Turkey Sausage and Egg Muffin
Take breakfast on-the-go and enjoy our turkey sausage and egg muffins. With a hardboiled egg nestled inside of a cornmeal muffin, these savory treats are ready to fuel you up for a busy day!

Total Time – 45 minutes
Serving Size – Makes 6 Servings

Ingredients
8 – eggs, divided
2 1/2 – cups flour
1 – tablespoon baking powder
1/2 – teaspoon salt
1 – cup melted butter
1/2 – cup sour cream
1 – tablespoon real maple syrup
1 – cup shredded Swiss cheese
1 – cup cooked and crumbled JENNIE-O® Turkey Sausage
3 – tablespoons chopped chives
Freshly cracked black pepper and flaked sea salt for serving, if desired

Directions
1) Place 6 eggs in a large pot and cover with water. Place pot over high heat. Bring to a boil, covered. As soon as it comes to a boil, turn off heat, keep covered, and let sit 4 minutes. Immediately drain and cool eggs in bowl of ice water. Gently crack the eggshells; let them sit in the ice water at least 15 minutes.

2) Gently peel the eggs under cold running water.

3) Heat oven to 400°F. Spray a 6-cup popover pan with non-stick cooking spray.

4) In a large bowl, combine flour, cornmeal, baking powder, and salt.

5) In a medium bowl, whisk together butter, remaining 2 eggs, sour cream, and maple syrup. Add to dry ingredients and stir until just combined. Fold in cheese, sausage and chives.

6) Add about 3 tablespoons of batter to the bottom of popover cups. Use your fingers to press batter up the sides. Place 1 soft-boiled egg into each one and then use your hands to cover each egg with more batter, making sure batter covers the entire side of the eggs.

7) Bake 18 to 20 minutes, or until golden. Let cool 5 minutes in pan. Carefully remove from pan. Serve with freshly cracked black pepper and flaked sea salt, if desired.

1 – medium onion, sliced
1 – red pepper, sliced
1 – clove garlic, minced
2 – teaspoons low-sodium soy sauce
1 – cup fresh spinach, trimmed, rinsed and well drained
1 – (6.5-ounce) package pizza crust mix
1 – cup shredded mozzarella cheese
1/4 – cup pine nuts, if desired

Directions
1) Heat oven to 400ºF.

2) Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.

3) Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

4) In skillet over medium heat, add oil, onion, red pepper, garlic and soy sauce. Cook 5 minutes or until vegetables are tender, stirring occasionally.

6 – corn tortillias

1/2 – cup red onion, sliced in strips

2 – teaspoons ground cumin

Directions
1) In large skillet, heat 2 tablespoons oil until hot. Add tortilla to hot oil; cook 1 to 2 minutes per side or until golden brown and crisp. Transfer to paper towels to drain; repeat with remaining 5 tortillas.

2) Add remaining 1 tablespoon oil to skillet. Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

3) Add onion, bell pepper and garlic cook 5 minutes, stirring occasionally. Sprinkle with cumin and salt. Cook 5 minutes, stirring occasionally. Add ½ cup salsa; cook 5 minutes, stirring occasionally.

4) Meanwhile, combine beans and remaining ¼ cup salsa; heat in microwave oven or small saucepan until hot.

Ingredients
1 – medium leek
1/4 – cup butter or margarine
2 – cups finely chopped JENNIE-O® OVEN READY™ Boneless Turkey Breast, cooked
1/2 – (10-ounce) package frozen chopped spinach or broccoli, cooked, drained
1 – (10-inch) unbaked ready-to-use pie crust
1 1/4 – cups shredded Swiss cheese
1 – tablespoon all-purpose flour
1 – cup egg substitute or 4 eggs
1 1/2 – cups half-and-half cream or evaporated milk
2 – tablespoons brandy
1/4 – teaspoon freshly ground pepper
1/4 – teaspoon ground nutmeg

Directions
1) Heat oven to 375°F.

2) Cut leek in half lengthwise, wash and trim, leaving 2 to 3 inches of green tops intact. Cut leek halves crosswise into thin slices. In small, saucepan add enough water to cover leek. Bring to boil over high heat; reduce heat and simmer 5 minutes. Drain, reserve leek.

3) In skillet, melt butter over medium heat. Add turkey breast; cook 5 minutes or until golden. Add spinach and leek to turkey mixture; cook 1 to 2 minutes. Remove from heat. Spoon turkey mixture into pie crust. Sprinkle cheese and flour over turkey mixture.

4) In medium bowl, combine eggs, cream, brandy, pepper and nutmeg. Pour egg mixture over cheese. Bake 35 to 40 minutes or until knife inserted into center comes out clean. Let stand 5 minutes before serving.

5) Serve hot or cold.

Directions
1) In small bowl, combine apple juice, ¼ cup soy sauce, brown sugar, Gochujang, garlic, sesame oil and ginger. In large bowl, mix turkey and half the apple juice mixture until well combined. Cover with plastic wrap. Refrigerate 30 minutes.

2) Spray large skillet with non-stick cooking spray. Over medium-high heat, cook turkey breaking up with a spoon, 25 to 30 minutes adding reserved apple juice mixture as it simmers. Lower heat. Continue simmering 15 minutes or until liquid is reduced and meat is starting to caramelize.

3) In a small saucepan, over medium heat combine remaining ¼ cup soy sauce, honey, garlic powder and pepper. Bring mixture to a boil. Simmer 1 to 2 minutes or until mixture is thickened to a glaze consistency. Remove to small bowl.

4) Serve turkey in lettuce leaves with glaze, onions and sesame seeds.

1 – JENNIE-O® Tender & Juicy Young Turkey Breast (4½ – 5 pounds), thawed if frozen, split into 2 halves
2 – tablespoons olive oil

Spicy Gremolata
1 1/2 – cups packed flat leaf parsley leaves, finely chopped
1/4 – cup sage leaves, finely chopped
4 – garlic cloves, smashed
3 – tablespoons finely grated lemon zest
1 – teaspoon crushed red pepper flakes
2 – teaspoons kosher salt
1/2 – cup olive oil

Directions
1) Heat oven to 375°F.

2) Loosen turkey skin. Rub half of the Spicy Gremolata under the skin of turkey breast halves.

3) In large heavy bottomed skillet over medium-high heat, heat oil. Sear each breast half 6 to 8 minutes, or until golden brown on both sides.

4) Place seared turkey on large, rimmed baking sheet. Roast 30 to 60 minutes or until meat thermometer inserted into the thickest part of the breast registers 165°F. Remove turkey from oven. Rub turkey breasts with remaining Spicy Gremolata. Let stand 15 minutes for easier carving.

Spicy Gremolata

1) In medium bowl, combine parsley, sage, garlic, lemon zest, red pepper flakes and kosher salt. Mix to combine. Stir in olive oil.
