Turkey Bacon and Sausage Breakfast Pizza
The most important meal of the day should also be the most excellent. Bake up this Turkey Bacon and Sausage Breakfast Pizza piled high with veggies, cheese and two kinds of delicious turkey in under 30 minutes!
Total Time – 45 Minutes
Serving Size – 6 Servings

Ingredients
¼ cup butter, divided
2 tablespoons flour
½ cup milk
1 (12-ounce) package JENNIE-O® Turkey Bacon
½ (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Patties
1½ cups egg substitute or 6 eggs, beaten
1 (12-inch) prebaked pizza shell
1½ cups sliced fresh mushrooms
1½ cups shredded Cheddar and mozzarella cheese blend
salsa, if desired

Directions
1) Heat oven to 400°F.
2) In small saucepan, melt 2 tablespoons butter over medium-high heat. Add flour; cook, stirring constantly, 1 minute. Stir in milk.
3) Cook, stirring constantly, 2 to 3 minutes or until mixture boils and thickens; cool.
4) Preheat a nonstick skillet or electric griddle over medium heat (375°F). Heat slices of bacon for 6-7 minutes or until desired crispness, turning frequently. Drain on paper towels; chop.
5) Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Place patties on hot skillet. Turn occasionally and cook approximately 13 to 15 minutes. Always cook to well-done, 165°F as measured by a meat thermometer in the center of the patty. Chop. In skillet, melt remaining butter. Add eggs. Cook, stirring until soft scrambled.)
6) In bowl, combine white sauce and eggs; mix well. Spoon onto pizza shell. Top with bacon, sausage, mushrooms and cheese.
7) Bake 12 to 15 minutes or until cheese is melted and crust is golden. Serve with salsa, if desired.

Turkey Enchiladas
Start your weekend off right with this fresh take on a brunch favorite. And with only 15 minutes of prep time, the whole family can eat well without eating into your free time with this Turkey Enchiladas recipe.
Total Time – 1 Hour
Serving Size – 6 Servings

Ingredients
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast

1 cup chopped onion

1 (2-ounce) can chopped ripe olives

1 (32-ounce) can enchilada sauce, divided

12 corn tortillas, heated

1 ½ cups shredded Cheddar and/or Monterey jack cheese

Directions
1) Heat oven to 350ºF.

2) Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.

3) Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer. Add onion; sauté 5 minutes. Stir in olives.

4) In small saucepan heat half enchilada sauce. Dip each tortilla in sauce. Spoon 2 tablespoons meat mixture down center of each tortilla. Fold sides over and place seam side down in 9×13-inch baking pan. Sprinkle with cheese. Bake 30 minutes or until heated through.

5) Serve with remaining sauce.

1 – (24-ounce) package JENNIE-O® Applewood Smoke Flavor Turkey Breast Tenderloin
3 – small carrots, peeled and cut into 1-inch pieces
2 – small parsnips, peeled and cut into 1-inch pieces
6 – small new potatoes, cut into 1-inch pieces
1 – red onion, peeled and cut into 1-inch pieces
2 – teaspoons olive oil
1 – tablespoon chopped parsley

Directions
1) Place turkey in air fryer basket. Set to 400°F. Cook 20 minutes.

2) Meanwhile, in large bowl toss vegetables with olive oil, salt and pepper. Add to air fryer surrounding turkey. Cook 15 to 20 minutes or until turkey is fully cooked to 165°F as measured by a meat thermometer and vegetables are tender. Sprinkle with parsley.

This week’s Jennie – O Turkey Recipe of the Week is a Wisconsin Beer Turkey Brat. We’ve had this a couple of times and love them! You’ll be using the JENNIE-O® Lean Turkey Bratwurst with toppings of Mustard, Sauerkraut, and Fried Onions. The recipe calls for 3 cups of Beer to simmer the Brats in before grilling them. I’ve found a Light Lager Beer gives them the most flavor. You can use any Beer for it though. Brats and Beer, the two ingredients needed for the perfect BBQ party, come together to make the Wisconsin Beer Turkey Brat. It’s the envy of every hot dog.

INGREDIENTS
3 cups beer
1 (19.5-ounce) package JENNIE-O® Lean Turkey Bratwurst
¼ cup mustard
5 reduced-calorie hot dog buns, split
1 cup sauerkraut

1) In large saucepan over medium heat, bring beer to simmer.
2) Add brats. Simmer, covered, over low heat 20 to 25 minutes.
3) Spray grill rack with nonstick cooking spray. Preheat grill over medium-high heat. Place dinner sausages on grill rack 4 inches from heat source. Grill approximately 16 to 18 minutes, turning occasionally. Always cook to well-done, 165°F. as measured by a meat thermometer.
4) Spread mustard on buns. Add brats. Top with sauerkraut and fried onions.
* Always cook to an internal temperature of 165°F.

1½ tablespoons cider vinegar
1 teaspoon hot pepper sauce
1 pound spaghetti noodles, cook according to package directions
shredded Cheddar cheese, if desired

DIRECTIONS
1) Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.
2) Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.
3) Add onion, garlic, chili powder, cinnamon, paprika, allspice, cloves, brown sugar and cocoa powder; stir and cook 2 minutes.

½ cup chopped celery
4 minced garlic cloves, divided
1 cup dry white wine
¼ cup tomato paste
1 tablespoon chopped fresh rosemary
¼ cup chopped fresh Italian parsley
1 teaspoon finely grated lemon zest

DIRECTIONS
1) Cube turkey tenderloin and toss in flour. In large saucepan, heat oil over medium-high heat.
2) Spray a skillet with nonstick cooking spray or add 1 to 2 teaspoons oil. Heat skillet over medium-high heat.
3) Place tenderloins in hot skillet. Brown on both sides. Add 1/3 cup water. Reduce heat to medium-low. Cook, covered, 35 to 40 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.
4) Add mushrooms, carrots, onion, celery and 2 garlic cloves. Cook 5 minutes or until vegetables are softened, stirring occasionally. Add wine, tomato paste and rosemary. Bring to boil. Reduce heat to medium-low.
5) Simmer, covered, 25 minutes or until vegetables are tender, stirring occasionally.
6) Simmer, uncovered, 5 minutes or until thickened.
7) In small bowl combine parsley, remaining 2 garlic cloves and lemon zest. Sprinkle over turkey stew.
* Always cook to an internal temperature of 165°F.
