Turkey Bacon Potato Skins
Cheesy and crispy potatoes topped with JENNIE-O® Turkey Bacon are the best appetizer or side dish to any meal. This appetizer will have you going back for seconds!

Ingredients
4 – slices JENNIE-O® Turkey Bacon
2 – medium potatoes, sliced into ½-inch slices
2 – tablespoons melted butter
1 – teaspoon kosher salt
1/2 – teaspoon ground pepper
1 – cup shredded cheddar cheese
1/2 – cup chopped green onion
1/2 – cup sour cream

Directions
1) Cook bacon as specified on the package, cool and finely chop. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside.

2) Place potato slices on lightly greased baking sheet and brush tops with butter. Sprinkle with salt and pepper. Bake 10 minutes, flip and bake an additional 10 minutes, or until tender.

3) Remove from oven. Sprinkle with cheese, green onion, and bacon. Bake 5 minutes or until cheese is melted. Top with sour cream.

1 – can (15 ounce) black beans, rinsed and drained
3/4 – cup salsa

Shredded lettuce
Sour cream and additional salsa

Directions

Turkey and Spinach Chile Relleno with Fresh Tomato Sauce
Grilled Poblano peppers stuffed with seasoned ground turkey and baked with a fresh homemade tomato sauce. Just an epic, easy-to-follow Mexican weeknight dinner recipe that’s under 500 calories per serving!

Serving Size – 4 Servings

INGREDIENTS
TOMATO SAUCE
3 cups cherry tomatoes
2 (4-ounce) cans diced green chilies
1 medium white onion, chopped
1 red pepper, chopped
6 cloves garlic, minced
2 tablespoons flax seeds, if desired
juice of 1 lime
¼ cup fresh cilantro

CHILE RELLENO
8 medium sized poblano peppers
olive oil cooking spray
2 teaspoons extra virgin olive oil
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
2 teaspoons dried oregano
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon cumin
½ teaspoon kosher salt
½ teaspoon cayenne
2 cups fresh spinach, chopped
1 cup low-fat shredded mozzarella cheese
1 cup gluten free breadcrumbs
½ cup fresh cilantro, for garnish

DIRECTIONS
1) Tomato Sauce
2) In a food processor, combine cherry tomatoes, green chilies, onion, red pepper, garlic cloves, flaxseed, if desired, lime juice and cilantro. Blend mixture until a chunky sauce forms.
3) Blend mixture until a chunky sauce forms.
4) POBLANO PEPPERS
5) Move top shelf to under the broiler. Heat oven to broil. Line baking sheet with foil. Place poblano peppers on baking sheet. Cook under high heat until peppers are blackened. Watch carefully. Once one side is burned, turn it over so other side can cook. All side of pepper should be evenly blackened. Place in large bowl and cover bowl tightly with plastic. Reduce oven temperature to 375°F.
6) TURKEY SPINACH FILLING
7) In large Dutch oven or heavy bottomed deep skillet on medium heat, add extra virgin olive oil and ground turkey, breaking it apart with wooden spoon. Add oregano, pepper, garlic powder, cumin, kosher salt and cayenne. Continue to break apart turkey so it is evenly coated with spices. Cook turkey to well-done 14 to 16 minutes or until 165°F as measured by a meat thermometer. Add spinach to turkey mixture. Stir well. Cook 1 to 2 minutes or until spinach is wilted. Add 1 cup tomato sauce to the mixture. Set aside.
8) STUFFED PEPPERS
9) Spray 9 x 13-inch baking dish with olive oil spray. Carefully peel skins off the reserved poblanos. It is ok if a little of the charred skin remains, as it will add flavor, but try to get as much skin off as possible. Carefully slice the tops off the peppers and remove seeds. Be delicate in this process so as to ensure that you can keep the shape of the chile intact. Carefully stuff each pepper with a few spoonfuls of turkey and tomato sauce mixture. Lay stuffed peppers side-by-side in baking dish.
10) BAKE PEPPERS
11) Spoon remaining tomato sauce evenly over peppers and sprinkle top with mozzarella cheese. Spray a large piece of foil with olive oil spray and cover baking dish tightly. Bake peppers 20 minutes. Remove foil and top peppers with breadcrumbs. Leave chiles uncovered and bake 5 minutes or until top is browned. Serve with fresh cilantro, if desired.
* Always cook to an internal temperature of 165°F.

Turkey Enchilada Lasagna

9 – corn tortillas

1 ½ – cups shredded Mexican 4-cheese blend

Directions

1) Add ground turkey to a nonstick cooking sprayed hot skillet over medium-high heat. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

2) Stir in tomato paste and cook 1 minute.

3) Add beans, tomatoes, 1 can enchilada sauce and salt.

4) Heat oven to broil and place rack 5 inches under broiler.

5) Place tortillas on baking rack and broil 3 to 5 minutes or until slightly charred on each side.

6) Place 3 corn tortillas in bottom of 13 x 9-inch baking dish.

7) Spoon half turkey mixture over tortillas. Repeat layers ending with tortillas. Pour remaining enchilada sauce over tortillas.

8) Cover and bake 30 minutes or until bubbly. Remove foil, sprinkle with cheese, and bake 15 minutes more or until cheese is melted.

9) Garnish, if desired.

1/4 – cup chopped green onions
4 – lime wedges

Thai Chili Garlic Sauce
1/4 – cup plain Greek yogurt
3 – tablespoons Thai style chili sauce or paste
1 – teaspoon minced garlic

Directions
1.) Heat oven to 375°F. Line large baking sheet with parchment paper. Divide cheese into 4 mounds on parchment paper spreading each into a 5-inch circle. Be sure to leave some space between each circle as they will expand a bit as they melt. Bake 5 minutes, rotate the tray in the oven, and bake 3 to 5 minutes longer or until the edges are beginning to brown very slightly and the cheese takes on a lace-like appearance. Let the cheese circles cool a few minutes, and while still pliable, peel them from the parchment, and hang them over a wooden spoon that is held between two jars. Let the cheese hang until hardened and completely cooled into the shape of a taco shell.

2.) Cook turkey according to package directions. Always cook to well-done, 165°F as measured by a meat thermometer. Shred with fingers or tongs. Place turkey, avocado, jalapeno pepper, cilantro, red cabbage, and green onion into cheese taco shells. Drizzle with Thai chili garlic sauce and serve with a lime wedge.

10 – sheets phyllo pastry sheets
1/4 – cup butter, melted

Directions
1) Dipping sauce:

Smoked Turkey Sandwich with Apple Slaw

INGREDIENTS

2 tablespoons brown sugar
2 tablespoons ground paprika
1 tablespoon garlic salt
1 tablespoon white sugar
2 teaspoons fresh ground black pepper
1 teaspoon ground cayenne pepper
½ cup apple cider
½ cup barbeque sauce
2-pounds JENNIE-O® All Natural Turkey Breast
2 red-skinned apples, cored and cut into julienne strips (honeycrisp works well)
¼ cup torn fresh tarragon
2 tablespoons lemon juice
1 tablespoon extra-virgin olive oil
16 slices JENNIE-O® Turkey Bacon
8 each Brioche buns, sliced
fresh arugula
½ cup honey mustard, if desired

DIRECTIONS
1) In large bowl, mix rub ingredients: brown sugar, paprika, garlic salt, sugar, black pepper, cayenne pepper, apple cider and barbeque sauce. Coat turkey breast evenly with rub. Cover with plastic wrap and let marinate in refrigerator, 8 hours to overnight.

2) Preheat smoker to 300°F. Smoke until well-done, 165°F. as measured by a meat thermometer, approximately 2½ to 3 hours.
Smoker times may vary depending on your equipment. Always test doneness by inserting a meat thermometer into the thickest portion of the meat periodically.

3) To make slaw: In medium bowl combine apple strips, tarragon, lemon juice and olive oil.

4) Preheat a skillet and spray with non-stick cooking spray. Add bacon slices and cook until desired crispness. Always cook until well-done, 165°F. as measured by a meat thermometer.

Tasty Turkey Sliders
Topped with savory turkey cream cheese and crumbled feta, these Tasty Turkey Sliders are one of the best burger recipes around! Expect guests to be sliding seconds onto their plates at your next party.

Total Time – 1 Hour
Serving Size – 18 Servings

Ingredients
CREAM CHEESE TOPPING
1/2 – pound minced JENNIE-O® Sun Dried Tomato Turkey Breast
1/2 – cup vegetable flavored cream cheese
2 – ounces feta or goat cheese, crumbled
3 – tablespoons minced fresh basil
3 – tablespoons minced green onion
salt and pepper, if desired

SLIDERS
4 – tablespoons olive oil, divided
1 – cup finely minced Vidalia onion
1 – cup finely minced button mushrooms
2 – teaspoons thyme leaves
salt and pepper, to taste
1 – clove garlic, minced
18 – small wooden skewers
1/4 – cup chopped fresh parsley
1 – (16-ounce) package JENNIE-O® Lean Ground Turkey
9 – party-sized potato rolls, split
4 – slices Provolone cheese
18 – small basil leaves
8 – cherry tomatoes, halved

Directions
1) CREAM CHEESE TOPPING:
2) In small bowl, add minced turkey, cream cheese and feta cheese; mix to combine.
3) Stir in basil, green onion and salt and pepper, if desired.
4) Cover and refrigerate.
5) TURKEY SLIDER:
6) In hot skillet, add 2 tablespoons olive oil and sauté onions, mushrooms, thyme, salt and pepper, to taste.
7) Cook until onions are caramelized and mushrooms are brown. Stir in garlic and parsley. Remove from heat to cool.
8) In medium bowl, add sautéed ingredients to ground turkey mix together not to overwork.
9) Form into small sliders approximately 2 tablespoons each. Press gently into shape. Place burgers on plate covered with plastic wrap and chill in the refrigerator.
10) With a cookie cutter, cut split potato rolls and cheese into 1½-inch circles.
11) In non-stick skillet over medium-high heat, add 2 tablespoons olive oil. Cook turkey patties 2 to 3 minutes on each side or until well-done, 165°F. as measured by a meat thermometer.
12) Toast bread under broiler.
13) Place burger on each piece of toasted cheese bread. Add a small dollop of cream cheese mixture. Take wood skewer, pierce basil leaf, tomato half; press skewer into the slider to serve.
