This week’s Soup Special of the Day is a Hearty Turkey Taco Soup. Heat the Winter’s Night with this week’s recipe of Hearty Turkey Taco Soup. Hearty Turkey Taco Soup
For a delicious twist on taco night, try this taco soup recipe. It has all the flavors you love — ground turkey, onions, sour cream and crunchy tortillas — and is still under 500 calories per serving!

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Taco Seasoned Ground Turkey
1 cup chopped onion
1 (15-ounce) can HORMEL® chili with beans
1 cup salsa
4 cups chicken or turkey broth
⅓ cup fat-free sour cream
⅓ cup green onions
4 CHI-CHI’S® soft taco-size tortillas, cut into quarters, toasted in oven

DIRECTIONS
1 – Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add onion. Cook 5 minutes or until onion is softened, stirring occasionally. Add chili, salsa and broth. Bring to boil. Reduce heat to medium. Simmer 10 minutes or until hot and flavors have infused.
2 – Stir in sour cream. Spoon soup into bowls. Sprinkle with green onions. Serve with toasted tortilla chips.
* Always cook to an internal temperature of 165°F.

INGREDIENTS

½ cup chopped green onion
1 (15.5-ounce) jar salsa
1 cup light sour cream
1 cup shredded Cheddar cheese
¼ cup chopped ripe olives
8 ounces tortilla chips

DIRECTIONS
1) Cook turkey as specified on the package. Always cook to well done, 165°F as measured by a meat thermometer.
2) Add turkey to 2-quart casserole. Sprinkle half green onions over turkey and top with salsa. Spread sour cream over salsa and sprinkle cheese over top.
3)Garnish with remaining green onions and olives. Serve with tortilla chips.
* Always cook to an internal temperature of 165°F.

Mango Turkey Taco Salad
Here’s taco salad recipe has you making your own edible bowls! Plus, fresh salsa featuring mango, cilantro and lime. Ready in under 30 minutes, this is Mexican done right!

INGREDIENTS
4 (8-inch) whole wheat tortillas
1 (16-ounce) package JENNIE-O® Lean Taco Seasoned Ground Turkey
1 cup chopped fresh mango
¾ cup chopped red bell peppers
3 tablespoons finely chopped green onions
3 tablespoons finely chopped fresh cilantro
1 teaspoon lime juice
2 cups fresh spinach leaves

DIRECTIONS
1) Heat oven to 425°F. Invert 4 10-ounce custard cups onto 15 x 10 x 1-inch baking pan. Mist outside of cups and one side of each tortilla with olive oil cooking spray. Place tortillas, oiled side up, over cups. Bake 4 to 6 minutes or until lightly browned.
2) Cook turkey as specified on the package. Always to well-done, 165°F as measured by a meat thermometer. Set aside.
3) To make salsa in medium bowl, combine mango, red bell pepper, green onion, cilantro and lime juice. Place taco shells on serving plates. Divide spinach leaves evenly into shells. Top with turkey and salsa.
* Always cook to an internal temperature of 165°F.

Quick n’ Easy Turkey Nachos
Are they amazing nachos because they’re piled high with melted cheese and taco-seasoned lean ground turkey? Or because they’re ready in just under 30 minutes? We’ll let you decide.

INGREDIENTS

½ cup baked tortilla chips
1 cup shredded Mexican blend cheese
½ cup fat-free sour cream
1 medium tomato, seeded and diced
1 jalapeño pepper, sliced into thin rounds
¼ cup chopped cilantro leaves

DIRECTIONS

1) Cook turkey as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer.
2) Spoon turkey over tortilla chips. Top with cheese, sour cream, tomato, jalapeño and cilantro leaves.

Turkey Nachos
This is na-cho average nacho recipe! Dig in to homemade tortilla chips topped with savory ground turkey, fresh avocado, fresh cilantro and fresh jalapeño. Kid-friendly and ready in under 30 minutes!

INGREDIENTS

1 (16-ounce) package JENNIE-O® Lean Taco Seasoned Ground Turkey
12 CHI-CHI’S® soft taco-size tortillas, cut into quarters
cooking spray
1 cup salsa verde
½ cup low-fat sour cream
¼ cup diced red onions
1 avocado, sliced
½ cup cilantro sprigs
2 jalapeño, thinly sliced
lime wedges, if desired
DIRECTIONS

1) Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) Spray tortillas with cooking spray. In large skillet over medium-high heat, cook tortilla quarters in batches 1 to 2 minutes per side or until golden brown.
3) Arrange tortilla wedges on serving plate. Top with salsa verde, turkey, sour cream, red onion, avocado, cilantro and jalapeño slices. Serve with lime wedges, if desired.
* Always cook to an internal temperature of 165°F.

Halloween Taco Turkey Peppers

INGREDIENTS

1 tablespoon olive oil
1 (16-ounce) package JENNIE-O® Lean Taco Seasoned Ground Turkey
1 small red onion
2 cloves garlic, minced
1 (14.5-ounce) can diced tomatoes
6 medium bell peppers

DIRECTIONS

1) Heat oven to 400°F.
2) In large skillet, heat oil over medium heat. Add ground turkey, onion and garlic and cook 14 to 16 minutes or until turkey is cooked through. Always cook to well-done, 165°F as measured by a meat thermometer. Stir in tomatoes and cook 3 minutes. Let stand 10 minutes.
3) Cut tops off peppers and carefully remove seeds and membranes. Using a sharp knife cut decorated faces into sides of peppers. Spoon turkey mixture into peppers and replace tops.
4) Place in lightly greased baking dish. Bake 20 minutes.

6 cups low-sodium chicken broth
½ cup LA VICTORIA® Thick n’ Chunky Salsa
1 (15-ounce) can cannellini beans, rinsed and drained
1 (1-inch) piece Parmesan cheese
1 (8-ounce) bag baby spinach leaves
3 tablespoons chopped fresh parsley
DIRECTIONS

1) Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) In large pot, combine turkey, chicken broth, salsa, beans and cheese. Bring mixture to boil; reduce heat to medium-low. Simmer 5 minutes.
3) Add spinach. Cook 1 minute or until wilted. Remove and discard Parmesan cheese chunk. Garnish with fresh parsley.
* Always cook to an internal temperature of 165°F.
