.

7) Spoon half turkey mixture over tortillas. Repeat layers ending with tortillas. Pour remaining enchilada sauce over tortillas.

8) Cover and bake 30 minutes or until bubbly. Remove foil, sprinkle with cheese, and bake 15 minutes more or until cheese is melted.

9) Garnish, if desired.
