Turkey and Rice Pilaf

NGREDIENTS

1 (7-ounce) package rice pilaf mix
1 cup sliced carrots
⅓ cup raisins
¼ cup chopped green onion
1 clove garlic, minced
1 tablespoon butter
⅔ cup low-sodium chicken broth
2 teaspoons cornstarch

DIRECTIONS

1 – Prepare rice pilaf mix according to package directions.
2 – In large skillet, cook carrots, raisins, green onion and garlic in butter until tender. Combine broth and cornstarch in small bowl; add to vegetables. Heat to boiling. Gently stir in turkey; heat until hot. Serve turkey mixture over pilaf.

Smoked Turkey Sandwich with Apple Slaw
Bring the orchard to your kitchen! Tarragon-apple slaw and apple cider marinade turn fruit from a side into an entrée. When you can do this with Honeycrisps, those turnovers are gonna have to wait!

INGREDIENTS

2 tablespoons brown sugar
2 tablespoons ground paprika
1 tablespoon garlic salt
1 tablespoon white sugar
2 teaspoons fresh ground black pepper
1 teaspoon ground cayenne pepper
½ cup apple cider
½ cup barbeque sauce
2-pounds JENNIE-O® All Natural Turkey Breast
2 red-skinned apples, cored and cut into julienne strips (honeycrisp works well)
¼ cup torn fresh tarragon
2 tablespoons lemon juice
1 tablespoon extra-virgin olive oil
16 slices JENNIE-O® Turkey Bacon
8 each Brioche buns, sliced
fresh arugula
½ cup honey mustard, if desired

DIRECTIONS

1 – In large bowl, mix rub ingredients: brown sugar, paprika, garlic salt, sugar, black pepper, cayenne pepper, apple cider and barbeque sauce. Coat turkey breast evenly with rub. Cover with plastic wrap and let marinate in refrigerator, 8 hours to overnight. Preheat smoker to 300°F. Smoke until well-done, 165°F as measured by a meat thermometer.
2 – To make slaw: In medium bowl combine apple strips, tarragon, lemon juice and olive oil.
3 – Preheat a skillet and spray with non-stick cooking spray. Add bacon slices and cook until desired crispness. Always cook until well-done, 165°F as measured by a meat thermometer.
4 – To assemble sandwiches, on bun bottom place turkey bacon, shredded turkey breast, apple slaw mixture and arulgula. Drizzle with honey mustard, if desired. Add bun top.
* Always cook to an internal temperature of 165°F.

Cincinnati Style 3-Way Turkey Chili
Can Cincinnati Chili taste just as great made with turkey? Find out for yourself by whipping up this delicious turkey chili recipe tonight, featuring Cincinnati-style meat sauce, spaghetti noodles and cheese.

INGREDIENTS

1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 cup diced onion
2 cloves garlic, minced
3 tablespoons chili powder
¾ teaspoon ground cinnamon
¾ teaspoon paprika
¾ teaspoon ground allspice
pinch ground cloves
2 tablespoons packed brown sugar
1½ tablespoons unsweetened cocoa powder
1 cup low-sodium chicken broth
1 (14-ounce) can low-sodium tomato sauce
1 (14-ounce) can diced tomatoes
1 cup water
1½ tablespoons cider vinegar
1 teaspoon hot pepper sauce
1 pound spaghetti noodles, cook according to package directions
shredded Cheddar cheese, if desired

DIRECTIONS

1) Cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add onion, garlic, chili powder, cinnamon, paprika, allspice, cloves, brown sugar and cocoa powder; stir and cook 2 minutes.
2) Add broth, tomato sauce, tomatoes, water, vinegar and hot pepper sauce. Stir until blended. Bring sauce to a boil. Reduce heat and simmer. Simmer 15 minutes or until sauce thickens.
3) To serve, add cooked noodles to bowl. Ladle sauce over spaghetti. Sprinkle with cheese, if desired.
* Always cook to an internal temperature of 165°F.

Slow Cooker Enchilada Lettuce Wraps

INGREDIENTS

1 (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloin
1 tablespoon ground chili powder
1 teaspoon ground cumin
1 can LA VICTORIA® enchilada sauce
1 jalapeño pepper, sliced
leaves from head of Boston Bibb
garnish: avocado slices, cilantro leaves, shredded Cheddar cheese and sour cream

DIRECTIONS

1) Place turkey in bottom of slow-cooker. Sprinkle with chili powder and cumin. Pour enchilada sauce over turkey. Cover and cook on HIGH 1:45 hours or LOW 2:25 hours. Always cook turkey to well-done, 165°F as measured by a meat thermometer. Shred turkey with 2 forks. Stir in jalapeño slices and cilantro.
2) Serve in lettuce cups. Garnish, with avocado, cilantro, shredded Cheddar cheese, and sour cream, if desired.

Turkey Gyros
You’re in for a lunchtime treat with these gyros! The seasoned turkey breast takes a little time in the slow-cooker, but once you shred that tender tenderloin with your fork, your patience will be rewarded. Have fun topping them how you like!

INGREDIENTS

1 (24-ounce) package JENNIE-O® All Natural Turkey Breast Tenderloin
½ teaspoon kosher salt
½ teaspoon freshly ground pepper
1 tablespoon chopped fresh oregano leaves
1 tablespoon chopped fresh thyme leaves
1 tablespoon chopped fresh garlic
6 pitas
Add Greek yogurt, cucumber slices, cherry tomato halves, feta cheese, and fresh mint leaves, if desired.

DIRECTIONS

1) Sprinkle tenderloin with salt, pepper and rub with oregano, thyme and garlic. Place tenderloin in slow-cooker and cook on HIGH 4 hours. Always cook to well-done, 165°F as measured by a meat thermometer. Shred with 2 forks.
2) Assemble pitas with yogurt, cucumber, turkey, tomatoes, feta and mint, if desired.

Who doesn’t love quick, weeknight dinners? This classic comfort food recipe is not only extremely tasty, it’s ready in under 1 hour!

INGREDIENTS

2 sweet potatoes, peeled and cut into 1-inch pieces
1 red onion, cut into 8 wedges2 parsnips, peeled and cut into 1-inch pieces
1 red bell pepper, cut into 1-inch pieces
4 tablespoons olive oil
4 cloves garlic, minced
½ teaspoon salt
⅛ teaspoon freshly ground pepper
½ teaspoon dried basil
1 tablespoon apple cider vinegar
¼ teaspoon Italian seasoning
¼ cup fresh parsley, loosely torn
2 pounds JENNIE-O® Bone-in Turkey Pot Roast, cut into pieces

DIRECTIONS

1) Heat oven to 400°F.
2) In large bowl, combine sweet potatoes, onion, parsnips, bell pepper, olive oil, garlic, salt, pepper, basil, vinegar, Italian seasoning and parsley; mix well. Place vegetable in large baking pan. Bake 20 minutes, stir and add turkey pot roast. Bake 15 to 20 minutes or until vegetables are tender and golden brown.
