Ingredients
2 – teaspoons olive oil
1 – (19.5-ounce) package JENNIE-O® Lean Sweet Italian Turkey Sausage
1 – cup pizza sauce
2 – tablespoons chopped fresh basil
4 – sub rolls, split and toasted
1 – cup shredded pizza cheese
grated Parmesan and fresh bail leaves, if desired

Directions
1) In large skillet, heat oil over medium-high heat. Pinch and squeeze meat from each sausage into hot pan to form small meatballs; these will not be perfectly round.
2) Cook meatballs for about 12 minutes, turning occasionally, until cooked thoroughly. Always cook to well-done, 165°F. as measured by a meat thermometer.
3) Add sauce and stir to coat. Cook until sauce is hot. Stir in basil. Spoon meatballs into roll; top with cheese.
4) Place under heated broiler for about 2 minutes or until cheese is melted.
5) Garnish with grated Parmesan and fresh basil leaves, if desired.

Southwestern Turkey Rice Salad
This is not your typical salad. Brown rice, black beans, bell peppers and cilantro join salsa, garlic and grilled turkey tenderloins for a Southwestern Turkey Rice Salad dinner. Under 500 calories per serving!
Total Time 2 Hours 40 Minutes
Serving Size 6 Servings

Ingredients
1 (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins
2 teaspoons Mexican seasoning or chili powder
1 cup salsa, divided
2½ cups cooked white or brown rice
1 cup canned black beans, drained and rinsed
1 red or yellow bell pepper, diced
1 cup shredded sharp Cheddar cheese
½ cup thinly sliced green onion
⅓ cup chopped fresh cilantro
2 tablespoons vegetable oil
½ teaspoon finely chopped garlic

Directions
1 – Sprinkle turkey with seasoning. In recloseable plastic food storage bag, combine turkey and ½ cup salsa; seal tightly, turning to coat meat. Refrigerate at least 30 minutes or up to 2 hours.

2 – In large bowl, combine rice, beans, bell pepper, cheese, onion and cilantro. In small bowl, combine remaining ½ cup salsa, oil and garlic; mix well. Add to rice mixture; toss well. Cover; refrigerate until serving time.

3 – Prepare grill. Drain turkey, discarding marinade. Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Transfer to cutting board; let stand 10 minutes. Cut into ½-inch cubes; add to salad and toss.
* Always cook to an internal temperature of 165°F.

INGREDIENTS

8 strips JENNIE-O® Turkey Bacon
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
2 tablespoons butter
3 cloves garlic, chopped
1 large sweet onion, peeled and thinly sliced
¼ cup whiskey
4 hamburger buns
¼ cup barbecue sauce
4 slices American cheese

DIRECTIONS
1) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside.
2) Shape turkey into 4 patties. Prepare grill for medium heat. On preheated grill over medium heat, grill burgers 9 to 10 minutes per side turning twice. Always cook to well-done, 165°F as measured by a meat thermometer.
3) In skillet, over medium heat add butter, garlic, onion and whiskey. Cook onions 8 minutes or until brown and caramelized.
4) On bun bottom, spread barbecue sauce, add turkey burger, cheese, bacon and onion mixture. Add bun top.
* Always cook to an internal temperature of 165°F.

Grilled Turkey Sandwiches
These Grilled Turkey Sandwiches bring together slow-cooked turkey breast, crunchy coleslaw and melted cheese on grilled whole grain bread. It’s big on flavor, easy to prep, and kid-friendly, too!

Ingredients

1 – (2 to 2 0.5-pound) package JENNIE-O® OVEN READY™ Boneless Skinless Turkey Breast

2 – tablespoons butter

1 – tablespoon mustard

8 – slices whole grain bread

4 – American cheese slices

1 ½ – cups prepared coleslaw

Directions

1) Preheat oven to 375°F. Remove frozen turkey from white outer package only. Do not remove turkey from cooking bag. Place in a roasting pan with at least 2″ high sides.

2) Cut three ½” slits in top of cooking bag. Place pan in oven, allowing room for bag to expand without touching the oven racks or walls.

3) Roast turkey until a meat thermometer reaches 165°F. Cooking time is approximately 3 hours. During final 1 hour, check internal temperature by inserting thermometer into thickest part of breast. Remove from oven when internal temperature reaches 165°F.

4) Slice turkey. Refrigerate half of turkey for another use.

5) In small bowl, combine butter and mustard. Spread on bread. Place 4 slices of bread in sandwich maker or Panini press.

6) Add cheese and 3 slices turkey. Place remaining bread slices, buttered side up on turkey. Close sandwich maker and cook 2 to 3 minutes or until golden brown.

7) Cut each sandwich in half to serve. Serve with coleslaw.

Red Beans Turkey and Rice

This recipe is the epitome of classic Cajun comfort food. Fill your house with the aroma of thyme, lean turkey and stewed tomatoes. This low-fat recipe is ready to eat in under 60 minutes!

Ingredients
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 cup finely chopped onion
1 green pepper, finely chopped
½ cup sliced celery
2 teaspoons minced garlic
1½ teaspoons thyme
1 teaspoon hot pepper sauce
½ teaspoon salt
1 (14½-ounce) can cajun-style stewed tomatoes
1 (15-ounce) can red kidney beans, rinsed and drained
¼ cup tomato paste
4 cups cooked white or brown rice
¼ cup chopped fresh parsley

Directions
1) Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.

2) Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

3) Add onion, green pepper, celery and garlic; cook 5 minutes or until slightly softened; stirring occasionally.

4) Sprinkle with thyme, hot pepper sauce and salt; cook 5 minutes, stirring occasionally. Add cajun-style stewed tomatoes, kidney beans and tomato paste.

5) Cook, uncovered, 10 minutes or until hot and flavors are blended, stirring occasionally.

6) Serve over cooked rice. Sprinkle with fresh parsley and serve with additional hot sauce, if desired.
* Always cook to an internal temperature of 165°F.

Ingredients
2 tablespoons butter or margarine
1 cup chopped onion
3 cloves garlic minced
1 (20-ounce) package JENNIE-O® Lean Ground Turkey
½ cup fresh breadcrumbs
¼ cup egg substitute or 1 egg
½ cup ketchup
2 teaspoons Worcestershire sauce
½ teaspoon freshly ground black pepper
¾ teaspoon salt, if desired
barbeque sauce, if desired

Directions
1 – Heat oven to 350ºF. Melt butter in a small skillet over medium-high heat. Add onion and garlic; cook 5 minutes, stirring occasionally. Transfer mixture to a large bowl; cool 5 minutes.

2 – Add ground turkey, breadcrumbs, egg, ¼ cup ketchup, Worcestershire sauce, pepper and salt, if desired to turkey mixture; mix well. Press into 8 x 4-inch loaf pan. Top with barbeque sauce, if desired.

3 – Bake 1 hour or until the internal temperature of meatloaf is well-done, 165ºF as measured by a meat thermometer. Let stand at room temperature 5 minutes before slicing.
* Always cook to an internal temperature of 165°F.

1 tablespoon butter

Directions
1 – Preheat a nonstick skillet or electric griddle over medium heat (375°F.). Heat slices of bacon for 6-7 minutes or until desired crispness, turning frequently.

2 – Crumble bacon and set aside. In large skillet, melt butter. Add eggs; cook until soft scrambled. Stir in cheese and bacon.
