Shredded Turkey Sandwich
This recipe just might replace your go-to pulled pork recipe. Slow-simmered turkey breast shredded for sandwiches makes the perfect potluck or party recipe. Great for an easy dinner, too!

INGREDIENTS
SEASONING MIX
2 tablespoons sugar
1 tablespoon paprika
1½ teaspoons onion powder
1½ teaspoons garlic
1 teaspoon thyme leaves
1 teaspoon celery seed
½ teaspoon freshly ground pepper
2 cups shredded JENNIE-O® Slow Roasted Dark Turkey
2 tablespoons butter
¾ cup reduced sodium chicken broth
6 whole wheat buns, split

DIRECTIONS
1) For seasoning mix, combine sugar, paprika, onion powder, garlic, thyme, celery seed and pepper.
2) In skillet over medium heat, combine shredded turkey, seasoning, butter and chicken broth. Simmer 20 minutes or until hot. Add meat mixture to bun bottom and replace bun top.

COOKING INSTRUCTIONS

FOODSERVICE COMBINATION OVEN:
Preheat combination oven to 320°F. Remove from package and place turkey skin side up in medium shallow baking pan. Add 1/2 cup water to the pan. Cook until internal temperature reaches 165°F. Verify 165°F. internal temperature as measured by a meat thermometer in the thickest part of the meat. Remove pot roast from oven. Using tongs, separate into two units. Transfer each unit into a rotisserie dome.

FOODSERVICE ROTISSERIE OVEN:
Preheat rotisserie oven to 325°F. Remove from package and place turkey skin side up in medium shallow baking pan. Place in sprayed rotisserie baskets. Cook until internal temperature reaches 165°F. Verify 165°F. internal temperature as measured by a meat thermometer in the thickest part of the meat. Remove pot roast from oven. Using tongs, separate into two units. Transfer each unit into a rotisserie dome.

Turkey Tacos with Lime Yogurt Topping
Set your weeknight dinner apart from the rest with this tasty turkey taco recipe: Lean ground turkey, shredded Cheddar and a zesty Lime Crema topping. Under 500 calories per serving!

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
½ small sweet yellow onion, diced
1 tablespoon chili powder
1 tablespoon tomato paste
1 teaspoon garlic powder
½ cup chicken broth
LIME YOGURT TOPPING
1 cup plain Greek yogurt
1 teaspoon fresh lime juice
1 teaspoon fresh lime zest
1 teaspoon honey
1 tablespoon freshly chopped parsley
salt and freshly ground pepper, if desired
12 hard taco shells
½ cup shredded Cheddar cheese
1 (8-ounce) package shredded lettuce
HERDEZ® Salsa Casera, if desired
Original WHOLLY GUACAMOLE® dip, if desired

DIRECTIONS
1) Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add onion, chili powder, tomato paste, garlic powder and broth. Stir, simmering 10 minutes or until onion is tender.
2) To make lime yogurt topping, combine yogurt, lime juice, zest, honey, parsley and salt and pepper, if desired; whisk until smooth.
3) To serve, set out taco bar with turkey mixture, Lime Crema, taco shells, cheese, lettuce, salsa casera and dip, if desired.

Chipotle Turkey Tacos
If you haven’t had turkey tacos with fresh, homemade pico de gallo, do yourself a favor tonight and whip up this quick and simple Mexican recipe. Kid-friendly and under 300 calories per serving!

INGREDIENTS
½ cup fat-free sour cream
1 chipotle pepper in adobo sauce
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 (1.25-ounce) taco seasoning mix
½ cup water

PICO DE GALLO
1 cup chopped plum tomatoes
¼ cup chopped white onion
3 tablespoons chopped fresh cilantro leaves
1 jalapeno, diced
2 tablespoons lime juice
salt and freshly ground pepper, if desired
12 soft taco-size tortillas
1 cup shredded lettuce
1 cup shredded Cheddar jack cheese

DIRECTIONS
1) In blender or food processor, combine sour cream and chipotle pepper in adobo sauce. Blend until combined. Set aside.
2) In large skillet, cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add taco seasoning mix and water. Cook until water is evaporated, stirring occasionally.
3) To make the pico de gallo, combine tomatoes, onion, cilantro, jalapeno, lime juice, salt and freshly ground pepper, if desired.
4) Spread each taco shell with sour cream mixture. Fill tacos with lettuce, turkey, pico de gallo and cheese.

Can’t decide between Vietnamese and Mexican? These turkey tacos are are here to save the day — fresh radish, shredded carrots and jalapeño, served in a warm tortilla. Under 300 calories per serving, too!

INGREDIENTS
¼ cup sugar
¼ cup rice vinegar
1 tablespoon fish sauce
¼ cup jalapeno, thinly sliced
¼ cup radish, thinly sliced
⅓ cucumber, thinly sliced
½ cup shredded carrots
⅓ cup fat-free mayonnaise
8 soft taco-size (6-inch) flour tortillas
2 cups shredded JENNIE-O® Slow Roasted Dark Turkey
lime wedges, if desired

DIRECTIONS
1) In small saucepan, over medium heat, combine sugar, vinegar and fish sauce. Stir until sugar is dissolved. Simmer, without stirring, 3 minutes. Remove from heat; let cool.
2) In medium bowl, toss cooled vinegar mixture with jalapenos, radish, cucumber and carrots; set aside.
3) Spread mayonnaise on each tortilla. Add turkey. Top with vegetable mixture. Serve with lime wedges, if desired.

Goat Cheese Turkey Meatball Wedges
Here’s a gourmet (yet easy) pizza snack that you don’t have to think twice about, featuring fresh veggies, tasty goat cheese and home style turkey meatballs. Ready in under 30 minutes!
Ingredients
10 JENNIE-O® Fully Cooked Home Style Turkey Meatballs
1 (6.5-ounce) package pizza dough mix
4 ounces goat cheese, softened
1 cup red and yellow cherry tomatoes, halved
½ cup freshly grated Parmesan cheese
fresh basil leaves

Directions
1 – Heat oven to 400°F. Cook meatballs according to package directions. Cut into quarters; set aside.

2 – Make dough according to package directions. Place on baking sheet. Spread with goat cheese.

Turkey Tacos with Cilantro Lime Sauce
Street taco taste, made at home! Mix taco-seasoned turkey with traditional Mexican flavors for an authentically delicious meal that fits your modern schedule. Pre-make the sauce to save yourself even more time!

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Taco Seasoned Turkey
10 (6-inch) soft tortillas
3 cups shredded spinach
2 cups shredded Cheddar cheese
2 cups pico de gallo
2 cups cilantro lime sauce

CILANTRO LIME SAUCE
2 large jalapenos, seeded and coarsely chopped
2 large garlic cloves, smashed
2 teaspoons ginger
2 tablespoons minced white onion
1 tablespoon fresh lime juice
¼ cup water
2 cups mayonnaise
¼ cup finely chopped cilantro

DIRECTIONS
1) Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) To each tortilla, add spinach, cheese, pico de gallo and cilantro lime sauce (directions below).
3) Cilantro Lime Sauce
4) In blender, puree jalapenos, garlic, ginger, onion, lime juice and water until smooth. Add mayonnaise and cilantro and pulse a few times. Makes about 3 cups.
5) The sauce can be made ahead and refrigerated up to 3 days.

Turkey Burger Spring Roll
Featuring a homemade ground-turkey-filled spring roll on a bao bun, this nontraditional take on the turkey burger comes from chef Chris Cheung—award-winning restaurateur from New York City’s Chinatown and chef/owner of East Wind Snack Shop in Soho.

INGREDIENTS
½ (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
1 tablespoon chopped green onion
1 tablespoon oyster sauce
1½ teaspoons chopped ginger
salt and pepper, if desired
4 rice wrappers
vegetable oil for frying
4 bao, split and toasted
hoisin sauce
cucumber salad (recipe follows)
sesame seeds

DIRECTIONS
1) In bowl, combine ground turkey, green onion, oyster sauce, ginger and salt and pepper, if desired.
2) Fill large bowl with warm water. Dip 1 wrapper into the water for 10 seconds to soften. Lay wrapper flat. Place ¼ turkey mixture in center of each wrapper. Tightly roll the wrapper, beginning at one end. Repeat with remaining ingredients.
3) Heat oil in large saucepan to 350°F. Fry spring rolls 2 to 3 minutes. Always cook to well-done, 165°F as measured by a meat thermometer. Remove from oil and place on rack to drain.
4) Slice each spring roll. Place in bao. Top with hoisin sauce, cucumber salad and sesame seeds, if desired.
5) Cucumber salad: In bowl, combine 1 cup thinly sliced cucumber, ¼ cup julienned carrot and 1 tablespoon julienned red bell pepper. Toss with 2 tablespoon rice vinegar.
* Always cook to an internal temperature of 165°F

Grilled Corn and Turkey Salad
A hearty, gluten free salad that boasts one of the greatest ingredients of all: grilled corn, fresh off the cob. And with a spicy lime-chili dressing, you really can’t go wrong. Carb-conscious too!

INGREDIENTS
2 corn cobs
CHILI LIME DRESSING
3 tablespoons lime juice
2 tablespoons sweet chili sauce
2 tablespoons olive oil
2 cloves garlic, minced
1 (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins
2 cups grape tomatoes (mixture of red and yellow)
1 small red onion, cut into thin wedges
¼ cup chopped cilantro leaves
salt and freshly ground pepper, if desired
3 ounces feta cheese, crumbled

DIRECTIONS
1) Remove husk and silk from corn. Cook corn on preheated, greased grill over medium heat 10 to 15 minutes, turning occasionally, until grill marks appear and corn is cooked. Cut stem end from cob. Place stem end down on cutting board. Carefully run a knife down cob to remove corn; discard cob.
2) To make the Chili Lime Dressing, combine lime juice, chili sauce, olive oil and garlic in a jar with lid; shake to combine.
3) Combine half of dressing and turkey in a re-sealable bag. Chill 30 minutes. Discard leftover dressing from bag. Cook turkey tenderloins as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Cut into ¼-inch thick slices.
4) In large bowl, combine turkey, corn, tomatoes, onion, cilantro, salt and pepper, if desired. Add reserved dressing. Toss to combine. Sprinkle with feta cheese.

Heat oven to 350°F. Spray 9×9 or 11×17-inch with nonstick cooking spray. Place tenderloins in pan. Add 1/3 cup liquid. Cover with foil. Reduce heat to medium-low. Cook 30 minutes. remove foil. Cook 20 to 30 minutes more, basting occasionally if desired. Always cook to well-done, 165°F. as measured by a meat thermometer.

Luau Turkey Tacos Tortilla Style
Ingredients
1 (20-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
½ cup finely diced red bell pepper
2 tablespoons chopped garlic
1½ tablespoons chopped ginger
1 teaspoon red chili flakes, if desired
⅓ cup rice wine vinegar
¼ cup low-sodium soy sauce
¼ cup fat-free low-sodium chicken broth
¼ cup finely chopped green onion
¼ cup finely chopped cilantro
8 whole wheat tortillas
2 cups finely cut spinach

Directions
1) In large non-stick skillet, cook ground turkey as specified on package. Always cook to well-done, 165ºF as measured by a meat thermometer. Add bell pepper, garlic, ginger and chili flakes, if desired. Cook 30 seconds or until fragrant. Do not brown the garlic or the dish will taste bitter. Add vinegar and cook 2 minutes, or until most of the vinegar has evaporated. Add soy sauce and cook 2 minutes until it reduces to about 2 tablespoons liquid in pan. Add broth and cook 2 minutes or until liquid reduces to about ¼ cup.
2) Remove from heat. Stir in green onions and cilantro. Cover to keep warm.
3) Place two tortillas on each plate and fill each half full with spinach and then top with ⅓ cup of the turkey mixture. Serve hot.
* Always cook to an internal temperature of 165°F.
