Sweet and Savory Turkey Panini
Love sweet yet savory dinners? Then you’ll love this grilled panini recipe with turkey bacon, cream cheese, raspberry jam, bourbon maple turkey breast, candied pecans and caramelized sweet onions.

INGREDIENTS
4 slices JENNIE-O® Turkey Bacon
4 multigrain sandwich thins
2 teaspoons olive oil
3 ounces garlic herb cream cheese
4 teaspoons raspberry jam
8 ounces JENNIE-O® Tender Browned Turkey, from the service deli
8 teaspoons pecan pieces, candied
4 tablespoons caramelized sweet onions
12 slices cucumber, if desired

DIRECTIONS
1) Cook turkey bacon as specified on the package; set aside. Always cook to well-done, 165°F as measured by a meat thermometer. Heat panini grill to medium. Brush sandwich thin with olive oil. Spread cream cheese and jam on each sandwich top and bottom. Layer turkey on bottom layer of sandwich. Top with pecans and bacon. Add caramelized sweet onions and place sandwich tops on.
2) Place on panini grill for 4 minutes or until golden brown and heated through. Add fresh cucumber slices, if desired.
* Always cook to an internal temperature of 165°F.

DIRECTIONS

Oven Roasted Squash Salad
Complete the Thanksgiving spread with Roasted Squash Salad, a delicious seasonal mix of two types of oven roasted squash tossed with fresh arugula! This recipe is a quick and easy side dish or appetizer guests will love!

INGREDIENTS
1 medium acorn squash, cut in half
1 medium butternut squash, cut in half
2 tablespoons olive oil, plus ¼ cup, divided
1½ teaspoon kosher salt, divided
½ teaspoon freshly ground pepper, divided
8 cups arugula leaves
¼ cup thinly sliced red onion
¼ cup pistachios, toasted
2 ounces aged ricotta cheese, thinly sliced
3 tablespoons white wine vinegar
1 tablespoon honey
2 teaspoons Dijon mustard
6 slices JENNIE-O® Lower Sodium Turkey Bacon made with Sea Salt

DIRECTIONS
1) Place acorn and butternut squash on jellyroll pan, cut sides up. Drizzle with 2 tablespoons olive oil and sprinkle with 1 teaspoon salt and ¼ teaspoon pepper. Bake 25 minutes or until slightly browned and tender. Let stand 10 minutes. Slice and set aside.
2) In large bowl, toss together arugula, onion slices and pistachios. Top with squash slices and ricotta cheese.
3) In small bowl, whisk together vinegar, honey, and mustard. Slowly add remaining ¼ cup olive oil, whisking constantly. Season with remaining ½ teaspoon salt and ¼ teaspoon pepper. Drizzle desired amount of dressing over salad.
4) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Chop bacon and sprinkle over salad.

Pimento Turkey Burgers
Melted pimento cheese is the magic ingredient on this staple at Chicago’s Swill Inn, courtesy of Lamar Moore—a noted chef, restaurateur and TV personality.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
8 slices Cheddar cheese
20 pickle slices
4 brioche buns, split and toasted
16 ounces pimento cheese, if desired

DIRECTIONS
1) Divide ground turkey into 4 portions and shape into patties.
2) Prepare grill for high direct heat. Grill burgers 8 to 12 minutes, turning once. Always cook to well-done, 165°F as measured by a meat thermometer. During last 2 minutes of cooking, top each burger with 2 cheese slices.
3) Place 5 pickle slices on each bun bottom. Top with burger, pimento cheese, if desired and bun top.

Corn and Turkey Quesadillas
These easy-to-prepare quesadillas are sure to make an impression. Loaded with freshly grilled corn, roasted red pepper, flavorful turkey and turkey bacon, they’re great as an appetizer or an easy dinner!

MAKES – 4 SERVINGS
PREP – UNDER 15 MINUTES
TOTAL – LESS THAN 1 HOUR

INGREDIENTS
2 corn cobs, trimmed of husk and silk
4 CHI-CHI’S® burrito-size tortillas
2 cups shredded Colby Jack cheese
1 cup thinly sliced JENNIE-O® Oven Roasted Turkey Breast
1 cup roasted red pepper strips, drained
6 slices JENNIE-O® Turkey Bacon, cooked according to package directions and halved
salsa, if desired

DIRECTIONS
1) Prepare grill for medium heat. Cook corn cobs 12 to 15 minutes or until tender, turning occasionally; let cool. Place corn cob on its end. Run knife down cob to remove corn kernels. Repeat with remaining cob; set aside.
2) Place 2 tortillas on counter. Sprinkle with half cheese. Top with turkey, red pepper, bacon and corn. Sprinkle with remaining cheese. Top with remaining tortillas. Carefully lift onto grill. Cook 2 to 3 minutes per side or until tortillas are crisp and grill marks appear. Cut into wedges to serve. Serve with salsa, if desired. Always cook to well-done, 165°F as measured by a meat thermometer.

Smoked Turkey Sandwich with Apple Slaw
Bring the orchard to your kitchen! Tarragon-apple slaw and apple cider marinade turn fruit from a side into an entrée. When you can do this with Honeycrisps, those turnovers are gonna have to wait!

INGREDIENTS

2 tablespoons brown sugar
2 tablespoons ground paprika
1 tablespoon garlic salt
1 tablespoon white sugar
2 teaspoons fresh ground black pepper
1 teaspoon ground cayenne pepper
½ cup apple cider
½ cup barbeque sauce
2-pounds JENNIE-O® All Natural Turkey Breast
2 red-skinned apples, cored and cut into julienne strips (honeycrisp works well)
¼ cup torn fresh tarragon
2 tablespoons lemon juice
1 tablespoon extra-virgin olive oil
16 slices JENNIE-O® Turkey Bacon
8 each Brioche buns, sliced
fresh arugula
½ cup honey mustard, if desired

DIRECTIONS

1 – In large bowl, mix rub ingredients: brown sugar, paprika, garlic salt, sugar, black pepper, cayenne pepper, apple cider and barbeque sauce. Coat turkey breast evenly with rub. Cover with plastic wrap and let marinate in refrigerator, 8 hours to overnight. Preheat smoker to 300°F. Smoke until well-done, 165°F as measured by a meat thermometer.
2 – To make slaw: In medium bowl combine apple strips, tarragon, lemon juice and olive oil.
3 – Preheat a skillet and spray with non-stick cooking spray. Add bacon slices and cook until desired crispness. Always cook until well-done, 165°F as measured by a meat thermometer.
4 – To assemble sandwiches, on bun bottom place turkey bacon, shredded turkey breast, apple slaw mixture and arulgula. Drizzle with honey mustard, if desired. Add bun top.
* Always cook to an internal temperature of 165°F.

Traditional Turkey Sloppy Joes

Enjoy traditional Sloppy Joes with a delicious twist—as this recipe replaces classic ground beef with lean ground turkey. Bonus? You can get this easy meal on the table in less than 30 minutes.

INGREDIENTS

1 tablespoon vegetable oil
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 small onion, chopped
½ cup bell pepper, diced
3 cloves garlic, minced
1 (8-ounce) can tomato sauce
2 tablespoons Worcestershire sauce
1 tablespoon tomato paste
¾ teaspoon salt, if desired
¼ teaspoon freshly ground black pepper
5 hamburger buns, split and toasted

DIRECTIONS

1) Heat oil in large skillet over medium heat. Cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add onion, bell pepper and garlic; cook 3 minutes, stirring occasionally.
2) Add tomato sauce, Worcestershire, tomato paste, salt and pepper. Simmer uncovered 10 to 15 minutes or until sauce thickens. Spoon mixture onto bottom of rolls; close with roll tops.
* Always cook to an internal temperature of 165°F.

1 teaspoon olive oil
1 medium onion, sliced
1 red pepper, sliced
1 clove garlic, minced

1 cup fresh spinach, trimmed, rinsed and well drained
1 (6.5-ounce) package pizza crust mix
1 cup shredded mozzarella cheese
¼ cup pine nuts, if desired

DIRECTIONS
1) Heat oven to 400ºF. Cook turkey as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer; set aside.
2) In skillet over medium heat, add oil, onion, red pepper, garlic and soy sauce. Cook 5 minutes or until vegetables are tender, stirring occasionally.
3) Add spinach and cook until wilted; remove from heat.
4) Prepare pizza crust according to package directions; pat dough evenly in pizza pan. Sprinkle with mozzarella cheese. Spread turkey and onion mixture over cheese. Sprinkle with pine nuts, if desired. Bake 15 to 20 minutes or until crust is browned.

6 English muffins or biscuits, split
6 slices low-sodium American cheese

Directions
1) Cook turkey sausage as specified on the package. Always cook to well-done, 165°F. as measured by a meat thermometer. In skillet over medium heat, melt butter. Add onion and cook 2 to 3 minutes or until softned.

2) In medium bowl, combine eggs and milk; whisk until smooth. Add eggs to skillet and cook on low heat until done, stirring to cook evenly.

3) Place egg mixture on muffin or biscuit half. Top with cheese, sausage patties and muffin top.
* Always cook to an internal temperature of 165°F.
